Welcome back to San Jose 00:00:10.01\00:00:11.47 and more specifically 00:00:11.51\00:00:12.84 to the National Museum of Costa Rica 00:00:12.87\00:00:15.38 which is directly behind me. 00:00:15.41\00:00:16.75 Next up, 00:00:16.78\00:00:18.11 we go to the Mission 360 Kitchen 00:00:18.15\00:00:19.58 to learn how to make pistachio dipoles 00:00:19.61\00:00:22.88 which sound terrific and must be healthy 00:00:22.92\00:00:25.15 or otherwise they wouldn't be on this program. 00:00:25.19\00:00:27.42 Welcome to our Mission 360 Kitchen. 00:00:27.46\00:00:30.06 We like to think of the world as a global neighborhood 00:00:30.09\00:00:32.29 and today we're going to bring you 00:00:32.33\00:00:33.80 a recipe from Iran. 00:00:33.83\00:00:36.10 So, we're going to try something that 00:00:36.13\00:00:38.93 I think is going to be a little bit different 00:00:38.97\00:00:40.30 but it's again one of those no fail recipes. 00:00:40.34\00:00:43.87 One thing I learned about Iran is that in ancient times, 00:00:43.91\00:00:49.01 dates and pistachios were in existence 00:00:49.04\00:00:51.61 and so it's very possible 00:00:51.65\00:00:52.98 that Queen Esther might have served 00:00:53.01\00:00:54.42 this particular dish at her banquet. 00:00:54.45\00:00:56.15 Really. 00:00:56.18\00:00:57.52 So certainly royalty would have enjoyed it. 00:00:57.55\00:00:59.89 So, we'll give it a try and see how we do. 00:00:59.92\00:01:03.02 We're going to make pistachio date balls. 00:01:03.06\00:01:05.19 Sounds delicious. 00:01:05.23\00:01:06.56 What are our ingredients, Kayla? 00:01:06.59\00:01:08.76 We need one cup of dates. Okay. 00:01:08.80\00:01:11.03 One cup of pistachios. Okay. 00:01:11.07\00:01:13.34 Then up to half a teaspoon of cardamom. 00:01:13.37\00:01:16.17 Okay. So not very many ingredients. 00:01:16.20\00:01:18.54 And no added sugar either. That's great. 00:01:18.57\00:01:21.38 Now the dates that we have today 00:01:21.41\00:01:23.11 they are were dried dates, originally, very dry. 00:01:23.14\00:01:26.85 So I kind of soaked them in water for a little bit, 00:01:26.88\00:01:29.22 so we'll see how they go. 00:01:29.25\00:01:30.79 If they're too dry, they're not going to blend up. 00:01:30.82\00:01:33.02 If they're too wet, 00:01:33.05\00:01:34.39 it could be a different consistency. 00:01:34.42\00:01:37.13 But otherwise, if you have dates 00:01:37.16\00:01:38.66 that are quite fresh or the latest crop, 00:01:38.69\00:01:41.60 you might get away with just chopping those 00:01:41.63\00:01:43.30 and not adding any liquid at all. 00:01:43.33\00:01:45.33 Okay. So, let's see how we do. 00:01:45.37\00:01:48.27 Let's start with the dates. 00:01:48.30\00:01:50.64 And we're going to put those in a food processor 00:01:50.67\00:01:52.84 and just grind it up a bit 00:01:52.87\00:01:54.91 because we want it to be smooth. 00:01:54.94\00:01:58.01 These are already a little sticky. 00:01:58.05\00:01:59.58 Yeah. 00:01:59.61\00:02:00.95 Which should altogether, might come in handy. 00:02:00.98\00:02:03.55 Yes. 00:02:03.59\00:02:04.92 I think this is a recipe that you could actually try 00:02:04.95\00:02:07.12 other dried fruits with as well. 00:02:07.16\00:02:09.59 But we're gonna try to grind this up 00:02:09.62\00:02:11.06 and make it fairly smooth first. 00:02:11.09\00:02:14.20 Are you ready? Yes. 00:02:14.23\00:02:15.56 So that looks pretty good actually. 