Massage and all these things. 00:08:49.42\00:08:51.36 So when I was sick, 00:08:51.39\00:08:52.83 she would do these types of things for me 00:08:52.86\00:08:54.60 like fomentations and... 00:08:54.63\00:08:57.07 Okay. 00:08:57.10\00:08:58.43 Charcoal, all that kind of stuff. 00:08:58.47\00:08:59.90 So I kind of grew up with that, 00:08:59.93\00:09:01.67 and I had learned about from other speakers 00:09:01.70\00:09:06.68 about how powerful these natural remedies were. 00:09:06.71\00:09:10.05 And so I already had 00:09:10.08\00:09:11.41 that kind of concept in my mind. 00:09:11.45\00:09:13.82 Nice. How about you, Mercy? 00:09:13.85\00:09:15.18 Yeah, myself also. 00:09:15.22\00:09:16.69 You know, my mom, I grew up 00:09:16.72\00:09:18.25 also same way doing these simple natural remedies. 00:09:18.29\00:09:21.59 I remember my mom doing clay poultices for all of us, 00:09:21.62\00:09:25.46 five of us 00:09:25.49\00:09:26.83 and also doing these green juices 00:09:26.90\00:09:28.53 early in the morning and hydrotherapy 00:09:28.56\00:09:30.77 like wrap us with that call sheet. 00:09:30.80\00:09:33.27 Yes. Yes. 00:09:33.34\00:09:35.47 Now so like when you say a poultice, right? 00:09:35.50\00:09:38.67 You say a charcoal poultice. 00:09:38.71\00:09:40.28 Does that draw out toxins? What's the purpose of that? 00:09:40.31\00:09:43.98 I think there are various reasons 00:09:44.05\00:09:45.85 why you would do a charcoal poultice. 00:09:45.88\00:09:48.95 That would be one thing 00:09:48.98\00:09:50.32 like if you go to CharcoalRemedies.com 00:09:50.39\00:09:52.19 that's a book 00:09:52.22\00:09:53.56 that is all about charcoal and its remedies, 00:09:53.59\00:09:55.82 and the author writes 00:09:55.86\00:09:57.23 about how he went to this jungle area, 00:09:57.26\00:10:00.00 where there was no medical access 00:10:00.03\00:10:02.00 as we would think of medical access, 00:10:02.03\00:10:04.53 and he was working at a clinic 00:10:04.57\00:10:06.30 where a child came in unconscious, 00:10:06.33\00:10:08.87 and they assessed that 00:10:08.90\00:10:10.24 that child had probably had food poisoning of some sort. 00:10:10.31\00:10:14.64 And of course, since they were unconscious, 00:10:14.68\00:10:17.15 they couldn't do anything intravenous 00:10:17.18\00:10:19.81 or anything like that. 00:10:19.85\00:10:21.18 They just wrapped the child in a huge, 00:10:21.22\00:10:22.78 very thick poultice of charcoal. 00:10:22.82\00:10:25.22 And within an hour, the child revived, 00:10:25.25\00:10:28.46 you know, and so that it does absorb toxins 00:10:28.49\00:10:34.03 and so that's why we use it in the ER 00:10:34.10\00:10:35.93 and that kind of thing for drug overdoses 00:10:35.96\00:10:38.17 and that type of thing. 00:10:38.20\00:10:40.04 But what people don't know 00:10:40.07\00:10:41.40 is that charcoal is very anti-inflammatory. 00:10:41.44\00:10:44.31 Okay. 00:10:44.34\00:10:45.67 So if you have pain 00:10:45.71\00:10:47.38 and, you know, of any kind of sore, 00:10:47.41\00:10:50.38 it's worthwhile trying to use it, 00:10:50.45\00:10:52.31 you know, for like, disc herniation 00:10:52.35\00:10:54.85 and things that you would never think about pulled muscles, 00:10:54.88\00:10:57.72 you know? 00:10:57.75\00:10:59.09 Yes. 00:10:59.12\00:11:00.46 It's worthwhile trying to try a charcoal. 00:11:00.49\00:11:02.09 Yes. 00:11:02.12\00:11:03.46 Now I should have done this 00:11:03.53\00:11:04.96 at the beginning of the program, 00:11:04.99\00:11:06.33 but I definitely want to tell our viewers and listeners 00:11:06.36\00:11:09.46 to make sure that you consult 00:11:09.50\00:11:11.33 with your local or your primary physician 00:11:11.37\00:11:14.14 before implementing any of the practices 00:11:14.17\00:11:16.24 that are discussed in this program 00:11:16.27\00:11:18.31 because they know your specific case. 00:11:18.34\00:11:21.11 And so we're going to be talking about some things 00:11:21.14\00:11:23.11 that are healthy and nutritious and have helped people, 00:11:23.14\00:11:28.15 but we want to make sure that you consult 00:11:28.18\00:11:30.09 with your primary physician. 00:11:30.12\00:11:31.59 That's very important. So don't miss that point. 00:11:31.62\00:11:33.86 Yeah, this is all health educational, 00:11:33.89\00:11:35.69 not medical advice. 00:11:35.72\00:11:37.06 Yes. Yes, absolutely. 00:11:37.13\00:11:38.63 So the charcoal poultices that's an incredible story 00:11:38.66\00:11:43.47 about how it just absorbed all that and revived that baby. 00:11:43.50\00:11:48.14 That's amazing. Absolutely. 00:11:48.17\00:11:50.24 How did you decide to start the Lifestyle Center? 00:11:50.31\00:11:55.68 Well, in 2003, after 2003 I was pretty healthy. 00:11:55.71\00:12:00.15 And I used to be very athletic and running every day 4 miles, 00:12:00.22\00:12:03.69 but at that time, I started getting weak 00:12:03.72\00:12:06.52 and my endurance is start to decreasing, 00:12:06.55\00:12:08.76 and I became shortness of breath, 00:12:08.79\00:12:11.03 and my brain was foggy. 00:12:11.06\00:12:15.53 So something was happening, 00:12:15.56\00:12:17.47 even though I was having a good lifestyle, 00:12:17.50\00:12:19.70 health lifestyle. 00:12:19.73\00:12:23.71 In 2005, I ended up in the hospital 00:12:23.74\00:12:27.01 because my hemoglobin was 7.3. 00:12:27.08\00:12:30.08 And then they had to do blood transfusion. 00:12:30.15\00:12:32.21 And people might not be aware that a hemoglobin of 7.3 00:12:32.25\00:12:35.62 that's very low 00:12:35.65\00:12:36.99 'cause it should be more like 13, 14. 00:12:37.02\00:12:39.39 Wow. Yeah. 00:12:39.42\00:12:40.79 So it was affecting me greatly. 00:12:40.86\00:12:43.56 But, you know, the problem was that nobody knew 00:12:43.63\00:12:46.03 why I was having that problem. 00:12:46.06\00:12:47.86 So I went to hematologist, oncologist 00:12:47.90\00:12:50.17 thinking maybe I have cancer because that kept decreasing. 00:12:50.20\00:12:53.74 So by the year 2006, I still having the problem. 00:12:53.77\00:12:58.54 So I was having also iron infusion 00:12:58.57\00:13:01.91 'cause I ended up with, you know, blood transfusion. 00:13:01.94\00:13:05.78 And so then I found out that, 00:13:05.81\00:13:10.39 you know, I had some food sensitivities 00:13:10.42\00:13:12.35 because I went to the GI lab, a specialized lab. 00:13:12.39\00:13:15.49 And so I had to make some changes 00:13:15.52\00:13:18.36 and, you know, I was studying and researching 00:13:18.39\00:13:20.80 to see what can I do, 00:13:20.83\00:13:22.16 so applying different principles. 00:13:22.20\00:13:25.27 So by 2007, around that time, I was totally recovered. 00:13:25.30\00:13:30.24 So I decided that I need to help people. 00:13:30.31\00:13:34.48 But also, about the same time 00:13:34.51\00:13:37.85 I was reading about Ministry of Healing 00:13:37.88\00:13:40.02 a medical missionary work 00:13:40.05\00:13:42.58 from Ellen G. White 00:13:42.62\00:13:44.39 in that it was saying that, 00:13:44.42\00:13:46.19 you know, we supposed to help people, 00:13:46.22\00:13:47.89 you know, like Jesus did the way. 00:13:47.92\00:13:49.26 He came to this earth. 00:13:49.29\00:13:50.63 He did more healing than preaching. 00:13:50.66\00:13:52.73 So talking about lifestyle centers, 00:13:52.76\00:13:55.90 things like that, 00:13:55.93\00:13:57.27 so I was impressed that I needed to do this work 00:13:57.30\00:13:59.63 especially for the type of population 00:13:59.67\00:14:01.60 that have problems with autoimmune disorders, 00:14:01.64\00:14:04.01 food sensitivities. 