00:46 Jill Morikone and today we're going south of
00:48 the border to Mexico with all kinds of tasty
00:51 yummy Mexican dishes. But first I wanna introduce
00:54 you to my special guest and special friend
00:56 Kyong Weathersby. Welcome Kyong we're
00:59 so glad to have you here. Oh! Me too,
01:01 I'm so glad to be here, cooking with you again.
01:03 That's right. And we always have a good time
01:05 whenever we cook in the kitchen together.
01:07 Yes, yes, we do. But for our friends at home
01:08 they may not be familiar with you and your ministry.
01:10 So why don't you tell us about the Taste of
01:12 Heaven ministry. Okay the Taste of Heaven ministry
01:15 and God call me about eight years ago.
01:18 Kyong, teach the people how to cook healthy.
01:21 There are so many people are suffering from
01:23 their sickness and diseases. So this is
01:26 what I have been doing and it's such a rewarding
01:28 through, the Health Ministry a lot of people
01:31 get to know our loving savior Jesus. That's right.
01:34 That's the whole purpose. That's the whole purpose.
01:36 That's right, that's right is to learn about Jesus.
01:38 Yes. That's right, absolutely. Yeah. Now you had an
01:41 interesting experience, she was telling me just
01:43 a little bit about, where you did a Medical
01:46 Missionary Training Program. Yes. Tell us
01:48 about that. Oh! I was so good, they called me
01:52 if I like to be a part of the Medical Missionary
01:55 Training School. So we, they asked me how you

02:04 So when I went over there this is like a whole
02:08 week program. There we are teaching children
02:11 from aged 5 to 10 just little kids. Little kids.
02:16 Just 5 to 10. Then we had a teenager group
02:18 and then we had a grown up group.
02:20 Oh! Fun, so everyday we had like a four hours
02:24 cooking course and I teach them how to
02:26 make things then those things we gonna have
02:29 in lunch. Oh! And the children and, little
02:32 children learn how to make Gluten. Oh!
02:34 And they are so happy, this is more like just hands
02:37 on cooking school so. Oh yeah! That's right.
02:40 And what they learn right, they're starting there
02:43 go out training other people. So, this is such
02:47 a, great going, yes, such a wonderful experience
02:49 I have them with. So you did cooking schools
02:52 for the age group 5 to 10? Yeah. And also the
02:54 teenager group? Teenager groups and then grown up.
02:57 Oh! That's a lot of work. You can't imagine that
03:00 my husband wash a lot of dishes, but we had
03:03 a lot of wonderful volunteers came to
03:05 help me. Yeah, so it was just such a fun.
03:09 Oh! Did you get the little kids coming and working
03:11 with you, yeah it's like having some training,
03:15 so they actually come to kitchen and we just
03:17 put together things. And you have to be very careful
03:20 with the young ones, where as their one teaspoon
03:23 sea salt they put two teaspoons sea salt.
03:25 That's okay. Do you know what happened,
03:27 we made a muffin and then we had a lunch together,
03:31 then someone tell me Kyong this muffin is too salty.
03:35 Oh! So they put in too much salt. Yes, yes, so
03:38 it is very important to teach them measuring
03:41 right ingredients is so important.
03:44 Proper measurement, yeah, right, then
03:45 they would never forget the experience they have,
03:48 yes, with that there. That's right, that's right
03:50 and that's good and just training them young.

