00:01 Kingly breakfast is our menu for today.
00:03 If you are looking for new recipes for your
00:05 breakfast time get a pen and paper because
00:08 we are going to share some recipes with you.
00:40 Hi, I am Idalia and I am so happy to be able
00:43 to be part of this program because we are
00:45 going to share some important recipes.
00:47 They are all important but the breakfast,
00:50 the meal that is one of the most important of
00:52 the day is what we are going to share with
00:55 you today. So, with us we do have a special
00:58 guest and her name is Marlene McKinney.
01:00 Welcome to your Kitchen too.
01:02 Thank you. Thank you for having me.
01:04 I love "Let's Cook Together" and this is
01:06 what it's all about. It's like two friends
01:08 getting together, well sure, sharing recipes,
01:10 what we've discovered, what you've
01:11 discovered and I am sure that you,
01:13 our viewers are gonna let us know some
01:15 ideas as to what you can apply to the
01:19 ingredients that we are going to be
01:20 using during this half hour.
01:22 So, welcome to you program,
01:23 Let's Cook Together, and we are ready to cook,
01:26 aren't we? Of course we are.
01:28 Good, good. Always ready.
01:31 Marlene, it's such a privilege to have you
01:33 with us. You have cook book. You do
01:36 seminars. You're busy in the kitchen.
01:38 Yes, I am. Tell me just a little bit about you.
01:41 Well, my ministry is McKinney's Oven,
01:43 and we go from Church to Church,
01:45 home to home. We invite people into our home.
01:46 It does not matter we are in Hyde Park,
01:48 New York at the moment. Okay.
01:50 And we will come to you and we will put on
01:52 the program whatever you want, cooking,
01:54 seminars, preaching, we do it all.
01:56 You do it all. Yeah, we try to.
01:59 We don't promises you everything,
02:00 but we do the best we can. Amen.
02:02 And the whole idea is just trying to help
02:05 people to live a healthier life style
02:07 and I just usually begin by sharing my testimony
02:10 about how the Lord has led me
02:12 over the past 10 years and I tell you he has
02:14 been with me, I know he has.
02:16 I cannot believe you.
02:17 I could not have done it my own.
02:18 I cannot believe you were 220 and size 22.
02:21 Yes, I was. And look at you now.
02:23 You have had victory. The Lord has really,
02:25 but it's a daily journey. Yeah.
02:28 Everyday we have to renew and ask the Lord
02:30 to give us to strength because it's easy to just
02:32 go back to your old habits.
02:33 That's right. I know one of the problems
02:35 is that we do not eat our breakfast.
02:38 That's right. And our breakfast is so important,
02:39 that's right, and I believe this is why you are
02:42 going to share this breakfast recipes.
02:44 Of course, because many people think when
02:46 they get up in the mornings,
02:47 I am on the diet, I am not going to eat breakfast,
02:50 let me skip breakfast because, you know,
02:52 I am okay and then by the end of the day
02:54 we are so starved that we pick out on
02:57 everything we can find, right, and we would
03:00 have already worked all day or done
03:03 whatever it was, we were supposed to do.
03:05 Then, we kick our feet up and we're heading
03:07 the Bahamas call and Nicolaites sets in.
03:09 Now we want to sleep. Okay. Right.
03:11 The best thing to do would be to begin your day,
03:14 right, with a big breakfast and then you
03:16 will not pick and nibble all day long, yes
03:20 true, because you would have fused up for the day.
03:22 Exactly. You know, I accessed one of my
03:23 groups the other day, yes, if your husband
03:26 came home, my husband does long journeys
03:29 and when he comes home sometimes he says well
03:31 I have to go to the city in the morning.
03:33 I am going to get the gas, filled it up and then,
03:36 I mean, in the morning I can just scoot out.
03:38 But, if he came home and don't pour gas in
03:41 the car the next morning he would need some.
03:43 That's right. So, when we eat late in the night
03:46 we get up in the morning and the food is there
03:47 but it's fermenting, it's riding. That's right.
03:50 It is sitting in our system do we need to refuel?
03:53 No. No. We need to just let that food get
03:54 out of our systems and the best way to do
03:56 that is probably to eat lots of fresh food. Okay,
03:59 And just a lot of water and flush out all the
04:01 toxins because a lot of toxins are built
04:03 during the night, but we don't need a full
04:05 course meal in the evenings. That's right.
