For the Great! 00:03:26.86\00:03:29.87 Great Northerns you need 00:03:29.90\00:03:31.03 5-5½ cups water 1 pound dried great northern beans 00:03:31.06\00:03:36.95 1 cup onion, chopped 00:03:37.66\00:03:39.79 1 tablespoon extra virgin olive oil, which is optional 00:03:39.82\00:03:43.94 3/4 teaspoon salt 2 tablespoons onion powder 00:03:43.97\00:03:48.77 1½ tablespoon McKay's Chicken Seasoning 00:03:49.58\00:03:52.88 1 teaspoon garlic powder 00:03:52.91\00:03:55.32 1 cup fresh spinach that's finely chopped, 00:03:55.35\00:03:58.62 and that's optional Okay show us how to make this. 00:03:58.65\00:04:01.76 This is good because it's a bean recipe. 00:04:01.79\00:04:03.12 That's right and beans really are base. 00:04:03.15\00:04:05.04 This is a basic recipe and beans are such an important 00:04:05.07\00:04:08.81 part to add to our diet. You know they help to, 00:04:08.84\00:04:11.07 I mean let's start here by putting the water in, 00:04:11.10\00:04:13.90 but beans help to reduce our risk of heart disease. 00:04:13.93\00:04:16.93 Oh, I didn't know that. They are high in protein, 00:04:16.96\00:04:19.46 you know, they are good source of B vitamins 00:04:19.49\00:04:21.04 and lots of fiber. Yes. 00:04:21.07\00:04:23.02 They help to reduce our risk of cancer, 00:04:23.05\00:04:26.32 so they are really, they just don't get enough 00:04:26.35\00:04:28.92 attention. They are really good for you. 00:04:28.95\00:04:30.61 Yes and they taste good. Yeah, yeah that's good. 00:04:30.64\00:04:33.95 So, we just put our water in the pot and then 00:04:33.98\00:04:36.24 we have I am just doing half a recipe here, 00:04:36.27\00:04:38.32 okay, and so that was two and 3/4 cups of water instead 00:04:38.35\00:04:42.21 of the regular amount, but you can do a 00:04:42.24\00:04:44.24 full pound or a half a pound. Okay. 00:04:44.27\00:04:47.10 And then there is a half pound of the Navy beans, 00:04:47.13\00:04:50.45 you can use any kind of white bean in this recipe, 00:04:50.48\00:04:52.74 Navy beans, great northern beans. 00:04:52.77\00:04:54.51 Okay. Chick peas are delicious. 00:04:54.54\00:04:56.64 Really, I've never done chick peas. Yeah oh. 00:04:56.67\00:04:58.66 But I have never cooked them myself. 00:04:58.69\00:05:00.41 Oh yeah they are very easy to cook 00:05:00.44\00:05:02.34 in the crock, well all beans. Yeah, okay. 00:05:02.37\00:05:05.39 I just put the salt in and then this is extra virgin 00:05:05.42\00:05:07.96 olive oil, which gives a really nice flavor 00:05:07.99\00:05:10.47 it's optional, but I like to put it in 00:05:10.50\00:05:12.94 because it tastes good. Yes, now can I ask you 00:05:12.97\00:05:16.05 we are putting the salt in right away 00:05:16.08\00:05:17.82 and some people say you shouldn't put the salt in; 00:05:17.85\00:05:19.55 do you have what do you think about that. 00:05:19.58\00:05:20.93 Well, I mean I always heard that too, 00:05:21.53\00:05:24.01 but I have cooked honestly I have cooked hundreds of 00:05:24.04\00:05:26.58 pounds of beans working on these recipes 00:05:26.61\00:05:28.97 because of I wanted to get all right. Yes. 00:05:29.00\00:05:32.33 And I really haven't found a difference. Oh okay. 00:05:32.36\00:05:34.48 Either with the salt or without the salt. 00:05:34.51\00:05:35.87 Oh okay yeah. So this is. 00:05:35.90\00:05:37.84 So it won't make them tougher 00:05:37.87\00:05:38.85 anything like that. No, no and they steam to cook 00:05:38.88\00:05:41.46 about the same length of time either way 00:05:41.49\00:05:43.63 and so you just, then I was ready to go and you can 00:05:44.03\00:05:46.69 either cook it on lower, you can cook it on high. 00:05:46.72\00:05:48.89 Fact in my, in my recipes, I have way you can cook 00:05:49.36\00:05:51.89 at high or low soaked or not soaked 00:05:51.92\00:05:54.15 because people have preferences. 