The doctor has explained to me if it's in your 00:01:51.04\00:01:53.71 cards, it's in your cards. The doctors also told me that I 00:01:53.74\00:01:57.68 would never be able to get off my medicine. Again, I'd never walked with a doctor 00:05:28.42\00:05:34.16 before until I came here. 00:05:34.20\00:05:35.53 What was the purpose of him walking with you? 00:05:35.56\00:05:40.04 The purpose was to show us that... The thing about 00:05:40.07\00:05:44.31 Dr. Gallant is that he's done this too. He's actually made a 00:05:44.37\00:05:47.74 lifestyle change and he shared that with us and this is what he 00:05:47.78\00:05:51.55 does. So it kind of inspired us to say hey if he can do it we 00:05:51.58\00:05:56.08 can do it. If he can do it I can do it. So it was really good. 00:05:56.12\00:06:00.66 As far as your lifestyle goes, before you came here were you 00:06:00.69\00:06:05.19 vegetarian? No. No, I was a carnivore, a 00:06:05.23\00:06:12.23 meat eater. Actually this year we made some changes where we 00:06:12.27\00:06:16.27 cut back on the red meat and so coming here was really just the 00:06:16.30\00:06:20.38 next step because I noticed that there were changes in my blood 00:06:20.41\00:06:24.71 sugar numbers from cutting back on red meat. So I figured why 00:06:24.75\00:06:28.98 not take it to the next level and cut out all meat and get off 00:06:29.02\00:06:33.19 all medicine. So that's what I've done. 00:06:33.22\00:06:34.56 How are you dealing with that? 00:06:34.59\00:06:36.46 Right now my numbers aren't as good but my body's transitioning 00:06:36.49\00:06:41.03 I haven't been on medication for two weeks and I feel fine. I'm 00:06:41.06\00:06:46.63 not sick. I'm not foggy. My energy levels are about as good 00:06:46.70\00:06:52.61 as they were when I was in my 20s. I feel great; sleeping well 00:06:52.64\00:06:56.91 So I'm just waiting for things to kind of settle down as we 00:06:56.95\00:07:01.18 go through this process but I'm feeling good. 00:07:01.22\00:07:02.75 What kind of medications were you taking? 00:07:02.78\00:07:04.29 I was on medication for diabetes so I was on Metformin, I was on 00:07:04.32\00:07:12.49 Januvia, another medicine called glimepiride. 00:07:12.53\00:07:15.26 So you were shooting the needle and taking pills. 00:07:15.30\00:07:18.03 No, no needles, just all pills. 00:07:18.07\00:07:19.57 Oh it was all pills. 00:07:19.60\00:07:21.97 All pills but for high blood pressure and also for 00:07:22.00\00:07:25.84 cholesterol. How's your blood pressure? 00:07:25.87\00:07:29.44 Blood pressure is not where I would like it to be but I feel 00:07:29.51\00:07:32.81 fine and that's the thing that's encouraging. In the past I've 00:07:32.85\00:07:37.62 gone off my medication and not felt good at all. So that was 00:07:37.65\00:07:42.66 the big Ah-ha for me to stop the medication and feel good and I 00:07:42.69\00:07:47.66 think it has to do with the diet and the fresh air and the 00:07:47.70\00:07:50.97 walking. So are you going to have any 00:07:51.00\00:07:52.77 problem when you get home sticking to the program? 00:07:52.83\00:07:55.80 It's going to be a little bit of a challenge. But we're excited. 00:07:55.84\00:07:58.94 And I've got my wife you know, 00:07:58.97\00:08:01.34 we're a team in this so I think we're going to be fine. 00:08:01.78\00:08:04.71 That's a huge benefit. Because I brought my wife with me when I 00:08:04.78\00:08:09.52 came to the program. Had it not been for her I wasn't sure that 00:08:09.55\00:08:14.26 I'd stick with it. But I have stuck with it for nine and a 00:08:14.29\00:08:18.59 half years and I've lost a lot of weight, got rid of my 00:08:18.63\00:08:22.86 diabetes, all the pills, etc. etc. and you're going to do the 