Yes. Okay, that's awesome, 00:01:26.98\00:01:30.11 how long you had the school. 00:01:30.30\00:01:31.27 I had, well we just graduated our first class. 00:01:31.28\00:01:33.48 So our first six month class graduated at the end of May 00:01:34.31\00:01:38.02 and so we are looking forward to another 00:01:38.78\00:01:40.15 class in August starting. Yes, yes. So they are like 00:01:40.18\00:01:42.95 six months, six months. One five month class, 00:01:42.98\00:01:45.44 and one six month class, and our students are, 00:01:45.47\00:01:49.31 we just take a small group of students, 00:01:49.51\00:01:51.56 and they learn how to do massage, 00:01:51.76\00:01:52.87 they are certified in massage when they are done. 00:01:52.90\00:01:55.28 They work with depression recovery with Dr. Neil Nedley. 00:01:55.91\00:01:59.36 Yes, that's fantastic. Yes, his program is wonderful. 00:01:59.87\00:02:02.14 Absolutely. And they learn how to cook. 00:02:02.17\00:02:03.71 How to cook wonderful vegetarian food 00:02:03.74\00:02:05.92 in our restaurant. Yes, so you use them 00:02:05.95\00:02:08.08 in the restaurant. We, because we are able 00:02:08.11\00:02:10.40 to use them in the restaurant, 00:02:10.43\00:02:11.58 they do not pay tuition for the school. 00:02:11.61\00:02:13.62 They pay a very small amount for room and board, 00:02:14.06\00:02:16.48 and for books, and then the rest of it is on hands, 00:02:16.51\00:02:20.75 hands on excuse me learning experience and we utilize 00:02:20.78\00:02:25.40 them in that way, and it makes cheaper for them 00:02:25.43\00:02:27.68 and it works for us too. Absolutely, 00:02:27.71\00:02:29.77 I like that Mary because that's ministry, 00:02:29.98\00:02:30.95 you could be saying, well I wanna get try that 00:02:30.96\00:02:32.17 one and that's wonderful. You make it very economical 00:02:32.20\00:02:35.15 for them. Exactly. That's nee. Now I wanna 00:02:35.18\00:02:37.36 tell you guys at home too Mary was telling me 00:02:37.39\00:02:39.49 before the program, this is really fantastic, 00:02:39.52\00:02:42.09 I can't believe it, that your vegetarian restaurant 00:02:42.12\00:02:44.86 called Veggies is really good. I wanna go down 00:02:44.89\00:02:48.00 and eat there. That's wonderful because you won back 00:02:48.03\00:02:50.90 in 1998; you won one of the best restaurants 00:02:50.93\00:02:53.52 in the country, in United States right by 00:02:54.77\00:02:56.21 Magellan Press, right. That's exactly right. 00:02:56.24\00:02:58.12 That was our first veggie restaurant, 00:02:58.15\00:02:59.57 which was in Rapid City, South Dakota. Okay. 00:02:59.60\00:03:02.10 And so we utilize a lot of those recipes still obviously. 00:03:02.50\00:03:06.02 That's nee. Yes. I mean this is, 00:03:06.05\00:03:07.08 we are not even talking about vegetarian restaurants. 00:03:07.11\00:03:09.23 We are talking about just any restaurant. 00:03:09.26\00:03:11.47 right exactly. How did they hear about you, 00:03:11.50\00:03:13.40 do you know or You know, I am not exactly sure, 00:03:13.43\00:03:16.02 I know that they went around the country searching 00:03:16.05\00:03:18.08 for restaurants, we had already been voted one 00:03:18.11\00:03:21.03 of the best restaurants in Rapid City, South Dakota, 00:03:21.06\00:03:23.56 and so I think when they came to Rapid City. 00:03:23.59\00:03:26.08 They said we got to check this place out. 00:03:26.11\00:03:27.57 Yes, let's check this place out and they came 00:03:27.60\00:03:28.98 in and ate there. That's fantastic. Yes. 00:03:29.01\00:03:31.99 You know that shows that you can eat tofu, 00:03:32.81\00:03:34.17 you can eat other healthy food that tastes good that 00:03:34.20\00:03:36.65 even regular people, who eat meat and all those other 00:03:37.46\00:03:38.65 kind of stuff they like it. And actually enjoy it. Amen. 00:03:38.68\00:03:41.18 Let's get that. Well, let's get going, 00:03:41.21\00:03:42.91 we are making tofu first. Yes we are. Yes. 00:03:42.94\00:03:45.28 Yes we are, the recipes that we are going to use today 00:03:45.31\00:03:47.03 are going to be foundation with the first recipe that we 00:03:47.06\00:03:50.09 are going to do Jill, and I think that people will really 00:03:50.12\00:03:53.37 like this recipe. Good. So, we are going to start with. 00:03:53.40\00:03:56.14 Let's read our recipe first. Okay. 00:03:56.17\00:03:58.45 For our friends at home. Let's read that recipe 00:03:58.48\00:04:00.10 for the marinated tofu. You wanna read that for us Mary. 00:04:00.13\00:04:02.38 I will, we need 2 pounds of firm tofu, 00:04:02.41\00:04:04.27 a half a cup of tamari or soy sauce. 