Find out what Mexican Antojitos are and 00:00:01.98\00:00:04.06 learn how to eat this prickly thing here. 00:00:04.40\00:00:06.54 Ouch, we'll be right back. 00:00:06.80\00:00:08.57 Welcome to Let's Cook Together. 00:00:42.03\00:00:43.44 I'm Cari Christian and our special guest today 00:00:43.45\00:00:45.54 is Maria Ronquillo. She is gonna tell us what 00:00:45.55\00:00:48.36 Mexican Antojitos are. Did I say right? 00:00:48.59\00:00:51.23 Yes, you said it right. Mexican Antojitos I guess, 00:00:51.29\00:00:54.24 something like light meals. The actual 00:00:55.01\00:00:57.12 translation is Mexican Cravings, but we're gonna 00:00:57.13\00:01:00.79 make these light meals and just enjoy our time 00:01:00.82\00:01:03.54 together I think. Okay let's get started. 00:01:03.65\00:01:05.60 Yeah let's make our first recipe for Guacamole. 00:01:05.70\00:01:08.38 I'm sure you've heard about that before 00:01:08.45\00:01:09.95 Guacamole. Oh yeah I like Guacamole. 00:01:09.96\00:01:11.49 Okay let's read the recipe. 00:01:11.50\00:01:12.57 Okay. The ingredients are 00:01:12.58\00:01:13.78 2 or 3 avocados, peeled & mashed 00:01:13.93\00:01:16.69 1 medium tomato, chopped 00:01:16.92\00:01:18.63 ½ medium onion, chopped 00:01:19.10\00:01:20.86 1/4 c. cilantro, chopped 00:01:21.17\00:01:23.19 2 limes, juiced and salt to taste 00:01:23.60\00:01:26.85 Okay, so we are ready for our Guacamole. 00:01:30.67\00:01:32.66 And we have the avocados ready here and 00:01:33.23\00:01:36.41 what you wanna do is mash them, you can use 00:01:36.42\00:01:38.35 a fork but this is a lot easier using the potato 00:01:38.43\00:01:41.69 masher. Yeah that does work well. Doesn't it? 00:01:41.85\00:01:44.90 Yeah really fast, and so well we're using two 00:01:44.91\00:01:49.08 here you can use as many as you want, 00:01:49.09\00:01:50.85 it depends on how big of our recipe, 00:01:50.86\00:01:52.55 how many people you are feeding I guess. 00:01:52.97\00:01:54.73 And Guacamole is always great for party. 00:01:55.08\00:01:56.95 Guacamole is a great thing for parties 00:01:57.23\00:02:00.42 because you can use it as a dip, and you can 00:02:00.43\00:02:02.98 use it top up things even for chips and stuff 00:02:02.99\00:02:10.48 like that. And you can even put it on a sandwich. 00:02:10.49\00:02:12.52 Yeah, I mean every, tortillas, it's good. 00:02:12.77\00:02:15.35 So what else I would be putting. 00:02:15.89\00:02:16.91 We putting some onion and here it's also to 00:02:16.92\00:02:21.30 taste kind of because some people like it a lot 00:02:21.48\00:02:23.59 some people do like so much onions so I rather, 00:02:24.09\00:02:26.08 I put a little bit, I don't put a lot but a lot 00:02:26.15\00:02:28.42 of people like a bit more onions than I do. 00:02:28.43\00:02:30.71 So between maybe half of an onion to a 00:02:30.80\00:02:33.96 whole onion would be good for two to three 00:02:33.97\00:02:36.01 of avocados. And now we're gonna put the 00:02:36.13\00:02:38.19 tomato, never tried tomato in there before 00:02:38.20\00:02:41.64 but I like that, I mean this is a variety. 00:02:41.65\00:02:43.61 Yeah, that means some people make a little 00:02:43.62\00:02:45.20 bit different than others. So you can add a 00:02:45.21\00:02:49.06 little bit of tomato, you can add a whole tomato 00:02:49.07\00:02:51.13 and some cilantro. Cilantro is good but I 00:02:52.53\00:02:55.78 remember the first time I tried I wasn't quite 00:02:55.87\00:02:58.00 prepared for the taste. Yeah. It's little thicker. 00:02:58.01\00:02:59.84 I love pepper and familiar with cilantro. 00:02:59.85\00:03:02.28 It's something that is used a lot in Mexican 00:03:02.46\00:03:04.65 cooking for sure. And it's good in taste I would 00:03:04.66\00:03:08.25 say right? Oh but now I like it. You have 00:03:08.27\00:03:10.96 acquired the taste. I have acquired the taste, 00:03:10.97\00:03:13.01 first time I thought it taste a little bit like 00:03:13.12\00:03:14.50 soap, okay, but now I've stead it. You know it's 00:03:14.65\00:03:17.83 pick I need it. It's like a Mexican version of 00:03:17.97\00:03:19.86 parsley I guess, yeah. We got to put some salt 00:03:19.90\00:03:22.66 and some lime juice or lemon juice, 00:03:23.61\00:03:25.81 you can use either one. Okay. 00:03:25.90\00:03:27.57 Yeah. So does the flavor make a difference 00:03:27.81\00:03:30.27 really between the lemon and the lime? Yeah. 00:03:30.42\00:03:32.50 It's a little bit different the flavors between 00:03:33.09\00:03:35.21 the lime and lemon, yeah there is a little bit of a 00:03:35.22\00:03:36.98 difference. But I guess is whatever you like. 00:03:36.99\00:03:40.87 It's one of those recipes that you make to your 00:03:41.38\00:03:43.31 own taste. Now that'll keep it from turning 00:03:43.32\00:03:45.40 brown right. It sure, will help yes absolutely. 