" Believe it or not, it was Brenda 00:00:50.25\00:00:55.58 wow... yes, Brenda came to me and she said, "Evita, I want to 00:00:55.61\00:00:59.73 start eating more raw"... we were neighbors 00:00:59.76\00:01:01.47 and I said, "Well, Brenda I have never ever done raw food before 00:01:01.50\00:01:04.79 I've been a vegan for 20 plus years, and I have always done 00:01:04.82\00:01:08.53 cooked. " So she said, "Oh, you can do it... help me. So we got 00:01:08.56\00:01:13.60 together and we started looking at videos and DVDs and... 00:01:13.64\00:01:19.87 here we are... Yvonne: The rest is history. 00:01:19.91\00:01:21.71 Evita: The rest is history. Yvonne: Brenda what made you 00:01:22.08\00:01:23.96 decide that you wanted to go raw?... 00:01:24.00\00:01:25.95 Brenda: Well, like Evita, I've been vegan too but I've 00:01:25.98\00:01:28.96 been vegan about 35 years... Yvonne: you don't even look 00:01:28.99\00:01:31.94 that old... Brenda: I owe it all to raw 00:01:31.97\00:01:35.24 eating... so I had a bit of a health challenge and the 00:01:35.28\00:01:40.05 Naturopath told me that it would be to my benefit to eat raw 00:01:40.09\00:01:43.95 and so that began my journey... Yvonne: Wow, and again the rest 00:01:43.98\00:01:48.14 is history because you have become real experts in this area 00:01:48.17\00:01:52.29 and one of the things that I find that is so important is 00:01:52.33\00:01:56.23 there is no sacrifice of taste for health because there are so 00:01:56.26\00:02:00.60 many people that say... oh it doesn't taste good... 00:02:00.64\00:02:02.78 I don't want to eat that... it's healthy if you say it's 00:02:02.81\00:02:05.89 healthy... they kind of equate that with not tasting good. 00:02:05.92\00:02:08.98 But your food is amazing... It tastes great... it looks good 00:02:09.01\00:02:13.52 it's just wonderful... When you became vegan, did you 00:02:13.55\00:02:18.53 notice any difference in the way you felt? in clarity of... 00:02:18.57\00:02:24.01 in mental clarity, did you notice any difference 00:02:24.04\00:02:26.73 in your physical health after becoming vegan?... 00:02:26.77\00:02:29.39 Well, I was born and raised vegan... so the years that I 00:02:29.43\00:02:34.16 was not vegan.. um. I definitely felt a difference in the way I 00:02:34.19\00:02:38.54 was feeling... Yvonne: So you went away... 00:02:38.58\00:02:40.48 Brenda: I went away for a bit and then came back 00:02:40.51\00:02:42.37 so that was my story... Evita: And I wasn't, I wasn't 00:02:42.41\00:02:47.54 vegan at all... I was a meat eater and I became vegan 00:02:47.57\00:02:52.67 20 plus years ago and I definitely learned... 00:02:52.71\00:02:55.92 the... it was just amazing! I had eczema, I had all 00:02:55.95\00:03:00.46 different types of ailments, I would break out... 00:03:00.49\00:03:02.37 in different skin eruptions, and I didn't know what it was... 00:03:02.40\00:03:06.06 and when I changed my diet, it was amazing! 00:03:06.09\00:03:09.79 You know, one of the things that I realize is that many people 00:03:09.82\00:03:14.58 have a disconnect when it comes to what they eat and how they 00:03:14.62\00:03:18.94 feel. Or what they eat and their health status. You cannot 00:03:18.97\00:03:22.68 really be truly healthy if you are not eating properly. 00:03:22.71\00:03:26.53 You might not have signs of disease but you are a 00:03:26.56\00:03:31.28 disease-in-the-making if you are not eating properly so 00:03:31.31\00:03:34.80 one of the things we wanted to do at "Dare to Dream" is to 00:03:35.20\00:03:38.44 introduce different ways of eating that are healthy and 00:03:38.47\00:03:42.42 tasty and that's what you all have and I love that. 00:03:42.45\00:03:46.37 Now if a woman, let's say a woman has... she's got kids and 00:03:46.40\00:03:50.53 and is on a fixed income, isn't it expensive to eat 00:03:50.57\00:03:53.62 healthy?... No, it's not expensive at all... 00:03:53.65\00:03:56.21 Today we have so many different avenues that people can eat 00:03:56.24\00:04:02.03 healthy on a budget. We have community gardens, 00:04:02.07\00:04:05.28 we have Co-ops and we have Farmers' markets and all of the 00:04:05.31\00:04:11.58 vegetables are very low cost. That's awesome. 