Have you ever wondered 00:00:01.36\00:00:02.70 exactly how to prepare healthy food 00:00:02.73\00:00:04.27 that actually tastes good? 00:00:04.30\00:00:05.93 Well, stay tuned while Evita Tezeno 00:00:05.97\00:00:08.00 and yours truly Nyse Collins show you 00:00:08.04\00:00:09.80 just how to do it and give you something better, 00:00:09.84\00:00:12.67 A Taste of Paradise. 00:00:12.71\00:00:14.11 Welcome to A Taste of Paradise. 00:00:30.69\00:00:32.53 My name is Evita Tezeno. 00:00:32.56\00:00:35.03 And I am so excited, 00:00:35.06\00:00:36.83 I love showing people new things. 00:00:36.87\00:00:38.87 And I'm going to show you a new vegetable. 00:00:38.90\00:00:43.24 This is called a jicama. 00:00:43.27\00:00:45.27 Okay, I know you probably haven't heard of it, 00:00:45.31\00:00:47.54 it looks a little strange, doesn't it? 00:00:47.58\00:00:49.61 But this is a cross between an apple and a potato. 00:00:49.64\00:00:54.22 It's sweet, it's starchy and it has high water content, 00:00:54.25\00:00:58.02 it's crispy in your mouth and it's juicy. 00:00:58.05\00:01:01.52 So let's look at the recipe. 00:01:01.56\00:01:04.33 We are making stuffed tomatoes with dill sauce. 00:01:04.36\00:01:07.83 And the recipe is: 00:01:07.86\00:01:09.40 So what we're going to do first is, coarsely blend, 00:01:31.75\00:01:35.99 or coarsely process the pumpkin seeds. 00:01:36.02\00:01:38.66 And we all know that pumpkin seeds are high in zinc. 00:01:41.76\00:01:44.43 After you have coarsely chopped the pumpkin seeds, 00:01:56.21\00:02:01.72 just put them in a bowl, 00:02:01.75\00:02:08.66 put in the scallions. 00:02:08.69\00:02:12.16 And scallions are green onions if no one knows that term. 00:02:12.19\00:02:19.13 This is the jicama, and jicama is that wonderful new vegetable 00:02:19.17\00:02:25.21 that I told you guys about. 00:02:25.24\00:02:28.14 We have celery 00:02:28.18\00:02:33.21 and the salt. 00:02:33.25\00:02:36.45 And we're just going to mix that up really good. 00:02:36.48\00:02:39.62 And then we're going to make the dill sauce. 00:02:42.99\00:02:45.99 The recipe for that is: 00:02:46.03\00:02:47.73 And these are our cashews soaked overnight 00:03:09.98\00:03:14.69 into a high-powered blender. 00:03:14.72\00:03:18.56 This is our water, 00:03:18.59\00:03:22.86 lemon juice, 00:03:22.90\00:03:24.83 and I'm using fresh lemon juice, 00:03:24.87\00:03:27.14 not the bottled. 00:03:27.17\00:03:29.77 We have our dill, 00:03:29.80\00:03:32.74 maple syrup, 00:03:32.77\00:03:37.88 cayenne, 00:03:37.91\00:03:41.75 our salt, 00:03:41.78\00:03:45.42 turmeric. 00:03:45.45\00:03:46.79 Love turmeric, or turmeric, 00:03:46.82\00:03:50.16 or turmeric whatever. 00:03:50.19\00:03:53.19 People say it different ways 00:03:53.23\00:03:57.03 a turmeric that's a lot of people say 00:03:57.07\00:03:58.93 turmeric instead of turmeric. 00:03:58.97\00:04:00.57 And we're going to blend it. 00:04:00.60\00:04:01.94 So I'm going to check it to make sure that it's blended, 00:04:21.82\00:04:25.36 needs a little more blending. 00:04:25.39\00:04:26.90 And I'm going to pour it into this bowl 00:04:35.94\00:04:42.31 and then we're going to assemble it. 00:04:42.34\00:04:44.28 So what I want to do is, 00:04:53.92\00:04:55.59 I want to take a little bit of the dressing 00:04:55.62\00:04:58.29 and mix with the celery and jicama mixture, 00:04:58.33\00:05:05.27 just to be able to bind it a little bit. 00:05:05.30\00:05:08.07 I always say that 00:05:15.98\00:05:17.68 I wish you guys have smell-o-vision 00:05:17.71\00:05:20.72 because the aroma is amazing. 00:05:20.75\00:05:25.75 Here we go, get our bowl, 00:05:33.86\00:05:36.63 and you have to take the seeder out of the tomatoes, 00:05:36.67\00:05:40.90 so you just take the spoon 00:05:40.94\00:05:44.97 and you just gently take the inside out the seeds. 