At 87, she is doing well. 00:13:05.68\00:13:10.82 She is, yeah. 00:13:10.85\00:13:12.19 I understand though aside from the things 00:13:12.22\00:13:15.82 that she mentioned during our interview, 00:13:15.86\00:13:18.63 she has had several surgeries, 00:13:18.66\00:13:20.30 she did mention surgeries but-- 00:13:20.33\00:13:22.10 Yeah. Did she talk to you about this? 00:13:22.13\00:13:25.00 Well, you know, that's in the questionnaire, 00:13:25.03\00:13:28.00 the medical records that we get. 00:13:28.04\00:13:31.81 Yeah, she had both knees replaced about a decade apart. 00:13:31.84\00:13:36.78 She had shoulder surgery twice several years apart. 00:13:36.81\00:13:43.05 And then she's had a hip that was bothering her 00:13:43.08\00:13:48.12 and so that was recent, that was last year, 00:13:48.16\00:13:51.79 no, couple of years ago. 00:13:51.83\00:13:53.86 And then, yeah, 00:13:53.90\00:13:55.83 so, well when you have all this different parts 00:13:55.86\00:13:59.30 that are kind of a problem. 00:13:59.33\00:14:02.54 I think her main thing is though that it's, 00:14:02.57\00:14:06.47 the kind of the sadness of losing her spouse, 00:14:06.51\00:14:11.21 her father had problems, 00:14:11.25\00:14:15.52 her mom had Alzheimer's diseases, 00:14:15.55\00:14:17.52 I think her father had heart disease, 00:14:17.55\00:14:19.85 her brother had a stroke 00:14:19.89\00:14:21.79 and so naturally she is just gonna be like, 00:14:21.82\00:14:24.39 "What is my blood pressure?" 00:14:24.43\00:14:26.39 And she said, you know, since I lost my spouse, 00:14:26.43\00:14:31.17 life is just kind of, 00:14:31.20\00:14:33.44 you know, and people that have lost the spouse 00:14:33.47\00:14:36.87 of many, many years is just, it takes the edge off, 00:14:36.91\00:14:40.11 it take the happiness out of life 00:14:40.14\00:14:41.84 and so with all of these different things, 00:14:41.88\00:14:44.88 all the different surgeries and stuff, 00:14:44.91\00:14:46.58 she is still pretty upbeat but with all of that, 00:14:46.61\00:14:50.05 it's just, it's easier to just kind of slip into a, 00:14:50.09\00:14:54.29 you know, the gloom and so forth, 00:14:54.32\00:14:56.49 so that was the main thing, 00:14:56.52\00:14:58.59 she had other health problems too though. 00:14:58.63\00:15:00.76 But she tells me that the depression 00:15:00.80\00:15:03.06 is kind of going away since she has been here, 00:15:03.10\00:15:06.90 she has a newly lease on life 00:15:06.94\00:15:09.10 and with your help and the NEWSTART program, 00:15:09.14\00:15:14.11 her blood pressure is okay now? 00:15:14.14\00:15:16.58 Is she off the medication? 00:15:16.61\00:15:18.68 You know when it comesto blood pressure, 00:15:18.71\00:15:20.65 I would say that if I hadn't seen Dr. William Evans, 00:15:20.68\00:15:25.35 he was at Penn State at that time. 00:15:25.39\00:15:27.79 And I've probably said this over and over again, 00:15:27.82\00:15:29.96 but it's so important for the folks out there 00:15:29.99\00:15:32.56 that are listening, 00:15:32.59\00:15:34.20 if you have elevated blood pressure 00:15:34.23\00:15:37.40 and you'll get in walking, we suggest 3 to 5 miles a day 00:15:37.43\00:15:43.10 and of course with her musculoskeletal problems, 00:15:43.14\00:15:47.54 I guess, whoa. 00:15:47.58\00:15:49.54 But anyway they can work-- 00:15:49.58\00:15:50.91 she was up to almost 3 miles when she left. 00:15:50.95\00:15:54.12 And if you'll do that 00:15:54.15\00:15:55.48 and you have a regular ongoing exercise program 00:15:55.52\00:15:59.79 with elevated blood pressure. 