00:04:11.62\00:04:16.43 What about the equipment, you know, I noticed that you use 00:04:16.46\00:04:19.52 processors and things like that. Are there places that 00:04:19.56\00:04:22.55 people can get food processors more cheaply that you know of? 00:04:22.59\00:04:27.98 Um... I was thinking maybe that even they can go to the library 00:04:28.01\00:04:32.78 and check out e-Bay or something like that... and maybe get it 00:04:32.81\00:04:36.32 that way but if you know some other way.. You can, yeah on 00:04:36.35\00:04:39.35 e- Bay they have some equipment cheaper and one thing that I've 00:04:39.39\00:04:45.46 told people at my church... well let's go in together let's share 00:04:45.49\00:04:51.53 and that's how we can work together to get healthy 00:04:51.57\00:04:54.35 So maybe a group gets together and buys a Vitamix or buys a 00:04:54.38\00:04:58.83 food processor and that builds camaraderie and they do it 00:04:58.86\00:05:03.28 together just like Brenda and I did this together and that's 00:05:03.32\00:05:07.34 where we are now and that was three years ago. 00:05:07.38\00:05:10.60 That is awesome. So not only, this is really good, so people 00:05:10.63\00:05:14.40 let's say a group of women that live in a building, you know, 00:05:14.44\00:05:18.18 let's say they live in an apartment building in the 00:05:18.21\00:05:20.76 inner city and they want to eat more healthily, they can kind of 00:05:20.80\00:05:25.33 rotate the equipment or they can, you know, 00:05:25.36\00:05:28.94 one can prepare the meals and somebody can purchase the food 00:05:28.97\00:05:33.08 and then they can do it that way That's a great idea because we 00:05:33.12\00:05:37.19 want people to know that it's available to them... 00:05:37.23\00:05:41.63 healthy eating is available to them at a lower cost... 00:05:41.66\00:05:46.03 so that's really good. Brenda with your children, 00:05:46.07\00:05:48.89 now I noticed, you know, you had the smoothie with the spinach 00:05:48.92\00:05:54.16 in it and the banana and the peaches. What do you do to get 00:05:54.19\00:05:59.20 your children to eat better? Well, they like the colors of 00:05:59.24\00:06:04.25 the smoothie, they think it's so cool, so hiding those green 00:06:04.29\00:06:08.73 ingredients into the smoothie is a quick way to get them to 00:06:08.76\00:06:11.48 eat, you know, healthier so I hope they are not listening 00:06:11.51\00:06:15.44 because I am giving away my secrets, but that's what you 00:06:15.47\00:06:19.42 have to do, you know, kind of make it fun for them and 00:06:19.45\00:06:21.46 you know, that will get them to eat it... 00:06:21.50\00:06:23.44 Yvonne: Do they help you prepare them as well?... 00:06:23.47\00:06:25.62 Brenda: Yes, they love to help. Yvonne: One of the things 00:06:25.65\00:06:27.90 that we can do, you know, Dare to Dream is really 00:06:27.93\00:06:30.63 pro-family, as you know, and we like the idea of creating 00:06:30.66\00:06:35.97 memories, like, when you work with your kids and children, 00:06:36.01\00:06:39.47 they are helping you to make smoothies or helping to prepare 00:06:39.51\00:06:42.94 healthier meals, it creates memories, and that's one of 00:06:42.98\00:06:46.48 the things that we think is important to do. 00:06:46.51\00:06:48.65 What are some of the testimonies that you have.. people that have 00:06:48.69\00:06:54.76 come to your classes? I know that you do classes and 00:06:54.80\00:06:58.21 seminars and you are available to come to churches and teach 00:06:58.25\00:07:02.69 raw food preparation, what are some of the effects that your 00:07:02.72\00:07:07.13 seminars have had on