It is definitely a blessing. 00:02:56.81\00:03:00.48 And, so I'm going to show you how to cut up a cauliflower 00:03:00.51\00:03:04.15 and it's simply easy, 00:03:04.18\00:03:06.65 you just start removing the leaves 00:03:06.68\00:03:12.29 from the base of the cauliflower. 00:03:12.32\00:03:18.83 And one thing in having a raw kitchen 00:03:18.86\00:03:24.37 or eating more raw foods 00:03:24.40\00:03:26.37 you need to have good utensils. 00:03:26.40\00:03:29.70 A sharp knife, 00:03:29.74\00:03:31.91 a really good chopping board, 00:03:31.94\00:03:38.38 a good blender would be really good, 00:03:38.41\00:03:41.88 and I suggest you should have a Vitamix, 00:03:41.92\00:03:45.75 that's a real good blender, 00:03:45.79\00:03:48.72 it has a lot of power. 00:03:48.76\00:03:50.43 And today we're using a dehydrator. 00:03:53.76\00:03:58.60 The dehydrator that I'm using is Excalibur dehydrator, 00:03:58.63\00:04:02.60 and that's the one I really, really like. 00:04:02.64\00:04:05.51 I like it because it's a workhorse. 00:04:05.54\00:04:09.14 So what I'm going to do with a cauliflower 00:04:09.18\00:04:11.48 is I am going to just cut them up 00:04:11.51\00:04:15.15 in large pieces. 00:04:15.18\00:04:18.55 Now, it depends on 00:04:18.59\00:04:21.22 if you're going to either dehydrate these 00:04:21.26\00:04:27.36 or you going to keep them fresh. 00:04:27.40\00:04:30.37 Now, if you're going to keep them fresh 00:04:30.40\00:04:32.40 and eat the cauliflower popcorn just like this 00:04:32.43\00:04:35.67 without dehydrating, 00:04:35.70\00:04:37.14 I say you can cut them 00:04:37.17\00:04:38.51 in smaller bite size pieces like this, 00:04:38.54\00:04:41.38 but if you're going to dehydrate them, 00:04:41.41\00:04:43.35 it shrinks almost half the size 00:04:43.38\00:04:46.21 so keep them about this size. 00:04:46.25\00:04:49.82 So what we're doing 00:04:49.85\00:04:51.19 is cutting up the cauliflower like so. 00:04:51.22\00:04:56.83 And cauliflower is loaded 00:04:56.86\00:05:01.16 with so many different nutrients 00:05:01.20\00:05:03.63 and I call it the... 00:05:03.67\00:05:10.91 one of the best secrets that we can eat. 00:05:10.94\00:05:13.98 It is said to have some good 00:05:14.01\00:05:18.91 cancer fighting elements in it as well, 00:05:18.95\00:05:22.48 so, you know, when I talk about eating the rainbow, 00:05:22.52\00:05:26.59 this is how you can get the white color in your diet 00:05:26.62\00:05:30.43 because, you know, we have red, we have purple, we have green, 00:05:30.46\00:05:35.23 and this we don't have a lot of white food 00:05:35.26\00:05:38.17 in the vegetable kingdom 00:05:38.20\00:05:39.87 and this is one way we can get a white vegetable 00:05:39.90\00:05:43.10 which is loaded and is good on digestion, 00:05:43.14\00:05:46.47 it's just an amazing vegetable 00:05:46.51\00:05:48.71 that we need to implement in our diet. 00:05:48.74\00:05:51.38 So in a bowl 00:05:51.41\00:05:56.58 what we're going to do 00:05:56.62\00:05:57.95 is we're going to place the wet ingredients first. 00:05:57.99\00:06:02.12 So I have some water... 00:06:02.16\00:06:05.59 and I have some olive oil 00:06:08.90\00:06:10.93 and usually what I do is I use, 00:06:10.97\00:06:14.04 I like to use cold press olive oil 00:06:14.07\00:06:17.14 because it's pressed, 00:06:17.17\00:06:19.24 it's not chemically extracted, 00:06:19.27\00:06:21.18 so that's a little better 00:06:21.21\00:06:23.21 because co-press is just pressed, 00:06:23.24\00:06:26.45 they press the olives and get the olive oil out. 00:06:26.48\00:06:31.02 And I'm using tahini. 