Wonderful. 00:01:00.96\00:01:03.01 Well, what are we going to be making first? 00:01:03.04\00:01:06.25 Let's make a cheesecake, it's called just like 00:01:06.28\00:01:08.47 cheesecake and its. Wonderful. 00:01:08.50\00:01:09.73 Really good. Okay, to make the cheesecake 00:01:09.76\00:01:13.83 for the crust, you need, 2 cups of raw macadamia nuts 00:01:13.86\00:01:17.47 ½ cup of dates, pitted 1/4 cup of dried coconut 00:01:17.50\00:01:22.53 And for the cheese fillings we use 00:01:22.56\00:01:25.76 3 cups of cashews, there are soaked and chopped 00:01:25.79\00:01:29.68 3/4 cups of lemon juice 3/4 cups of raw honey 00:01:29.71\00:01:33.55 3/4 cups of coconut oil 1 tsp. of vanilla 00:01:33.58\00:01:38.41 ½ tsp. of sun dried sea salt And ½ cup of water 00:01:38.44\00:01:42.89 And there is a raspberry sauce that you put on 00:01:45.01\00:01:46.68 top which is made with; 1 bag of frozen raspberries 00:01:46.71\00:01:49.58 and ½ cup of dates. We are going to start with the crust, 00:01:57.84\00:02:01.03 and it is very easy. It's, basically its nuts 00:02:01.06\00:02:05.20 and dates. Oh! It's gonna be good. 00:02:05.23\00:02:07.46 It is. We do put a little bit of dried coconut 00:02:07.49\00:02:10.02 just in the bottom, this is spring-form pan. 00:02:10.05\00:02:14.08 So, when we take it out it'll set up really nice. 00:02:14.11\00:02:17.67 So, you just put that coconut on the bottom of the pan 00:02:17.70\00:02:20.85 and that's so it won't stick on the pan. 00:02:20.88\00:02:23.87 So, we're going to put the nuts which is macadamia 00:02:23.90\00:02:26.88 nuts I was just a little bit short of two cups 00:02:26.91\00:02:30.12 so I did for some almonds in here in that works. 00:02:30.15\00:02:32.85 Okay. Macadamia nuts basically and then 00:02:32.88\00:02:35.71 this is the date paste which is whipped up dates, 00:02:35.74\00:02:39.88 of course, medjool dates and the pits are taken out. 00:02:39.91\00:02:43.22 Okay. So, I am just going to put that in here 00:02:43.25\00:02:45.08 as well and I am going to break it up a little bit 00:02:45.11\00:02:48.58 so it'll go right in the food processor easily. 00:02:48.61\00:02:52.16 And now I put the lid on and we'll just make 00:02:52.19\00:02:56.03 this into crumbs, okay, so we'll press into the 00:02:56.06\00:02:59.00 pie pan. Alright. 00:02:59.03\00:03:00.39 That's should be good, should be a delicious, 00:03:19.31\00:03:21.37 delicious crust to. Basically I wanted 00:03:21.40\00:03:23.64 to get the dates all dissipated through the 00:03:23.67\00:03:27.46 nuts, so it'll press nicely in here. 00:03:27.49\00:03:29.86 It has a consistency of a gram cracker crust 00:03:33.84\00:03:37.07 only this one's a little bit chunkier. 00:03:37.10\00:03:38.80 Just press it down. You can make it finer than 00:03:40.73\00:03:44.50 that if you want. This is gonna be more of a coarse 00:03:44.53\00:03:48.73 crust. 'Cause dates make it stick in there, 00:03:48.76\00:03:52.72 pretty good. You'll see the end product 00:03:52.75\00:03:56.29 when we actually freeze it, so that'll even make the 00:03:56.32\00:03:59.31 crust a little bit firmer. Okay, and now we want to 00:03:59.34\00:04:05.13 go on and make the filling or the cheese, okay, 00:04:05.16\00:04:08.47 to the cheesecake and I am going to use the 00:04:08.50\00:04:10.90 Vita-Mix here and put all the different 00:04:10.93\00:04:13.61 ingredients in there. Alright. 