They 00:55 say it taste like pepperoni, I can't wait 00:57 to try that. First I want to introduce you 00:59 to special guests and friends here with me 01:01 in the kitchen; their names are Resa and 01:03 Ozzie Oswald. Welcome, both of 01:05 you. Thank you. 01:06 So, glad to have you here. Now your food 01:09 is absolutely fantastic. I know you have been 01:12 here cooking and we eat, and the crew eats 01:15 and we just love your food. Yeah it's really 01:17 good. But tell us first of all 01:19 before we get cooking just tell little about 01:21 you have a real tremendous ministry 01:23 of hospitality to people tell us about that. 01:25 How do you get starting doing that? 01:28 Go ahead. Well, it's kind of like 01:30 natural way. You know, yeah, we like to 01:33 entertain and we love to share god's 01:35 blessing. Yes. So, doing that we just invite 01:38 people to our home and share the best 01:41 thing that the lord has blessed us, yes, the 01:44 cooking and sharing foods. Yes. So, that's how 01:46 we started. That's right. 01:48 Yes. Praise God. You have 01:49 been doing it whole married life or most 01:51 fairly recently? Most recently when 01:53 we moved here. Okay. 01:54 Yes, so when we move here we going 01:57 to like pray that the lord where send us in 01:59 a place where can be a blessing and be 02:01 blessed. Yes, yes. So, in this way we are being 02:04 blessed and share his blessings. 02:06 Yes, that's right. And making friends 02:08 from all over the world. 02:09 Oh! That's special, that's right. You've had 02:11 over 600 people to your house. 02:13 Yes. Not all at one time. 02:14 No, there were times that it seems like it. 02:17 That's pretty special and then you ministered to 02:20 the people at work and whatever, that's 02:23 really neat. Yes. 02:24 I have got a friend at work that we were 02:27 talking the other day and she is not a 02:29 vegetarian at all and she started looking up 02:33 recipes and finding different vegetarian 02:36 recipes and she says oh! I would like you 02:39 to make this one and I would like you to 02:40 make that one, oh, it's pretty nice. 02:42 Isn't that special? That's right, that's 02:44 right. And it can be a real ministry to other 02:46 people. It can. Do you know? 02:47 Because the health message is entering 02:49 into the gospel. Exactly. 02:50 I really believe that, you know. 02:51 It's true. Now before we make 02:52 our special meat here first we are going to 02:55 make some Asian sort of burritos. 02:57 A mix of Mexican and Asian. Its a veggie 03:01 burritos, you know, burrito is like 03:03 Mexican. Yeah that's right. 03:04 And so, we love vegetables its going to 03:07 like veggie burritos. Yeah that's right. 03:11 And has a little Asian twist. So let's read 03:13 that recipe for our burritos here. 03:15 For the veggie burritos you need: 04:00 Okay, what we will do here? 04:03 First we will cook our tofu and we will put 04:07 everything here, we will put a little bit of oil. 04:09 You use olive oil right? 04:11 in the cooking. Yes. 04:12 Okay. I love using olive oil. 04:15 Yes. Just a little bit. 04:16 Yes. Now we just going to like 04:17 And the pan is good and hot. 04:19 Yes. It's steaming. 04:21 We will put garlic and we will put onion. 04:25 We will mix the tofu at the same time. 04:33 Okay. Now this tofu is this water packed 04:38 tofu you could buy in the grocery store. 04:40 Yes. Okay 04:41 And we just drain it. Okay. 04:43 And then just stew it And then cut in the 04:45 cubes. Right. 04:46 It's pretty nice. Good right. 04:48 We will cook this for three minutes. 04:51 Okay, three minutes. Good, very nice. I like 04:57 it because it will absorb that flavor that 04:59 unfermented soy sauce. 05:01 Yes. Okay. 05:03 And while I stewing that I start with the 05:05 avocado. Good. 05:07 Slicing this. I love avocado. 05:12 Yes. It's really good. Very tasty, and its 05:18 kind of a natural fat. Exactly, you can eat a 05:21 lot of avocados and not gain any fat really. 