Have you ever wondered 00:00:01.36\00:00:02.70 exactly how to prepare healthy food 00:00:02.73\00:00:04.07 that actually tastes good? 00:00:04.10\00:00:05.73 Well, stay tuned while Evita Tezeno, 00:00:05.77\00:00:07.60 and yours truly Nyse Collins show you just how to do it 00:00:07.64\00:00:10.71 and give you something better, 00:00:10.74\00:00:12.31 A Taste of Paradise. 00:00:12.34\00:00:13.78 Welcome to A Taste of Paradise. 00:00:30.26\00:00:32.19 My name is Evita Tezeno. 00:00:32.23\00:00:34.46 And you know I always say eat the rainbow, 00:00:34.50\00:00:38.10 eat the rainbow. 00:00:38.13\00:00:39.47 People say it, well, if you eat the different colors, 00:00:39.50\00:00:42.77 what about white food? 00:00:42.80\00:00:44.97 Well, there are a lot of different varieties 00:00:45.01\00:00:47.61 of vegetables that are white 00:00:47.64\00:00:49.58 like I did the jicama on one show, 00:00:49.61\00:00:53.52 and then we have white onions. 00:00:53.55\00:00:55.55 And today I'm using fennel. 00:00:55.58\00:00:57.92 Fennel is a delicious kind of liquorish taste vegetable 00:00:57.95\00:01:02.82 and it adds a great topping to any salads or any dishes. 00:01:02.86\00:01:08.23 So let me read the recipe. 00:01:08.26\00:01:09.63 I'm doing a carrot-fennel salad 00:01:12.63\00:01:15.30 with maple-lemon vinaigrette and a macadamia and cheese. 00:01:15.34\00:01:20.54 For the vinaigrette we need: 00:01:20.58\00:01:22.24 For the macadamia and cheese recipe I need: 00:01:38.03\00:01:41.53 For the salad we need: 00:02:00.45\00:02:02.25 So we're using this wonderful little tool, 00:02:19.27\00:02:21.87 it's called a Mandoline 00:02:21.90\00:02:23.47 and it gives you uniform slices. 00:02:23.51\00:02:27.28 So we're gonna slice the fennel. 00:02:27.31\00:02:33.62 Oh, it smells wonderful. 00:02:33.65\00:02:36.32 And we just use this and make sure 00:02:36.35\00:02:41.62 that you are very conscious of what you are doing. 00:02:41.66\00:02:44.26 You are not talking to anyone 00:02:44.29\00:02:46.26 and you wanna thinly slice it. 00:02:46.29\00:02:49.10 Until the end. 00:02:56.57\00:03:00.01 And you wanna reserve 00:03:00.04\00:03:01.38 these little, the green part of the fennel, 00:03:01.41\00:03:04.21 so you can use them as decoration. 00:03:04.25\00:03:08.28 So we have the fennel here. 00:03:08.32\00:03:10.92 I'm gonna put it in a bowl. 00:03:10.95\00:03:12.29 Now with the other fennel. 00:03:23.23\00:03:24.57 And we have some carrots that have been shredded. 00:03:28.90\00:03:32.51 I'm gonna toss that. 00:03:35.91\00:03:37.25 This is a real quick and easy recipe. 00:03:37.28\00:03:41.32 And it's a different taste than most people are used to 00:03:41.35\00:03:44.72 but it is a great accompaniment to any meal. 00:03:44.75\00:03:47.96 And then I'm gonna put some red onions in here. 00:03:52.23\00:03:55.36 And for the vinaigrette, 00:04:06.84\00:04:11.11 we just, oh, I need this again. 00:04:11.15\00:04:13.52 For the vinaigrette, 00:04:13.55\00:04:15.42 we're gonna mince 00:04:15.45\00:04:19.69 our garlic, clove, 00:04:19.72\00:04:23.73 and this recipe only requires one appliance, 00:04:23.76\00:04:30.17 is the food processor. 00:04:30.20\00:04:35.10 So you don't have a lot of different appliances 00:04:35.14\00:04:37.77 that you need, you just need a good knife. 00:04:37.81\00:04:40.91 So I'm gonna pour my olive oil, 00:04:45.95\00:04:49.65 my lemon and my maple syrup, 00:04:49.68\00:04:57.63 and my sea salt, 00:04:57.66\00:05:01.46 and then my garlic. 00:05:01.50\00:05:02.83 And I'm gonna let that hangout for a little bit 00:05:08.80\00:05:10.94 so the flavors will mingle. 00:05:10.97\00:05:13.74 Now, in my food processor, 00:05:24.85\00:05:27.02 I'm making the macadamia and cheese. 00:05:27.06\00:05:29.89 So I have some macadamian nuts 00:05:29.92\00:05:33.66 that have been soaked overnight, 00:05:33.70\00:05:38.77 and yeast flakes, 00:05:38.80\00:05:42.14 lemon juice, 00:05:42.17\00:05:46.47 and green onions, 00:05:46.51\00:05:53.85 and let's give it a whirl. 