I am your 00:46 host Jill Morikone and we have an exciting 00:48 program of West Indian food prepared for you. 00:51 I know I can't wait to think it out how to do 00:54 these recipes. First of all I would like to 00:56 introduce you to my new friend I just met 00:58 her few days ago. Her name Marlene McKinney 01:01 and she comes to us from Upstate New York. 01:03 Welcome Marlene, we are so glad to have you. 01:06 Well, thank you, well happy to be here. 01:08 Really happy, thank you for traveling all the way 01:10 from New York out here in Illinois. 01:12 Oh! it was a good trip. A good job I need to say. 01:16 Yes. We don't originally come from New York 01:18 where are you from? You know, I was born 01:20 and raised in the Bahamas, Nassau to be exact. Okay 01:23 And then we migrated about four years ago. 01:27 My husband took on a job at the north eastern 01:29 conference. Okay, and now he runs back in 01:33 forth from the Upstate to the city work. 01:36 Oh! Bless you, As a assistance church of 01:38 director for the conference. Oh! yes that's 01:40 wonderful. Oh! I never been to Bahamas 01:42 but I would love to go the Bahamas with you guys. 01:45 Let's go, let's go, that's right. we are gonna 01:47 take Jill to the Bahamas with us because 01:49 we got cooking school down there. 01:50 There you go. Okay. You tell Marlene little bit 01:53 about your ministry before we get started. 01:54 What is the name of the ministry and when 01:56 it started? It's McKinney's oven, McKinney's 01:58 oven about 10 years ago. Okay. I found myself 02:00 being borderline diabetic, high blood pressure 02:04 and I was 220 pounds. You? Yes. Marlene 02:07 your so thin, I wish. Now you are. Wow! 02:12 When I was 220 pounds my doctor says look 02:14 girl you gonna make some changes if you don't 02:17 you gonna be in trouble. You gonna end up 02:18 like your grandmother getting with sugar. 02:20 You call it sugar in the Bahamas, not diabetes. 02:22 Your grandma with sugar, oh! That what you 02:23 call it, okay, I like that. I said well, I don't 02:26 know but that because I always loss my weight 02:28 after having kids well as. This time I was just so 02:30 different that's how I know I was so depressed, 02:33 I was very depressed at this stage I was just 02:35 going through lot of changes in my life 02:37 you know. Oh! yes absolutely. 02:38 No, I gotta just do this thing because you know 02:41 what to do as well, give me some of the stuff, 02:42 he said what's stuff. As you know there are 02:44 pills they really work? And he said well, 02:47 I won't think so. Your not getting any pills 02:49 from me because I know you now what to do. 02:51 And I said well, that your fascinate, he said 02:55 come on man let's made some stuff and so 02:57 he said okay I will give one bottle. And I went 03:00 home took them and I almost, I thought we 03:02 have heart attach. My heart just started raising 03:05 and it is palpitation it was horrible. Wow! 03:07 I called Doctor and said I am gonna die. 03:09 He says what happen. I said something is not 03:11 well, I feel so good. Right. So, eventually I said, 03:14 you know this is not right, I need a lifestyle. 03:17 Yeah. You know what I'm thinking Marlene 03:18 we as typical westerners I don't know I think 03:22 so. That we want a quick fits we wanna go to 03:24 the doctor and we want to say give me this pill, 03:26 give me this and that will immediately make me 03:28 feel better but God's way is so much better and 03:31 we don't never take those pills and stuff. 03:33 And because we don't want the disciple involved. 03:35 It's a lot of disciple and no one likes change. 03:39 Yes. We wanna continue eating what we want 03:42 to eat I don't want to eat the way your telling me 03:45 or whoever saying the Bible says now we do 03:47 have guideline. Right. Yet we don't that. 03:49 I want to do it my way. yeah, it's right. 03:51 it's my way always seems better, right. 03:53 You know and of course you know when our 03:56 parents, you know, my parents. 