Welcome back to the Ultimate Prescription. 00:00:01.36\00:00:02.70 I'm your host, Nick Evenson, here with Dr. James Marcum. 00:00:02.73\00:00:04.97 And on today's program we are talking about food as medicine. 00:00:05.00\00:00:08.60 And specifically we're talking about almonds and walnuts. 00:00:08.64\00:00:11.71 And, Dr. Marcum, let's hear a little bit about 00:00:11.74\00:00:14.14 nutrient composition. 00:00:14.18\00:00:15.88 And I know that's an important thing when we're 00:00:15.91\00:00:17.25 talking about nutrition. 00:00:17.28\00:00:18.61 What is nutrient composition, and how does it relate to nuts? 00:00:18.65\00:00:20.95 Nutrient composition is important, but you know, 00:00:20.98\00:00:24.09 I'm still thinking about how we can make health 00:00:24.12\00:00:26.22 programs more fun. Oh, how's that? 00:00:26.25\00:00:28.52 We could play nutty games. 00:00:28.56\00:00:30.33 See what I'm saying? 00:00:30.36\00:00:31.86 What we could do is we could play with these nuts, 00:00:31.89\00:00:34.53 and you know, play them back and forth. 00:00:34.56\00:00:35.93 Like little footballs? 00:00:35.96\00:00:37.30 Yeah. You think people would like that? 00:00:37.33\00:00:38.70 See the value of that? 00:00:38.73\00:00:40.07 I think they might value your thoughts on nutrient composition 00:00:40.10\00:00:43.20 a little bit better. 00:00:43.24\00:00:44.57 Okay. Well, I'll talk about some nutrient compositions 00:00:44.61\00:00:46.68 rather than eat the nuts. 00:00:46.71\00:00:48.21 But our body was designed to have so much... 00:00:48.24\00:00:51.38 You know, the three big things we put in our body are: 00:00:51.41\00:00:53.92 carbohydrates, fats, and proteins. 00:00:53.95\00:00:57.15 Well, what's an example of a carbohydrate? 00:00:57.19\00:00:58.52 Yes, well, it's hard to say, but for instance a potato 00:00:58.55\00:01:03.32 is mainly made of carbohydrates, but also has some 00:01:03.36\00:01:06.39 proteins and fat in it. 00:01:06.43\00:01:07.76 Corn is mainly made of carbohydrates, 00:01:07.80\00:01:10.87 but also has some fats. 00:01:10.90\00:01:12.23 A lot of people use the word starch for carbohydrates. 00:01:12.27\00:01:15.74 Carbohydrates are basically sugars. Okay. 00:01:15.77\00:01:18.61 Different types of sugars. 00:01:18.64\00:01:19.97 So originally our body was designed to mainly 00:01:20.01\00:01:22.74 use sugar for energy. 00:01:22.78\00:01:25.08 And we have sugar, but we also have protein, and fats. 00:01:25.11\00:01:29.98 Well, we know that nuts have healthy fats. Right. 00:01:30.02\00:01:33.56 So we want to try a nutrient composition to eat no more than 00:01:33.59\00:01:36.93 about 15% of our calories in fat. 00:01:36.96\00:01:39.39 Now if we eat more calories than that in fat, 00:01:39.43\00:01:43.03 guess what? it's stored. 00:01:43.06\00:01:44.40 It can be stored in our cells and cause conditions like 00:01:44.43\00:01:47.64 diabetes, or it could be stored in our arteries and called 00:01:47.67\00:01:51.14 atherosclerosis and blockage in arteries. 00:01:51.17\00:01:53.41 The fats that are the most dangerous are... 00:01:53.44\00:01:56.31 You've heard about the trans fats. Right. 00:01:56.34\00:01:58.75 And fats that come from animals. 00:01:58.78\00:02:00.38 Those are fats that are the most dangerous. 00:02:00.42\00:02:02.55 And plant based fats don't tend to be as dangerous. 00:02:02.58\00:02:06.76 But if you eat too many of a good thing it's dangerous. 