00:37 Welcome to our Mission 360° Kitchen.
00:39 We like to think of the world
00:41 that we live in as a global neighborhood.
00:43 And so we've chosen to introduce our audience
00:45 to some easy to make international recipes.
00:49 So we're gonna talk about a mango salsa recipe
00:53 that we love.
00:54 Now I think, Kayla, you had some other suggestions
00:57 if you don't have mangoes, what would you use?
00:59 You could even use peaches.
01:00 Peaches, apricots? Definitely.
01:03 Basically, I think any kind of summer fruit,
01:05 but we're using mangoes today
01:07 and we are doing this as a nod to our friends
01:12 in the Caribbean Islands.
01:13 So we're going to start out with some mangoes.
01:17 Actually, could you read our list for us
01:18 and so we know what we're putting in.
01:40 Well, it sounds pretty easy.
01:41 I think anyone could make it.
01:43 It just takes a little time to prep it,
01:45 but then it's really excellent.
01:46 So it's well worth your time and effort.
01:48 Great for summer.
01:49 So let's start with the mangoes
01:52 and I'm just going to put them in this bowl here.
01:55 These were are fresh mangoes so when it comes July
01:58 or whenever they come in season in your area,
02:02 take advantage of that.
02:04 It look beautiful, they smell really good.
02:07 This is the red bell pepper.
02:11 Oh, it's colorful already.
02:13 For now I'm just going to take some of the green onion
02:17 and just put that into the bowl.
02:22 We have cilantro which is one of my favorite smells.
02:25 It smells so good.
02:27 Cilantro makes everything better.
02:29 Now we've got two jalapeno peppers in here.
02:33 I recommend that if you're not used to having jalapenos
02:36 so you start out with just some because it is a little spicy,
02:40 but it's not super hot like Scotch bonnet peppers,
02:43 but give that a try.
02:44 We'll start small.
02:46 You can add more later if you need to.
02:47 Yes.
02:49 And this is the lemon and lime juice.
02:53 Actually, it makes quite a large batch.
02:55 So I'm going to just stir this around a little bit
02:58 just to combine all the ingredients.
03:01 Now normally you would make this
03:03 and put it in the refrigerator
03:04 so that all the flavors will melt
03:06 for about half an hour.
03:08 And it's going to keep for several days after that,
03:11 you know, fresh is always best.
03:15 But today we're wanting to sample it right away.
03:18 So we're gonna go ahead
03:20 and put it in our bowl with our chips.
03:24 Do you wanna add a little bit of salt?
03:25 Oh, yes. Let's do that.
03:27 And bring out the flavors little bit more too.
03:28 Yes, I think so.
03:31 We'll do that. And don't forget the salt.
03:35 It does make things a little bit better.
03:37 There we go.
03:39 Okay, let's go ahead and put it on our platter.
03:41 Okay.
03:43 Do you wanna do that, Kayla?
03:44 Yes. Let me move this.
03:47 So here we just have yellow corn chips
03:48 and these are blue corn chips.
03:53 We're going to make it as pretty as you like.
03:56 All the colors are really nice, Nancy, I like it.
03:57 Oh, I think it's beautiful.
04:01 I can almost eat that as a salad.
04:03 I would.
04:07 Well, let's try a piece.
04:08 I can't wait.
04:10 You've to fill up a little bit of that dip on there.
04:16 There we go.
04:20 It's good.
04:21 Perfect.
04:23 Love the cilantro.
04:24 And that's gonna be really good
04:26 after it's been in the fridge for about a half an hour.

04:49 of the Adventist Development and Relief Agency.
04:54 A year ago, bright-eyed slender nine-year-old Molly
04:58 was offered refuge at ADRA's all girls' shelter
05:01 called Keep Girls Safe or KGS.
05:05 Her mom didn't want her
05:06 and local villagers couldn't keep her.
05:09 Most of the girls who come to KGS
05:10 have been abused, orphaned, abandoned,
05:14 or are at risk for human trafficking.
05:16 For girls ages 8-18, who have nowhere else to go,
05:20 KGS serves as a temporary means of protection.
05:23 The girls keep busy doing household chores
05:26 and are encouraged to attend school.
05:28 Molly helps around the shelter sweeping the floors,
05:31 washing dishes, or gardening.
05:33 Before she came here,
05:34 Molly had a hard and unsettling life
05:37 with no money and no home.
05:39 Molly's mother turned to prostitution to survive
05:42 and provide for Molly.
05:44 While they were living in the slum,
05:46 Molly's mother got pregnant again.
05:49 She couldn't bear the responsibility of caring
05:51 for two children and looked for help.
05:55 She reached out to an older couple
05:56 who lived in a local village with their seven children.
05:59 She pleaded with them to take Molly
06:01 in promising to send them money to care for her.
06:05 The older couple agreed,
06:07 but never heard from Molly's mother again.
06:10 Food became scarce for the family.
06:12 So Molly had to find food in trash cans,
06:15 steal from the temple sacrifices, or beg.
06:20 Village leaders took compassion on her
06:22 and diligently searched for a foster family
06:24 to care for her, but no one stepped forward.
06:28 So they turned to KGS for help.
06:31 KGS took Molly in patiently working with her
06:34 through her struggles.
06:36 She had counseling sessions,
06:37 did chores and attended school and church
06:40 along with the local Adventist Church,
06:43 those around Molly ensures
06:44 she receives a good education, care, and love.
06:49 ADRA Thailand is considering
06:51 anti-trafficking training sessions at girls clubs
06:53 and community youth activities
06:55 to address this prominent local problem.
06:58 KGS caregivers are trained to meet the mental,
07:01 physical, and social needs girls like Molly face.
07:04 They also aim to fund education scholarships
07:07 so more at risk youth can receive an education.
07:11 If the girls didn't come to this shelter,
07:14 they might have been in the villages
07:15 having to quit school,
07:17 not being able to follow their dreams.
07:20 Many of the girls will not have a safe place to stay,
07:23 there'll be in risk of trafficking and labor.

07:29 to continue to Keep Girls Safe
07:32 and give them hope for a better future.