00:08:22.90\00:08:25.67 same because you have a team You can kind of coach one 00:08:25.70\00:08:30.17 another. So I want to ask you about your overall experience 00:08:30.21\00:08:37.05 here at NEWSTART. It's like nothing I've ever 00:08:37.08\00:08:42.92 experienced before. The thing that really touched me deeply 00:08:42.95\00:08:48.32 was the start of every session we prayed and I think that's 00:08:48.36\00:08:53.43 something that was really new to me, it was really new to my 00:08:53.46\00:08:58.53 wife but it was a thing we looked forward every time 00:08:58.57\00:09:01.10 whether it was hydrotherapy, whether we were seeing the 00:09:01.14\00:09:03.64 doctor, whether before our meals Every aspect of this place is 00:09:03.67\00:09:09.64 God centered and I think that really makes a difference. 00:09:09.68\00:09:13.08 That made such a difference to me that I started studying the 00:09:13.11\00:09:17.42 Bible after I came through the program and was baptized four 00:09:17.45\00:09:21.76 months later just because of this place. How about the 00:09:21.79\00:09:26.39 lectures? Did you go to and receive many lectures? 00:09:26.43\00:09:30.13 We received a lot of lectures and the lectures were 00:09:30.17\00:09:33.84 outstanding and there were many many ah-ha's by going to these 00:09:33.87\00:09:39.74 lectures. Even for diseases, not diabetes. I've got a friend who 00:09:39.77\00:09:45.61 has asthma and I gleaned some information from one of the 00:09:45.65\00:09:48.78 lectures and actually went back to my room and called him and 00:09:48.82\00:09:51.69 I said you know you need to follow this if you want to feel 00:09:51.72\00:09:55.02 better. So the lectures were very informative and very... 00:09:55.09\00:09:58.36 And they're all given mostly by doctors. 00:09:58.39\00:10:00.10 Mostly by doctors. The doctors and the other staff in the 00:10:00.13\00:10:04.30 mornings we have a chaplain actually give us some lectures 00:10:04.33\00:10:08.50 but they're all Christ-based, Jesus Christ-based but also 00:10:08.57\00:10:12.71 health based. So it was integrated. The program was 00:10:12.74\00:10:18.58 great. Good. So the message you're 00:10:18.61\00:10:25.29 going to take back home. Is there anyone living with you and 00:10:25.35\00:10:26.69 your wife. Just my wife and I. We're empty 00:10:26.72\00:10:29.96 nesters. So what about your church 00:10:29.99\00:10:34.90 family? Yes. He's quite a guy. 00:12:15.70\00:12:21.00 He is quite a guy. You know we had a great relationship and a 00:12:21.07\00:12:24.27 great time getting to know each other. 00:12:24.31\00:12:25.77 Yes. I thought he was kind of buff when I first met him. He 00:12:25.81\00:12:30.61 says he lost a few pounds. 00:12:30.65\00:12:32.08 He did. He lost about eight pounds. 00:12:32.11\00:12:34.12 Eight pounds at that. 00:12:34.15\00:12:35.72 Yeah in about 18 days, isn't that amazing? 00:12:35.75\00:12:39.69 Yeah, well he didn't have a whole lot to lose did he? 00:12:39.72\00:12:41.22 No I don't think he had a whole lot to lose but we changed his 00:12:41.26\00:12:46.59 activity schedule. We got him walking more and pushing less 00:12:46.63\00:12:50.83 weight. Yeah that's good. So that will change your physique 00:12:50.87\00:12:55.04 a little bit. Now how much do you have these 00:12:55.07\00:12:59.71 guests, I'll call them, how much do you have them walk? Where's 00:12:59.74\00:13:06.21 the benefit, where's the shall we say, how much do you need 00:13:06.28\00:13:12.72 to walk, in other words, to get healthy? 