On today's program we're 00:00:01.36\00:00:02.70 discussing food as medicine. 00:00:02.73\00:00:04.07 And I'm your host Nick Evenson, joined here by Dr. James Marcum. 00:00:04.10\00:00:07.07 And Dr. Marcum, we are talking about turmeric 00:00:07.10\00:00:09.60 on today's program. 00:00:09.64\00:00:10.97 And there's an interesting fact about that 00:00:11.01\00:00:13.41 that I found online here. 00:00:13.44\00:00:14.78 90% of the world's turmeric comes from India. Right. 00:00:14.81\00:00:18.18 And did you know that at weddings in India, 00:00:18.21\00:00:19.65 they'll actually use the turmeric as a paste on the skin, 00:00:19.68\00:00:22.88 the face and arms of the bride and groom; 00:00:22.92\00:00:24.79 just kind of as a decoration. 00:00:24.82\00:00:26.42 Yeah. And also it will make your skin turn yellow. Exactly. 00:00:26.45\00:00:29.76 Yeah, yeah. Online; it's a pigment. Uh huh. 00:00:29.79\00:00:32.46 It's a pigment that acts from curcumin. 00:00:32.49\00:00:34.40 That's very interesting because I talked about all the 00:00:34.43\00:00:37.43 different articles on this. 00:00:37.47\00:00:38.80 This has been studied very well. Right. 00:00:38.83\00:00:40.77 And some are using this as a treatment for skin lesions. 00:00:40.80\00:00:45.07 Because, remember we talked about inflammation. 00:00:45.11\00:00:48.21 It seems to cut back inflammations. 00:00:48.24\00:00:50.15 It seems to help some things that will help different 00:00:50.18\00:00:52.01 types of skin lesions. 00:00:52.05\00:00:53.38 And if you think, you know, it helped me with... 00:00:53.42\00:00:56.25 I had some inflammation on my tendons in my feet. 00:00:56.28\00:00:59.79 It helped that. We know it helps other types of inflammation 00:00:59.82\00:01:02.99 like arthritis, different types of inflammation in the bowels, 00:01:03.02\00:01:06.56 like ulcerative colitis in Crohn's disease. 00:01:06.59\00:01:09.06 It might help that. 00:01:09.10\00:01:10.43 So it seems to have some anti-inflammatory cells that 00:01:10.47\00:01:13.37 turns down all those inflammatory cells, 00:01:13.40\00:01:15.50 which tend to, in certain types of inflammation, 00:01:15.54\00:01:17.57 actually damage the body. 00:01:17.61\00:01:19.17 So it seems to be, not only does it have anti-cancer effects, 00:01:19.21\00:01:23.01 but it seems to have anti-inflammatory effects that 00:01:23.04\00:01:26.15 helps knock down the immune cells that we 00:01:26.18\00:01:28.68 don't want going crazy. 00:01:28.72\00:01:30.05 You know, the excito kinds, and some of those dangerous ones. 00:01:30.09\00:01:32.89 Uh huh. So I think the literature is very strong to 00:01:32.92\00:01:36.59 recommend that unless you have gallstones or kidney stones. 00:01:36.62\00:01:39.53 I think turmeric is a great thing we can use 00:01:39.56\00:01:42.36 to add to a regimen to not only treat disease 00:01:42.40\00:01:44.87 but prevent disease. 00:01:44.90\00:01:46.23 And I think everyone has a little inflammation in their 00:01:46.27\00:01:48.27 body every now and then. Sure. Yeah. 00:01:48.30\00:01:50.34 See, now we talked earlier about different ways 00:01:50.37\00:01:52.87 that you can use turmeric. 00:01:52.91\00:01:54.24 You can use the root or the supplement pills. 00:01:54.28\00:01:56.38 We want to talk about, maybe, a few ways you can actually 00:01:56.41\00:01:59.85 put it in your food using the root in the powder form. Okay. 00:01:59.88\00:02:03.28 And to do that we went and sat down with our friend, 00:02:03.32\00:02:05.45 Kristina McFeeters, of Kristina's Kitchen, 00:02:05.49\00:02:07.22 and she showed us a way to incorporate it in a daily meal. 00:02:07.26\00:02:10.76 So let's take a look at that. 00:02:10.79\00:02:12.13 Welcome to Kristina's Kitchen. 