How did you first get here? 00:01:11.92\00:01:14.61 By van... 00:01:14.65\00:01:16.53 No, that's not what I'm talking about... 00:01:16.57\00:01:18.35 Believe it or not, Yvonne, there was some friends of ours 00:01:18.39\00:01:21.90 in Huntsville... they saw us doing different 00:01:21.93\00:01:23.68 programs for UAH and Oakwood College 00:01:23.72\00:01:26.66 and they kept saying, "You guys actually need to 00:01:26.69\00:01:28.71 just be somewhere real... on television or something 00:01:28.74\00:01:30.65 like that... " and someone mentioned to us 00:01:30.68\00:01:32.43 about the "Flagship Program" the Thursday Night Program 00:01:32.46\00:01:34.83 on 3ABN... where they were always looking 00:01:34.86\00:01:37.28 for individuals making a difference 00:01:37.31\00:01:39.33 in their Community... and although this had happened 00:01:39.36\00:01:42.12 3 to 4 years prior to that... every time I would see this 00:01:42.15\00:01:44.64 one woman... she would say, "Have you sent it in yet... 00:01:44.68\00:01:47.86 have you sent anything in yet?" and I would say, "No" 00:01:47.89\00:01:50.08 and so, finally, we sent in a DVD... 00:01:50.12\00:01:52.78 That we had... locally there... in Huntsville... 00:01:52.82\00:01:55.20 we sent in the tape there... didn't think too much of it, 00:01:55.23\00:01:57.65 and maybe about 6 months later we heard from... 00:01:57.68\00:02:00.58 from Dee Hilderbrand... Dee Hilderbrand our precious Dee 00:02:00.61\00:02:04.10 Yes... she called on the phone and when she called... 00:02:04.13\00:02:07.58 I thought it was someone playing around... 00:02:07.61\00:02:09.53 she said, "Hi, this is Dee Hilderbrand 00:02:09.56\00:02:11.42 from Three Angels Broadcasting Network... 00:02:11.45\00:02:13.24 and I said, "Is this my girlfriend playing with me?" 00:02:13.27\00:02:15.52 and she was so serious... she said, 00:02:15.55\00:02:18.51 "No, this is Dee Hilderbrand from 3ABN... " 00:02:18.55\00:02:20.78 so we talked for a few minutes, and then she said, 00:02:20.81\00:02:25.24 "I need for you to come on in and do the 'Flagship Program'" 00:02:25.28\00:02:27.95 and at that time... also... "Food for Thought" 00:02:27.99\00:02:30.70 Okay... And, it was late... 00:02:30.73\00:02:33.68 at the end of the year almost... when she started talking to us 00:02:33.72\00:02:36.74 and as she began asking about dates... this date, that date... 00:02:36.78\00:02:39.77 we already were booked until the end of the year... 00:02:39.80\00:02:41.64 and so finally the Holy Spirit said, 00:02:41.67\00:02:43.14 "Just tell her when you can come" 00:02:43.17\00:02:44.56 and I said, "Ms. Hilderbrand... we can come in 1997... 00:02:44.60\00:02:50.07 this is when we'd be coming up here... 1997... 00:02:50.10\00:02:52.84 and we were going to be able to come on March the 13th... 00:02:52.87\00:02:54.96 She said, "I don' even have a calendar for next year... " 00:02:55.00\00:02:57.06 I said, "Good, that means... it's open 00:02:57.09\00:02:59.02 and so we can come... " 00:02:59.06\00:03:00.75 and then what happened after we got here? 00:03:00.78\00:03:02.98 We came up here and did four other "Food for Thought" Series 00:03:03.02\00:03:06.29 okay... then we did a two-hour live 3ABN... "The Flagshow" 00:03:06.33\00:03:09.57 and we were supposed to be doing... 00:03:09.60\00:03:11.12 two hours of just talking... but one of the photographers 00:03:11.15\00:03:16.86 Videographer at that time... 00:03:16.90\00:03:18.89 camera crew said... what they need to do is... 00:03:18.93\00:03:21.07 one hour talking and the other hour... cooking... 00:03:21.11\00:03:23.44 Well, now, we just finished doing 64 recipes... 00:03:23.48\00:03:26.47 in two or three days... 00:03:26.51\00:03:28.31 Wow! are you serious? 00:03:28.35\00:03:30.08 For the "Food for Thought" series... earlier that week... 00:03:30.11\00:03:32.19 so my wife didn't want to look at another recipe... 00:03:32.23\00:03:35.54 another pot... or spoon... and he said, 00:03:35.57\00:03:39.66 "I'll go shopping for you... I'll do anything... 