00:15:59.82\00:16:02.72 The exercise is going to be so enormously powerful 00:16:02.76\00:16:07.16 that you're going to live longer 00:16:07.20\00:16:09.23 and a person who has normal blood pressure 00:16:09.26\00:16:13.37 and they say I don't have to worry 00:16:13.40\00:16:14.74 about my blood pressure and they don't exercise 00:16:14.77\00:16:17.21 like 60% or plus of Americans don't exercise. 00:16:17.24\00:16:20.98 That person with normal blood pressure sedentary 00:16:21.01\00:16:24.05 is gonna die sooner than the person 00:16:24.08\00:16:26.55 that has an elevated blood pressure 00:16:26.58\00:16:28.08 who exercises. 00:16:28.12\00:16:29.45 That's what he said, 00:16:29.48\00:16:31.52 it's really very, very powerful. 00:16:31.55\00:16:36.36 I'm so glad to hear you say that, 00:16:36.39\00:16:38.23 I'm not sure if the viewers got what you just said. 00:16:38.26\00:16:41.53 But let me repeat it and correct me if I'm wrong. 00:16:41.56\00:16:44.57 You're saying people with elevated blood pressure, 00:16:44.60\00:16:47.87 if they watch what they eat and they exercise-- 00:16:47.90\00:16:50.44 No, he didn't even talk about eating. 00:16:50.47\00:16:51.81 Not even eating. Yeah. 00:16:51.84\00:16:53.68 But we know that's a-- 00:16:53.71\00:16:55.98 But if they exercise. 00:16:56.01\00:16:57.35 Yeah, I tell people two-thirds of your program, now I'm saying 00:16:57.38\00:17:01.62 more than two-thirds of your program is exercise. 00:17:01.65\00:17:04.35 Okay, all right. 00:17:04.39\00:17:05.72 So if they exercise, 00:17:05.75\00:17:07.62 then odds are that they are gonna live longer 00:17:07.66\00:17:10.93 than people without blood pressure problems. 00:17:10.96\00:17:13.83 Yeah, statistically. Statistically, okay. 00:17:13.86\00:17:16.03 Well, they go a step further 00:17:16.06\00:17:19.73 with all the Americans that are sedentary, 00:17:19.77\00:17:22.94 being sedentary has the same health risk 00:17:22.97\00:17:26.81 as smoking one package of cigarettes a day. 00:17:26.84\00:17:29.88 That's scary. 00:17:29.91\00:17:31.25 Well, it should be a wake up, it's very scary, yeah. 00:17:31.28\00:17:35.32 Now Rebecca, how is she doing with the depression? 00:17:35.35\00:17:38.89 She seems to be someone out of it 00:17:38.92\00:17:41.26 but have you helped her in that area, Doc? 00:17:41.29\00:17:44.39 Well, see about 15 years ago I started reading 00:17:44.43\00:17:49.90 my wife's psychic newsletters and they said 00:17:49.93\00:17:53.50 with every depressive treatment plan 00:17:53.54\00:17:58.21 if it doesn't include exercises, 00:17:58.24\00:18:00.11 it's not gonna be successful. 00:18:00.14\00:18:02.44 And one of the doctors has helped us occasionally, 00:18:02.48\00:18:05.35 a psychiatrist from over at St. Lina. 00:18:05.38\00:18:08.72 He said, you know, exercise is so powerful. 00:18:08.75\00:18:11.52 Some of my long term patients he said if I-- 00:18:11.55\00:18:15.22 he said I would pay them 00:18:15.26\00:18:16.59 if I could get them to exercise. 00:18:16.62\00:18:18.89 Oh, you would. How much? 00:18:18.93\00:18:21.40 By the way we're gonna have to have flip off, 00:18:21.43\00:18:24.43 you and I with the potatoes. 