Yes. 00:04:39.91\00:04:42.44 I feel like my lifestyle changed. 00:04:42.48\00:04:44.71 I feel a lot better physically, mentally, emotionally. 00:04:44.75\00:04:49.72 And I feel empowered that I'll be able 00:04:49.75\00:04:52.85 to move on into the next, you know, 20 years of my life. 00:04:52.89\00:04:56.16 And so that's very hopeful for me. 00:04:56.19\00:04:58.13 And the reason that I feel that way 00:04:58.16\00:04:59.89 is from what I've learned, 00:04:59.93\00:05:02.06 from Dr. Gallant, from Dr. Lukens. 00:05:02.10\00:05:05.23 Dr. Lukens has especially, spent a lot of time with me, 00:05:05.27\00:05:08.17 you know, at dinner and breakfast. 00:05:08.20\00:05:10.67 I mean, I felt like I had my own special, 00:05:10.71\00:05:13.38 you know, consultant with me. 00:05:13.41\00:05:15.31 Seriously, I mean, it's been amazing, yeah. 00:05:15.34\00:05:17.35 It's been, I feel very, very fortunate. 00:05:17.38\00:05:18.95 Now is Dr. Lukens your doctor? No, no. He's not. 00:05:18.98\00:05:20.98 Is Dr. Gallant? Yes, yes. 00:05:21.02\00:05:22.95 So you go to see Dr. Gallant for exams and-- 00:05:22.98\00:05:26.19 I do. Yeah. And so on. 00:05:26.22\00:05:27.82 But Dr. Lukens has been there 00:05:27.86\00:05:30.73 eating lunch with you and breakfast. 00:05:30.76\00:05:33.40 Well, that's as Dr. Gallant as he. 00:05:33.43\00:05:35.60 But I approached Dr. Lukens 00:05:35.63\00:05:37.50 one evening after one of his talks 00:05:37.53\00:05:39.27 and you know, just started asking him 00:05:39.30\00:05:40.97 all these different questions 00:05:41.00\00:05:42.34 and you know, now you can't get away from here, 00:05:42.37\00:05:43.97 of course, you know. 00:05:44.01\00:05:45.34 He probably tries to run when he sees me, I don't know. 00:05:45.37\00:05:47.11 But, so no, he spends a lot of extra time with me 00:05:47.14\00:05:51.21 and I'm very appreciative of that. 00:05:51.25\00:05:52.71 You know, last night, in fact, he gave me 00:05:52.75\00:05:54.45 some extra articles of things 00:05:54.48\00:05:56.02 that he had reference to me in talking. 00:05:56.05\00:05:59.05 And so he mentioned also, and I saw it on, 00:05:59.09\00:06:03.19 throughout our trainings about different books 00:06:03.22\00:06:04.99 that are written by Dr. Esselstyn. 00:06:05.03\00:06:06.80 And I've read both of those since I've been here. 00:06:06.83\00:06:08.83 And that really solidified the hope for me. 00:06:08.86\00:06:12.97 Yeah, Dr. Esselstyn is quite a guy. 00:06:13.00\00:06:16.04 He's come here and spoken to our guest and our staff 00:06:16.07\00:06:20.31 and it's remarkable what he's done 00:06:20.34\00:06:23.11 and what he's taught us to do. 00:06:23.14\00:06:27.52 I remember him saying 00:06:27.55\00:06:28.88 and I'm gonna kind of paraphrase. 00:06:28.92\00:06:31.29 He said the chances of a stroke or a heart attack 00:06:31.32\00:06:36.42 when you are a strict vegan are slim to none. 00:06:36.46\00:06:38.99 Yeah, exactly. Yeah. 00:06:39.03\00:06:40.76 So whenever I hear those words, I refrain from excess fat. 00:06:40.80\00:06:46.13 Listen, I'm gonna put that on my refrigerator. 00:06:46.17\00:06:48.20 Good for you. I'm not kidding. 00:06:48.24\00:06:50.17 We just, the constant reminder, you know, whatever it takes to, 00:06:50.21\00:06:54.64 you know, scare you straight, 00:06:54.68\00:06:56.01 if you will, that's what we need. 00:06:56.04\00:06:57.38 Or you know, give you hope to keep you straight. 00:06:57.41\00:06:59.95 Yeah. Yeah. 00:06:59.98\00:07:01.32 You know, I think I told you that I had a five way bypass. 00:07:01.35\00:07:04.79 Absolutely. Yeah. 00:07:04.82\00:07:06.15 And I've never gone back to the cardiologist 00:07:06.19\00:07:09.29 since coming here 00:07:09.32\00:07:11.13 to see if there is any clogged arteries. 