people... when they've come? 00:07:07.16\00:07:11.59 Well, the Kale salad that we prepared in one of the previous 00:07:11.62\00:07:15.70 segments, that has gone around the world. Yes, people have 00:07:15.73\00:07:19.74 shared it all around the world and I went to a- Houston church 00:07:19.77\00:07:24.19 has said, "You know we got that Kale recipe from somebody from 00:07:24.23\00:07:28.62 your church... and I was amazed! I said, "Really?" so, and a lot 00:07:28.65\00:07:33.42 of the people... we are like the go-to people for help... 00:07:33.46\00:07:38.43 I am the Health Ministries leader but still all of us that 00:07:38.46\00:07:42.62 Brenda and my friend Leslie, we are like the go-to people... 00:07:42.66\00:07:46.78 people come and ask us, "What do we need to do about this?" and 00:07:46.82\00:07:50.88 "Do you have a recipe for this?" and it's great because we are 00:07:50.91\00:07:53.83 changing lives. Yvonne:Oh that's such a blessing 00:07:53.87\00:07:56.48 Have you noticed people losing weight or their numbers changing 00:07:56.52\00:08:01.98 Evita: Several... Yvonne: with their lab tests 00:08:02.01\00:08:03.37 and things like that? Evita and Brenda: Oh yes, 00:08:03.40\00:08:04.69 cholesterol levels going down, people losing dress sizes, 00:08:04.72\00:08:08.83 Yvonne: That's awesome and see that's what we need to 00:08:08.87\00:08:12.91 understand that when you eat healthy and the body is getting 00:08:12.94\00:08:16.14 fed, then... the body doesn't get fed with junk food... 00:08:16.18\00:08:20.32 so you are going to stay hungry, you are not going to be 00:08:20.36\00:08:24.43 satisfied because you are eating a bunch of junk, but when you 00:08:24.47\00:08:27.01 are getting juices, and all those concentrated nutrients, 00:08:27.05\00:08:31.26 in juicing and in raw food, where you have the enzymes and 00:08:31.29\00:08:35.54 all of those nutrients, I mean, it's just an amazing thing. 00:08:35.58\00:08:39.95 Brenda: You tend to eat less... Yvonne: You do... you tend to 00:08:39.98\00:08:43.06 eat less because the body is saying, "Oh, now, you are giving 00:08:43.09\00:08:46.19 me what I need to function properly. It's like a car, 00:08:46.22\00:08:49.26 you know, if you put the right fuel in, the car works 00:08:49.29\00:08:51.81 properly... Evita: And Yvonne, you really 00:08:51.85\00:08:54.30 get full, really, really fed, on a very... because it is 00:08:54.33\00:08:58.12 nutrient dense... so you are eating a little but it's 00:08:58.15\00:09:01.87 power-packed with nutrients and so, your body is saying, 00:09:01.90\00:09:05.99 Oh, I don't need anymore because I am full... 00:09:06.03\00:09:07.52 Yvonne: hmmm, hmmm, hmmm, hmmm, that's a wonderful thing. 00:09:07.56\00:09:10.53 When you first started with, um, the healthy path, had you been 00:09:10.57\00:09:16.89 on a very unhealthy path prior to that?... 00:09:16.92\00:09:20.02 Evita: I was... Yvonne: What switched you over? 00:09:20.05\00:09:22.36 Evita: Well, I became an Adventist... yeah, that's what, 00:09:22.40\00:09:27.22 that's what changed my life... I was Catholic and I was 00:09:27.25\00:09:32.00 introduced to the health message I was introduced to Adventism, 00:09:32.03\00:09:36.33 and it basically changed my life A couple was at the Church 00:09:36.37\00:09:40.13 and they had just come back from Uchee Pines and they said, 00:09:40.16\00:09:43.57 - I heard them- and I knew that I was sick all the time 00:09:43.61\00:09:46.94 and I said, "Can you teach me? Can you show me?" and that's 00:09:46.98\00:09:51.06 when I became vegan... Yvonne: My!... 00:09:51.10\00:09:53.49 Evita: Yeah, they came and brought me to their home 00:09:53.53\00:09:55.21 and they taught me how to cook and then, I went to Uchee Pines 00:09:55.24\00:09:58.55 myself... Yvonne: Oh.. and then you got 00:09:58.59\00:10:00.47 trained, got some training there Evita: Yeah, so I went there 00:10:00.51\00:10:03.91 for a short program and I worked at Country Life and I worked 00:10:03.95\00:10:07.32 around on the campus and I learned so much and they told 00:10:07.35\00:10:11.03 me, "Now, it's your turn... go forth and teach people... 