00:06:31.05\00:06:32.82 Tahini is sesame seed butter. 00:06:32.85\00:06:35.99 So it's sesame seeds ground into a paste 00:06:36.02\00:06:39.89 and it's not like peanut butter it's not, you know, 00:06:39.93\00:06:43.87 you don't want to spread it on toast 00:06:43.90\00:06:45.23 and some people do like it, 00:06:45.27\00:06:46.60 it has a kind of grassy taste, 00:06:46.63\00:06:49.00 but it has, is loaded with B vitamins 00:06:49.04\00:06:52.01 and very good for you. 00:06:52.04\00:06:54.74 And when I'm making food, 00:06:54.78\00:06:56.64 I kind of look at all the ingredients and say, 00:06:56.68\00:06:59.55 "So what does this have in it that's good for my body? 00:06:59.58\00:07:03.05 And what does this have? 00:07:03.08\00:07:04.95 And what can this do for this and what can this do for that." 00:07:04.99\00:07:10.49 So that's how I analyze it 00:07:10.53\00:07:12.56 and, you know, we've heard the saying that it says, 00:07:12.59\00:07:15.56 "Let thy food be thy medicine 00:07:15.60\00:07:17.30 and let thy medicine be thy food." 00:07:17.33\00:07:19.93 The Lord has given us 00:07:19.97\00:07:21.30 so many great properties in vegetable, 00:07:21.34\00:07:24.47 fruit and vegetable kingdom 00:07:24.51\00:07:26.51 that we have a bounty of wonderful deliciousness 00:07:26.54\00:07:31.05 that we can pick from. 00:07:31.08\00:07:33.72 So this is the wet ingredients 00:07:33.75\00:07:35.68 and what I'm going to do is take a whisk 00:07:35.72\00:07:37.62 and just whisk it all up, 00:07:37.65\00:07:41.96 so it's all mixed together. 00:07:41.99\00:07:45.69 Put the maple syrup in. 00:07:49.10\00:07:54.04 Now, for the dry ingredients. 00:07:54.07\00:07:56.20 We have yeast flakes, 00:07:56.24\00:07:58.64 which give it that kind of cheesy flavor, 00:07:58.67\00:08:02.51 onion powder, and I'm using onion powder this time 00:08:02.54\00:08:04.91 because if we would blend it up and use fresh onion, 00:08:04.95\00:08:10.22 it's kind of overpowering. 00:08:10.25\00:08:12.22 So we want to just a hint taste of the onion 00:08:12.25\00:08:15.52 so we're using the onion powder this time. 00:08:15.56\00:08:19.09 And I'm using garlic powder as well. 00:08:19.13\00:08:24.33 A little cayenne 00:08:24.37\00:08:25.70 and you don't have to use cayenne, 00:08:25.73\00:08:27.54 you can, it's optional, 00:08:27.57\00:08:30.54 but because I am from Louisiana, 00:08:30.57\00:08:35.04 I love the little kick of spice, 00:08:35.08\00:08:37.28 so I am including that in this recipe. 00:08:37.31\00:08:41.65 And this is the Himalayan salt 00:08:41.68\00:08:44.19 which is loaded with minerals 00:08:44.22\00:08:45.59 because the regular table salt that we have 00:08:45.62\00:08:49.22 which is the white salt is bleached 00:08:49.26\00:08:52.73 and they take a lot of the minerals in it 00:08:52.76\00:08:55.06 and each part, all of the part of our foods 00:08:55.10\00:08:57.90 should have different properties in it 00:08:57.93\00:09:00.54 and, and have nutrients in it, 00:09:00.57\00:09:03.81 it shouldn't be stripped, 00:09:03.84\00:09:05.37 so that's why I use the mineral salt 00:09:05.41\00:09:08.08 because it's loaded with minerals as well. 00:09:08.11\00:09:11.35 And it's just not a seasoning, 00:09:11.38\00:09:13.55 but it also has healing properties in it. 00:09:13.58\00:09:16.69 And the last but not least, I'm using turmeric. 