Sure. 00:10:41.57\00:10:44.01 Tell us difference, if you would. 00:10:44.04\00:10:45.37 Sure. 00:10:45.41\00:10:46.74 Well, type 1 diabetics 00:10:46.78\00:10:48.11 typically do not produce insulin 00:10:48.14\00:10:49.68 from their pancreas. 00:10:49.71\00:10:51.31 And when that happens, 00:10:51.35\00:10:52.68 their blood sugars tend to rise. 00:10:52.71\00:10:55.12 And there is several difference ways we can check for that. 00:10:55.15\00:10:59.25 One of the test we do to check 00:10:59.29\00:11:00.82 for that is something called a C-peptide. 00:11:00.86\00:11:03.79 This is part of the insulin molecular 00:11:03.83\00:11:07.53 that is cut off as it is produced 00:11:07.56\00:11:10.13 and we can tested in your blood 00:11:10.17\00:11:11.63 to see if you producing insulin. 00:11:11.67\00:11:13.60 They do something in urine as well or just blood? 00:11:13.64\00:11:17.61 Well, this particular test is a blood test. 00:11:17.64\00:11:19.94 You can get some information from urine test as well. 00:11:19.97\00:11:23.98 She was told by her Endocrinologist 00:11:24.01\00:11:27.18 that is a type 1. 00:11:27.22\00:11:29.62 Now type 1 diabetes is hard to treaty with out insulin 00:11:29.65\00:11:34.06 because there not producing insulin 00:11:34.09\00:11:36.36 from their pancreas. 00:11:36.39\00:11:38.26 Type 2 diabetes, on the other hand, 00:11:38.29\00:11:40.30 is a different type of illness, 00:11:40.33\00:11:44.27 where people tend to produced insulin 00:11:44.30\00:11:47.57 but it is not working the way it supposed to. 00:11:47.60\00:11:50.34 Right. 00:11:50.37\00:11:51.71 And so they have insulin, insulin is not there problem, 00:11:51.74\00:11:54.31 they have something we called insulin resistance. 00:11:54.34\00:11:58.28 And insulin resistance makes your body 00:11:58.31\00:12:01.15 have to produce more insulin then its typical 00:12:01.18\00:12:03.82 and makes your body not react to it the way it should, 00:12:03.85\00:12:06.86 and so your blood sugar is tend to rise 00:12:06.89\00:12:08.46 as well with that. 00:12:08.49\00:12:10.06 So she was very concerned about 00:12:10.09\00:12:12.06 whether she was a type 1 or type 2 00:12:12.09\00:12:13.63 because the treatment is different. 00:12:13.66\00:12:16.00 And her doctor told her, 00:12:16.03\00:12:17.63 she make have to be on insulin her rest of her life. 00:12:17.67\00:12:20.47 So she came here, 00:12:20.50\00:12:22.30 she brought some of our lab work with her, 00:12:22.34\00:12:24.01 we look through that, 00:12:24.04\00:12:25.37 we did some lab work of our own. 00:12:25.41\00:12:26.74 We started examining and checking her. 00:12:26.78\00:12:28.74 And from all the evidence that I can find, 00:12:28.78\00:12:32.21 it looks like by God's grace 00:12:32.25\00:12:33.58 she is a type 2 and not a type 1. 00:12:33.62\00:12:36.18 Which in her case is a rich blessing 00:12:36.22\00:12:38.25 because its a more conventional type of treatment. 00:12:38.29\00:12:43.36 Where is on medication when she got here, 00:12:43.39\00:12:45.33 I didn't ask? 00:12:45.36\00:12:46.70 She actually was not. She took a lot of supplements. 00:12:46.73\00:12:50.67 But her doctor wanted her to start medicine 00:12:50.70\00:12:53.67 and she choose not to until she came to see us. 00:12:53.70\00:12:56.44 Right, I remembered that. Which was a good decision. 00:12:56.47\00:12:59.57 Now, when she got here, you did an A1C? 00:12:59.61\00:13:03.95 We did not do a haemoglobin A1C 00:13:03.98\00:13:06.25 because she had one done before. 