00:14:04.04\00:14:05.37 At that time, it wasn't, 00:14:05.41\00:14:06.74 you know, people start having that problem, 00:14:06.78\00:14:08.58 but it wasn't, you know, much help. 00:14:08.61\00:14:11.58 So you wanted to tell me 00:14:11.61\00:14:12.95 that food sensitivity is a real thing. 00:14:12.98\00:14:15.42 The food sensitivity is a real thing. 00:14:15.45\00:14:17.12 It's a very real thing. 00:14:17.19\00:14:18.62 And I think, 00:14:18.65\00:14:19.99 you know, people may not be aware 00:14:20.06\00:14:21.76 that Mercy was trained as a medical doctor in Mexico. 00:14:21.79\00:14:27.23 And then she worked as a nurse here in the States 00:14:27.30\00:14:28.96 when she moved to the States. 00:14:29.00\00:14:30.37 And so when she was going through her problems 00:14:30.40\00:14:33.10 working as a nurse, 00:14:33.13\00:14:34.70 she went from doctor to doctor trying to figure out 00:14:34.74\00:14:37.77 what was causing this anemia. 00:14:37.81\00:14:40.28 Yes. And could not find any answers. 00:14:40.31\00:14:43.04 And so I think that's a real important point, 00:14:43.08\00:14:45.85 that there are a lot of people who have these symptoms 00:14:45.88\00:14:49.82 that doctors nowadays they're scratching their heads. 00:14:49.85\00:14:53.69 Yes. 00:14:53.76\00:14:55.09 You know, there are a lot of us that are having these issues. 00:14:55.12\00:14:57.43 And so to find out 00:14:57.46\00:15:00.30 that simply by changing the diet, 00:15:00.33\00:15:02.70 and this is somebody who's eating healthy, 00:15:02.73\00:15:07.24 plant-based, non-processed, 00:15:07.27\00:15:09.37 you know, getting healthier and healthier 00:15:09.40\00:15:11.24 and still getting sick. 00:15:11.27\00:15:12.61 Yes. 00:15:12.64\00:15:13.98 You know, it's not someone who's like on junk food. 00:15:14.01\00:15:16.31 And so when the reason I think 00:15:16.34\00:15:19.35 that Mercy wanted to do this 00:15:19.38\00:15:20.98 was because she was an autoimmune IV infusion nurse 00:15:21.02\00:15:24.92 dealing with a lot of autoimmune people, 00:15:24.95\00:15:27.09 and then she's coming down with her own problems 00:15:27.16\00:15:30.33 and finding out 00:15:30.36\00:15:31.69 that she's having difficulty finding answers. 00:15:31.73\00:15:35.06 And then she's realizing 00:15:35.10\00:15:37.37 there's something that's very simple 00:15:37.40\00:15:39.13 that can fix this. 00:15:39.17\00:15:40.64 Yes. Yes. 00:15:40.67\00:15:42.00 You should tell them the story about the ulcerative colitis. 00:15:42.04\00:15:44.37 Okay, so there was this lady while, 00:15:44.41\00:15:47.18 you know, I was already well, 00:15:47.21\00:15:49.04 we still see patients with autoimmunity 00:15:49.08\00:15:51.18 make commercial job, 00:15:51.21\00:15:52.55 and I saw a lady that was in a walker 00:15:52.58\00:15:55.25 and she was young. 00:15:55.28\00:15:56.62 She was a nurse. So I was like, "What is this? 00:15:56.69\00:15:58.35 A young lady in a walker." 00:15:58.39\00:15:59.92 So I was asking her 00:15:59.95\00:16:01.29 all the physical things like that. 00:16:01.32\00:16:02.89 And she told me that she was bleeding, 00:16:02.92\00:16:06.23 rectally, continuously, 00:16:06.26\00:16:07.60 so she was getting blood transfusions 00:16:07.63\00:16:09.66 very often and going to... 00:16:09.70\00:16:11.03 And she's in her 30s. 00:16:11.07\00:16:12.40 Wow. In her 30s? 00:16:12.43\00:16:13.97 In her 30s. Late 30s. 00:16:14.04\00:16:16.71 And she was sick for 17 years. 00:16:16.74\00:16:18.94 And so I was saying, "Wow, 00:16:18.97\00:16:22.48 why don't you check yourself for food sensitivities." 00:16:22.51\00:16:25.68 I gave her the GI lab, 00:16:25.71\00:16:27.42 go plant-base, and go clean foods. 00:16:27.45\00:16:30.49 Just avoid all these foods that have been, 00:16:30.52\00:16:33.66 you know, linked to glyphosate things like that. 00:16:33.69\00:16:35.89 And so she did, but, you know, 00:16:35.92\00:16:39.39 I saw her six weeks later. 00:16:39.43\00:16:42.16 After six weeks, she was a strong, 00:16:42.20\00:16:44.33 no walker, she was pink. 00:16:44.37\00:16:46.67 And I say, "What's happening?" 00:16:46.74\00:16:48.17 Because most of people I tell them about it, 00:16:48.20\00:16:51.24 but they don't follow. 00:16:51.27\00:16:52.61 Yes, they don't implement the steps. 00:16:52.64\00:16:54.28 That's the hard part. 00:16:54.31\00:16:55.64 Yeah, but she did 100%, and she was incredible. 00:16:55.68\00:17:00.55 In six weeks, it was just like a new person. 00:17:00.62\00:17:03.49 So that was so impressive to me. 00:17:03.52\00:17:06.35 And I said, "Wow, I really need to help people." 00:17:06.39\00:17:09.16 Yes. Yes. 00:17:09.19\00:17:10.53 Hence the Lifestyle Center. Yeah. 00:17:10.56\00:17:12.26 Well, it's interesting 00:17:12.29\00:17:13.70 'cause she was in Texas at the time. 00:17:13.73\00:17:16.77 And, you know, tell them the story 00:17:16.80\00:17:20.74 of how you found the place. 00:17:20.77\00:17:22.84 So I was looking... 00:17:22.87\00:17:24.21 Because I was hurry in the medical missionary 00:17:24.24\00:17:27.41 from Ellen G. White, 00:17:27.48\00:17:28.81 I had to do a Lifestyle Center. 00:17:28.84\00:17:30.18 So I was looking for two years and nothing was, 00:17:30.25\00:17:33.75 you know, looking good, but then a lady called me. 00:17:33.82\00:17:37.19 I was praying, I was saying, 00:17:37.22\00:17:38.55 God, just show me where I need to go. 00:17:38.59\00:17:40.26 So a friend of mine said, 00:17:40.29\00:17:41.62 "Mercy, I find you the place." And what is that? 00:17:41.66\00:17:44.76 California. 00:17:44.79\00:17:46.13 And I said, "Oh, no, 00:17:46.16\00:17:47.50 I don't want to come to California." 00:17:47.53\00:17:48.86 But, you know, it was an answer to God 00:17:48.90\00:17:51.03 because I was praying at that time 00:17:51.07\00:17:52.63 when she called me. 00:17:52.67\00:17:54.04 I said, "Okay, 00:17:54.07\00:17:55.40 I guess God wants me to go to California." 00:17:55.44\00:17:56.77 So I'm going to California. 00:17:56.81\00:17:58.34 So that's how we moved to California. 00:17:58.37\00:18:00.48 And that was 2011 when we move, 00:18:00.51\00:18:04.51 and we opened up the Lifestyle Center 00:18:04.55\00:18:06.65 in January 2013. 00:18:06.72\00:18:08.88 Wow. Nice, nice. 00:18:08.92\00:18:10.89 I'm sure that you have come across 00:18:10.92\00:18:13.66 quite a few different diets and all of that. 00:18:13.69\00:18:17.26 And I want to share a scripture. 00:18:17.33\00:18:19.33 And it's found in Genesis 1:29. 00:18:19.36\00:18:23.30 And it says, "And God said, 00:18:23.37\00:18:25.10 'See, I have given you every herb 00:18:25.13\00:18:27.24 that yields seed 00:18:27.27\00:18:28.60 which is on the face of all the earth, 00:18:28.64\00:18:30.61 and every tree whose fruit yields seed, 00:18:30.64\00:18:33.21 to you it shall be for food.'" 00:18:33.24\00:18:35.08 So with all of these different diets, 00:18:35.11\00:18:37.85 I'm sure that a lot of the diets 00:18:37.88\00:18:40.05 don't line up 00:18:40.12\00:18:41.45 with what's found the health principles 00:18:41.48\00:18:43.89 that are found in scripture. 00:18:43.92\00:18:45.25 Yes. 00:18:45.29\00:18:46.62 What are some of the diets that you can talk about 00:18:46.65\00:18:49.89 and what's wrong with some of these diets? 00:18:49.92\00:18:53.80 Well, I think that's one reason 00:18:53.83\00:18:55.23 why we were really interested in writing a cookbook 00:18:55.26\00:18:58.90 and doing what we're doing because on our journeys, 00:18:58.93\00:19:03.20 we found that... 00:19:03.24\00:19:06.04 You know, both of us are very interested in lifestyle. 00:19:06.07\00:19:09.11 And both of us are very interested 00:19:09.14\00:19:10.48 in plant-based. 