Shall we begin? Yes, all right. 00:08:57.02\00:08:59.10 Right, you put the cornmeal 00:08:59.13\00:09:00.82 where you sift the cornmeal first of all like said. 00:09:00.85\00:09:05.70 Nice. 00:09:05.73\00:09:06.76 And while you sifting it you going to-- 00:09:06.79\00:09:08.92 once it's going down by about half in the sift 00:09:08.95\00:09:11.94 then you are going to put the flour in sifting 00:09:11.97\00:09:14.21 kind of mix them together. Yeah. 00:09:14.24\00:09:16.36 Put over there please, and go like that. 00:09:16.39\00:09:19.67 Now plain flour would that be 00:09:19.70\00:09:20.95 like an unbleached flour, or just-- 00:09:20.98\00:09:22.24 Yes, I always go for unbleached the healthiest you can find. 00:09:22.27\00:09:27.23 Sometimes you just can't find, 00:09:27.26\00:09:29.61 so doing the best you can with what you have available 00:09:29.64\00:09:32.59 that's, I think that's the fairest way to... 00:09:32.62\00:09:34.71 I think that is fair absolutely. 00:09:34.74\00:09:36.57 It's a kind of advice to people. 00:09:36.60\00:09:38.76 So, yeah. 00:09:38.79\00:09:39.82 As you can see with the cornmeal 00:09:39.85\00:09:40.88 sometimes as little bits in there. 00:09:40.91\00:09:42.22 Yes, you have some of that left behind. Yes. 00:09:42.25\00:09:44.93 Now this makes lighter when you sift it like that. 00:09:44.96\00:09:47.47 Yes, it put-- well, this is not gonna rise. Okay. 00:09:47.50\00:09:51.77 And because it's a pudding, but, here in the US 00:09:51.80\00:09:55.62 pudding is what would we called a mousse. 00:09:55.65\00:09:58.12 So it's kind of like your sweet potato pie-- Okay. 00:09:58.15\00:10:01.13 But without the crust, 00:10:01.16\00:10:02.46 that's the kind of the consistency sort of. 00:10:02.49\00:10:04.28 All right, that's make sense. 00:10:04.31\00:10:05.66 Yeah, so you just sift it. 00:10:05.69\00:10:08.41 I'm gonna use this to speed up. 00:10:08.44\00:10:11.55 Well that's a little bit sound there. 00:10:11.58\00:10:12.61 Lots of that. 00:10:12.64\00:10:14.14 Oh, yeah. 00:10:17.92\00:10:18.96 Yeah, we're nearly done. Yeah. 00:10:18.99\00:10:21.23 Yeah, you just got the little granules at the bottom there. 00:10:21.26\00:10:23.27 Real good all the way through like so. 00:10:23.30\00:10:26.55 So this is traditional Jamaican? 00:10:26.58\00:10:28.52 It is definitely. Cornmeal pudding. 00:10:28.55\00:10:30.31 I borrow one of those bowls. 00:10:30.34\00:10:31.37 Just gonna put that in. And that is sweet. 00:10:31.40\00:10:35.02 You can add fresh grated coconut or dusted coconut. 00:10:35.05\00:10:40.75 That would be wonderful. Oh, yeah. 00:10:40.78\00:10:43.79 Now we are going to do the coconut milk. 00:10:43.82\00:10:47.44 Now it's a thick coconut milk. Yes. 00:10:47.47\00:10:50.80 Now with coconut milk if you can, 00:10:50.83\00:10:53.73 because this program is shown all around the world, 00:10:53.76\00:10:56.01 if you can grate the coconut, 00:10:56.04\00:10:57.69 and make the coconut milk yourself, 00:10:57.72\00:11:00.26 it tastes wonderful. 00:11:00.29\00:11:01.32 Oh. 00:11:01.35\00:11:02.38 I know, not everybody can do that unfortunately. 00:11:02.41\00:11:05.50 So, for those of us in other country 00:11:05.53\00:11:08.25 we have to use the tinned coconut milk, 00:11:08.28\00:11:10.31 which is fine, which is fine. 00:11:10.34\00:11:11.94 It works out okay. 00:11:11.97\00:11:13.60 So to the coconut milk you add your vanilla. 00:11:13.63\00:11:16.15 All right. 00:11:16.18\00:11:17.21 And then you are going to add your spices. Oh, nice. 00:11:17.24\00:11:20.27 Now you call the all spice 00:11:20.30\00:11:21.33 something different in England. 00:11:21.36\00:11:22.79 Mixed spice. Mixed spice, okay. 00:11:22.82\00:11:24.65 Yes. Okay. 00:11:24.68\00:11:25.74 You just stir that around it had been added to that. 00:11:25.77\00:11:27.90 Oh, it smells the good. 00:11:27.93\00:11:28.96 Because that helps distribute it quicker. 00:11:28.99\00:11:32.06 You want the salt? Yes, we'll add the salt. 00:11:32.09\00:11:34.32 Yummy. You can smell it. 00:11:37.43\00:11:39.12 Right, now we are going to add it to the dry mixture. 00:11:40.39\00:11:46.67 All right. You like so. 00:11:46.70\00:11:47.85 All right, these are going in there. 00:11:47.88\00:11:49.41 Very nice. 00:11:51.15\00:11:52.47 Now we're going to mix this round 00:11:52.50\00:11:55.44 and then we're gonna come to fun part... 00:11:55.47\00:11:57.51 which is going to show you 00:11:59.28\00:12:00.85 how you get the lumps out of the mixture. 