00:05:54.18\00:05:55.78 Absolutely, well that's nice. And what I do here 00:05:55.81\00:05:59.32 is just cook them till they are soft and that is 00:05:59.35\00:06:04.15 where is my border it's my principle. My 00:06:04.18\00:06:07.50 beginning principle was using slow cookers 00:06:07.53\00:06:09.39 is because what you wanna do is find out 00:06:09.42\00:06:13.10 with your cooker how long it takes to 00:06:13.13\00:06:15.33 cook your beans soft. 00:06:15.36\00:06:16.99 Oh okay. And you know Jill 00:06:17.02\00:06:18.84 all slow cookers are not created equally. 00:06:18.87\00:06:21.40 They really aren't and it took me a while 00:06:21.43\00:06:24.06 to figure this out. Right. 00:06:24.09\00:06:26.10 But I've divided it up into average cookers, 00:06:26.13\00:06:29.40 fast cookers and extra fast cookers. And an 00:06:29.43\00:06:31.34 average cooker will cook a pound of beans 00:06:31.37\00:06:33.37 in about 9 to 9 ½ hours, but some cookers go 00:06:33.40\00:06:37.48 faster and they are gonna take about 8 to 8 ½ 00:06:37.51\00:06:40.59 hours to cook that pound of beans. 00:06:40.62\00:06:42.09 Okay, is that on high or on low? 00:06:42.12\00:06:43.64 On low. On low, so average is 9 to 9 ½ you said. 00:06:43.67\00:06:47.40 For an average cooker. Average or if it cooks a 00:06:47.43\00:06:49.75 little faster it's gonna be what I call 00:06:49.78\00:06:51.56 fast cooker that's gonna take 8-8½ hours. 00:06:51.59\00:06:53.83 One hour less then. 00:06:53.86\00:06:55.40 And if it's an extra fast cooker 00:06:55.43\00:06:56.73 it's usually about 6 ½ to 7 hours. 00:06:56.76\00:06:58.83 Wow, that's pretty fast. 00:06:58.86\00:07:00.65 When I have looked at cookbooks, I have 00:07:00.68\00:07:02.19 seen where they put you know this 00:07:02.22\00:07:03.77 recipe will take 8 to 10 hours. 00:07:03.80\00:07:06.04 Right. Lot of times it's like a two hour variation. 00:07:06.07\00:07:08.08 And you say what's up with that, 00:07:08.11\00:07:09.12 that doesn't make any sense. 00:07:09.15\00:07:10.26 Yeah when I wanna eat, I wanna 00:07:10.29\00:07:11.30 eat, I don't wanna have to wait, so. 00:07:11.33\00:07:13.45 You don't wanna wait two hours when your 00:07:14.89\00:07:15.86 stomach can't wait, you know, absolutely. 00:07:15.87\00:07:16.84 You know, may be I am having company 00:07:16.85\00:07:17.83 and that everything is gone, so anyway. 00:07:17.86\00:07:20.53 Oh you eat tough beans and that's 00:07:20.56\00:07:21.86 not such a fun thing, right. 00:07:21.89\00:07:22.86 Not a good idea. No. Yeah. So that's why I 00:07:22.87\00:07:25.88 once I figured this out that they work 00:07:25.91\00:07:28.44 differently it just really made it easy because 00:07:28.47\00:07:30.91 now you can know when your 00:07:30.94\00:07:32.11 food is gonna be ready. 00:07:32.14\00:07:33.11 Yes, I like that. And so you got 00:07:33.12\00:07:36.96 these cooked and now we're gonna 00:07:36.99\00:07:38.33 say that they are cooked and we are gonna 00:07:38.36\00:07:40.26 bring out our cooked beans. This one 00:07:40.29\00:07:41.61 over here. Oh, these have already cooked so. 00:07:41.64\00:07:46.53 These are cooked. 00:07:46.56\00:07:47.53 This is a different. I liked this crock pot it's 00:07:47.54\00:07:49.24 cute with the egg paint and tomatoes 00:07:49.27\00:07:51.08 and all that on it. Isn't that pretty? 00:07:51.11\00:07:52.08 Yeah, how many crock pots do you have JoAnn? 00:07:52.09\00:07:53.94 Well, should I ask, I probably 00:07:53.97\00:07:58.59 have somewhere around 25. 00:07:58.62\00:08:00.08 Wow. And you know. 00:08:00.11\00:08:02.62 That's a lot. And I just always 00:08:02.65\00:08:04.88 tell my husband I can justify this 00:08:04.91\00:08:06.46 you know I am working on this 00:08:06.49\00:08:07.78 project and I wanted to be right. 00:08:07.81\00:08:09.32 And he is the one, who asked 00:08:09.35\00:08:10.65 you to do the cookbook in the first place. 