00:04:13.64\00:04:15.09 And it'll blend it up. You can either use the food 00:04:15.12\00:04:17.27 processor or Vita-Mix either one it does well. 00:04:17.30\00:04:20.59 So, the first is the 3 cups of chopped cashews 00:04:21.85\00:04:26.22 and I did soak these in water for an hour 00:04:26.25\00:04:29.10 they're a little easier to blend if they've been 00:04:29.13\00:04:33.20 soaked, and there is some other good reasons 00:04:33.23\00:04:36.40 to soak your nuts before you doing, 00:04:36.43\00:04:38.31 mix them more digestible, it releases enzyme inhibitors 00:04:38.34\00:04:42.61 and it's just a good habit to get into of soaking 00:04:42.64\00:04:45.93 your nuts before you use it. 00:04:45.96\00:04:47.26 That's one thing I've learned today, 00:04:47.29\00:04:48.26 perhaps others out there are learning too, 00:04:48.27\00:04:49.91 that's okay. And then 3/4 cup of lemon 00:04:49.94\00:04:53.56 juice right here, put that in here, 00:04:53.59\00:04:57.00 and in addition to that we will do the 00:04:57.03\00:05:00.09 3/4 cup of honey, okay, and we do use the raw honey. 00:05:00.12\00:05:04.48 The less cooking involved and the more nutrients 00:05:04.51\00:05:08.28 there is, okay, just little bits of heat to work with, 00:05:08.31\00:05:14.90 but it's worth it. And then also 3/4 cup of coconut oil, 00:05:14.93\00:05:20.55 this actually solidified a little but the champion 00:05:20.58\00:05:24.30 will have no problem blending it up. I need actually, 00:05:24.33\00:05:30.66 this just get a little bit harder than it usually 00:05:32.78\00:05:34.39 does, but I think we will be able to hopefully manage 00:05:34.42\00:05:37.04 that. Yes. In addition to the coconut oil, 00:05:37.07\00:05:42.56 coconut butter we'll put the 1 tsp. 00:05:42.59\00:05:45.01 of vanilla right here, and then the ½ tsp. 00:05:45.04\00:05:50.54 of sea salt right there, and then a ½ cup of water, 00:05:50.57\00:05:55.93 and that believe or not, going to make a cheese 00:05:55.96\00:05:59.45 for the cheesecake. I don't know how many people 00:05:59.48\00:06:02.28 have made anything like this before 00:06:02.31\00:06:04.12 but it's interesting. A different concept. 00:06:04.15\00:06:07.43 Right, let's put the lid on. Its pretty thick. Just doing this vegan 00:07:49.40\00:07:57.25 cooking it's kind of important to invest in a 00:07:57.28\00:07:59.36 good blender. It is I use the blender 00:07:59.39\00:08:02.61 and the food processor quite a bit at home. 00:08:02.64\00:08:06.46 We change hands here, you have to really 00:08:06.49\00:08:12.10 get all the batter from underneath the blade 00:08:12.13\00:08:14.36 in there and this is very rich batter 00:08:14.39\00:08:17.48 so you don't want to waste any if you can 00:08:17.51\00:08:20.09 and this really does satisfy the sweet tooth, 00:08:20.12\00:08:23.69 and it has all good eye appeal too 00:08:23.72\00:08:25.58 and that's all finished. People usually think 00:08:25.61\00:08:30.17 well if I get on a healthy diet I can never have 00:08:30.20\00:08:32.67 cheesecake again, among other things 00:08:32.70\00:08:35.94 and they're so happy we run the lifestyle center 00:08:35.97\00:08:39.30 and when people come and say even 00:08:39.33\00:08:40.65 we can have cheesecake. I said, there are a lot 00:08:40.68\00:08:43.25 of really good tasting recipes