00:00:48.52\00:00:52.87 For the Greek dressing we need... 00:00:52.90\00:00:55.35 For the vegan parmesan cheese you need... 00:01:22.54\00:01:25.77 Okay, so we're gonna do the parmesan cheese first. 00:01:37.98\00:01:43.27 And I was a cheese lover, 00:01:43.30\00:01:45.72 I'm telling you it was very difficult 00:01:45.75\00:01:47.79 when I became vegan to transition, 00:01:47.82\00:01:50.53 but when I started finding recipes and ingredients 00:01:50.56\00:01:55.40 to substitute for cheese it was phenomenal. 00:01:55.43\00:01:58.79 And nutritional yeast is one of the great secret ingredients 00:01:58.82\00:02:03.47 I call it to make things taste cheesy. 00:02:03.50\00:02:07.76 So also sesame seed are, you know, 00:02:07.79\00:02:10.05 if you're familiar with tahini. 00:02:10.08\00:02:12.17 Tahini also in cheese sauces 00:02:12.20\00:02:14.80 it gives it that kind of sharpness. 00:02:14.83\00:02:17.17 So cheese is not a problem for me to anymore, 00:02:17.20\00:02:19.70 'cause I can make my own. 00:02:19.73\00:02:21.07 Isn't that fabulous? 00:02:21.10\00:02:23.15 And it's fresh. 00:02:23.18\00:02:24.51 That's one good thing about it. 00:02:24.54\00:02:27.51 So I'm using a coffee grinder, 00:02:27.54\00:02:31.49 I got from a big-box store, very inexpensive. 00:02:31.52\00:02:36.36 And I'm putting my sesame seeds in 00:02:36.39\00:02:38.74 and I'm just gonna whiz it. 00:02:38.77\00:02:40.10 Then I put my walnuts. 00:02:45.93\00:02:49.13 And I put the sesame seeds first 00:03:12.02\00:03:14.53 because the walnuts tend to kink up a little bit. 00:03:14.56\00:03:17.55 And it prevents it from clogging up your utensil. 00:03:17.58\00:03:21.75 So I mean your appliance, sorry about that. 00:03:21.78\00:03:24.29 So I am going to put this in a measuring cup 00:03:24.32\00:03:29.79 and then mix in the nutritional yeast 00:03:32.69\00:03:37.87 and stir it all up. 00:03:37.90\00:03:39.02 And you can do this in a blender, 00:03:43.82\00:03:45.70 but it's just easier for me to use a little small appliance 00:03:45.73\00:03:51.17 to just get everything incorporated 00:03:51.20\00:03:52.82 than messing up a have our olive oil 00:04:15.49\00:04:17.61 and lime and lemon juice. 00:04:21.12\00:04:23.71 And the reason why I use lime and lemon juice 00:04:23.74\00:04:26.62 because the combination of both of them 00:04:26.65\00:04:29.56 kind of mimics vinegar and I don't use vinegar 00:04:29.59\00:04:32.68 because vinegar is very irritant 00:04:32.71\00:04:35.64 to your stomach as well. 00:04:35.67\00:04:37.00 So I don't use vinegar, 00:04:37.03\00:04:39.17 so I use the combination to substitute. 00:04:39.20\00:04:41.47 And fresh oregano. 00:04:44.38\00:04:45.59 Remember fresh is fabulous 00:04:45.62\00:04:47.35 so we always should have fresh ingredients. 00:04:47.38\00:04:50.14 And this is a date, I prefer Medjool dates, 00:04:50.17\00:04:54.00 they are softer and sweeter, 00:04:54.03\00:04:55.90 but if you can't get Medjool dates 00:04:55.93\00:04:58.34 whatever date that you can get it will be great, 00:04:58.37\00:05:02.14 but I just prefer the Medjool dates. 00:05:02.17\00:05:04.90 Clove of garlic, sea salt 00:05:04.93\00:05:10.33 and my favorite, an avocado. 00:05:10.36\00:05:18.13 And it's a forth of a cup an avocado, 00:05:18.16\00:05:20.03 so that's about, about a half of an avocado. 00:05:20.06\00:05:23.87 This is a medium avocado 00:05:23.90\00:05:26.45 so that is about the right measurement. 00:05:26.48\00:05:32.25 And then we're gonna put our things so nicely, 00:08:21.62\00:08:25.60 very thin, wonderful. 00:08:25.63\00:08:28.76 So that's how you get 00:08:28.79\00:08:29.97 the vegetables uniform and slice real thin. 00:13:40.71\00:13:43.03 I thought it was gonna be a pastry or something 00:13:43.06\00:13:45.37 but you know, Evita always has something 00:13:45.40\00:13:47.23 really cool up her sleeves there. 00:13:47.26\00:13:49.65 So today I said, "You know what, 00:13:49.68\00:13:51.77 let us make a tart 00:13:51.80\00:13:54.06 to work along with that veggie tart there 00:13:54.09\00:13:56.59 and I'm sure it will be good." 00:13:56.62\00:13:58.06 We are going to make a nice little dessert 00:13:58.09\00:14:01.13 I call it the magnificent mango with a pecan crust. 00:14:01.16\00:14:05.40 Why is this crucial? 00:14:05.43\00:14:06.69 Because a lot of times we're eating good healthy food 00:14:06.72\00:14:10.03 but then after we finish a good healthy meal 00:14:10.06\00:14:13.59 whether raw or cooked is like somebody went downtown 00:14:13.62\00:14:17.53 and picked up pastries and desserts 00:14:17.56\00:14:20.01 and good healthy eating went out the door. 00:14:20.04\00:14:23.23 You know what I mean, sometimes you go to church 00:14:23.26\00:14:25.14 maybe after church you have all these good healthy options 00:14:25.17\00:14:28.27 but when it comes to desserts it's like we don't lost it. 00:14:28.30\00:14:31.90 So now let us get a dessert that we can be proud of, 00:14:31.93\00:14:35.24 that we can say is healthy and tasty 00:14:35.27\00:14:37.55 and a little tarty as well 00:14:37.58\00:14:39.34 and I call it the magnificent mango with a pecan crust. 00:14:39.37\00:14:43.48 This will not only taste good 00:14:43.51\00:14:45.33 but it'll make you feel good as well. that notification. 00:20:26.70\00:20:30.19 She says, "Oh yeah," and so they try to, 00:20:30.22\00:20:32.41 they told her that, 00:20:32.44\00:20:33.49 "He may need to see a doctor, a special doctor." 00:20:33.52\00:20:36.37 My mother said, "He'll need to see no doctor." 00:20:36.40\00:20:38.51 When I got home 00:20:38.54\00:20:39.57 she says, "You're not listening in school young man?" 00:20:39.60\00:20:41.88 I said, "Sorry." 00:20:41.91\00:20:42.94 I got one of these, 00:20:42.97\00:20:44.68 you know what I'm talking about, it's not money. 00:20:44.71\00:20:46.21 I got one of
