Yeah, it's a great start. 00:04:37.34\00:04:40.48 You know, that's pretty good numbers 00:04:40.51\00:04:44.21 for a place that's not a weight loss facility. 00:04:44.25\00:04:47.52 That's right, that's right. 00:04:47.55\00:04:48.88 You know, we generally pay most attention to people 00:04:48.92\00:04:52.95 with illnesses, and sicknesses, and all kind of diseases. 00:04:52.99\00:04:57.46 And here we are people come here 00:04:57.49\00:05:00.60 and being on the program, 00:05:00.63\00:05:02.66 living this lifestyle lose weight. 00:05:02.70\00:05:05.30 Right, right. 00:05:05.33\00:05:06.67 And I'm one of them, so. 00:05:06.70\00:05:08.50 Right, yeah, it was, it's been really good 00:05:08.54\00:05:10.81 and like you're saying, that I came to-- 00:05:10.84\00:05:13.11 The main goal was to support my husband, 00:05:13.14\00:05:14.94 and it was a new adventure, 00:05:14.98\00:05:16.51 you know, we gradually had worked up to this 00:05:16.54\00:05:18.85 and was very excited and still are. 00:05:18.88\00:05:22.58 I mean there will be some changes 00:05:22.62\00:05:23.95 when we go home, but it's, it's an adventure. 00:05:23.99\00:05:27.39 How do you feel about being vegan? 00:05:27.42\00:05:30.23 I-- You know, I feel fine about it, 00:05:30.26\00:05:33.73 I think we're gonna call it true vegetarian. 00:05:33.76\00:05:38.40 Okay. 00:05:38.43\00:05:39.77 But whatever, it doesn't matter. 00:05:39.80\00:05:42.24 So we're committed, 00:05:42.27\00:05:43.61 we're committed to do the vegan walk for a year, 00:05:43.64\00:05:48.01 and then if we need to make slight changes, 00:05:48.04\00:05:51.75 but I have a feeling from listening to other people 00:05:51.78\00:05:54.48 that it's, that you know, that's where we're headed 00:05:54.52\00:05:59.09 and we'll feel so good that they'll be worth it. 00:05:59.12\00:06:03.43 You know, I talk to people all the time 00:06:03.46\00:06:05.49 that come through the program, that's one of my jobs 00:06:05.53\00:06:09.16 and invariably you can see people 00:06:09.20\00:06:12.23 who step with the program and who don't. 00:06:12.27\00:06:13.90 Right. 00:06:13.94\00:06:15.27 I talk to someone yesterday, actually they sent me an email, 00:06:15.30\00:06:18.37 I don't quite understand, I'm vegan 00:06:18.41\00:06:20.24 but I've gained 20 pounds, so here is a case 00:06:20.28\00:06:24.31 where someone had come through the program, 00:06:24.35\00:06:27.02 they remained vegan, 00:06:27.05\00:06:28.38 but they started eating junk food 00:06:28.42\00:06:30.39 and you can gain weight by being vegan, 00:06:30.42\00:06:33.66 you know, excess fats and oils and sugars and so on so forth. 00:06:33.69\00:06:39.96 And what I decided to do as you have, 00:06:40.00\00:06:43.26 is make this a lifestyle and not any thing 00:06:43.30\00:06:47.44 I was gonna try for a week or two, 00:06:47.47\00:06:49.70 or even a year as you mention but forever, 00:06:49.74\00:06:53.34 because and I think a biggest difference is, 00:06:53.38\00:06:56.51 is for those of us who had that fear in here, 00:06:56.54\00:07:01.22 don't want to go under the knife again 00:07:01.25\00:07:03.05 and do another five way bypass. 00:07:03.08\00:07:04.95 Right, right 00:07:04.99\00:07:06.49 It's a little different for us, you have some benefits 00:07:06.52\00:07:10.39 that you've never experienced any of that 00:07:10.43\00:07:13.03 and I pray that you don't have to. 00:07:13.06\00:07:15.00 Right. 