00:09:16.72\00:09:20.32 Okay, I did forget one ingredient, cumin, 00:09:20.36\00:09:24.23 which is another spice that I really, really like. 00:09:24.26\00:09:28.23 So here we have the paste. 00:09:28.26\00:09:30.80 And we're going to add the cauliflower. 00:09:30.83\00:09:34.64 Now don't be afraid to get your hands messy. 00:09:34.67\00:09:38.11 It is okay, and my hands are clean, 00:09:38.14\00:09:41.14 I washed them, 00:09:41.18\00:09:42.51 so we're going to take this 00:09:42.54\00:09:44.48 and we're going to just coat it all up 00:09:44.51\00:09:49.35 and look at that, 00:09:49.38\00:09:51.35 it is wonderful. 00:09:51.39\00:09:54.22 I'm smelling it and, oh, my goodness, 00:09:54.26\00:09:56.73 I just cannot wait. 00:09:56.76\00:09:59.19 Now, we can eat this like this 00:09:59.23\00:10:04.53 or we can dehydrate it. 00:10:04.57\00:10:09.47 Now let me clean my hands here. 00:10:09.50\00:10:15.51 So if you don't, if you want to dehydrate it, 00:10:15.54\00:10:18.78 you put it in the trusty Excalibur 00:10:18.81\00:10:23.15 for overnight 00:10:23.18\00:10:26.32 and 12 hours to be exact 00:10:26.35\00:10:29.36 and, you know, you just take it 00:10:29.39\00:10:31.33 and put it on one of the sheets. 00:10:31.36\00:10:36.26 And lay it out and dehydrate it. 00:10:36.30\00:10:40.94 Or you can just serve it like this. 00:10:40.97\00:10:43.57 Look at this cauliflower, 00:10:47.88\00:10:51.05 so this is the dish that we served, 00:10:51.08\00:10:54.85 we're serving fresh 00:10:54.88\00:10:56.69 and this is the one that we dehydrated. 00:10:56.72\00:10:59.25 And if you notice that, 00:10:59.29\00:11:00.72 it has shrink into little small pieces like this, 00:11:00.76\00:11:04.83 but this is good for travel 00:11:04.86\00:11:06.83 and good for taking on the road with you, 00:11:06.86\00:11:10.07 if you want to have a snack food. 00:11:10.10\00:11:12.23 And this is good to eat at a fellowship dinner 00:11:12.27\00:11:16.81 or have some friends over. 00:11:16.84\00:11:18.84 So this has been a great recipe again 00:11:18.87\00:11:23.04 with Evita And this is like a key item that everybody uses in general, 00:11:46.90\00:11:51.81 every home when it's time for bed, 00:11:51.84\00:11:54.38 when it's time to wake up, we all need some hot chocolate. 00:11:54.41\00:11:57.65 And I've been getting calls 00:11:57.68\00:11:59.91 and people ask me what do you do about this, 00:11:59.95\00:12:01.98 is there any substitutes or whatever like that. 00:12:02.02\00:12:04.52 Well, I said, "Well, maybe you can answer that question. 00:12:04.55\00:12:06.79 Why would you want to substitute something?" 00:12:06.82\00:12:08.72 They said, "Well, we know 00:12:08.76\00:12:10.09 we heard some good things about it. 00:12:10.13\00:12:11.69 We heard some bad things about it. 00:12:11.73\00:12:13.50 And so I just said, 00:12:13.53\00:12:14.86 "Let us not live by the he says, she says, 00:12:14.90\00:12:16.60 because there's a lot of things that people say, 00:12:16.63\00:12:18.30 one person says this, one person says that. 00:12:18.33\00:12:20.44 New study shows 00:12:20.47\00:12:21.80 that dark chocolate is good for this, 00:12:21.84\00:12:23.47 and then another study comes 00:12:23.51\00:12:24.84 and says something totally different. 00:12:24.87\00:12:26.57 So I'm like you know what? 00:12:26.61\00:12:28.01 If there is so much questionable information, 00:12:28.04\00:12:30.35 just give me something 00:12:30.38\00:12:31.71 that is simple and easy 00:12:31.75\00:12:33.65 and tastes just as good without the drawbacks, 00:12:33.68\00:12:36.48 and what are we talking about? 