00:05:45.01\00:05:49.81 Take a little of the jicama celery mixture, 00:05:53.78\00:06:00.76 stuff the tomato 00:06:00.79\00:06:06.70 and then repeat. 00:06:06.73\00:06:09.80 This is a good, a duff, 00:06:09.83\00:06:13.70 this is also a good lunch. 00:06:13.74\00:06:18.17 It's light and it's fresh. 00:06:18.21\00:06:20.41 And then what I like to do is, 00:06:24.75\00:06:27.92 I like to take a little of the sauce 00:06:27.95\00:06:30.89 and just kind of drills a little on top. 00:06:30.92\00:06:33.89 Look at this dish, it's festive and colorful, 00:06:42.96\00:06:46.00 and I know you're going to like it, 00:06:46.03\00:06:48.10 it is delicious. 00:06:48.14\00:06:50.07 This has been Evita Tezeno, with a Taste of Paradise. 00:06:50.11\00:06:54.04 And remember to live life fresh. 00:06:54.08\00:06:57.65 Dulce... 00:07:15.23\00:07:19.07 That's why I'm not adding a whole lot of salt 00:07:19.10\00:07:21.14 because the seaweed is already salty. 00:07:21.17\00:07:24.57 We have the oregano, basil, 00:07:24.61\00:07:27.24 dill... 00:07:30.58\00:07:31.91 and the half of the avocado. 00:07:34.92\00:07:37.42 And we want to mix this up. 00:07:41.52\00:07:43.29 Then we add, 00:07:58.67\00:08:00.44 last but not least our chopped tomatoes. 00:08:00.48\00:08:06.21 Again the colors are wonderful. 00:08:06.25\00:08:11.15 The aroma makes me want to dig into it right now. 00:08:11.19\00:08:15.89 We're going to put it in a smaller bowl. 00:08:20.50\00:08:22.63 So there you have it. 00:08:36.51\00:08:39.18 This is a fabulous way to get greens in your diet 00:08:39.21\00:08:42.25 and look at the colors, it is so festive. 00:08:42.28\00:08:47.26 This is Evita Tezeno, 00:08:47.29\00:08:49.52 and remember to live life fresh. 00:08:49.56\00:08:53.16 Sauce it up, sauce it up. 00:08:59.37\00:09:00.84 Everybody want some sauce when they get into eating. 00:09:00.87\00:09:03.94 You know, food is not food 00:09:03.97\00:09:05.77 unless you have some sauce on top, 00:09:05.81\00:09:07.84 whether it'd be gravy, whether I'd be ketchup, 00:09:07.88\00:09:10.11 whether it just be sauce, everybody wants some sauce. 00:09:10.15\00:09:13.25 And this is, you know, it's not a bad thing, 00:09:13.28\00:09:15.42 it's just that sometimes you know, a lot of the sauce, 00:09:15.45\00:09:17.35 the base of the sauce sometimes it's like just oil, or fat, 00:09:17.39\00:09:21.06 or butter, and all of these things. 00:09:21.09\00:09:22.72 And so what we want to do is 00:09:22.76\00:09:24.23 we're going to give you some sauces. 00:09:24.26\00:09:25.59 You know, sometimes people like 00:09:25.63\00:09:26.96 even something as simple as ketchup, 00:09:27.00\00:09:28.33 or spaghetti sauce or something. 00:09:28.36\00:09:29.86 We're going to share with you some, 00:09:29.90\00:09:31.37 some simple ways that you can do it 00:09:31.40\00:09:32.87 but make it tasty as well 00:09:32.90\00:09:34.57 because you need a little sauce. 00:09:34.60\00:09:36.10 I remember a long time ago when I used to be young 00:09:36.14\00:09:38.84 and I went down to the islands to visit some of the family, 00:09:38.87\00:09:42.38 we will have a little piece of meat 00:09:42.41\00:09:44.65 but a lot of gravy, 00:09:44.68\00:09:46.01 you know, what I'm talking about 00:09:46.05\00:09:47.38 because they said the gravy run long or sauce, 00:09:47.42\00:09:50.15 you know, so we all love the sauce, 00:09:50.19\00:09:51.89 but let's put some good healthy twist on it and sauce it up. 00:09:51.92\00:09:55.59 So who else would I invite to help me sauce it up 00:09:55.62\00:09:59.33 other than Chef GW Chew. 00:09:59.36\00:10:02.03 He's always going to give you something better to... 00:10:02.06\00:10:04.63 Chew on.