00:13:12.75\00:13:15.19 Well what we have found is the more a patient walks the more 00:13:15.22\00:13:20.03 healthy they become. So we have these patients walking a lot. 00:13:20.06\00:13:24.17 It was interesting with Joe. Joe used to cycle a lot and I told 00:13:24.20\00:13:29.64 him, I said activity is activity specific. So having exercise 00:13:29.67\00:13:35.08 tolerance for cycling is different than having 00:13:35.11\00:13:37.65 exercise tolerance for walking. 00:13:37.68\00:13:39.41 And he found that out. He had a good healthy cardiac reserve but 00:13:39.45\00:13:44.55 he found that walking was a little different and uses a 00:13:44.59\00:13:47.36 little bit different muscles and it actually, once he got going, 00:13:47.42\00:13:51.66 he was doing great. He was doing up to, I believe, six 00:13:51.69\00:13:54.36 miles a day. Wow. Yeah. 00:13:54.40\00:13:56.56 Can I ask you this. If walking is good is running better? 00:13:56.60\00:14:01.80 That's a great question. You know it depends on what you're 00:14:01.84\00:14:06.41 trying to do, okay. But I believe if you're trying to be 00:14:06.44\00:14:10.95 healthy walking is the best way. Let me tell you why I say that. 00:14:10.98\00:14:15.08 For somebody who is running and running hard we think of that as 00:14:15.12\00:14:19.19 an aerobic activity because they're breathing hard but 00:14:19.22\00:14:23.86 really where aerobics makes a difference is at a cellular 00:14:23.89\00:14:28.46 level, at your tissue level, and at a tissue level when you're 00:14:28.50\00:14:32.17 working so hard, you're breathing fast, your heart rate 00:14:32.20\00:14:35.57 is up, you only burn glucose. Take you all the way back to 00:14:35.60\00:14:38.87 high school chemistry. You go through that cycle we call the 00:14:38.94\00:14:43.18 Krebs cycle. So that is not always the most optimal way to 00:14:43.21\00:14:47.38 be healthy whereas if you walk at a moderate pace where you can 00:14:47.42\00:14:51.69 keep up a conversation if you're walking, it actually burns 50 00:14:51.75\00:14:56.09 percent fat and 50 percent glucose so it's actually better 00:14:56.12\00:15:00.16 for your body and most of us could stand to lose a little bit 00:15:00.20\00:15:04.00 of weight so if we burn a little fat, it's better for us. 00:15:04.03\00:15:08.04 So what I heard you say in the layman's terms, running is to 00:15:08.07\00:15:12.04 get fit, walking is to get healthy. 00:15:12.07\00:15:15.51 I like that. You like that? 00:15:15.54\00:15:17.65 I like that and also too running tends to be hard on your joints. 00:15:17.71\00:15:21.08 Yeah. Yeah I don't do it very much 00:15:21.12\00:15:24.59 either. Our knee joint is a straight joint so every time we 00:15:24.65\00:15:28.99 run there's an impact between those two bones, whereas animals 00:15:29.02\00:15:33.33 that run a lot have more of a bowed knee joint so they land 00:15:33.36\00:15:37.63 lighter. It's not as hard on their body. Walking is an 00:15:37.67\00:15:41.24 exercise we can do. Just about everybody can do it. You don't 00:15:41.27\00:15:44.64 have to have a lot of special equipment. You don't even have 00:15:44.67\00:15:48.24 to have a partner although a partner is very helpful because 00:15:48.28\00:15:51.41 it motivates both of you to keep going. You don't have to belong 00:15:51.45\00:15:54.58 to any special club or anything. You know just a good pair of 00:15:54.62\00:15:57.72 shoes is really all we need. 00:15:57.75\00:15:59.09 Good to hear and I know the viewers are going to benefit by 00:15:59.12\00:16:02.42 what you're saying here. I want to get back to Joe because we 00:16:02.46\00:16:05.83 only have a few minutes left. 00:16:05.86\00:16:07.30 Let me give you one more thing about Joe. Yes. I told Joe that 00:16:07.33\00:16:12.50 walking was going to be his new medicine for his diabetes. Joe 00:16:12.53\00:16:16.84 was worried about his diabetes because he's been on pills and 00:16:16.87\00:16:21.64 he was worried about having to take shots. I told him that 00:16:21.68\00:16:26.41 walking for an hour is equivalent to five units of 00:16:26.45\00:16:30.22 insulin. So I told him that's like getting a free shot without 00:16:30.25\00:16:35.02 the needle and he loved it. He was all in at that point. 