00:07:11.16\00:07:14.80 I'm hopeful and feeling that 00:07:14.83\00:07:17.83 I'll live a long and healthy life. 00:07:17.87\00:07:21.44 But it is, I won't say but. 00:07:21.47\00:07:24.04 And it is essential for me as well as you 00:07:24.07\00:07:29.28 and other people watching. 00:07:29.31\00:07:30.65 I want you to listen to this carefully 00:07:30.68\00:07:32.81 that we avoid excess fats. 00:07:32.85\00:07:37.22 Absolutely. 00:07:37.25\00:07:38.59 I talked to a lady the other day, 00:07:38.62\00:07:40.96 yesterday in fact. 00:07:40.99\00:07:44.89 Excuse me, it was an email. 00:07:44.93\00:07:47.50 "I don't know what's happened. 00:07:47.53\00:07:48.96 I've gained 20 pounds 00:07:49.00\00:07:51.03 since I've left the NEWSTART program." 00:07:51.07\00:07:53.23 Yikes. 00:07:53.27\00:07:54.60 Well, I know what's happened. 00:07:54.64\00:07:55.97 What do you think has happened? What she ate. 00:07:56.00\00:07:57.67 Well, the Vegenaise, it's vegan but it's fat. 00:07:57.71\00:08:02.98 Hummus, well, it's vegan but it's fat. 00:08:03.01\00:08:06.95 "Well, I only use a little bit of olive oil." 00:08:06.98\00:08:09.42 But it's fat. 00:08:09.45\00:08:11.19 And my good friend 00:08:11.22\00:08:12.72 who is in the studio with us right now, Paul Zenk, 00:08:12.75\00:08:16.59 he says, "Do you know how many olives it takes 00:08:16.62\00:08:18.76 to make a teaspoon of olive oil?" 00:08:18.79\00:08:21.26 A lot. 00:08:21.30\00:08:22.86 And when would you sit down and eat nothing but olives? 00:08:22.90\00:08:27.57 You just can't do it. 00:08:27.60\00:08:28.94 That's too much for the body. 00:08:28.97\00:08:30.44 Well, and one of the messages that I took away too 00:08:30.47\00:08:32.97 for someone like myself, a cardiac patient 00:08:33.01\00:08:35.01 is to avoid all nuts. 00:08:35.04\00:08:37.55 Also, it's recommended avocados. 00:08:37.58\00:08:39.61 So you know, for me, it's not a problem really. 00:08:39.65\00:08:43.22 I mean, I don't crave nuts obviously 00:08:43.25\00:08:45.09 and I'm not a saucy person so you know, 00:08:45.12\00:08:47.86 it takes a lot of those to make those things. 00:08:47.89\00:08:49.72 So I feel very strong, you know, 00:08:49.76\00:08:52.63 leaving here that I'll be able to eat just fine. 00:08:52.66\00:08:54.53 I have my shopping list ready, I have all my recipes flagged. 00:08:54.56\00:08:57.83 You know, my husband is ready, we're ready to go. 00:08:57.87\00:09:00.07 Yeah, and you're gonna be a good companion 00:09:00.10\00:09:03.17 for our buddy Bob. 00:09:03.20\00:09:04.54 Yeah. Oh, that's wonderful. 00:10:52.48\00:10:54.42 That will make life easier, I assure you. 00:10:54.45\00:10:55.98 It sure will. Yeah. I would love to. 00:13:34.38\00:13:35.71 You know, when Nancy came, she didn't have that same glow. 00:13:35.74\00:13:39.51 No. She didn't. 00:13:39.55\00:13:40.88 She was not feeling as well as she wanted to 00:13:40.92\00:13:45.35 and she was looking to come here 00:13:45.39\00:13:47.62 and looking to experience this program. 00:13:47.66\00:13:51.36 And just before the time came, 00:13:51.39\00:13:54.10 she had an accident, a fall and broke her ankle. 00:13:54.13\00:13:57.50 Ouch. 00:13:57.53\00:13:58.87 So that really made it hard for her to be here 00:13:58.90\00:14:00.94 and be as involved with the exercise 00:14:00.97\00:14:03.87 and activities that we do here. 00:14:03.91\00:14:06.04 But Nancy is a real trooper. 00:14:06.07\00:14:07.98 And she really committed herself 00:14:08.01\00:14:10.51 to the program 00:14:10.55\00:14:11.95 and to doing what she could with her exercise. 