03:57 My dad taxi driver and come on with big 04:00 donuts and chocolate bars, and candy bars 04:02 and I say good yam, yam. I mean that's the way 04:05 I was raised even though that was his way of 04:07 showing love and my Mom would do all the 04:09 good desserts and stuff. And I knew that I had to 04:12 change that. Right. So, God helped you change 04:15 you lifestyle. I could not done it on my own. 04:17 Now You go out for the cooking school and stuff. 04:19 Yes, I go to cooking schools, it's not as easy 04:21 when I was in Bahamas I had people coming to 04:23 my home and you know lot of my students may 04:25 even be watching. Oh! Lord, praise the God. 04:28 As hundreds, probably thousands of students 04:30 literally. And they would come into my home 04:32 every Sunday for six weeks for a cooking school. 04:34 I thought my six weeks cooking cruising. 04:37 That's wonderful. Ninety nine percent of 04:39 students were non-offenses and 04:42 Marlene, this is Ministry, it is. do you know that? 04:44 It is. It's tremendous and I love it, I love it. 04:46 But New York is different I got to pack up my 04:48 van and I got to go through the groups 04:50 and it's hard. It's not easy. Right. 04:53 But we never promised that bad it goes it. 04:54 Yeah, that's right. He promises a safe journey. 04:57 That's right, I am thinking the board of people 04:59 have been changed lives. You know people 05:01 seeing that and seeing that your feeling better 05:03 and you are helping people that's wonderful. 05:05 Well, today we are making West Indian cuisine. 05:07 Yes we are, let's read our first recipe 05:10 For the Curried Beef Stew, we need 05:12 3 cups of TVP chunks, 6-7 cups water, 05:16 2-3 medium potatoes that are cubed, 05:19 2 carrots, sliced, 1/2 green pepper, chopped 05:23 1 medium onion, chopped, 1 cup tomato sauce, 05:28 3/4 cup coconut milk, 1 bay 05:32 leaf, 1tsp Italian seasonings, 1tsp sweet basil, 05:38 1tsp. garlic powder, 2 tsp. turmeric, 05:42 1 tsp. coriander, 1 tbsp. honey, 1 tsp. cumin, 05:47 1/4 tsp. cayenne pepper, 05:50 1 tbsp. cornstarch, and 1/2 cup water. 05:55 Okay, that's looks good and this authentic. 05:58 Yes. And this one is very simple that's the idea. 06:03 I like simple recipes. Me too. Nothing fussy. 06:05 Me too. You know, we cannot have time 06:07 for all that. Now that's right. Especially 06:09 working moms and dads are around to go. 06:11 That's right. And so this recipe, 06:13 I thought it this is nice. So, I prepared it, 06:15 I prepared as we are prepping you know, yeah 06:18 and my sister Lac Shelly she tried it and said 06:20 that's good and so, if she it's good it's good. 06:23 Okay, you can trust it. Let's, just do here what 06:27 we are looking for. Okay, while we take our 06:28 TVP, okay, which is Textured vegetable 06:30 protein I think everyone basically knows, 06:32 but for those who don't, you know, my husband 06:34 eats just like this, I don't know why. Oh! 06:35 He says it tastes pretty good. Yeah, he says 06:37 it tastes good. Yeah, I don't want to say it 06:40 reminds me, I'm not, no, I was able to be 06:42 reminds me of, but anyway, that's right. 06:44 You get this at the Health food store. 06:46 Yes. Okay, any of them, actually food stores 06:48 sounds good. They do. Yeah, the food stores 06:50 has been carrying all the TVPs and that's pretty 06:52 nice. Yes. I wanna be able to have my students 06:55 shop into grocery store. Yes. You know 06:57 because its so hard to going from shop to shop. 07:01 It is. I mean we have to be do some sacrifice 07:03 and do that, but we can avoid with fine. 07:05 Absolutely. Okay, so, then we put your bay leaf 07:07 now a part, okay. And we use your three cups 07:11 of TVP. And there we got our water heat. 07:13 And the water is boiling already. Okay. 07:16 Usually when I rehydrate I try to not add salt 07:18 because it kind of preventive from 07:20 re-hydrating and flumping that we would like it. 07:22 But, we can go ahead and add the all the other 07:24 ingredients and reserve our salt, anything you 07:27 little salted that. Yes. Okay, so we can add just 07:33 make sure we put al here, these I won't get all 07:35 mixed up. Okay, so we have our carrots of 07:37 course my mom says you must add in what is 07:38 good for its good for the eyes, 07:40 its vitamin A okay. That's right absolutely 07:42 and you are nutritionist right? Yes I'm. 07:44 and you that up to. Yes, we have a onions 07:47 of course and add that in there. I love onions. 