And I'm Evita Tezeno. 00:00:40.34\00:00:43.84 And I have a raw lasagna recipe that will knock your socks off. 00:00:43.87\00:00:48.28 So let's go straight to the ingredients. 00:00:48.31\00:00:51.98 For the raw lasagna noodles, you need... 00:00:52.01\00:00:54.78 So let's start the recipe. 00:01:38.36\00:01:41.06 So here we have a zucchini. 00:01:41.10\00:01:46.94 And we have my trusty mandoline. 00:01:46.97\00:01:52.91 So I cut off the edges here and you just take the mandolin. 00:01:52.94\00:01:58.08 Like so. 00:02:02.42\00:02:03.85 And you make these wonderful noodles. 00:02:06.96\00:02:09.22 So I have some already done. 00:02:09.26\00:02:12.93 So then you sprinkle it with sea salt 00:02:12.96\00:02:18.23 and a little olive oil. 00:02:18.27\00:02:20.47 And what you're doing is softening 00:02:20.50\00:02:22.77 the zucchini noodles. 00:02:22.80\00:02:26.81 So it makes it easier to chew. 00:02:26.84\00:02:30.88 And I will place these aside. 00:02:30.91\00:02:32.41 So now we start our marinara. 00:02:38.15\00:02:40.92 So we have our tomatoes and we're going to chop them. 00:02:44.69\00:02:49.73 You need to just quarter them. 00:02:49.76\00:02:52.70 You don't have to chop them fine. 00:02:52.73\00:02:56.20 And I love tomatoes, 00:02:59.84\00:03:01.38 they're high in vitamin C... 00:03:01.41\00:03:02.84 And they're just so refreshing. 00:03:05.98\00:03:09.38 So we have our tomatoes. 00:03:09.42\00:03:12.22 And then we have our sun-dried tomatoes 00:03:12.25\00:03:13.76 that were soaked. 00:03:13.79\00:03:15.12 Make sure that you don't get sun-dried tomatoes 00:03:15.16\00:03:16.99 that are in all packed in oil, you just want them dried. 00:03:17.03\00:03:20.63 And you want to make sure 00:03:24.50\00:03:25.83 that you drain all the water out. 00:03:25.87\00:03:27.80 Then we have our red bell pepper. 00:03:27.84\00:03:30.17 And we're going to mince our ingredients, 00:03:34.88\00:03:37.05 our herbs real quickly. 00:03:37.08\00:03:39.11 Fresh basil and fresh oregano, 00:03:39.15\00:03:43.02 very aromatic. 00:03:43.05\00:03:44.52 We have olive oil, 00:03:51.66\00:03:53.19 extra virgin olive oil, our sea salt, 00:03:53.23\00:03:57.27 and I'm using Himalayan salt today. 00:03:57.30\00:04:00.07 And we have our cloves of garlic. 00:04:00.10\00:04:04.24 And I always use fresh ingredients 00:04:04.27\00:04:06.78 because fresh is fabulous. 00:04:06.81\00:04:08.64 And we put all of this in a food processor. 00:04:12.45\00:04:14.92 And pulse it. You want it a little chunky. 00:04:32.23\00:04:34.37 And there, you have 00:04:34.40\00:04:35.74 fresh marinara sauce, very quick. 00:04:35.77\00:04:38.71 This can be served on anything, 00:04:38.74\00:04:42.38 on zucchini noodles, 00:04:42.41\00:04:45.61 this is so delicious and it's fresh, 00:04:45.65\00:04:50.02 No heating required. 00:04:50.05\00:04:51.92 So now let's move on to the next recipe. 00:04:58.06\00:05:02.66 For the cashew 00:05:02.70\00:05:04.03 almond ricotta nut cheese, you need... 00:05:04.07\00:05:06.47 So we're going to use the food processor again. 00:05:29.19\00:05:32.93 And we're going to start with our cashews. 00:05:32.96\00:05:37.93 We soaked the cashews. 