00:13:06.28\00:13:08.35 And it was what? 00:13:08.38\00:13:10.45 I don't remembered exactly, I'm sorry. 00:13:10.49\00:13:11.92 But it was... 00:13:11.95\00:13:13.29 It was elevated. Elevated. 00:13:13.32\00:13:14.66 Yeah. 00:13:14.69\00:13:16.02 And her blood sugars, here for us are also elevated. 00:13:16.06\00:13:19.96 Her fasting blood sugar would put her in the category 00:13:20.00\00:13:23.60 of being a border line diabetic. 00:13:23.63\00:13:29.37 And her fasting numbers have been you know... 00:13:29.40\00:13:31.81 Between a 100 and like, a 115 00:13:31.84\00:13:35.74 Yeah, that's not really not bad. 00:13:35.78\00:13:37.11 No, its not very bad. 00:13:37.15\00:13:38.48 So, will the lifestyle that she is now learning, 00:13:38.51\00:13:43.72 progressively lower the fasting glucose? 00:13:43.75\00:13:48.66 Yes, it will. 00:13:48.69\00:13:50.03 In fact, we've seen that happen already. 00:13:50.06\00:13:52.46 In just two weeks she's been here. 00:13:52.49\00:13:53.83 In two weeks we had two blood test drawn 00:13:53.86\00:13:56.00 and if I recall the numbers correctly, 00:13:56.03\00:13:58.40 her fasting blood sugar dropped by about 10 points. 00:13:58.43\00:14:03.34 I see. Yeah. Praise the Lord. 00:14:03.37\00:14:04.71 And she is a believer, she's just happy a clam, 00:14:04.74\00:14:07.91 I mean, a carrot. 00:14:07.94\00:14:09.41 That's right. 00:14:09.44\00:14:11.01 And she's just really excited about this program. 00:14:11.05\00:14:14.12 Yes, yes. 00:14:14.15\00:14:15.48 And she's this type that will stick to it, I feel. 00:14:15.52\00:14:20.72 I really do too. 00:14:20.76\00:14:22.09 And you know, I have told all of them, 00:14:22.12\00:14:24.06 but in particularly I have told her that 00:14:24.09\00:14:27.20 from what we're seeing the type of disease 00:14:27.23\00:14:29.33 that she has, she didn't start on medicine, 00:14:29.36\00:14:32.43 which is fine in her case 00:14:32.47\00:14:34.47 because she's going to treat it with a different medicine. 00:14:34.50\00:14:39.27 Amen. 00:14:39.31\00:14:40.64 Now you're suppose to ask me, what the other medicine? 00:14:40.68\00:14:43.65 I kind of know the answer. I know you know the answer. 00:14:43.68\00:14:45.31 But go ahead and tell, what's the other medicine? 00:14:45.35\00:14:48.35 The other medicine is walking. Amen. 00:14:48.38\00:14:51.35 I've our patients 00:14:51.39\00:14:52.72 that they need to get out and walk. 00:14:52.75\00:14:54.82 And when they walk, 00:14:54.86\00:14:56.42 it replaces the medicine 00:14:56.46\00:14:58.39 that other doctors may want to put them on 00:14:58.43\00:15:01.00 or may have put them on in the past. 00:15:01.03\00:15:02.66 Amen. 00:15:02.70\00:15:04.03 And you know, she is been taking that to heart, 00:15:04.07\00:15:05.90 she is been walking, doing well, 00:15:05.93\00:15:08.44 and her blood sugars have just been continually coming down. 00:15:08.47\00:15:11.64 Doc, we're running out of time. 00:15:11.67\00:15:13.01 Thank you so much for coming in. 00:15:13.04\00:15:15.48 We know you are a busy man. 00:15:15.51\00:15:17.88 But we'll be talking to you soon again. 00:15:17.91\00:15:19.38 Sounds good. 00:15:19.41\00:15:20.75 Friends, don't go away because we have a recipe just for you. 00:15:20.78\00:15:25.55 Hi, folks. Welcome at NEWSTART Kitchen. 00:15:29.02\00:15:32.06 My name is Radek. 00:15:32.09\00:15:33.43 And I'm going to present today 00:15:33.46\00:15:34.90 how to make a winter squash soup. 00:15:34.93\00:15:39.90 Winter squash, it's some excellent kind of vegetable. 