00:04:05.30\00:04:07.46 Tamari is actually just a high grade soy sauce, 00:04:08.08\00:04:10.66 two tablespoons of olive oil, two tablespoons of water, 00:04:10.69\00:04:13.83 a quarter cup of lemon juice, I prefer fresh squeezed, 00:04:13.86\00:04:17.79 but you can use frozen or bottle if you prefer, 00:04:17.82\00:04:20.21 and a quarter cup of honey. So it all just goes into 00:04:20.93\00:04:24.41 the blender, blends up and gets poured over the tofu. 00:04:24.44\00:04:26.65 That's easy I like that. It's very easy, let's see how 00:04:27.16\00:04:28.59 to make this here. Alright well my favorite 00:04:28.62\00:04:30.56 tofu to use is the organic extra firm tight away tofu 00:04:30.59\00:04:34.43 by White Wave. There are several kinds that are 00:04:34.46\00:04:36.58 packaged this way and any kind of tofu will basically work. 00:04:36.61\00:04:40.18 Okay. But I love this one, it's got a good texture. 00:04:40.21\00:04:42.36 Yeah, that's good. Jill, it's really important 00:04:42.39\00:04:46.04 when people use tofu if they would just real quick smell 00:04:46.07\00:04:49.75 it and make sure it's nice and fresh. 00:04:49.78\00:04:51.26 Make sure it's not kind a rinse or something. 00:04:51.29\00:04:52.97 Yes exactly and I always rinse it. So if you would please 00:04:53.00\00:04:55.88 rinse this off, oh, yeah sure, and while you are doing 00:04:55.91\00:04:57.39 that, I am going to get our pan ready, I'm just going to 00:04:57.42\00:05:00.31 spray a little bit on pan, so that our tofu won't stick. 00:05:00.34\00:05:04.32 Okay. And then what we are going to do for this 00:05:04.35\00:05:07.81 recipe Jill, I am going to cut this tofu into strips 00:05:07.84\00:05:10.92 and so what I like to do is set it up here on the 00:05:10.95\00:05:14.00 cutting board, and I make two cuts. Okay. 00:05:14.03\00:05:17.70 On this side, and then I'll turn it around, 00:05:17.73\00:05:21.10 and just about four or five probably five cuts this way. 00:05:21.13\00:05:24.87 Okay, now tofu doesn't have a whole lot of flavor 00:05:24.90\00:05:28.19 like this, is that right Mary. It has no flavor like this. 00:05:28.22\00:05:30.73 Okay. A tofu is going to taste like how you make it taste. 00:05:32.07\00:05:34.62 Okay. So then what we will do here Jill, 00:05:34.65\00:05:36.80 let's put this in the pan, and we will just kind 00:05:36.83\00:05:38.79 of set them in there. Oh, yeah, very nice. 00:05:38.82\00:05:41.69 And then I think we've just enough room for all of this, 00:05:41.72\00:05:45.30 and we are going to make it taste a little bit beef 00:05:45.97\00:05:49.39 sort of, may be an oriental sort of flavor to it. 00:05:49.42\00:05:53.60 Because it's more oriental. Exactly, exactly. 00:05:53.63\00:05:56.69 Alright well that sounds good, I like oriental stuff. 00:05:56.72\00:05:57.84 Alright, and next we are going to put our marinate 00:05:57.87\00:06:02.28 sauce in the blender. Okay. So we have our tamari 00:06:02.31\00:06:04.79 or soy sauce. You like the tamari over the soy sauce. I 00:06:04.82\00:06:08.69 do like tamari, I think it's a better product. Okay. 00:06:11.69\00:06:12.66 I think it's a better made product. 00:06:12.67\00:06:13.64 We have our water, we have a little bit of olive oil. 00:06:13.65\00:06:18.46 I always like to use olive oil. 00:06:18.49\00:06:20.05 Yes, olive oil is better for you than other type 00:06:20.08\00:06:22.41 of oils. I think so, and do you know if not olive oil, 00:06:22.44\00:06:25.40 grape seed oil is wonderful because it has a very 00:06:25.43\00:06:28.41 high point where you can cook it and it 00:06:28.44\00:06:31.54 won't cause any problems. That's good. 00:06:31.57\00:06:33.77 Right, so we've got all of the ingredients, 00:06:33.80\00:06:35.85 all of the wet ingredients in the blender, 00:06:35.88\00:06:37.33 and we will then blend up our marinated 00:06:38.63\00:06:41.90 and this is very easy. I like that very easy. 00:06:41.93\00:06:44.33 Yes called marinated tofu, but you actually 00:06:44.36\00:06:46.24 don't have to marinate it for very long. 00:06:46.27\00:06:47.80 Okay, so don't have to sit in the fridge for a night or so. 00:06:48.56\00:06:50.14 It doesn't, it can, but not necessary at all. Okay. 00:06:50.17\00:06:53.22 Alright. Get lid on, we don't want everything splashing. 00:06:53.25\00:06:55.68 Yes, that's exactly right. Get the lid on the blender. 00:06:55.71\00:06:59.01 You got it. I got it, and we will blend. That's all. 00:06:59.04\00:07:05.82 That's it. That's it. We are gonna pour this over 00:07:05.85\00:07:08.23 the tofu then. Now I believe that we are only going 00:07:08.26\00:07:13.30 to need about half of this because we went 00:07:13.33\00:07:15.91 to a smaller pan. Okay. And instead of using 00:07:15.94\00:07:18.29 two pounds of tofu, we used one. Okay. 00:07:18.32\00:07:21.19 And yeah we had the liquid ingredient for double recipe. 00:07:21.22\00:07:23.43 Alright. So, we won't use all of this. 00:07:23.46\00:07:24.78 So, you don't want all that. Yes, exactly. 