03:56 We're going south today. Yeah. We're going to
03:58 Mexico. So let's read our first recipe.
04:02 For the Taste of Heaven Chili you need:
04:04 2 cups of cooked beans, 2 cups of ground veggie meat,
04:08 One 8 oz. can of tomato sauce, 1 cup of water,
04:13 1 tbsp. paprika, 1 tbsp. unfermented soy sauce,
04:19 1 tsp. ground cumin, ½ tsp. garlic powder and
04:25 1 ½ tbsp. nutritional yeast flakes. Okay, that's nice
04:31 and easy. It is very simple. Yes, I like that.
04:34 People will probably want to know, Oh! She looks
04:36 like an Asian lady and how she knows about
04:40 the Mexican dishes. I will tell you I used to live in
04:43 San Antonio, Texas, okay, for 19 years. Oh! Yes.
04:48 So you know I was, my friend, lots of friends from
04:51 Mexico or we call it Tex-mix. Yeah right.
04:54 And so we get to taste a lot of Mexican dishes.
04:57 That's right. So this is Guinean one.
04:59 But this is a real. That's right. Okay this is the
05:02 real stuff? Yeah. Now, I'm gonna go ahead
05:05 and start with cooked pinto beans. Okay,
05:08 but if you like any other kinds beans they will fine.
05:11 Okay. Like I told you before that beans is almost the
05:16 perfect food. Yeah. That God create for us,
05:18 very high in fiber and has good protein and
05:23 the vitamins, irons and all the good things in here.
05:27 Yes, that's right. And a lot of people wants to know,
05:29 you know usually when beans I have some in
05:34 case some gas problems, so I can give you some
05:36 few tips for you. Oh! Good, for you to use,
05:39 very good okay. When you cook put some
05:42 lemon juice. It will eliminate some gas problem.
05:45 How much lemon juice? Just a few drops its
05:47 just fine. Okay, just a little bit, alright.
05:49 Then go and soak overnight then freeze
05:53 that in the freezer. I've never heard
05:56 of the freezing part. Yeah. I've done the
05:58 soaking part, but so you would soak it overnight
06:00 and then you put it in the freezer. Then put it in
06:01 the freezer and freeze that. Okay. And then
06:04 when you cook and you really eliminate some
06:06 problems here. Well these are some good
06:07 tips right? That's good. I mean.
06:09 I like that very nice, okay. And this one,
06:12 actually is a homemade a vegetarian meal,
06:15 yes, but if you have your good recipe over the
06:18 veggie meats and you will need about two cups.
06:20 Okay, make sure, Kyong makes the best veggie

07:04 Then I'm gonna add 1 tbsp. paprika.
07:08 I like paprika. Lot of people doesn't know
07:11 what is paprika, paprika actually is like dry,
07:14 red bell pepper and then they ground it. Okay,
07:17 so it has the same nutrition behavior
07:19 as the red bell pepper does, okay very good.
07:22 I'm using unfermented soy sauce. Now you can just
07:26 get that in the grocery store right? Oh! Yes,
07:28 you doesn't have to look for the type.
07:29 That's right, alright. And the garlic powder,
07:32 okay, but if you love garlic go and use just
07:35 regular garlic. Yeah, there you go, put in the
07:37 raw pieces of garlic that's good. And this is ground
07:39 cumin, good, and do you know that Mexican dishes
07:44 has such a wisdom, because when you use
07:47 lot of beans and the cumin actually eliminated
07:51 intestine gas. Okay, so very good, so the way
07:55 you put some cumin in here then you will reduce
07:58 the gas problem also. So besides the lemon juice
08:01 and the freezing then, yeah, you can also try
08:03 the cumin, good, okay. It gives us such a good
08:05 flavor, oh! Yeah I like that flavor. The last
08:07 ingredients I'm going to put nutritional yeast flakes
08:09 and nutritional yeast flake is like a B1, B2,
08:14 yes, B6, B12, yes, so when you become a
08:17 vegan vegetarian, you don't have to worry
08:19 about am I getting enough B12, so when
08:22 you don't have nutritional yeast flakes you will get

08:45 once it starts to boil, you need to reduce the heat.
08:48 Okay. And then simmer it down for 20 minutes
08:50 and it tastes so good. Oh! Yes, and it looks

08:59 with rice, so we feel really good. Yeah Oh!