04:08 We need a breakfast like a king, Amen,
04:11 lunch like a prince, and supper like a pauper
04:13 if at all. Exactly,
04:15 may I show them with my 'if at all',
04:16 looks like. Yeah. Okay, 'If at all'
04:18 This is, 'If at all',
04:20 After 4 o'clock this is what happens in my
04:23 house for me What?
04:24 And I try to do with my children and my
04:26 husband, but you know I am not always,
04:28 I am not always want to do it so, okay,
04:31 but it's water. Exactly.
04:32 And if you can just, the simple you know,
04:35 these are simple principles. They work,
04:37 that's right, you know, takes a lot of
04:39 discipline and lot of faith in God. Amen.
04:42 Well, that's the nutritionist in you just
04:44 bringing up that information that
04:46 you have and the wisdom that the Lord has
04:48 given you. Well, I think I have friends are
04:51 ready for the first recipe. I hope so because
04:53 we are ready. Shall we. Oh! Yes.
04:55 Are you ready to cook together? Well, let's
04:57 read the recipe together.
04:59 And this recipe is. Scrambled Tofu. We need;
05:03 1 cup of Tof tomato, chopped.
05:07 1 cup of onion, chopped.
05:09 1 cup of green bell pepper, chopped.
05:12 1 Ib of tofu. 1 tbsp. of turmeric powder.
05:16 1 tbsp. chicken style seasoning.
05:21 1 tsp. vege sal. 2 tbsp. of nutritional yeast flakes.
05:27 And dash cayenne pepper.
05:29 Umh! Don't forget that the cayenne pepper.
05:32 I love it. Yes, we know, that you liked it,
05:35 but she likes it hot. Okay. Keep it.
05:38 They, you mentioned that the tofu needed
05:40 be scrambled or mashed. Sure.
05:43 Okay, you can go ahead and mash it, for me.
05:45 So, I can use any, any tofu block,
05:47 Yeah, well preferably extra firm.
05:49 Okay. That would be my preference.
05:51 And this is one it comes in water,
05:53 in the water pack. Okay. Okay.
05:56 And of course their variations of different,
05:58 you know they are different types of tofu
06:00 out there. I found one the other day in
06:01 New York it's so firm. Really.
06:04 You cannot use a fork. It will probably mash
06:07 the tofu. Yes, crumble it with their fingers.
06:09 Yes, it will taste real good.
06:10 Wow! So, while Idalia is mashing our tofu,
06:14 going to put a little water in our skillet
06:17 just to salted our vegetables. Because we
06:19 want to avoid the fat, if we can and in here
06:22 I am going to add bell pepper. Oh! Yeah.
06:29 It's going to be colorful too.
06:32 We have a little onions and of course we
06:37 have tomatoes. Tomatoes, yeah.
06:42 Got also some tomatoes. This is the turmeric,
06:45 right. Yes.
06:46 Should I pour? Now, you add to your tofu.
06:49 Oh! Add it to my tofu.
06:50 I have a friend down in Virginia, and well,
06:54 she has been doing and she has been adding
06:56 all of our seasonings to her tofu. I wish the
06:58 bowl would be a little bigger, really, and
07:00 you know something it taste really, really,
07:02 really, really good. Okay, Well, I can handle that.
07:05 Let's see if we can get that to come up to.
07:07 Now you want to allow this steam for about
07:09 a minute or two, okay. Just before you add
07:11 your tofu then we will add all of our other
07:15 seasoning but, you know, you can just dump
07:16 it all into the frying pan that's the way I do.
07:18 My recipe is a simple because I am simple
07:20 person. I am not a fussy person. I don't think
07:22 we should be fussy at this point in our lives.
07:24 We want to be simple. Okay, so just I want
07:27 to allow to come to a rapid boil kind of that
07:31 boil but you know, lot of steam in there.
07:33 You can go ahead and dump that.
07:34 While we waiting for this why not.
07:36 Okay. That's the nutritional yeast.
07:38 The nutritional yeast flakes, which is so
07:40 good for us. This is..
07:41 You have our cayenne pepper that
07:43 she loves and I don't think that's enough. She wants
07:45 more. She adds more to every list I have
07:47 prepared so far. I don't feel about it. I feel no
07:51 way about it. I don't feel bad either.