00:14:11.98\00:14:14.88 She couldn't exercise with her lower body 00:14:15.22\00:14:17.12 so she chose to exercise with her upper body 00:14:17.15\00:14:20.12 and she and I had several great discussions 00:14:20.16\00:14:24.59 and you know, I told her one day. 00:14:24.63\00:14:27.13 She came in for a doctor's appointment 00:14:27.16\00:14:28.86 and I told her that her countenance had changed. 00:14:28.90\00:14:32.47 She started to glow as you said, you know. 00:14:32.50\00:14:34.54 Her face just completely changed. 00:14:34.57\00:14:36.91 And it was such a rich blessing. 00:14:36.94\00:14:38.34 So we really appreciated seeing the change 00:14:38.37\00:14:42.08 that look place in Nancy over the 18 days she was here. 00:14:42.11\00:14:44.98 You know, for me, when I came to the program, 00:14:45.01\00:14:48.02 I was one of those who was like suspicious and depressed 00:14:48.05\00:14:53.12 and didn't know if it'll would work 00:14:53.15\00:14:55.02 but as soon as I found and saw hope, 00:14:55.06\00:14:59.33 everything changed. 00:14:59.36\00:15:00.70 It's amazing. Yeah. Everything just changed. 00:15:00.73\00:15:02.66 Praise the Lord. Yeah. Praise God. 00:15:02.70\00:15:04.60 I'm just so grateful. 00:15:04.63\00:15:06.03 It's been ten years this year for me. 00:15:06.07\00:15:08.70 Wow. 00:19:33.07\00:19:34.40 with my kind of artistic temperament 00:19:34.44\00:19:37.01 and my tendency toward depression, 00:19:37.04\00:19:39.51 I have raised self-pity to an art form 00:19:39.54\00:19:42.21 at various points in my life. 00:19:42.24\00:19:44.35 And I have repented of the sin of self-pity 00:19:44.38\00:19:46.51 and I've learned a better ways. 00:19:46.55\00:19:47.88 So I want to share that with you. 00:19:47.92\00:19:49.38 But first, I want to share with you 00:19:49.42\00:19:50.79 what science says about self-pity. 00:19:50.82\00:19:53.32 Self-pity has been correlated with depression, 00:19:53.36\00:19:56.76 with what we call, externality beliefs, 00:19:56.79\00:19:59.69 the belief that everything that affects me 00:19:59.73\00:20:02.06 is happening outside of me that I have no power. 00:20:02.10\00:20:05.93 Self-pity is correlated with internalized anger, 00:20:05.97\00:20:09.64 increased rumination 00:20:09.67\00:20:11.41 thinking over and over and over and over and over 00:20:11.44\00:20:13.54 about things, ruminating on things. 00:20:13.58\00:20:15.91 Self-pity is correlated with loneliness 00:20:15.94\00:20:18.81 and with distrust. 00:20:18.85\00:20:21.18 Self-pity is founded on the assumption 00:20:21.22\00:20:24.42 that I am a victim. 00:20:24.45\00:20:27.76 That foundation needs to change 00:20:27.79\00:20:30.49 in order for us to get over the self-pity thing. 00:20:30.53\00:20:33.40 We have to move from what is called 00:20:33.43\00:20:35.53 an external locus of control 00:20:35.56\00:20:38.23 to an internal locus of control. 00:20:38.27\00:20:40.77 An external locus of control 00:20:40.80\00:20:42.57 sees everything that happens to me 00:20:42.60\00:20:44.97 as being in the power of things outside of me, 00:20:45.01\00:20:48.44 life just kind of happens. 00:20:48.48\00:20:50.51 But an internal locus of control says 00:20:50.55\00:20:53.65 what can I do about the things that happened to me. 00:20:53.68\00:20:57.39 I'm one of those people 00:20:57.42\00:20:58.85 who have a number of mysterious, 00:20:58.89\00:21:03.12 difficult-to-define illnesses that caused me a lot of pain 00:21:03.16\00:21:06.93 but don't end up killing me off. 00:21:06.96\00:21:09.30 Sometimes I wish they would. 00:21:09.33\00:21:11.37 When this first started happening, 00:21:11.40\00:21:12.73 I was just in my early 30s 00:21:12.77\00:21:14.30 and the first mysterious illness 00:21:14.34\00:21:16.20 that came upon me, 00:21:16.24\00:21:17.57 catapulted me I could say into an abyss of self-pity. 00:21:17.61\00:21:21.38 It went on for months and months and months. 