00:18:24.47\00:18:29.54 Oh, okay. 00:18:29.57\00:18:30.91 I asked several people, when is the last time 00:18:30.94\00:18:34.34 a doctor has invited you to their home 00:18:34.38\00:18:38.01 and they cook a meal for you. 00:18:38.05\00:18:40.22 And they were so grateful to be in your home, 00:18:40.25\00:18:46.76 to have you be a part of their life, 00:18:46.79\00:18:49.36 to eat breakfast with them, to walk with them. 00:18:49.39\00:18:52.33 You know, doc, I just-- 00:18:52.36\00:18:54.96 God must bless you everyday for your work here 00:18:55.00\00:18:57.70 and I thank you for that. 00:18:57.73\00:18:59.07 Well, you know what, 00:18:59.10\00:19:00.44 the reason why it's so important 00:19:00.47\00:19:01.80 I feel to do that is when we go there, 00:19:01.84\00:19:04.14 we just do the simplest little preparations 00:19:04.17\00:19:07.18 like putting fresh fruit on toasts 00:19:07.21\00:19:09.44 with some nuts and they said woo woo. 00:19:09.48\00:19:12.98 You know, and it is so simple 00:19:13.01\00:19:15.22 and then cooking food in a crock-pot. 00:19:15.25\00:19:17.42 But let's get back to Rebecca, the thing is that 00:19:17.45\00:19:21.22 she may not have stressed that 00:19:21.26\00:19:22.59 but she had atrial fibrillation. 00:19:22.62\00:19:25.26 And that's where the heart's kind of quivers at the top 00:19:25.29\00:19:28.43 and then sometimes when it beats, 00:19:28.46\00:19:30.67 a debris or a clot or something will go up 00:19:30.70\00:19:33.67 and give a stroke. 00:19:33.70\00:19:35.04 And maybe her brother had that one when he got a stroke. 00:19:35.07\00:19:37.84 And she was on medication, 00:19:37.87\00:19:39.27 it was costing her $400 a month. 00:19:39.31\00:19:43.98 When we took her off of that 00:19:44.01\00:19:45.35 and I said at your age we've always been told 00:19:45.38\00:19:48.32 that, you know, you could use 00:19:48.35\00:19:49.95 something more simple than that. 00:19:49.98\00:19:51.72 She just went out and cried because she didn't know 00:19:51.75\00:19:53.86 where she is gonna have that $400 coming from 00:19:53.89\00:19:56.89 every month. 00:19:56.93\00:19:58.26 She told me she is gonna stop that and get massages instead. 00:19:58.29\00:20:03.06 Doc, we've have run out of time. 00:20:03.10\00:20:04.73 I want to thank you for being here 00:20:04.77\00:20:06.47 and God bless you in your work at NEWSTART program. 00:20:06.50\00:20:09.40 Thank you. And friends, thank you. 00:20:09.44\00:20:10.77 Don't go away, we have a tip for you. 00:20:10.81\00:20:13.04 I'm gonna teach you how to make a great spring roll 00:20:17.05\00:20:20.28 that you can put so many raw ingredients in, 00:20:20.32\00:20:22.52 it will almost be like eating a salad in a wrap. 00:20:22.55\00:20:25.65 Okay, let's talk about what goes into a spring roll. 00:20:25.69\00:20:28.32 Now mind you, 00:20:28.36\00:20:29.69 you can put whatever you want in a spring roll, 00:20:29.72\00:20:31.63 but these are just some ingredients 00:20:31.66\00:20:33.09 that I think make them taste a little special. 00:20:33.13\00:20:35.96 We are gonna be using this really cool ingredient 00:20:36.00\00:20:38.53 called mung bean noodles 00:20:38.57\00:20:40.60 and you can buy these at you Asian store. 00:20:40.64\00:20:42.67 If you didn't want to use mung bean noodles 00:20:42.70\00:20:44.34 you could use zucchini, 00:20:44.37\00:20:45.71 you could also just use brown rice noodle 00:20:45.74\00:20:48.48 and all I have done is, I've just put them in some water 00:20:48.51\00:20:50.71 and they turned into these lovely little glass noodles. 