00:03:45.53\00:03:47.98 So this ready to eat or you could let it sit 00:03:48.40\00:03:51.94 for little while and let flavors blend a little 00:03:52.04\00:03:54.93 bit more, but this is ready to eat right now. 00:03:54.94\00:03:57.24 So what I wanted do is make the Guacamole 00:03:57.33\00:04:00.36 first for also, for our next recipe to top it off 00:04:00.37\00:04:03.68 with Guacamole. Okay. So let's move on to our next 00:04:03.78\00:04:05.81 recipe. Our next recipe is Mexican Taco Burger. 00:04:05.96\00:04:08.71 The ingredients are 00:04:10.06\00:04:11.26 1 pkg. vegetarian ground burger, crumbled 00:04:11.31\00:04:14.48 ½ medium onion chopped 00:04:14.76\00:04:16.60 ½ green bell pepper chopped 00:04:16.98\00:04:18.66 ½ tsp. mild chili powder which is (optional) 00:04:19.06\00:04:22.17 ½ tsp. paprika 1/4 tsp. cumin 00:04:22.67\00:04:26.23 1 tsp. oregano 1 tsp. olive oil 00:04:26.80\00:04:30.07 So this recipe is very easy, and very quick and 00:04:32.83\00:04:35.86 you could use it for a lot of things like you can 00:04:35.87\00:04:37.93 make Tacos, you can make Taquitos, you can 00:04:37.94\00:04:39.55 make enchiladas, you can make a lot of 00:04:39.56\00:04:41.25 applications with this same recipe that we are 00:04:41.26\00:04:42.97 gonna make. And it should be lot of fun so 00:04:42.98\00:04:45.76 let's start with a skillet, here that is very 00:04:45.89\00:04:49.01 warm we're gonna put some olive oil and we're 00:04:49.31\00:04:52.84 gonna add some onions. I noticed that's pretty 00:04:52.85\00:04:56.58 finely chopped, yeah. Yeah that's how it's 00:04:56.70\00:04:59.76 better that way because we're gonna use a 00:04:59.84\00:05:02.72 little bit of veggie burger crumble so this is, 00:05:02.73\00:05:04.61 it's and so already crumbled the big pieces 00:05:04.62\00:05:06.52 of onion kind a interfere a little bit, yeah 00:05:06.53\00:05:09.33 So let's put some of the bell pepper, okay, 00:05:09.52\00:05:11.72 shall I dump it there, sure, yeah. So this is 00:05:11.85\00:05:16.22 just to give it a little bit of more taste to it. 00:05:16.33\00:05:19.31 You could use just the vegetarian crumbles all 00:05:19.86\00:05:24.31 by themselves but this sure adds to the taste, 00:05:24.32\00:05:27.72 adding the onion and the bell peppers so let's 00:05:28.24\00:05:31.00 add some of the other things we have here. 00:05:31.09\00:05:33.49 Little bit of oregano, and the cumin, I think, 00:05:33.50\00:05:38.69 cumin's good. It sure brings out some flavor, 00:05:39.36\00:05:41.90 yeah. And paprika and optional chili powder, 00:05:41.97\00:05:48.96 this is up to you really if you want some chili 00:05:49.04\00:05:51.98 powder you can have some but if you don't, 00:05:51.99\00:05:54.90 you don't have to. You make it to your own 00:05:55.14\00:05:58.83 taste, really. Well there are different kinds of 00:05:58.84\00:06:01.05 chili powder too right. Yeah some of them are 00:06:01.15\00:06:03.79 milder and that's what I use it. If I use chili 00:06:03.88\00:06:05.92 powder at all, I'm gonna use a mild for some case. 00:06:05.93\00:06:08.32 Okay. But other people like a little bit hot, 00:06:08.33\00:06:11.99 some people even eat the cayenne pepper. 00:06:12.21\00:06:14.00 And the cayenne pepper is a little bit too hot 00:06:14.49\00:06:16.37 for me to be quite obvious, yeah. 00:06:16.52\00:06:17.86 Even though it has a little bit of medicinal 00:06:18.06\00:06:19.90 properties to it, I try to not use it too much 00:06:20.81\00:06:25.43 for my food. But other people like it so it's 00:06:25.95\00:06:29.26 really up to your own taste. And see how we 00:06:29.27\00:06:31.64 already starting to see a little bit of softening 00:06:31.65\00:06:34.68 of the onions. Yeah this is starting to get a 00:06:34.79\00:06:37.44 little bit clear. Aha that's exactly what you 00:06:37.45\00:06:39.51 want when they are all nice and clear, 00:06:39.69\00:06:41.60 you would add your vegetarian meat 00:06:41.92\00:06:45.81 substitute but you don't have to use even this. 00:06:45.94\00:06:49.38 You can use some bulgur wheat instead and 00:06:49.47\00:06:54.54 or you can use beans for this recipe we're gonna 00:06:54.72\00:06:58.34 