00:07:24.81\00:07:26.28 And then what we would do with this. 00:07:26.31\00:07:27.43 We are now going to take this and put it in the oven 00:07:27.46\00:07:30.15 at 350 degrees. It will bake for approximately 00:07:30.18\00:07:33.24 30 to 40 minutes. I like to bake it until all of liquid 00:07:33.27\00:07:37.59 is absorbed, but not too much after that and then 00:07:37.62\00:07:42.07 we will use it for our recipes. Good. 00:07:42.10\00:07:44.85 It will be absolutely delicious. 00:07:44.88\00:07:46.55 I can't wait to try that. What recipe are we making next? 00:07:47.07\00:07:48.85 I believe our first recipe will be Fajitas, oh! 00:07:49.41\00:07:52.40 I love Fajitas, that sounds good. 00:07:52.43\00:07:54.08 Let's read the recipe there for our Fajitas. 00:07:54.11\00:07:56.24 For them you need two pounds marinated tofu, 00:07:57.58\00:07:59.61 cut into strips that's what we just made, 00:07:59.64\00:08:01.56 one large onion, cut into strips, 00:08:01.59\00:08:04.22 two large green peppers, cut into strips, 00:08:05.01\00:08:07.56 one large red pepper, cut into strips, one large carrot, 00:08:07.59\00:08:12.35 cut into thin strips, one tablespoon chili powder, 00:08:12.38\00:08:16.78 one package whole wheat tortilla shells. 00:08:17.63\00:08:20.39 Well this looks good, here look at all these colors. 00:08:22.40\00:08:23.92 Isn't it beautiful. Yes, I can't wait, 00:08:23.95\00:08:26.08 shall we get started. Absolutely. 00:08:26.89\00:08:27.86 Alright, so what we are going to do, 00:08:27.87\00:08:29.64 we might want to use just a little bit of olive 00:08:29.67\00:08:32.16 oil to do our sautéing not much, 00:08:32.19\00:08:33.93 and what we are going to do because we are just 00:08:35.38\00:08:36.78 going to make a small batch. 00:08:36.81\00:08:37.95 We won't add all of our ingredients. Okay. 00:08:38.50\00:08:40.79 But we will start with our red peppers, 00:08:40.82\00:08:42.41 drop few red peppers in. Oh, it's all sizzling there. 00:08:43.19\00:08:45.73 It's sizzling, we've got some beautiful red onions. 00:08:45.76\00:08:48.74 Okay, it's pretty I like that. I love this is one of my 00:08:48.77\00:08:51.69 favorite parts is zucchini, and a little bit of onion. 00:08:51.72\00:08:55.74 Now, if you grow a garden in the summer you can 00:08:56.15\00:08:57.32 use all these ingredients from your garden. 00:08:57.35\00:08:59.13 That's exactly right. Yeah. Excuse me. 00:08:59.16\00:09:01.50 Okay. I think I just called onions, carrots onion, 00:09:01.53\00:09:04.59 but you know what I mean at home, 00:09:04.62\00:09:06.97 we are going to put in the carrots. 00:09:07.00\00:09:09.16 Now another thing that I don't have in my recipe Jill, 00:09:09.96\00:09:12.56 but that is really nice if you want to add little 00:09:12.59\00:09:15.27 mushroom that's very nice in this as well. 00:09:15.30\00:09:17.63 Oh! Yeah that will be broken. 00:09:17.66\00:09:18.63 Now we just want, I don't like the vegetables 00:09:18.64\00:09:20.61 to be soggy, I don't, you know, I don't like to 00:09:20.64\00:09:22.83 overcook my vegetables, but I do want them 00:09:22.86\00:09:24.58 to be nice and warm. Yes. And then when they get. 00:09:24.61\00:09:27.63 Crisp and tender. Kind of crisp and tender, 00:09:28.50\00:09:29.87 yes exactly. And for me I like a heavier on crisp. 00:09:30.38\00:09:34.05 That might turn to tender. That might turn to tender. 00:09:34.08\00:09:37.12 Okay. I can keep the color in there. 00:09:37.15\00:09:38.78 Right. And then we will add a couple of pieces 00:09:38.81\00:09:41.44 of our tofu that we marinated. 00:09:41.47\00:09:43.21 This is a tofu you have already done it, 00:09:43.24\00:09:45.03 you've marinated it. Yes. 00:09:45.24\00:09:46.21 Cook at 350, oh its pretty. Yes. Yeah, 00:09:46.81\00:09:49.12 and it looks like it will hold the shape really good, 00:09:49.15\00:09:50.90 it wouldn't fall apart. It doesn't fall apart, 00:09:50.93\00:09:52.66 it really actually has a very nice texture. 00:09:52.69\00:09:55.14 Yeah. Stir it, and what we will then do is add 00:09:55.17\00:09:57.53 a little bit of our seasoning. You can use a chili 00:09:57.56\00:09:59.73 powder or a Mexican kind of seasoning, 00:09:59.76\00:10:03.05 we won't add quite as much because 00:10:03.08\00:10:04.82 we don't have as a bigger for recipe. 00:10:04.85\00:10:06.22 We aren't doing all those vegetables, right. 00:10:06.25\00:10:07.36 Yes exactly. And for those who like it, 00:10:07.39\00:10:09.93 they could add little salt if they want to, 00:10:09.96\00:10:12.09 the tofu is going to have a little bit of savory 00:10:12.12\00:10:16.00 flavor already, absolutely that's right, 00:10:16.03\00:10:17.00 because we marinated it. Oh! That looks good. 00:10:17.01\00:10:19.05 I wish you guys can smell this, 00:10:19.08\00:10:20.55 it smells really good too. 00:10:20.58\00:10:21.91 Yes, right. So let's mix up our seasoning in there. 00:10:21.94\00:10:25.09 Now, I also brought with me a little bit of a vegan cheese. 00:10:25.88\00:10:29.84 Oh good. That will add to this, 00:10:29.87\00:10:32.29 and that makes a kind of nice. 00:10:32.32\00:10:33.95 Now where you can get this vegan cheese, 00:10:33.98\00:10:35.48 in the grocery store. Health food store typically. 