00:02:28.71\00:02:30.61 Yeah. Let's just scrape it down. 00:02:30.65\00:02:32.51 Shall I pulse it again for a bit? 00:02:35.15\00:02:37.22 Or do you want to add the nuts? 00:02:37.25\00:02:38.59 I think we can add the nuts actually, 00:02:38.62\00:02:39.95 it's pretty smooth. 00:02:39.99\00:02:41.32 Okay. 00:02:41.36\00:02:42.69 So we're going to try that 00:02:42.72\00:02:44.06 and we have a small food processor. 00:02:44.09\00:02:45.43 So, we hope that we're going to be okay 00:02:45.46\00:02:46.80 doing it this way. 00:02:46.83\00:02:48.16 But you'll get the idea anyway. Okay. 00:02:48.20\00:02:50.37 Oh, let me add the cardamom. 00:02:50.40\00:02:53.57 You don't have to add it all 00:02:53.60\00:02:54.94 but it does add some exotic flavor. 00:02:54.97\00:02:57.11 So, I am going to add it all. 00:02:57.14\00:02:58.64 It's a lovely spice. I think so too. 00:02:58.67\00:03:01.61 All right. 00:03:01.64\00:03:02.98 Scrape down here. Scrape it down a little. 00:03:08.78\00:03:12.25 And this mixture is going to be very thick. 00:03:12.29\00:03:14.79 So that is definitely going to happen 00:03:14.82\00:03:16.79 when you make it. 00:03:16.83\00:03:18.16 Okay. 00:03:21.03\00:03:22.36 And we'll just scrape it down again. 00:03:33.94\00:03:36.48 This is a recipe that you can also substitute 00:03:36.51\00:03:38.91 a different kind of nut if you wish. 00:03:38.95\00:03:41.78 If you prefer walnuts or almonds, 00:03:41.82\00:03:44.05 I'd certainly give it a try. 00:03:44.09\00:03:45.82 And I think you could also do it 00:03:45.85\00:03:47.19 with something like apricots 00:03:47.22\00:03:48.56 which is another thing I believe. 00:03:48.59\00:03:50.23 That would be different. Was important in those days. 00:03:50.26\00:03:53.23 So yes, be adventurous, 00:03:53.26\00:03:55.66 but I really recommend starting out with the dates 00:03:55.70\00:03:57.77 because it's so good. 00:03:57.80\00:04:00.00 So, it's getting thick just as it's supposed to. 00:04:00.04\00:04:02.50 Okay, I think one more time is probably gonna be okay. 00:04:15.72\00:04:18.52 Okay. 00:04:18.55\00:04:19.92 It's very thick. It is very stiff. 00:04:19.95\00:04:22.26 It's gonna hold together really well, 00:04:22.29\00:04:23.63 Yes. 00:04:23.66\00:04:25.13 So, you know, 00:04:25.16\00:04:26.49 you're going to be pulsing this or doing it several times 00:04:26.53\00:04:29.46 and scraping down the whole, that's the way it should be. 00:04:29.50\00:04:32.20 Mm-hmm. Okay. 00:04:32.23\00:04:33.57 Let's cooperate. 00:04:33.60\00:04:34.94 Let's try that. Okay. 00:04:45.58\00:04:47.62 Yeah, I think it's fine and it's okay 00:04:47.65\00:04:49.22 if it's a little bit chunky, so that's good. 00:04:49.25\00:04:51.29 We're gonna turn that into this bowl. 00:04:51.32\00:04:55.19 Okay. 00:04:55.22\00:04:57.06 Let's see here. 00:04:57.09\00:04:59.06 Try not to make too much of a mess. 00:04:59.09\00:05:01.46 I'll try to catch anything that flies away. 00:05:01.50\00:05:03.57 Thank you. Dates. 00:05:03.60\00:05:06.07 Oh, it smells good already. It does. 00:05:06.10\00:05:07.77 I love the smell of cardamom, 00:05:07.80\00:05:09.34 it smells like the holidays to me. 00:05:09.37\00:05:10.71 Yes. 00:05:10.74\00:05:12.07 And this is another one of those recipes 00:05:12.11\00:05:13.44 that you can make in advance 00:05:13.48\00:05:15.51 and if you have company coming for the holidays, 00:05:15.54\00:05:18.01 just make it and store it in a, in an airtight container. 