10:06 We are going to make Fiesta Corn Bread. Okay,
10:10 for the Fiesta Corn Bread you need:
10:12 1 cup corn meal, 1 cup unbleached white flour,
10:16 2 tbsp. wheat germ, 1/4 turbinado sugar,
10:21 ½ tbsp. baking powder, 1 tsp. sea salt and
10:26 1 tbsp. soy or tapioca flour. You also need one 4 oz.
10:32 jar of pimentos, 1/4 onion that's chopped,
10:36 ½ cup corn, 2 tbsp. chopped fresh parsley,
10:41 1/3 cup canola oil and 2/3 cup soy milk.
10:49 Well, that's interesting ingredients Kyong to
10:51 put in Corn Bread. This is definitely a
10:54 Fiesta Corn Bread. Yeah. Fiesta means party.
10:58 Yeah, so when you have a party you got to
11:01 have balloons so, I'm gonna put some balloon
11:03 color and decorate it, like red and green
11:05 and yellow, I like that, and it also tastes so good.
11:08 That's right. Okay. That's gonna make it a little
11:10 bit more Mexican flavor too, yeah, give us our
11:12 south of the border stuff. Yes, now we go, okay.
11:14 This is all about the Mexican dishes right.
11:18 That's right, alright. Okay, first we're gonna
11:20 put some corn meal, okay, because it's
11:22 Fiesta Corn Bread. That's right, corn bread,
11:25 that's important, that's the starter,
11:26 yeah corn meal is very high in fiber.
11:28 People want to know today is the potassium
11:30 in there and iron. So it's very good for you.
11:33 Yeah, that's right. And this is unbleached white
11:37 flour, okay, I'm using unbleached white flour
11:40 to like corn bread, so it won't be so heavy
11:43 and dense. Yes, so since I'm using unbleached
11:46 white flour I'm adding some nutrition back in,
11:49 yeah like high in vitamin E, and B,
11:52 and fiber here. Okay, then next I'm going to
11:55 add turbinado sugar, this one, lot of people want

12:07 I mean juice from the cane, sugarcane.

12:14 cane juice is a turbinado sugar. Okay.
12:17 Because of the less process they have more anociation
12:20 better like, oh! yeah, calcium, potassium, iron
12:25 and magnesium. That's right, that's right it's the
12:28 first process that. Right, right, so that makes
12:30 a big difference. It does. It's less, less processed,
12:33 less things added to it or taken from it.
12:35 So less refined. Yeah, that's good.
12:38 This is baking powder. Okay. Without baking soda
12:42 and aluminum in it. Okay. So it's really healthy.
12:46 So our fiends at home they could go to a local
12:49 grocery store and just read the ingredient
12:50 label right? And then look for no baking soda and
12:54 no aluminum. That's right, okay good.
12:56 And then next I'm gonna add sea salt as you
12:59 see they're all good for you. Yes. Then I'm
13:03 using a soy flour. Soy flour for the binding.
13:08 Oh! To hold it like instead of an egg or something.
13:11 Yeah, that's a good idea. And the soy flour is
13:13 such a good for you. Yes, that's right.
13:15 Okay next what, after that go ahead and mix
13:19 it all right ingredients nearly good.
13:21 Then I'm going to go add pimentos, yes, and
13:27 pimento is like a cook red pepper.
13:31 So it has a lot of nutrition in it too.
13:34 Yeah, it helps you circulate and really good
13:38 for your circulation, circulations, okay.
13:40 Good for your heart and when you have a stroke
13:45 and heart problems, it's really good for you.
13:47 Good. Alright and next I'm going to add onion.
13:50 Yes. Because of the taste of the onions
13:54 and cumin, that's right. Then I'm going to add
13:57 corn. Then we are eating corn all the time,
14:02 but I just want you to know how good it is.
14:06 So I've kind of done a study, and the very high
14:09 in vitamin A, which is you need for healthy eyes,
14:12 healthy skin and healthy respiratory track.
14:16 Yes. Also very high in fiber and reduce cholesterol.

14:22 that's right. Okay I am gonna add parsley.
14:24 You know it's amazing to me Kyong how God
14:26 put in the foods that we just naturally eat.
14:29 God put all these healthy things that will help
14:31 our bodies. Yeah. Help us feel better. Amen.
14:34 We don't have to add all these extra additives
14:35 and stuff you know. It's in what the food that
14:38 God made. Thank you for putting it up.
14:40 And when I, every time when I study nutrition
14:43 you know I fall in love with the God more and more,
14:46 because wow God put all the good things in there,
14:49 even in the corn or bell pepper, that's right.
14:53 And corn meal and parsley, that's right,
14:56 you know it actually cleans your blood and
14:58 it's just such a good and people who have a
15:01 kidney problems it's a key, I mean the parsley
15:03 actually is good for the kidney problem too.
15:06 So God, that is what God made our body.
15:10 That's right. Then he knows what is best for us.
15:13 Oh! That's right. Yeah, absolutely, praise God.
15:15 Praise God, he is so good and wonderful.
15:17 Then I'm going to add canola oil. Okay.
15:21 And this is, it will lower your cholesterol,
15:24 okay good, and they're very high in Omega 3
15:27 which is good for your brain and heart.
15:30 That's right. And Soy milk. It's all the good stuff.
15:33 Oh! Yeah, that's right. Then I'm going to go ahead
15:36 and mix it really good. Good. It smells good.
15:39 Look at that, how colorful. You know
15:43 why I called it Fiesta. Oh! Yeah, I can see
15:45 it now. That's right, that's right. And make sure
15:50 to go ahead and pre-heat oven at 425 degrees.