07:53 I do too, looks good flavor. Always like onions 07:55 bit I do. Have your just Irish potatoes. 07:59 Now these are raw, you have and cooked up. 08:00 Well we did for this show but normally it just 08:02 every thing is raw just dump it in there. 08:04 Normally you just dump it all in raw. 08:05 As one kind of recipe you know every thing is 08:07 you did can all come to boil same time. 08:09 And the longer these sit on the hot water the 08:11 more floppy are they get. And they taste better, 08:14 imagine cholesterol free me. Yes it's right. 08:18 No meat, no blood, no fat, Praise the Lord. 08:21 That's right. You have bell peppers and I think 08:23 there is a little, I see some solid area, 08:25 solid area, yeah, and that's fine. 08:27 So, whatever you got in your fridge, we have 08:29 different vegetables, of course you wanna put 08:31 you know some Irish potatoes you want him 08:33 use the sweet potatoes fine, its up to you squash 08:36 its your choice. Okay. The basic idea is just of 08:39 you wanna avoid putting that regular meat in that. 08:42 Yes, and then I had a coconut milk now that 08:46 island food. Good say, that's awesome. 08:50 Just about every recipe might it was a you are 08:52 the coconut milk women, okay. The coconut milk, 08:55 then we have tomato sauce. It will give a such 08:58 good flavor though. Yes it does. Yeah. 09:00 And has lots of magnesium good for the nerves. 09:03 Okay, I think all women need it. We got to put 09:07 all these husbands maybe that's been needed, 09:11 I don't know whose works. Okay, We are all 09:14 growing by the grace into, Praise the Lord, 09:16 that's right. Okay, then we go and put some 09:17 Italian seasoning and sweet basil in there. 09:19 We can add our coriander and cumin. 09:23 Okay, thanking for the global riches, that's fine. 09:27 Just take if smell it. The cumin is the where the 09:29 flavor really comes from in terms of the curry, 09:32 and we are making our own power here for us, 09:34 yes, because the traditional curries have 09:37 lots of things and probably don't wanna these at 09:39 home. We have garlic powder, 09:42 and this is our color turmeric. Yes our turmeric. 09:45 You know the turmeric is not color its really 09:47 good for us. It is, yes, okay, very good for us. 09:49 I had just heard that recently. Yes, that was 09:51 good for you. And we have fuss, 09:53 let us take more than dash, my friend Idalia, 09:57 would like that. Okay, and we gonna put our honey. 10:06 The honey enhances the flavor this is where we, 10:09 we called this our you know we may cooking 10:12 meats at home we have, I don't know MSG, 10:17 yeah absolutely. So, we don't use the MSG to 10:19 enhance the flavor, we wanna use natural 10:22 ingredients and that does a good job. 10:25 So, the honey does, so does it pull though, 10:28 obviously is not enough to make a sweet right. 10:30 Oh, no, no, no is just a little to give a little, 10:33 Amazing. No, no now we don't wanna sweet 10:36 dish, no, we don't end on sweet right now this is 10:39 just come to of. So, you just putting a little, 10:41 it's almost like adding salt, were salt brings out 10:43 the flavor, exactly, exactly, It's a good 10:45 iidea, exactly, I love that, and it just allows 10:47 to come to good rapid boil, okay, once it's 10:51 boiling then we will add our cornstarch. 