make, you can make your Tacos and Taquitos 00:06:58.35\00:07:00.24 with beans instead. Oh, that will be good. 00:07:00.37\00:07:02.26 So that's another option but usually when we 00:07:02.27\00:07:07.41 see Mexican people eating tacos they use meat. 00:07:07.69\00:07:10.73 So a lot of times in order for us to help them 00:07:11.48\00:07:14.36 transition out of the meat eating habits we 00:07:14.52\00:07:18.48 help them out with products like this that's 00:07:18.49\00:07:21.46 seen familiar to them. Yeah. You know, 00:07:21.47\00:07:23.98 the texture is little more familiar, exactly and 00:07:24.39\00:07:26.81 the taste is very similar. You know you won't 00:07:26.88\00:07:30.07 believe how similar sometimes it is and it's 00:07:30.08\00:07:32.02 not that we want to may be keep on having that 00:07:32.03\00:07:35.97 habit, it's just that we want to help people 00:07:36.15\00:07:37.91 transition into a healthier diet, right, 00:07:37.92\00:07:40.09 and these products that made out of soy are 00:07:40.11\00:07:42.82 very healthy actually because they are low in 00:07:42.86\00:07:44.89 fat and the soy contains the soy protein is 00:07:44.90\00:07:48.19 actually prevented in some of the diseases that 00:07:48.28\00:07:50.81 we see nowadays in our society. So it's actually 00:07:50.82\00:07:53.23 a good thing to add to your diet. 00:07:53.26\00:07:55.01 But if you can add you know things like Tofu 00:07:55.86\00:07:57.61 which are little bit more natural than these 00:07:57.65\00:07:59.49 packaged things, are even better. 00:08:00.17\00:08:01.89 So let's go ahead and club our next recipe which 00:08:02.50\00:08:05.56 is very, very easy because we only gonna need 00:08:05.57\00:08:08.43 one more ingredient and then we could make our 00:08:08.47\00:08:10.35 Tacos. Okay, yeah, so the recipe 00:08:10.40\00:08:13.15 for Tacos and Taquitos. 00:08:13.47\00:08:14.73 Okay it calls for 24 corn tortillas 00:08:15.18\00:08:17.49 1 Mexican taco burger recipe which is 00:08:18.31\00:08:20.60 fried there on the burner, that's right. 00:08:20.69\00:08:22.07 Tacos and Taquitos! That's exactly what we're 00:08:26.96\00:08:28.89 gonna make. So this is so easy Tacos and Taquitos 00:08:28.90\00:08:32.20 are traditionally fried in a lot of oil that would, 00:08:32.21\00:08:35.90 and what the tortillas, corn tortillas, 00:08:36.23\00:08:38.43 one of the characteristics about corn tortillas is 00:08:38.51\00:08:40.91 that they actually absorb all the oil. 00:08:40.92\00:08:43.45 So they get very fattening that way, you know, 00:08:43.73\00:08:46.12 oh yeah. So what we're gonna do is we're gonna 00:08:46.13\00:08:48.94 actually use the oven instead of the frying pan 00:08:48.95\00:08:51.86 and we are gonna just spray this baking sheet 00:08:52.22\00:08:55.13 with some olive or any type of oil spray you 00:08:56.36\00:08:59.83 want and we have some tortillas they have been 00:08:59.91\00:09:02.52 warmed already. These are corn tortillas from 00:09:02.54\00:09:04.93 the store, so should be easy to find any 00:09:04.99\00:09:07.27 grocery stores, major grocery stores, 00:09:07.77\00:09:10.62 carry them and you wanna either warm them up 00:09:10.69\00:09:13.47 on a griddle or may be in the microwave something 00:09:13.55\00:09:16.76 or steam them as well, so that they are nice and 00:09:16.81\00:09:18.64 soft. Okay so warming them softens. Yeah, 00:09:18.66\00:09:21.25 yeah exactly because if you just get them out 00:09:21.60\00:09:23.13 of the bag like that they are not gonna be soft, 00:09:23.14\00:09:25.73 they are gonna stiff. Okay. So we're gonna put 00:09:25.74\00:09:28.15 a couple of tablespoons of the filling, and 00:09:28.16\00:09:30.92 just for the Tacos you just basically fold the 00:09:30.93\00:09:33.42 tortilla in half and that's it. Do you wanna make 00:09:33.43\00:09:37.46 one? Yeah I do. Okay. So just couple of 00:09:37.47\00:09:42.45 tablespoons in it, yeah, or however much you 00:09:42.46\00:09:44.28 can fit in it. Lots and lots, yeah. So those are 00:09:44.29\00:09:49.51 usually Tacos right, that's what you think of, 00:09:49.52\00:09:51.57 yeah, hear the word Taco. Now the Taquitos 00:09:51.58\00:09:55.40 which actually in Spanish are more called Flautas, 00:09:55.58\00:09:58.74 flute I guess, you would just roll it up instead of 00:09:59.84\00:10:04.88 holding it in half. Oh it's different variation. 