00:10:11.06\00:10:14.71 and from then on, since 1988, I've been teaching... 00:10:14.74\00:10:18.48 I held my first class in my home Yvonne: Did you? See it's a 00:10:18.51\00:10:23.64 calling... don't you feel like it's a calling, I mean, you know 00:10:23.67\00:10:27.63 watching you and knowing you, as I do, I know that you are 00:10:27.66\00:10:32.25 walking in your calling... What about you Brenda, how did 00:10:32.28\00:10:35.46 you... you just kind of... I know you were raised vegan, 00:10:35.50\00:10:38.60 and sounds like you went away for a bit and then you came back 00:10:38.64\00:10:41.88 Brenda: Well it took one film showing, I watched how 00:10:41.91\00:10:45.58 meat was processed and what happens to the animals and that 00:10:45.61\00:10:50.42 just changed me back, quickly... that is all it took... 00:10:50.46\00:10:54.95 It's funny how, you know, whether it's through people, 00:10:54.98\00:10:59.52 you know, like with you Evita, you met some people, who, 00:10:59.56\00:11:03.74 had been to Uchee Pines, or whether it's through media, 00:11:03.77\00:11:07.92 you know, the message is powerful! and this message 00:11:07.96\00:11:12.22 changes lives... the messages of Jesus Christ and 00:11:12.26\00:11:16.42 the health message- it changes lives! 00:11:16.45\00:11:19.25 it makes such a difference I know when I was practicing 00:11:19.29\00:11:22.88 Naturopathic medicine, I could see when people would change 00:11:22.91\00:11:26.47 their diets, it would make a profound difference... 00:11:26.51\00:11:31.16 and a lot of times, again, they just don't realize that 00:11:31.20\00:11:35.92 the environment, the internal environment that is friendly 00:11:35.96\00:11:40.18 toward disease, that's conducive to disease, that internal 00:11:40.21\00:11:44.12 environment, has to be changed and nutrition is a very good way 00:11:44.16\00:11:48.75 to impact that internal environment and so, you know, 00:11:48.78\00:11:52.58 we have to have the juices and all those things that you guys 00:11:52.61\00:11:56.91 do.. tell me how is it going at the church with what you're 00:11:56.94\00:12:01.30 doing with the health and temperance. Are people being 00:12:01.33\00:12:03.57 impacted in the community? Evita: Yes, yes.. 00:12:03.60\00:12:07.23 Brenda: We've had a church request us to teach them how 00:12:07.27\00:12:11.85 to be healthy, so that was pretty profound for us. 00:12:11.88\00:12:15.00 Yvonne: I saw in one of the talk programs, a sample of what 00:12:15.04\00:12:21.24 is served at potlucks, Church potlucks.. It's horrific. 00:12:21.28\00:12:27.45 It's horrific. So, maybe that's one of the things that you all 00:12:27.49\00:12:31.35 can do... Evita: But that's a church that 00:12:31.38\00:12:33.20 rents from our church and they requested for us to come. 00:12:33.23\00:12:37.71 Yeah, they rented the church on Sunday and we did a health 00:12:37.75\00:12:42.19 seminar at their church on Sunday and now they said, 00:12:42.22\00:12:46.06 "Oh, one day we are just going to do a salad day.. and the next 00:12:46.09\00:12:49.75 time we get together and have a potluck, we are going to do 00:12:49.79\00:12:53.41 just, no meat at all, and they want us to come do a 00:12:53.45\00:12:57.47 maybe eight-or-ten part seminar, at their church, at their 00:12:57.50\00:13:00.82 Services... Yvonne: You know what! 00:13:00.86\00:13:02.07 I just thought about this.. what about the 7-day raw challenge 00:13:02.10\00:13:06.29 Brenda: That's our next project Evita: Yes, yes, yes... 00:13:06.33\00:13:08.32 Yvonne: Okay, let's do that, let's offer it here... 00:13:08.36\00:13:10.62 right here on Urban Report... " 00:14:14.19\00:14:18.25 How would they do it? What would they do? 00:14:18.28\00:14:20.35 Brenda: Start out the breakfast with one of those delicious 00:14:20.38\00:14:24.29 smoothies that we made... and for lunch-um-one of those salads 00:14:24.33\00:14:28.21 with the wonderful dressing that we prepared... 