00:02:06.79\00:02:09.69 You know, too much of any good thing; like if you eat cashews 00:02:09.72\00:02:12.13 all day, and that's all you get; makes your cal's and fats. 00:02:12.16\00:02:14.73 So our bodies may have most of our calories in carbohydrates, 00:02:14.76\00:02:18.90 about 10 to 15% in fat, and about 10 to 15% in protein, 00:02:18.93\00:02:23.87 unless we're sick. Right. 00:02:23.91\00:02:25.87 Now that's as a baseline. 00:02:25.91\00:02:27.71 Now there's always exceptions to every rule. 00:02:27.74\00:02:30.31 People that are healing, or athletes 00:02:30.35\00:02:32.41 might need to do things. 00:02:32.45\00:02:33.78 Certain types of disease conditions might need a 00:02:33.82\00:02:36.85 little bit different. 00:02:36.89\00:02:38.22 And you talk to your doctor. 00:02:38.25\00:02:39.59 But God made us sort of that nutrient composition. 00:02:39.62\00:02:41.19 And He also made us to have most of those 00:02:41.22\00:02:43.79 calories from plants. 00:02:43.83\00:02:46.26 And if you think about it, the people of China, you know, 00:02:46.29\00:02:49.56 they were people of rice. 00:02:49.60\00:02:51.13 Rice is predominately carbohydrates, 00:02:51.17\00:02:53.47 10 to 15% protein, 10 to 15% you know, of fats. Right. 00:02:53.50\00:02:59.17 People, the Aztecs, they were people of corn. Uh huh. 00:02:59.91\00:03:02.74 Corn was their staple. 00:03:02.78\00:03:04.11 Again, the same nutrient composition. 00:03:04.15\00:03:06.01 How about the Inca's? 00:03:06.05\00:03:07.88 They were people of potatoes; about the same 00:03:07.92\00:03:09.82 nutrient compositions. 00:03:09.85\00:03:11.19 Well, that's about the same nutrient composition that 00:03:11.22\00:03:14.06 our body runs best at. 00:03:14.09\00:03:15.86 And when we put the types of fat, we found that these fats 00:03:15.89\00:03:19.46 that come in nuts have the Omega 3's. 00:03:19.49\00:03:22.06 The Omega 3's can make Omega 6's. 00:03:22.10\00:03:24.70 They can also make other healthy fats, and our brain 00:03:24.73\00:03:27.70 especially needs fat for metabolism. 00:03:27.74\00:03:29.97 So our brain does need, our bodies do need some fat, 00:03:30.01\00:03:33.48 but not as much as the standard American diet. 00:03:33.51\00:03:36.54 Guess how much it's estimated that a person 00:03:36.58\00:03:38.65 eats in fat every day, of calories in the United States? 00:03:38.68\00:03:42.12 35%. 35 to 40%! Alright! 00:03:42.15\00:03:45.85 If you do that over a long period of time guess what? 00:03:45.89\00:03:48.89 And you don't run or burn that fat off. 00:03:48.92\00:03:50.73 You're going to store a lot. 00:03:50.76\00:03:52.09 Exactly! And it stores in bad places. 00:03:52.13\00:03:54.43 So, I mean, so if someone says, You're a little nutty, 00:03:54.46\00:03:58.00 and you eat nuts for your fats, that might be a good thing. 00:03:58.03\00:04:02.17 Right. So it is possible to get too much of a good thing. 00:04:02.20\00:04:04.61 And, you know, there's many different ways to eat nuts. 00:04:04.64\00:04:07.11 I like to eat it raw. 00:04:07.14\00:04:08.91 Some people like to put it on oatmeal. 00:04:08.94\00:04:11.85 Some people put it on salad. 00:04:11.88\00:04:13.38 Some people make dishes with these. Right. 00:04:13.42\00:04:15.88 But, you know, there's many ways that we can use nuts, 00:04:15.92\00:04:18.62 and incorporate them into our diets. 00:04:18.65\00:04:20.59 Right. Our friend, Khristina McFeeters, has a little cooking 00:04:20.62\00:04:23.79 demo where she's going to show us a fun way to make a sweet 00:04:23.83\00:04:26.36 treat using almonds and walnuts. 