00:12:00.88\00:12:03.15 Ah! I was wondering about that. 00:12:03.18\00:12:05.94 I like, I like the bit 00:12:05.97\00:12:07.11 where you get the lumps out of the mixture. 00:12:07.14\00:12:08.57 You like the-- what way? 00:12:08.60\00:12:09.63 I like getting the lumps out of the mixture. Yes. 00:12:09.66\00:12:11.27 It's very therapeutic actually. 00:12:11.30\00:12:12.88 Kind of like kneading bread, 00:12:14.33\00:12:15.54 getting your hands in there and they're working. 00:12:15.57\00:12:17.00 Kind of, yeah. 00:12:17.03\00:12:18.44 So to get the lumps out... 00:12:18.47\00:12:20.81 How do we do? We use the gloves. 00:12:22.05\00:12:25.70 You don't have to as far as your hands 00:12:25.73\00:12:27.67 and nails are clean you don't have to 00:12:27.70\00:12:29.12 but anyone who is British one has to be posh. 00:12:29.15\00:12:31.78 That's right. Oh, yeah. 00:12:32.83\00:12:34.56 One must maintain the British image. Yes. 00:12:34.59\00:12:37.88 And you basically just use your hands. 00:12:37.91\00:12:40.13 Ah! 00:12:40.16\00:12:41.19 To take the lumps out like that. 00:12:41.22\00:12:42.56 Okay, yeah. 00:12:42.59\00:12:43.83 So this is very watery at this part. 00:12:43.86\00:12:45.58 Yes, it is watery. Okay. 00:12:45.61\00:12:47.22 And that's okay. 00:12:48.31\00:12:49.35 Yeah now, it supposed to be. It supposed to be. 00:12:49.38\00:12:50.98 If it's not watery then... There is a problem. 00:12:51.01\00:12:53.53 Add more coconut milk. Okay. 00:12:53.56\00:12:55.75 Yeah, you do that. Nice. 00:12:55.78\00:12:58.65 So it's quite therapy, 00:12:58.68\00:12:59.86 you won't get every single loss lump out. 00:12:59.89\00:13:02.61 No, you won't but you will get most of it out. 00:13:02.64\00:13:05.41 And then the rest will be come out in the baking. 00:13:05.44\00:13:07.53 But what you don't want is 00:13:07.56\00:13:08.65 large lumps of flour that baking into 00:13:08.68\00:13:10.85 and then the flour it tastes... 00:13:10.88\00:13:12.08 And then, you take a bite and you get a whole-- yes. 00:13:12.11\00:13:14.41 Yes, flour of, mouth full of flour 00:13:14.44\00:13:16.29 that's what you don't want-- 00:13:16.32\00:13:17.91 Now see this which I'm sure everybody will enjoy doing. 00:13:17.94\00:13:23.30 So much like massaging the mixture. 00:13:23.33\00:13:26.68 Absolutely. 00:13:26.71\00:13:27.74 So, and then we're going to add the raisins. 00:13:27.77\00:13:31.06 The raisins coming? 00:13:31.09\00:13:32.12 Can you tip the raisins for me, please 00:13:32.15\00:13:33.28 while I get rid of these-- 00:13:33.31\00:13:34.34 There you go. 00:13:36.05\00:13:37.42 Stir those around. 00:13:39.97\00:13:41.93 Now what made you into this type of cooking, 00:13:43.46\00:13:45.04 in the beginning, Susanne? 00:13:45.07\00:13:46.87 Well, traditionally because my country orient is Jamaica. 00:13:46.90\00:13:53.45 Even though you grew up in England. 00:13:53.48\00:13:54.69 I grew up in England. 00:13:54.72\00:13:55.75 But, if you think of--say if your parents had graduated-- 00:13:55.78\00:13:59.18 not graduated, immigrated to say India 00:13:59.21\00:14:02.22 you would still know American recipes, 00:14:02.25\00:14:03.78 because your momma teach you American recipes 00:14:03.81\00:14:05.87 even if spoke the language, 00:14:05.90\00:14:07.06 you were born there, grew up there, 00:14:07.09\00:14:08.28 into school there, you will still have 00:14:08.31\00:14:09.88 some connection with America. 00:14:09.91\00:14:10.94 It's a culture. So it's the same as myself. 00:14:10.97\00:14:12.52 I was born in London, grew up in London 00:14:12.55\00:14:14.18 but my parents are from Jamaican, 00:14:14.21\00:14:15.32 so they taught us and they very patriotic. 00:14:15.35\00:14:17.64 Yeah that's honor. 00:14:17.67\00:14:18.70 So you must know the national anthem, 00:14:18.73\00:14:19.77 you must know the national flower, 00:14:19.80\00:14:21.86 you must know all the dishes, 00:14:21.89\00:14:23.29 you must be able to speak the dialect, 00:14:23.32\00:14:24.74 it was very scary thing. 00:14:24.77\00:14:25.80 That's, wonderful, and what about going more plant based? 00:14:25.83\00:14:28.92 There is a-- I'm in Jamaica-- 00:14:28.95\00:14:30.85 Were you always planned based or? 00:14:30.88\00:14:32.31 No, no. No, okay. 00:14:32.34\00:14:33.53 So what led you on that journey, 00:14:33.56\00:14:35.10 going more plant based. 