Ok! You are what you eat, 00:01:16.90\00:01:20.38 and Hippocrates once said let food be thy medicine, 00:01:20.41\00:01:24.03 and medicine be thy food. 00:01:24.06\00:01:25.72 So it's real important the food we ingest in our bodies, 00:01:25.75\00:01:30.08 and if we look back at the rise of disease, 00:01:30.11\00:01:33.54 especially chronic disease as well as cardiovascular disease, 00:01:33.57\00:01:37.39 cancer, all these diseases. We look back to how our 00:01:37.42\00:01:40.70 nutritional status has changed and if you think back 00:01:40.73\00:01:43.99 a couple hundred years ago we were eating much different 00:01:44.02\00:01:47.23 than we are eating now. Yes! Yes! 00:01:47.26\00:01:48.83 We're eating a lot of fresh stuff, there wasn't a lot 00:01:48.87\00:01:50.91 of refrigerating, there wasn't a lot of processing, 00:01:50.94\00:01:53.18 there wasn't condensing food into smaller products. 00:01:53.21\00:01:57.69 There wasn't big conglomerates of companies trying to sell you 00:01:57.72\00:02:01.80 more and more, we didn't eat fast foods, 00:02:01.83\00:02:04.76 the cooking processes, the storage processes were 00:02:04.79\00:02:08.07 different, we didn't use a lot of chemicals to protect 00:02:08.10\00:02:11.43 the food and keep them going longer, 00:02:11.46\00:02:14.05 we didn't have a lot of additives that might even have 00:02:14.08\00:02:16.57 addictive substances. 00:02:16.60\00:02:18.16 So the way we did things long ago were different and also 00:02:18.19\00:02:21.31 the nutrient composition was much different. 00:02:21.34\00:02:24.32 Yes! That's true. Now over the last 100 years 00:02:24.35\00:02:27.23 we're eating more protein and fat than we've ever 00:02:27.26\00:02:30.00 eaten before, in fact we haven't had this forever, 00:02:30.68\00:02:33.29 they only really described what protein was about 00:02:33.32\00:02:35.69 in the 1840's, they talked about protein and then 00:02:35.72\00:02:38.77 everyone jumped on the band wagon, it's we have to have it. 00:02:38.80\00:02:42.17 And then it went to that and then we said well, 00:02:42.20\00:02:44.77 we have to have animal protein and then everything said 00:02:44.80\00:02:48.14 you know if you don't have it you are going to die, 00:02:48.17\00:02:49.74 your going to do poorly and yet we made these big shifts. 00:02:49.77\00:02:52.53 Even the Federal Drug Administration says we 00:02:52.56\00:02:55.16 have to have large amounts of protein, 00:02:55.19\00:02:56.90 we have to have large amounts of fat in our diet. 00:02:56.93\00:02:59.64 But if you look back at all the cultures of all times... 00:02:59.67\00:03:03.53 Ok! I'm going to quiz you a little bit Charles. Ok! Alright! 00:03:03.56\00:03:06.23 The first ones you can probably get. 00:03:06.26\00:03:09.87 What was the predominant food of people that lived 00:03:09.90\00:03:12.75 in the far east? Rice! 00:03:12.78\00:03:14.33 Right! You got that right. A starch based carbohydrate food, 00:03:14.36\00:03:17.86 that's what they base things on. 00:03:17.89\00:03:19.49 How about the Aztec's, what did they predominately eat? 00:03:19.52\00:03:22.99 Corn and beans. They were people of corn. 00:03:23.02\00:03:25.26 This one, most people don't get this one. Ok! 00:03:25.29\00:03:28.15 How about the Inca's, the people that lived... 00:03:28.18\00:03:31.26 What are the people that lived in Peru called? 00:03:31.29\00:03:32.87 They were Peruvians. What were those that lived in 00:03:32.90\00:03:35.37 the Peru? Well, I'll give you a hint. 00:03:35.40\00:03:38.05 They were people of potatoes. Ok. Another starch based food. 00:03:38.08\00:03:41.78 Yes, absolutely. Even in the middle east there were people 00:03:41.81\00:03:43.97 that ate lots of grains. So all of these were starch 00:03:44.00\00:03:47.54 based diet, they weren't animal based diet, 00:03:47.57\00:03:51.08 they weren't filled with lots of protein and lots of fat. 00:03:51.11\00:03:54.72 Ok, now follow me for a moment. A lot of the foods we eat, 00:03:54.75\00:03:59.01 the beans, the protein, it still has protein in it, 00:03:59.04\00:04:01.79 it still has a little bit of fat, but it is mainly 00:04:01.82\00:04:03.34 carbohydrates, but it's the right nutrient composition. 