Welcome back to the Ultimate Prescription. 00:00:01.36\00:00:02.70 And on today's program we're talking about food 00:00:02.73\00:00:04.50 as medicine and specifically, we're talking about greens. 00:00:04.53\00:00:08.54 And I'm Nick Evenson, your host here, 00:00:08.57\00:00:10.01 and we're talking with Dr. James Marcum. 00:00:10.04\00:00:11.71 And, Dr. Marcum, what are some of the really practical ways 00:00:11.74\00:00:14.54 we can apply this in our lives? 00:00:14.58\00:00:15.91 Well, you know, we want to eat 00:00:15.94\00:00:17.81 at least two servings of green a day. 00:00:17.85\00:00:20.68 Well, you can eat that raw or added to a salad 00:00:20.72\00:00:23.92 which is what most people do. 00:00:23.95\00:00:25.75 And remember, it doesn't have to be, 00:00:25.79\00:00:27.19 you know, this is arugula which is very good in nitrates 00:00:27.22\00:00:30.19 which is what I recommend to my heart patients. 00:00:30.23\00:00:33.70 But it can be anything that's green, you know, 00:00:33.73\00:00:35.66 anything that green, 00:00:35.70\00:00:37.03 some broccoli has some advantages, 00:00:37.07\00:00:38.87 cilantro, different green things 00:00:38.90\00:00:41.40 have some of the same benefits, 00:00:41.44\00:00:42.77 they all have some of the good stuff 00:00:42.80\00:00:44.31 that we talked about, the chlorophyll, 00:00:44.34\00:00:45.74 the fiber, the nitrates, the antioxidants in them, 00:00:45.77\00:00:48.88 it helps the bowels get going, 00:00:48.91\00:00:50.41 give us a lot of fiber with roughage, 00:00:50.45\00:00:52.98 it's all good for us. 00:00:53.01\00:00:54.35 But you know, practical ways are very important. 00:00:54.38\00:00:56.18 Lot of people don't know how to prepare greens. 00:00:56.22\00:00:58.32 That's right. 00:00:58.35\00:00:59.69 And because of this, 00:00:59.72\00:01:01.06 I'm not very good in the kitchen. 00:01:01.09\00:01:02.42 Are you, Dr. Marcum? Nope. 00:01:02.46\00:01:03.79 All right. That's why I eat raw. 00:01:03.83\00:01:05.16 We've asked for some help with this next part. 00:01:05.19\00:01:06.93 We wanted to show some simple preparations 00:01:06.96\00:01:08.96 for some of the different foods that we're talking about. 00:01:09.00\00:01:10.90 And so our friend Kristina McFeeters, 00:01:10.93\00:01:12.37 she runs Kristina's kitchen, 00:01:12.40\00:01:13.74 has done a cooking demo about greens. 00:01:13.77\00:01:15.10 And, Dr. Marcum, tell us just briefly who is Kristina? 00:01:15.14\00:01:17.14 How did you meet her? 00:01:17.17\00:01:18.51 Yeah, Kristina lives in one of the poorest counties 00:01:18.54\00:01:20.91 in rural Kentucky, McCreary County. 00:01:20.94\00:01:23.75 And she has a mission there 00:01:23.78\00:01:25.71 of helping people improve their health, 00:01:25.75\00:01:29.18 introduce them into biblical prescriptions, 00:01:29.22\00:01:31.65 and once they get interested in 00:01:31.69\00:01:33.02 how God wants our bodies to feel better, 00:01:33.05\00:01:35.02 their minds feel better, their worship feel better, 00:01:35.06\00:01:37.36 so she has a restaurant 00:01:37.39\00:01:39.79 that serves whole food plant-based food, 00:01:53.91\00:01:56.34 Welcome to Kristina's Kitchen. 00:01:56.38\00:01:58.51 I'm Kristina McFeeters. 00:01:58.55\00:02:00.38 Today we're gonna explore one of my favorite ways 00:02:00.42\00:02:02.95 to incorporate kale into my diet. 00:02:02.98\00:02:04.85 Two of my favorite types of kale, you can see here. 00:02:04.89\00:02:09.39 We have the little baby kale 00:02:09.42\00:02:12.63 and then we also have the large kale. 00:02:12.66\00:02:15.83 Both of these you can find in most grocery stores 00:02:15.86\00:02:18.63 in your produce section. 00:02:18.67\00:02:20.20 The baby kale, if you want to eat kale raw, 00:02:20.24\00:02:23.44 this is your best to use. 00:02:23.47\00:02:25.27 Because it's tender, it's very mild in flavor, 00:02:25.31\00:02:28.84 it chops up really nicely in salads. 