00:14:35.13\00:14:36.93 It's through church, through the church actually. 00:14:36.96\00:14:40.14 And for me personally in recent years 00:14:40.17\00:14:44.64 I've had to undergo major surgery twice. Okay. 00:14:44.67\00:14:47.70 And I just got to point where there is a saying 00:14:47.73\00:14:50.53 that says genetic loads to gun, "genetics loads the gun, 00:14:50.56\00:14:54.27 but lifestyle pulls the trigger." 00:14:54.30\00:14:56.57 So that the illness that I had, 00:14:56.60\00:14:59.41 that I had to under related to-- 00:14:59.44\00:15:00.47 Were related to genetics you can. 00:15:00.50\00:15:01.76 Yeah, they were related to genetics 00:15:01.79\00:15:03.68 but it was lifestyle perhaps that pulled the trigger. 00:15:03.71\00:15:06.28 We may never know. 00:15:06.31\00:15:07.75 But I thought, you know what? 00:15:07.78\00:15:09.29 This hospital thing is not fun. 00:15:09.32\00:15:11.01 They can't cook. 00:15:12.06\00:15:13.27 It's very boring, so no, thank you. 00:15:13.30\00:15:15.63 Absolutely, so we're put in our bun. 00:15:15.66\00:15:17.88 Yes. 00:15:17.91\00:15:20.04 Then pour it in. Yeah. 00:15:20.07\00:15:23.23 You know all the raisins under there. 00:15:23.26\00:15:25.23 So this must be our topping over here. 00:15:27.53\00:15:29.68 It is, but I'm-- because of time-- 00:15:29.71\00:15:32.81 We're not gonna-- 00:15:32.84\00:15:33.92 Really, what you would do usually 00:15:33.95\00:15:36.07 is bake this for 15 minutes 00:15:36.10\00:15:39.08 so that it's kind of a just starting to set on top. 00:15:39.11\00:15:42.38 And then you may, you mix the sugar, 00:15:42.41\00:15:45.38 the coconut milk, and some butter, 00:15:45.41\00:15:48.02 and then pour it on top, 00:15:48.05\00:15:49.29 so that when it's cooks the top layer 00:15:49.32\00:15:51.21 is kind of like a jellyish, 00:15:51.24\00:15:52.98 softest consistency in the bottom. Nice. 00:15:53.01\00:15:54.61 Oh, that's sounds good. Yes. 00:15:54.64\00:15:57.05 But we're not able to do that now 00:15:57.08\00:15:59.26 but, all you do wait 15 minutes then pour it on top 00:15:59.29\00:16:01.96 and then let it continue cooking. 00:16:01.99\00:16:04.00 And it bakes at 350 Fahrenheit. 00:16:04.03\00:16:06.15 Three fifty Fahrenheit, 00:16:06.18\00:16:07.40 which is 180 Celsius and gas mark four. 00:16:07.43\00:16:11.92 Four. Okay. Yes. 00:16:11.95\00:16:12.99 I'm learning this. 00:16:13.02\00:16:14.45 And that's as simple, that's as simple is it is. 00:16:14.48\00:16:16.88 I love that and we have 00:16:16.91\00:16:18.07 some that already finished here. Yes. 00:16:18.10\00:16:19.37 Put the raisin on top, and I can see, 00:16:19.40\00:16:21.54 the coconut milk and the sugar that you added later, 00:16:21.57\00:16:24.19 you can see that it makes the difference on the top. 00:16:24.22\00:16:26.75 Looks wonderful and I have my own private stash. 00:16:26.78\00:16:29.67 Enjoy. 00:16:30.76\00:16:32.51 Oh, that's great. 00:16:32.54\00:16:36.52 I'm glad you like it. 00:16:36.55\00:16:38.18 I love spices. 00:16:38.21\00:16:39.94 So everybody watching from Jamaican now will got yeah! 00:16:39.97\00:16:43.30 That's why I'll be coming to Jamaica 00:16:45.68\00:16:47.17 and eat your food, it's wonderful. 00:16:47.20\00:16:48.61 Oh, I love it. 00:16:48.64\00:16:50.19 The spices make it. Thank you. 00:16:50.22\00:16:52.58 Very nice, lets go to our next recipe. 00:16:52.61\00:16:54.51 You want to read that. 00:16:54.54\00:16:55.70 Yummy. I like it with the mango. 00:17:19.62\00:17:22.44 I know, it's one of my favorite fruits. 00:17:22.47\00:17:24.62 Is it really? Yes. 00:17:24.65\00:17:25.68 And it is very quick and easy to make. I like that. 00:17:25.71\00:17:27.63 As I try to make all my recipes. 00:17:27.66\00:17:29.73 So basically, you just put the flour-- 00:17:29.76\00:17:31.66 and in the recipe we said all purpose flour, 00:17:31.69\00:17:34.77 it's also known as plain flour. 00:17:34.80\00:17:36.97 Same sort of thing. Okay. 00:17:37.00\00:17:38.03 You want me start, you know? Yeah, the baking powder. 00:17:38.06\00:17:40.35 Yes, please, yeah, go ahead. 00:17:40.38\00:17:42.54 Thank you. 00:17:42.57\00:17:43.88 Cardamom powder, so basically you sift together 00:17:43.91\00:17:46.14 all of the dry ingredients and set that aside. 