00:10:04.96\00:10:07.51 But it's basically the same ingredient or same 00:10:07.92\00:10:10.01 thing, okay, just a different way to fold it. 00:10:10.14\00:10:13.97 So you should try your own. Look I make couple 00:10:15.31\00:10:19.59 of more and lay them on this, like this. 00:10:19.60\00:10:25.24 And what I do if this is optional, is just spray 00:10:25.73\00:10:28.96 a little bit on top as well. And its kind a helps 00:10:28.97\00:10:31.66 that give nice little texture. And so they will 00:10:31.67\00:10:35.57 go in the oven at about 400 degrees, at that 00:10:35.58\00:10:39.49 temperature you would have to watch them 00:10:39.53\00:10:41.12 closely because they won't take more than half 00:10:41.15\00:10:43.98 an hour they probably take between 15 and 20 00:10:44.01\00:10:46.31 minutes. It depends on the oven too, so you kind 00:10:46.37\00:10:49.12 of have to know your oven but you kind of have 00:10:49.13\00:10:51.08 to be watching make sure they don't burn. 00:10:51.09\00:10:52.82 And they look nice and crispy when they are done 00:10:53.18\00:10:55.03 may be we can show the final product how it looks 00:10:55.10\00:10:58.37 when it's done, it's nice and brown. See it's nice 00:10:58.41\00:11:01.37 and crispy; it looks good, nice and crispy, exactly, 00:11:01.38\00:11:03.60 yeah. So when you could do with the Taco when 00:11:03.61\00:11:05.25 it's done, it's out of the oven is that we can 00:11:05.30\00:11:07.79 actually put a little bit a Lettuce and Tomato and 00:11:07.85\00:11:11.91 just some shred it Lettuce like you would have it 00:11:11.93\00:11:14.81 out there Mexican restaurant I guess, 00:11:14.82\00:11:17.28 maybe some sour cream and we have some 00:11:17.68\00:11:22.86 Tofu I guess soy sour cream here. Okay is that 00:11:23.00\00:11:25.82 enough or do you want more? Put a little bit 00:11:25.83\00:11:27.07 more, more okay. And let's do another one with 00:11:27.08\00:11:29.32 a little bit of our Guacamole that we just 00:11:29.33\00:11:32.37 made, oh yeah. And the Taquitos as well, you can 00:11:32.38\00:11:36.33 serve them with a little bit of dressing on 00:11:36.34\00:11:38.00 top you can serve with Guacamole, you can serve 00:11:38.02\00:11:42.72 them with sour cream, yeah there we go, 00:11:42.82\00:11:46.22 that's a nice top. See that's how you would 00:11:46.23\00:11:49.14 serve them and we can maybe serve some 00:11:49.17\00:11:51.69 Guacamole on top our Taquitos as well. 00:11:51.97\00:11:53.75 So just right on top, just like that, yeah sure on 00:11:53.76\00:11:56.69 side. However you want that this is your plate, 00:11:56.93\00:12:00.68 okay, yeah. And again this will quite that make 00:12:01.40\00:12:03.87 great party foods as well things you could just 00:12:04.03\00:12:05.84 pick up any with your fingers, yup. So exactly 00:12:06.00\00:12:09.09 and this is very tasty that your kids will actually 00:12:09.25\00:12:12.30 love you when you make this I think because 00:12:12.61\00:12:15.31 they are crispy thing, I think children like things 00:12:15.32\00:12:17.84 like crunch. You know they are crunchy; 00:12:17.85\00:12:19.93 oh I wouldn't love this when I was a kid. 00:12:19.94\00:12:20.91 I like it now. Yeah, yeah so this is wonderful. 00:12:20.92\00:12:23.78 So let's move on to our next recipe. 00:12:23.88\00:12:25.57 Okay, the next one. Oh this is interesting its 00:12:25.71\00:12:27.93 Cactus Salad. Yeah, yeah so let's 00:12:28.09\00:12:30.12 read the recipe. Okay its 00:12:30.16\00:12:31.18 1 jar of nopalitos, sliced (tender cactus) 00:12:31.46\00:12:34.61 1 large tomato, diced 00:12:35.06\00:12:36.70 ½ medium onion, chopped 00:12:36.91\00:12:38.58 1/4 c. cilantro, chopped 00:12:38.89\00:12:40.98 1/4 tsp. oregano, lemon juice to 00:12:41.26\00:12:44.59 taste and salt to taste. 00:12:44.60\00:12:46.40 Maria I've been looking forward to this one, 00:12:48.51\00:12:50.58 how do you eat that without gonna stickers on 00:12:50.64\00:12:53.65 your tongue? That's right well do you know what 00:12:53.69\00:12:55.18 that is? This is a Cactus, looks like a Cactus. 00:12:55.19\00:12:57.48 Well amazingly enough people to eat this and 00:12:58.29\00:13:00.39 it's actually very tasty and it's very nutritious. 00:13:00.40\00:13:04.18 Really? It's actually good for people who have 00:13:04.72\00:13:06.12 diabetes too because it has good kind of fiber. 