07:54 I just think, you see this lady.
07:56 I just think, we need to enjoy our food,
07:59 you know, and we are eating healthy and
08:02 you know, it's just fun to be able to.
08:05 That looks good already.
08:06 I know. All I need some crackers, I know,
08:09 so that I can share with my mom and dad,
08:10 because you can eat like that. The thing is
08:11 you can add a little neonates or veg nutes
08:16 or preferably something. Oh! Yeah,
08:17 to make like an Egg Salad and make an Egg Salad.
08:19 Exactly. Now but this look just like that.
08:21 Looks good. Alright. Alright, Let's doing this.
08:25 Okay, let's simmering already.
08:27 Right, and then we gonna just add the tofu.
08:28 Okay. We can add it.
08:31 Add it to the vegetables there to the onions,
08:34 tomato, pepper and in the Bahamas.
08:37 Yes. Originally we would have this with some grapes.
08:40 Grapes? Yeah. Oh! Woh!
08:42 Well, my mom loves waffles, so we are
08:43 doing waffles. Okay.
08:45 She says, this you can get, honey.
08:47 Hey, I don't care what you make. It look good
08:49 and it is not because you are right next to me.
08:51 I am really taste your food. Thank you.
08:55 Very good. Okay, so.
08:56 We just allow to seat, you know, to cook down
08:58 for about a minute or two like I said tofu
09:00 is not. It is not raw, Right.
09:02 It's not uncooked. The vegetables sometimes
09:04 people like a little crunching there,
09:05 it's up to you. For me I would like to cook it
09:07 little and then I would serve it up with some
09:10 waffles or may serve it with some peas Ingrid's.
09:13 let me know peas Ingrid's so just plane
09:14 Ingrid's. No, we can give you the next time
09:16 I come back. Okay, it sounds good to me.
09:18 I am invite myself back away. Hey that's
09:20 okay, we love you. And I am sure your
09:22 blessing our viewers so. Okay.
09:24 It's seems wonderful to be just toy in the
09:27 hands of the Lord. So the Lord is using us,
09:29 you bring a lot of hope to many people.
09:32 So thank you for tuning in. Are you ready
09:35 for the next recipe? Are you ready
09:37 for the next recipe?
09:38 I hope so I know I am. I know they are.
09:40 We are ready. Let's read the next recipe.
09:43 This next recipe is. Waffles.
09:46 For a Waffles. You will need;
09:48 3 1/2 cup of soy milk. 3 1/2 cup of water.
09:53 7 cup of oats. 1/2 cup of whole wheat flour.
09:59 1/2 cup of raw cashew meal
10:02 1/2 cup of cornmeal 2 tbsp. of vegetable oil
10:09 2 tbsp. of honey (or dates) It's you choice
10:13 and the 1/2 tsp. of salt.
10:15 For our topping you will need.
10:19 1 qt. of grape juice and 5 tbsp. cornstarch.
10:27 Well, we got the recipe. We got the ingredients
10:29 what we do with them. Well, like I said we
10:33 need a blender Okay.
10:34 Alright, and we going to blend our Cashews
10:38 Cashews first. With a little bit of water
10:41 A little water Okay.
10:43 We can probably add salt. It has have
10:46 No more so, no more because you put
10:48 too much then it's going to be a,
10:50 you see little blend. Okay.
10:51 Alright, let's see we can get this on there
10:53 Okay. There we go.
10:55 That was easy. Okay, we blend. Here we go.
11:20 I think there was too much water. Yeah.
11:22 When you have too much water the tendency
11:24 is that the nuts won't blend.
11:25 But, that's fine, don't worry about it,
11:27 don't fletch yourself, don't fletch yourself.
11:29 Okay. This wants to be added a little more
11:31 of the ingredients that will be able to catch it.
11:32 Okay. So let's add may be the flour or the cornmeal
11:35 Okay. Something that will help to..
11:37 Thickening up to little bit
11:38 Just thickening up a little
11:39 Okay. Let's grind. Let's try it now.
11:40 Mix that little while
11:42 Okay. Alright, that's good.
12:07 Okay, what's the next step
12:08 When we can add up over other liquids
12:09 Okay. And some of are not all the
12:12 liquids, sorry but we can do the honey,
12:15 yes. Sorry that meant not all the milk
12:17 and water. Okay. The oil, the oil
12:21 It's more than we need we got fine. Okay.