05:25 Right. This is the natural fat found in 05:28 the fruit products. Exactly. 05:29 Instead of adding the whole bunch. 05:31 So we will just dice this. 05:33 Okay. Very nice. Now your kids like 05:40 burritos? They do. And this is 05:43 really good too because this is quick 05:44 and easy, that's right, so when we have company and 05:47 then have my sons says mom, listen, 05:49 get burritos. They love it. 05:51 Yes, everybody loves burritos. 05:53 Oh, yeah absolutely. That's right. You 05:55 need a spoon or you Yes. 05:57 Or how do, I am not sure what you do 05:59 here, how you get that out. 06:00 That was good but all. Okay. Very nice, so 06:07 we will just cut it. Yeah. And now we 06:09 can put that here. Okay. So it's over, the 06:13 tofu and that. Yes. 06:14 It does not cook long. No not really, just to 06:20 give a flavor to the tofu. 06:21 Yes. Yeah. And then we will 06:24 steam the wrapper. The wrappers, now 06:27 isn't these how we wrappers. 06:28 Yes. How many you want. 06:30 Oh just one at the time. 06:31 Oh okay. We will steam on the 06:33 steamer right here. Okay, now that thing 06:36 is pretty fancy there. Yes. 06:39 Now tell me about that. 06:40 It's a bamboo steamer. 06:42 Oh! Yes. 06:44 We are getting out Asian element here. 06:47 Yes, that's why I said it's kind of Asian 06:48 element here, yes It's kind of the Asian. 06:49 Yes. Yeah boy isn't that wonderful. Okay. 06:53 And then just we will put all this and we 06:56 will just flip this for 30 seconds just to 06:59 soften the burrito. Nice. 07:02 Because it's easier to fold to wrap. 07:04 Nice. It's just so cute that all bamboo 07:05 house, I really like it. Yeah. 07:07 Okay, see how nice and soft it is. 07:14 Okay. And you can do 07:15 another one. Pretty good, Ozzie I 07:17 will get you another. Thank you. 07:18 We will just start with lettuce. 07:20 Okay. Very nice, and that's nice you work 07:28 in the kitchen too Ozzie with your wife. 07:29 Yeah. Working together. 07:31 I love it. It's a lot of fun working together. 07:34 Absolutely, that's nice. 07:37 Now spread out the beans here. 07:40 Oh! Yes. I think that's need you and 07:42 your ministry together, that's a good 07:44 thing you know. Yeah when Gods 07:46 gives you both the same gifts and then 07:48 you can minister together as husband 07:49 and wife that's really special. 07:50 Oh! Yes. And that's like you 07:52 know like I said we love sharing. 07:54 Yes. Right. So and a lot of people 07:56 say well how you do that? You know also 07:58 we just kind of like give our recipes and 08:01 Yes, that's right. Yes, so we will put 08:03 onions and little bit of black olives here. 08:09 Okay. What about the tofu mixture that was 08:11 into Yes. 08:12 Oh, we got a lot of stuff going here. 08:14 And like I said the mangoes, you know it 08:18 good too. I love mangoes. So it's 08:20 optional. Yes. 08:21 A lot of people don't like mangoes. So, but 08:24 what they can do. Now that will make a 08:25 similar oriental to get in the mangoes in 08:27 there. Yes. 08:28 Yeah. We will put some of 08:30 this. Very nice. 08:32 Some tofu. We are getting a big 08:34 burrito here. I don't know if you can see 08:35 that. You almost got to put 08:39 another one on top and then make a little 08:41 you know We get some big boys 08:43 at home. So can use right 08:45 There you go. That's me. 08:46 Is that you? So you are just going 08:50 to roll it up like this. Oh, doesn't that look 08:51 good? But it's still going. 08:55 Get the plate here Oh, you got a plate 08:56 there, good. It's easy like I said 09:13 when we have company, that's okay; 09:16 well let's do this its quick. 09:18 It's correct, Yeah, okay let's go to 09:20 our recipe here. Okay, alright. 