00:05:18.05\00:05:21.85 So, it'll be nice and dry but keep it in a cool place. 00:05:21.88\00:05:24.65 Okay. That's okay. 00:05:24.69\00:05:26.29 Okay, so we are going to take these, 00:05:29.72\00:05:34.03 take a little bit like about a tablespoon size 00:05:34.06\00:05:37.07 and we're both going to work on this 00:05:37.10\00:05:38.77 and we're going to roll it up into little balls. 00:05:38.80\00:05:41.97 Kayla's gonna roll hers in coconut 00:05:42.00\00:05:43.94 and I'm going to roll mine in some chopped pistachios. 00:05:43.97\00:05:48.21 And again, you can use any kind of nut you want. 00:05:48.24\00:05:50.38 But this is what we're using today. 00:05:50.41\00:05:51.95 Sounds good. So, let's, let's do it. 00:05:51.98\00:05:54.42 Actually, I think the texture is what's right for us. 00:05:57.99\00:06:01.19 Oh, it is, it is. It's moist enough to have it. 00:06:01.22\00:06:03.63 Yeah, it's actually better than the last time 00:06:03.66\00:06:05.66 that I made them. 00:06:05.69\00:06:07.86 And that just depends on the dates, doesn't it? 00:06:07.90\00:06:09.50 I think I probably had them a little too dry before, 00:06:09.53\00:06:13.20 so this is better. 00:06:13.23\00:06:15.90 Okay. 00:06:15.94\00:06:17.61 So, see that looks like something you'd pay 00:06:17.64\00:06:19.71 a lot of money for. 00:06:19.74\00:06:21.08 Yours is beautiful. I like it. 00:06:21.11\00:06:24.68 It's really easy to make. 00:06:24.71\00:06:27.15 They really are. 00:06:27.18\00:06:28.52 And you can do some with coconut 00:06:28.55\00:06:29.88 and pistachio if you want 00:06:29.92\00:06:31.25 but it's sort of easier to tell them apart this way. 00:06:31.29\00:06:35.36 So people who have a preference will be able to select easily. 00:06:35.39\00:06:38.76 This is something you can play around 00:06:38.79\00:06:40.13 with the flavors quite a bit. 00:06:40.16\00:06:41.50 Yes, I think so too. 00:06:41.53\00:06:42.86 Could even have it with honey or something. 00:06:42.90\00:06:44.23 I don't know if that make it too sticky. 00:06:44.27\00:06:45.73 But I think it's worth a try. 00:06:45.77\00:06:47.30 Definitely. Yeah. 00:06:47.34\00:06:49.10 But definitely you want the cardamom 00:06:49.14\00:06:50.61 or if you don't care for cardamom, 00:06:50.64\00:06:52.31 maybe this, the cinnamon or nutmeg, 00:06:52.34\00:06:55.68 something like that. 00:06:55.71\00:06:57.05 So, let me just toss this around here 00:06:57.08\00:06:59.85 and pressing them into just a little. 00:06:59.88\00:07:03.12 So there, that look good. 00:07:03.15\00:07:05.39 Okay, one more each 00:07:05.42\00:07:06.76 and then I think we've got a taste it. 00:07:06.79\00:07:10.83 That's torture to make them, not get to try them. 00:07:10.86\00:07:14.20 It sure is. 00:07:14.23\00:07:15.56 But as you can see, once you get the hang of it, 00:07:15.60\00:07:17.73 the recipe actually goes quite quickly. 00:07:17.77\00:07:21.00 And again, if you are like me, 00:07:21.04\00:07:24.27 when my company arrives I get distracted. 00:07:24.31\00:07:26.81 So I like all the make hand type of recipes 00:07:26.84\00:07:29.24 that I can come up with. 00:07:29.28\00:07:30.75 So are we ready to try? Yes. 00:07:30.78\00:07:32.75 Can I try one of yours? Yes. 00:07:32.78\00:07:35.02 Okay. Thank you. 00:07:35.05\00:07:36.38 I'll try one of the coconut ones. 00:07:36.42\00:07:37.75 Good. Okay. 00:07:37.79\00:07:39.12 This is so easy. Delicious. 