12:23 For now a little salt. Salt.
12:28 And then we can add just, we can probably
12:30 use one of these as a scoop, and add
12:33 about cup of your oatmeal. But a cup of oatmeal.
12:37 okay. A little lot a time was always best,
12:40 you know, just or even. Tell me one.
12:43 Oh! keep going we have a lot of depend
12:46 up on, that's good to start with
12:48 Alright, okay. We can blend it. Blend it again
12:51 Add little waffles probably if you think
12:53 so I think so. Okay. Good.
12:56 We don't want to burn the motor.
12:58 Yes, we go through the blenders.
13:00 It's not a commercial, blender, okay.
13:02 We go through lots of blenders. Now, it's time.
13:22 Okay. Now we can probably add the rest
13:24 of the yell we can, we can try or his
13:26 half of it to see we can get all in there.
13:28 We gonna see we can. Half of it.
13:30 Yeah, let's do half or you think we can
13:32 get all of it. And I look so. You can dry.
13:34 Let's try. Hopefully we won't burn up
13:38 the blender and let's see we can put all out.
13:42 Now we, we want to add a little milk, a little milk.
13:44 It's easy of the more liquid of course will help
13:47 the blender a long, yeah, try to help the
13:49 blender. Try not to burn the motor have gone
13:52 some lots of blenders, believe me lots and lots
13:55 I am not kidding you.
14:04 Here I should stir a little bit.
14:06 Okay, there we go. That's pretty good.
14:08 There is plenty of liquid in there make a blend
14:12 Alright, here we go.
14:18 Add more milk More milk
14:33 That's it All ready.
14:34 Let me check the consistency, sorry.
14:38 So, little is good. You know,
14:41 what the long I stir here the thicker it gets to.
14:45 That's true. That's the oatmeal. That's what
14:48 happens with it. Alright,
14:50 So then, what's your next step
14:52 We are going to pour some of this into our
14:54 waffles iron. Okay. That's over
15:01 and open the waffles iron.
15:03 Which has been spread already. Okay, okay.
15:06 We want to spread and you know, sometimes
15:09 you can sprinkle those as sesame seeds.
15:11 Oh! Yeah. I've done that.
15:12 It pretty, very attractive, you know, I like that,
15:15 I like that, yes okay, sesame seeds are loaded
15:17 in calcium. You can pour it in there.
15:22 It sounds good. There it goes.
15:24 Our children love waffles.
15:26 Oh, they love waffles, yeah, especially if they
15:28 can have lots of tofu.
15:29 Yes, love they just like the peanut butter
15:31 and onion, fruits on top of it. So and they also
15:37 like the blueberry toppings too. Yes.
15:40 That's we are going to do today some
15:41 blueberry topping Okay, okay.
15:44 We don't So we put it to bake now.
15:47 I think it's good. Can we freeze this?
15:50 Can you freeze this or not? Most definitely. Yes.
15:53 Yes. Okay. Make the malt put them in
15:55 baggies or containers. We freeze them, make
15:59 this popped into your toaster whenever it is
16:01 that you want to use Perfect. That's the duty of it.
16:03 Very good. You know, so while
16:05 those baking or cooking, however, you
16:08 want to choose to stay it, they can move right
16:10 along to our topping, okay. Get the topping.
16:16 Now I know, you noticed in the recipe
16:18 earlier we didn't say what type of food we
16:21 are using, but today we are going to use
16:24 blueberries. Blueberries. Here's our grape
16:26 juice concentrate. Excellent,
16:29 And so really good. Oh yes, then we add up
16:33 cornstarch. Once again we can use cornstarch,
16:37 you can use the and make it mess, it's alright
16:41 that's to be kitchen's fork. And you want to wire
16:44 whip and quickly get it all dissolved before it
16:49 gets lumpy we don't need cornstarch
16:52 couplings in our topping. I don't like cornstarch
16:59 couplings. Yes. If you want to keep.
17:02 It's, its very different to use the what you say
17:06 grape juice concentration, yes, instead of water.
17:09 Yes, because we will add to the flavor,
17:11 believe me. Yeah, adds to the taste tremendously.