00:13:06.13\00:13:08.42 I didn't know that. Yes now we are learning a lot 00:13:08.79\00:13:10.85 of things today. So there are two ways you can 00:13:10.86\00:13:13.28 buy Nopalitos, you can buy them brought like 00:13:13.34\00:13:15.57 that or actually you can actually go to the plant 00:13:15.58\00:13:17.19 and cut a piece, it has to be a young leaf, 00:13:17.32\00:13:20.25 I guess patter something. You have to cut it and 00:13:20.32\00:13:23.55 scrape off the thorns, you have to be very, 00:13:23.80\00:13:25.75 very careful with this, this is like prickly pears 00:13:25.76\00:13:27.99 you have to be careful not to, you don't get 00:13:28.02\00:13:30.16 thorns on your hands and you would scrape off 00:13:30.17\00:13:33.00 the thorns with peeler and wash it really good 00:13:33.12\00:13:36.22 and slice it and steam it and that's how you would 00:13:36.56\00:13:39.92 make your recipes. Now the other way to buy 00:13:39.93\00:13:42.50 them or to bake it is to buy a jar. And these are 00:13:42.59\00:13:45.76 found just about anywhere because I found 00:13:45.81\00:13:47.65 them here in this geographical area that 00:13:47.78\00:13:49.54 means just about anywhere you can find 00:13:49.55\00:13:51.07 them, that's amazing, yeah. So yeah that is good 00:13:51.08\00:13:53.07 and nopalitos, they are called Nopalitos, 00:13:53.19\00:13:54.99 nopalitos, nopalitos, nopalitos is the Spanish 00:13:55.06\00:13:59.12 word for Cactus. You know when you get them 00:13:59.13\00:14:01.16 out of the jar what do you want to do is put 00:14:01.23\00:14:04.61 them in a strainer and actually rinse it off with 00:14:04.64\00:14:09.43 a lot of cold water. Oh why's that? 00:14:09.44\00:14:11.26 They come with a slimy liquid inside and 00:14:11.27\00:14:13.40 actually nopalitos are kind of slimy when you 00:14:13.41\00:14:15.70 cook them to, so you also want to rinse them. 00:14:15.71\00:14:17.61 But you wanna rinse up all this stuff that 00:14:18.43\00:14:19.92 comes with the jar and then you are ready to 00:14:20.76\00:14:23.53 chop them because they come in long strings 00:14:23.72\00:14:26.92 like this, yeah it kind of looks like a green bean, 00:14:26.94\00:14:28.78 it looks like a green bean actually and the taste 00:14:28.79\00:14:30.82 is a little bit similar, not too similar but they 00:14:30.83\00:14:33.22 come, you can actually eat them like this too 00:14:33.35\00:14:35.53 but before the salad that we're make we're 00:14:35.54\00:14:36.88 gonna chop them into smaller pieces. 00:14:36.89\00:14:39.26 So here we have our chopped up nopalitos 00:14:39.59\00:14:42.28 they're been rinsed and ready to go for our 00:14:42.32\00:14:45.86 salad and salads one of those easy things that 00:14:45.98\00:14:47.98 you can just drop together. Yeah. So let's 00:14:48.05\00:14:51.39 start with our recipe, let's put a little bit 00:14:51.41\00:14:53.77 onion and I put about half an onion to a 00:14:53.78\00:14:56.92 whole onion it depends on who is eating it. 00:14:56.93\00:14:59.21 If I'm eating then I would only 00:15:00.12\00:15:01.09 put half of onion or may be a 00:15:01.10\00:15:02.75 quarter of an onion, but some people like lots, 00:15:02.88\00:15:04.77 yeah it's true, but some like lots of onions. 00:15:04.88\00:15:06.69 So we put the onion and then we put our fresh 00:15:06.77\00:15:10.74 looking tomatoes delicious looking tomatoes and 00:15:10.80\00:15:14.62 again we have our friend the cilantro here. 00:15:14.63\00:15:16.43 And cilantro like I said before it's very commonly 00:15:17.51\00:15:19.74 used in Mexican cooking so this is another thing 00:15:19.76\00:15:23.08 that is absolutely used in all the time, it's in 00:15:23.15\00:15:26.17 the nopalitos salad. And then you could put 00:15:26.18\00:15:28.38 some, the salt is optional if you gonna use the 00:15:28.52\00:15:30.99 canned version of the nopalitos because there is 00:15:31.13\00:15:33.05 already salt in it. So you don't really have to add 00:15:33.06\00:15:35.34 any salt and the lemon too it's' optional. I 00:15:35.45\00:15:39.22 won't gonna add a little bit because they are 00:15:39.23\00:15:42.51 preserved in some citric acids. So it already has 00:15:42.58\00:15:44.85 a little bit the lemony taste. And we're gonna 00:15:44.86\00:15:48.54 add just a little bit of oregano may be that also 00:15:48.64\00:15:51.81 something that you don't have to put but 00:15:51.83\00:15:53.69 actually salad is pretty much ready to eat now, 00:15:54.03\00:15:57.34 but it's better if you put it in the fridge and 00:15:57.95\00:16:02.93 then it sit for a while, especially if you want 00:16:02.94\00:16:06.64 the onion taste to not be so strong, 00:16:06.65\00:16:09.31 so you would put it in the refrigerator