00:08:10.68\00:08:12.22 Exactly so, that's right, you know, he 00:08:12.25\00:08:14.33 eats it so he doesn't mind too much. 00:08:14.36\00:08:17.86 That's right. Sometimes, I would 00:08:17.89\00:08:19.31 have him all go in at once. 00:08:19.34\00:08:20.61 Yes. Almost all of them. 00:08:20.64\00:08:22.21 Are you serious? Yeah. That's fantastic man. 00:08:22.24\00:08:24.34 And that's good because it won't show it out 00:08:24.37\00:08:26.93 your electricity because they run on so, you 00:08:26.96\00:08:28.59 know, they are cheaper a lot cheaper to run 00:08:28.62\00:08:30.43 than a stove or oven. So once the beans are 00:08:30.46\00:08:33.21 cooked you are gonna add the rest of your 00:08:33.24\00:08:34.72 ingredients and I would like to add my 00:08:34.75\00:08:36.37 seasonings at the end of cooking in the crock 00:08:36.40\00:08:38.98 pot if possible because that way you will, 00:08:39.01\00:08:41.08 you will just get more flavor out of them. 00:08:41.11\00:08:44.75 Okay yeah. So that was the onion 00:08:44.78\00:08:46.82 and the garlic powder and the 00:08:46.85\00:08:48.24 chicken seasoning. And then if you 00:08:48.27\00:08:50.86 want to the, I add some spinach and this 00:08:50.89\00:08:55.12 gives it a pretty color once it's cooked. 00:08:55.15\00:08:56.77 Oh yes, so would you cook a 00:08:56.80\00:08:58.80 little longer once you add this? 00:08:58.83\00:08:59.97 You know really, I only for like five minutes. 00:09:00.00\00:09:01.76 Oh okay. Yeah just so that 00:09:01.79\00:09:03.24 it all gets hot. It just, it seems 00:09:03.27\00:09:05.27 to blend up real nicely that way and 00:09:05.30\00:09:07.60 that's all there is to it now sometimes that 00:09:07.63\00:09:11.05 works out good and but let's say you've got 00:09:11.08\00:09:14.88 an extra fast pot and it's gonna be done in 00:09:14.91\00:09:17.05 like 6 or 7 hours and you are gonna make on 00:09:17.08\00:09:19.19 for 9 or 10 hours. Right. So, what do you do? 00:09:19.22\00:09:21.99 I haven't the fog is still. 00:09:22.02\00:09:23.34 Well, what you wanna do is get a 00:09:23.37\00:09:26.50 lamp appliance timer. Oh! Now where can 00:09:26.53\00:09:29.02 we get one of these? A lamp appliance timer 00:09:29.05\00:09:30.68 you can get in any hardware store, 00:09:30.71\00:09:32.23 any you know department hardware 00:09:32.26\00:09:36.51 department of any store. 00:09:36.54\00:09:38.44 Okay. And you just plug 00:09:38.47\00:09:39.65 your pot into here and you can 00:09:39.68\00:09:41.56 set the time that you wanted to 00:09:41.59\00:09:42.99 come on, you can set this like 6 hours later 00:09:43.02\00:09:45.61 for the beans to start cooking. And most 00:09:45.64\00:09:48.26 recipes in my book I can set it for like 6 00:09:48.29\00:09:51.28 hours later and for them start cooking and 00:09:51.31\00:09:54.25 then you can there it has a little red button to 00:09:54.28\00:09:57.23 that you can set for when you want to stop, 00:09:57.26\00:09:58.97 but I usually just use the green one and you 00:09:59.00\00:10:01.36 know and then it's done when I am ready. 00:10:01.39\00:10:03.57 Yes that's wonderful. So, they are pretty handy. 00:10:03.60\00:10:06.48 Yes, so say you get up in the morning and 00:10:06.51\00:10:08.73 you can put your beans on and then you can 00:10:08.76\00:10:10.23 just set that timer and it would, come on 00:10:10.26\00:10:12.83 later and then you get home at 5 o' clock 00:10:12.86\00:10:14.65 and then your beans are cooked. 00:10:14.68\00:10:16.16 And if it's overnight you put it the timer in there. 00:10:16.19\00:10:19.52 Yes, so it comes on at midnight or whatever. 00:10:19.55\00:10:21.07 Yeah. Nice oh that's exciting. 