00:17:46.17\00:17:49.89 And then in another bowl 00:17:49.92\00:17:51.20 we're gonna add the delicious mango puree. 00:17:51.23\00:17:54.95 Now, how did you make a mango puree? 00:17:54.98\00:17:57.06 What did you do that? 00:17:57.09\00:17:58.12 Well, because we're traveling 00:17:58.15\00:18:00.03 and we're in the US we just got the tin. 00:18:00.06\00:18:02.65 But, if I was making this at home 00:18:05.52\00:18:07.80 I would try to disuse mangos. 00:18:07.83\00:18:12.50 In Jamaica one of the mangos 00:18:12.53\00:18:14.50 that you use for stuff like this, 00:18:14.53\00:18:15.74 this is called the Julie mango. 00:18:15.77\00:18:17.87 Because there are different varieties of mangos 00:18:17.90\00:18:19.54 Julie mango is one that you can use 00:18:19.57\00:18:21.86 when you're making a lot of mango juice and so forth. 00:18:21.89\00:18:24.14 But any mango really would be fine. 00:18:24.17\00:18:26.16 So you just peal it? 00:18:26.19\00:18:27.22 You peal it and then just crush, crush the flesh of it. 00:18:27.25\00:18:32.49 You can do that with-- 00:18:32.52\00:18:34.17 The blender or? 00:18:34.20\00:18:35.23 You can do with a fruit processor 00:18:35.26\00:18:36.31 or can just with them a fork or whatsoever. 00:18:36.34\00:18:39.09 Okay, yeah. Yeah. 00:18:39.12\00:18:40.80 So, then you stir all of this together like so. 00:18:40.83\00:18:44.96 Yum. Yum, is right. 00:18:44.99\00:18:47.49 And I like the way when you bake it, 00:18:49.09\00:18:50.62 it comes out that nice kind of yellowy orangey color. 00:18:50.65\00:18:53.65 Yeah! What fabulous? Yeah. 00:18:53.68\00:18:55.72 Like that, so we're gonna move this over here 00:18:55.75\00:18:59.25 and then you're just going to add this. 00:18:59.28\00:19:01.94 Little bits at a time. 00:19:03.71\00:19:04.85 Yeah, so that the flour doesn't go all over the place. 00:19:04.88\00:19:08.58 Yes. That's very smart. 00:19:08.61\00:19:10.61 Just mixed up together. 00:19:11.82\00:19:13.67 Very nice. 00:19:13.70\00:19:15.17 I sometimes make this like for in cupcakes 00:19:15.20\00:19:19.20 I was going to a potluck at church, 00:19:19.23\00:19:21.89 Holloway church in north London. 00:19:21.92\00:19:23.70 They said oh, please. 00:19:23.73\00:19:25.27 Some of them all me Kirly-Sue. 00:19:25.30\00:19:27.36 They say Kirly-Sue, can you bring some cupcakes? 00:19:27.39\00:19:29.81 So I made a cupcake version of this 00:19:29.84\00:19:32.72 and the cupcakes were, 00:19:32.75\00:19:34.28 as they say gone in 60 seconds which is a huge complement. 00:19:34.31\00:19:37.67 They were fabulous. Yes. 00:19:37.70\00:19:39.92 There were people taking their main course 00:19:39.95\00:19:42.34 and then heading straight to the dessert table 00:19:42.37\00:19:44.70 before they finished the main course 00:19:44.73\00:19:46.02 and went up now I'm gonna make sure I get a cupcake. 00:19:46.05\00:19:48.07 I need one of Kirly-Sue's cupcakes 00:19:48.10\00:19:49.69 because we know, Kirly-Sue makes good cupcakes. 00:19:49.72\00:19:51.92 And the kids were all ah, cupcakes, yes. 00:19:51.95\00:19:54.85 Everybody likes cupcakes. 00:19:54.88\00:19:56.01 And you know I love that about your cooking 00:19:56.04\00:19:57.62 and your recipes, Susanne. 00:19:57.65\00:19:58.68 Thank you. 00:19:58.71\00:19:59.74 Because there are things that we would recognize. Yes. 00:19:59.77\00:20:02.47 You know the food-- Familiarity-- 00:20:02.50\00:20:04.10 That we are familiar with that we say, oh I recognize that, 00:20:04.13\00:20:06.43 I would like to eat that but here 00:20:06.46\00:20:07.76 is just a plant based version. 00:20:07.79\00:20:09.49 Yes. So that's great. 00:20:09.52\00:20:10.72 I like that very much. 00:20:10.75\00:20:11.99 Some of them are plant based anyway like, 00:20:12.02\00:20:14.07 the cornmeal pudding we made earlier 00:20:14.10\00:20:17.77 that would be vegan anyway. 00:20:17.80\00:20:19.35 Okay. Yeah. 00:20:19.38\00:20:20.79 Because in Jamaica there is a movement of people 00:20:20.82\00:20:23.91 called "Rastafarians" which is a religion 00:20:23.94\00:20:28.01 and they eat only vegetarian or vegan food. 00:20:28.04\00:20:33.02 And there are some them who don't cook anything, 00:20:33.05\00:20:35.63 they just have raw food. 00:20:35.66\00:20:36.87 They are very healthy and live very long as well. 00:20:36.90\00:20:40.67 So and you just transfer that in to the bowl. 00:20:42.75\00:20:45.27 You want me or you're going to? 00:20:45.30\00:20:46.33 Yes if you could hold it for me it's a quite heavy this bowl 00:20:46.36\00:20:48.09 There you go. Perfect. 