00:04:26.39\00:04:28.60 Let's take a look. 00:04:28.63\00:04:30.60 Welcome to Kristina's Kitchen. 00:04:30.63\00:04:32.23 I'm Kristina McFeeters. 00:04:32.27\00:04:34.14 Today we'll explore one of my favorite ways to add almonds and 00:04:34.17\00:04:38.77 walnuts to my diet. 00:04:38.81\00:04:40.28 Healthy nuts are amazing, and they're easy to find. 00:04:40.31\00:04:43.95 You can find raw nuts usually near the produce section of your 00:04:43.98\00:04:48.35 grocery store, or if they're not there you can often find them 00:04:48.38\00:04:52.42 in the baking isle. 00:04:52.45\00:04:53.79 Walnuts taste the best if they're lightly toasted. 00:04:53.82\00:04:57.09 We like to toast them in the oven by putting them on a cookie 00:04:57.13\00:05:00.80 sheet and baking them at 200% for about 40 to 45 minutes. 00:05:00.83\00:05:05.63 Almonds, you can roast the same way: lightly toasted in the 00:05:05.67\00:05:10.77 oven, or you can eat them raw. 00:05:10.81\00:05:12.14 They're amazing both ways. 00:05:12.17\00:05:13.88 And what we're going to make today is one of 00:05:13.91\00:05:16.78 my favorite desserts. 00:05:16.81\00:05:18.65 And it's so simple and easy, you'll want to make it, too. 00:05:18.68\00:05:22.48 Here we have Medjool dates. 00:05:22.52\00:05:24.62 They're one of the really soft, juicy, sweet dates. 00:05:24.65\00:05:29.92 We're going to take the pit out of it, and turn it inside out. 00:05:32.26\00:05:37.20 Put a walnut or an almond inside it, roll it up, 00:05:39.50\00:05:46.64 pinch it closed, and then roll it in coconut. 00:05:46.68\00:05:52.81 It's ready to eat. 00:05:55.75\00:05:57.09 See how simple and easy that was? 00:05:57.12\00:05:59.72 And it's so delicious, yet so full of amazing nutrition 00:05:59.75\00:06:05.33 to help a healthy brain, a healthy heart, prevent heart 00:06:05.36\00:06:09.60 disease, all through a simple amazing dessert. 00:06:09.63\00:06:13.13 Be sure and try this at home. 00:06:13.17\00:06:14.80 You know, and thanks Kristina. 00:06:16.47\00:06:17.81 You know, we appreciate you sharing some fresh ideas 00:06:17.84\00:06:19.47 on how we can incorporate more healthy foods into our diet. 00:06:19.51\00:06:22.74 And Dr. Marcum, we've had some questions come into our website. 00:06:22.78\00:06:25.45 That's HeartwiseMinistries. org. 00:06:25.48\00:06:27.92 You can send me your question there, and Dr. Marcum, or one of 00:06:27.95\00:06:30.42 our people on our advisory board will give you some 00:06:30.45\00:06:33.66 health advice for free. 00:06:33.69\00:06:35.02 That's a free service we do. 00:06:35.06\00:06:36.39 You can also submit your prayer requests there, 00:06:36.42\00:06:38.43 and ask for prayer, and pray for others. 00:06:38.46\00:06:40.36 And there's also radio programs, health articles, 00:06:40.40\00:06:42.30 and lots of good health resources there. 00:06:42.33\00:06:43.90 So check out of website at HeartwiseMinistries. org. 00:06:43.93\00:06:46.53 But one person writes in and asks, Is there some healthy food 00:06:46.57\00:06:50.37 that might help satisfy my sweet tooth? 00:06:50.41\00:06:53.44 Oh, boy, healthy foods that... 00:06:53.48\00:06:55.28 Oh yeah, there are. Okay? 00:06:55.31\00:06:57.38 And, you know, God has given us sweet things to eat in nature. 00:06:57.41\00:07:01.08 Lots of good things. 00:07:01.12\00:07:02.45 And it's not so concentrated, and it's not so processed. 00:07:02.48\00:07:07.22 Yeah. And it doesn't stimulate those addictive dopamine 00:07:07.26\00:07:11.19 receptors in our brain. 00:07:11.23\00:07:12.56 That kind of stuff. 