00:05:37.97\00:05:39.30 They make it creamier just like ricotta cheese. 00:05:39.33\00:05:42.67 And so we have our almonds, 00:05:42.70\00:05:45.04 which is high in calcium 00:05:45.07\00:05:49.61 and almonds are the king of the nuts. 00:05:49.64\00:05:53.35 We have our nutritional yeast 00:05:53.38\00:05:55.32 which gives it that cheesy flavor. 00:05:55.35\00:05:57.32 Our sea salt, and I'm using Himalayan, 00:06:00.49\00:06:02.66 I just love Himalayan salt. 00:06:02.69\00:06:07.33 And our onion powder, 00:06:07.36\00:06:09.06 we're not using fresh onions 00:06:09.10\00:06:10.73 because the taste will be a little strong. 00:06:10.77\00:06:14.80 Lemon juice 00:06:14.84\00:06:17.61 and our garlic cloves. 00:06:17.64\00:06:22.44 And we're going to process it. 00:06:22.48\00:06:24.05 And you want to scrape the sides of this. 00:06:34.59\00:06:38.59 You want to make sure that this is really incorporated. 00:06:38.63\00:06:41.40 So if you are noticing it is, kind of, 00:06:59.21\00:07:02.45 have the texture of ricotta cheese 00:07:02.48\00:07:06.76 or almost like cottage cheese. 00:07:06.79\00:07:09.02 Okay, we're done with this. 00:07:17.87\00:07:22.27 So let's place it in a bowl 00:07:22.30\00:07:24.01 and get ready for the next recipe. 00:07:24.04\00:07:26.04 And for the next recipe, pistachio basil pesto, 00:07:42.26\00:07:45.79 you need... 00:07:45.83\00:07:47.33 So we have our fresh basil. 00:08:01.14\00:08:04.28 And I love basil. 00:08:04.31\00:08:07.42 It smells so good. 00:08:07.45\00:08:11.85 And you know what, I changed my mind, 00:08:11.89\00:08:14.32 I am not going to do the basil first 00:08:14.36\00:08:16.93 because we need to ground the nuts. 00:08:16.96\00:08:20.70 So we need to do our pistachios first. 00:08:20.73\00:08:26.27 So you want to just grind them down. 00:08:26.30\00:08:28.17 Run them down a little bit 00:08:36.85\00:08:38.18 and you want to do them with the garlic and the salt. 00:08:38.21\00:08:42.95 By grinding the nuts first, you get a smoother the bottom... 00:10:12.87\00:10:14.21 The marinara. 00:10:19.38\00:10:23.22 And we line our noodles. 00:10:23.25\00:10:25.45 And you don't have to have a deep dished one, 00:10:32.39\00:10:35.73 it just depends, you could use just a regular pyrex dish. 00:10:35.76\00:10:39.13 And then we put a little bit 00:10:42.37\00:10:45.47 of the ricotta cheese... 00:10:45.51\00:10:48.78 And excuse me, I'm using my fingers 00:10:48.81\00:10:50.31 because I'm going to kind of drizzle 00:10:50.35\00:10:51.68 the ricotta cheese in here. 00:10:51.71\00:10:53.11 Really quickly, then we put our spinach. 00:10:59.29\00:11:05.13 So what we're doing is layering. 00:11:05.16\00:11:07.36 Then we put another layer of zucchini. 00:11:10.67\00:11:13.17 And this is really, really quick. 00:11:19.27\00:11:23.35 Once you get 00:11:23.38\00:11:24.71 all of the stuffings done, 00:11:24.75\00:11:30.35 you can make this pretty, pretty quick. 00:11:30.39\00:11:35.39 And then you want to drizzle some of the pesto in here. 00:11:35.42\00:11:38.26 And it's all right to use your hands. 00:11:44.67\00:11:46.53 Okay, another layer of spinach. 00:11:56.28\00:11:59.21 Then another layer