00:20:52.28\00:20:55.01 My glamorous assistant taught me. 00:20:55.04\00:20:57.40 It's nice, you got your two sisters coming. 00:20:58.78\00:21:00.49 I have, yes. 00:21:00.52\00:21:01.55 Not one but two this time. 00:21:01.58\00:21:03.57 It's nice. 00:21:05.29\00:21:07.11 Because when you come it's a lot of work 00:21:07.14\00:21:08.45 and then this time Jeremy and Iris came 00:21:08.48\00:21:10.30 and they're in kitchen too and that's a blessing. 00:21:10.33\00:21:12.51 Yes, definitely. That's wonderful. 00:21:12.54\00:21:14.30 Really they are very grateful. 00:21:14.33\00:21:16.27 So we shake it around like that and then that's go in the oven. 00:21:16.30\00:21:20.50 And what's baking, at what temperature? 00:21:20.53\00:21:21.83 It bakes at, 00:21:21.86\00:21:23.50 always I have to have my notes for my US conversion, 00:21:23.53\00:21:27.58 350 degrees Fahrenheit, 00:21:27.61\00:21:29.97 which is a 180 degrees Celsius, and its gas mark four. 00:21:30.00\00:21:35.32 Okay. 00:21:35.35\00:21:36.38 For 35 to 40 minutes 00:21:36.41\00:21:38.11 and then when it's all completed it looks like this. 00:21:38.14\00:21:40.45 And that looks fabulous. 00:21:40.48\00:21:43.78 Yum, yum, yum. 00:21:43.81\00:21:45.26 And you can see's that nice color, rich color as well. 00:21:45.29\00:21:48.13 Oh it's beautiful, I love it. 00:21:48.16\00:21:49.19 Probably if you use fresh mango it has a even better taste. 00:21:49.22\00:21:52.63 If can't and you can only get the pureed one in the tin 00:21:52.66\00:21:56.01 then go with what you've got with. 00:21:56.04\00:21:57.29 You can use the fresh one. 00:21:57.32\00:21:58.35 Oh yes-- It's fabulous. 00:21:58.38\00:21:59.41 Fresh is always best, 00:21:59.44\00:22:00.47 just because the flavor of so much better. 00:22:00.50\00:22:01.81 Yes, it's such a stronger flavor. 00:22:01.84\00:22:03.58 Yes, is less work to do when you use good ingredients. 00:22:03.61\00:22:06.24 It is, that's right. Three fifty, yep. 00:30:31.25\00:30:33.17 Fahrenheit. Fahrenheit. 00:30:33.20\00:30:35.77 Which is 180 Celsius. Yes. 00:30:35.80\00:30:37.49 And Gas mark four. 00:30:37.52\00:30:39.02 I'm getting good at this, if I read it. 00:30:39.05\00:30:40.50 Thank you. 00:30:40.53\00:30:42.13 All right, and that's there you have it. 00:30:42.16\00:30:43.80 And it bakes for half an hour or? 00:30:43.83\00:30:45.32 Yes, and you have to watch it because it can go quite quickly 00:30:45.35\00:30:48.57 depending on size of the pan, you got to end. 00:30:48.60\00:30:51.77 Oh yeah, that's it then you can enjoy, 00:30:51.80\00:30:53.89 cutting into little slices and taste. 00:30:53.92\00:30:55.90 That's the best. 00:30:55.93\00:30:57.19 And we have some that's all finished. 00:30:57.22\00:30:59.00 Here look at that, I love that. 00:30:59.03\00:31:01.96 Would you like to try some? 00:31:01.99\00:31:03.13 You better wait, you want to try some. 00:31:03.16\00:31:05.06 Oh, that's good. 00:31:13.32\00:31:15.08 I'm glad you like it. 00:31:15.11\00:31:16.33 I've made these for different occasions, 00:31:18.53\00:31:21.75 I've also use the same recipe to make cake bites. 00:31:21.78\00:31:25.42 You know cake balls, I think you call them or cake puffs. 00:31:25.45\00:31:30.82 It's like a round cake ball of a cake, 00:31:30.85\00:31:33.98 and it's on a lollipop stick. 00:31:34.01\00:31:35.16 Nice. Veganism is old fashioned. 00:32:06.62\00:32:09.55 That it can be modern, incoherent, 00:32:09.58\00:32:11.00 and relevant as us today. 00:32:11.03\00:32:12.68 Absolutely. 00:32:12.71\00:32:14.66 I like that. 00:32:14.69\00:32:16.00 Very-- this is good. Very, very nice. 00:32:27.25\00:32:28.28 You could have that for parties. 00:32:28.31\00:32:29.51 Definitely. And cake puff. 00:32:29.54\00:32:30.60 Yes, of any special occasion and Christmas, Thanksgiving. 00:32:30.63\00:32:34.73 Whatever the occasion is. 00:32:34.76\00:32:35.90 So now did you any catering with your ministry, or no? 00:32:35.93\00:32:38.44 No, I don't. 00:32:38.47\00:32:39.79 No, I don't yeah. 00:32:39.82\00:32:40.87 Just going out and sharing this. 00:32:40.90\00:32:42.49 Yes, yeah. That's wonderful, 00:32:42.52\00:32:43.96 Because that's a whole different approach. 00:32:43.99\00:32:47.75 It is, right. 