00:03:39.70\00:03:41.63 you got to go in the kitchen, you got to cook... " 00:03:41.66\00:03:43.36 "I'll do it all... I'll do it all for you... " 00:03:43.40\00:03:44.84 but it didn't have to happen, 00:03:44.87\00:03:46.28 after we really just kind of thought about it... 00:03:46.32\00:03:47.68 Curtis said, "What are the quickest recipes 00:03:47.71\00:03:49.24 that you actually have?" 00:03:49.27\00:03:50.40 something easy, something quick and believe it or not 00:03:50.43\00:03:53.22 that was the very first time that Danny had ever 00:03:53.26\00:03:56.07 gone into the kitchen... 00:03:56.11\00:03:57.58 we brought him in the kitchen with us... 00:03:57.62\00:03:59.36 You got him to come to the kitchen? 00:03:59.40\00:04:01.20 That kitchen was maybe... less than 10 years old I believe 00:04:01.24\00:04:06.20 Okay... wow... He was in there... 00:04:06.24\00:04:08.90 and we did it live... and he was in the kitchen... 00:04:08.94\00:04:11.10 Great... So, it was wonderful... 00:04:11.13\00:04:12.96 then after that show... the phone rang off the hook 00:04:12.99\00:04:15.65 we were told and then after that... 00:04:15.68\00:04:17.29 Dee Hilderbrand said, "We want to offer you 00:04:17.33\00:04:20.15 your own television series... " Wow... praise the Lord... 00:04:20.19\00:04:24.19 And in six months of shows, 00:04:24.23\00:04:26.57 26 titles... 00:04:26.60\00:04:28.29 I looked at my wife... and she said, 00:04:28.33\00:04:29.78 "Honey, do we know 26 titles and shows?" 00:04:29.81\00:04:32.49 I mean, we'd been doing things in the Community... 00:04:32.53\00:04:34.23 but to list all 26... Yes... 00:04:34.26\00:04:36.98 so, 26 shows meant 00:04:37.02\00:04:38.93 6 months of taping... 00:04:38.96\00:04:40.80 Yes... and that's how long it would go 00:04:40.84\00:04:42.55 and I thought to myself... "We need to check in with the 00:04:42.59\00:04:45.75 Father on this... I mean... that's a long time... 00:04:45.78\00:04:47.61 that's a lot to do... " 00:04:47.64\00:04:48.93 so, we wanted to go back and pray and ask the Lord, 00:04:48.96\00:04:51.14 "Is this what He wants for us" Hmmm... hmmm... 00:04:51.18\00:04:52.83 because we really believe in letting God do 00:04:52.87\00:04:54.49 what He does best... 00:04:54.52\00:04:55.59 Yes... for sure... So, we went back to our room 00:04:55.63\00:04:57.43 and we said, "We're going to pray about it 00:04:57.46\00:04:59.21 we'll go to sleep, we'll wake up in the morning... 00:04:59.24\00:05:00.68 and give you an answer... " 00:05:00.72\00:05:01.79 And so, we went back to our room... 00:05:01.82\00:05:03.76 we had prayer... we asked the Lord, 00:05:03.80\00:05:05.67 if this this what he wants... that He would open a door... 00:05:05.70\00:05:07.38 we said, "26 shows... I don't know if we know 00:05:07.42\00:05:09.99 the titles of 26 shows... " 00:05:10.02\00:05:11.18 And so the next morning... we sat up in the bed 00:05:11.22\00:05:14.58 and the Holy Spirit just... the shows just kept running off 00:05:14.61\00:05:18.05 our minds... up to about 32 shows... 00:05:18.08\00:05:20.47 I mean... just one by one... 00:05:20.51\00:05:22.78 So, we called back over... and told Dee, 00:05:22.82\00:05:24.85 "Okay, we're open... " and she said... 00:05:24.88\00:05:26.85 "I'll stage it in six months... way to go?" 00:05:26.88\00:05:28.71 That's great... 00:05:28.75\00:05:30.44 Fifteen years ago... so we just praise God for that 00:05:30.48\00:05:32.43 this is just a blessing and... I can't tell you how many 00:05:32.47\00:05:35.50 phone calls, e- mails, letters... 00:05:35.54\00:05:37.97 we get boxes of letters... and lives have been touched 00:05:38.01\00:05:41.03 and we just praise God for the opportunity... 00:05:41.07\00:05:43.66 Yes... yes... amen... now, what would get you 00:05:43.70\00:05:46.27 involved in this health path in the first place? 00:05:46.30\00:05:48.84 Okay, there are two separate stories... 00:05:48.87\00:05:50.61 Honey, let's go with your version first... 00:05:50.65\00:05:52.35 Well, actually, Yvonne... I mean... 00:05:52.39\00:05:56.18 I was not born and raised in the Adventist Church... 