00:10:35.51\00:10:37.67 This particular one is completely vegan, 00:10:37.70\00:10:40.88 it doesn't have the casing in it. Yes. 00:10:40.91\00:10:42.86 However, I will also recommend that if they like, 00:10:42.89\00:10:46.49 they can make a cheesy sauce, you know we've got a good 00:10:46.52\00:10:49.31 recipe for cheesy sauce in our cook book, 00:10:49.34\00:10:51.25 and so that works really well. 00:10:51.28\00:10:52.85 Okay, so you have a cook book out too. Yes. 00:10:52.88\00:10:54.53 Our friends could contact you and get the cook book. 00:10:54.56\00:10:55.98 Yes, all of the recipes that we are using today 00:10:56.01\00:10:57.82 are from my cook book. Good, what about the recipes 00:10:57.85\00:11:00.28 that you cook there at Veggies, 00:11:00.31\00:11:01.28 they are from your cooking book too. 00:11:01.31\00:11:02.70 Well either from my cook book, 00:11:02.73\00:11:03.70 and we are always developing new recipes. Yes. 00:11:03.71\00:11:05.50 That's kind of what we are all about. 00:11:07.30\00:11:08.68 You know you can't serve the same things over 00:11:08.71\00:11:10.39 and over again in the restaurant. Absolutely 00:11:10.42\00:11:11.39 you get kind of. Because people get bored of it, 00:11:11.40\00:11:12.95 yes. Alright, so we are going to then just take this mix. 00:11:12.98\00:11:15.97 I have a whole grain tortilla here that we are going 00:11:16.00\00:11:20.17 to use. Good. And we are going to make sure 00:11:20.20\00:11:21.95 we got a piece of tofu, and we get some of those nice. 00:11:21.98\00:11:24.75 Oh its smells good. Carrots and you know Fajita. 00:11:24.78\00:11:29.14 Very nice. And then I am going to sprinkle 00:11:29.81\00:11:31.27 a little bit of our vegan cheese on there, 00:11:31.30\00:11:33.50 and now at this point we have options. Yes. 00:11:34.61\00:11:38.05 One of our options is just to roll it up and eat 00:11:38.81\00:11:41.02 it like this, and you would roll it like a tortilla, 00:11:41.05\00:11:45.60 but another really fun option is to take it and heat it 00:11:46.29\00:11:52.91 on a grill, I think we have a grill right there. Here 00:11:53.56\00:11:55.61 we go. Right, unfortunately I did turn that off. 00:11:56.06\00:12:00.87 You got the lighter. I've got the lighter. 00:12:00.90\00:12:02.48 We will relight, I did that there we go, very good. So 00:12:02.90\00:12:07.16 I do like it this way because it's kind of make it nice 00:12:08.46\00:12:11.73 and hot on the outside and see you can just stick it 00:12:11.76\00:12:15.25 right on your grill, you don't need to add anything you just. 00:12:15.28\00:12:17.86 So you don't need oil or anything to fry it. 00:12:18.28\00:12:19.55 No oil, we are not frying it, we just going to let it sort 00:12:19.58\00:12:22.29 of heat up a little bit and we will just we'll let that 00:12:22.32\00:12:26.49 cheese melt a little bit. Yes. And then it will be nice 00:12:26.52\00:12:29.19 and warm and little bit on the crisp side. 00:12:29.22\00:12:32.60 These are wonderful served with a little guacamole, 00:12:33.30\00:12:36.40 if you like guacamole always recommend a little sauce 00:12:36.43\00:12:40.04 whatever the favored sauce would be, and so. 00:12:40.51\00:12:44.47 Looks very good. Oh! I think it's gonna 00:12:44.50\00:12:46.42 be delicious. I can't wait to try, really it's really good. 00:12:46.45\00:12:48.86 I am hungry already myself. That's right. 00:12:48.89\00:12:50.54 Yeah, so this is nice, so this will be then once it's kind 00:12:51.05\00:12:54.27 of nice and warm on one side, we will flip it over 00:12:54.30\00:12:56.30 to the other side. Okay, good. And well we will have. 00:12:56.33\00:13:00.31 So your Fajita, your students who come to the Shine 00:13:01.25\00:13:03.30 program, they cook with you in the restaurant, 00:13:03.33\00:13:04.80 they make this and all that. Oh yes absolutely, 00:13:04.83\00:13:07.31 absolutely. That's nee. At our restaurant, 00:13:07.34\00:13:09.73 we actually make homemade crepes that we make Fajitas 00:13:09.76\00:13:13.46 and that's really nice as well. 00:13:13.49\00:13:15.02 I need to come and eat at your restaurant. 00:13:15.05\00:13:16.47 You got to check it out. I think I really got to go 00:13:16.50\00:13:18.09 there, yes. I guarantee you will like it. 00:13:18.12\00:13:19.64 If you don't, if you don't it's on us. 00:13:19.67\00:13:21.98 I am sure I'll like it. Oh yeah I can see the cheese 00:13:23.82\00:13:25.73 is melting. The cheese is melting, yes, 00:13:25.76\00:13:27.51 and so we will take it. We might want to flip it 00:13:27.54\00:13:30.87 one more time, our pan wasn't hot as it would be. 00:13:30.90\00:13:34.89 Right because we hadn't turned it on. 00:13:34.92\00:13:36.43 Exactly, we actually have people come to our restaurant 00:13:36.46\00:13:40.41 who have eaten and I won't name the name of the 00:13:41.03\00:13:42.67 other restaurant, but it's a very famous restaurant. 