00:02:28.88\00:02:31.58 And that's one of my favorite ways 00:02:31.61\00:02:33.58 to use the baby kale. 00:02:33.62\00:02:34.98 I want to show you 00:02:35.02\00:02:36.35 one of my favorite ways to steam kale, 00:02:36.38\00:02:39.29 and so I'm gonna show you on the big kale. 00:02:39.32\00:02:41.79 The first thing that I'm gonna do is 00:02:41.82\00:02:44.59 I'm going to cut this spine off, 00:02:44.63\00:02:47.60 so I have just the kale itself. 00:02:47.63\00:02:53.13 You know, as I said, 00:02:53.17\00:02:54.57 my favorite thing to do is to steam it. 00:02:54.60\00:02:57.37 A lot of people like to boil it, 00:02:57.41\00:02:59.27 or sauté it, or roast it, 00:02:59.31\00:03:01.71 and all of those are okay, 00:03:01.74\00:03:03.58 but if you want the maximum amount of nutrition, 00:03:03.61\00:03:06.82 you want to steam your kale. 00:03:06.85\00:03:09.02 And the reason is 00:03:09.05\00:03:10.39 because steam never gets above 212 degrees. 00:03:10.42\00:03:13.86 And so you get the maximum nutritional benefit from it 00:03:13.89\00:03:17.13 because it's not killing all the vitamins 00:03:17.16\00:03:18.66 and minerals out of it. 00:03:18.69\00:03:20.03 We're just gonna chop this into some pieces here. 00:03:20.06\00:03:26.03 So we're gonna put this chopped kale 00:03:26.07\00:03:29.07 into our steam pot here. 00:03:29.10\00:03:33.44 And you can see it's nice and steamy, 00:03:33.48\00:03:36.14 and water is boiling underneath it. 00:03:36.18\00:03:38.95 And we're gonna put this kale in, 00:03:38.98\00:03:40.38 and this may look like a lot of kale, 00:03:40.42\00:03:42.82 but it's really not. 00:03:42.85\00:03:44.79 It's going to shrink a lot once it gets cooking. 00:03:44.82\00:03:50.33 So we're just gonna put that in. 00:03:50.36\00:03:53.50 And this type of kale because it's more tough, 00:03:53.53\00:03:58.73 takes longer to cook. 00:03:58.77\00:04:00.37 So if you were to steam something like this, 00:04:00.40\00:04:03.37 it would steam in a very short amount of time 00:04:03.41\00:04:05.94 anywhere from 5 to 12 minutes. 00:04:05.97\00:04:08.54 But if you're steaming something more tough 00:04:08.58\00:04:11.65 and mature leaves, 00:04:11.68\00:04:13.85 it can take anywhere from 10 to 20 minutes. 00:04:13.88\00:04:17.02 We're going to add a couple more things to this for flavor. 00:04:17.05\00:04:20.82 Well, those are steaming. 00:04:20.86\00:04:23.26 One of my favorite things to put in is some onions, 00:04:23.29\00:04:26.59 because if you're steaming the onion in with it 00:04:26.63\00:04:29.56 with those greens, 00:04:29.60\00:04:31.13 it's gonna cook that onion flavor into them, 00:04:31.17\00:04:34.00 just make them absolutely wonderful. 00:04:34.04\00:04:36.34 So we're gonna peel this onion, and then we're gonna chop it, 00:04:36.37\00:04:40.38 and then we will also 00:04:40.41\00:04:42.14 mince some garlic cloves with it as well. 00:04:42.18\00:04:47.15 So the onion doesn't have to be chopped in small pieces, 00:04:47.18\00:04:51.39 you can chop them fairly large if you like. 00:04:51.42\00:04:54.29 All right, so we have our onion now. 00:05:05.17\00:05:07.30 We're gonna put that in with the steaming kale. 00:05:07.34\00:05:11.57 And while you got it here, 00:05:11.61\00:05:13.14 we're gonna just mince some garlic directly into it. 00:05:13.17\00:05:16.44 I've got two cloves of garlic here. 00:05:16.48\00:05:19.88 So there's one and there's two, 00:05:19.91\00:05:24.62 and we're just gonna mince that right in. 00:05:24.65\00:05:27.76 Put that on top and cover the lid back on 00:05:27.79\00:05:31.39 and let that steam, until it's ready. 00:05:31.43\00:05:34.33 See how fun and simple this is. 00:05:34.36\00:05:37.40 It's full of nutrition, delicious, 00:05:37.43\00:05:40.60 great source of fiber, and it's so easy. 00:05:40.64\00:05:44.34 Be sure and try this at home. 00:05:44.37\00:05:47.18 Now, Dr. Marcum, I'm not very good in the kitchen 00:05:47.21\00:05:50.15 but that did look pretty simple. 