09:22 Good, let's read that one. 09:24 For the Grilled Cheez Sandwiches. Oh that's 09:27 sounds good: 10:19 Which is optional. Well I like this 10:23 because we are actually making our 10:24 own cheese. We are not using substitute or 10:27 anything. Yup. It's special. Yeah where do guys come 10:31 up with this recipe? Friend of my mine 10:34 shared with me and then from there we 10:37 just made some changes in it. 10:38 Oh, yeah. That we like and that 10:41 was pretty good and I think you are going like it. 10:44 Oh, yeah. What we will do here. 10:45 Just everything goes in the blender at one time. 10:51 I can handle that, That's pretty easy; 10:54 you guys can do it too. That's pretty 10:55 easy. Yeah okay. Go ahead. 10:58 Yeah. Would you blend the 11:00 cashews in a small amount of water or 11:02 not you just through everything in 11:03 together. I just put it all 11:04 together. It's pretty easy I like 11:05 it. Good. Water. 11:09 Got water and cashews. 11:11 Cashews, quick oats. Okay, those are quick 11:15 oats; I was going to ask you. As they were 11:16 they rolled or quick. Okay, good. 11:17 And nutritional yeast flakes. 11:19 Where can our friends at home find that 11:21 nutritional yeast flakes? 11:22 We get ours from a Co-op.. so a health store. 11:26 Probably, it will be more likely. Okay. 11:27 These are fire roasted red peppers. 11:32 Okay. I like that, its got a 11:34 little extra bite. Its got a little bite 11:37 that's for sure. And the Tahini. 11:39 Good, now Tahini is just the sesame seeds 11:43 right. Sesame seeds, yeah. 11:44 Kind of sesame seeds Good. 11:46 You can actually make that yourself. 11:47 Oh, okay. Good. Lemon juice. 11:53 And that looks like freshly squeezed. 11:55 It is. I can see little pieces 11:57 that taste so good. Its arrowroots. 11:59 Okay, that's kind of a thickening. Do you need 12:02 knife there get it out you got it. 12:03 No that's fine, and then the garlic 12:09 powder, onion powder. 12:10 Good And the salt, and its 12:18 mustard paprika, dill seed and garlic. 12:24 good job got it, 12:26 I had to think about it. That an right, listen 12:28 here to see if he get it Ozzie, good job. 12:31 That's right. Alright. And just blend it up 12:35 from that. Good. 12:36 Alright. Okay. 12:58 I think it's good. Good. Now what 13:01 happens? Now the easy part 13:04 comes. I thought that was 13:06 easy part. No. 13:07 Oh, it was good and hot pan wasn't? 13:12 There we go, I will just stir this for a 13:18 minute till its get thick. 13:21 Okay. Good. It takes a minute or 13:26 two. Now the arrowroot or 13:29 the cornstarch is your thickening then? 13:31 Yes That's the thickening. 13:33 Kudzu was on the list. 13:35 I saw that, what is 13:37 that? That's another kind of 13:38 thickening. It's from a root. 13:40 Oh, okay. Sometimes they use 13:43 in different foods and sometimes it will 13:46 prepare food if you want to be like real 13:49 clear in that, it works better for that. 13:51 Oh, okay. Cornstarch can be like 13:54 a white effect. Right. 13:56 It comes out more clear. 13:57 Right, okay. So Kudzu, is what we spell Kudzu? 13:59 Okay. And friends at 14:01 home can get that at a health food store. 14:03 Health food store. Okay. Health food 14:05 store. Good. Okay, very nice. Now where 14:10 else you could use this cheese sauce for? 14:12 You can put it on pizza. 14:14 It's good. That's sounds good. 14:16 You could use grilled cheese sandwich. You 14:18 can make it into different Nacho's. 14:23 What about Macaroni & Cheese, does it work for 14:27 macaroni cheese? 14:28 This would. Yes it's good too. 14:30 Good, okay. So you can use it for a lot of 14:33 things. A lot of things. 14:34 Now can you store it? Or wont you? 14:36 Yes. Yes, this will stay 14:38 longer if you put in the fridge. So 14:41 whenever you ready to have sandwich, you 14:43 just warm it up and spread it on the bread. 14:46 That's perfect. I like that, yeah. 14:49 Because this, I think this makes like eight 14:51 sandwiches. Okay. 14:53 So there is only four of us. 14:55 We got all the camera crew and we got, you 14:57 guys how many want eat some too right. 15:00 That's right. That's right. It's started to 15:04 thicken a little bit isn't it. Yup, it's working. 