00:02:12.16\00:02:15.30 I'm Kristina McFeeters. 00:02:15.33\00:02:17.20 Turmeric is a yellow root. 00:02:17.23\00:02:19.57 It's extremely bitter, very strong, 00:02:19.60\00:02:22.87 and it's used as a spice often in Indian curries. 00:02:22.90\00:02:26.61 And it also is very bright yellow, as you can see here. 00:02:26.64\00:02:32.35 And anything that you cook it in, when it cooks it actually 00:02:32.38\00:02:36.58 gets a brighter yellow flavor than when it's raw. 00:02:36.62\00:02:39.22 Today I'm going to show you how to make my favorite 00:02:39.25\00:02:43.43 scrambled tofu using the turmeric to both make it yellow, 00:02:43.46\00:02:48.60 and give it a hint of flavor, and also so we can incorporate 00:02:48.63\00:02:52.40 turmeric in for its anti-inflammatory 00:02:52.43\00:02:54.70 properties as well. 00:02:54.74\00:02:56.07 To start out we're going to take a block of water packed tofu. 00:02:56.10\00:02:59.84 You want firm or extra firm. 00:02:59.87\00:03:02.68 And when you take it you want to get the water out of it. 00:03:02.71\00:03:07.28 We are going to drain it thoroughly. 00:03:07.32\00:03:09.82 And then I always like to rinse it, so that way there's 00:03:09.85\00:03:16.52 some fresh water on it. 00:03:16.56\00:03:17.93 And drain that water off as well. 00:03:21.43\00:03:23.06 What we're going to do is we're going to break this tofu up into 00:03:24.80\00:03:27.90 chunks into a small skillet, or a saucepan. 00:03:27.94\00:03:32.44 It doesn't have to be perfectly cut. 00:03:32.47\00:03:34.84 Just break it up however you like. 00:03:34.88\00:03:38.51 Now we have the tofu ready, and so we are going to 00:03:38.55\00:03:42.22 add our seasonings. 00:03:42.25\00:03:43.59 Our first one we're going to put in 1 teaspoon of salt, 00:03:43.62\00:03:49.22 1 teaspoon of onion powder, 1/2 a teaspoon of garlic powder, 00:03:50.83\00:03:59.17 and a 1/4 teaspoon of turmeric. 00:04:02.50\00:04:04.74 I know that doesn't seem like much, but turmeric, a little bit 00:04:04.77\00:04:09.58 goes a long ways, because it's very strong. 00:04:09.61\00:04:12.15 Last we will use our wet ingredients. 00:04:12.18\00:04:14.78 This is a toasted sesame oil, which is optional. 00:04:14.82\00:04:18.75 If you don't have it, it'll still taste good without it. 00:04:18.79\00:04:21.59 But we're going to put 1 teaspoon in. 00:04:21.62\00:04:25.23 And lastly, we're going to put 1 teaspoon of lemon juice. 00:04:26.53\00:04:29.10 This adds a little bit of a sourness to it; 00:04:29.13\00:04:32.50 kind of gives it a little bit more of an eggie flavor. 00:04:32.53\00:04:35.27 If you want something that tastes almost exactly like 00:04:35.30\00:04:38.27 scrambled eggs, instead of salt you can use black salt. 00:04:38.31\00:04:42.68 And that will give a very strong eggie flavor. 00:04:42.71\00:04:45.95 Now we're going to cook our tofu. 00:04:45.98\00:04:48.05 Turn your stove on high, and bring it to a boil. 00:04:48.08\00:04:51.69 Stir your seasonings in so that the turmeric, and some of the 00:04:51.72\00:04:56.73 other seasonings are evenly coated over your tofu. 00:04:56.76\00:05:01.80 And then once it starts boiling, turn it down to low 00:05:01.83\00:05:04.50 and simmer it for about five minutes, 00:05:04.53\00:05:06.17 and then you're ready to serve. 00:05:06.20\00:05:07.64 Okay, our scrambled tofu is done. 00:05:07.67\00:05:10.34 Isn't that amazing? 00:05:10.37\00:05:11.71 And see how simple that is? 00:05:11.74\00:05:14.04 Just this simple ingredient, turmeric, 00:05:14.08\00:05:16.85 can give you anti-inflammatory properties, 00:05:16.88\00:05:20.38 and help you make a delicious meal that's so simple and easy. 00:05:20.42\00:05:25.12 Be sure and try this at home. 00:05:25.15\00:05:26.72 Thanks Kristina.