00:07:42.12\00:07:43.63 And it's much better than the last time I made it. 00:07:43.66\00:07:46.43 So I hope everyone enjoys the pistachio date balls. 00:07:46.46\00:07:51.00 Feel free to vary it any way you wish. 00:07:51.03\00:07:53.70 And thank you for visiting us at our Mission 360 Kitchen. 00:07:53.74\00:07:56.77 Hope you enjoy it. 00:07:56.81\00:07:58.14 In 2000, the Adventist Church in Ploesti, Romania, 00:08:05.65\00:08:09.22 cleared two rooms to start kindergarten. 00:08:09.25\00:08:11.69 Now the two rooms grew 00:08:11.72\00:08:13.22 into two school buildings 00:08:13.25\00:08:14.86 that soon will house 200 students. 00:08:14.89\00:08:17.76 It started when a group of parents 00:08:17.79\00:08:19.19 and teachers from the church 00:08:19.23\00:08:20.56 dreamed of a school to provide children 00:08:20.60\00:08:22.46 a safe environment to grow. 00:08:22.50\00:08:24.47 This desire led them to set up 00:08:24.50\00:08:26.50 two private kindergartens in Ploiesti 00:08:26.53\00:08:28.77 in a space provided by the Adventist church. 00:08:28.80\00:08:31.57 Parents loved the idea of an Adventist school. 00:08:31.61\00:08:34.84 Both of my children were enrolled in public school 00:08:34.88\00:08:37.85 before coming here. 00:08:37.88\00:08:39.21 It's difficult when I teach my children 00:08:39.25\00:08:41.25 about our faith at home 00:08:41.28\00:08:43.32 and they encounter conflicting beliefs at school. 00:08:43.35\00:08:46.72 More and more parents prayed for a school 00:08:46.76\00:08:48.79 that would help instill the principles 00:08:48.82\00:08:50.66 of the Seventh-day Adventist church 00:08:50.69\00:08:52.26 in their children's hearts. 00:08:52.29\00:08:54.03 And in 2015, Excelsis School opened. 00:08:54.06\00:08:57.73 It started with only 22 students, 00:08:57.77\00:08:59.93 but every year, their numbers doubled. 00:08:59.97\00:09:04.47 Today over 120 students 00:09:04.51\00:09:06.54 from kindergarten to eighth grade 00:09:06.57\00:09:08.41 are enjoying Christ-centered education 00:09:08.44\00:09:10.98 at Excelsis School. 00:09:11.01\00:09:13.25 Every morning they start their day 00:09:13.28\00:09:14.88 with a devotional and a prayer. 00:09:14.92\00:09:16.58 My children are safe here, physically and spiritually. 00:09:16.62\00:09:20.09 Aside from learning subjects 00:09:20.12\00:09:21.72 like math or physics or chemistry, 00:09:21.76\00:09:24.06 more importantly, they learn about life and God. 00:09:24.09\00:09:27.53 The school administrators help to connect families 00:09:27.56\00:09:29.86 who cannot pay tuition with potential sponsors. 00:09:29.90\00:09:32.73 As of today, 00:09:32.77\00:09:34.10 they have over 20 sponsored students. 00:09:34.14\00:09:36.40 Parents began hearing about the quality education 00:09:36.44\00:09:39.01 and the values taught in Excelsis School. 00:09:39.04\00:09:41.84 Some even send their children a long way from home 00:09:41.88\00:09:44.25 in order to study in the environment 00:09:44.28\00:09:45.81 that the school provides. 00:09:45.85\00:09:47.55 Fifty-eight such students live outside Ploiesti 00:09:47.58\00:09:51.02 and some of them travel up to 80 kilometers daily 00:09:51.05\00:09:54.06 to go to school. 