17:16 Very good. Yes, it does and once this gets thick
17:20 then we will add our blueberries.
17:22 Now we are going to need any sweetener to that.
17:25 No, no, no, no Because of the juice
17:26 Juice is very sweet, it's a very sweet
17:28 Okay. That's right. And this uses quite a bit.
17:30 You will be surprise how little, it looks now
17:33 once you add your juice, it really,
17:36 gets quite a lot of topping and once it
17:39 gets nice and thick like I said before, you
17:41 just add the fruit. If you don't want
17:43 to add blueberries, you can add raspberries,
17:44 you can add strawberries, you can add pineapple
17:47 it's your choice. That's why we prefer
17:49 to leave it open. Right. You can choose to add
17:51 whatever you would like if you don't even
17:54 want to use grape juice concentrated you can
17:57 use the apple juice concentrate it's up
18:01 to you, you know, It depends on what kind
18:02 of flavor you want to prepare Yeah, exactly.
18:04 For example my kids favorite is Pina Colada.
18:07 Oh! Just they like to drink the Pina Colada,
18:09 that sounds really good, with the coconut,
18:10 with the pineapple and That's sounds and I love
18:12 coconut as we already know that's what every
18:14 recipe I have as some coconut milk in there.
18:18 Okay. I am going to ask you a question.
18:20 They are so many people I just say I just
18:23 can't have breakfast. I just can't.
18:26 How can you help? What can we do or say
18:30 to these people I don't know if you one of them
18:33 that don't have breakfast because don't have time
18:35 or just not a breakfast person but we must
18:37 have breakfast. Why aren't we breakfast people?
18:40 Why not we? Well, because we ate
18:42 the night before. Simple I say.
18:45 It's very simple, it's very simple.
18:48 When you eat a good breakfast we will not
18:51 picked and we will not be late. But when you
18:54 eat late in the evening when you wake up in
18:57 the morning you don't have an appetite like a
19:00 king so how can we eat like a king.
19:02 You have appetite because the food is still
19:04 there, like I said before if you go to bed on a
19:07 full tank of gas if you go, if your car is
19:10 already filled with gas, do we need more in the morning.
19:12 No, and you know, this really bad about eating
19:15 late in the night and eating like that we
19:18 breathing of lot of toxins in our body,
19:21 you know, so we will be really need to do it's
19:23 try to avoid eating late at night.
19:26 Okay. Try to avoid eating late. You think
19:28 you are hungry your not. Drink a glass of water
19:33 and if you really think you are hungry have a
19:36 fruit even the salad would not be recommended,
19:38 just the fruit, and may be a slice of toast if you
19:41 think you just have to habit, but no protein,
19:44 no vegetables for your last meal, but the most
19:49 part to be honest most people are really not
19:53 feeling for breakfast because their
19:55 last meal is too late. So, in other words what
19:58 they should try is going to bed with an empty stomach.
20:03 Yes. And then in the morning they will be
20:04 hungry for breakfast. Oh! they will.
20:06 You will wake up with an appetite like a king,
20:08 and you will want to have some food.
20:11 Are you sure you I have done it, I tell you this.
20:14 I used to have one meal a day 10 years ago
20:17 when I first started one meal I started in the
20:20 morning and then we went to sleep.
20:23 It's how I operated that's, that was just me
20:25 we can add that. Add it now. Okay, we
20:28 already have blueberries. Yes, it's really blue.
20:31 The mixture is nice and thick.
20:32 Yeah, my meals never ended, you know, I just
20:35 have a good time. I enjoyed eating and
20:37 I still do, instead now I know that I can't go all
20:41 day, and can eating between meals because
20:43 that's not what God will have us to do.
20:45 He says we should eat at a set time.
20:47 The book of Ephesians tells us that.
20:50 So, that's ready. Okay. That's all good and ready.
20:54 I guess we are done with our recipe for today.
20:56 Yes, we are. Very good, so we have
21:00 the waffles iron over here already still baking
21:04 our waffles, and once this is done serve it
21:08 high and does that have to be hot or cold.
21:10 I like it hot. You like it hot.
21:12 I really, some people like it cold,
21:14 some people like it at room temperature.
21:16 I like it hot or not, you know, and usually
21:19 waffles take about 8 minutes to bake. Okay.