00:13:42.70\00:13:45.27 And Fajitas is something that they are well known for, 00:13:45.89\00:13:48.37 and when they tried our Fajitas despite the fact 00:13:49.25\00:13:50.85 that these people were not vegetarian, 00:13:50.88\00:13:52.43 when they tried our Fajitas, they said wow wait a minute, 00:13:52.46\00:13:55.36 this is so much better then we get across the street, 00:13:55.39\00:13:59.55 that you know we are coming here from now on. 00:13:59.58\00:14:02.27 You know, it's amazing because this has tofu in it 00:14:02.30\00:14:04.28 and this has soy bean, so you think but they 00:14:04.31\00:14:06.40 like it better. They liked it better. 00:14:06.43\00:14:07.99 They said it had much more flavor. Yeah. 00:14:08.02\00:14:10.19 And so I was really happy to hear that. 00:14:10.22\00:14:13.25 Good, and I have to say that I agreed with them 00:14:13.28\00:14:16.04 one hundred percent. Alright, so we are just going 00:14:16.07\00:14:19.88 to take this off of here and put it on our plate. 00:14:19.91\00:14:23.98 Oh yeah that looks good. Very nice. 00:14:24.01\00:14:27.33 We're done with our Fajitas. 00:14:27.36\00:14:29.76 Let's go to our, are we making egg rolls. 00:14:29.79\00:14:31.25 We are going to next mix Spring Rolls. 00:14:31.80\00:14:33.76 Spring rolls. Actually, this is really 00:14:33.79\00:14:35.84 a favorite recipe of mine. Good you wanna read that 00:14:35.87\00:14:37.74 recipe first for the Spring Rolls. 00:14:37.77\00:14:39.36 I'd be very happy too. Okay for the Spring Rolls 00:14:39.39\00:14:41.70 we need one package of spring roll wrappers, 00:14:41.73\00:14:44.31 now those are going to be a rice wrapper, 00:14:45.04\00:14:46.85 we are going to use the marinated tofu, carrots, 00:14:47.52\00:14:50.68 which will be grated, lettuce, which you could either 00:14:51.16\00:14:53.85 chopped your lettuce, I actually use some of the 00:14:53.88\00:14:56.08 prewash lettuce, fresh basil, that's very important 00:14:56.11\00:14:59.42 or fresh mint and fresh cilantro, and half pound 00:15:00.74\00:15:04.28 of rice noodles which would be cooked according 00:15:04.87\00:15:08.27 to the package instructions. 00:15:08.30\00:15:09.48 Look at this, I love oriental foods. 00:15:13.25\00:15:15.29 Spring Rolls is one of my favorite. 00:15:15.79\00:15:16.76 Yes mine too especially like this kind over 00:15:16.77\00:15:23.42 Alright, well I have used the Spring Roll wrappers, 00:15:23.45\00:15:26.20 and as I said there made with rice flour. 00:15:26.23\00:15:28.93 So, this is a wonderful recipe for your gluten 00:15:28.96\00:15:31.23 free friends. Oh true. 00:15:31.26\00:15:33.09 Because this is going to be gluten free, 00:15:33.12\00:15:34.28 and these can be readily purchased 00:15:35.09\00:15:37.61 at any Asian market, and I've even actually 00:15:37.64\00:15:40.01 seen them in Wal-Mart or in regular grocery 00:15:40.04\00:15:42.48 stores as well, and they are very inexpensive. 00:15:42.51\00:15:44.66 And what we do Jill is we take these and 00:15:45.18\00:15:47.10 we've already soaking ours, we've got them 00:15:47.13\00:15:48.90 in some water, it just takes a matter of maybe 00:15:48.93\00:15:50.81 a minute or two. Okay. Before they are done, 00:15:50.84\00:15:53.08 and I do like to use two of them because 00:15:53.11\00:15:55.96 they rip rather easily. Yes. 00:15:55.99\00:15:57.92 And what I am doing, what I have here 00:15:58.43\00:16:00.46 is a clean bath towel. Okay, because I wonder 00:16:00.49\00:16:03.02 what this purple towel doing here 00:16:03.05\00:16:04.46 on the sets. Yes, I promised you, 00:16:04.49\00:16:05.80 I wasn't when I use this morning to dry off, 00:16:05.83\00:16:08.16 and actually at our house we have a bath 00:16:09.22\00:16:11.28 towel that we will use for this or they 00:16:11.31\00:16:15.20 can do at home. I recommend that when you 00:16:15.23\00:16:17.47 use a bath towel like we are doing that you wash it 00:16:18.46\00:16:21.45 in your washing machine and then rather than 00:16:21.48\00:16:23.94 taking it directly out of the washing machine run it 00:16:23.97\00:16:27.17 through the recycle again, so that you get 00:16:27.20\00:16:29.49 all the surf out. Right. Yes, exactly. 00:16:29.71\00:16:30.98 That won't be too good. Right you don't want 00:16:31.01\00:16:32.83 the surf, but this is very critical, 00:16:32.86\00:16:34.83 this is why most people don't make these at home because 00:16:34.86\00:16:37.26 they don't know how. This is a critical step, 00:16:37.29\00:16:39.53 so we've taken. Why do you put it here versus 00:16:40.41\00:16:42.27 on the countertop? Well because when we 00:16:42.30\00:16:44.52 wanna use, we wanna get all that water out, but 00:16:44.55\00:16:46.60 it will be still be slightly damp and that way it 00:16:46.63\00:16:49.53 will stick together, okay. That's really smart. 