00:19:10.55\00:19:11.88 And I was attending a lot of lifestyle conferences 00:19:11.91\00:19:16.35 on the benefits of plant-based diets, 00:19:16.38\00:19:20.16 and I'm seeing so many miracles. 00:19:20.19\00:19:22.49 But when Mercy had her issues, 00:19:22.52\00:19:24.89 when I had my issues, 00:19:24.93\00:19:26.36 I had problems with chronic pain 00:19:26.39\00:19:29.20 for many, many years. 00:19:29.23\00:19:31.10 And I knew 00:19:31.13\00:19:32.87 because I was conventionally trained in medicine 00:19:32.90\00:19:37.21 and that there were not that many options for me 00:19:37.24\00:19:42.01 other than taking pain medications, 00:19:42.04\00:19:43.75 which I was given. 00:19:43.78\00:19:45.11 I was given actually some opiates, 00:19:45.15\00:19:47.52 and I decided 00:19:47.55\00:19:48.88 that's something I couldn't do, you know? 00:19:48.92\00:19:51.92 You were in a lot of pain. 00:19:51.95\00:19:53.29 I was in a lot of pain. 00:19:53.36\00:19:54.69 I just dealt with chronic pain for many, many years. 00:19:54.72\00:19:56.49 And I thought 00:19:56.52\00:19:57.86 that's what it's the rest of my life is about. 00:19:57.89\00:20:00.80 And so when I would have patients 00:20:00.83\00:20:02.16 come in to see me, 00:20:02.20\00:20:03.53 and they would complain of this or that. 00:20:03.57\00:20:06.10 I would just think, you know, life is hard, 00:20:06.13\00:20:07.87 life is painful. 00:20:07.90\00:20:09.34 And you just have to have a strong mindset. 00:20:09.37\00:20:13.21 And so when I was diagnosed with leaky gut 00:20:13.24\00:20:16.85 and food sensitivities and this type of thing, 00:20:16.88\00:20:21.95 you know, I had gotten to a point 00:20:21.98\00:20:24.79 where it got so bad 00:20:24.82\00:20:27.59 that I just said, "Well, it's worth a try, 00:20:27.66\00:20:29.96 you know, what's the worst that can happen?" 00:20:30.03\00:20:31.56 You know, so I did the elimination diet. 00:20:31.59\00:20:33.70 And being on that type of a diet 00:20:33.73\00:20:36.50 probably took care of about 90% of the pain, 00:20:36.53\00:20:40.37 and then going two years restored 00:20:40.44\00:20:41.87 and learning more about these things, 00:20:41.90\00:20:45.74 it took me even further. 00:20:45.77\00:20:49.31 But the reason that we're interested 00:20:49.34\00:20:51.41 in helping people understand more about this 00:20:51.45\00:20:55.08 was because when we were on our journey, 00:20:55.12\00:20:56.82 we were told that the reason that we had our problems 00:20:56.89\00:21:00.76 was because we were not eating animal products. 00:21:00.79\00:21:04.59 And that we had to adopt 00:21:04.63\00:21:08.16 more of more of these products like bone broth 00:21:08.20\00:21:12.27 and that kind of thing into our diets. 00:21:12.30\00:21:14.77 And neither of us, like for me it was a big shock 00:21:14.80\00:21:16.84 because I was like, "Bone broth? 00:21:16.91\00:21:18.24 What's that all about?" Yeah. 00:21:18.27\00:21:19.61 I never... Yeah. You never heard of it? 00:21:19.64\00:21:21.14 I never heard of bone broth, but... 00:21:21.18\00:21:22.51 You've not heard of bone broth? 00:21:22.54\00:21:23.88 Never. Never. 00:21:23.95\00:21:25.28 It doesn't sound like something 00:21:25.31\00:21:26.65 I would want to try necessarily. 00:21:26.68\00:21:28.42 You know, that's a big deal for the autoimmune community. 00:21:28.45\00:21:31.99 If you go to somebody 00:21:32.02\00:21:33.39 who believes in what you're experiencing 00:21:33.46\00:21:38.59 and is trying to deal with it, 00:21:38.63\00:21:40.90 you know, more of a functional medicine 00:21:40.93\00:21:43.70 and that kind of thing, 00:21:43.77\00:21:45.10 they will tell you that you need to be 00:21:45.13\00:21:46.94 incorporating more of those things 00:21:46.97\00:21:48.34 and that this is what is science-based. 00:21:48.37\00:21:53.04 And if you look at it even further, you'll find out 00:21:53.07\00:21:57.25 this is a whole branch of medicine 00:21:57.28\00:21:59.71 it's evolutionary medicine. 00:21:59.75\00:22:02.45 If you Google that, you will find that. 00:22:02.48\00:22:03.82 Now break that down evolution... 00:22:03.89\00:22:05.29 Because we know about "evolution." 00:22:05.32\00:22:07.99 But evolutionary medicine what's that? 00:22:08.02\00:22:10.83 So this is a branch of medicine that treats people 00:22:10.86\00:22:16.77 according to a paradigm of how they evolved. 00:22:16.80\00:22:20.04 It's based on Darwinian philosophy. 00:22:20.07\00:22:23.71 And this is the most popular paradigm out there. 00:22:23.74\00:22:28.58 If you look up autoimmune lifestyle, 00:22:28.61\00:22:31.05 you'll find autoimmune protocol diet. 00:22:31.08\00:22:34.02 And it is a paleo-based diet 00:22:34.05\00:22:38.52 where you eat according to how you evolved. 00:22:38.55\00:22:41.66 And so that is why we were, 00:22:41.69\00:22:43.53 you know, told that by many of our practitioners 00:22:43.56\00:22:46.16 and in this if you go out into blogs 00:22:46.19\00:22:48.83 and that kind of thing, 00:22:48.86\00:22:50.20 you will find a lot of people who say, 00:22:50.27\00:22:51.70 "I was a vegan, I was plant-based. 00:22:51.73\00:22:54.97 I couldn't get better until I went paleo." 00:22:55.00\00:22:57.97 And so for us, it was a conundrum 00:22:58.01\00:22:59.54 because we were in the health field. 00:22:59.57\00:23:03.35 We are Christians, we believe in the Bible, 00:23:03.38\00:23:06.28 we believe that this is the ideal diet. 00:23:06.31\00:23:08.65 And so we're wondering, is this true? 00:23:08.68\00:23:10.89 Is the paleo, 00:23:10.92\00:23:13.05 really the one that is backed up by evidence? 00:23:13.09\00:23:15.92 Because if the Bible is true, 00:23:15.96\00:23:18.23 we believe that the evidence should back that up, right? 00:23:18.26\00:23:21.73 And so for us, it was this conundrum of like, 00:23:21.76\00:23:25.83 is this true? 00:23:25.87\00:23:27.27 What is right? 00:23:27.34\00:23:28.80 What are we seeing as far as what people are experiencing? 00:23:28.84\00:23:32.61 What is my experience been? 00:23:32.64\00:23:34.28 Why am I sick, even though I'm very plant-based? 00:23:34.31\00:23:38.48 Is it all in my head? 00:23:38.51\00:23:39.88 Am I a hypochondriac? You know what I mean? 00:23:39.91\00:23:41.82 And so, all of these thoughts you're going through. 00:23:41.85\00:23:43.99 Yes. 00:23:44.02\00:23:45.35 And so it was very important for us to try to figure out 00:23:45.39\00:23:48.99 what is really happening. 00:23:49.02\00:23:50.63 It sounds like that other diet that is intertwined with... 00:23:50.66\00:23:55.23 What is it Darwinism? Yes. 00:23:55.26\00:23:57.60 Exactly. 00:23:57.63\00:23:58.97 That is removing the Creator God from the mix. 00:23:59.00\00:24:03.34 Ooh, right. Yes. 00:24:03.41\00:24:04.74 Yes. Absolutely. 00:24:04.77\00:24:06.41 But that's the way science today is set up. 00:24:06.44\00:24:11.51 The paradigm is that there is no Creator God. 00:24:11.55\00:24:15.02 And so that's the basis of the paradigm. 00:24:15.05\00:24:19.42 They couldn't be more wrong about that for sure. 00:24:19.45\00:24:22.22 But the problem is also that there are many Christians 00:24:22.26\00:24:27.10 who are adopting a paleo lifestyle 00:24:27.13\00:24:31.67 and not thinking about 00:24:31.70\00:24:33.03 those types of implications at all. 00:24:33.07\00:24:35.17 If you go and Google, 00:24:35.20\00:24:36.54 you know, should a Christian eat a paleo diet, 00:24:36.57\00:24:39.17 you will find people saying things like, 00:24:39.21\00:24:41.28 "It doesn't matter." 00:24:41.31\00:24:42.64 That's, you know, 00:24:42.68\00:24:44.81 what your religious beliefs are, 00:24:44.85\00:24:47.45 it doesn't matter what you do with your diet. 00:24:47.52\00:24:50.19 So there's a lot of dissonance. 