00:07:12.59\00:07:13.93 But let us talk about what are some things that people can 00:07:13.96\00:07:15.60 add to their food that might help it, that they might 00:07:15.63\00:07:17.63 not of thought about. Yeah. 00:07:17.67\00:07:19.27 Well, one thing that people might think about is honey. 00:07:19.30\00:07:21.40 You know, honey's a good thing to add. 00:07:21.44\00:07:23.77 It's, you know, it's been around. 00:07:23.81\00:07:25.14 It's a biblical food that's been around for a long time. 00:07:25.17\00:07:27.78 You know, we've seen it throughout the 00:07:27.81\00:07:30.25 Bible as a sweetener. 00:07:30.28\00:07:31.71 People can add that to just about anything. 00:07:31.75\00:07:33.85 And the nice thing about honey is it has a different type of 00:07:33.88\00:07:37.65 sugar that's metabolized in the body more evenly. 00:07:37.69\00:07:41.12 Whereas processed foods get into the body real quick, 00:07:41.16\00:07:44.59 causes our insulin levels to shoot up real fast. 00:07:44.63\00:07:47.66 You know, that sugar rush. Right. 00:07:47.70\00:07:49.40 You know, the sugars in honey don't tend to do that. 00:07:49.43\00:07:53.34 Another one that people don't think about is molasses. 00:07:53.37\00:07:56.44 Did you ever use molasses? 00:07:56.47\00:07:58.14 I've had it several times. 00:07:58.17\00:07:59.51 Yeah, molasses. Some people use molasses. 00:07:59.54\00:08:01.21 Some people use a little bit of things like agave syrup. Sure. 00:08:01.24\00:08:06.72 Agave's a healthy type syrup. 00:08:06.75\00:08:08.08 Applesauce is another natural sweetener. Right. 00:08:08.12\00:08:11.75 Some people use dates; the sugar in dates to make things 00:08:11.79\00:08:14.86 taste a little sweeter. 00:08:14.89\00:08:16.22 One that's a natural sugar that's found in grapes and 00:08:16.26\00:08:21.10 pears is a chemical called erythritol. 00:08:21.13\00:08:24.13 And it's spelled erythritol. 00:08:24.17\00:08:28.80 And a lot of stores have that, and that's sort of a healthier 00:08:28.84\00:08:32.94 sugar that's more of a natural sugar that you can 00:08:32.97\00:08:36.01 use to sweeten your food that sort of adds a 00:08:36.04\00:08:40.95 little bang to that. 00:08:40.98\00:08:42.45 But in thinking about, you know, the things that I really like, 00:08:42.48\00:08:45.69 I just like to, for instance, in the morning my oatmeal... 00:08:45.72\00:08:49.29 Rather than add honey, I have berries on it. Right. 00:08:49.32\00:08:51.63 You know that natural that comes from berries. 00:08:51.66\00:08:53.60 So I try to use berries and natural fruits to 00:08:53.63\00:08:57.43 sort of make it more. 00:08:57.47\00:08:58.80 And if I really need a little extra, and I'm really hurting, 00:08:58.83\00:09:00.80 I use, personally, either honey or Agave. 00:09:00.84\00:09:03.54 Now my wife throws applesauce in the things. 00:09:03.57\00:09:06.17 There's a lot of people that bake use different things. 00:09:06.21\00:09:08.24 And that's why this... I wanted to bring up erythritol. 00:09:08.28\00:09:11.31 If you're a baker you might want to do it. 00:09:11.35\00:09:13.65 And talking about the different types of sugars, you know, 00:09:13.68\00:09:17.19 once you do this it could make food a little bit more fun 00:09:17.22\00:09:19.85 when you have good substitutes. 00:09:19.89\00:09:21.42 And it looked like Kristina was having fun when she was making 00:09:21.46\00:09:24.23 those things in the coconut. 00:09:24.26\00:09:25.86 So talking about nutrition, it can be a fun thing to do. 00:09:25.89\00:09:29.80 That's right.