00:09:54.09\00:09:55.52 I love that the students here are very friendly 00:09:55.56\00:09:58.39 and we have a lot of extra-curricular activities. 00:09:58.43\00:10:01.53 Our teachers don't yell at the students, 00:10:01.56\00:10:03.47 and they don't discriminate against us on any basis. 00:10:03.50\00:10:06.74 They're very nice and they respect us, 00:10:06.77\00:10:08.50 even if we're just kids. 00:10:08.54\00:10:10.51 In this school, 00:10:10.54\00:10:11.87 students prepare for their classes every day. 00:10:11.91\00:10:14.14 We teach them to explore and discover new things, 00:10:14.18\00:10:16.95 and we prepare them for a better future. 00:10:16.98\00:10:19.71 The students are not perfect, neither are the teachers. 00:10:19.75\00:10:23.05 But we try to understand them, 00:10:23.08\00:10:24.95 and we learn that behind every child 00:10:24.99\00:10:27.89 there is a special story. 00:10:27.92\00:10:29.52 The parents trust us. 00:10:29.56\00:10:31.69 And together, the teachers, students, 00:10:31.73\00:10:34.00 and their parents are a family. 00:10:34.03\00:10:37.03 The school building is now working 00:10:37.07\00:10:38.67 at full capacity. 00:10:38.70\00:10:40.27 Staff rooms are used as additional classrooms, 00:10:40.30\00:10:43.34 and the archive room is used as a library. 00:10:43.37\00:10:46.21 To accommodate more students, 00:10:46.24\00:10:47.68 the school has started construction 00:10:47.71\00:10:49.04 of a new building 00:10:49.08\00:10:50.41 which will allow them to enroll over 200 students. 00:10:50.45\00:10:54.05 Soon Excelsis School will expand its ministry 00:10:54.08\00:10:57.19 to teach even more children about the love of Jesus. 00:10:57.22\00:11:01.72 This school answers 00:11:01.76\00:11:03.12 the needs of Christian families in Ploiesti 00:11:03.16\00:11:05.76 because they want their children 00:11:05.79\00:11:07.83 to learn good values and principles. 00:11:07.86\00:11:10.43 Our goal is to present a beautiful God 00:11:10.47\00:11:13.34 not only to the children but also to their parents. 00:11:13.37\00:11:16.60 Well, that's about it for today's program. 00:11:33.05\00:11:34.92 I hope that you've been challenged and inspired 00:11:34.96\00:11:37.99 by our 360 degree view of mission 00:11:38.03\00:11:40.86 around the world. 00:11:40.90\00:11:42.30 I hope you've enjoyed the stories from Andorra 00:11:42.33\00:11:45.17 and from Romania and from here in Costa Rica. 00:11:45.20\00:11:48.90 Sometimes we tend to focus on the good stories, 00:11:48.94\00:11:51.91 but of course, 00:11:51.94\00:11:53.27 there are many challenges that we are still facing. 00:11:53.31\00:11:55.68 I think of the 10/40 Window, 00:11:55.71\00:11:57.21 I think of the growing cities of the world. 00:11:57.25\00:11:59.38 I think also 00:11:59.41\00:12:00.75 of the increasing number of people 00:12:00.78\00:12:02.35 who are secular and postmodern, 00:12:02.38\00:12:04.42 so please continue to pray for mission. 00:12:04.45\00:12:06.82 And please continue to support it 00:12:06.86\00:12:08.39 with your mission offerings, 00:12:08.42\00:12:09.79 and with your donations to Global Mission 00:12:09.82\00:12:12.03 and, of course, with your personal involvement. 00:12:12.06\00:12:14.53 We appreciate you being part of our Adventist Mission team. 00:12:14.56\00:12:18.37 Well, for Adventist