00:24:50.22\00:24:51.55 And what does the paleo diet consists of? 00:24:51.59\00:24:54.19 So the paleo diet is they remove grains 00:24:54.26\00:24:58.16 and, you know, as you read 00:24:58.19\00:24:59.53 the verse grains is part of the eating diet. 00:24:59.56\00:25:02.93 And some removed also nuts 00:25:02.96\00:25:06.74 and also legumes, 00:25:06.77\00:25:09.47 so they focus on meat and vegetables. 00:25:09.50\00:25:12.31 So they do believe in the food sensitivities, 00:25:12.34\00:25:16.64 and they do good tasting 00:25:16.68\00:25:18.65 and they have a really good knowledge 00:25:18.68\00:25:20.98 of autoimmune disorder food sensitivities, 00:25:21.02\00:25:23.18 this is their functional medicine. 00:25:23.22\00:25:25.19 And so that's why they have so many followers. 00:25:25.22\00:25:28.26 So the community or the main community 00:25:28.29\00:25:30.63 is following the functional medicine 00:25:30.66\00:25:32.26 which is paleo base. 00:25:32.29\00:25:33.63 Okay. 00:25:33.70\00:25:35.03 So as Bible believers, 00:25:35.06\00:25:39.60 we had to find out. 00:25:39.63\00:25:40.97 Okay, there is also science behind the plant-base. 00:25:41.00\00:25:44.57 So we dig into the literature, 00:25:44.61\00:25:47.21 that medical literature about the science 00:25:47.28\00:25:49.94 that also backup the Bible. 00:25:49.98\00:25:52.01 And then we also read the books from Ellen G. White 00:25:52.05\00:25:55.85 that she's written so many books on health... 00:25:55.88\00:25:59.09 And how to eat. And how to eat. 00:25:59.12\00:26:00.69 Those principles are amazing. Yes, those are amazing. 00:26:00.76\00:26:05.56 So when we incorporate the science, 00:26:05.59\00:26:08.03 those books and also the Bible, 00:26:08.06\00:26:10.70 then we have seen amazing changes, 00:26:10.77\00:26:14.17 amazing recoveries. 00:26:14.24\00:26:15.60 And I should say that the paleo diet, 00:26:15.64\00:26:18.01 the reason that we don't eat 00:26:18.04\00:26:20.88 legumes and grains 00:26:20.91\00:26:24.05 and that type of thing is because they believe 00:26:24.08\00:26:25.91 that we humans were hunters and gatherers. 00:26:25.95\00:26:29.15 And so there are some who will even say 00:26:29.18\00:26:30.99 that farming is the worst thing 00:26:31.02\00:26:32.39 that the worst mistake that humans ever made. 00:26:32.42\00:26:35.89 So it's a totally different paradigm. 00:26:35.92\00:26:38.56 And so we don't think that it's correct. 00:26:38.59\00:26:43.30 And so we think that, 00:26:43.37\00:26:44.70 you know, if you're doing things 00:26:44.73\00:26:46.43 according to the wrong paradigm, 00:26:46.47\00:26:47.80 you're gonna end up at the wrong place. 00:26:47.84\00:26:49.87 And we have found that people do get better 00:26:49.90\00:26:54.94 doing this autoimmune paleo diet to a certain degree. 00:26:54.98\00:26:59.38 But then it plateaus. 00:26:59.41\00:27:00.75 Well, the thing is that usually if you ask them 00:27:00.82\00:27:03.49 what they did before the paleo diet, 00:27:03.52\00:27:06.09 it was a standard American diet. 00:27:06.12\00:27:07.96 And so a lot of these different protocols 00:27:07.99\00:27:11.06 they are major improvements 00:27:11.09\00:27:12.69 from what someone was doing prior. 00:27:12.73\00:27:14.40 So they are gonna improve. 00:27:14.43\00:27:15.76 So they see a little bit of improvement. 00:27:15.80\00:27:17.17 Got you. 00:27:17.20\00:27:18.53 So but we want people to get well, right? 00:27:18.57\00:27:20.04 Yes. Following God's ways. 00:27:20.07\00:27:21.87 Now correct me if I'm wrong, 00:27:21.90\00:27:23.61 but don't dairy products or meat products 00:27:23.64\00:27:27.18 or animal products rather 00:27:27.21\00:27:28.81 doesn't that cause inflammation? 00:27:28.84\00:27:31.65 Yes. Yes. 00:27:31.68\00:27:33.01 Absolutely. Okay. 00:27:33.05\00:27:34.38 And break down what an autoimmune disease is? 00:27:34.42\00:27:37.39 What is that? 00:27:37.42\00:27:39.82 Autoimmune disease 00:27:39.85\00:27:41.19 is when your immune system is over activated, 00:27:41.22\00:27:45.16 and I believe it's over activated 00:27:45.19\00:27:47.00 because you have these toxins that putting in your system 00:27:47.03\00:27:49.70 so the virus trying to destroy them. 00:27:49.73\00:27:51.80 But since you keep putting those toxins, 00:27:51.83\00:27:53.87 they start destroying your organs, different organs, 00:27:53.94\00:27:57.44 so you end up with lupus, you end up with the CIDP 00:27:57.51\00:28:01.24 which is neurological condition, 00:28:01.28\00:28:02.94 or you end up with type one diabetes 00:28:02.98\00:28:04.68 affecting the pancreas, or you end up with, 00:28:04.71\00:28:07.62 you know, it can affect any part of the body, 00:28:07.65\00:28:09.85 your brain, your skin... 00:28:09.88\00:28:12.32 So it is incredible epidemic. 00:28:12.35\00:28:17.46 For you to develop autoimmune disease, 00:28:17.53\00:28:20.20 for you to develop this confusion 00:28:20.23\00:28:21.63 'cause usually the immune system 00:28:21.66\00:28:24.07 is there to protect you. 00:28:24.10\00:28:25.97 It is something that serves many functions in the body 00:28:26.00\00:28:30.04 for you to just stay well. 00:28:30.11\00:28:31.74 And for it to become confused 00:28:31.77\00:28:34.88 so that it would start turning against itself. 00:28:34.91\00:28:37.58 There has to be a few things that happen. 00:28:37.65\00:28:39.38 Number one, you need to have a genetic predisposition. 00:28:39.41\00:28:42.88 So typically, you know, if you come from family members 00:28:42.92\00:28:46.76 that have autoimmune or gut problems, 00:28:46.79\00:28:50.73 that kind of thing. 00:28:50.76\00:28:52.13 Number two, you need to have gut permeability. 00:28:52.16\00:28:55.40 Okay. 00:28:55.43\00:28:56.77 That's this condition that we call leaky gut 00:28:56.80\00:28:59.13 where the gut is inflamed. 00:28:59.17\00:29:02.70 Different reasons for why food and bacteria 00:29:02.74\00:29:06.88 would enter into the body. 00:29:06.91\00:29:08.61 Okay. 00:29:08.64\00:29:10.05 And usually, it happens for a number of reasons. 00:29:10.08\00:29:15.55 They found for instance, 00:29:15.58\00:29:16.92 Dr. Alessio Fasano found that by eating wheat, gluten 00:29:16.99\00:29:21.26 that gluten causes your body to produce 00:29:21.29\00:29:23.96 a protein called zonulin. 00:29:24.03\00:29:25.66 Okay. 00:29:25.69\00:29:27.03 And that zonulin 00:29:27.10\00:29:28.43 when it attaches to the receptors 00:29:28.46\00:29:30.00 on your intestinal cells 00:29:30.07\00:29:33.07 that it'll cause them to lose the tight junctions 00:29:33.10\00:29:36.00 that causes them to stick together. 00:29:36.04\00:29:38.67 And so that causes you to develop the leakiness. 00:29:38.71\00:29:41.78 And so now food rather than being digested 00:29:41.81\00:29:44.15 to its smallest particles will get absorbed earlier. 00:29:44.18\00:29:49.02 Okay. 00:29:49.05\00:29:50.39 And so, and then you also have, 00:29:50.42\00:29:52.32 you know, if you have medications 00:29:52.35\00:29:53.86 and these types of things 00:29:53.89\00:29:55.22 that are disrupting the mucous membrane, 00:29:55.26\00:30:00.10 or the mucus barrier 00:30:00.13\00:30:01.46 and you're not drinking enough water, 00:30:01.50\00:30:03.47 because mucus is like 99% water, 00:30:03.50\00:30:06.84 you know, 00:30:06.87\00:30:08.20 then that'll contribute to it as well. 00:30:08.24\00:30:10.94 So you need to have a leaky gut, 00:30:10.97\00:30:13.88 and then an inflammatory trigger. 