00:21:21.41\00:21:24.35 But ultimately I got a handle on things. 00:21:24.38\00:21:26.38 And I realized that the way that I was processing 00:21:26.41\00:21:29.38 what was happening to me 00:21:29.42\00:21:30.75 was making it worse instead of better. 00:21:30.79\00:21:33.05 Recently, I had another health problem developed 00:21:33.09\00:21:35.59 but this time I knew the pitfall of self-pity 00:21:35.62\00:21:39.49 and I didn't fall into that Slough of Despond 00:21:39.53\00:21:42.66 yet another time. 00:21:42.70\00:21:44.03 This time, instead, I thought 00:21:44.07\00:21:45.97 what can I do to manage this problem 00:21:46.00\00:21:48.97 and I have to say comparing those two approaches, 00:21:49.00\00:21:51.37 I really like the second one a lot better. 00:21:51.41\00:21:53.81 The replacement for self-pity is responsibility taking. 00:21:53.84\00:21:58.01 You know, for some reason 00:21:58.05\00:21:59.55 human being's responsibility taking mechanism is off. 00:21:59.58\00:22:03.89 We either tend to blame other people for our stuff 00:22:03.92\00:22:08.26 or we take upon ourselves the blame that belongs to them. 00:22:08.29\00:22:13.23 It's a sign of maturity when we can accurately take 00:22:13.26\00:22:18.83 appropriate responsibility for our situation. 00:22:18.87\00:22:21.60 So I recommend that the first thing you do 00:22:21.64\00:22:23.81 in taking responsibility is you list five things 00:22:23.84\00:22:27.18 that might help your current situation. 00:22:27.21\00:22:29.01 Write them down on paper. 00:22:29.04\00:22:31.35 Then ask an accountability partners, 00:22:31.38\00:22:33.31 someone you trust to step in and help you 00:22:33.35\00:22:36.85 take responsibility for your situation 00:22:36.89\00:22:38.85 and pursue those five options. 00:22:38.89\00:22:41.09 And finally, I recommend that you learn the serenity prayer 00:22:41.12\00:22:44.63 that you learn to say, "God, grant me the serenity 00:22:44.66\00:22:48.66 to accept the things I cannot change, 00:22:48.70\00:22:51.13 the courage to change the things I can 00:22:51.17\00:22:53.64 and the wisdom to know the difference." 00:22:53.67\00:22:55.54 Welcome, friends, in our NEWSTART kitchen. 00:23:01.11\00:23:03.55 What I'm going to show you 00:23:03.58\00:23:05.15 and present today is almond milk. 00:23:05.18\00:23:08.38 It's a very simple recipe. 00:23:08.42\00:23:10.09 You'd be actually able to do it with even simpler equipment 00:23:10.12\00:23:14.76 that we have here at your home. 00:23:14.79\00:23:18.63 And it actually requires only three ingredients, 00:23:18.66\00:23:22.56 almonds, the ones that I am using for this recipe 00:23:22.60\00:23:26.60 are blanched almonds. 00:23:26.63\00:23:28.90 But for those guys who don't have the option 00:23:28.94\00:23:32.37 to buy blanched almonds, 00:23:32.41\00:23:34.64 you can just use regular almonds 00:23:34.68\00:23:36.98 and the way how you can get off the skin from the almond 00:23:37.01\00:23:40.68 is just to soak it in water for several hours 00:23:40.72\00:23:44.85 and then you will find out it's really easy, 00:23:44.89\00:23:46.62 just squeeze in the almond a little bit 00:23:46.65\00:23:49.09 to pull the skin off. 00:23:49.12\00:23:50.69 And then, you'll get just the same product 00:23:50.73\00:23:52.69 like I have in my hand. 00:23:52.73\00:23:54.60 So that's what we'll need. 00:23:54.63\00:23:56.53 We need blanched almonds, salt and water. 00:23:56.56\00:24:01.04 That's it. Simple. 00:24:01.07\00:24:02.84 So then we need some blender. 