00:07:15.03\00:07:16.36 A more about you and your doctor experience, 00:07:16.40\00:07:18.13 how were the doctor visits? 00:07:18.17\00:07:21.97 Very good, nothing like I had experienced before. 00:07:22.00\00:07:26.54 Dr. Gallant, he was phenomenal, 00:07:26.57\00:07:31.01 not only in the office 00:07:31.05\00:07:33.85 and really personable and cheering 00:07:33.88\00:07:35.78 and but you know, we would have breakfast, 00:07:35.82\00:07:38.19 and lunch and he would sit at our table 00:07:38.22\00:07:40.49 and you know, share and his wife would come in, 00:07:40.52\00:07:44.49 you know it's really unique. 00:07:44.53\00:07:46.39 Isn't that's special? 00:07:46.43\00:07:47.76 It, it really is, so it was, it was a unique experience 00:07:47.80\00:07:52.17 and I think, I think we're keeping, 00:07:52.20\00:07:55.90 he's gonna be around I mean, you don't find that every day. 00:07:55.94\00:07:59.54 That's right, and I asked your husband this 00:07:59.57\00:08:02.51 'cause I interviewed him as well. 00:08:02.54\00:08:04.05 Okay. I asked him this question. 00:08:04.08\00:08:06.55 When is the last time that you had a doctor 00:08:06.58\00:08:09.48 invite you to their home and prepare a meal for you? 00:08:09.52\00:08:13.86 Does that ever happen? Definitely. 00:09:36.20\00:09:39.37 Okay, so you're on your way 00:09:39.41\00:09:41.84 you, by the way I meant to ask you. 00:09:41.88\00:09:45.68 Had you been walking before you got here? 00:09:45.71\00:09:47.88 No. You didn't walk? 00:09:47.92\00:09:50.19 And it was difficult at first. Was it? 00:09:50.22\00:09:52.95 Yes, and we were cyclists and so it was, 00:09:52.99\00:09:56.83 we're used to exercise, 00:09:56.86\00:09:59.79 but I had a really tough time with walking. 00:09:59.83\00:10:02.76 And my hips hurt and my legs, really it was. 00:10:02.80\00:10:06.03 Mine too. Yeah. 00:10:06.07\00:10:07.40 That's why I'm laughing because I can relate. 00:10:07.44\00:10:09.04 Right, right but it feels really good, 00:10:09.07\00:10:11.04 and then with the massage 00:10:11.07\00:10:12.77 and helping work out the lower back in my legs 00:10:12.81\00:10:15.71 and it feels really good. 00:10:15.74\00:10:19.31 In fact, we're-- I mean, it's, 00:10:19.35\00:10:23.32 it will be a part of our, our program. 00:10:23.35\00:10:26.39 So, how far have you been walking each day? 00:10:26.42\00:10:30.33 We've gotten up to six and half miles 00:10:30.36\00:10:32.36 which is astounding. 00:10:32.39\00:10:34.80 Wow. Yeah, yeah. 00:10:34.83\00:10:36.67 But we're usually right around four, three and half, four 00:10:36.70\00:10:40.07 and that still is pretty amazing. 00:10:40.10\00:10:43.00 That is amazing. It really is. 00:10:43.04\00:10:45.61 I was, I walked with a young man 00:10:45.64\00:10:48.58 several years ago 00:10:48.61\00:10:50.48 who I walked his last his 16th mile 00:10:50.51\00:10:55.18 when he was here. 00:10:55.22\00:10:56.55 Seriously. Sixteen miles. 00:10:56.58\00:10:59.15 Wow. 00:10:59.19\00:11:00.52 And, you know, you figure do the math 00:11:00.56\00:11:03.02 if we walk at a three miles an hour, 00:11:03.06\00:11:05.53 how long does it take to do sixteen, 00:11:05.56\00:11:09.06 five and half hours roughly, that's a long time. 00:11:09.10\00:11:11.93 Yeah. Yeah, absolutely. 