00:20:50.75\00:20:54.05 I'll be adding some basil and I love fresh basil 00:20:54.08\00:20:57.09 because you can literally just grow this in your kitchen 00:20:57.12\00:21:00.16 and there is nothing better than having fresh herbs 00:21:00.19\00:21:02.39 in your food. 00:21:02.42\00:21:03.76 These are mung bean sprouts, highly nutritious, 00:21:03.79\00:21:06.49 they're great water content 00:21:06.53\00:21:08.20 and so it has a nice crunch component. 00:21:08.23\00:21:10.67 This is some baked tofu. 00:21:10.70\00:21:12.90 You could use raw tofu if you wanted to, 00:21:12.93\00:21:14.60 you can marinate your own tofu 00:21:14.64\00:21:16.30 which ever you want to do is totally up to you. 00:21:16.34\00:21:19.34 I'll be using some shredded carrots 00:21:19.37\00:21:21.31 high in beta-carotene. 00:21:21.34\00:21:22.74 We all know that's good for our eyes 00:21:22.78\00:21:24.81 and also it just adds some beautiful color. 00:21:24.85\00:21:27.48 I'd like to use some toasted almonds 00:21:27.52\00:21:29.08 but you are welcome to use anything you like. 00:21:29.12\00:21:32.09 Some mint, that just gives it a till extra special, 00:21:32.12\00:21:35.02 that component, 00:21:35.06\00:21:36.39 that mint gives you that nice hint of mint. 00:21:36.42\00:21:38.79 And I like cilantro and I love avocado. 00:21:38.83\00:21:43.26 And avocados are great source of fat 00:21:43.30\00:21:45.73 and I want to show you how to tell a good avocado 00:21:45.77\00:21:48.37 from a bad avocado at the store. 00:21:48.40\00:21:50.34 I've spent a lot of many getting avocados 00:21:50.37\00:21:52.81 and here's a really cool trick. 00:21:52.84\00:21:54.41 When you pick it up, look for avocados 00:21:54.44\00:21:56.11 that have these little stems in there 00:21:56.14\00:21:58.51 and you want to just squeeze it at the top, 00:21:58.55\00:22:00.78 if it gives, that's good, if it's just mushy, 00:22:00.82\00:22:04.65 you don't want to use it, but a sure way to tell 00:22:04.69\00:22:07.02 if your avocado is really good is take off that stem 00:22:07.06\00:22:10.19 and if it's green under there, 00:22:10.23\00:22:11.73 then you know it's good as well. 00:22:11.76\00:22:13.29 Now, you can always find avocado 00:22:13.33\00:22:14.83 that's definitely not ready to be used that's unripe, 00:22:14.86\00:22:17.93 then just leave it on your counter 00:22:17.97\00:22:19.37 and that would work as well, 00:22:19.40\00:22:20.74 but I'm gonna show you how to slice an avocado. 00:22:20.77\00:22:22.60 Let's take our avocado 00:22:22.64\00:22:24.21 and right where we pulled out that stem. 00:22:24.24\00:22:26.27 We're gonna take our chef knife 00:22:26.31\00:22:27.68 and go straight through that stem 00:22:27.71\00:22:30.85 and make a nice cut, give it a spin 00:22:30.88\00:22:33.45 and inside is a perfect avocado. 00:22:33.48\00:22:36.12 Now, if I was only gonna use half of an avocado, 00:22:36.15\00:22:39.05 I would use this half. Why? 00:22:39.09\00:22:41.02 Because this pit will actually help it from oxidizing. 00:22:41.06\00:22:44.79 You can also sprinkle little bit of lemon juice on there 00:22:44.83\00:22:46.66 as well, but I'm gonna show you how to pit an avocado 00:22:46.70\00:22:49.90 to make it easy. 00:22:49.93\00:22:51.27 Now, when we work with an avocado, 00:22:51.30\00:22:52.73 we never want to take our knife and go like this, 00:22:52.77\00:22:55.30 this is very dangerous 00:22:55.34\00:22:56.67 and especially if you have sharp knife 00:22:56.71\00:22:58.17 which I want you all to have. 00:22:58.21\00:22:59.67 Don't use a dull knife, it's more dangerous. 