00:15:39.93\00:15:44.37 Any squash is good, 00:15:44.41\00:15:45.74 but I like the winter squash better 00:15:45.77\00:15:47.64 because of its color, it's nice and orange. 00:15:47.68\00:15:51.05 Actually it's so good 00:15:51.08\00:15:53.48 that a lot of medical professionals 00:15:53.52\00:15:57.15 considered squash one of their super-foods. 00:15:57.19\00:16:01.19 So, you take this squash and I show you how I clean it. 00:16:01.22\00:16:05.33 First, you know, before we will do our recipe, 00:16:05.36\00:16:10.17 you need some really nice winter squash. 00:16:10.20\00:16:12.27 This one actually, 00:16:12.30\00:16:13.64 it's from our farm here at Weimar. 00:16:13.67\00:16:17.41 And people always have a problem to clean the seeds. 00:16:17.44\00:16:21.48 And what I kind of find out was to use a ice-creams scoop. 00:16:21.51\00:16:27.05 This one is good size. 00:16:27.08\00:16:28.48 So what you do, you cut the winter squash in half 00:16:28.52\00:16:33.36 and then you take the scoop 00:16:33.39\00:16:35.26 and you kind of cut it. 00:16:35.29\00:16:40.80 And look at, its perfectly clean. 00:16:40.83\00:16:43.83 I scoop up all the seeds out. 00:16:43.87\00:16:46.30 We'll do the same to the other half. 00:16:46.33\00:16:49.80 See, perfectly. 00:16:53.27\00:16:55.08 No seeds left, they all will end up in the garbage. 00:16:55.11\00:16:59.85 All right, I already ready clean some here. 00:16:59.88\00:17:01.95 You know, you can just use regular peeler 00:17:01.98\00:17:05.12 and you can clean them like a this. 00:17:05.15\00:17:07.82 Then what you need, you need onions. 00:17:07.86\00:17:10.79 And for the recipe you need like one medium onion. 00:17:10.83\00:17:16.77 And I'll show you a technique that I do, 00:17:16.80\00:17:20.20 how to cut onions 00:17:20.24\00:17:22.57 so you don't really cut your fingers. 00:17:22.60\00:17:25.87 Onions, they make us cry. 00:17:25.91\00:17:28.94 It's always a hassle when we do onions, 00:17:28.98\00:17:33.55 but they no need to make us crying 00:17:33.58\00:17:35.05 because we cut our fingers. 00:17:35.08\00:17:37.79 And so what I do, I cut the onion just like this, 00:17:37.82\00:17:42.36 this one got little tough skin on the top, 00:17:42.39\00:17:44.53 so if you feel onion with the tough skin, 00:17:44.56\00:17:47.00 it's usually the first layer, 00:17:47.03\00:17:48.96 just kind of peel it off and throw it away. 00:17:49.00\00:17:53.00 So you cut it but you don't cut it all the way. 00:17:53.03\00:17:55.20 You always leave little bit left that is uncut. 00:17:55.24\00:18:00.31 And then, you just cut like this. 00:18:00.34\00:18:03.88 Always remember, this is kind of something, 00:18:03.91\00:18:05.61 it's a secret from the chefs. 00:18:05.65\00:18:07.55 In order not to cut your fingers, 00:18:07.58\00:18:09.18 we kind of bent your fingers this way, 00:18:09.22\00:18:11.69 just like you would lie to grab something with them. 00:18:11.72\00:18:14.39 And that's you know, the way, 00:18:14.42\00:18:15.76 that's the position of your fingers 00:18:15.79\00:18:17.23 you know, on the onion. 00:18:17.26\00:18:18.89 And what ever you cut, you know, 00:18:18.93\00:18:20.26 always do it this way, because if you do it 00:18:20.30\00:18:22.43 and then when you use your knife, 00:18:22.46\00:18:24.37 and the knife is angled a little bit, 00:18:24.40\00:18:26.94 you know, in that direction. 