00:05:53.88\00:05:57.85 You don't wanna process it to, it's a mush 00:06:18.04\00:06:20.41 but you want to let it be a little bit grainy 00:06:20.44\00:06:23.45 so it represent like feta cheese. 00:06:23.48\00:06:26.18 So you wanna take this 00:06:32.15\00:06:34.72 and put... 00:06:34.76\00:06:38.19 your cheese on here, 00:06:42.56\00:06:49.20 spread it up 00:06:49.24\00:06:50.57 and make sure that you dehydrate this 00:06:50.61\00:06:54.71 for about maybe four hours. 00:06:54.74\00:06:56.24 And it comes out like so wonderful. 00:07:03.55\00:07:10.13 Look at it. 00:07:10.16\00:07:11.49 It just, it looks similar to parmesan. 00:07:11.53\00:07:16.16 So now we take a marinade 00:07:16.20\00:07:21.27 and pour it over the salad. 00:07:21.30\00:07:23.00 Make sure that it's mixed. 00:07:26.61\00:07:28.34 Remember those are fennel tops, 00:07:34.75\00:07:37.72 just take a little bit of them and sprinkle it into the salad 00:07:37.75\00:07:41.99 so we have a little color. 00:07:42.02\00:07:43.39 I'm gonna take our walnuts. 00:07:55.77\00:07:59.97 Kind of crunch them up a little bit 00:08:00.01\00:08:03.21 while you're sprinkling it. 00:08:03.24\00:08:04.71 And last but not least, 00:08:10.15\00:08:12.79 our macadamia and feta cheese. 00:08:12.82\00:08:15.69 Yummy. 00:08:19.16\00:08:20.50 Now this was really easy and quick. 00:08:24.67\00:08:28.30 Now you can dehydrate this for about four hours 00:08:28.34\00:08:32.94 for the macadamia and cheese 00:08:32.97\00:08:34.71 or you can just use this 00:08:34.74\00:08:36.08 straight out of the food processor 00:08:36.11\00:08:37.55 but I like it to firm up a little bit. 00:08:37.58\00:08:40.32 So this is what makes it look like the cheese consistency. 00:08:40.35\00:08:44.25 So it has been another great recipe 00:08:47.26\00:08:50.16 on the Taste of Paradise with Evita Tezeno 00:08:50.19\00:08:52.96 and, remember, to live life fresh. 00:08:52.99\00:08:56.46 Welcome back to A Taste of Paradise, 00:09:02.40\00:09:04.11 where you know we are always cooking up 00:09:04.14\00:09:05.47 something good on this side of town. 00:09:05.51\00:09:07.44 Today we are gonna have something special for you. 00:09:07.48\00:09:09.61 A lot of people are asking questions, 00:09:09.64\00:09:11.31 soy, what about it? 00:09:11.35\00:09:12.68 Is it good? Is it bad? 00:09:12.71\00:09:14.05 Or whatever and we've explained that 00:09:14.08\00:09:16.05 on several shows before, 00:09:16.08\00:09:17.79 but a lot of people don't know as well 00:09:17.82\00:09:19.72 how to actually make tofu. 00:09:19.75\00:09:22.49 How is tofu made? 00:09:22.52\00:09:23.86 Where does it come from? 00:09:23.89\00:09:25.23 We know it's soy, what do they do to the bean? 00:09:25.26\00:09:27.06 Do they pulverize it? 00:09:27.10\00:09:28.70 Do they mix it up? 00:09:28.73\00:09:30.07 Do they crush it? What do they do? 00:09:30.10\00:09:31.83 Well, today we're gonna show you 00:09:31.87\00:09:33.20 some simple, simple things on how to do it. 00:09:33.23\00:09:36.00 And what I've realized is 00:09:36.04\00:09:37.51 as you tell adults all the time this, this, 00:09:37.54\00:09:40.61 for some reason they forget. 00:09:40.64\00:09:42.28 So I said, let us focus on the young adults 00:09:42.31\00:09:45.15 because if we can educate them 00:09:45.18\00:09:46.92 on some of these principles and these things, 00:09:46.95\00:09:49.12 it will last them a lifetime, 00:09:49.15\00:09:50.59 so Nyse won't have to repeat it again and again and again. 00:09:50.62\00:09:53.89 So, I brought my own nephew here 00:09:53.92\00:09:55.89 to come and hangout with us 00:09:55.92\00:09:57.26 because this season we're gonna be doing stuff 00:09:57.29\00:09:59.19 with the kids as well and here he is. 00:09:59.23\00:10:02.40 Maquel, what's going on, brother? 00:10:02.43\00:10:04.30 How you doing, Nyse?