00:30:13.91\00:30:15.88 Okay. 00:30:15.91\00:30:17.25 So that inflammatory trigger can be medications, 00:30:17.28\00:30:19.65 it can be antibiotics, 00:30:19.68\00:30:21.05 it can be different foods that you're eating 00:30:21.08\00:30:24.99 or not eating, maybe malnutrition, 00:30:25.02\00:30:27.46 it can be even emotional stress. 00:30:27.49\00:30:29.62 Eighty percent of those who have autoimmune disease 00:30:29.66\00:30:31.79 report some kind of severe stress 00:30:31.83\00:30:35.23 around the same time. 00:30:35.26\00:30:36.97 So you need to have a few things 00:30:37.00\00:30:39.07 that are happening. 00:30:39.10\00:30:40.44 It's not just one day you wake up 00:30:40.47\00:30:41.80 and you have autoimmune disease, you know? 00:30:41.84\00:30:43.17 Got you. Got you. 00:30:43.20\00:30:44.54 It's interesting to me 00:30:44.57\00:30:45.91 how foods can either heal us or kill us. 00:30:45.94\00:30:47.68 Exactly. 00:30:47.71\00:30:49.04 Yeah, that's pretty interesting. 00:30:49.08\00:30:50.88 How did you guys come together and create this cookbook? 00:30:50.95\00:30:56.02 Well, in 2011, I was diagnosed with leaky gut. 00:30:56.05\00:31:00.49 And so I started an elimination diet, 00:31:00.56\00:31:03.43 and it was improving the pain and that type of thing. 00:31:03.46\00:31:07.63 I didn't know how to reincorporate foods. 00:31:07.66\00:31:11.10 And so I was doing well, 00:31:11.13\00:31:12.47 but I was wanting to reincorporate foods. 00:31:12.50\00:31:15.07 And I thought pretty much 00:31:15.10\00:31:17.77 this was gonna be the best that I got. 00:31:17.81\00:31:19.77 And then in 2015, I listened to a talk 00:31:19.81\00:31:22.94 by Gabriel Arruda on Audio Verse. 00:31:22.98\00:31:26.92 You're familiar with Audio Verse. 00:31:26.95\00:31:28.28 Oh, yeah, definitely. Definitely. 00:31:28.32\00:31:29.65 And he mentioned 00:31:29.68\00:31:32.75 how a woman by the name of Mercy Ballard 00:31:32.79\00:31:36.16 had a Lifestyle Center, 00:31:36.19\00:31:37.73 and it had helped his mother who had liver failure 00:31:37.76\00:31:41.60 from autoimmune disease 00:31:41.63\00:31:42.96 and how it had helped him 00:31:43.00\00:31:44.33 with the same autoimmune liver problem. 00:31:44.37\00:31:48.67 And I thought that's really interesting. 00:31:48.70\00:31:50.21 I'd never heard of Lifestyle Center 00:31:50.24\00:31:53.14 helping people with autoimmune conditions. 00:31:53.17\00:31:55.44 And I knew I had some kind of, 00:31:55.48\00:31:57.35 you know, leaky gut type of process happening. 00:31:57.38\00:32:01.18 So I called her, 00:32:01.22\00:32:04.59 and I actually didn't wanna pay to go to a program. 00:32:04.62\00:32:08.12 I just wanted to watch. 00:32:08.16\00:32:11.79 But she didn't allow that. 00:32:11.83\00:32:13.60 So I went there in 2016 of January. 00:32:13.63\00:32:18.43 Okay. 00:32:18.47\00:32:19.80 And when I went there, I was doing a lot better, 00:32:19.83\00:32:21.77 but I still had the joint pain, it wasn't as bad, 00:32:21.80\00:32:25.97 but, you know? 00:32:26.01\00:32:27.38 And I was having difficulty of breathing, 00:32:27.41\00:32:29.31 really bad difficulty of breathing at night. 00:32:29.34\00:32:31.51 And I would pray, "Lord, please help me to breathe," 00:32:31.55\00:32:33.75 and then I go to sleep. 00:32:33.82\00:32:35.18 And I realized on the third day, 00:32:35.22\00:32:37.22 this as a 10-day program, 00:32:37.29\00:32:39.25 that I woke up to go on a walk. 00:32:39.29\00:32:43.73 And I realized I didn't have any pain. 00:32:43.76\00:32:46.26 Wow. 00:32:46.29\00:32:47.63 And I realized that I wasn't having difficulty 00:32:47.66\00:32:51.13 of breathing at night. 00:32:51.17\00:32:53.07 And it was, I guess, for me at that point, 00:32:53.10\00:32:55.67 it was just such a difference from anything 00:32:55.70\00:32:59.17 that I'd ever experience 00:32:59.21\00:33:00.71 even though I've been to other lifestyle programs, 00:33:00.78\00:33:03.01 you know, I've been interested in health all this time, 00:33:03.04\00:33:05.55 I've been doing health programs at churches. 00:33:05.58\00:33:08.18 And I thought, you know, 00:33:08.22\00:33:11.39 everything that I'm learning here, 00:33:11.42\00:33:13.19 it makes sense. 00:33:13.22\00:33:14.89 And I wonder why more people don't know about this. 00:33:14.92\00:33:18.09 And I saw Mercy was doing this by herself. 00:33:18.13\00:33:23.30 And I thought, "Well, you know, 00:33:23.37\00:33:24.97 I'll just keep in touch with her 00:33:25.00\00:33:26.33 try to encourage her." 00:33:26.37\00:33:27.70 And we would talk on the phone... 00:33:27.74\00:33:29.57 And pray. We became friends. 00:33:29.60\00:33:31.74 And then one year... 00:33:31.77\00:33:35.44 It was a couple of years later, 00:33:35.48\00:33:36.85 I think that I was really praying 00:33:36.88\00:33:39.91 about what to do 'cause I knew, 00:33:39.95\00:33:41.62 you know, if I was trying to help people 00:33:41.65\00:33:44.02 in my clinic, when they would come, 00:33:44.09\00:33:46.65 I would try to help them lose weight, 00:33:46.69\00:33:48.52 stop smoking, these kinds of things. 00:33:48.56\00:33:50.53 And I don't think we established 00:33:50.56\00:33:51.93 what type of doctor you are. 00:33:51.96\00:33:53.29 Oh, yeah, I'm an ophthalmologist. 00:33:53.33\00:33:55.43 Yes. So I mostly operate. 00:33:55.46\00:33:58.90 Okay. 00:33:58.93\00:34:00.34 But I... You must have steady hands. 00:34:00.37\00:34:05.17 But I know that lifestyle contributes 00:34:05.21\00:34:08.71 to at least 80% of chronic disease. 00:34:08.74\00:34:11.15 I'm a glaucoma specialist by training. 00:34:11.18\00:34:13.62 And so I know that, 00:34:13.65\00:34:15.95 you know, the glaucoma is a chronic illness. 00:34:15.98\00:34:18.72 I know that, you know, 00:34:18.75\00:34:20.36 if I help people with their lifestyle, 00:34:20.39\00:34:22.72 that it will help them overall. 00:34:22.76\00:34:24.53 And so I would try to ask them what they're eating 00:34:24.56\00:34:28.13 and, you know, just see if I could help them 00:34:28.16\00:34:30.17 make progress in their health journey. 00:34:30.20\00:34:33.00 And I thought, "You know, I'm doing a good job." 00:34:33.03\00:34:35.24 I think initially, I was thinking that, right? 00:34:35.27\00:34:37.34 You know, 'cause I'm like, "All right, 00:34:37.41\00:34:39.01 I helped someone lose weight. Oh, that's awesome. 00:34:39.04\00:34:41.04 I helped someone stop smoking. 00:34:41.08\00:34:42.51 You know, thank you, Lord, 00:34:42.54\00:34:43.88 for, you know, this opportunity." 00:34:43.95\00:34:45.31 And I was happy with that. 00:34:45.35\00:34:46.95 And then I realized, 00:34:47.02\00:34:48.35 if I keep going the rest of my career, 00:34:48.38\00:34:50.09 like this, say 20 years like this, 00:34:50.12\00:34:52.55 I'll have like maybe 20 patients, 00:34:52.59\00:34:55.02 you know, at the end of it, right? 00:34:55.06\00:34:56.93 And I thought, if Jesus is coming soon, 00:34:56.96\00:35:00.00 and I really wanna help people know that He's coming 00:35:00.03\00:35:03.70 and is this the best use of my time? 00:35:03.77\00:35:06.84 You know, is this really the best way to help people? 00:35:06.87\00:35:10.04 And so as I was talking to Mercy, I was like, 00:35:10.11\00:35:11.84 "Mercy, let's do an online course." 00:35:11.87\00:35:13.48 Okay. 00:35:13.51\00:35:14.84 And I said, "Okay, we're gonna shoot video. 00:35:14.88\00:35:19.55 And so I started buying all this video equipment." 00:35:19.58\00:35:22.18 She's like, "Okay, I'll help you." 00:35:22.22\00:35:24.75 So in June of 2017 00:35:24.79\00:35:31.23 for six months, I was preparing for June. 00:35:31.26\00:35:34.73 Wow. 00:35:34.76\00:35:36.10 To shoot this course. 