00:02:34.25\00:02:36.62 2004, I was becoming sick, 00:02:36.65\00:02:40.19 prior to that I was super healthy 00:02:40.22\00:02:42.22 and very energetic. 00:02:42.26\00:02:44.43 But 2004 I started, you know, getting weak, 00:02:44.46\00:02:49.36 no endurance, shortness of breath, brain fog, 00:02:49.40\00:02:55.20 and ended up in the hospital. 00:02:55.24\00:02:57.54 So 2006, I still... 00:02:57.57\00:03:02.38 That's when I started... 00:03:02.41\00:03:03.75 I recovered pretty much 00:03:03.78\00:03:05.21 because I changed my ways of eating. 00:03:05.25\00:03:07.68 Even though I was plant-based, 00:03:07.72\00:03:10.79 and I was very health conscious, 00:03:10.82\00:03:12.35 but I didn't know many things 00:03:12.39\00:03:13.72 that were happening in this world with toxicity 00:03:13.76\00:03:16.69 that, you know, I was getting toxic. 00:03:16.73\00:03:21.43 But anyhow going back ended up in the hospital, 00:03:21.46\00:03:24.33 getting blood transfusion 00:03:24.37\00:03:25.70 because I wasn't absorbing nutrients. 00:03:25.73\00:03:28.74 And so later on, 00:03:28.77\00:03:31.91 you know, God let me to learn about this GI lab 00:03:31.94\00:03:35.78 where they tested me for food sensitivities 00:03:35.81\00:03:38.21 and find out that, you know, 00:03:38.25\00:03:39.58 I was having those kinds of issues. 00:03:39.61\00:03:41.05 And I was always healthy, 00:03:47.22\00:03:48.62 but in medical school or residency 00:03:48.66\00:03:50.89 when I was pretty young still, 00:03:50.93\00:03:52.43 I was put on a pretty powerful antibiotic. 00:03:52.46\00:03:54.86 It was in what we call the fluoroquinolone family. 00:03:54.90\00:03:57.37 Okay. 00:03:57.40\00:03:58.73 And this category of antibiotics 00:03:58.77\00:04:00.90 is very popular, commonly given. 00:04:00.94\00:04:03.94 But it has a black box warning 'cause it's quite dangerous. 00:04:03.97\00:04:08.21 It is now... 00:04:08.24\00:04:09.58 So what is the black box warning, is that like, 00:04:09.61\00:04:12.51 you can die from it? 00:04:12.55\00:04:14.02 Well, it can cause all kinds of issues. 00:04:14.05\00:04:17.42 It can cause connective tissue issues, 00:04:17.45\00:04:21.96 psychiatric issues, 00:04:21.99\00:04:24.36 it's known as a mitochondrial poison. 00:04:24.39\00:04:26.96 And, you know, some people report like things 00:04:27.00\00:04:30.10 like Achilles tendon ruptures and retinal detachment 00:04:30.13\00:04:33.44 and these types of things. 00:04:33.47\00:04:34.94 And the one that I was put on, 00:04:34.97\00:04:37.11 it was taken off the market within a year 00:04:37.14\00:04:39.07 because it caused liver failure and death. 00:04:39.11\00:04:41.84 And it caused me to get very weak, 00:04:41.88\00:04:45.25 and that weakness just progressed over years 00:04:45.28\00:04:48.35 and years and years. 00:04:48.38\00:04:49.72 And so it was kind of an abnormal weakness 00:04:49.75\00:04:52.45 and that like, I couldn't, 00:04:52.49\00:04:54.12 you know, pick up kids very well. 00:04:54.16\00:04:56.32 You know, I just felt like I couldn't do the things 00:04:56.36\00:04:58.29 that I needed to do. 00:04:58.33\00:04:59.73 And, you know, I had a lot of chronic pain 00:04:59.76\00:05:03.60 for 20 some years. 00:05:03.63\00:05:05.63 And so I was just looking for answers. 