10:54 Yes, and of course we dissolve the cornstarch 10:56 in a little water. Make us laree, exactly okay 11:00 we can add that there and which one is easy, 11:02 yeah it was good, so that was thickening, 11:06 like you get all dirty. Okay, I thought that now 11:11 use a smaller spoon than we, yeah that will be 11:13 easier. Idea that you wanna to get it a full boil 11:15 where once your potatoes and carrots are 11:18 thoroughly cooked, okay, then you can go 11:20 straight into adding your cooking ingredients. 11:23 Okay, then you can put as much salt as you 11:26 desire. Okay, okay for my, I usually add a little 11:29 rice, looking at the oven, yes, or you can add a 11:32 little chicken star seasoning, oh that's cool, 11:33 yeah, , for little more flavor, you can add just 11:35 sea salt and that's all you have at home, just use 11:38 some sea salt I mean that's simple enough, 11:39 yeah, you don't have go to the store and just 11:41 look for chicken style seasoning or whatever, 11:44 right, right, okay, right, you just want to make 11:45 it a simple as possible, but the best thing you 11:48 can do for yourselves and for your family is to 11:50 see you can purchase all the little ingredients 11:53 it will help to make a pure curry powder. 11:55 Yes, okay, absolutely all those little herbs 11:58 and stuff with this exactly, exactly. 11:59 Even some parsley, would have been good 12:01 and they have put on it just a little pinch of 12:03 parsley, that's good, yes, that's a really good. 12:05 I just wanna get it to a good boil 12:08 and stir, and that's it. Make sure don't stick 12:12 relax it. Good, awesome, it's very simple, 12:15 20 minutes and you have a meal. 12:17 Oh, I love that, yes, Marlene, that's perfect, 12:20 yeah, we need that lets go to our next recipe here. 12:23 You want to read that for us Marlene. Sure. 12:26 Baked Brown Rice. We have 12:28 3 cups of brown rice, 6 cups of water, 12:31 1 tsp salt, and 1 tsp oil. 12:37 Marlene, Is rice staple in West Indian cuisine, 12:41 oh yeah, yeah you guys eat rice all the time. 12:43 Every meal, every meal, my dad per meal, 12:45 he thinks that he has had rice had every meal. 12:47 Breakfast, lunch, if it is not every day sorry not 12:50 every meal. Oh, oh okay. 12:51 If its not every day eaten didn't have 12:53 meat eat to be eat. My mom too even though 12:56 she doesn't like rice. Want do we eat? 13:00 I said we have pasta that's not food. 13:02 Oh, that's we got have rice. So, they love rice, 13:06 rice and peas mostly but rice, rice got to have rice. 13:10 You don't have rice, 13:11 I think it's Bahamian, Jamaican, Cayman, 13:13 all of them they love rice, we love rice. 13:15 I like rice too. You can have at least once in a week, 13:17 kinda good. It's not big deal for me, oh, okay. 13:18 But for the West Indians out there, look out, 13:21 get rice, so we're having rice for you, 13:23 yes and of course we want brown rice 13:25 not the white rice. Yes, 13:26 and I want the bleached products, right, 13:28 one whole food God given us whole food, Amen 13:31 you know and the whole foods of course gets us 13:34 in that state of mind. It clears our, gets all those 13:38 rough, the rubbish out of the system. Absolutely, the 13:41 fiber is so good. That's right. It's good for us, 13:43 And of course vitamin B and all the nutrients in 13:45 these but this is simple, yeah what we have to 13:48 do. Looks easy, I mean it's too easy that's been 13:50 about, it's too easy to call in the recipe, yeah, 13:54 but I love it because its moms friendly and 13:56 mommy friendly. Yes. We are pouring the rice, 13:58 yeah, I hope that water fits, we'll try, okay, 14:02 pour in the rice 14:03 you do it. We can add the salt, next, 14:05 I'm cooking to do, while I'm the cooking angels 14:07 her. I've Jill, in kitchen and I'm cooking that's 14:10 not right, no, no, no. 14:11 We have oil mix. Yes, we can put the oil, 14:14 okay any type of oil we use. I use to olive oil, 14:17 olive oil or you can use the soy oil until 14:19 it's really good, you want all the water, 14:21 add it, yes we need all the water. 