00:18:26.97\00:18:28.60 Then you can not cut your fingers, 00:18:28.64\00:18:30.21 there's no way. 00:18:30.24\00:18:32.04 And you can go even fast like this fancy, 00:18:32.07\00:18:35.04 you know, cooks, they go fast, fast, fast 00:18:35.08\00:18:37.21 and they never cut there fingers, 00:18:37.25\00:18:39.68 because the knife is nicely sliding 00:18:39.71\00:18:44.32 on the surface of their skin. 00:18:44.35\00:18:46.89 All right, so we cut the onions 00:18:46.92\00:18:49.52 and we put then in the pot, right here. 00:18:49.56\00:18:53.03 And we'll cut also the squash. 00:19:05.24\00:19:09.48 And we're going to cook the squash with the onions. 00:19:09.51\00:19:12.75 So it doesn't need to be like, really tiny small basics. 00:19:12.78\00:19:16.32 So it can be bigger dices, kind of like this. 00:19:16.35\00:19:21.76 And again, watch your fingers, 00:19:21.79\00:19:25.06 make sure the hand is that supporting the vegetable, 00:19:25.09\00:19:29.56 the squash, the fingers are bent 00:19:29.60\00:19:32.30 and the knife is slightly away from the fingers. 00:19:32.33\00:19:35.77 All right, this is the last piece. 00:19:45.31\00:19:47.28 And we'll just join these vegetables together. 00:19:55.66\00:20:01.50 And we'll just add a little bit water. 00:20:12.94\00:20:16.81 Again, this is a NEWSTART Kitchen, folks. 00:20:16.85\00:20:19.71 So we're not using any oil. 00:20:19.75\00:20:22.72 But water works actually pretty good, 00:20:22.75\00:20:25.82 just like, like the oil does 00:20:25.85\00:20:28.02 it can actually really make the veggies nice and soft, 00:20:28.06\00:20:31.16 just be careful, don't burn it. 00:20:31.19\00:20:33.40 And we will cook it for like, five minutes 00:20:33.43\00:20:37.63 till it's nice and soft. 00:20:37.67\00:20:41.90 All right let see. 00:20:41.94\00:20:43.57 Oh, yeah, 00:20:43.61\00:20:45.21 looks like the squash is done nice and soft. 00:20:45.24\00:20:49.64 So we'll put it here in our blender 00:20:53.85\00:21:00.29 to make some joyful noise. 00:21:00.32\00:21:02.56 And we'll blend it up. 00:21:07.86\00:21:09.20 For that, we'll need a little bit water. 00:21:09.23\00:21:10.57 There we go. 00:21:18.21\00:21:19.54 All right, its nice and smooth. 00:21:40.56\00:21:44.90 Look at that color, nice and orange. 00:21:44.93\00:21:47.97 All right, now put it back in the pot that we used for, 00:21:48.00\00:21:54.44 early that we used for the squash to be cooked. 00:21:54.48\00:22:00.32 And we still needs something to blend up in blender, 00:22:00.35\00:22:06.49 and that's our next ingredients, 00:22:06.52\00:22:08.89 a cashew cream. 00:22:08.92\00:22:10.73 Again, folks, you now, here at NEWSTART, 00:22:10.76\00:22:13.63 we don't use fat, that is, like an oil. 00:22:13.66\00:22:18.07 So in order to make it nice and smooth I'm using cashews. 00:22:18.10\00:22:23.20 So what you need, you need maybe like one cup of cashews. 00:22:23.24\00:22:27.48 And about like 00:22:27.51\00:22:30.15 a one cup of water. 00:22:30.18\00:22:36.72 And you put it in them blender. 00:22:36.75\00:22:38.09 And you'll blend it up. 00:22:46.56\00:22:49.50 And he has to be there for like, 00:22:49.53\00:22:52.17 may be three minutes to it be a really, thoroughly blended. 00:22:52.20\00:22:57.41 So it becomes kind of like a cream. 00:22:57.44\00:22:59.87 Otherwise, you know, 00:22:59.91\00:23:01.24 you will taste little pieces of nuts 00:23:01.28\00:23:02.64 and you don't want it in your soup. 00:23:02.68\00:23:04.05 So we'll blend it for like, three minutes. 00:23:04.08\00:23:06.65 All right, the cashew cream is done. 00:23:20.66\00:23:23.87 And that goes into the soup. 00:23:25.53\00:23:27.90 And now is the fun part, seasonings. 