00:05:05.67\00:05:09.00 So when I was diagnosed with leaky gut in 2011, 00:05:09.04\00:05:14.34 I started on an elimination diet 00:05:14.38\00:05:17.21 that took care of a lot of pain. 00:05:17.25\00:05:19.38 And then when I... 00:05:19.41\00:05:20.75 In 2016, went to the Years Restored Program, 00:05:20.78\00:05:23.65 it helped me even further with other symptoms 00:05:23.69\00:05:26.55 that I had been developing. 00:05:26.59\00:05:28.02 Wow, I can't imagine 20 years of pain. 00:05:28.06\00:05:31.39 A lot of people deal with it, a lot of people. 00:05:31.43\00:05:33.53 And I think that, you know, when I went to Years Restored 00:05:33.56\00:05:36.87 and did the 10-day detox program, 00:05:36.90\00:05:39.30 and on the third day, I woke up 00:05:39.33\00:05:40.80 and, you know, had no pain and I had, you know, 00:05:40.84\00:05:45.04 no shortness of breath, which I've developing. 00:05:45.07\00:05:48.98 I just realized, you know, 00:05:49.01\00:05:50.35 you don't realize how bad you feel 00:05:50.38\00:05:52.11 until you feel so much better. 00:05:52.15\00:05:54.08 Because we get very used to feeling bad, 00:05:54.12\00:05:56.15 it's so gradual. 00:05:56.18\00:05:57.52 It's kind of like that frog, you know, that's... 00:05:57.55\00:06:00.89 In the water... 00:06:00.92\00:06:02.26 In the water that's getting hot. 00:06:02.29\00:06:03.63 And it happens so gradually that you're not aware. 00:06:03.66\00:06:06.03 Absolutely. 00:06:06.06\00:06:07.40 And it becomes the norm for you. 00:06:07.43\00:06:08.76 It's a normal. 00:06:08.80\00:06:10.13 I mean, you think that everybody's dealing with that. 00:06:10.17\00:06:11.50 Well, I think it's the norm for our society so... 00:06:11.53\00:06:14.60 Let's talk about, you know, the chronic pain 00:06:14.64\00:06:16.77 and the role that nutrition plays in it. 00:06:16.81\00:06:20.24 Well, for instance, for me, 00:06:20.28\00:06:22.78 I felt like I just didn't deal with stress 00:06:22.81\00:06:25.18 well, 'cause my pain was in my neck, 00:06:25.21\00:06:27.18 and then my shoulders, 00:06:27.22\00:06:28.55 and I felt "Oh, maybe this is just what it's like to get old. 00:06:28.58\00:06:31.25 You have arthritis, maybe, you just have muscle pain, 00:06:31.29\00:06:33.89 and you just don't know how to handle stress." 00:06:33.92\00:06:36.12 And I found that it may be true, 00:06:36.16\00:06:39.09 it may happen more with age, 00:06:39.13\00:06:41.20 but I was pretty much pain free with just changing my diet. 00:06:41.23\00:06:46.10 Wow. 00:06:46.13\00:06:47.47 And the interesting thing 00:06:47.50\00:06:48.84 was that I had been going to lifestyle centers 00:06:48.87\00:06:50.64 'cause I was very interested in health, 00:06:50.67\00:06:53.21 you know, nutrition, 00:06:53.24\00:06:54.58 all that kind of stuff, I'm very interested, 00:06:54.61\00:06:56.11 I love teaching people about it. 00:06:56.14\00:06:58.21 And I would go to these places, and we'd be making, 00:06:58.25\00:07:01.15 you know, whole wheat bread 00:07:01.18\00:07:02.52 and all those good food from scratch, 00:07:02.55\00:07:03.99 and I'd still be in so much pain. 00:07:04.02\00:07:05.75 I just never put the two things together. 00:07:05.79\00:07:07.29 Yeah. 00:07:07.32\00:07:08.76 So basically, you can eat to live 00:07:08.79\00:07:12.49 or you can live to eat, which... 00:07:12.53\00:07:14.06 Yes, but nowadays, 00:07:14.10\00:07:15.86 it's like you can eat really good healthy food 00:07:15.90\00:07:18.77 and still have it be a problem. 00:07:18.80\00:07:21.17 That's the confusing thing. 00:07:21.20\00:07:22.54 Yeah. And why is that? 00:07:22.57\00:07:26.07 You know, this world has changed so much, 00:07:26.11\00:07:29.11 you know, the agricultural practices, 00:07:29.14\00:07:32.05 also all the toxicity from this world. 