And our friend, Kristina McFeeters, 00:00:38.17\00:00:39.93 has done a nice cooking demonstration on how 00:00:39.97\00:00:42.80 to use sesame seeds. 00:00:42.84\00:00:44.17 So let's take a look. 00:00:44.21\00:00:45.54 Welcome to Kristina's Kitchen. 00:00:46.71\00:00:48.64 I'm Kristina McFeeters. 00:00:48.68\00:00:50.55 Today we are going to make a Toasted Sesame Salt. 00:00:50.58\00:00:56.02 It's kind of similar to a Parmesan, but it doesn't 00:00:56.05\00:00:59.52 have the cheese flavor. 00:00:59.55\00:01:00.89 It has an amazing nutty flavor. 00:01:00.92\00:01:03.56 And you can use it to sprinkle on salads, spaghetti, pizza, 00:01:03.59\00:01:08.70 or any vegetable dish. 00:01:08.73\00:01:10.70 The nice thing is its mostly sesame seeds, 00:01:10.73\00:01:14.00 with just a little salt. 00:01:14.04\00:01:15.37 We're going to take a half a cup of sesame seeds 00:01:15.40\00:01:18.61 and put them in a dry skillet. 00:01:18.64\00:01:21.71 And we're going to lightly toast them to bring out the flavor. 00:01:21.74\00:01:26.55 They may pop and make a little bit of a mess, but it's okay. 00:01:28.38\00:01:33.46 So we've toasted these sesame seeds until they've turned 00:01:36.16\00:01:39.39 nicely golden brown. 00:01:39.43\00:01:40.83 Now they're really hot, so we're going to let them cool for about 00:01:40.86\00:01:44.80 10 to 15 minutes before we grind them and add 00:01:44.83\00:01:48.20 the other ingredients. 00:01:48.24\00:01:49.57 Now we have our sesame seeds nicely cooled. 00:01:50.44\00:01:53.71 We are going to put them in our coffee grinder. 00:01:54.44\00:01:58.25 And then we're going to add a half a teaspoon of salt. 00:02:03.69\00:02:07.76 If you want it saltier, you can put more salt in it. 00:02:11.16\00:02:14.63 You can also put other ingredients in with it like 00:02:14.66\00:02:18.70 garlic powder, or even nutritional yeast, if you want 00:02:18.73\00:02:22.54 more of a cheesy flavor. 00:02:22.57\00:02:24.01 You don't have to grind it completely; 00:02:32.15\00:02:33.88 just so its chopped up coarsely. 00:02:33.92\00:02:36.35 And we're just going to put it in our little shaker. 00:02:36.38\00:02:40.42 I'm going to make myself a funnel. 00:02:40.46\00:02:44.36 Alright, we have it in our shaker, and we're ready to eat. 00:02:51.77\00:02:56.71 And this stuff is amazing. 00:02:56.74\00:02:59.01 I wish you could smell it right now. 00:02:59.04\00:03:00.74 It smells so good! 00:03:00.78\00:03:02.24 But if you don't have the time to make your own, 00:03:02.28\00:03:05.25 there are companies that make something very similar. 00:03:05.28\00:03:09.48 This one is by Celtic Sea Salt. 00:03:09.52\00:03:11.92 It's a toasted sesame seed with garlic, and it comes with its 00:03:11.95\00:03:16.59 own built in grinder. 00:03:16.62\00:03:17.96 And you can grind it directly on your food. 00:03:17.99\00:03:19.76 But there's nothing that beats the smell of freshly 00:03:19.79\00:03:23.97 toasted sesame seeds. 00:03:24.00\00:03:25.57 This stuff smells so good, and tastes amazing. 00:03:25.60\00:03:29.07 It's my favorite on salads, on spaghetti, 00:03:29.10\00:03:33.21 on garlic toast, on vegetables. 00:03:33.24\00:03:37.41 There's so many things you can use with this, and it just adds 00:03:37.45\00:03:40.92 so much flavor with very little salt. 00:03:40.95\00:03:43.39 Thanks, Kristina. So, you know, people don't think about 00:04:05.44\00:04:08.21 the power house that seeds have. 00:04:08.24\00:04:10.48 But seeds not only do they have a lot of good things that keep 00:04:10.51\00:04:13.58 us going, but they can be used in some cases 00:04:13.62\00:04:17.05 as a substitute for medicine. 00:04:17.09\00:04:18.42 I would much rather try some pumpkin seeds than take an 00:04:18.45\00:04:22.32 Ambien, which is a pill that makes you not 00:04:22.36\00:04:25.03 think better at night. 00:04:25.06\00:04:26.39 I'd much rather try that to increase my melatonin levels, 00:04:26.43\00:04:29.63 via this tryptophan serotonin pathway than that. 00:04:29.66\00:04:32.67 Yeah. Okay. 00:04:56.66\00:04:58.16 For instance, I had a person come with just 00:04:58.19\00:05:01.30 postpartum depression, okay? 00:05:01.33\00:05:03.33 And we put her on an exercise program, 00:05:03.37\00:05:06.60 and getting outside with Vitamin D. 00:05:06.63\00:05:09.77 And that helped change her chemistry, and she didn't need 00:05:09.80\00:05:12.64 to take a medicine. 00:05:12.67\00:05:14.01 Now, so nutrition can also help in depression. 00:05:14.04\00:05:17.61 There's different foods, and we've talked about them in other 00:05:17.65\00:05:20.18 programs that some chemicals decrease the monoamine oxidase. 00:05:20.22\00:05:25.69 We talked about different foods that would do that. 00:05:25.72\00:05:28.12 For instance, greens increase a chemical that can help 00:05:28.16\00:05:31.23 butyrate, that can help our good bowel flora. 00:05:31.26\00:05:34.10 We've talked about flax and nuts via the Omega 3 might 00:05:34.13\00:05:37.67 help with depression. 00:05:37.70\00:05:39.07 Here today we've talked about tryptophan, which might increase 00:05:39.10\00:05:42.74 serotonin, which is the chemical that they try to increase 00:05:42.77\00:05:46.64 in people that are depressed are serotonin. 00:05:46.68\00:05:49.24 A lot of these medicines, their whole purpose is to boost 00:05:49.28\00:05:51.71 serotonin levels.