00:13:39.25\00:13:41.88 You know, it's really nice the way the program is set up 00:13:41.92\00:13:44.25 that there is the opportunity to do 00:13:44.29\00:13:47.02 what we call a la carte, 00:13:47.06\00:13:48.62 where somebody can come and meet with a physician 00:13:48.66\00:13:53.13 and get some specific counseling 00:13:53.16\00:13:55.43 towards their lifestyle issues 00:13:55.46\00:13:57.33 and then add some treatments like a exercise treatment, 00:13:57.37\00:14:01.24 like a nutritional counseling session, 00:14:01.27\00:14:04.87 like meeting with a chaplain 00:14:04.91\00:14:06.88 and getting hydrotherapy and massage. 00:14:06.91\00:14:09.74 What a great opportunity to be here to be supportive 00:14:09.78\00:14:13.11 and also get a little support for yourself. 00:14:13.15\00:14:16.18 She was so happy. 00:14:16.22\00:14:17.72 She love some dress sizes around her hips and waist 00:14:17.75\00:14:22.06 and she's feeling really good. 00:14:22.09\00:14:24.43 And I understand, see, the walls have ears 00:14:24.46\00:14:28.53 that may be there's a little competition 00:14:28.56\00:14:30.73 going on between the two. 00:14:30.77\00:14:32.10 Well, you know, it's a-- I really had a wonderful time 00:14:32.13\00:14:34.24 with Joe and Linda. 00:14:34.27\00:14:36.30 And I noticed especially that Linda is very competitive. 00:14:36.34\00:14:40.31 So they would both come to meet with me 00:14:40.34\00:14:42.58 for either one of them whichever had the appointment. 00:14:42.61\00:14:45.58 And what I did was, 00:14:45.61\00:14:47.12 I started creating a little competition 00:14:47.15\00:14:50.19 between the two of them. 00:14:50.22\00:14:51.89 And that was such a motivator to get them to go and walk 00:14:51.92\00:14:54.62 and exercise and drink water 00:14:54.66\00:14:56.42 and do whatever was required of the program 00:14:56.46\00:14:59.43 and they really reaped rich benefits because of that. 00:14:59.46\00:15:03.03 I could see that 00:15:03.06\00:15:04.40 between the first interview and the second 00:15:04.43\00:15:07.34 and she's just totally on board with this. 00:15:07.37\00:15:10.17 And I may at a point when I came through the program 00:15:10.21\00:15:13.71 my wife came with me. 00:15:13.74\00:15:15.08 Yes. 00:15:15.11\00:15:16.44 I can't even imagine me going home after 18 days 00:15:16.48\00:15:20.72 and trying to share with her what I did here. 00:15:20.75\00:15:23.89 Right, right. excellent, it's gonna give us that cheesiness 00:21:01.39\00:21:03.19 that we're looking for. 00:21:03.22\00:21:04.56 Because traditionally you'll have cheese 00:21:04.59\00:21:07.70 in your spinach dip. 00:21:07.73\00:21:09.43 Oregano. 00:21:09.46\00:21:12.40 Our sea salt. 00:21:12.43\00:21:15.54 And I'm gonna go ahead and just blend this 00:21:15.57\00:21:17.41 all together. 00:21:17.44\00:21:19.17 Okay, this is what we're looking for, 00:22:03.28\00:22:04.82 this is gonna be our cheesy creamy sauce 00:22:04.85\00:22:07.46 that goes into our bread bowl 00:22:07.49\00:22:09.49 when we're done into artichoke dip. 00:22:09.52\00:22:11.23 So, what I'm seeing here 00:22:11.26\00:22:12.59 is I'm seeing that brown color 00:22:12.63\00:22:13.96 and I'm gonna go ahead and just add a little bit of water 00:22:14.00\00:22:16.53 to pull that caramel out. 00:22:16.56\00:22:18.27 And now I can stir it 00:22:24.67\00:22:26.01 and just do the same process