00:07:32.08\00:07:34.65 So it's just different, it's not the same. 00:07:34.68\00:07:36.95 So foods that I ate in the past, 00:07:36.99\00:07:40.19 they were totally healthy, 00:07:40.22\00:07:41.92 but then when I studied like, you know, gut sick. 00:07:41.96\00:07:46.49 Then, the food is totally different. 00:07:46.53\00:07:49.63 We think that a few things that have happened, 00:07:49.66\00:07:51.77 that are very significant. 00:07:51.80\00:07:53.13 One is that in the 1950s, 60s was around the time 00:07:53.17\00:07:57.91 that they started changing the way wheat was made. 00:07:57.94\00:08:01.01 Wheat is a much different plant than it used to be 00:08:01.04\00:08:03.21 'cause one plant can produce about 10 times more wheat 00:08:03.24\00:08:06.95 than the original, 00:08:06.98\00:08:08.65 and it has changed the structure of that wheat. 00:08:08.68\00:08:11.55 So that's one thing. 00:08:11.59\00:08:13.22 The other thing is that sometime around the 1970s, 00:08:13.25\00:08:16.46 I think was when glyphosate was introduced. 00:08:16.49\00:08:19.09 And that's the active ingredient of Roundup, 00:08:19.13\00:08:22.53 and its use has simply just escalated. 00:08:22.56\00:08:25.73 And now we are spraying glyphosate pretty much 00:08:25.77\00:08:29.37 on all of our crops. 00:08:29.40\00:08:31.64 You know, if you have any kind of grain, 00:08:31.67\00:08:34.28 your breakfast cereals, your breakfast breads, 00:08:34.31\00:08:36.51 you're going to have 00:08:36.54\00:08:37.88 high levels of glyphosate a lot of times. 00:08:37.91\00:08:39.51 That's scary. 00:08:39.55\00:08:40.88 And so, you know, glyphosate has been patented 00:08:40.92\00:08:45.62 as not only a weed killer, it is a mineral chelator, 00:08:45.65\00:08:50.19 it will bind up minerals like magnesium and calcium 00:08:50.23\00:08:53.06 and those things that you need for your cells to work, 00:08:53.09\00:08:56.23 and then it will also serve as an antibiotic. 00:08:56.26\00:09:00.37 So it changes the microbiome. 00:09:00.40\00:09:02.40 So all of these things are having 00:09:02.44\00:09:04.54 an effect on the gut. 00:09:04.57\00:09:05.94 And we think that that's why in the last couple decades, 00:09:05.97\00:09:09.28 we're seeing children being affected 00:09:09.31\00:09:12.21 with these serious diseases that we never saw before, 00:09:12.25\00:09:15.35 you know, and all these mysterious things 00:09:15.38\00:09:17.62 that people are having a hard time 00:09:17.65\00:09:19.12 putting a diagnosis on. 00:09:19.15\00:09:20.49 Yes, yes, 'cause what we're consuming 00:09:20.52\00:09:23.16 has changed the molecular structure... 00:09:23.19\00:09:24.53 Has changed us generationally, 00:09:24.56\00:09:26.70 and, you know, I think the epigenetic components 00:09:26.73\00:09:30.87 and how it's changing people, 00:09:30.90\00:09:33.20 you know, one generation to the next, 00:09:33.23\00:09:34.84 it's just weakening our systems. 00:09:34.87\00:09:36.20 Yeah. 00:09:36.24\00:09:37.57 Let's talk a little bit about inflammation. 00:09:37.61\00:09:39.11 What is inflammation? 00:09:39.14\00:09:42.84 Well, inflammation is defined as you can see it, 00:09:42.88\00:09:46.58 you can see the redness, you can see the swelling, 00:09:46.61\00:09:50.02 you can feel pain and tenderness. 