00:04:03.37\00:04:06.51 Yes. So as we changed our nutrient composition 00:04:06.54\00:04:09.93 our body was designed to handle these foods. 00:04:09.96\00:04:12.30 This body wasn't handled to process... 00:04:12.33\00:04:14.89 The processing plant wasn't designed to handle this 00:04:14.92\00:04:17.81 as the processing plant's inundated with this the last 00:04:17.84\00:04:20.25 100 years, there's been a lot of problems. 00:04:20.28\00:04:22.59 There has been a lot of fat that has turns on 00:04:22.62\00:04:24.41 cardiovascular disease, we have a lot of protein 00:04:24.44\00:04:26.80 that seems to activate cancers. 00:04:26.83\00:04:28.68 We have a lot of... to many calories in the condensed food 00:04:28.71\00:04:32.11 which tends to activate obesity. 00:04:32.14\00:04:34.30 So are we seeing a parallel build of disease right along 00:04:34.33\00:04:38.55 with the change of diet, are they happening 00:04:38.58\00:04:40.64 side by side like... Well, let's look at where 00:04:41.47\00:04:43.68 we've been over the last hundred years, what would you say? 00:04:43.72\00:04:46.15 You know, why is the cancer rate, cardiovascular disease 00:04:46.18\00:04:49.46 rate getting worse? Yes! Why are we heavier than ever? 00:04:49.49\00:04:53.15 Why are these things happening? And we look back in some 00:04:53.18\00:04:56.78 segments of our world that don't eat these things, 00:04:56.81\00:05:00.76 they don't have these problems. The Africans don't have a lot 00:05:00.79\00:05:03.50 of cardiovascular disease, they eat a lot of fiber 00:05:03.53\00:05:06.02 they don't have a lot of bowel disease and bowel cancers. 00:05:06.32\00:05:08.62 The people of those times mainly designed to eat a 00:05:08.65\00:05:11.90 starch based diet, they seem to be doing a lot better 00:05:11.93\00:05:15.34 in the way they live. So if you look at all this 00:05:15.37\00:05:17.53 disease, our solution to the problem has been, 00:05:17.56\00:05:19.96 hey, let's just keep making this more and more, storing it, 00:05:19.99\00:05:23.43 let's bring it a large ways to the market, let's do this 00:05:23.46\00:05:27.23 and rather than to deal with the real problem, 00:05:27.26\00:05:29.02 let's deal with the symptoms of the problems, 00:05:29.05\00:05:31.25 it's much more lucrative to do that. 00:05:31.28\00:05:33.17 So as we've developed these disease, we have spent a lot of 00:05:33.20\00:05:35.89 effort in educating people on the modern medicine part of it 00:05:35.92\00:05:39.47 which is great for acute disease but it doesn't get at the core 00:05:39.50\00:05:42.42 of the problem. So if you look back over the 00:05:42.45\00:05:44.33 last 200 years, you have to surmise that maybe it's in 00:05:44.36\00:05:48.16 the food and what I've learned is that doctors are so 00:05:48.19\00:05:51.18 frustrated now days, they don't have the tools. 00:05:51.22\00:05:54.14 No one is getting better, they keep coming back for more. 00:05:54.18\00:05:56.99 Well if you give doctors good tools to work with 00:05:57.02\00:06:01.37 and I think nutrition should be one of those tools, 00:06:01.40\00:06:03.86 they feel good. In medical school I did not take nutrition, 00:06:03.89\00:06:06.88 most medical doctors don't have much nutrition. 00:06:06.91\00:06:10.95 In fact much people don't understand nutrition, 00:06:10.98\00:06:13.77 they understand these food pyramids that we get 00:06:13.80\00:06:16.42 and those are very good at all. So I am just so thankful that 00:06:16.45\00:06:19.70 there is giants in the field of nutrition, 00:06:19.73\00:06:21.79 giants like T. Colin Campbell. Giants like Joel Firman, 00:06:21.82\00:06:25.91 Dean Ornish, the Esselstons, and there is more and more 00:06:25.94\00:06:29.91 you know. Physicians Committee for Response and Well... 00:06:29.94\00:06:32.00 Dr. Barnard. There is giants out there that are now proving 00:06:32.03\00:06:35.94 that there is something key and Dr. Hippocrates was right... 