00:11 and more specifically 00:12 to the National Museum of Costa Rica 00:15 which is directly behind me. 00:16 Next up, 00:18 we go to the Mission 360 Kitchen 00:19 to learn how to make pistachio dipoles 00:22 which sound terrific and must be healthy 00:25 or otherwise they wouldn't be on this program. 00:27 Welcome to our Mission 360 Kitchen. 00:30 We like to think of the world as a global neighborhood 00:32 and today we're going to bring you 00:33 a recipe from Iran. 00:36 So, we're going to try something that 00:38 I think is going to be a little bit different 00:40 but it's again one of those no fail recipes. 00:43 One thing I learned about Iran is that in ancient times, 00:49 dates and pistachios were in existence 00:51 and so it's very possible 00:53 that Queen Esther might have served 00:54 this particular dish at her banquet. 00:56 Really. 00:57 So certainly royalty would have enjoyed it. 00:59 So, we'll give it a try and see how we do. 01:03 We're going to make pistachio date balls. 01:05 Sounds delicious. 01:06 What are our ingredients, Kayla? 01:08 We need one cup of dates. Okay. 01:11 One cup of pistachios. Okay. 01:13 Then up to half a teaspoon of cardamom. 01:16 Okay. So not very many ingredients. 01:18 And no added sugar either. That's great. 01:21 Now the dates that we have today 01:23 they are were dried dates, originally, very dry. 01:26 So I kind of soaked them in water for a little bit, 01:29 so we'll see how they go. 01:30 If they're too dry, they're not going to blend up. 01:33 If they're too wet, 01:34 it could be a different consistency. 01:37 But otherwise, if you have dates 01:38 that are quite fresh or the latest crop, 01:41 you might get away with just chopping those 01:43 and not adding any liquid at all. 01:45 Okay. So, let's see how we do. 01:48 Let's start with the dates. 01:50 And we're going to put those in a food processor 01:52 and just grind it up a bit 01:54 because we want it to be smooth. 01:58 These are already a little sticky. 01:59 Yeah. 02:00 Which should altogether, might come in handy. 02:03 Yes. 02:04 I think this is a recipe that you could actually try 02:07 other dried fruits with as well. 02:09 But we're gonna try to grind this up 02:11 and make it fairly smooth first. 02:14 Are you ready? Yes. 02:28 So that looks pretty good actually. 02:30 Yeah. Let's just scrape it down. 02:35 Shall I pulse it again for a bit? 02:37 Or do you want to add the nuts? 02:38 I think we can add the nuts actually, 02:39 it's pretty smooth. 02:41 Okay. 02:42 So we're going to try that 02:44 and we have a small food processor. 02:45 So, we hope that we're going to be okay 02:46 doing it this way. 02:48 But you'll get the idea anyway. Okay. 02:50 Oh, let me add the cardamom. 02:53 You don't have to add it all 02:54 but it does add some exotic flavor. 02:57 So, I am going to add it all. 02:58 It's a lovely spice. I think so too. 03:01 All right. 03:08 Scrape down here. Scrape it down a little. 03:12 And this mixture is going to be very thick. 03:14 So that is definitely going to happen 03:16 when you make it. 03:21 Okay. 03:33 And we'll just scrape it down again. 03:36 This is a recipe that you can also substitute 03:38 a different kind of nut if you wish. 03:41 If you prefer walnuts or almonds, 03:44 I'd certainly give it a try. 03:45 And I think you could also do it 03:47 with something like apricots 03:48 which is another thing I believe. 03:50 That would be different. Was important in those days. 03:53 So yes, be adventurous, 03:55 but I really recommend starting out with the dates 03:57 because it's so good. 04:00 So, it's getting thick just as it's supposed to. 04:15 Okay, I think one more time is probably gonna be okay. 04:18 Okay. 04:19 It's very thick. It is very stiff. 04:22 It's gonna hold together really well, 04:23 Yes. 04:25 So, you know, 04:26 you're going to be pulsing this or doing it several times 04:29 and scraping down the whole, that's the way it should be. 04:32 Mm-hmm. Okay. 04:33 Let's cooperate. 04:45 Let's try that. Okay. 04:47 Yeah, I think it's fine and it's okay 04:49 if it's a little bit chunky, so that's good. 04:51 We're gonna turn that into this bowl. 04:55 Okay. 04:57 Let's see here. 04:59 Try not to make too much of a mess. 05:01 I'll try to catch anything that flies away. 05:03 Thank you. Dates. 05:06 Oh, it smells good already. It does. 05:07 I love the smell of cardamom, 05:09 it smells like the holidays to me. 05:10 Yes. 05:12 And this is another one of those recipes 05:13 that you can make in advance 05:15 and if you have company coming for the holidays, 05:18 just make it and store it in a, in an airtight container. 05:21 So, it'll be nice and dry but keep it in a cool place. 05:24 Okay. That's okay. 05:29 Okay, so we are going to take these, 05:34 take a little bit like about a tablespoon size 05:37 and we're both going to work on this 05:38 and we're going to roll it up into little balls. 05:42 Kayla's gonna roll hers in coconut 05:43 and I'm going to roll mine in some chopped pistachios. 05:48 And again, you can use any kind of nut you want. 05:50 But this is what we're using today. 05:51 Sounds good. So, let's, let's do it. 05:57 Actually, I think the texture is what's right for us. 06:01 Oh, it is, it is. It's moist enough to have it. 06:03 Yeah, it's actually better than the last time 06:05 that I made them. 06:07 And that just depends on the dates, doesn't it? 06:09 I think I probably had them a little too dry before, 06:13 so this is better. 06:15 Okay. 06:17 So, see that looks like something you'd pay 06:19 a lot of money for. 06:21 Yours is beautiful. I like it. 06:24 It's really easy to make. 06:27 They really are. 06:28 And you can do some with coconut 06:29 and pistachio if you want 06:31 but it's sort of easier to tell them apart this way. 06:35 So people who have a preference will be able to select easily. 