00:35:36.13\00:35:37.47 Six-month preparation, yeah. 00:35:37.50\00:35:38.83 Six months I was buying everything 00:35:38.87\00:35:40.67 and then I bought the video camera, 00:35:40.74\00:35:43.44 and I was trying to watch on YouTube 00:35:43.51\00:35:45.34 how to use this video camera. 00:35:45.37\00:35:47.58 And then I realized it's just too much for me. 00:35:47.61\00:35:49.81 And so I started praying for a videographer. 00:35:49.84\00:35:52.91 Nice. 00:35:52.95\00:35:54.32 And then the person helping me at my house 00:35:54.35\00:35:57.79 every once in a while, her name's Leslie. 00:35:57.82\00:36:00.16 She told me that her son was in high school, 00:36:00.19\00:36:03.06 and he really enjoyed doing videography. 00:36:03.09\00:36:05.86 So I asked if he would be my videographer. 00:36:05.89\00:36:08.53 That's an answer to prayer. 00:36:08.56\00:36:09.90 So one month before June, I got my videographer. 00:36:09.93\00:36:13.54 So I told Mercy. 00:36:13.57\00:36:14.90 I was like, "Mercy, we got a videographer." 00:36:14.94\00:36:17.74 And she was like, "That's great." 00:36:17.77\00:36:19.11 She's like, "Maybe he can take pictures 00:36:19.14\00:36:21.44 of the dishes between the shots, 00:36:21.48\00:36:25.11 and we can do the cookbook." 00:36:25.15\00:36:27.05 Wow. That's not a good idea, Jason. 00:36:27.12\00:36:29.92 You know, that's not gonna work. 00:36:29.95\00:36:31.29 So you're taking pictures 00:36:31.32\00:36:32.65 of so you're kind of getting like beauty shots 00:36:32.69\00:36:34.52 in between the... 00:36:34.56\00:36:36.93 Yeah, yeah. 00:36:36.96\00:36:39.43 That's not gonna work, right? 00:36:39.46\00:36:41.76 But Mercy was like, "Yeah, that'll be no problem." 00:36:41.80\00:36:44.33 And I thought I was kind of irritated 00:36:44.37\00:36:47.54 'cause I was like, "Mercy, 00:36:47.57\00:36:48.90 you were gonna help me with this online course. 00:36:48.94\00:36:50.51 We're not gonna have time to do this." 00:36:50.54\00:36:52.04 Yes. Yes. 00:36:52.07\00:36:53.41 So but we prayed, 00:36:53.48\00:36:56.24 and we were praying for a photographer 00:36:56.28\00:36:57.98 and then two weeks before 00:36:58.01\00:37:00.02 my sister had arranged for a photography session 00:37:00.05\00:37:03.99 with her nanny, Liz. 00:37:04.02\00:37:06.35 And she said, "Joyce, 00:37:06.39\00:37:08.16 Liz has just started a photography business." 00:37:08.19\00:37:11.66 Wow. 00:37:11.69\00:37:13.03 And she's like, it's so funny 00:37:13.06\00:37:14.56 because when she took pictures of the kids 00:37:14.60\00:37:17.27 and sent them to me on the phone, 00:37:17.30\00:37:18.63 she's like, they were always really blurry. 00:37:18.67\00:37:22.74 And now... And now... 00:37:22.77\00:37:24.34 She started a photography business. 00:37:24.37\00:37:27.08 So we took the family pictures, and I asked Liz, 00:37:27.11\00:37:30.05 if she'd be willing to try shooting pictures 00:37:30.08\00:37:33.42 for the cookbook. 00:37:33.45\00:37:34.78 And she had time 00:37:34.82\00:37:36.15 because she was just starting out. 00:37:36.18\00:37:37.52 Yes. 00:37:37.59\00:37:38.92 So you got in at the ground level. 00:37:38.95\00:37:40.29 I did. 00:37:40.32\00:37:41.66 I love it. That's great. 00:37:41.69\00:37:43.02 And I thought, well, 00:37:43.06\00:37:44.39 who knows but it'll be better than what I can do, right? 00:37:44.43\00:37:47.50 And she took fabulous pictures. 00:37:47.53\00:37:50.40 She's really talented. 00:37:50.47\00:37:51.80 Yes. Yes. 00:37:51.83\00:37:53.17 And your cookbook looks really good. 00:37:53.20\00:37:55.47 You know, we have, 00:37:55.50\00:37:57.04 we actually have a graphic of the cookbook. 00:37:57.11\00:38:00.38 And you have pictures turned out great. 00:38:00.41\00:38:03.38 I'm wondering maybe we can show some of the pictures 00:38:03.45\00:38:05.78 of what the back. 00:38:05.81\00:38:08.72 Oh, absolutely. 00:38:08.75\00:38:10.29 Absolutely. 00:38:10.32\00:38:11.65 So you want to... 00:38:11.69\00:38:13.02 Okay, so there's Leslie and her son Bryce. 00:38:13.05\00:38:16.02 He's the one that did the videography. 00:38:16.06\00:38:17.63 How old was he? 00:38:17.66\00:38:18.99 I think Bryce was like a sophomore in high school. 00:38:19.03\00:38:21.50 And you can see that he went over and above 00:38:21.53\00:38:25.10 to set up for this course. 00:38:25.13\00:38:28.17 And, you know, there's Liz 00:38:28.20\00:38:32.04 and him setting up for doing all of this. 00:38:32.07\00:38:34.54 And all that was in your house, right? 00:38:34.58\00:38:36.08 This is at my house. 00:38:36.11\00:38:37.45 This is at my house. I love the kitchen. 00:38:37.48\00:38:38.81 Yeah, it's nice. 00:38:38.85\00:38:40.22 Well, I had gotten this and this Liz shooting the food. 00:38:40.25\00:38:44.19 I purchased the home 00:38:44.22\00:38:45.85 thinking I wanted to teach cooking classes, 00:38:45.89\00:38:48.76 and I did do a few of those. 00:38:48.79\00:38:50.33 That's our favorite recipe, 00:38:50.36\00:38:51.69 the buckwheat waffles that's from the book. 00:38:51.73\00:38:54.30 And yes, Bryce and Liz again, 00:38:54.33\00:38:58.90 the next slide will show us working in the kitchen. 00:38:58.93\00:39:01.80 This is while we were doing the course in June. 00:39:01.84\00:39:04.01 Wow. 00:39:04.04\00:39:05.37 And this is the whole crew. So Bryce there. 00:39:05.41\00:39:09.11 We had one of Mercy's friends Raquel and her daughter, 00:39:09.14\00:39:13.45 Nicole come and help us to get the food ready. 00:39:13.52\00:39:16.92 It was like a four or five-day production. 00:39:16.99\00:39:19.45 And these are our tortillas. 00:39:19.49\00:39:21.42 Now we're making tortillas with sprouted ingredients. 00:39:21.46\00:39:25.59 Okay. 00:39:25.63\00:39:27.00 Mostly organic and making them available 00:39:27.03\00:39:29.86 so that it's more convenient for people. 00:39:29.90\00:39:31.93 That's incredible. That's incredible. 00:39:31.97\00:39:33.94 Can you summarize the principles 00:39:33.97\00:39:36.27 in the autoimmune plant-based cookbook? 00:39:36.30\00:39:38.44 Yeah. 00:39:38.47\00:39:39.81 I think, why don't you start out. 00:39:39.84\00:39:42.14 So number one is plant-based. 00:39:42.18\00:39:44.85 In this whole plant-based, no processed foods 00:39:44.88\00:39:46.82 so people have to cook from scratch. 00:39:46.85\00:39:48.55 So we make a seven-day menu 00:39:48.58\00:39:50.62 there so people can follow that and be easy to do it. 00:39:50.69\00:39:55.52 So because... 00:39:55.56\00:39:56.93 So the whole week is planned out. 00:39:56.96\00:39:58.29 Yeah, exactly. 00:39:58.33\00:39:59.66 So if you read the book, there's so many principles 00:39:59.69\00:40:01.80 that we follow that, you know, we gonna go over. 00:40:01.83\00:40:03.67 Yes. 00:40:03.70\00:40:05.03 But, you know, people get confused. 00:40:05.07\00:40:07.04 And it's just so much information. 00:40:07.07\00:40:08.70 So we decided, let's put it in seven days. 00:40:08.74\00:40:11.07 So they don't have to find recipes here and there, 00:40:11.11\00:40:13.21 but just go directly there and do the breakfast and lunch 00:40:13.24\00:40:16.51 and they can repeat it. 00:40:16.54\00:40:17.88 So people are doing this and then, 00:40:17.91\00:40:19.85 you know, we get good emails, 00:40:19.88\00:40:22.22 like, "I've been following you for two months, 00:40:22.25\00:40:24.55 and I'm fine now," things like that. 00:40:24.59\00:40:26.55 So it's just incredible. 00:40:26.59\00:40:28.29 So that's one of the bases. 00:40:28.32\00:40:30.53 Another thing we do is we remove the lectins 00:40:30.56\00:40:34.80 from the grains because the grains... 00:40:34.83\00:40:36.77 The reason why paleo removed the grains 00:40:36.80\00:40:38.60 because it's full of lectins. 