15:06 Just a little bit. So normally you bring it 15:09 to a boil and then we got some that's already 15:14 made up if you want to sample it. 15:16 Yeah we do, okay we will see that at the 15:17 end, good to see it. Yeah very nice. 15:19 Yeah, now what was I going to say? I 15:24 was thinking about something else you could use it for, 15:26 Lasagna, that was it. Lasagna, 15:28 yeah, can we put in Lasagna or something? 15:30 Yes, if you, when you refrigerate it, you 15:33 can actually cut it like this and you can put it 15:36 on layers on stuff put the noodles over. 15:38 Nice. So actually really firms up. 15:41 Yes. Yeah, it depends on 15:43 the more cornstarch that you put the thicker it is going to 15:45 get. Okay, yeah, and the longer you cook too. It's a 15:49 thicker it is. That's right. Yeah, okay. So, 15:54 normally we won't take the time to do it 15:56 now but normally you would wait until it 15:58 boils. Wait until it boils and get 16:00 kind of thick and then just spread on the 16:03 bread, butter it and cook it. 16:07 Stick it, yeah. Everybody knows 16:08 how to do it. Then you flip it over and 16:11 then cook the other side then eat. 16:12 Good and at the end of the program we 16:13 will show you what that grilled cheese 16:14 looks like. But now we are going to make 16:17 our. What we call it Resa, some kind of 16:21 special, it was making our meal but the 16:25 seitan log. That's, that's the word I am 16:27 looking for. Okay, let's read our recipe 16:28 for the seitan log: 17:18 For the veggie burritos you need 17:20 Well I am really excited to learn how 17:21 to make this seitan log because this is like a 17:24 fake, "fake", vegetarian meat, 17:28 that were making. And you 17:29 know a lot of people try to go okay, I am 17:31 not going to be eating the meat anymore I 17:32 am going to go vegetarian but they 17:34 buy like a processed meat. You know 17:36 vegetarian meat substitute, you could 17:38 buy in the freezer and a can but you are 17:40 actually making a food scratch. 17:41 And so you know what's in it. 17:43 Absolutely. And this is here, if 17:46 you decided that, you try it. You don't, it's 17:49 like too spicy or not spicy enough. 17:51 You have preference you can always 17:53 change it. Praise god, that's 17:55 wonderful. Yeah, that's neat. Okay, 17:57 you can experiment at home. Try this recipe 17:59 and see how you want to change it. It's 18:01 good. Okay, so show us what we do Ozzie. 18:03 First, because the spices and stuff, protect your 18:09 fingers now. Yeah, you use the 18:11 glove. Doing some surgery 18:15 here. That's right. That's right. 18:17 Yeah, okay, that's nice, Resa can relax. Yes. 18:22 Ozzie gets to cook. Exactly. 18:24 That's nice. Put all the liquids in 18:27 one bowl. Okay, good. That 18:33 was our unfermented soy sauce and olive oil. 18:36 Olive oil. Okay. 18:37 And the water. Good. 18:39 And the tomato paste. Oh, okay, good. 18:49 I like a good flavor, I like stuff with tomatoes in it. 18:55 Yes. Yeah, that's sounds 18:58 good to me. And this will give 19:02 good color too. Absolutely, that's 19:05 right. Here we go. 19:06 Okay. Then we whisk it 19:11 together. Let's whisk it, get all the 19:13 tomatoes mixed up in there. 19:15 Yeah. That's right. It's reminding my uncle, 19:19 he likes to cook, he gets in the kitchen, he 19:21 gets all the pots and pans out and gets 19:23 working away in the kitchen but he loves it 19:25 and then my aunt comes home and does 19:26 all the dishes. I think it's a man 19:29 thing. You know they use everything in the 19:30 kitchen, you know. There you go, but 19:32 yourself blessed Ozzie likes to cook, 19:34 that's blessed. Now what about, was there 19:36 some liquid over there? Does it going 19:37 to or not? I will show on, this 19:39 one isn't. I don't know I am just 19:41 asking. Now what was that? 19:43 That's the molasses, isn't it? 19:45 Yes. Oh, okay. Good, give you a little sweet and 19:50 then you have the sour, with the potato. Yes. 19:53 Yeah, very good. Okay. All the dry ingredients. 