00:05:56.22\00:05:58.28 and so, I lived in Philadelphia, and was one of 10 children... 00:05:58.31\00:06:01.89 and so, basically... everything that wasn't 00:06:01.92\00:06:04.74 nailed down to the floor... we ate... that's what I say 00:06:04.77\00:06:07.52 I barbequed and steamed and baked, 00:06:07.56\00:06:08.77 whatever you had to do... and so I would never have 00:06:08.80\00:06:11.66 guessed that anything like vegetarianism 00:06:11.70\00:06:13.39 would be even in my mind... 00:06:13.42\00:06:14.53 we didn't even have vegetables when we were growing up... 00:06:14.56\00:06:16.78 Yeah... and so... as we began... 00:06:16.82\00:06:18.89 as I began... after marriage and taking care of the children 00:06:18.93\00:06:22.40 and stuff... and then... we were in a Church 00:06:22.43\00:06:24.41 where they kept talking about the Health Message... 00:06:24.44\00:06:26.76 and once I became a Seventh-day Adventist... 00:06:26.79\00:06:28.94 so, I went to this class... in our Church... 00:06:28.97\00:06:31.08 our Pastor's wife was teaching it 00:06:31.11\00:06:32.30 and when I got in the class... she was talking all about 00:06:32.33\00:06:35.24 the relationship in the family, 00:06:35.28\00:06:37.00 the Father is the priest of the home... 00:06:37.04\00:06:39.04 and he's the one who is supposed to raise the family... 00:06:39.07\00:06:40.91 in the fear and love of God... 00:06:40.95\00:06:42.51 that sounded really good, you know... 00:06:42.55\00:06:44.01 and I said, "Good, great, great, he's got that... " 00:06:44.05\00:06:46.09 Yeah... and then she said, 00:06:46.13\00:06:47.20 "But then the mother... the mother is the gatekeeper" 00:06:47.23\00:06:50.27 Oh come on now... 00:06:50.31\00:06:51.54 Oh, the Gatekeeper... which means 00:06:51.58\00:06:52.90 that she has the ability to either make or break her family 00:06:52.94\00:06:56.38 by the things she's actually feeding them... 00:06:56.42\00:06:58.20 Oh yes... and I said, 00:06:58.24\00:06:59.75 "As if I didn't have enough responsibilities... 00:06:59.78\00:07:00.96 now I got this whole thing about being a gatekeeper... " 00:07:01.00\00:07:04.24 Along with everything else, I'm being a gatekeeper!" 00:07:04.28\00:07:06.30 after all the other stuff I'm doing, you know... 00:07:06.33\00:07:07.88 and I started thinking about my children 00:07:07.91\00:07:10.74 and I wanted to make sure that they were going to be okay 00:07:10.77\00:07:14.26 and so... then I began... actually changing 00:07:14.30\00:07:16.19 recipes out... I remember... the first... 00:07:16.23\00:07:18.15 after I finished the first class... 00:07:18.18\00:07:19.33 we got in that room and I was making these burgers up 00:07:19.36\00:07:21.98 Yvonne, it was not good... Oh, what did you do... tell us 00:07:22.01\00:07:24.59 I got these burgers together they had, at that time, 00:07:24.63\00:07:26.55 these gran-burgers out... where you put this 00:07:26.58\00:07:27.96 gran-burger granules into a bowl and add hot water to it... 00:07:27.99\00:07:31.07 and we not supposed to add any eggs to it... 00:07:31.10\00:07:34.18 or anything like that, and so, I went and got those 00:07:34.22\00:07:36.56 burgers together... I got that stuff, 00:07:36.60\00:07:38.25 you have the water and everything... 00:07:38.28\00:07:39.87 and I scooped it up and I put it into a skillet... 00:07:39.90\00:07:42.08 and every single gran-burger ran to the side of the thing, 00:07:42.11\00:07:45.56 I got the spatula, I pushed it back together 00:07:45.59\00:07:47.31 and I ran back out of there and then I started crying... 00:07:47.35\00:07:50.13 I called my girlfriend up because we were going to class 00:07:50.17\00:07:52.05 together... and I said, "This is not working 00:07:52.08\00:07:54.18 I don't know why I'm doing this, this is so crazy," 00:07:54.22\00:07:56.14 she said, "Paula, let's just keep praying, 00:07:56.17\00:07:58.07 ask the Lord to help us out... " and over a period of time, 00:07:58.11\00:08:01.74 I began to just work on these recipes... 