00:23:33.07\00:23:37.05 We already put onions there 00:23:38.61\00:23:40.08 and onions are the most important seasonings. 00:23:40.12\00:23:43.25 If you would be standard somewhere 00:23:43.28\00:23:45.15 that you cannot have anything else 00:23:45.19\00:23:47.16 besides onions and garlic, you're fine, 00:23:47.19\00:23:50.33 because garlic and onions, every chef would tell you, 00:23:50.36\00:23:53.29 that's the basic for seasoning any food, 00:23:53.33\00:23:55.26 and anything will taste good. 00:23:55.30\00:23:56.87 But besides the onions, 00:23:56.90\00:23:58.77 we'll put something else there too. 00:23:58.80\00:24:00.84 So this is basil, that's another ingredient 00:24:00.87\00:24:03.51 to make it really nice, tasting good. 00:24:03.54\00:24:06.71 This is cumin. 00:24:06.74\00:24:08.08 And coriander. 00:24:11.31\00:24:13.08 Of course, we can not forget garlic powder. 00:24:16.95\00:24:20.49 It would not taste right. 00:24:20.52\00:24:23.56 And the last ingredients is Bragg's aminos. 00:24:23.59\00:24:27.76 Bragg's aminos, it's a really good substitute for soy sauce. 00:24:32.73\00:24:36.67 It's much healthy than a regular soy sauce 00:24:36.71\00:24:40.98 because its not fermented. 00:24:41.01\00:24:42.74 And flavor, I actually like the better than soy sauce 00:24:42.78\00:24:47.65 because it's more pronounce, finer than the soy sauce, 00:24:47.68\00:24:51.82 it's not so strong. 00:24:51.85\00:24:55.66 All right, 00:24:55.69\00:24:57.69 and now we'll just use the spoon here 00:24:57.73\00:25:03.13 and kind of mix it together. 00:25:03.16\00:25:04.50 And the soup has now, because of the cashews, 00:25:07.64\00:25:14.44 nice creamy color. 00:25:14.48\00:25:18.01 But it's still kind of thick. 00:25:18.05\00:25:20.42 Some people like it that way, 00:25:20.45\00:25:22.08 but I want little bit more creaminess 00:25:22.12\00:25:26.52 and not to heavy so thick. 00:25:26.55\00:25:28.36 So I'll add some soy milk 00:25:28.39\00:25:31.13 to make it a little bit thinner. 00:25:31.16\00:25:32.73 Now, when you're using soy milk for cooking, 00:25:36.46\00:25:40.34 always use soy milk doesn't have any sweetener inside. 00:25:40.37\00:25:43.97 Don't get actually fooled by saying plain, 00:25:44.01\00:25:48.04 because the milk, even when it says plain, 00:25:48.08\00:25:51.25 it still has high amount of sugar. 00:25:51.28\00:25:53.68 And sometimes, some brand even put the milk flavor. 00:25:53.72\00:25:57.45 So don't get foolish by that. 00:25:57.49\00:26:00.89 Always look for the sign Unsweetened. 00:26:00.92\00:26:03.39 All right. 00:26:07.93\00:26:11.00 And we will turn it on. 00:26:11.03\00:26:14.47 I'll put it on low so we won't burn it. 00:26:14.50\00:26:17.51 And we cook it for about like 10 minutes 00:26:21.68\00:26:25.01 and the soup is done. 00:26:25.05\00:26:26.38 I can smell the really nice smell. 00:26:30.79\00:26:34.36 Oh, yes, its done, its ready to be served. 00:26:34.39\00:26:38.09 Okay. 00:26:41.50\00:26:42.83 And we'll put it in this plate. 00:26:51.24\00:26:53.94 This soup has really color, 00:26:53.98\00:26:56.11 it has really nice Mediterranean flavor. 00:26:56.14\00:26:59.65 The best way, that's the way how I like it 00:27:03.79\00:27:06.52 is when it's served with croutons. 00:27:06.55\00:27:10.59 So whatever branch you like its fine, 00:27:10.63\00:27:14.93 you can garnish it with parsley. 00:27:14.96\00:27:18.10 And viola, that nice dinner soup is ready. 00:27:19.03\00:27:23.91 Well, thank you, folks for watching us. 00:27:23.94\00:27:27.94 And come back. 00:27:27.98\00:27:29.31 Well,