00:32:47.78\00:32:48.81 And you have to say, how has God called me 00:32:48.84\00:32:50.71 and God has called you to this specific-- 00:32:50.74\00:32:52.56 Yeah, but not to catering, you know. 00:32:52.59\00:32:55.53 Well, let's go to our next recipe here. 00:32:57.44\00:33:00.06 Yum. 00:33:02.09\00:33:03.14 Yum, that's right. 00:33:03.17\00:33:04.30 Now would you have sweet potato pudding 00:33:30.98\00:33:32.56 in England or in Jamaica? 00:33:32.59\00:33:34.54 I know we got it here. It's Jamaican. 00:33:34.57\00:33:36.10 It's Jamaican. Yes, yes. 00:33:36.13\00:33:38.33 Very nice. 00:33:38.36\00:33:39.39 And I know we have especially southern cooking, 00:33:39.42\00:33:41.26 we have a lot of that sweet potatoes. 00:33:41.29\00:33:42.32 Yes. Yeah. Oh yeah. 00:33:42.35\00:33:43.90 So, the sweet potatoes are pealed and grated 00:33:43.93\00:33:47.81 finely so we can put that into the bowl. 00:33:47.84\00:33:50.30 You done the work for us. 00:33:50.33\00:33:51.48 Yeah. 00:33:51.51\00:33:52.57 Didn't thing you'd want to stand here, 00:33:53.66\00:33:55.16 peel and then grate it so, yeah. 00:33:55.19\00:33:57.45 We've done that already. 00:33:58.50\00:34:00.06 Very nice. Thank you. 00:34:00.09\00:34:01.87 Then you add your coconut milk. 00:34:01.90\00:34:05.80 Obviously if you can make the fresh coconut milk-- 00:34:05.83\00:34:08.30 You would want to grate it and make your own-- 00:34:08.33\00:34:09.53 Grate it. 00:34:09.56\00:34:10.59 Yeah, because how you do it, is you grate the coconut 00:34:10.62\00:34:14.07 and add warm water to it, 00:34:14.10\00:34:17.37 and then squeeze it through a sift 00:34:17.40\00:34:18.77 and then that's the coconut milk 00:34:18.80\00:34:20.10 that will come out through it. 00:34:20.13\00:34:21.75 Okay. Then you add the grated apple. 00:34:21.78\00:34:24.47 Nice. 00:34:24.50\00:34:25.66 And you can use any type of the apple? 00:34:27.50\00:34:29.05 Yeah. Okay. 00:34:29.08\00:34:31.27 Add your raisins. 00:34:31.30\00:34:33.02 So this is really easy. 00:34:35.18\00:34:36.33 You just grated and then you just put it in together. 00:34:36.36\00:34:38.46 I like that. Yep. 00:34:38.49\00:34:39.98 Lots of Jamaican recipes are quite easy, 00:34:41.45\00:34:43.72 we don't like complicated. 00:34:43.75\00:34:45.70 We like to make life's simple for people. 00:34:45.73\00:34:48.12 They're quite easy to follow yeah, in terms of baking. 00:34:48.15\00:34:51.15 I mean, the savory dishes 00:34:51.18\00:34:52.46 now those, those can't be more complicated. 00:34:52.49\00:34:55.50 But you're baking your sweeter dishes? 00:34:55.53\00:34:57.54 Yep. 00:34:57.57\00:34:58.85 All right, you mix all together like so. 00:34:58.88\00:35:03.78 It's very nice. Okay. 00:35:03.81\00:35:05.70 Now you do a lot of social networking-- 00:35:05.73\00:35:08.20 Social media, yes. 00:35:08.23\00:35:09.59 I mean, your ministry, social media, social networking 00:35:09.62\00:35:12.11 and you're tell me about was it a Facebook post that you did? 00:35:12.14\00:35:15.38 Yes. 00:35:15.41\00:35:16.46 I have a Facebook page 00:35:16.49\00:35:18.14 and I also belong to other vegan Facebook pages. 00:35:18.17\00:35:23.75 So I'm asked the question in a Facebook forum to say, 00:35:23.78\00:35:28.00 if you could find out more information about veganism 00:35:28.03\00:35:31.71 besides food, what else would you be interested in? 00:35:31.74\00:35:34.88 So, you posted that question on your Facebook? 00:35:34.91\00:35:36.89 I did, and I've-- And what was the response? 00:35:36.92\00:35:39.48 I had over 100 people respond 00:35:39.51\00:35:43.02 with a whole host of different comments and suggestions. 00:35:43.05\00:35:47.56 But to pick out a few of them 00:35:47.59\00:35:49.24 the most popular responses were, 00:35:49.27\00:35:51.74 they wanted a list of ingredients 00:35:51.77\00:35:53.81 that had animal products in it that it was an obvious, 00:35:53.84\00:35:57.51 that they have-- 00:35:57.54\00:35:58.57 So, like if you buy a prepackage, 00:35:58.60\00:35:59.68 say you're buying a bread or some thing and say-- Yes. 00:35:59.71\00:36:01.81 Is there animal products in this or whatever? 