I like that, 00:03:14.85\00:03:17.24 lets read our recipe for those meatballs. 00:03:17.27\00:03:19.90 For the Walnut Tofu Balls you need 2 cups 00:03:19.93\00:03:23.35 chopped walnuts 2 cups whole wheat bread crumbs 00:03:23.38\00:03:27.03 1 pound extra firm tofu 1/4 c. unfermented soy sauce 00:03:27.38\00:03:32.63 3 tbsp. onion flakes and 3 tbsp. dried parsley 00:03:33.11\00:03:38.43 You also need 1 tsp. sea salt 1/8 tsp. ground sage 00:03:39.26\00:03:44.92 1/8 tsp. ground marjoram. Now, this is interesting 00:03:44.95\00:03:49.25 MarVella, I am thinking about this instead of the 00:03:49.28\00:03:51.05 meat we're using tofu. Right, yeah, that's amazing. 00:03:51.08\00:03:55.43 And tofu is just a soy, yes, protein, okay that's all 00:03:55.46\00:03:59.94 it is, okay. But, I would not suggest that you 00:03:59.97\00:04:02.86 eat tofu everyday, okay. Once a week is good, 00:04:02.89\00:04:05.68 once every other week I believe in variety. 00:04:05.71\00:04:08.61 That's right, okay. So its, we need moderation and 00:04:08.64\00:04:13.75 everything. Absolutely, absolutely, but it's a 00:04:13.78\00:04:15.86 substitute that comes in handy for people making 00:04:15.89\00:04:19.26 the transition. You can sweeten it, you can 00:04:26.69\00:04:29.82 salt it, you can sour it, that's good I like that, 00:04:29.85\00:04:32.53 yes. Okay, 00:04:34.76\00:04:36.64 first of all you wanna do the mashing today. 00:04:36.67\00:04:39.12 Oh sure, we want to mash this tofu and you can 00:04:39.15\00:04:42.56 use a fork or just a regular potato masher, okay. 00:04:42.59\00:04:45.19 And you wanna get it crumbly, okay, as small as 00:04:46.17\00:04:48.87 you can. And these are whole wheat bread crumbs, 00:04:48.90\00:04:54.48 Yes. We just tore them into small pieces, you can 00:04:54.51\00:04:58.53 use and that way you won't have to buy the packaged 00:04:58.56\00:05:01.54 bread crumbs that have so many different things 00:05:01.57\00:05:04.24 that you don't want. Absolutely 'cause we have 00:05:04.27\00:05:05.37 all those additives, absolutely, it's like an 00:05:05.40\00:05:06.88 ingredient looks just like these and you think, yeah, 00:05:06.91\00:05:08.72 that's a lot so this is good. Yes. 00:09:26.38\00:09:28.12 Candied Sweet Potatoes. 6 large sweet potatoes, baked 00:09:28.67\00:09:32.88 1 ½ c. coconut milk 1/3-1/4 c. pure honey or 00:09:33.40\00:09:38.59 pure maple syrup 1 ½ tsp. ground coriander 00:09:38.62\00:09:42.99 1 tsp. sea salt Well, I think sweet potatoes makes 00:09:43.24\00:09:48.96 a really good side dish with what we did with our 00:09:48.99\00:09:52.17 meatballs. That's really good, okay, let's look at 00:09:52.20\00:09:56.29 them here. Well, first of all you bake? I bake them, 00:09:56.32\00:09:59.69 and when you bake the potatoes they're sweeter, 00:09:59.72\00:10:02.49 yes. When you boil them you boil all the sugar out 00:10:02.86\00:10:06.38 it's extracted into the water, okay. But, when you 00:10:06.41\00:10:09.76 bake them you can actually see the sap coming 00:10:09.79\00:10:12.06 out of these potatoes, yeah sweet, in the oven. 00:10:12.09\00:10:14.02 Is that same with the white potatoes or just sweet 00:10:14.05\00:10:17.77 potatoes? Well, sweet potatoes but even white 00:10:17.80\00:10:19.75 potatoes. You think if they're baked they are 00:10:19.78\00:10:21.40 sweeter. A flavor comes out of the potatoes in the 00:10:21.43\00:10:23.99 water when you boil them. And what it does is give it a creamer, yes, 00:11:50.12\00:11:53.51 texture for your casserole, oh yeah and it is also 00:11:53.54\00:11:56.64 adds a little flavor, oh yeah because you get that 00:11:56.67\00:11:59.11 coconut on that. And so we're gonna add a little 00:11:59.14\00:12:01.58 sweetner here, yeah, now generally for people that 00:12:01.61\00:12:05.02 are changing the lifestyle and have not developed 00:12:05.05\00:12:08.44 that taste, that natural taste, they can appreciate 00:12:08.47\00:12:12.13 the foods in their natural state, you add just a 00:12:12.45\00:12:15.13 little bit of what they're used to, okay. And this is 00:12:15.16\00:12:18.70 gonna give it a nice creamy flavor. So, if you were 00:12:18.73\00:12:20.30 doing it, you're saying you wouldn't use the honey 00:12:20.33\00:12:22.86 at all. You don't have to, okay, okay it's the same 00:12:22.89\00:12:25.70 but if you use the sweeter, yes, you would want to 00:12:25.73\00:12:27.22 add that, got it. Or just add a little bit just to 00:12:27.25\00:12:29.75 make the sauce because you've been just sweet, 00:12:29.78\00:12:32.34 right, because you just basically sweetened the 00:12:32.37\00:12:35.07 coconut milk and then add your flavoring, okay 00:12:35.10\00:12:37.92 that's your coriander and then your salt. 00:12:37.95\00:12:40.06 Now, our coriander is like our cinnamon substitute 00:12:40.09\00:12:42.39 right? Lets read our recipe for the Veggie 00:13:51.02\00:13:53.85 Stir Fry for that we need. ½ eggplant that's 00:13:53.88\00:13:57.41 peeled & cut into strips 1 c. cooked garbanzo beans 00:13:57.44\00:14:01.54 ½ c. shredded carrots ½ red bell pepper cut into 00:14:01.69\00:14:06.95 strips 1 zucchini, sliced 1 tsp. cumin powder 00:14:06.98\00:14:12.67 Unfermented soy sauce or sea salt to taste. 00:14:13.11\00:14:16.48 I think the Stir Fry is a really good way to eat 00:14:18.74\00:14:20.63 vegetables, it is.