and let 00:16:09.76\00:16:12.58 it maybe for about half an hour, let it say for 00:16:12.59\00:16:15.41 about half an hour and the way the flavors will 00:16:15.42\00:16:18.92 be, they can just mingle, mingle yeah and they 00:16:18.93\00:16:21.91 just come out very nicely. And like you said the 00:16:22.03\00:16:24.34 taste or the flavor, this taste a little bit like 00:16:24.51\00:16:27.97 green beans of the textures, little bit similar 00:16:28.09\00:16:30.60 to the green beans. But it's not quite, 00:16:30.61\00:16:33.08 so if you haven't ever had this, this is something 00:16:33.60\00:16:36.90 that you have to taste to really know if you like 00:16:36.91\00:16:40.10 it or not, you can make a judgment just based 00:16:40.11\00:16:43.16 on the fact that you never tasted it. 00:16:43.17\00:16:44.33 So I think it's something that people need to try 00:16:44.34\00:16:47.20 and like I said it's very nutritious and very low 00:16:48.10\00:16:52.22 in, I mean very low in fat. It's got almost no 00:16:52.31\00:16:55.31 fat. And it's actually good for you and good for 00:16:55.41\00:16:59.59 diabetics. It's good for diabetics. Traditionally 00:16:59.60\00:17:02.14 it is used in Mexico; people who have 00:17:02.15\00:17:04.35 diabetes traditionally eat a lot of nopalitos. 00:17:04.36\00:17:06.99 Now the other thing you can do with the Cactus 00:17:07.13\00:17:09.75 here is that you can make scrambled tofu and 00:17:09.79\00:17:14.89 add the Cactus, nopalitos too it because Mexicans 00:17:14.94\00:17:20.82 eat nopalitos with egg sometimes, and so that 00:17:20.94\00:17:26.01 would be another way to eat it another way 00:17:26.02\00:17:28.00 to eat it would be to make soup and to add it 00:17:28.10\00:17:31.17 to any of your stews or any type of like bean 00:17:31.18\00:17:37.06 dish or something like that you like add, 00:17:37.09\00:17:38.83 that's good too. People audit to their mole 00:17:38.92\00:17:40.94 sometimes with mole sauce, there are so many 00:17:40.95\00:17:43.48 things you can do with that it's very, 00:17:43.49\00:17:45.23 very good. It sounds very versatile, 00:17:45.24\00:17:46.87 that's it's an entirely new food for me so. 00:17:47.05\00:17:49.55 Entirely new food for lot of people there 00:17:49.56\00:17:51.30 watching today I think. Probably so but I'm 00:17:51.31\00:17:53.62 looking forward to trying that, it smells good and 00:17:53.71\00:17:55.36 I wish to had a spoon right now 'cause I snag 00:17:55.52\00:17:57.78 a little bit. Anyway what do we have next, Maria. 00:17:57.79\00:18:00.90 Well the next recipe is I guess the Mexican 00:18:00.91\00:18:03.21 version of Hot Chocolate; of course we are not 00:18:03.25\00:18:06.04 gonna use chocolate, no? No I don't need chocolate. 00:18:06.05\00:18:08.68 What we're gonna use? We're gonna use carob. 00:18:08.69\00:18:09.99 Carob! Why is carob better than chocolate? Well 00:18:10.10\00:18:12.53 first of all Carob does not have caffeine and 00:18:12.65\00:18:17.15 some of the other addictive substances that 00:18:17.16\00:18:21.31 the chocolate has. Chocolate used to prepare 00:18:21.32\00:18:23.68 with a lot of oil or fat as well, sure, and is also 00:18:23.69\00:18:26.94 prepared with sugar so it's high in sugar and 00:18:27.84\00:18:30.40 high in fat. And it's not good for you because 00:18:30.41\00:18:32.92 it has caffeine and other substances that are 00:18:32.93\00:18:35.65 actually make it addictive. People do become 00:18:35.71\00:18:37.64 addicted to chocolate. So it's not a myth, 00:18:37.74\00:18:39.84 people literally beco me addicted. There is a 00:18:39.94\00:18:41.58 biochemical reason why people become addicted 00:18:41.59\00:18:43.86 to chocolate so, that's interesting, that is 00:18:43.87\00:18:45.67 interesting. It's not just that people actually 00:18:45.68\00:18:47.84 like the taste nobody becomes addicted to 00:18:47.85\00:18:49.34 broccoli. Now I've never heard of a single 00:18:50.05\00:18:53.42 broccoli added, exactly but there is actually 00:18:53.43\00:18:55.46 a reason why people become addicted to 00:18:55.47\00:18:57.04 chocolate we're not gonna use chocolate in this 00:18:57.05\00:18:59.36 recipe. So let's read it, let's go ahead and 00:18:59.43\00:19:01.05 read it. Okay this is Champurrado, calls for 00:19:01.27\00:19:05.22 ½ c. masa harina 2½ c. soy milk 00:19:05.47\00:19:09.59 1½ c. water 2 tbsp. carob powder 00:19:10.12\00:19:14.13 ½ c. Sucanat or one cone "piloncillo" 00:19:14.71\00:19:18.19 1 stick cinnamon (optional) 00:19:18.77\00:19:20.69 Champurrado, Champurrado that's correct. 