00:16:49.56\00:16:52.81 This is quite a little secret, this is a million dollar 00:16:52.84\00:16:55.43 secret here too. How did you think of this 00:16:55.46\00:16:56.72 million dollar secret? Well, actually I had 00:16:56.75\00:16:58.90 somebody teach it to me. Really. 00:16:58.93\00:17:00.47 So there you go. Now you are teaching to us. 00:17:00.50\00:17:03.00 So, now I am teaching you, so we take it, 00:17:03.03\00:17:04.00 we got two of the wrappers on the towel, 00:17:04.01\00:17:05.83 and we are going to take the towel, 00:17:05.86\00:17:07.01 and we are gonna push down on it. 00:17:07.04\00:17:08.61 Get rid of the water. And get rid of the water. 00:17:09.27\00:17:10.44 This is pretty fancy, I like this, I've never 00:17:11.21\00:17:12.69 heard doing that. Is that well, this, this works. 00:17:12.72\00:17:15.16 That's awesome. You will be making Spring Rolls. 00:17:16.02\00:17:18.83 Yes. Now that you know how to do this, 00:17:19.03\00:17:20.05 okay. So we are gonna take a little bit 00:17:20.65\00:17:21.72 of our rice noodles, and. So this is gluten free too. 00:17:21.75\00:17:24.92 This is gluten free too, these are also rice. 00:17:25.45\00:17:27.24 Now the more that you put in the Spring Roll 00:17:27.89\00:17:30.22 the harder it is to roll up. So you know when 00:17:30.25\00:17:33.60 you are first starting out, they are kind of nice 00:17:33.63\00:17:35.23 if you doing small. We will put in a couple pieces 00:17:35.26\00:17:38.67 of tofu, this is our marinated tofu again. 00:17:38.70\00:17:41.30 You can use it in all these different recipes, 00:17:41.81\00:17:42.94 I like that. Yes isn't that fun. Very good. 00:17:43.66\00:17:45.34 Alright, we are going to add, I didn't have fresh basil, 00:17:45.86\00:17:49.08 so I grabbed some mint. Yes. 00:17:49.44\00:17:51.20 And when we are using mint, like my mint to be nice 00:17:51.88\00:17:54.50 and green. We don't want to overdo the mint 00:17:54.53\00:17:56.95 and this is very large mint. So, I am gonna cut 00:17:56.98\00:17:59.79 that into half, so just a couple of pieces of mint 00:17:59.82\00:18:01.73 and then cilantro. I love cilantro. 00:18:01.76\00:18:04.32 Got to have the cilantro, can you smell that mint. 00:18:04.35\00:18:07.09 Oh yeah, it smells good when you broke 00:18:07.52\00:18:09.14 it you can really smell it. It really, it's so good. 00:18:09.17\00:18:11.07 Now our carrots are going to go in there and because 00:18:11.72\00:18:14.33 my carrots shreds are kind of poky, I am going to put them 00:18:14.36\00:18:19.04 in middle. So, that they don't poke through the wrapper 00:18:19.82\00:18:21.68 Absolutely. Something else really. And you get a hole 00:18:21.71\00:18:23.57 in it or something. Yeah you get a hole, 00:18:23.60\00:18:25.16 and once you have a hole, it continues to rip through. 00:18:25.19\00:18:27.99 I have done that, yes. Alright, now we are going to 00:18:28.02\00:18:31.69 add a little bit of lettuce. Now, I also want to let 00:18:31.72\00:18:33.96 our viewers know that if they would like what we frequently 00:18:33.99\00:18:37.99 do is use beets. Beets are really nice instead of carrots 00:18:38.02\00:18:41.30 Okay. You could put anything, any kind of vegetable, 00:18:42.23\00:18:46.92 really raw vegetable that you want it, you might find them 00:18:47.37\00:18:49.44 sometimes with cucumbers, yes, with some kind of sprout, 00:18:49.47\00:18:53.49 the bean sprouts are really nice in them. 00:18:53.52\00:18:55.39 So we can't go wrong with it. 00:18:55.42\00:18:56.71 You can't really go wrong. We just have to do it. 00:18:56.74\00:18:57.71 Exactly, exactly. That's my kind of recipe. 00:18:57.72\00:18:59.75 So, notice that I put everything sort of towards 00:19:00.31\00:19:02.41 the end, but in the middle. Yeah. 00:19:02.44\00:19:04.07 And we are going to take this and you will see right 00:19:04.10\00:19:05.99 away how that is really sticking. Oh yeah. 00:19:06.02\00:19:07.98 And we are gonna roll that up like that. 00:19:08.01\00:19:10.91 Oh yeah it is sticking. It's very sticky, and then 00:19:10.94\00:19:13.50 we are just going to take it, we are going to roll a 00:19:13.53\00:19:14.78 nice and tight, and as we roll it we will be real careful, 00:19:14.81\00:19:20.10 so that it doesn't sprinkle. Oh, that one is good. 00:19:20.13\00:19:22.81 There you go, and you see how nicely that stay together. 00:19:23.27\00:19:25.34 Yes, very nice. Isn't that beautiful. 00:19:25.37\00:19:27.14 I like that you see. Plate is ready for it. 00:19:27.17\00:19:28.81 Yes stays together to the edge too. 00:19:28.84\00:19:30.10 Yes exactly, isn't that wonderful. Now we serve this 00:19:30.78\00:19:33.66 with a peanut sauce. However in typical restaurants 00:19:34.28\00:19:38.31 this is really kind of a Thai food. In a Thai restaurant 00:19:38.59\00:19:41.87 you either get with a peanut sauce or a sweet and sour 00:19:41.90\00:19:44.95 sauce. So our viewers at home can do either sauce that they 00:19:44.98\00:19:49.98 like. Those sauces are also readily available in health 00:19:50.01\00:19:53.36 food stores, at Wal-Mart. Right. 