that you can 00:08:43.28\00:08:45.67 make on the vegan diet as long as you know 00:08:45.70\00:08:48.42 what's a substitute for what. 00:08:48.45\00:08:50.36 It's so nice to have someone share recipes 00:08:53.96\00:08:55.78 because that is the dilemma you have 00:08:55.81\00:08:57.24 when you're learning to start to cook this way, 00:08:57.27\00:08:58.79 if you only want to change the way you eat, 00:08:58.82\00:09:00.82 but you need recipes and there's no way to start 00:09:00.85\00:09:03.88 and also it's nice to know how to set up your 00:09:03.91\00:09:06.76 cupboards and have wet ingredients on hand. 00:09:06.79\00:09:10.95 True. But there is somewhat of a 00:10:00.52\00:10:05.89 conversion in the taste buds and the thinking 00:10:05.92\00:10:09.23 and everything. So, you can make this salad over 00:10:09.26\00:10:13.22 the top if you want or kind of marbleize it. 00:10:13.25\00:10:16.13 You could also do this pie with blueberries. 00:10:18.71\00:10:20.87 That would be excellent too. 00:10:20.90\00:10:22.86 And I'd never made it with blackberries 00:10:22.89\00:10:24.90 but I certainly don't know why you wouldn't be 00:10:24.93\00:10:27.57 able to just about any berry. 00:10:27.60\00:10:29.38 Yeah, probably strawberries, maybe. 00:10:29.41\00:10:31.19 There you go. Fantastic. That's going to be a recipe your family 00:10:51.12\00:10:55.22 and company will love. It's pretty rich, 00:10:55.25\00:10:57.23 but it's good. So what we are going to make next? 00:10:57.26\00:11:00.84 Well, next we are going to look into the easy mint 00:11:00.87\00:11:04.10 carob pudding pie. Oh! That's sound good. 00:11:04.13\00:11:07.05 And the ingredients are; for the crust: 00:11:07.08\00:11:10.48 1 cup of almonds 1 cup of pecans 00:11:10.51\00:11:14.35 1 cup of walnuts 1 ½ cups of Medjool dates, pitted 00:11:14.38\00:11:20.45 ½ tsp. of sea salt And 1 tsp. of vanilla 00:11:20.48\00:11:25.15 And for the filling we use: 2 ripe avocados 00:11:27.89\00:11:31.35 ½ cup maple syrup 2 tsp. psyllium 00:11:31.38\00:11:35.92 ½ cup carob powder 2-3 drops of mint 00:11:35.95\00:11:40.77 Now, this is interesting Bev we're using avocados 00:11:43.42\00:11:46.81 to make a pie Yes, it's a new thought for 00:11:46.84\00:11:49.22 most people. Yes, I am sure 00:11:49.25\00:11:51.29 it's good though, so what do you do here? 00:11:51.32\00:11:53.23 Well, like other recipes why don't 00:11:53.26\00:11:55.98 we start with a crust first. Okay. 00:11:56.01\00:11:57.71 And this one has three different types of nuts. 00:11:57.74\00:12:00.10 It has a cup of each type of nut. Here is the cup of 00:12:00.13\00:12:03.20 almonds and we are using it in the food processor 00:12:03.23\00:12:06.33 with the F blade that blends things really well, 00:12:06.36\00:12:10.21 and then a cut of pecans top of that and then also a 00:12:10.24\00:12:15.68 cup of walnuts. Actually they want us to blend the 00:12:15.71\00:12:18.50 first few nuts into the flour and then add, 00:12:18.53\00:12:22.22 so let's do that. 00:12:22.25\00:12:23.22 So, you just get real till it's almost a 00:12:23.23\00:12:35.65 flour consistency. Then I will add that cup of 00:12:35.68\00:12:42.95 walnuts, and I am going to add the salt and the 00:12:42.98\00:12:49.54 vanilla as well, it's a sea salt, and then the vanilla. 