00:22:59.71\00:23:02.08 You could slice right through your hand. 00:23:02.11\00:23:03.88 So put it on the cutting board 00:23:03.91\00:23:05.71 and what you need is you take your chef knife, 00:23:05.75\00:23:07.82 give it a little tap, a spin 00:23:07.85\00:23:10.45 and then you're going to tap it off again 00:23:10.49\00:23:13.12 and as simple as that. 00:23:13.15\00:23:14.99 Now what I would like to do at this stage 00:23:15.02\00:23:17.33 is cut through the skin 00:23:17.36\00:23:20.40 and what you have is just a beautiful avocado 00:23:20.43\00:23:24.13 without having all those handprints 00:23:24.17\00:23:25.77 and everything in there. 00:23:25.80\00:23:27.14 And then at this stage, 00:23:27.17\00:23:28.50 you can just take your avocado and dice it, 00:23:28.54\00:23:32.17 fan it if you like as well. 00:23:32.21\00:23:34.11 So it's really simple, 00:23:34.14\00:23:35.81 it's an easy way to have that pretty avocado look 00:23:35.84\00:23:40.82 without a lot of fingerprints in there 00:23:40.85\00:23:43.02 and it's just super simple. 00:23:43.05\00:23:44.62 Okay, and don't worry too much 00:23:45.69\00:23:48.59 and if you get a little bit on your hands, that's okay. 00:23:48.62\00:23:51.63 We are gonna be using our hands today. 00:23:51.66\00:23:54.10 All right, avocados are great, 00:23:54.13\00:23:58.10 they are very good for expecting mothers. 00:23:58.13\00:24:01.27 Isn't it interesting that in avocado 00:24:01.30\00:24:03.74 from the time it's a flower to fully developed is 9 months, 00:24:03.77\00:24:07.58 so that gives us a little bit of hint 00:24:07.61\00:24:09.28 of maybe what food is good for us as far. 00:24:09.31\00:24:12.75 So let's put our avocado slices in there. 00:24:12.78\00:24:15.32 Now what I want to do is, 00:24:15.35\00:24:16.69 teach you how to make a spring roll. 00:24:16.72\00:24:18.32 When I first started working with spring rolls, 00:24:18.35\00:24:20.66 I had trouble with them getting too soft on me 00:24:20.69\00:24:24.63 and they would just become a big mess, 00:24:24.66\00:24:26.36 but I want to show you a really cool trick that you can use. 00:24:26.39\00:24:29.40 These are just spring roll wrappers, 00:24:29.43\00:24:31.33 they are rice paper and what you want to do 00:24:31.37\00:24:33.47 is you want to inspect them 00:24:33.50\00:24:34.84 if there is tears and holes in there. 00:24:34.87\00:24:36.64 You just want to set those aside 00:24:36.67\00:24:38.01 because it's gonna make your job a lot harder 00:24:38.04\00:24:39.87 when you come torole your spring roll. 00:24:39.91\00:24:41.94 So that's a good one. 00:24:41.98\00:24:43.31 I have a shallow bowl of water 00:24:43.35\00:24:44.98 and I like to use as hottest water as I can, 00:24:45.01\00:24:47.45 it could be warm but to have it hotter makes it a lot easer 00:24:47.48\00:24:50.79 for when you're gonna roll these into your wraps. 