00:19:24.57\00:19:26.68 It's a Mexican version of hot chocolate I guess, 00:19:27.06\00:19:29.71 without the chocolate apparently. Yeah we're 00:19:29.72\00:19:31.40 not gonna use chocolate, we're gonna use 00:19:31.41\00:19:33.03 carob and we're saying how that good is to not 00:19:33.16\00:19:37.93 eat chocolate but we haven't said anything 00:19:38.12\00:19:39.59 about carob. Yeah what so great about carob? 00:19:39.69\00:19:41.93 Oh carob is actually a good source of protein. 00:19:41.94\00:19:44.68 It's a good source of B Vitamins. Proteins? 00:19:44.88\00:19:46.59 And it has minerals in it, so it's actually good 00:19:46.60\00:19:48.49 for you, I supposed to do chocolate being 00:19:48.50\00:19:50.44 actually bad for you so if we can substitute 00:19:50.45\00:19:52.66 something bad for something good that 00:19:52.68\00:19:54.85 actually tastes similar that's a win win situation 00:19:54.94\00:19:57.67 I think. Good, something good for something, 00:19:57.72\00:19:59.68 yeah. yeah, yeah, yeah, so and then we're gonna 00:19:59.69\00:20:01.72 use, we're gonna use this product that was able 00:20:01.83\00:20:04.48 to find it, and it's a cone of sugar like product, 00:20:04.49\00:20:09.45 I guess it's evaporated cane juice and it's the 00:20:09.56\00:20:12.68 most unrefined version of sugar you can ever 00:20:12.69\00:20:14.40 find and here's the packet that it came in and I 00:20:14.70\00:20:18.65 was able to find here, so you can find it in 00:20:18.66\00:20:21.10 just about most grocery stores I would say, 00:20:21.11\00:20:23.86 pretty much anywhere, yeah. Well what's the 00:20:23.87\00:20:25.56 advantage of using this kind of unrefined sugar 00:20:25.60\00:20:28.00 say it's opposed to white sugar? Well white sugar 00:20:28.14\00:20:30.47 has nothing but empty calories; it has no traced 00:20:30.55\00:20:33.64 minerals left in it. It has no nutrition at 00:20:33.74\00:20:36.14 all except for just the calories from the sugar 00:20:36.15\00:20:39.08 and plus we find refined sugars, all the refined 00:20:39.56\00:20:41.62 sugars, all the refined sugars actually raise your 00:20:41.72\00:20:43.03 body sugar too fast and that can create 00:20:43.47\00:20:46.24 problems later on. So you definitely want to 00:20:46.35\00:20:49.21 avoid more refined sugar, it has no nutrition 00:20:49.37\00:20:52.25 in it but this does have some traced minerals 00:20:52.28\00:20:54.46 in it and nutrition. So you do wanna use, 00:20:54.47\00:20:57.68 if you gonna any type of sweetener and sugar in 00:20:57.69\00:21:00.23 your diet it's been to use the unrefined sugars. 00:21:00.24\00:21:03.23 And so this is the Mexican version of the 00:21:03.83\00:21:05.32 unrefined sugar. Well that looks interesting. 00:21:05.36\00:21:07.32 If you don't find this you could always use 00:21:07.51\00:21:09.04 Sucanat and stuff so that's another option. 00:21:09.36\00:21:12.27 So does it taste different than regular sugar? 00:21:12.43\00:21:14.98 It has more than molasses flavor still left so, 00:21:15.16\00:21:19.15 yeah it's kind a like sucanat that sense that 00:21:19.16\00:21:21.04 has a bit of molasses richer flavor I guess, 00:21:21.15\00:21:24.14 sure it adds to the recipe is that which is plane 00:21:24.21\00:21:26.95 sugar. Yeah I do like that sucanat as opposed 00:21:26.96\00:21:29.90 to the white sugar because, just because of 00:21:29.91\00:21:31.67 that very fat has a worm flavor. Yeah and this 00:21:31.68\00:21:34.15 will have too. Okay. Now the only difference is 00:21:34.16\00:21:36.30 that this, you will only be able to you said in 00:21:36.35\00:21:38.81 recipes that have a liquid in it because you 00:21:39.68\00:21:41.87 kind of have to melt it in hot liquids so. 00:21:41.88\00:21:44.60 So that's the only difference unless you 00:21:44.85\00:21:46.07 want to grade it or something in that we do 00:21:46.08\00:21:48.62 a lot of work. But that's the only difference so 00:21:48.63\00:21:51.32 anything that has hot liquid in it you can use. 00:21:51.33\00:21:54.20 It looks like that liquid is getting pretty hot. 00:21:55.07\00:21:56.60 Yeah we're gonna go ahead and we already 00:21:56.61\00:21:58.27 warming the milk so that it will be faster that 00:21:58.32\00:22:00.57 way but what we are gonna do first is blend 00:22:00.58\00:22:03.41 with this blender and we have the, again we 00:22:04.26\00:22:08.63 have the masa here flour and that will make it a 00:22:08.64\00:22:14.01 little bit thicker than traditional hot chocolate. 