I've done it. 00:01:17.71\00:01:20.61 We're gonna have it almost raw, 00:01:20.64\00:01:24.41 sweet potato cheesecake today. 00:01:24.45\00:01:26.95 The reason why it's almost raw because I did bake 00:01:26.98\00:01:30.29 the sweet potatoes. 00:01:30.32\00:01:31.75 But it is fabulous, 00:01:31.79\00:01:33.52 all the other ingredients are alive, 00:01:33.56\00:01:36.49 and the sweet potato is the only one that is baked. 00:01:36.52\00:01:39.13 So let's read those ingredients 00:01:39.16\00:01:40.76 and let's get to making this cheesecake. 00:01:40.80\00:01:45.33 Almost raw sweet potato cheesecake. 00:01:45.37\00:01:49.14 For the crust, we'll need: 00:01:49.17\00:01:51.17 For the filling, we need... 00:02:16.77\00:02:19.60 So we're gonna start with the crust first. 00:02:52.67\00:02:55.40 And this is a real easy recipe. 00:02:55.44\00:02:59.71 I'm starting with my pecans in my food processor. 00:02:59.74\00:03:04.85 And oat flour is just ground oats. 00:03:04.88\00:03:08.42 And oats are not really raw, they have been steamed, 00:03:08.45\00:03:12.52 the oat groats have been steamed 00:03:12.55\00:03:14.19 and then they're pressed. 00:03:14.22\00:03:15.96 So this is not really raw but it is gluten free. 00:03:15.99\00:03:19.53 And then I have my dates. 00:03:22.66\00:03:24.57 Again, my date of choice is Medjool dates 00:03:24.60\00:03:27.34 and they have been pitted. 00:03:27.37\00:03:29.47 My sea salt, but I'm using Himalayan salt today. 00:03:34.34\00:03:40.22 Vanilla, lemon juice, 00:03:40.25\00:03:44.49 and always fresh lemon juice, 00:03:44.52\00:03:47.69 my coriander, and my cardamom. 00:03:47.72\00:03:50.33 And I use coriander and cardamom 00:03:53.26\00:03:55.23 instead of using cinnamon 00:03:55.26\00:04:00.14 because cinnamon is a little irritating 00:04:00.17\00:04:02.14 to the stomach so I use vary spices 00:04:02.17\00:04:06.07 that are soothing to the stomach. 00:04:06.11\00:04:09.58 So then we have our coconut oil. 00:04:09.61\00:04:12.55 And then we process it. 00:04:15.82\00:04:18.45 You wanna make sure that it is of a nice consistency, 00:04:36.07\00:04:40.14 and this is great. 00:04:40.18\00:04:41.64 So we have our springform pan. 00:04:41.68\00:04:44.98 Let me get this out of the way. 00:04:45.01\00:04:46.92 And we just put this in our springform pan 00:04:49.28\00:04:54.16 and press it down. 00:04:54.19\00:04:58.19 And you can put this in your freezer 00:04:58.23\00:05:02.16 or your refrigerator for a little bit 00:05:02.20\00:05:04.43 so it will harden up a little bit. 00:05:04.47\00:05:06.77 If you want it a little solid because the coconut oil, 00:05:13.61\00:05:17.45 when it gets cold, it's a little fuss. 00:05:17.48\00:05:22.28 So we're gonna put it in our refrigerator. 00:05:22.32\00:05:24.45 And next, we have our filling. 00:05:32.99\00:05:37.07 And this is a fantastic filling. 00:05:37.10\00:05:40.94 I would like to drink this, this is so delicious. 00:05:40.97\00:05:44.94 So we have our sweet potatoes that have been baked. 00:05:44.97\00:05:49.01 And I've tried to use this recipe 00:05:49.04\00:05:51.98 with raw sweet potatoes 00:05:52.01\00:05:53.65 but it tends to be a little starchy. 00:05:53.68\00:05:55.52 So I just went ahead and baked them, 00:05:55.55\00:05:58.55 and it tastes fabulous. 00:05:58.59\00:06:00.66 We have our cashews that we've soaked overnight. 00:06:00.69\00:06:04.23 And the soaking of the cashews make them softer, 00:06:04.26\00:06:08.80 and it makes the cheesecake creamier, 00:06:08.83\00:06:13.57 and it also takes a little of the fat out as well. 00:06:13.60\00:06:18.47 We have our maple syrup. 00:06:18.51\00:06:20.71 And if you don't have maple syrup, 00:06:20.74\00:06:22.74 you can use honey. 00:06:22.78\00:06:25.88 And if a cup is too much, you could, you know, 00:06:25.91\00:06:30.19 make it a little less sweeter. 00:06:30.22\00:06:32.42 We have our fresh ginger, 00:06:32.45\00:06:34.89 and our lecithin which makes it creamy, 00:06:34.92\00:06:40.20 lemon juice, 00:06:40.23\00:06:43.30 coriander and cardamom... 00:06:43.33\00:06:45.43 Our coconut oil. 00:06:50.91\00:06:57.75 Vanilla, and our salt. 00:06:57.78\00:07:02.35 And last but not least, this is our fresh carrot juice. 00:07:07.69\00:07:11.59 Oops!