00:19:53.65\00:19:55.50 Or in Asian markets. You can buy it pretty easily. 00:19:55.90\00:19:57.94 Exactly or you can get on the web and do little Google 00:19:57.97\00:20:01.68 with peanut sauce and you can find some wonderful 00:20:01.71\00:20:04.27 peanut sauces on the web as well. Yes. 00:20:04.30\00:20:06.37 That you might make homemade. 00:20:06.40\00:20:07.37 That's good, yeah. Do you have homemade peanut 00:20:07.65\00:20:09.72 sauces recipe to make. I do have one, 00:20:09.75\00:20:11.76 and I am happy to let our viewers have it if they like 00:20:11.79\00:20:14.23 to e-mail me. Okay, what's your e-mail address. 00:20:14.26\00:20:16.47 My e-mail address, that is so easy to remember, 00:20:16.50\00:20:18.93 you can't go wrong, its iloveveggies2@hotmail.com. 00:20:18.96\00:20:32.21 Oh nice. Yeah exactly, so if they like to e-mail me 00:20:32.62\00:20:34.46 I will be happy to share my peanut sauce recipe as well. 00:20:34.49\00:20:36.76 Very nice. It's in your cook book as well. 00:20:37.15\00:20:38.66 This, I have several different sauces in my cook book, but 00:20:39.06\00:20:41.99 the peanut sauce is a newer one that I just developed. 00:20:42.02\00:20:44.86 To make another cook book. I am in the process 00:20:45.33\00:20:47.29 of doing that. It's definitely a process. 00:20:47.32\00:20:49.79 Let's go to our last recipe, what's our last recipe. 00:20:49.82\00:20:51.80 Our last recipe is Eggless Egg Rolls. 00:20:51.83\00:20:53.90 Good, you want to read that first. 00:20:54.29\00:20:55.34 Absolutely, alright we are going to use whole wheat 00:20:55.37\00:20:58.85 chapatis, or we can also use the whole wheat tortilla 00:20:58.88\00:21:02.89 wraps that we used earlier, one large green cabbage, 00:21:02.92\00:21:06.06 cut into strips, one large onion, cut into strips, 00:21:06.09\00:21:09.65 two large carrots, shredded, two large green peppers, 00:21:10.10\00:21:13.78 cut into thin strips, one small head broccoli, 00:21:13.81\00:21:17.85 one cup of tamari which is the soy sauce, two teaspoons 00:21:18.41\00:21:22.92 of garlic powder, two teaspoons of onion powder 00:21:22.95\00:21:25.41 and one tablespoon of sweetener. 00:21:25.44\00:21:27.49 Now what's the difference between an Egg Roll 00:21:29.67\00:21:31.02 and a Spring Roll. Well typically when you go to a 00:21:31.05\00:21:34.11 restaurant, an Egg Roll is going to be deep fried. 00:21:34.14\00:21:37.04 Yes. And a Spring Roll isn't always the kind 00:21:37.77\00:21:41.11 of wrapper that we use, sometimes they are deep 00:21:41.14\00:21:43.03 fried too. So you just have to kind of check it out. 00:21:43.47\00:21:45.49 Right. But when we do Egg Rolls, 00:21:45.91\00:21:47.11 we bake them. Okay. Yes. 00:21:47.14\00:21:49.36 Let's see how to make these Egg Rolls. 00:21:49.39\00:21:50.97 Alright, we have heated our oil. 00:21:51.00\00:21:53.00 I can see it's steam, so it's hot. 00:21:53.22\00:21:54.65 Yes, so we are going to take our cabbage, 00:21:54.68\00:21:56.51 and we are going to put a little bit of cabbage in. 00:21:56.54\00:21:59.26 Good. We are going to add our broccoli, 00:21:59.84\00:22:02.86 once again we have all those beautiful colors. 00:22:03.92\00:22:05.24 Absolutely. You know, I'm just sure God did that, 00:22:05.78\00:22:08.38 so that we would eat it. Right. 00:22:08.41\00:22:10.19 It just look so edible doesn't it? 00:22:10.22\00:22:12.24 That's right, and it means all that nutrition, 00:22:12.27\00:22:14.11 I think it is because of nutrition too. 00:22:14.14\00:22:15.95 Absolutely, and so we are just going to, 00:22:16.71\00:22:18.78 once again we are not wanting to kill this beautiful, 00:22:18.81\00:22:23.46 the beautiful cabbage, and red pepper, and broccoli, 00:22:23.49\00:22:27.11 we just wanna kind of get it nice and warm because 00:22:27.31\00:22:30.36 we are also going to bake these, 00:22:30.39\00:22:31.84 so in our vegetables grill. Yeah. 00:22:31.87\00:22:33.59 We will bake a little bit, and then we will add our sauce, 00:22:34.04\00:22:36.54 now I am not going to add all of this again, 00:22:36.57\00:22:38.81 because we are not using that in the recipe. 00:22:39.02\00:22:41.04 Yes. There is something about the combination of maple 00:22:41.07\00:22:45.22 syrup and tamari, that is just absolutely incredible. 00:22:45.25\00:22:49.90 I've never tried that, usually I try sugar or something 00:22:50.32\00:22:51.91 if you put in this, but use a Maple syrup. Yes. 00:22:51.94\00:22:54.01 I like that. It is incredibly good, I really like it. 00:22:54.50\00:22:57.51 And then it's our onion and garlic. 