00:40:38.63\00:40:40.34 And this is one of the links to the food sensitivities. 00:40:40.37\00:40:43.94 So what we do is we soak them and it's sprouted, 00:40:44.01\00:40:48.14 so it just makes a big difference. 00:40:48.18\00:40:51.68 Yeah, but we do remove the grains and the nuts 00:40:51.71\00:40:55.12 for two months because it's kind of too harsh 00:40:55.15\00:40:57.59 for people that have a leaky gut 00:40:57.62\00:41:00.06 at the beginning while they're recovering. 00:41:00.09\00:41:03.56 After the two months or four months depending 00:41:03.63\00:41:06.06 when the symptoms are gone, then we reintroduce them. 00:41:06.09\00:41:08.66 And when we reintroduce them as we soak them 00:41:08.70\00:41:11.93 and the grains, 00:41:11.97\00:41:13.34 we like to process for two days 00:41:13.37\00:41:17.94 just to remove... 00:41:17.97\00:41:19.31 The lectins? 00:41:19.34\00:41:20.68 Yeah, as much as we can. 00:41:20.71\00:41:22.48 And then they reintroduce that the grains and nuts 00:41:22.51\00:41:25.71 one at a time once a week. 00:41:25.75\00:41:27.95 Yeah. 00:41:27.98\00:41:29.32 But in the meantime, we use the pseudo-grains. 00:41:29.35\00:41:33.15 And the pseudo-grains are easy to digest 00:41:33.19\00:41:36.42 and you don't need to process them so long, 00:41:36.46\00:41:38.73 you don't need to cook them as long as the grains. 00:41:38.76\00:41:42.26 Okay? So it's a short time cooking. 00:41:42.30\00:41:44.50 A faster process. 00:41:44.53\00:41:45.87 Yeah, so these pseudo-grains 00:41:45.90\00:41:47.47 are the quinoa, buckwheat, amaranth. 00:41:47.54\00:41:50.51 There's a new one now is kaniwa. 00:41:50.54\00:41:52.14 Got you. Well... 00:41:52.17\00:41:53.51 Oh, go. 00:41:53.58\00:41:54.91 I was just gonna say we have a video of Joel. 00:41:54.94\00:41:57.25 Oh, okay. 00:41:57.28\00:41:58.61 And we've got a few videos 00:41:58.65\00:41:59.98 that we wanna get to time is escaping us. 00:42:00.02\00:42:01.42 That's a good one. 00:42:01.45\00:42:02.78 So we're gonna take a look at the video with Joel. 00:42:02.82\00:42:05.99 Let's take a look at that now. 00:42:06.02\00:42:07.99 My name is Joel Moutray, I'm 30 years old, 00:42:08.02\00:42:09.86 and I have psoriasis. 00:42:09.89\00:42:11.36 It was about 11 years ago 00:42:11.39\00:42:13.33 when I was just graduated from high school, 00:42:13.40\00:42:15.23 I had first discover that I had psoriasis. 00:42:15.26\00:42:17.37 Psoriasis is an autoimmune condition 00:42:17.40\00:42:19.63 where the skin grows faster than normal 00:42:19.67\00:42:22.67 because the body is attacking itself. 00:42:22.70\00:42:24.31 And so it manifests itself in red, scaly, flaky skin, 00:42:24.34\00:42:28.94 you know, going out in public and people saying, 00:42:28.98\00:42:30.45 "Oh, what happened to your leg?" 00:42:30.48\00:42:32.38 You know, like, "Is that poison oak? 00:42:32.41\00:42:34.32 Is that mosquito bites?" 00:42:34.35\00:42:35.68 And you have to say, "Oh, no, it's just psoriasis." 00:42:35.72\00:42:37.29 They're like, "Is it contagious?" You know? 00:42:37.32\00:42:39.59 And so just having to go through those experiences, 00:42:39.62\00:42:42.32 you know, having it in your scalp 00:42:42.36\00:42:43.73 and having every morning, 00:42:43.76\00:42:45.09 you know, putting gel in your hair, 00:42:45.13\00:42:46.46 and then forgetting that you forgot to, 00:42:46.49\00:42:47.83 you know, clean out your scalp a little bit 00:42:47.86\00:42:49.90 so that there's not white flakes in your hair, 00:42:49.93\00:42:51.50 and you have to take a whole complete new shower. 00:42:51.53\00:42:53.54 And so for many years, I just kind of signed off, 00:42:53.57\00:42:55.50 and I was I guess I'll just gonna live with this forever. 00:42:55.54\00:42:57.77 And I think at a deep core level 00:42:57.81\00:42:59.81 I had to do with the fact that I didn't believe 00:42:59.84\00:43:01.58 healing was possible even. 00:43:01.61\00:43:03.01 Just about a month ago, 00:43:03.04\00:43:04.38 I came back from the Years Restored program 00:43:04.41\00:43:06.58 where I learned, you know, 00:43:06.61\00:43:08.05 through cooking demonstrations and natural remedies 00:43:08.08\00:43:10.62 and hydrotherapy and sauna, 00:43:10.69\00:43:12.12 and also powerful and informative lectures 00:43:12.15\00:43:15.16 based on science, 00:43:15.19\00:43:16.59 the principles that I needed to know 00:43:16.62\00:43:18.13 on how to reverse my autoimmune disease. 00:43:18.16\00:43:20.00 So after leaving Years Restored program, 00:43:20.03\00:43:22.53 it has been an amazing experience. 00:43:22.56\00:43:23.90 I've been in almost 90% remission. 00:43:23.97\00:43:26.47 The pictures show that 00:43:26.50\00:43:27.84 that my body and my skin is clearing up. 00:43:27.87\00:43:29.77 In my case, 00:43:29.80\00:43:31.14 the reason why I wasn't pursuing recovering and healing 00:43:31.17\00:43:33.48 was because I didn't believe it was possible. 00:43:33.51\00:43:34.94 So the first step that I would recommend anyone 00:43:34.98\00:43:37.35 is to educate yourself. 00:43:37.38\00:43:38.71 In this course, it's absolutely amazing 00:43:38.75\00:43:40.62 because it'll teach you everything, 00:43:40.65\00:43:41.98 you know, not only scientifically, 00:43:42.02\00:43:43.39 but practically 00:43:43.42\00:43:44.75 on what it means to have an autoimmune disease, 00:43:44.79\00:43:46.42 how to overcome it 00:43:46.45\00:43:47.79 and what causes autoimmune diseases. 00:43:47.82\00:43:49.39 And so number one, you wanna inform yourself, 00:43:49.42\00:43:51.16 you wanna feed that information 00:43:51.19\00:43:52.76 because when you receive information, 00:43:52.79\00:43:54.73 you'll then be inspired. 00:43:54.76\00:43:56.10 And when you're inspired, 00:43:56.13\00:43:57.47 then you can start taking action. 00:43:57.50\00:43:58.83 And what's beautiful is that they also have systems in place 00:43:58.87\00:44:01.10 to actually help you and coach you along the way 00:44:01.14\00:44:03.30 after the course as well. 00:44:03.34\00:44:04.67 My interactions with Mercy and with Dr. Joyce 00:44:04.71\00:44:07.28 have been amazing 00:44:07.31\00:44:08.64 because not only do they give you 00:44:08.68\00:44:10.01 excellent scientific based information 00:44:10.05\00:44:11.78 as well as practical demonstrations 00:44:11.81\00:44:13.82 and tips on how to implement this, 00:44:13.85\00:44:15.45 shopping lists, and all these kinds of things 00:44:15.48\00:44:17.29 that help you on your journey to heal in your recovery. 00:44:17.32\00:44:20.36 But I really admire their desire to help me 00:44:20.39\00:44:23.02 and help everyone that they interact 00:44:23.06\00:44:24.86 with because their goal is not to become millionaires, 00:44:24.89\00:44:27.93 their goal is not to do all these things, 00:44:27.96\00:44:29.90 but their goal is my healing, your healing, 00:44:29.93\00:44:33.34 and they invest time and energy, 00:44:33.37\00:44:35.34 and they go above and beyond any expectations really. 00:44:35.37\00:44:38.97 I received more than I even paid for 00:44:39.01\00:44:41.31 going to the Years Restored program. 00:44:41.34\00:44:43.35 And, you know, taking this course 00:44:43.38\00:44:44.95 is something that I would highly recommend 00:44:44.98\00:44:47.12 because you receive that not only information, 00:44:47.15\00:44:49.08 but you'll receive that community 00:44:49.12\00:44:50.72 and support on your healing journey. 00:44:50.79\00:44:53.25 Wow. 00:44:58.79\00:45:00.13 It sounds like that was a tremendous blessing 00:45:00.20\00:45:02.10 for Joel, before we went to the video, 00:45:02.13\00:45:04.33 you were trying to say something. 