00:12:36.52\00:12:37.85 We are talking about carob, 00:12:37.89\00:12:39.52 one of the nicest, tastiest items out there, 00:12:39.55\00:12:43.09 and many people use it as a substitute 00:12:43.12\00:12:45.03 for, for chocolate in general. 00:12:45.06\00:12:46.80 Now why would somebody want 00:12:46.83\00:12:48.16 to substitute chocolate to begin with? 00:12:48.20\00:12:49.53 Well, let's look at the pros and cons. 00:12:49.56\00:12:51.20 Is there some pros about chocolate? 00:12:51.23\00:12:53.27 Of course there is, the whole world knows the pros, 00:12:53.30\00:12:55.90 it tastes good whether you like it or not. 00:12:55.94\00:12:58.87 I mean everybody, I always ask this question, 00:12:58.91\00:13:00.74 "Are you addicted 00:13:00.78\00:13:02.11 and what are we talking about chocolate? 00:13:02.14\00:13:03.48 Because a lot of times if you ever noticed, 00:13:03.51\00:13:05.55 you can tell people hold off on meat, 00:13:05.58\00:13:07.52 hold off on this, hold off on that, 00:13:07.55\00:13:09.35 but when you say hold off on chocolate, 00:13:09.38\00:13:11.39 people are literally ready to fight you. 00:13:11.42\00:13:13.72 So, why? 00:13:13.76\00:13:15.09 Well, let's look at the good things. 00:13:15.12\00:13:16.86 Number one, yes, it tastes good. 00:13:16.89\00:13:18.23 Why does it taste good? 00:13:18.26\00:13:19.69 Well, when you look at cocoa or cacao, 00:13:19.73\00:13:22.00 as you know people have million different names 00:13:22.03\00:13:24.00 in its original form. 00:13:24.03\00:13:25.37 It doesn't actually taste as good, it's very bitter. 00:13:25.40\00:13:27.74 I was just actually at St. Lucia 00:13:27.77\00:13:29.24 where they grow them quite a bit, 00:13:29.27\00:13:32.04 but what they do to it when they process it, 00:13:32.07\00:13:33.98 they add a lot of what? 00:13:34.01\00:13:35.34 Fat or sugar or different ingredients 00:13:35.38\00:13:38.01 to bring out the flavor in it, and everybody knows 00:13:38.05\00:13:40.52 chocolate in its original form is very bitter 00:13:40.55\00:13:43.52 What else are some pros for the chocolate? 00:13:43.55\00:13:45.75 Well of course, it makes you feel good. 00:13:45.79\00:13:48.46 Hello, yeah, I know what I'm talking about. 00:13:48.49\00:13:50.46 You eve noticed when somebody breaks up 00:13:50.49\00:13:52.33 and there's a little issue in the relationship, 00:13:52.36\00:13:54.66 what do the ladies or maybe even guys do? 00:13:54.70\00:13:57.20 They run to the supermarket 00:13:57.23\00:13:58.77 and they get themselves some what? 00:13:58.80\00:14:00.90 Ice cream, not any ice cream 00:14:00.94\00:14:02.30 but chocolate ice cream and it just helps them. 00:14:02.34\00:14:05.37 And so one person said, 00:14:05.41\00:14:06.74 "Well, it is a good thing about chocolate 00:14:06.78\00:14:08.74 because it helps keep you from depression, 00:14:08.78\00:14:10.35 well, temporary depression. 00:14:10.38\00:14:11.71 You're still going to be upset that he or she left you. 00:14:11.75\00:14:14.12 So it gives you a sense of wellbeing. 00:14:14.15\00:14:16.42 It tastes good, also it gives you energy, 00:14:16.45\00:14:19.65 so hey, that's a good thing, 00:14:19.69\00:14:21.32 but now let's take a quick look, 00:14:21.36\00:14:22.96 let's back up a little bit of why it does that? 00:14:22.99\00:14:25.29 Well, it gives you so much energy 00:14:25.33\00:14:26.70 because it has so much calories and it gives you that boost, 00:14:26.73\00:14:29.26 also it's loaded with the sugar, 00:14:29.30\00:14:30.63 but one of the key