00:16:35.06\00:16:38.19 That's so good to hear you say that. Well what about the blood 00:16:38.23\00:16:43.10 pressure now? I know he mentioned he had some issues 00:16:43.13\00:16:46.74 with blood pressure and issues with diabetes. Is he off both 00:16:46.80\00:16:50.27 medications? He got off of all of his 00:16:50.31\00:16:52.67 medications while he was here and his numbers fluctuated a 00:16:52.74\00:16:56.61 little bit but I told him don't get excited about that because 00:16:56.64\00:17:01.25 he's going through a transition. His body is changing and as we 00:17:01.28\00:17:04.99 were getting to the end of the program his numbers were really 00:17:05.02\00:17:08.82 starting to come down. It was fascinating. We did a treadmill 00:17:08.86\00:17:12.76 test at the beginning and at the end where they start off as 00:17:12.79\00:17:17.67 walking and he improved his time on the treadmill and the 00:17:17.70\00:17:22.80 endurance and the physical work of the test by a significant 00:17:22.84\00:17:27.94 amount just in 18 days. Unbelievable. Yeah. 00:17:27.98\00:17:33.01 You know before we sat down, before we started rolling the 00:17:33.08\00:17:37.02 camera you said you had something really nice to share 00:17:37.05\00:17:40.96 about his last... We do two blood draws. 00:17:40.99\00:17:43.83 Two blood draws, that's right. 00:17:43.86\00:17:45.49 And the last one you had something you wanted to share. 00:17:45.53\00:17:48.56 So his first set of numbers were up, definitely were up and his 00:17:48.63\00:17:53.57 blood sugars came down and then started to go back up a little 00:17:53.64\00:17:58.54 bit slowly. Some of that was related to maybe some of the 00:17:58.57\00:18:03.14 things that were taking place while he was here. You know, we 00:18:03.18\00:18:08.32 had a visit and we prayed about what God was doing to change 00:18:08.38\00:18:13.05 his body and make him healthy. And his numbers that morning 00:18:13.09\00:18:17.76 had been high and after we prayed and after he'd eaten 00:18:17.79\00:18:23.20 lunch, his numbers dropped significantly. Wow! Praise God. 00:18:23.23\00:18:28.60 Praise God. That's the way God works. 00:18:28.64\00:18:30.97 When is the last time you went to the doctor and he prayed with 00:18:31.04\00:18:34.84 you? Or let alone he took a walk with you and then invited you to 00:18:34.88\00:18:39.15 his home to fix you a meal. It just isn't done. Doctor, I want 00:18:39.18\00:18:43.18 to thank you. Two cups of raw 00:19:22.36\00:19:25.83 sunflower seeds, unsalted, and that's really the secret 00:19:25.86\00:19:28.60 ingredient to this recipe because it's going to give us 00:19:28.63\00:19:32.13 that oil in the nut that we don't use. At NEWSTART we don't 00:19:32.20\00:19:35.50 use oil. So we're going to get the oils from our nuts or our 00:19:35.54\00:19:39.27 seeds I should say. We'll be using a grated carrot. Okay. So let's get started. What you'll need in 00:20:03.03\00:20:07.44 terms of appliances for this is your food processor with the 00:20:07.47\00:20:11.64 S blade. What I'm going to do is I'm going to add my two cups of 00:20:11.67\00:20:17.78 my sunflower seeds along with my dry spices. So I'm adding my 00:20:17.81\00:20:23.85 cumin, my garlic, thyme, some oregano and then some nice 00:20:23.89\00:20:32.63 Herbamare salt or sea salt. So this is a way to make sure all your burgers 00:26:07.00\00:26:11.33 are the same size and they'll cook the same time.