00:22:14.02\00:22:16.02 Traditional chocolate is just milk, right, 00:22:16.29\00:22:19.20 but that this will be a little thicker. 00:22:19.48\00:22:20.78 We're gonna about 1½ cups of water. So it's 00:22:21.33\00:22:24.66 the masa traditional for this drink? 00:22:24.67\00:22:26.39 Yes, yes. Although seven people eat or drink 00:22:26.52\00:22:30.47 some other types of hot drinks that are don't 00:22:30.92\00:22:33.04 have masa they might have corn starch, 00:22:33.12\00:22:37.78 sometimes in Mexico they also drink hot drinks 00:22:37.90\00:22:41.53 that have oats in it, blended oats and to 00:22:41.59\00:22:44.74 thicken the drink so this is another option. 00:22:44.75\00:22:47.64 So let's go ahead and blend this. 00:22:47.84\00:22:48.84 Alright. It's ready to go, you wanna go ahead 00:23:05.07\00:23:07.38 and dump it for me. My pleasure! Okay. 00:23:07.39\00:23:10.51 So you can get it out, there you go, okay. 00:23:11.80\00:23:15.14 And go ahead put that in here and then I gonna 00:23:16.29\00:23:21.53 go ahead and put our cone of piloncillo, 00:23:21.63\00:23:24.90 we're able to get that word. I practice 00:23:25.11\00:23:27.60 piloncillo, yeah good, good job. And this is 00:23:27.78\00:23:30.32 optional cinnamon. Cinnamon just gives the 00:23:30.33\00:23:33.15 taste when I actually gonna eat it or drink it, 00:23:33.16\00:23:36.25 it's just give a taste and then when you are 00:23:36.27\00:23:37.65 ready to serve it you would remove it. 00:23:37.66\00:23:39.46 And when you would do is simply stir up not 00:23:40.12\00:23:43.77 constantly maybe just frequently you can leave 00:23:43.98\00:23:46.30 it for a while they come back and stir a little 00:23:46.31\00:23:48.10 bit longer but you don't wanna leave it too 00:23:48.11\00:23:50.00 long without stirring because it's now start 00:23:50.13\00:23:51.85 sticking to the bottom of the pan but you wanna 00:23:52.06\00:23:54.28 stir and once this starts to boil it will thicken. 00:23:54.31\00:23:58.96 And do you wanna wait until the piloncillo if you 00:23:59.39\00:24:01.45 are using it, it's completely melt it and 00:24:01.46\00:24:05.14 then it's pretty much ready to serve but it's 00:24:05.15\00:24:07.12 gonna meet very, very hot. So what I do is if 00:24:07.13\00:24:10.08 I serve it right away plus it's gonna be little 00:24:10.25\00:24:13.42 bit sweet because it's gonna be kind of sweet 00:24:13.43\00:24:16.24 because of the piloncillo. So what I do is that I 00:24:16.25\00:24:18.44 actually serve it and then add a little bit soy 00:24:18.45\00:24:21.59 milk on top to diluted and also to cool down 00:24:21.60\00:24:24.98 a little bit and that way it's ready to drink. 00:24:24.99\00:24:27.05 So you can enjoy it right away. Yeah and this 00:24:27.15\00:24:29.24 is will be great for one of those cold nights 00:24:29.25\00:24:31.55 that you wanna just sit by the fire or 00:24:31.58\00:24:33.98 something, this will be perfect. 00:24:34.01\00:24:35.37 That sounds good. Yeah. Okay, so well it'll take 00:24:35.38\00:24:38.78 a little while for that piloncillo to melt down 00:24:38.79\00:24:41.48 won't it? Yeah. So when we come back may be 00:24:41.51\00:24:43.29 we can show at the end how it will look served 00:24:43.30\00:24:46.38 ready to go to drink. Okay, so we'll be 00:24:46.39\00:24:49.72 back to show you the finished product. 00:24:49.85\00:24:51.45 We hope you have enjoyed cooking with Maria 00:24:54.61\00:24:56.10 Ronquillo. We made the Guacamole first and it's 00:27:02.80\00:27:05.24 an excellent dish something that you can 00:27:05.25\00:27:06.97 use as to accompanying other foods as well 00:27:08.06\00:27:10.80 then we made our Mexican Taco meat in order 00:27:11.20\00:27:14.19 to make our Tacos. And our Taquitos that we 00:27:14.20\00:27:17.30 made nice and crunchy and low fat and low 00:27:17.31\00:27:20.78 in fat because they are not deep fried. 00:27:20.79\00:27:22.73 And then we made our Cactus Salad which is the 00:27:23.09\00:27:26.55 one thing that people are learning to eat, 00:27:26.56\00:27:29.08 yeah getting familiar with. And then at the 00:27:29.28\00:27:32.12 end of course we finished with our hot carob 00:27:32.19\00:27:35.54 Champurrado. And I've got my eye on that. 00:27:35.93\00:27:39.51 Well it looks very good for sure. Indeed it does. 00:27:39.52\00:27:42.15 Well I understand you are working on a 00:27:42.28\00:27:43.70 cookbook.