00:12:49.57\00:12:57.21 Okay, there you go. I am gonna blend that up a 00:12:57.24\00:13:06.03 little bit, and then I will add the dates last. Just zip 00:13:06.06\00:13:09.26 this through the food processor one or two 00:13:09.29\00:13:11.97 times. Now, if we put it in the pie pan just as is, it 00:13:12.00\00:13:20.18 would be too powdery, there's nothing to bind it 00:13:20.21\00:13:22.60 together, so I am using the date paste which is 00:13:22.63\00:13:26.68 pretty soften dates with the pits taken out, and 00:13:26.71\00:13:30.15 then that'll cause all this nuts and other ingredients 00:13:30.18\00:13:33.82 to stick together. So, you actually buy that 00:13:33.85\00:13:35.50 as a paste. And I buy a lot of these 00:13:35.53\00:13:38.49 ingredients from Country Life Natural Foods, and 00:13:38.52\00:13:41.34 they have the date paste, it's very reasonable too. 00:13:41.37\00:13:44.26 I always keep an eye, an eye on 00:13:44.29\00:14:05.32 the batter to make sure all the big pieces are. 00:14:05.35\00:14:09.04 To see the texture. Yes and see the texture 00:14:09.07\00:14:11.27 both, so that's look pretty good. Now this is a small 00:14:11.30\00:14:14.67 pie, it's pretty good. You can eat it just like that, it's 00:14:14.70\00:14:19.16 a small pie pan here but I am going to push this 00:14:19.19\00:14:21.79 down, and it'll be just fine, and I hate to waste 00:14:21.82\00:14:28.94 any of these nuts, you want to eat them down to 00:14:28.97\00:14:30.78 the last. Smells really good too. 00:14:30.81\00:14:33.24 Now some people I know were only supposed to eat 00:14:33.27\00:14:39.31 nuts sparingly because they're a little bit high and 00:14:39.34\00:14:42.24 fat, but we don't actually eat nuts as a snack per say 00:14:42.27\00:14:46.51 because I do use them in cooking a lot, cooking 00:14:46.54\00:14:49.82 and food preparation. So these meals are so 00:14:49.85\00:14:54.10 concentrated with nutrients and fiber that it 00:14:54.13\00:14:57.95 holds you, the meals do 'cause you know this pie 00:14:57.98\00:15:00.77 isn't going to be meal in and of itself, this would 00:15:00.80\00:15:03.94 be a dessert, and we only have a dessert may be 00:15:03.97\00:15:08.08 once a week, and then of course at holidays we like 00:15:08.11\00:15:12.00 to make things special, but because we do use 00:15:12.03\00:15:16.29 nuts and some of our dressings and our cheeses 00:15:16.32\00:15:19.37 that we make. Now this crust that's going to be 00:15:19.40\00:15:24.44 good enough, we don't have to have any other 00:15:24.47\00:15:26.59 nuts for snacks. And we use all kinds of nuts, pine 00:15:26.62\00:15:31.31 nuts, almonds, macadamia nuts, but we 00:15:31.34\00:15:35.00 do use them in a raw form. We don't do the 00:15:35.03\00:15:37.18 roasted and salted ones. Okay, I am trying to 00:15:37.21\00:15:41.76 make a little well in there for the filing, and if you 00:15:41.79\00:15:46.31 had another favorite filling, and here you 00:15:46.34\00:15:49.42 could use that, and that actually will firm up once 00:15:49.45\00:15:53.97 it's in the refrigerator. Okay, yes. Why don't we 00:15:54.00\00:15:57.89 move onto the filling now. 00:15:57.92\00:15:59.23 Okay. And people always ask what 00:15:59.26\00:16:02.43 is your secret ingredient and just to be upfront its 00:16:02.46\00:16:05.55 the avocados. So let's start with the two large 00:16:05.58\00:16:10.67 ripe avocados, and you always