00:06:35.97\00:06:39.34 Let food be by medicine and and also your poisons. 00:06:39.37\00:06:41.84 So now we figure this out, that this rich diet is not good. 00:06:41.87\00:06:42.90 Now I am not alone in this there are some strong 00:06:42.93\00:06:48.50 Bible texts that promote this as well. 00:06:48.53\00:06:51.01 You know, you think back to the Garden of Eden... 00:06:51.04\00:06:53.42 their diet fruits, nuts, vegetables, and grains. 00:06:53.45\00:06:55.49 You look back, even the middle eastern diet 00:06:55.52\00:06:57.94 a lot of people say Christ ate some of the things, 00:06:57.97\00:07:00.76 but you know He also had the percentage of food 00:07:00.80\00:07:03.58 in good shape. It wasn't predominantly protein and fat. 00:07:03.61\00:07:06.81 Yeah, there wasn't a McDonald's on every corner... 00:07:06.85\00:07:08.53 Exactly! Jerusalem, ok. There was a balance in all this 00:07:08.57\00:07:11.82 and we look back on the story of Daniel, 00:07:11.86\00:07:14.59 you know the story about Daniel and his friends 00:07:14.62\00:07:16.73 and after a short period of time they ate a healthy diet 00:07:16.76\00:07:19.88 they were much more lively in their brains than their 00:07:19.91\00:07:23.18 counterparts that ate a rich diet. 00:07:23.21\00:07:25.83 So it's really...everyone can draw their own conclusions, 00:07:25.86\00:07:30.67 but I would say that one of the causes of chronic disease 00:07:30.70\00:07:33.48 that contribute to heart disease, cancer, obesity, 00:07:33.51\00:07:36.56 and all the related diseases, diabetes, 00:07:36.59\00:07:38.62 if we could get people eating right, or at least thinking 00:07:38.65\00:07:41.11 right, or heading in that direction, we've done more 00:07:41.14\00:07:44.34 to help the cause of medicine than you can even imagine. 00:07:44.37\00:07:47.49 You know when you talk about food like this, 00:07:47.52\00:07:50.48 I am reminded of comedian Tim Hawkins, 00:07:50.51\00:07:52.83 he has a routine where he talks about the 00:07:52.86\00:07:56.11 impossible prayer for God to answer that we are always 00:07:56.14\00:07:58.73 asking God to do the impossible like when it comes to our diet. 00:07:58.76\00:08:02.39 We will say oh Lord, thank you for this food, 00:08:02.42\00:08:05.78 thank you so much, help it to nourish our bodies, 00:08:05.81\00:08:08.88 thank you for these cheese balls, and we thank you for 00:08:08.91\00:08:12.91 this hamburger, and these deep fried French fries. 00:08:12.94\00:08:16.31 Lord, we pray that you will change the molecular structure 00:08:16.34\00:08:21.49 of this food as it passes from these lips down to our stomach, 00:08:21.52\00:08:26.02 that it will arrive down there maybe as a carrot, 00:08:26.05\00:08:29.02 or possibly as a sprig of broccoli. Lord we pray 00:08:29.05\00:08:33.05 that you will put a hedge of protection around our stomach, 00:08:33.08\00:08:35.94 our liver, and our kidneys as we put this poison 00:08:35.97\00:08:39.44 in our bodies. How is God supposed to answer 00:08:39.47\00:08:42.86 that kind of prayer when we say Lord bless the poisons 00:08:42.89\00:08:47.23 that we eat. Yeah, and you know a lot of people are 00:08:47.27\00:08:49.53 so wrapped up in this, this is the way it's done, 00:08:49.56\00:08:52.66 I have to eat this way, this is the way I was raised, 00:08:52.69\00:08:55.85 I can't do anything different, my receptors say that I have to 00:08:55.88\00:08:59.40 have this, I can't afford... Here's another excuse, 00:08:59.43\00:09:02.95 I can't afford it, it's to hard. You can do a show on that... 00:09:02.98\00:09:06.19 I can't do it and everyone just goes on and on and there is 00:09:06.22\00:09:08.82 always someone that has an excuse of why can't they do it, 00:09:08.85\00:09:11.50 but if you look at the evidence the people that do the best 00:09:11.53\00:09:14.76 in society are the people that eat the best in society. 