eat greens raw, 00:01:04.43\00:01:07.86 but you just have to treat them a little bit 00:01:07.90\00:01:10.57 to make them tender so you can eat them. 00:01:10.60\00:01:14.37 So we're doing a marinated collard green today 00:01:14.40\00:01:17.24 that is fabulous. 00:01:17.27\00:01:19.07 And coming from the south, we used to flavor our, 00:01:19.11\00:01:22.64 our greens with meat 00:01:22.68\00:01:24.81 and so I'm adding a little twist there 00:01:24.85\00:01:27.32 by using eggplant bacon to spice it up 00:01:27.35\00:01:30.95 and give it like a little savory smoky taste. 00:01:30.99\00:01:34.02 So let's read our ingredients and let's start the recipe. 00:01:34.06\00:01:37.69 Gotta have that little kick in it. 00:02:02.95\00:02:04.69 For the eggplant bacon... 00:02:11.03\00:02:12.66 We're gonna start off making the eggplant bacon. 00:02:37.49\00:02:40.46 So we have an eggplant that has been peeled 00:02:40.49\00:02:43.83 and we're using this wonderful item here called the mandolin, 00:02:43.86\00:02:49.13 this is my favorite, favorite appliance in the kitchen. 00:02:49.16\00:02:53.10 So what this does, it uniformly cuts vegetables for you. 00:02:53.13\00:02:58.61 So you don't have to be trying to guide with a knife 00:02:58.64\00:03:01.84 and trying to thinly slice things 00:03:01.88\00:03:03.88 this does it all for you. 00:03:03.91\00:03:05.41 It's just very, very easy. 00:03:05.45\00:03:07.42 So this is how it works. 00:03:07.45\00:03:11.42 You want to just continue, 00:03:11.45\00:03:13.15 you want to make sure that you watch your fingers. 00:03:13.19\00:03:17.43 And just continue to slice the eggplant. 00:03:17.46\00:03:21.23 And you could use this with, with zucchini, 00:03:26.03\00:03:29.97 with all kind of different other vegetables. 00:03:30.01\00:03:36.21 So once you have your eggplant cut into thin slices 00:03:36.24\00:03:43.22 you want to slice them in half 00:03:43.25\00:03:46.65 and now let's make the marinade. 00:03:46.69\00:03:50.63 So we're using our Vitamix today. 00:03:50.66\00:03:56.10 And we have some brags... 00:03:56.13\00:03:58.73 maple syrup... 00:04:01.97\00:04:03.30 olive oil... 00:04:09.81\00:04:11.15 cumin, 00:04:14.65\00:04:18.15 a clove of garlic, 00:04:18.19\00:04:20.99 soaked chipotle pepper, 00:04:21.02\00:04:24.49 a smoked paprika. 00:04:24.53\00:04:28.93 Now if you don't have access to a chipotle pepper, you can... 00:04:28.96\00:04:32.73 and it won't be really raw 00:04:32.77\00:04:34.30 but you could put some natural liquid smoke in it 00:04:34.34\00:04:37.24 'cause you want this smoky. 00:04:37.27\00:04:39.44 So that's what gives it the smoke, 00:04:39.47\00:04:41.21 also the smoked paprika also gives it that smoky taste. 00:04:41.24\00:04:48.18 So now we're going to blend it. 00:04:48.22\00:04:49.72 Once these things are incorporated, 00:05:04.70\00:05:06.87 you want to place your eggplant in a bowl... 00:06:01.46\00:06:05.29 Now today we're using Excalibur dehydrator 00:06:05.33\00:06:08.20 but if you don't have a Excalibur dehydrator 00:06:08.23\00:06:12.37 you can try it in the oven 00:06:12.40\00:06:14.90 and put it on a low setting like 100 degrees 00:06:14.94\00:06:19.21 and make sure that you watch it. 00:06:19.24\00:06:22.28 It won't get really crispy like it does in the dehydrator 00:06:22.31\00:06:27.35 but it does work. 00:06:27.38\00:06:29.78 So we're gonna put it in the dehydrator. 00:06:29.82\00:06:31.35 Grabbing a sheet... 00:06:35.49\00:06:36.83 and this has a Teflex sheet that comes with the dehydrator, 00:06:36.86\00:06:40.10 this keeps the liquid from seeping through. 00:06:40.13\00:06:43.23 We're gonna just place them on here. 00:06:48.94\00:06:50.67 00:12:45.33\00:12:46.93 and I went to buy the cashews 00:12:46.96\00:12:48.40 and they were literally 33 dollars a pound. 00:12:48.43\00:12:52.73 I was like, 00:12:52.77\00:12:54.40 "We're not going to have the pasta 00:12:54.44\00:12:55.77 on this recipe from now on." 00:12:55.80\00:12:57.14 You know what I mean, especially here. 00:12:57.17\00:12:58.51 So they didn't have access to those nuts and stuff 00:12:58.54\00:13:01.54 so then we went ahead 00:13:01.58\00:13:02.91 and we made what is known as potato cheese 00:13:02.94\00:13:05.41 several seasons ago 00:13:05.45\00:13:06.78 and I hope you all enjoyed that. 00:13:06.82\00:13:08.15 But now we're going to take it to another level. 00:13:08.18\00:13:10.22 We're going to make what is known as 00:13:10.25\00:13:12.49 mac and split pea cheese. 00:13:12.52\00:13:15.66 And this is a recipe that I got 00:13:15.69\00:13:17.26 from some of our friends in the island... 00:13:17.29\00:13:19.56 the beautiful island of St Lucia. 00:13:19.59\00:13:21.76 They said, "Man, Nyse, you know, 00:13:21.80\00:13:23.70 the nuts here are too expensive 00:13:23.73\00:13:26.00 and potato, we didn't like potato on top of pasta," 00:13:26.03\00:13:29.14 they said, "Come, show us 00:13:29.17\00:13:31.27 and you know how to do so many things," 00:13:31.31\00:13:33.38 and they said, "We have a new twist on it,"