19:58 Good. Now, was this gluten flour? I'm trying 20:02 to remember, vital gluten. Where can our friends 20:05 find that? Vital wheat gluten. 20:06 In health food store. Health food store. 20:09 Okay. Paprika, and salt, good, yeast flakes. Good. 20:16 Cumin. Hmm. I like cumin. Yes, me too. 20:21 Garlic powder. Good. 20:23 This is the, is that papaya 20:29 Papaya pepper. This is the papaya 20:30 pepper. Now tell me about 20:32 this papaya pepper? What is papaya 20:33 pepper? Papaya pepper is 20:35 ground up, dried papaya seeds. okay 20:39 you cut it papaya, take the seeds out, 20:42 rinse them out, put them on the side eat 20:44 the papaya and when it dry, you make 20:45 papaya pepper. Okay. See it is that's 20:47 easy in everything. Yes. 20:48 I mean, you know, that's not only just 20:49 eating the papaya but you are using the 20:51 seeds too. Now the seeds have what type 20:53 of taste of flavor to this example. 20:54 It's little milder than black pepper but it's 20:59 not an irritant. Okay, it is so spicy. 21:00 Oh! is it that. Yes. 21:01 Can you buy papaya powder or you have to 21:05 take the seeds and make it. 21:06 We have to make it for self. 21:07 Yes, it's just our own thing, you know you 21:08 wont find it anywhere but its just like what 21:11 else can we replace for the black pepper. 21:14 So that's papaya seeds. 21:16 That's right. This is Resa and Ozzie's 21:19 original creation. That's awesome, I 21:21 like that. Yeah. Here is the cayenne 21:25 pepper. Okay. And where 21:29 must done with other dry ingredients. 21:30 You have to go. Papaya seeds. 21:32 Good. Oh good. Everything together. 21:37 Yeah. Now is the fun part. 21:39 Yeah. Now you can get dirty get your 21:42 hand in there or you don't get in there. 21:44 Oh, yeah. He will. Oh, yeah. Good, 21:46 that's pretty fun. This will be nice to make 21:49 with your kids. I would like that. Here 21:57 we go. Here we go. 21:59 thing well here. Good. Okay, that will 22:04 be fun, your kids in the kitchen. Does 22:06 Abbey like to cook or George. Your 22:07 daughter and son. Oh, she loves. Yes, 22:08 they love always mummy can I help 22:10 Oh! Yes, anything too 22:13 with abbey always like mummy stay 22:15 there I will make breakfast or I will 22:17 make lunch for you. And she will make 22:19 PB&J. Oh, isn't that special. 22:21 Pizza, butter, jelly, sandwiches. 22:23 Yes, exactly. Yeah, Abbey is five right. Yes. 22:26 Yeah, she is really cute. Abbey is really cute. 22:28 Yeah. Same thing with 22:30 Josh, you know he learned something 22:32 from the essences. Well, mummy I will 22:33 make that. That's right. You know, something for you. 22:35 Yeah, that's very nice. Okay, we mix 22:39 it all together. So, we are forming it in to a 22:42 log here. Yes. 22:43 Good, a seitan log. Seitan log. 22:45 Okay, now what we do with that here. 22:49 Now just put a little bit more. 22:52 Okay. And then you bake it? Yes. Okay. 23:02 Bake it for 90 minutes. 23:03 90 minutes okay. For 375. 23:06 Okay so an hour and half for 375. And you 23:10 bake it in the tin foil. Just like that. 23:11 Tin foil Isn't that nice. I like 23:13 that idea. That's very nice. And then when 23:19 it comes out its firm. Its firm 23:21 Nice. Yeah. We just pull it after 23:25 and then slice it or whatever you want. 23:28 You can use it in sandwiches like you 23:29 would a meat, if you would like to have a 23:31 meat sandwiches or something else. 23:33 Gravy over the top of it. You can slice and it 23:36 put it on pizzas. Oooh, like pepperoni 23:38 on pizzas. Yeah that's sounds good. Very 23:41 nice. It makes really a good 23:42 sandwich. Oh, I am sure. 23:43 Absolutely, and can you store in the 23:45 freezer? You can freeze as well. Okay, okay. 23:48 and also in the fridge. You know just put in 23:52 the fridge and whenever you are 23:53 ready you can slice it and serve it. Yes. 23:56 Very nice. Oh I am so excited to learn how 23:58 to make this. That has a lot of fun.