00:09:14.79\00:09:18.00 So if you want to feel well and do well, I want you to come 00:09:18.03\00:09:21.23 away from this program and say maybe I can eat better, 00:09:21.26\00:09:24.46 we all can eat better no matter where we are at in that walk. 00:09:24.49\00:09:27.64 We can always do better, and you know what as we learn to eat 00:09:27.67\00:09:30.81 better, guess what, we feel better, we think better 00:09:30.84\00:09:34.04 we have to take less medicines, everything starts working 00:09:34.07\00:09:36.91 together. I can't tell you how many medicines I've taken 00:09:36.94\00:09:39.86 people off of through the years just because they start 00:09:39.89\00:09:42.70 to eat better and they put the connection between 00:09:42.73\00:09:45.07 what I eat, health, what I eat, this is a treatment for disease 00:09:45.10\00:09:48.77 it causes disease. You know I could be my best doctor by 00:09:48.80\00:09:51.80 just choosing good things to put in my body. 00:09:51.83\00:09:53.67 It makes a big difference. I'm reminded, I think it was 00:09:53.70\00:09:57.11 Joel Firman's family that told me that one of their 00:09:57.14\00:10:00.06 children were asked at school, you don't eat meat? 00:10:00.09\00:10:04.31 No, I don't eat meat. You don't eat animal products 00:10:04.34\00:10:06.73 at all? No, no eggs, and no fish and no milk. 00:10:06.76\00:10:12.75 Well if you don't eat meat, what do you eat? 00:10:12.78\00:10:15.09 And the answer was everything else. Yeah! 00:10:15.12\00:10:18.08 God has made sure that there is plenty of food out there, 00:10:18.11\00:10:21.87 plenty of variety, plenty of colors. 00:10:21.90\00:10:23.50 I know when I go into the grocery store I aim my cart 00:10:23.53\00:10:25.94 right to the produce section, that's where I go first. 00:10:25.97\00:10:28.08 And I think of the Garden of Eden, I think of how 00:10:28.11\00:10:32.69 Adam and Eve would wander through the garden, 00:10:32.72\00:10:34.51 all these beautiful colors and all these beautiful flavors 00:10:34.54\00:10:37.80 and all these wonderful foods there. 00:10:37.83\00:10:39.57 Healing foods were so available and I want you to have that 00:10:39.60\00:10:42.89 experience too. When you go to the grocery store 00:10:42.92\00:10:44.64 aim your cart towards that produce section and look at 00:10:44.67\00:10:48.18 the grapes and the potatoes and the apples, and the oranges, 00:10:48.21\00:10:51.63 and the broccoli and the kale, love kale, kale chips 00:10:51.66\00:10:56.34 number one. Wonderful foods there that you can learn how 00:10:56.37\00:11:00.17 to make. Food as your medicine, absolutely, and if you need help 00:11:00.20\00:11:04.39 to figure out how to do that, the internet is marvelous 00:11:04.42\00:11:07.05 at this for giving you recipes and there is all kinds of books 00:11:07.08\00:11:09.52 out there. But food should not be an issue 00:11:09.55\00:11:13.49 to someone who wants to do it God's way because 00:11:13.52\00:11:16.90 God has provided such an abundance of food 00:11:16.93\00:11:19.77 no matter where you live things will grow, 00:11:19.80\00:11:21.57 you can eat, you can be healthy. 00:11:21.60\00:11:22.83 You know, I don't want to let people know that 00:11:22.86\00:11:24.99 maybe not eating optimally that God doesn't love them... 00:11:25.02\00:11:27.57 It has nothing to do with love, it does not have to do 00:11:27.60\00:11:29.67 with love. God loves you He accepts you, 00:11:29.70\00:11:31.35 all this is... you know you can still walk with Him... Yes! 00:11:31.38\00:11:34.41 But He wants you to feel better. Yes! 00:11:34.44\00:11:36.36 He wants you to do better so you can serve Him better, 00:11:36.39\00:11:38.81 because that is really why we're here 00:11:38.84\00:11:40.67 I've often said, it is not about God loving us, 00:11:40.70\00:11:42.79 it's about us loving God in return. 00:11:42.82\00:11:46.73 When we have healthy bodies and minds, 00:11:46.76\00:11:48.47 we have the better ability to love God in return 00:11:48.50\00:11:52.02 and to see the nuances of His love in our lives 00:11:52.05\00:11:55.43 and His guidance in our lives.