00:10:21.10\00:10:23.94 And there is one other little tip, yes, that I 00:10:23.97\00:10:25.72 will share at this time because fast cookers 00:10:25.75\00:10:30.23 and extra fast cookers I find a lot of times 00:10:30.26\00:10:32.42 they'll sputter you know water will kind of 00:10:32.45\00:10:35.12 seep out and then you got to pull the water 00:10:35.15\00:10:36.99 on the table and you know it makes a mess 00:10:37.02\00:10:39.40 and so I use there as I use a towel, oh nice, 00:10:39.43\00:10:44.44 and so I just lay towel over here. 00:10:44.47\00:10:46.59 Just like that And then I just picks 00:10:46.62\00:10:47.92 up that little bit that's gonna sputter 00:10:47.95\00:10:49.46 out and don't use a heavy towel just 00:10:49.49\00:10:51.98 like a hand towel or even paper towel works, 00:10:52.01\00:10:54.03 but this works very nicely. 00:10:54.06\00:10:55.89 Yes and then you don't have the big mess on 00:10:55.92\00:10:58.03 the counter that you got to be cleaning up. 00:10:58.06\00:10:59.49 That's right. Right good. 00:10:59.52\00:11:01.60 So, that's about it Good. Well, let's 00:11:01.63\00:11:03.40 go on to our next recipe what are we making next. 00:11:03.43\00:11:05.32 We are gonna make Focaccia. 00:11:05.35\00:11:06.72 Good, you wanna read the focaccia recipe first. 00:11:06.75\00:11:08.76 Sure with focaccia we start out with a. 00:11:08.79\00:11:10.67 Bread dough and this is gonna be 2/3 cups of warm 00:11:10.70\00:11:14.12 water 1 tablespoon of sweetener you can use 00:11:14.15\00:11:16.97 honey or sugar or any type of favorite sweetener 00:11:17.00\00:11:19.32 1 tablespoon of baking yeast 00:11:19.35\00:11:22.52 1 cup of whole wheat flour 00:11:22.55\00:11:25.02 1/3 cup of unbleached white flour 00:11:25.05\00:11:28.30 1 tablespoon of olive oil 00:11:28.33\00:11:31.50 ½ teaspoon of salt 00:11:31.53\00:11:35.39 3/4 - 1 cup of whole wheat flour 00:11:35.42\00:11:38.98 that's for the bread dough 00:11:39.01\00:11:39.98 And then toppings for the Focaccia. 00:11:40.01\00:11:42.51 You can use and this would be a 00:11:42.54\00:11:44.10 combination of 1/4 - 1/3 of a cup you might 00:11:44.13\00:11:46.54 use sliced olives raw or sautéed onion, 00:11:46.57\00:11:49.89 tomatoes that have been sliced and seeded. 00:11:49.92\00:11:53.10 You can use a non- dairy cheese, a sauce 00:11:53.13\00:11:55.67 or crumbled cheese. Okay Jill so and here 00:11:55.70\00:12:02.06 what we are gonna do is make a focaccia, 00:12:02.09\00:12:03.74 which is like a bread dough that you know 00:12:03.77\00:12:06.23 it needed up and you are gonna roll it out 00:12:06.26\00:12:08.11 and put toppings on it. It's kind a 00:12:08.14\00:12:09.60 like pizza, but it's not. 00:12:09.63\00:12:10.89 Yes. It's a little different. Absolutely. And so 00:12:10.92\00:12:13.14 what we have done here is I have already 00:12:13.17\00:12:14.74 made the dough and the way I like to roll out 00:12:14.77\00:12:18.11 dough it's really easy as it I used a wet hand 00:12:18.14\00:12:21.73 towel and I wiped the counter and then I put 00:12:21.76\00:12:24.75 a piece of plastic wrap down and I put the 00:12:24.78\00:12:26.84 dough on top of it and then I covered 00:12:26.87\00:12:28.23 the dough with plastic wrap. 00:12:28.26\00:12:29.49 Okay. You have already done that so. 00:12:29.52\00:12:31.31 And that's already done and I would just 00:12:31.34\00:12:33.03 gonna roll it out and you are basically 00:12:33.06\00:12:35.09 rolling this out to about the size of 00:12:35.12\00:12:37.04 your slow cooker. 00:12:37.07\00:12:38.04 Okay. And so what we are using today this recipe 00:12:38.05\00:12:42.12 is if you have like a six to seven quarts slow 00:12:42.15\00:12:45.42 cooker, if you have a smaller cooker like a 00:12:45.45\00:12:49.58 five quarts I have a smaller recipe in my 00:12:49.61\00:12:54.12 book. In fact all of these recipes they are 00:12:54.15\00:12:56.44 based on larger amounts or smaller 00:12:56.47\00:12:58.18 amounts. Bless so high. So, I have both ways in it. 00:12:58.21\00:13:00.74 You have done a lot of work and 00:13:00.77\00:13:01.74 you cooked for that, absolutely. 00:13:01.75\00:13:02.97 It was, I really need adventure. 00:13:03.00\00:13:05.30 That's good.