00:24:50.82\00:24:53.56 So what we're gonna do is just put this into the water 00:24:53.59\00:24:55.99 and maybe for about 10 seconds tops. 00:24:56.02\00:24:59.23 We don't want to go longer than that 00:24:59.26\00:25:00.80 because what you're gonna end up with is 00:25:00.83\00:25:02.33 a roll that's too hard to work with. 00:25:02.36\00:25:05.13 Now I'm gonna set this on my server 00:25:05.17\00:25:07.24 and let it sit here for about 30 seconds, 00:25:07.27\00:25:09.47 it will continue to soften 00:25:09.50\00:25:11.17 and mean while if I were to have 00:25:11.21\00:25:12.64 a bunch of people over at my house, 00:25:12.67\00:25:14.64 I'll probably let them wrap their own roll. 00:25:14.68\00:25:17.18 And so in the mean time, 00:25:17.21\00:25:18.55 I will just continue to get these wet, 00:25:18.58\00:25:19.91 put them on their own individual plates 00:25:19.95\00:25:21.68 and they can go through a la carte 00:25:21.72\00:25:23.69 for whatever they want in the spring roll. 00:25:23.72\00:25:25.69 But at this stage we're getting nice and soft, 00:25:25.72\00:25:28.49 so let's go ahead and add what we want. 00:25:28.52\00:25:31.19 Now imagine your spring roll is like a clock 00:25:31.23\00:25:34.86 and between 4 and 8 o'clock 00:25:34.90\00:25:37.53 is where you want to be working from. 00:25:37.57\00:25:39.37 So below 3 and 9, 00:25:39.40\00:25:40.74 you want to be working on that bottom third. 00:25:40.77\00:25:42.77 And we're gonna be adding our, 00:25:42.80\00:25:45.77 our little mung bean noodles to this, okay. 00:25:45.81\00:25:49.34 And then we'll add our sprouts. 00:25:49.38\00:25:52.58 Nuts and tofu, some carrots 00:25:52.61\00:25:56.42 and you can make these as big as you want, 00:25:56.45\00:25:58.25 but just be aware it's a lot harder to roll when you do. 00:25:58.29\00:26:01.69 I'm gonna add maybe a little bit of almonds in here 00:26:01.72\00:26:04.29 and then my mint leaves, my cilantro, 00:26:04.33\00:26:08.73 slices of avocado, okay. 00:26:08.76\00:26:12.70 And then I want to get a nice basil leaf in here. 00:26:12.73\00:26:16.60 And now what we're gonna do 00:26:16.64\00:26:18.47 is we're gonna work on that bottom third of our warp 00:26:18.51\00:26:22.34 and we're simply just gonna roll it over 00:26:22.38\00:26:24.41 like you would a burrito. 00:26:24.45\00:26:26.35 So roll that bottom part over first, 00:26:26.38\00:26:29.78 then tuck in your sides. 00:26:29.82\00:26:31.45 Okay, and it does help to have gloves on. 00:26:34.52\00:26:36.83 By the way, it makes it a lot easier, 00:26:36.86\00:26:38.56 but you can just roll them with your bare hands 00:26:38.59\00:26:40.10 if you want. 00:26:40.13\00:26:42.00 Okay, and then we'll just roll it up to a nice roll like. 00:26:42.03\00:26:46.63 So at this stage, I can cut these in half 00:26:46.67\00:26:50.44 or in thirds or however I want it to present them. 00:26:50.47\00:26:55.01 And then you can just leave them 00:26:55.04\00:26:57.15 like so let things kind of poke out that's pretty too. 00:26:57.18\00:27:00.72 And then just lay 'em as you'd like. 00:27:00.75\00:27:03.12 And I like to add my almond sauce to these 00:27:03.15\00:27:05.05 and just be kind of careful, 00:27:05.09\00:27:06.42 they are little delicate but that's okay. 00:27:06.45\00:27:10.26 And then as you continue to make more of your rolls, 00:27:10.29\00:27:13.90 just make it very pretty around this tray. 00:27:13.93\00:27:17.20 And then of course you can always top it off 00:27:17.23\00:27:19.07 with some lovely almond sauce that we made 00:27:19.10\00:27:22.24 and if you need that recipe, 00:27:22.27\00:27:23.87 definitely go to our website and bon appetite. 00:27:23.91\00:27:28.44 Well, friends, that's it for today 00:27:33.01\00:27:34.82 but join us next