00:36:01.84\00:36:03.23 Yes. Okay. 00:36:03.26\00:36:04.29 One of them for example 00:36:04.32\00:36:06.21 is red food color in Cochineal 00:36:06.24\00:36:08.58 or something like that I don't know what it is called, 00:36:08.61\00:36:10.65 but red fruit in some other countries 00:36:10.68\00:36:12.44 has animal products in it 00:36:12.47\00:36:14.78 and you wouldn't necessarily know that. 00:36:14.81\00:36:17.20 You would not know that at all. No. 00:36:17.23\00:36:18.26 So there is hidden animal products in different things. 00:36:18.29\00:36:21.02 He wanted to list of that. 00:36:21.05\00:36:22.09 Can you give us another example? 00:36:22.12\00:36:23.62 Can you think-- I know I'm putting you on the spot 00:36:23.65\00:36:25.21 but any other food ingredients that would have? 00:36:25.24\00:36:28.10 Pastry, some pastry has pork fat in it. 00:36:28.13\00:36:31.10 So you would need to kind of, 00:36:31.13\00:36:32.69 you have to be an ingredient spy, 00:36:32.72\00:36:35.16 you have to always look at it. 00:36:35.19\00:36:36.55 But sometimes the ingredient may be called 00:36:36.58\00:36:38.88 something that you're not familiar with 00:36:38.91\00:36:42.04 or you may not necessarily know is an animal product. 00:36:42.07\00:36:45.80 For example in the UK lard is pork fat, 00:36:45.83\00:36:49.00 it's a pork product. 00:36:49.03\00:36:50.54 It's an animal product. 00:36:50.57\00:36:51.60 So, if the pastry said lard in it 00:36:51.63\00:36:53.69 then you wouldn't have it obviously 00:36:53.72\00:36:55.31 because it's not vegan. 00:36:55.34\00:36:56.78 So its things like that. 00:36:56.81\00:36:58.53 That was one of them they wanted to know. 00:36:58.56\00:37:00.82 Another one they wanted to know is 00:37:00.85\00:37:02.45 very easy go to recipes. 00:37:02.48\00:37:04.35 So if you're a busy person, you come in from work 00:37:04.38\00:37:06.48 and you want to know what can I cook? 00:37:06.51\00:37:08.43 You can just pull out one of your easy, 00:37:08.46\00:37:11.58 quick and easy go to recipe. 00:37:11.61\00:37:13.11 So they wanted list of those, 00:37:13.14\00:37:15.84 quite of lot of different things 00:37:15.87\00:37:17.86 that they wanted to know as well. 00:37:17.89\00:37:19.82 So, it's was really inspiring 00:37:19.85\00:37:21.39 and it showed there was hunger for knowledge, 00:37:21.42\00:37:23.25 and a lot of people wanted to know 00:37:23.28\00:37:24.83 lots of different things about veganism. 00:37:24.86\00:37:26.72 So, it was, it was really interesting. 00:37:26.75\00:37:28.85 And also people asked about, raising children as vegan. 00:37:28.88\00:37:33.19 I don't have any children. 00:37:33.22\00:37:34.26 But, I have two nieces and nephew. 00:37:34.29\00:37:36.92 So I'm an experienced aunty. 00:37:36.95\00:37:39.60 Yes. 00:37:39.63\00:37:41.94 Absolutely, because probably parents say, okay, 00:37:41.97\00:37:43.91 can my child get enough calcium to build strong bones? Yes. 00:37:43.94\00:37:47.20 Is there enough protein for their body? 00:37:47.23\00:37:49.00 And you think about all these things as a parent 00:37:49.03\00:37:50.73 because you want want's best for your child. 00:37:50.76\00:37:52.54 Yes, absolutely. 00:37:52.57\00:37:54.19 So-- That's great. 00:37:54.22\00:37:55.70 Well, praise God. Yeah. 00:37:55.73\00:37:57.13 So, we're gonna need some help with this. 00:37:57.16\00:37:58.92 All of it can't fit in here 00:37:58.95\00:38:00.21 so we just put some of it in here. 00:38:00.24\00:38:01.86 Hopefully we're not splashing your apron there. 00:38:01.89\00:38:03.66 No but good. 00:38:03.69\00:38:05.03 You put that into here. 00:38:05.06\00:38:06.69 I think that should be enough-- actually we can fit all. 00:38:06.72\00:38:10.03 So you-- would you normally-- well this isn't enough for, 00:38:10.06\00:38:12.66 I was gonna say you could have two loaf pans-- 00:38:12.69\00:38:14.09 You could actually, yeah, or just one big one. 00:38:14.12\00:38:15.96 Oh, one, okay. Yeah. 00:38:15.99\00:38:17.02 Okay, okay. That will be fine. 00:38:17.05\00:38:18.86 Because it's lot of--whole lot left for a second one. 00:38:18.89\00:38:20.09 No, and we didn't put a lot of sugar in there, 00:38:20.12\00:38:22.18 because it's sweet potatoes sweet enough 00:38:22.21\00:38:23.88 and you got raisins in there, 00:38:23.91\00:38:25.22 so that's enough, that's enough. 00:38:25.25\00:38:27.31 Yeah. That's great. 00:38:27.34\00:38:28.50 And then you just bake it at... 00:38:28.53\00:38:30.41 Three fifty, that is our magic number. 