00:22:58.78\00:22:59.75 That's my onion and garlic. Good. 00:22:59.78\00:23:01.13 And so we will just stir this up a little bit, 00:23:01.16\00:23:03.64 so that we can have a nice tender not too tender. That's 00:23:04.80\00:23:13.36 right, we want the crisp side with the last recipe, 00:23:13.85\00:23:16.35 right. And then we will put a little bit of our tofu in. 00:23:16.38\00:23:18.71 We are using our tofu again. 00:23:18.74\00:23:19.97 Once again we can use our tofu in the recipe. 00:23:20.00\00:23:21.84 I like that. Yes, I just love it. 00:23:21.87\00:23:25.22 You use it, you've just make it, and then you can store 00:23:25.25\00:23:26.51 it in the fridge type of thing and then pour it up 00:23:26.54\00:23:28.00 all these different recipe. Exactly. I like that. 00:23:28.03\00:23:30.12 Warning, if you have small children tofu won't stand 00:23:30.15\00:23:33.39 in the refrigerator for very long because they tend to 00:23:33.42\00:23:36.74 really like it. It's so good, I used to always just kind 00:23:36.77\00:23:40.10 of hide mine from my children. That's right. 00:23:40.13\00:23:42.49 Alright this is nicely sauté, so let me show you how 00:23:43.26\00:23:46.61 to roll this. Now again because our wrappers 00:23:47.19\00:23:51.49 are kind of small, you can get a larger wrapper, 00:23:52.00\00:23:53.80 and those are little easier to work with, 00:23:54.36\00:23:55.54 but I like these wrappers because they are low carb, 00:23:55.99\00:23:58.98 and what that means when something is low carb, 00:24:00.52\00:24:03.11 I discovered at least when its low carb, 00:24:03.56\00:24:05.16 and it's a bread product, that means it will be very 00:24:05.89\00:24:07.96 high fiber. Yes. So put a little bit of vegetables 00:24:07.99\00:24:11.92 in here. And this is your, this is a different wrapper 00:24:12.65\00:24:15.22 than we used for the last one, 00:24:15.25\00:24:16.29 last one was a rice wrapper. 00:24:16.32\00:24:17.38 A rice wrapper, but we did, this is our wheat wrapper, 00:24:17.69\00:24:19.97 however, we did use this wrapper for our first 00:24:20.00\00:24:24.89 stuff Fajita. Fajita that's right good. 00:24:24.92\00:24:26.81 Exactly. Alright so for the Eggless Egg Rolls 00:24:26.84\00:24:30.09 what we are going to do, I tend to just wanna wrap these 00:24:30.12\00:24:32.86 like this to start because we are going to bake them, 00:24:32.89\00:24:36.77 and so then what I will do is I'll then take the end. 00:24:37.92\00:24:41.67 Good. Kind of tuck it in a little bit. 00:24:41.89\00:24:44.65 Oh nice, that's pretty fancy, I like that. Yeah. 00:24:44.85\00:24:47.27 We are learning tricks from the professional here. 00:24:47.30\00:24:49.21 We know the tricks of the trade. That's right. 00:24:50.69\00:24:52.54 Alright. Looks nice. Now what would you put 00:24:53.22\00:24:55.09 it in the oven. I would put it in the oven at 350 00:24:55.12\00:24:57.97 and if you have a little bit of pam, you can spray the 00:24:58.00\00:25:01.55 outside of it, and then you bake it in the oven for oh, 00:25:01.58\00:25:05.24 I say about 15 minutes or so, 15 to 20 minutes until its 00:25:05.27\00:25:09.73 nice and crisp on the outside, and again this is going 00:25:09.76\00:25:13.26 to be delicious with the sweet and sour sauce. 00:25:13.29\00:25:15.30 Oh yeah, we are going to try that. 00:25:15.78\00:25:17.06 I think you like it. Good, good. Well, 00:25:18.28\00:25:19.48 in just a moment friends, we will be back to show 00:25:19.51\00:25:21.89 you all the final products. 00:25:21.92\00:25:23.77 We hope you've enjoyed today's program 00:25:26.57\00:25:28.07 with Mary Bernt. Yes. Right. 00:27:18.71\00:27:22.13 And then what was next here. 00:27:22.16\00:27:23.32 Next, we had the Fajitas, now Fajitas are, 00:27:23.35\00:27:27.67 like I said this is a wonderful Fajita recipe, 00:27:27.70\00:27:30.66 and we might add a little guacamole and definitely 00:27:30.69\00:27:34.38 wants some sauce with that when we eat that. 00:27:34.41\00:27:36.10 Oh, That looks good. Absolutely, 00:27:36.13\00:27:37.15 and then we have our Spring Rolls. 00:27:37.18\00:27:38.57 Our Spring Rolls, this is my favorite, 00:27:38.60\00:27:40.88 if there is nothing else left to eat, 00:27:40.91\00:27:42.62 but Sprig Rolls I will be alright. 00:27:43.06\00:27:44.21 I'll eat Spring Rolls too. 00:27:44.69\00:27:45.66 Yes, and we put a peanut sauce with the Spring Rolls. 00:27:45.67\00:27:48.58 Good and our last one here. 00:27:48.79\00:27:49.76 Our last one is our Eggless Egg Roll and that also would 00:27:49.77\00:27:53.59 probably want a sweet and sour sauce, 00:27:53.79\00:27:55.07 or some kind of peanut sauce to finish off. 00:27:55.10\00:27:57.10 Good, well thank you so much for coming Mary. 00:27:57.13\00:27:59.77 We had a good time today. 00:28:00.00\00:28:00.97 It's nice to be here, I really appreciate it. 00:28:00.98\00:28:02.14 Absolutely, well friends our time is all gone until 00:28:02.62\00:28:04.97 we see you next time may God bless you and keep you. 00:28:05.00\00:28:07.83