14:23 Hopefully it will fit, yes, I got, we didn't 14:28 spoiled anything, we guys. Okay, now you can 14:31 stir, just in light stir. And you do need a little 14:34 oil or you can spray the pan. 14:35 Yes, okay if you don't want the oil then spray 14:38 the pan so it won't stick as its baking. 14:41 Because we are baking okay and the idea is its 14:45 one of cup of rice took two cups of water. 14:47 Okay its one part to two parts its simple 14:50 and you going to cover and you bake it 14:53 for two hours, so then you forget it in the oven, 14:57 instead of timer like I did this morning. 15:01 Okay so you set your timer, yeah and what 15:04 temperature you bake it. 350 degrees, 15:06 okay, so we want to set the timer for an hour 15:09 and 45 minutes. Perfect, then we can take the 15:12 cover off floffy it chose and make sure but for 15:14 the most part two hours and you have perfect 15:17 fluffy brown rice, white rice we call it but its 15:21 brown rice. I love it, and its moms. Right, 15:25 Yeah, I love that, you are not using the a rice 15:27 cooker and you are not cooking on the stove in 15:29 a part or just bake in the oven I love it. 15:31 You bake it you can do other things. 15:33 You know your young mom with children 15:34 you can take care of the kitties, if you home 15:36 school like I do, you can teach whatever 15:38 you know, so its lot of things you can time to do. 15:42 I love that is this recipe. 15:43 Spend more time with your family 15:45 while its cooking. I sure I have one while was at 16:32 home doing the cooking skills you know. 16:34 So, it took some time putting the recipes 16:36 together and making sure that, you know, you all, 16:39 and you still have little mistakes all the, 16:40 you know, errors and Every time we read 16:43 to we try to make the corrections because this 16:46 was so much work involved. Yes, 17:13 yes we have to end on a sweet now. 17:15 That's right, okay lets read that recipe. 17:19 For the Bread Pudding we need 17:20 7 cups of whole wheat bread crumbs. 17:22 1/2 cup raisins. 1/2 cup shredded coconut. 17:27 2 tbsp soy milk powder. 1 tbsp molasses. 17:32 1/2 tsp salt. 1 tsp vanilla. 17:38 1 to 2 bananas. 3/4 cup honey. 1 tsp coriander. 17:44 1 and 1/2 cup water. 1/2 walnuts. 17:48 1/2 cup whole-wheat flour. 17:51 1 and 1/2 cup coconut milk 17:56 Well I'm excited about this recipe because 17:58 its sweet dish dessert right, Marlene? 18:00 Yes dessert. But, its healthy. 18:02 Oh, but is of course. Praise God. 18:04 Most definite, I will not give you anything is 18:06 not healthy. Now if you come to my house you 18:08 eat dessert I promise you these gonna be 18:09 closure. Yeah it go to healthy dessert and I like 18:12 that is you can eat it without the guilt 18:14 or without the weight, or without the diabetes 18:17 and all that. We don't wanna eat too much of it, 18:18 we can still the some control over there. 18:21 But, you can eat it, you can be you can you also 18:24 ask me what's in my food I promise you. 18:26 No some people is be concern and we want to 18:29 were they putting in there. Call me first. 18:55 Let me know you on your way. 18:57 Okay so this recipe is of course 19:00 The Bread Pudding, yes. 19:02 Very quickly I'm gonna tell you something 19:03 about bread pudding. Yes, my granddad is use 19:05 some bread pudding and I use to go there after 19:07 school and he would have every thing on the table. 19:11 He left the bread soaking okay now he was not 19:14 vegetarian, right, he was best bread pudding 19:18 in the world. But, let me tell you 19:20 what else was around. He filled raisins looks 19:23 like flies because either know, what was there 19:26 on that. It was flies or they were raisins. 19:28 That he would just have that everything on the table. 19:30 You know all people some of by this old people 19:33 and everything would just be soaking 19:35 and flies and the raisins well I'm gonna 19:37 eat that bread pudding. Guess what when was 19:41 all finished I couldn't help but I had to have 19:43 some it was so good. He was a good cook. 19:46 Oh yes, in spite good conditions. 