00:38:31.56\00:38:33.40 Yeah, 180 and gas mark four. 00:38:33.43\00:38:35.70 That's it And that's it, simple as that. 00:38:36.73\00:38:38.59 And it's bakes for an hour or-- 00:38:38.62\00:38:40.58 Yes, it needs to bake for about an hour, 00:38:40.61\00:38:42.79 hour 15 minutes depending on what type of oven you have 00:38:42.82\00:38:46.01 because you know, different ovens 00:38:46.04\00:38:47.92 bake slightly differently. 00:38:47.95\00:38:50.04 All ovens are not credited equal. 00:38:50.07\00:38:51.60 No, they are not. 00:38:51.63\00:38:52.66 So, how would you check your oven to know, 00:38:52.69\00:38:54.62 okay as my oven comparable to someone else's oven? 00:38:54.65\00:38:57.33 Do you know what I'm saying? 00:38:57.36\00:38:58.39 Yeah, that would be difficult 00:38:58.42\00:38:59.63 because you have to use the oven to find it now. 00:38:59.66\00:39:02.21 So the main thing is once you are baking this, 00:39:02.24\00:39:04.59 is to just keep an eye on it. 00:39:04.62\00:39:05.96 So, after an hour check it, 00:39:05.99\00:39:08.85 put a toothpick in the middle see if it comes out clean, 00:39:08.88\00:39:11.54 you know, and then just test check if it isn't, 00:39:11.57\00:39:14.82 then give it another 10 minutes or 15 minutes 00:39:14.85\00:39:17.02 and then it should be done, fine. 00:39:17.05\00:39:18.14 Would you be an advocate, 00:39:18.17\00:39:19.67 you know, they say you should put a temperature, 00:39:19.70\00:39:21.90 you should check and see if my oven 00:39:21.93\00:39:24.43 actually say's this is 350 say Fahrenheit 00:39:24.46\00:39:27.03 and then I look at the temperature 00:39:27.06\00:39:28.58 is really at 350 or not 00:39:28.61\00:39:29.94 are you an advocate of that, or not? 00:39:29.97\00:39:31.44 My-- yes I'm. 00:39:31.47\00:39:33.26 In my experience usually the oven temperature 00:39:33.29\00:39:37.07 on the oven doesn't compare with the-- 00:39:37.10\00:39:39.52 if you put the oven thermometer in the oven. 00:39:39.55\00:39:42.24 I have a oven thermometer at home. 00:39:42.27\00:39:44.14 Because the temperature that the oven tells you it's that 00:39:44.17\00:39:47.59 usually differ some what to the actual temperature 00:39:47.62\00:39:50.64 in there oven, if you put a oven thermometer in there 00:39:50.67\00:39:53.18 which you could buy them. 00:39:53.21\00:39:54.24 Which would be, which would be higher the oven thermometer 00:39:54.27\00:39:55.99 or the actual temperature on the oven? 00:39:56.02\00:39:57.71 Not necessary higher, 00:39:57.74\00:39:58.81 which one will be more accurate would be the-- 00:39:58.84\00:40:00.66 Okay. 00:40:00.69\00:40:01.77 The thermometer inside the oven 00:40:01.80\00:40:04.04 because that called lie reading. 00:40:04.07\00:40:05.64 Absolutely. 00:40:05.67\00:40:06.70 Probably they do both a decent work. 00:40:06.73\00:40:08.30 Yes, so I would go with that. 00:40:09.75\00:40:10.90 But they are not always accurate 00:40:10.93\00:40:11.96 what's on your, on your knob. 00:40:11.99\00:40:13.26 No, they're not. Okay. 00:40:13.29\00:40:14.32 No they are not and particularly with baking, 00:40:14.35\00:40:15.38 baking is a science 00:40:15.41\00:40:16.44 and you need to be as accurate as possible. 00:40:16.47\00:40:18.37 Yes. Yes. 00:40:18.40\00:40:19.74 And we got a final product here, that's looks wonderful. 00:40:19.77\00:40:22.75 Yeah, thank you. 00:40:22.78\00:40:24.08 Yummy, very nice, 00:40:24.11\00:40:25.70 and we got the sweet potatoes in the side. 00:40:25.73\00:40:27.76 That's great. 00:40:29.23\00:40:30.60 Now we did not do the topping, did we? 00:40:30.63\00:40:32.75 We did it. 00:40:32.78\00:40:33.81 Didn't we read a recipe for the topping in the beginning? 00:40:33.84\00:40:34.87 Yes, we did, wait till you make it bake 00:40:34.90\00:40:38.43 for 15 minutes first of all 00:40:38.46\00:40:40.41 and then you mix the coconut milk, 00:40:40.44\00:40:42.63 the sugar, and a little bit of raisins 00:40:42.66\00:40:44.10 and then you put it on top. 00:40:44.13\00:40:45.16 Because when you make it bake first 00:40:45.19\00:40:46.53 and you make it a little bit solid it's sets a bit. 00:40:46.56\00:40:49.32 We did that with the cornmeal. 00:40:49.35\00:40:50.49 Yes, the similar thing. The sime-- okay. 00:40:50.52\00:40:52.44 Yes, and you do that. 00:40:52.47\00:40:53.62 And then it's comes out wonderful. 00:40:53.65\00:40:55.48 Oh, yeah. 00:40:55.51\00:40:56.54 Because that would give it that extra flavor on the top. 00:40:56.57\00:40:58.73 Yes, yes.