06:38 This is something you can play around 06:40 with the flavors quite a bit. 06:41 Yes, I think so too. 06:42 Could even have it with honey or something. 06:44 I don't know if that make it too sticky. 06:45 But I think it's worth a try. 06:47 Definitely. Yeah. 06:49 But definitely you want the cardamom 06:50 or if you don't care for cardamom, 06:52 maybe this, the cinnamon or nutmeg, 06:55 something like that. 06:57 So, let me just toss this around here 06:59 and pressing them into just a little. 07:03 So there, that look good. 07:05 Okay, one more each 07:06 and then I think we've got a taste it. 07:10 That's torture to make them, not get to try them. 07:14 It sure is. 07:15 But as you can see, once you get the hang of it, 07:17 the recipe actually goes quite quickly. 07:21 And again, if you are like me, 07:24 when my company arrives I get distracted. 07:26 So I like all the make hand type of recipes 07:29 that I can come up with. 07:30 So are we ready to try? Delicious. 07:43 And it's much better than the last time I made it. 07:46 So I hope everyone enjoys the pistachio date balls. 07:51 Feel free to vary it any way you wish. 07:53 And thank you for visiting us at our Mission 360 Kitchen. 07:56 Hope you enjoy it. 08:05 In 2000, the Adventist Church in Ploesti, Romania, 08:09 cleared two rooms to start kindergarten. 08:11 Now the two rooms grew 08:13 into two school buildings 08:14 that soon will house 200 students. 08:17 It started when a group of parents 08:19 and teachers from the church 08:20 dreamed of a school to provide children 08:22 a safe environment to grow. 08:24 This desire led them to set up 08:26 two private kindergartens in Ploiesti 08:28 in a space provided by the Adventist church. 08:31 Parents loved the idea of an Adventist school. 08:34 Both of my children were enrolled in public school 08:37 before coming here. 08:39 It's difficult when I teach my children 08:41 about our faith at home 08:43 and they encounter conflicting beliefs at school. 08:46 More and more parents prayed for a school 08:48 that would help instill the principles 08:50 of the Seventh-day Adventist church 08:52 in their children's hearts. 08:54 And in 2015, Excelsis School opened. 08:57 It started with only 22 students, 08:59 but every year, their numbers doubled. 09:04 Today over 120 students 09:06 from kindergarten to eighth grade 09:08 are enjoying Christ-centered education 09:11 at Excelsis School. 09:13 Every morning they start their day 09:14 with a devotional and a prayer. 09:16 My children are safe here, physically and spiritually. 09:20 Aside from learning subjects 09:21 like math or physics or chemistry, 09:24 more importantly, they learn about life and God. 09:27 The school administrators help to connect families 09:29 who cannot pay tuition with potential sponsors. 09:32 As of today, 09:34 they have over 20 sponsored students. 09:36 Parents began hearing about the quality education 09:39 and the values taught in Excelsis School. 09:41 Some even send their children a long way from home 09:44 in order to study in the environment 09:45 that the school provides. 09:47 Fifty-eight such students live outside Ploiesti 09:51 and some of them travel up to 80 kilometers daily 09:54 to go to school. 09:55 I love that the students here are very friendly 09:58 and we have a lot of extra-curricular activities. 10:01 Our teachers don't yell at the students, 10:03 and they don't discriminate against us on any basis. 10:06 They're very nice and they respect us, 10:08 even if we're just kids. 10:10 In this school, 10:11 students prepare for their classes every day. 10:14 We teach them to explore and discover new things, 10:16 and we prepare them for a better future. 10:19 The students are not perfect, neither are the teachers. 10:23 But we try to understand them, 10:24 and we learn that behind every child 10:27 there is a special story. 10:29 The parents trust us. 10:31 And together, the teachers, students, 10:34 and their parents are a family. 10:37 The school building is now working 10:38 at full capacity. 10:40 Staff rooms are used as additional classrooms, 10:43 and the archive room is used as a library. 10:46 To accommodate more students, 10:47 the school has started construction 10:49 of a new building 10:50 which will allow them to enroll over 200 students. 10:54 Soon Excelsis School will expand its ministry 10:57 to teach even more children about the love of Jesus. 11:01 This school answers 11:03 the needs of Christian families in Ploiesti 11:05 because they want their children 11:07 to learn good values and principles. 11:10 Our goal is to present a beautiful God 11:13 not only to the children but also to their parents. 11:33 Well, that's about it for today's program. 11:34 I hope that you've been challenged and inspired 11:38 by our 360 degree view of mission 11:40 around the world. 11:42 I hope you've enjoyed the stories from Andorra 11:45 and from Romania and from here in Costa Rica. 11:48 Sometimes we tend to focus on the good stories, 11:51 but of course, 11:53 there are many challenges that we are still facing. 11:55 I think of the 10/40 Window, 11:57 I think of the growing cities of the world. 11:59 I think also 12:00 of the increasing number of people 12:02 who are secular and postmodern, 12:04 so please continue to pray for mission. 12:06 And please continue to support it 12:08 with your mission offerings, 12:09 and with your donations to Global Mission 12:12 and, of course, with your personal involvement. 12:14 We appreciate you being part of our Adventist Mission team. 12:18 Well, for Adventist Mission, I'm Gary Krause. 12:20 And I hope that you can join me next time 12:22 right here on Mission 360. |