00:14:28.25\00:14:30.81 and what can we do for dinner? Believe it or not, we could have 00:14:30.84\00:14:34.91 pie for dinner if you want... Yes, because it is not refined. 00:14:34.95\00:14:39.19 No sugar, so they can have a... they can have a nice fruit salad 00:14:39.23\00:14:43.96 or something, you know, something light like that... 00:14:43.99\00:14:46.87 Yvonne: You know that mock tuna that you made... Evita: Yes that 00:14:46.91\00:14:49.47 would be good... hmmmm... hmmmmmmmm... 00:14:49.50\00:14:51.00 Yvonne: I could, and today, with the cauliflower, when you 00:14:51.04\00:14:54.68 taped that segment, it's just incredible... 00:14:54.71\00:14:57.35 our viewers, if they would just try it, I know it's different... 00:14:57.38\00:15:01.85 you know.. it's something that's unfamiliar, but unfamiliar 00:15:01.89\00:15:05.08 isn't bad... let's stretch our horizons a little bit, 00:15:05.12\00:15:09.26 let's try something new... Evita: and that's what happened 00:15:09.30\00:15:13.17 at the Church... when we had held our first class, it was 00:15:13.21\00:15:16.47 very small, we did it in someone's home... and when the 00:15:16.50\00:15:19.40 Church found out... they said, "Why couldn't we come, we heard 00:15:19.44\00:15:22.67 that the food was so good... we want it for the Church... 00:15:22.71\00:15:25.91 It's incredible... Yvonne: Wow! you know, 00:15:25.94\00:15:31.20 you should just try.. raw foods. It's really, really, really good 00:15:31.23\00:15:36.39 very different... really good for you.. A Taste of Paradise 00:15:36.43\00:15:41.01 has a nice balance between raw food preparation and 00:15:41.04\00:15:44.75 cooked foods... Nyse Collins supplies the 00:15:44.79\00:15:47.71 male touch to our program... Take a look... 00:15:47.75\00:15:50.77 Well, that's a good one... I am just Nyse, uh, as simple 00:15:50.80\00:15:55.90 as that... Yvonne: you are a nice guy... 00:15:55.94\00:15:58.33 Nyse: Yeah, I try to be Don't ever do it to your kids 00:15:58.36\00:16:01.03 though because they'll be teased... Nice to be nice... 00:16:01.07\00:16:02.93 and all that stuff and you know, I just studied at one of our 00:16:02.96\00:16:07.07 local universities-Southwestern Adventist University... 00:16:07.10\00:16:11.17 it wasn't my original direction, my whole thing was 00:16:11.21\00:16:13.58 save the earth and save the animals and don't kill anybody 00:16:13.61\00:16:16.96 and save the forest, but then the Lord quickly showed me, 00:16:16.99\00:16:19.53 "That's important, but I have something else for you... um, 00:16:19.57\00:16:22.96 it is better to save and help people instead," and so as a 00:16:23.00\00:16:27.01 result, I adjusted things in university, studied a little bit 00:16:27.04\00:16:31.01 in Religion and went over and did a little quick Nursing class 00:16:31.05\00:16:35.59 or two, and also Biology... to learn because if we want to 00:16:35.63\00:16:38.92 work the same way Jesus did, He had a knowledge of the Bible, 00:16:38.96\00:16:41.85 and also of nature and health and stuff like that... 00:16:41.88\00:16:44.48 and so, it has just been a blessing ever since. 00:16:44.52\00:16:47.05 I told the Lord, "Lord, I don't want to work for anybody else. " 00:16:47.08\00:16:48.79 and so from Day 1, He says, "Well, if you do it my way, 00:16:48.83\00:16:51.48 then, you can work for me" and so we just try to follow 00:16:51.51\00:16:54.10 His principles and it has just been a blast ever since... 00:16:54.13\00:16:56.65 Yvonne: Oh that's incredible, you know, I guess you noticed, 00:16:56.69\00:16:59.54 I am sitting here near the chicken substitute, Oh... 00:16:59.58\00:17:03.77 Nyse: The ticken...