00:09:50.05\00:09:52.42 And it's simply that your body, 00:09:52.45\00:09:54.86 like if you have a cut, for instance, 00:09:54.89\00:09:56.83 your body is recruiting cells to come and help you fight. 00:09:56.86\00:10:00.23 It's helping you fight infection, 00:10:00.26\00:10:01.83 it's helping you repair that wound. 00:10:01.86\00:10:05.07 So that's what inflammation is. 00:10:05.10\00:10:06.67 It's simply your body's effort to help itself get better. 00:10:06.70\00:10:10.37 Wow. 00:10:10.41\00:10:11.74 So with arthritis and all of those things 00:10:11.77\00:10:14.28 like your body's trying to get better? 00:10:14.31\00:10:16.61 Typically disease is an effort of the body 00:10:16.64\00:10:18.98 to help itself improve. 00:10:19.01\00:10:21.02 Okay, okay. 00:10:21.05\00:10:23.49 Or deal with something. 00:10:23.52\00:10:24.85 How does lifestyle impact inflammation? 00:10:24.89\00:10:27.96 Well, it's very important 00:10:27.99\00:10:29.32 to eat these anti-inflammatory foods. 00:10:29.36\00:10:32.59 So we really like to push for eating a lot of greens. 00:10:32.63\00:10:36.50 The greens are super powerful anti-inflammatory foods 00:10:36.53\00:10:39.60 and, you know, also the herbs are even better, 00:10:39.63\00:10:43.67 certain herbs. 00:10:43.71\00:10:45.04 So for example, thyme is great. 00:10:45.07\00:10:48.51 Stevia even is great. 00:10:48.54\00:10:51.98 Mint is one of the greatest antioxidant foods, 00:10:52.01\00:10:55.32 very high antioxidant. 00:10:55.35\00:10:57.55 So we actually put it together a pack of all these herbs 00:10:57.59\00:11:01.49 that are super antioxidants so just to shake in our meals 00:11:01.52\00:11:05.53 and just give this huge antioxidant boost 00:11:05.56\00:11:08.73 to our system. 00:11:08.76\00:11:10.10 So very important to eat inflammatory foods 00:11:10.13\00:11:12.80 but if you don't remove the cause, 00:11:12.83\00:11:16.97 then you're still going to have inflammation. 00:11:17.01\00:11:19.31 So you have to remove 00:11:19.34\00:11:20.68 what is causing the inflammation. 00:11:20.71\00:11:22.88 So removing these toxins, 00:11:22.91\00:11:24.75 a lot of times it's processed foods. 00:11:24.78\00:11:27.02 You know, it has so much chemicals. 00:11:27.05\00:11:28.58 'Cause that was my next question. 00:11:28.62\00:11:29.95 What foods cause inflammation? 00:11:29.98\00:11:32.15 So there's processed foods 00:11:32.19\00:11:34.06 another thing is foods that are high on AGE. 00:11:34.09\00:11:39.06 What is AGE? 00:11:39.09\00:11:41.06 Anti-glycation. 00:11:41.10\00:11:42.43 Advanced glycation end-products. 00:11:42.46\00:11:45.17 These are simply things 00:11:45.20\00:11:46.53 that form when you heat up your food. 00:11:46.57\00:11:49.50 So if you caramelize your food 00:11:49.54\00:11:51.54 and you're roasting your nuts 00:11:51.57\00:11:53.11 and these kinds of things, you're going to end up... 00:11:53.14\00:11:54.58 It's like cooking the nutrients out of it. 00:11:54.61\00:11:56.41 No, it's changing the structure of it 00:11:56.44\00:11:59.41 and what ends up... 00:11:59.45\00:12:00.78 well, it's the same thing that happens in your body 00:12:00.82\00:12:02.88 when you have diabetes for instance, 00:12:02.92\00:12:05.45 and your blood sugar goes so high 00:12:05.49\00:12:07.66 so that the sugar will abnormally bind 00:12:07.69\00:12:10.26 to certain molecules, 00:12:10.29\00:12:12.03 and it will change their structure 00:12:12.06\00:12:14.03 and that is what causes damage 00:12:14.06\00:12:15.83 to the blood vessels for instance. 