19:47 Oh, no he cooked he can cook 19:49 and some time he tying check me 19:51 because even go I was not a vegetarian as child 19:54 and I am an Adventist I never ate certain foods, 19:56 right, right. So, he did go there he said 19:57 Kyle do you want some rice and peas, 20:00 and I would say yeah sure, right, 20:01 and I'm open up the pot and there was big peace 20:03 of pig and pork, on the top of that 20:06 I am going to daddy get rid of that 20:08 Yes, I'll just push it a side. 20:10 I said no, no, no, no, no, no 20:12 and I was always on a diet. Unfortunately as 20:14 child bring up I was always chubby so, 20:18 he would say okay I have something for you. 20:20 I need if a great food. I need say it me the 20:23 smaller your waist line, the longer your lifespan. 20:27 I said Praise the Lord its stuck with me all these 20:29 life time all my time. The small your waist line, 20:32 The longer your life time, that's what he said. 20:35 Okay well lets make these bread pudding. 20:37 Lets make some bread pudding. 20:38 So, we have a whole wheat bread. Okay, 20:40 usually when my bread goes a little flat 20:42 or stable at home I just pub them into freezer 20:44 and I said okay good I'm gonna just put them in 20:47 the food processor make bread crumbs, 20:49 well I like you do the blending, okay good 20:51 I get to work here. Yeah because let us get her 20:53 dirty we have Jill in kitchen why not. 20:55 That's right, so you put a banana, banana okay, 20:59 put a banana in there. 21:00 We can do one or two. I wash my hands. 21:04 And we can put a water don't use all just use 21:08 half just for blending initially. 21:09 Okay, they can blend it and then once we get it 21:11 all queued in then we can add all the rest. 21:15 Okay we gonna some noise here. 21:28 Oh, its pretty good to me. Now you can add 21:30 all the other liquids. Okay, we have a coconut milk 21:33 we got have a coconut milk again right, 21:35 oh boy I can see this girl loves cooking what's 21:38 wrong with her. And the coconut milk with the 21:40 coconut milk ads a lot of flavor and its good 21:42 and it's good for us. Of course it is. 21:44 You know if you don't like coconut milk then 21:46 you choose whatever milk you want, 21:47 soy milk, aavin milk. You know but the 21:52 coconut milk adds a lot of flavor. 21:53 Yes that's awesome. And then we have here 21:55 I think its molasses in there. Oh, its thicker 21:58 so its got be can be know. If you don't have 22:00 molasses its fine. You know it just adds a little color 22:03 and some flavor. And then we have vanilla 22:05 and rest of the water. Restof the water, okay. 22:08 We just bring to a quick blend, I like to blend, 22:11 you don't have to blend it, but I like it because 22:13 when you blend the banana is evenly just 22:15 you mix it, yes that's right, recipe, that's right okay. 22:28 That's good, okay, alright, alright and you got your 22:34 dry ingredients over there, yes so we have 22:35 seven cups of bread crumbs, we have a whole flour, 22:40 okay here we go, we have raisins, yes, 22:47 all the iron. We got lot of stuff in this bowel Marlene. 22:51 I hope it is fixed. I love bread pudding. 23:32 But, my children they don't too care 23:33 for the bread pudding. Oh, really, they're like, 23:36 just pour it all in, yeah pour it all in there. 23:38 But, PJ likes that means its good guy, 23:41 yeah that's right and it bakes at 350 degrees 23:46 for about 45 to 50 minutes and that's it. 23:50 That's it, serve it, serve it with some soy ice cream, 23:53 or something. Oh yes. Or you know what kind of 23:56 ice cream you want, yes, whatever ice cream 23:59 you choose, not ice cream not we don't want the 24:01 cholesterol ice cream, right you don't want the 24:03 fatty stuff, we want the healthy stuff. 24:05 So, when you go to the grocery store you purchase 24:07 yourself some nice cholesterol free 24:10 soy ice cream that's really, really, really, 24:14 really delicious. You can even boil the bananas. 24:16 Yes you can.