18:12 Let's read our recipe for our rice next.
18:16 For the Baked Spanish Rice you need:
18:18 2 cups cooked brown rice, 1-8 oz.
18:22 can tomato sauce, ½ of tomato that's chopped,
18:26 1 tbsp. unfermented soy sauce,
18:29 1/4 tsp. sea salt, ½ tsp. garlic powder,
18:34 ½ tsp. onion powder, 1 tsp. olive oil and
18:40 2 tsp. nutritional yeast flakes. I'm excited about
18:46 this recipe, because I love Spanish Rice.
18:48 Oh! I'm so good at that, I've come up with
18:50 this recipe for you. Yeah. But this one is
18:53 Baked Spanish Rice. Okay. So it's so much simpler
18:55 and easier. You're not frying it. No. right, okay.
18:59 Shall we start. Okay. First one you will need
19:03 cooked brown rice. Okay. So, I'm going to go ahead
19:06 and put it in the bowl. Yeah. And this one you
19:09 can bake it or you can eat it like rice cereal.
19:12 It's so delicious. Yes. That's right. And I will
19:15 go ahead and add tomato sauce, okay,
19:18 black ginger. It's good for you. And the tomato
19:22 is very high in selenium which is one of the,
19:25 selenium, selenium, did I say right selenium,

20:40 vitamin C and more calcium and it will help
20:44 lower blood pressures. This is good for you.
20:48 Oh! Yeah, absolutely. Okay chopping is done.
20:50 Okay. Then I'm going to move this one to here,
20:53 okay, and what is next one. I will need the
20:55 soy sauce, unfermented soy sauce. Okay yeah.
20:59 Then next I will need sea salt. Sea salt contains
21:04 some calcium, magnesium. Good, yes it's good
21:07 for you. Yeah, this is garlic powder.
21:09 Now the sea salt you can just buy in the
21:10 regular grocery stores. Yes, yes. It's nice.
21:13 And I'm going to add 1 tsp. olive oil, okay,
21:18 since we don't fry this one, yes, you need
21:20 to have some little oil flavor in here. Yeah.
21:23 Then I'm gonna add some nutrition yeast flakes.

23:27 So spend sometime with the God's creation like
23:31 the tomatoes. That's right, it's all the things God

23:35 Amen. Do you teach garnishing when you
23:37 go out and do your cooking schools and
23:38 stuff as well? Oh! In some case I do that,
23:41 when I do like a fish product I just go
23:44 how to garnish. They simply want like with
23:47 the tomatoes and cucumbers, parsley,
23:51 things you can just find in your refrigerator
23:54 or in your garden. In your garden, yeah.
23:57 Sometime you can just pick some very
23:58 good flowers and you can just garnish with it.
24:00 Oh fun, yeah. And everybody who knows
24:03 in our church when we had a pile up and I always
24:08 take my garnishing in the separate container.
24:11 Okay. Then I decorate my plate and they all know
24:13 that's Kyong's dish. This is Kyong's this is.
24:16 But we can all do that, if I can do it, you can do it.
24:21 That's right. That gives me courage and hope,

26:13 2 cups of cooked brown rice,
26:15 1-8 oz. can tomato sauce, ½ of tomato chopped,

26:22 1 tbsp. unfermented soy sauce,
26:25 1/4 tsp. sea salt, ½ tsp. garlic powder,
26:29 ½ tsp. onion powder, 1 tsp. olive oil