00:08:01.78\00:08:04.24 Hmmm... 00:08:04.27\00:08:05.33 and my pastor... was so open... 00:08:05.37\00:08:07.04 one day I walked up to him and I said, 00:08:07.08\00:08:08.85 "Pastor, I want to do some cooking classes... " 00:08:08.88\00:08:10.71 he said, "Okay... " 00:08:10.75\00:08:11.79 and I said, "I want to do it right here in Church... " 00:08:11.83\00:08:13.46 he said, "Okay" and I said, 00:08:13.49\00:08:15.20 "Well, and I need food and stuff... " 00:08:15.23\00:08:17.28 and he said, "fine... " Elder Mendinghall... 00:08:17.32\00:08:19.49 Elder Ezra Mendinghall... yes... yes... 00:08:19.53\00:08:21.58 he's just a very calm personality... 00:08:21.62\00:08:23.61 and so we started classes in the Church... 00:08:23.64\00:08:26.34 and I was Okay for a while... teaching... 00:08:26.38\00:08:29.05 but then people started asking me stuff about 00:08:29.09\00:08:31.10 anatomy and physiology... what happens inside the body, 00:08:31.14\00:08:34.30 I didn't have that knowledge base... 00:08:34.34\00:08:35.95 I only had that cooking thing going on... 00:08:35.98\00:08:37.57 Come on... come on now... 00:08:37.61\00:08:38.65 And I just kept saying... to myself... you know... 00:08:38.68\00:08:40.28 anatomy, physiology... how am I going to work that out... 00:08:40.31\00:08:43.43 I would go home and try to study it... 00:08:43.46\00:08:44.96 what's the difference between salt and sodium... 00:08:44.99\00:08:46.64 is it the same word? Hmmm... hmmm... 00:08:46.67\00:08:48.11 and I prayed... and I talked to the Lord about it 00:08:48.15\00:08:50.97 and decided to go to School... Amen... 00:08:51.01\00:08:53.32 so I had been in Church a while... 00:08:53.35\00:08:55.43 and then, I decided to take classes... 00:08:55.47\00:08:57.48 in this whole area... and I'm telling you... 00:08:57.51\00:08:59.23 I cannot tell you... I love nutrition and cooking 00:08:59.26\00:09:02.70 so much... I was on the front row... 00:09:02.73\00:09:04.63 before the teacher came to class... 00:09:04.66\00:09:06.51 I was up there in the front... 00:09:06.54\00:09:07.62 You're a woman after my own heart... 00:09:07.66\00:09:08.82 I never expected that, I was so excited, you know, 00:09:08.85\00:09:11.69 You know why... because if you don't know something... 00:09:11.72\00:09:17.53 you go and learn about it... duh... 00:09:17.57\00:09:20.29 if you don't know... there are all kinds of things 00:09:20.32\00:09:23.00 available now... classes and opportunities 00:09:23.03\00:09:25.65 we just have to find out where they are... 00:09:25.69\00:09:28.28 and take advantage of it... so you are... 00:09:28.32\00:09:30.86 just like one of our Dare to Dream poster girls... 00:09:30.90\00:09:34.41 "I'm a poster girl now... " Because, you know, 00:09:34.45\00:09:37.35 you didn't know know... so you went back to School 00:09:37.38\00:09:39.88 that's a wonderful thing, okay... so... go ahead... 00:09:39.92\00:09:42.38 well I was, of course, a little bit more mature 00:09:42.42\00:09:44.15 than most of the students at that particular time... 00:09:44.18\00:09:46.11 That's okay, it's never too old you're never to old to learn... 00:09:46.14\00:09:49.61 But then I had to do anatomy, physiology... bio-chemistry... 00:09:49.64\00:09:53.08 micro-biology... I'm like... 00:09:53.11\00:09:54.36 Okay... maybe I'm in the wrong field... 00:09:54.40\00:09:57.13 What have I gotten myself into? 00:09:57.16\00:09:59.39 But believe it or not... there was a woman in the class 00:09:59.43\00:10:01.89 that was much older... and she was there... 00:10:01.93\00:10:03.84 and she was kind of... like my encouragement... 00:10:03.87\00:10:05.74 I figured... if she can go to school... 00:10:05.78\00:10:07.00 and she was a lot older than I was... 00:10:07.03\00:10:08.22 then, I'm going to just hang on in here... 00:10:08.26\00:10:10.39 but God is awesome... because He helped me get through 00:10:10.43\00:10:13.23 each one... the Lord is good because the 00:10:13.27\00:10:15.44 entire time that I was in School and prayed the prayer... 