00:05:50.18\00:05:51.51 I think I could do it. 00:05:51.55\00:05:52.88 Well, you know, Nick, she said the word fun. 00:05:52.91\00:05:56.32 I would have a hard time saying that that would be fun, 00:05:56.35\00:05:59.35 but I like things that are easy, 00:05:59.39\00:06:01.19 you know, if that's easy for people 00:06:01.22\00:06:03.09 to incorporate greens into their lives, 00:06:03.12\00:06:05.56 I think that's a great thing to do. 00:06:05.59\00:06:07.23 That's right. 00:06:07.26\00:06:08.60 And we'd really like to thank Kristina 00:06:08.63\00:06:09.96 for 00:06:21.34\00:06:22.74 we know there's lots of different kinds of greens, 00:06:22.78\00:06:25.21 there is bok choy, arugula, all different kinds. 00:06:25.25\00:06:29.12 And they're all delicious and have different flavors. 00:06:29.15\00:06:31.95 But is there any cautions, 00:06:31.99\00:06:33.89 is there any particular groups of people 00:06:33.92\00:06:36.26 that need to be concerned 00:06:36.29\00:06:37.63 about eating too much greens of certain kinds. 00:06:37.66\00:06:39.63 That's a good question because the people 00:06:39.66\00:06:41.26 that are on blood thinners, 00:06:41.30\00:06:42.63 specifically the blood thinner called coumadin, 00:06:42.66\00:06:45.63 warfarin, jantoven are other names of it. 00:06:45.67\00:06:48.67 This can interact with that medication. 00:06:48.70\00:06:50.94 Okay. 00:06:50.97\00:06:52.31 So greens actually, if they're on these medicines 00:06:52.34\00:06:54.41 makes the blood thicker, okay. 00:06:54.44\00:06:56.61 So for instance, if you're on blood thinners, 00:06:56.64\00:06:58.68 because of a heart valve and you're taking coumadin, 00:06:58.71\00:07:01.55 right, to make the blood thin 00:07:01.58\00:07:03.05 because you don't want to have a stroke from that valve. 00:07:03.08\00:07:05.62 If you take greens that might make the blood thicker, 00:07:05.65\00:07:08.42 increasing your risk of having a stroke. 00:07:08.46\00:07:11.26 Now there are some newer blood thinners 00:07:11.29\00:07:12.86 that we use for other things like atrial fibrillation 00:07:12.89\00:07:15.23 that doesn't have a green interaction. 00:07:15.26\00:07:17.63 So whenever you start eating greens 00:07:17.67\00:07:19.90 and you let your doctor know. 00:07:19.93\00:07:21.37 Now and my patients they say, "I want to eat greens, 00:07:21.40\00:07:23.57 I want to eat greens, Dr. Marcum." 00:07:23.61\00:07:24.97 I say, well, if you eat the same amount everyday 00:07:25.01\00:07:27.81 and we check your blood thinner, 00:07:27.84\00:07:29.51 then we can sort of monitor the dose of the blood thinner 00:07:29.54\00:07:32.55 based on the amount of greens. 00:07:32.58\00:07:34.02 So that's one group that has to be very careful 00:07:34.05\00:07:37.65 with how much greens they eat, and let your doctor know, 00:07:37.69\00:07:40.19 you know, what you're eating every day. 00:07:40.22\00:07:41.92 But greens is very beneficial and the studies have all shown, 00:07:41.96\00:07:46.03 how many great things it does for a body. 00:07:46.06\00:07:48.36 So I'm gonna make that commercial someday 00:07:48.40\00:07:50.67 about how greens they do our body good. 00:07:50.70\00:07:52.70 That's right. 00:07:52.73\00:07:54.07 And you know, greens are great, 00:07:54.10\00:07:55.44 you just give us a little bit of a disclaimer 00:07:55.47\00:07:56.81 that there may be some interactions. 00:07:56.84\00:07:58.34 But as all advice you may hear from Dr. Marcum 00:07:58.37\00:08:00.38 here on this program, always work with your physician 00:08:00.41\00:08:02.78 and ask them if this is something that will help you. 00:08:02.81\00:08:05.75 Right. That's a good point. Yeah. 00:08:05.78\00:08:07.38 You know, one interesting fact 00:08:07.42\00:08:08.75 that I looked up about greens is that, 00:08:08.78\00:08:11.25 you know, we talked about Hippocrates previously. 00:08:11.29\00:08:14.66 Back 400 years before Christ, 00:08:14.69\00:08:16.46 Hippocrates is rumored 00:08:16.49\00:08:17.83 to have started his first hospital next to a stream 00:08:17.86\00:08:20.70 so that he can grow watercress. 00:08:20.73\00:08:22.13 Yup.