21:22 If they are not thoroughly cooked in the middle
21:25 then you can pop them into the oven or pop
21:26 them in toaster for few minutes, okay, and
21:28 they are good to go. Very good.
21:30 Are we ready to move out? Yes, we are. Okay.
21:33 Well, are you ready? Well, here it is.
21:36 Let's read the recipe together, and what we
21:38 are making is that, Bran Muffins, my children's
21:42 favorite, and the ingredients are,
21:46 2 3/4 cup of bran cereal 1/2 cup of raisins.
21:52 1/2 cup of walnuts 1 cup of unbleached flour
21:58 1/2 cup of whole wheat flour 2/3 cup of cane sugar
22:04 1 tbsp. aluminum-free baking powder
22:08 1 1/4 cup of water 1/2 cup of coconut milk
22:12 2/3 cup of canola oil 2 tsp. ground flaxseed
22:16 1 tsp. coriander 1 banana and Dash of cardamom.
22:24 That's right we are going to make these
22:25 sweet and delicious Bran Muffins.
22:28 Yes, we are. Tell us the stuffs.
22:30 Well, it's very simple. You need a blender.
22:32 Okay. Put your banana in there with oil, water,
22:35 and your coconut milk. Okay. That's it.
22:37 you blend, nice and smooth. A banana, my oil and
22:41 my coconut milk again. I love coconut milk.
22:44 Okay. I can tell from the Ireland.
22:46 They are going to say, oh, Marlene the
22:47 coconut milk please. And then they say,
22:50 it has cholesterol, no cholesterol
22:52 No cholesterol, exactly. It's all plant base.
22:55 Okay, so I just blend that. And you can add the
22:57 water when it's all done. Okay.
23:28 Beautiful. If you don't want you use coconut
23:30 milk you can use soy milk, almond milk,
23:33 you know it's your choice. Okay. Cashew milk.
23:35 Beautiful. Alright. Okay, now I am going
23:37 to take the dry ingredients, everything
23:39 except my flakes. Flakes. Okay. I tell you story
23:43 on that. Add my whole wheat flour, my sugar,
23:50 the unbleached flour. You can add.
23:53 And everything else now. Yes, the cardamom. Coriander.
23:56 Coriander. Umh! That's all cinnamon,
23:58 we use instead of cinnamon. Right. That's the baking
24:01 power and that was flaxseed and a little
24:05 pinch of salt and you can add the nuts and
24:07 you can leave the chips, you can leave the
24:09 raisins for last. Okay, so then you can
24:12 add your liquids, add the liquids.
24:14 And show why I should, I should have
24:16 showed, all of it, yeah, you can put all in there.
24:17 Okay. Why it was been nice with that's okay we
24:20 use a spoon and I tell you why I don't add my flex.
24:25 You can go ahead and mix one. Yes.
24:26 She likes to work like the people to work.
24:28 You don't come to my kitchen and just say..
24:30 It's a good team You have to work.
24:32 So, one day I made some muffins and I was
24:34 rushing and I didn't put my, I dumped
24:36 everything in. Oho! And there was my
24:39 friend inviting she says what's this and she
24:42 picked up a flake out of there and the flour was
24:44 stock all to the flakes, I was so embarrassed
24:48 that's why I would never, haste makes waste.
24:50 My mom says that all the time.
24:51 That's right. So, we will not do that here.
24:53 Okay. As now we can add our flakes.
24:57 This must good. Alright we can add our raisins.
25:00 Well, they don't want to leave that jar.
25:04 Okay. That's beautiful. Get your Muffin Pan.
25:07 All like this. It's not really thick
25:10 the mixture is not.. You know it's not.
25:13 You know, we don't want to make too thick
25:14 Okay, and now And that's it.
25:16 That's it. You don't have to wait until they
25:17 are soften at all, oh wow, interesting,
25:19 I like to make the miniature ones, because when the
25:21 little people come to my house they say,
25:23 they want muffins but you know children may
25:25 always waste. Alright, well we are
25:26 going to put this at 350 degrees, for how long?
25:30 The miniature wants baked for 12 to 15 minutes.
25:33 The larger one's for 25 to 30 minutes.
25:35 Okay. Okay. Well, we are going get
25:37 all the final products ready and sure, we are
25:39 going to ahead to take a small pause
25:42 right now but please standby. Yes.