00:24:02.87\00:24:05.44 I'm using Vitamix and it's kind of something 00:24:05.47\00:24:08.44 that we use here at Weimar at our kitchen. 00:24:08.48\00:24:11.55 We like it because it's really strong 00:24:11.58\00:24:13.75 and it can cook. 00:24:13.78\00:24:16.85 But if you don't have Vitamix, don't worry. 00:24:16.89\00:24:18.99 You can use just a regular blender 00:24:19.02\00:24:21.72 that you have at your house. 00:24:21.76\00:24:24.16 So what you do, 00:24:24.19\00:24:25.53 you pour the water in the blender 00:24:25.56\00:24:27.20 and then you put the almonds there, 00:24:32.53\00:24:34.10 and the salt. 00:24:37.14\00:24:39.41 You probably noticed that I'm not using any sweetener. 00:24:39.44\00:24:41.88 The reason why is because 00:24:41.91\00:24:45.31 when you use a little bit of salt, 00:24:45.35\00:24:47.05 the almonds, they already have certain amount of sugar 00:24:47.08\00:24:51.15 and when you use the salt, the salt actually, 00:24:51.19\00:24:54.62 really improves the flavor, especially, the sweetness. 00:24:54.66\00:24:58.69 That's what you will find out. 00:24:58.73\00:25:00.13 So even the milk doesn't have any sugar, 00:25:00.16\00:25:02.56 it's slightly sweet and that just, 00:25:02.60\00:25:04.30 you know, it's just enough for us to enjoy. 00:25:04.33\00:25:07.07 Also, for those who would like to bring some flavor to it, 00:25:07.10\00:25:10.87 you can use, you know, that's optional, 00:25:10.91\00:25:12.84 you can use whatever flavors you like. 00:25:12.87\00:25:15.41 You can use vanilla flavor, you can use maple flavor. 00:25:15.44\00:25:18.95 It's up to you, whatever you like, 00:25:18.98\00:25:20.55 you can really help this milk to stand out. 00:25:20.58\00:25:23.49 So that's what we do. 00:25:23.52\00:25:24.92 We put all the ingredients in the blender 00:25:24.95\00:25:26.72 and then we turn it on. 00:25:26.76\00:25:28.29 And it's about, you know, five minutes in the blender. 00:25:28.32\00:25:33.86 The time is really important 00:25:33.90\00:25:35.26 because you really want to make the pulp really nice and fine. 00:25:35.30\00:25:41.70 So the five minutes is kind of about the good time 00:25:41.74\00:25:44.77 that the blender is able to take care of 00:25:44.81\00:25:47.74 the coarseness of the product, so it will be nice and fine. 00:25:47.78\00:25:53.25 If you actually turn it off after five minutes, 00:25:53.28\00:25:55.98 and you find out that it still kind of coarse, 00:25:56.02\00:25:57.99 you can leave it a little bit longer, 00:25:58.02\00:26:00.36 depends how strong is your blender. 00:26:00.39\00:26:02.92 With Vitamix, actually, what is the advantage 00:26:02.96\00:26:05.09 is that Vitamix also cooks. 00:26:05.13\00:26:07.66 So after five minutes of blending, 00:26:07.70\00:26:12.93 you'll find out that it's almost 00:26:12.97\00:26:14.30 to the point of boiling 00:26:14.34\00:26:15.67 and that actually makes it better 00:26:15.70\00:26:17.04 because you know, when it boils, 00:26:17.07\00:26:20.08 the stuff, the ingredients that are in the almonds 00:26:20.11\00:26:23.45 are released to the liquid and milk tastes much better. 00:26:23.48\00:26:27.78 Also, you know, if you want to use the milk 00:26:27.82\00:26:31.29 for like pouring over your cereals, 00:26:31.32\00:26:33.96 then you just blend it up and use it right away. 00:26:33.99\00:26:38.83 For somebody who might be a little bit picky on the pulp, 00:26:38.86\00:26:43.10 on the coarseness, 00:26:43.13\00:26:44.93 you might use like a cheese cloth 00:26:44.97\00:26:46.97 and strain it through the cheese cloth 00:26:47.00\00:26:48.70 and that way you will get 00:26:48.74\00:26:50.07 a really nice, fine milk, almond milk 00:26:50.11\00:26:54.51 that would be good for drinking. 00:26:54.54\00:26:56.75 So okay.