00:10:15.48\00:10:19.98 the Lord had me... always I had a 3.8 to 4.0 averages 00:10:20.02\00:10:24.49 for the whole time I was in School... 00:10:24.53\00:10:25.98 Oh... So much so, I won all these 00:10:26.02\00:10:27.40 Scholarships and Awards... and I was going to do my 00:10:27.44\00:10:30.04 next... my first two years and my second two years... 00:10:30.08\00:10:32.89 and then finally... after graduating with my first 00:10:32.93\00:10:35.71 degree... well, really two... 00:10:35.74\00:10:37.04 with the... two-year... and then the four... 00:10:37.08\00:10:38.78 and then when I moved to Huntsville, Alabama... 00:10:38.81\00:10:40.80 I went into the Master's Program 00:10:40.83\00:10:42.22 and that Master's Program... along with working there... 00:10:42.25\00:10:45.72 I was also at Oakwood University teaching as a Professor 00:10:45.75\00:10:49.19 Wow! and also... working... 00:10:49.22\00:10:50.57 well I was working in the cafeteria first 00:10:50.61\00:10:52.00 as an In-Service Nutritionist, as I was finishing the 00:10:52.03\00:10:54.55 Master's Program... and then from the Master's Program 00:10:54.58\00:10:57.79 I went into the actual classroom and taught as a Professor 00:10:57.83\00:11:01.00 at Oakwood... Oh, this is so good... 00:11:01.04\00:11:02.72 you know... because our viewers see you guys 00:11:02.76\00:11:04.75 but they don't know really... they don't know what's behind 00:11:04.79\00:11:08.26 Hmmm... Hmmm... hmmm... 00:11:28.02\00:11:29.49 as I grew older... I began to study more on my own... 00:11:29.53\00:11:32.40 when I moved away from home at Age 21... 00:11:32.44\00:11:34.63 I began to study more about the health message... 00:11:34.67\00:11:37.67 and what it does... to the body temple... 00:11:37.70\00:11:39.31 Hmmm... I began to read more and more 00:11:39.35\00:11:40.89 and realized that... there is a connection between 00:11:40.92\00:11:42.72 what goes into my body... and my spiritual well-being... 00:11:42.76\00:11:46.86 the connection... I read a statement... 00:11:56.95\00:11:59.33 there's a book called, "Counsels on Diets and Foods" 00:11:59.37\00:12:01.71 Hmmm... hmmm... it's about... maybe I guess... 00:12:01.75\00:12:04.14 about 28 years ago... 00:12:04.17\00:12:05.54 on a Sunday night in Houston 00:12:05.57\00:12:07.52 in my one-bedroom apartment about 10:30 at night... 00:12:07.56\00:12:09.59 I remember it very well... I read a statement that says... 00:12:09.63\00:12:12.86 page 381 I believe... "A religious life... could be 00:12:12.90\00:12:18.87 more successfully gained... and maintained if meat is discarded 00:12:18.90\00:12:25.25 for this diet... weakens the moral and spiritual nature. " 00:12:25.29\00:12:31.67 Wow! wow... when I read that... because, 00:12:31.70\00:12:35.24 I was like maybe 23 or 24 00:12:35.27\00:12:37.61 so if you told me that flesh food increased my risk of 00:12:37.65\00:12:40.97 Prostate Cancer... Diabetes and Heart Disease... 00:12:41.00\00:12:43.44 that's fine... the worst thing there's McDonald's... 00:12:43.48\00:12:45.82 that would not have fazed me... Hmmm... 00:12:45.86\00:12:47.41 but when I realized that this article... food... 00:12:47.44\00:12:49.96 impacts my spirituality... you got my attention... 00:12:49.99\00:12:51.98 Hmmm... hmmm... and I began to read more about 00:12:52.01\00:12:53.96 what the Bible says about that too... 00:12:54.00\00:12:55.46 1 Peter 2 verse 8 and verse 10 impacts the spirituality... 00:12:55.50\00:12:59.99 so that moved me to more of a healthier lifestyle... 00:13:00.03\00:13:03.33 and my mother always said, of our family... 00:13:03.37\00:13:05.59 I was the first one who became a vegetarian... 00:13:05.62\00:13:07.78 then my mother said... "Well, I can't let my children 00:13:07.81\00:13:10.18 go ahead of me... " and so she became a vegetarian. 00:13:10.22\00:13:12.55 All right... hmmm... hmmm... But I really... 00:13:12.59\00:13:14.55 it had nothing to do with health 00:13:14.58\00:13:16.61 it was first the impact on my spirituality... 00:13:16.65\00:13:19.24 Very interesting...