they're ripe when 00:16:10.70\00:16:14.74 they give a little. Have you worked with 00:16:14.77\00:16:18.93 avocados very much. Yes quite a bit, I love 00:16:18.96\00:16:21.97 avocados. These are the Hass 00:16:22.00\00:16:24.66 avocados, now there is the Big Florida avocados 00:16:24.69\00:16:28.97 which would be nice for this recipe because it has 00:16:29.00\00:16:31.53 a lot of avocado flesh, but the Haas really have a 00:16:31.56\00:16:36.13 little more taste in my opinion. Open those up. 00:16:36.16\00:16:41.71 I make guacamole a lot, but they are used to 00:16:41.74\00:16:44.55 making a pie filling. Okay. 00:16:44.58\00:16:46.75 So this will be new, new for me to try. 00:16:46.78\00:16:49.12 This is the cream part of the pudding thing, and 00:16:49.15\00:16:53.28 of course avocados don't have a real strong taste, 00:16:53.31\00:16:56.62 so the other ingredients are going to override the 00:16:56.65\00:17:01.13 avocado taste and that's why people don't even 00:17:01.16\00:17:04.01 know it's in there, and it basically gives its texture. 00:17:04.04\00:17:08.22 Nice creamy. And shiny, so let's take 00:17:08.25\00:17:12.13 the pits out of these, those are nice and ripe, and 00:17:12.16\00:17:20.87 that's exactly what you want. Put these in here. 00:17:20.90\00:17:26.04 This is another pie that's fairly rich when you 00:17:26.07\00:17:31.78 served it you just usually people would prefer just 00:17:31.81\00:17:35.72 to have a slice because it's rich but still these are 00:17:35.75\00:17:41.51 good healthy pies, and it's nice to be able to eat a 00:17:41.54\00:17:45.64 dessert and not have a guilty conscious or have 00:17:45.67\00:17:48.73 that anchored feeling after a meal, and you just 00:17:48.76\00:17:53.49 feel very satisfied, and I think that's the way the 00:17:53.52\00:17:56.20 Lord intended, just to be satisfied. So that's the 00:17:56.23\00:18:00.38 avocado and after the avocado we are going to 00:18:00.41\00:18:05.60 put the half cup of maple syrup in here, that will 00:18:05.63\00:18:09.96 give it a lot of shine. If for some reason you're 00:18:09.99\00:18:13.05 diabetic whatever and can't use maple syrup you 00:18:13.08\00:18:16.43 can use some dates. Depends on how sensitive 00:18:16.46\00:18:20.56 the diabetic is, but if you have plenty of fiber often 00:18:20.59\00:18:24.27 they can tolerate it. Really. 00:18:24.30\00:18:25.96 And then in addition to that we will put two 00:18:25.99\00:18:31.19 teaspoons of psyllium right here and that is also 00:18:31.22\00:18:35.02 a thickener, psyllium, and then the one half cup of 00:18:35.05\00:18:39.47 carob powder, this is very healthy ingredient, its 00:18:39.50\00:18:43.10 very high in calcium. Really. 00:18:43.13\00:18:45.67 And people often are looking for some good 00:18:45.70\00:18:49.31 calcium source. So now we'll blend these together 00:18:49.34\00:18:54.57 and I'll add the two or three drops of peppermint 00:18:54.60\00:18:58.29 oil after I get this going. Okay, we'll snap the 00:18:58.32\00:19:05.55 rubber top on, there we go, that's a very 00:19:05.58\00:19:11.05 important step. So we don't need it 00:19:11.08\00:19:13.06 flinging around everywhere, do we. 00:19:13.09\00:19:14.06 Tamper in, and this tamper won't hit the 00:19:14.07\00:19:16.26 blades because of this. 00:19:16.29\00:19:17.72 I think I'll put the peppermint in.