00:45:04.37\00:45:06.03 Well, I just wanted to clarify too. 00:45:06.07\00:45:07.77 And you were asking 00:45:07.80\00:45:09.14 what the principles of this cookbook are 00:45:09.17\00:45:11.41 and Years Restored, what do we do differently? 00:45:11.44\00:45:13.27 Yes. 00:45:13.31\00:45:14.64 And so one of the things that Mercy said, 00:45:14.68\00:45:16.38 we're whole foods plant-based, 00:45:16.41\00:45:18.38 we do decrease lectins by soaking and sprouting 00:45:18.41\00:45:21.15 all the high lectin foods 00:45:21.18\00:45:22.52 that would be seeds, grains, nuts, beans. 00:45:22.55\00:45:25.29 And so we teach you how to cook that way. 00:45:25.32\00:45:26.65 Okay. 00:45:26.69\00:45:28.02 And then the other thing is that we teach you 00:45:28.06\00:45:29.39 about why this is happening. 00:45:29.42\00:45:30.93 And we believe that it has to do 00:45:30.96\00:45:32.49 with what's happening 00:45:32.53\00:45:33.90 with industrialized agriculture. 00:45:33.93\00:45:35.33 What's happening, especially with glyphosate, 00:45:35.36\00:45:37.73 if you read about glyphosate, 00:45:37.77\00:45:39.10 it's patented not only as a weed killer, 00:45:39.13\00:45:41.30 roundup, but it's also a mineral key later, 00:45:41.34\00:45:44.37 it will grab up your minerals, 00:45:44.41\00:45:45.97 and it's also patented as an antibiotic. 00:45:46.01\00:45:48.54 So think about the effect that that's having on your gut. 00:45:48.58\00:45:51.78 So we teach people about why this is happening, 00:45:51.81\00:45:54.58 why it's so important, 00:45:54.62\00:45:56.22 and how to remove the things that are high risk, 00:45:56.25\00:46:00.16 GMO or genetically modified and glyphosate 00:46:00.19\00:46:04.76 and the importance of being consistent with it. 00:46:04.79\00:46:08.40 How to eat according to the principles 00:46:08.43\00:46:10.07 that we were talking about that kind of stuff. 00:46:10.10\00:46:11.97 Wow, that's huge. 00:46:12.00\00:46:13.34 Now we also have a seed butter. 00:46:13.37\00:46:16.27 Okay, This next video, 00:46:16.30\00:46:19.47 I wanna show you what we're doing now. 00:46:19.51\00:46:21.28 So because people can't come to the program. 00:46:21.31\00:46:24.85 So that's why we did the cookbook, 00:46:24.88\00:46:26.72 but we also have the online course 00:46:26.75\00:46:28.95 available soon. 00:46:28.98\00:46:30.49 So that course with all the videos, 00:46:30.52\00:46:32.95 so we're gonna show you the promo 00:46:32.99\00:46:34.49 we debuted it in October had 100 people, 00:46:34.52\00:46:37.96 and we wanted to provide a community 00:46:37.99\00:46:40.10 where people can join and not only learn education, 00:46:40.13\00:46:43.50 information, 00:46:43.57\00:46:44.90 but where we could encourage and interact. 00:46:44.93\00:46:47.74 So that's what we're gonna show in the video. 00:46:47.77\00:46:50.31 I love it. That's incredible. 00:46:50.34\00:46:51.67 In fact, let's go to that video right now. 00:46:51.71\00:46:54.71 Mercy and I recently published 00:46:54.74\00:46:57.35 The Autoimmune Plant Based Cookbook. 00:46:57.38\00:46:59.81 And in October of 2019, 00:46:59.85\00:47:02.68 we conducted our first online course. 00:47:02.72\00:47:05.99 We called it The Autoimmune Recovery Plan. 00:47:06.02\00:47:09.82 We provided 20 lectures on autoimmune disease, 00:47:09.86\00:47:13.13 leaky gut, and how to heal. 00:47:13.16\00:47:15.43 We also provided video demonstrations 00:47:15.46\00:47:17.73 on how to prepare foods 00:47:17.77\00:47:19.27 from The Autoimmune Plant Based Cookbook 00:47:19.30\00:47:21.64 and how to have a successful health journey. 00:47:21.67\00:47:24.57 So welcome to this lesson today. 00:47:44.13\00:47:45.76 We're gonna talk about how to make butters and spreads 00:47:45.79\00:47:50.07 from things like pumpkin seeds and sunflower seeds. 00:47:50.10\00:47:54.27 And so what we've done is that we have already soaked. 00:47:54.30\00:47:58.94 And soaked the pumpkin seeds 00:47:58.97\00:48:02.34 and the sunflower seeds overnight, 00:48:02.38\00:48:05.11 and then we have dehydrated them 00:48:05.15\00:48:07.62 for about 24 hours. 00:48:07.65\00:48:09.25 And so today, we're gonna make this 00:48:09.28\00:48:12.22 from the pumpkin seeds, 00:48:12.25\00:48:13.59 but I just wanted to at least show you the pumpkin 00:48:13.66\00:48:17.16 and the sunflower seeds. 00:48:17.23\00:48:18.93 And so, Mercy, can you just let us know 00:48:18.96\00:48:20.80 how many cups of what we're gonna use? 00:48:20.83\00:48:22.60 Sure. 00:48:22.63\00:48:23.97 So we have one cup of pumpkin seeds 00:48:24.00\00:48:25.80 and one cup of shredded coconut. 00:48:25.83\00:48:29.27 That makes it super great. 00:48:29.30\00:48:32.24 So one cup of coconut and one cup of pumpkin seeds 00:48:32.27\00:48:37.78 that have already been soaked overnight, 00:48:37.81\00:48:40.02 and how much salt is this? 00:48:40.05\00:48:41.68 This is one teaspoon of salt 00:48:41.72\00:48:43.08 that we're gonna add it toward the end, 00:48:43.12\00:48:44.69 otherwise it doesn't make butter for some reason. 00:48:44.72\00:48:47.06 And the pumpkin seeds have to be super dried. 00:48:47.09\00:48:50.46 Okay. Yeah. 00:48:50.53\00:48:51.86 So you want to make sure 00:48:51.89\00:48:53.23 that if you wash this right before you use it, 00:48:53.26\00:48:54.93 that you dry it really good. 00:48:54.96\00:48:56.30 You don't want to have any moisture. 00:48:56.33\00:48:59.13 So we're gonna run it for about 20 minutes, 00:48:59.17\00:49:01.67 right, Joyce? 00:49:01.70\00:49:03.04 Yeah, the thing about this is that I've made it with salt. 00:49:03.07\00:49:05.54 And so that's probably why it doesn't processed. 00:49:05.57\00:49:08.41 So it's gonna be 20 minutes and... 00:49:08.44\00:49:12.31 On high. 00:49:12.35\00:49:13.72 Okay, so we're... 00:49:13.75\00:49:15.08 So here are the seed butters at the end 00:49:20.09\00:49:23.93 of about what 20 minutes of processing 00:49:23.96\00:49:27.40 and here's the sunflower. 00:49:27.43\00:49:28.96 You can see the pumpkin seed. 00:49:29.00\00:49:30.77 It's a beautiful green, 00:49:30.80\00:49:32.70 and we didn't show you 00:49:32.73\00:49:35.97 how we processed sunflower seeds, 00:49:36.00\00:49:37.64 but you can do it exactly the same 00:49:37.67\00:49:39.14 with equal parts of sunflower seeds, 00:49:39.17\00:49:42.08 coconut, and salt. 00:49:42.11\00:49:44.48 Well, not equal part salt, 00:49:44.51\00:49:45.85 but about a teaspoon of salt per cup of each, 00:49:45.88\00:49:50.82 if that makes sense. 00:49:50.89\00:49:52.29 But we just tried this morning 00:49:52.32\00:49:54.96 and it was a huge hit for our crew here today. 00:49:54.99\00:50:00.63 Hope that you enjoy it as well. 00:50:00.70\00:50:04.27 Wow, that was a quick recipe there. 00:50:04.30\00:50:08.00 And so is this program. 00:50:08.04\00:50:09.57 I mean, our time is really dwindling down. 00:50:09.60\00:50:12.21 Real quick, 00:50:12.24\00:50:13.58 what are some of the needs of your ministry? 00:50:13.61\00:50:17.45 Well, we really want this to be a movement that grows. 00:50:17.48\00:50:21.05 We want this to be just as popular 00:50:21.08\00:50:23.42 or more than functional medicine. 00:50:23.49\00:50:25.69 We want people to think about creation 00:50:25.72\00:50:28.09 rather than evolution when it comes to their health. 00:50:28.12\00:50:31.06 And so just to let people know that there is an online course 00:50:31.09\00:50:34.70 to get more education out there 00:50:34.73\00:50:36.80 our website WholenessMarket.com, 00:50:36.87\00:50:41.20 that's where they can get the book. 00:50:41.24\00:50:42.57 Okay.