00:12:15.86\00:12:17.63 And that's why people have bleeding in their eyes 00:12:17.67\00:12:20.00 and in their kidneys and scarring 00:12:20.04\00:12:22.47 and that kind of thing. 00:12:22.50\00:12:23.84 It's usually when you cook foods 00:12:23.87\00:12:25.31 that are high in proteins and fat at the same time, 00:12:25.34\00:12:28.24 so that'll be meat, 00:12:28.28\00:12:29.61 but in the plant-based it will be nuts, right? 00:12:29.64\00:12:32.38 So then you cook in dry environment 00:12:32.41\00:12:34.38 like baking, and frying, things like that 00:12:34.42\00:12:37.82 so the levels of AGE are so high 00:12:37.85\00:12:40.06 and so inflammatory. 00:12:40.09\00:12:42.66 But just for a basic thing, 00:12:42.69\00:12:44.49 you know, foods that are inflammatory 00:12:44.53\00:12:47.36 tend to be foods that are fake, 00:12:47.40\00:12:49.36 for instance, refined carbohydrates, 00:12:49.40\00:12:53.34 sugared or artificially sweetened sodas, 00:12:53.37\00:12:58.41 and processed meats, 00:12:58.44\00:13:01.71 those tend to be very, very inflammatory. 00:13:01.74\00:13:04.38 Dairy can be inflammatory. 00:13:04.41\00:13:06.55 Wheat can be inflammatory. 00:13:06.58\00:13:09.02 You were asking about nutrition. 00:13:09.05\00:13:11.32 And we know that the gluten and wheat 00:13:11.35\00:13:14.59 causes your body to produce zonulin 00:13:14.62\00:13:17.79 and zonulin will then, 00:13:17.83\00:13:19.23 when it attaches to these receptors 00:13:19.26\00:13:21.56 on your intestinal cells, 00:13:21.60\00:13:24.83 it'll cause you to develop leaky gut 00:13:24.87\00:13:27.07 because it causes your tight junctions to be lost. 00:13:27.10\00:13:30.67 Wow. 00:13:30.71\00:13:32.37 I'm glad that you guys came out 00:13:32.41\00:13:34.04 with this Autoimmune Plant Based Cookbook. 00:13:34.08\00:13:36.98 Because as I'm listening, I'm like, wow, so okay, 00:13:37.01\00:13:38.91 so wheat isn't, you know, isn't good, 00:13:38.95\00:13:41.48 it can cause the inflammation and stuff or some form of it. 00:13:41.52\00:13:43.49 Wheat just maybe a lot different 00:13:43.52\00:13:45.75 than what it used to be 00:13:45.79\00:13:47.12 and anecdotally you'll hear people say 00:13:47.16\00:13:48.56 that when they go to Europe and other places 00:13:48.59\00:13:50.23 that maybe have different ways of growing food 00:13:50.26\00:13:55.46 that they can tolerate wheat better there. 00:13:55.50\00:13:58.23 So there may be something going on there. 00:13:58.27\00:14:01.80 Okay. 00:14:01.84\00:14:03.17 And, you know, again, 00:14:03.20\00:14:04.54 I forgot to do this 00:14:04.57\00:14:05.91 at the beginning of the program, 00:14:05.94\00:14:07.28 but we always have to put the disclaimer out there, 00:14:07.31\00:14:09.11 make sure we're talking about different recipes 00:14:09.14\00:14:11.61 and all of that stuff and cutting things out. 00:14:11.65\00:14:13.85 But we want to make sure 00:14:13.88\00:14:15.22 that you consult your primary care physician, 00:14:15.25\00:14:18.39 as they've been working with you, 00:14:18.42\00:14:19.75 and they know your specific case. 00:14:19.79\00:14:21.92 We're talking about potential solutions 00:14:21.96\00:14:24.23 and things that work naturally. 00:14:24.26\00:14:27.96 But it might not be right for you, 00:14:28.00\00:14:30.03 or it might be right for you, 00:14:30.07\00:14:31.40 but you must consult your primary care physician. 00:14:31.43\00:14:34.44 Yeah, we always say this is health education. 00:14:34.47\00:14:35.80 Yes. 00:14:35.84\00:14:37.17 Absolutely.
