We all like that type of recipe. 00:02:01.94\00:02:04.12 If you have the rice on hand, in your refrigerator, 00:02:04.15\00:02:06.73 which I usually try to have some rice 00:02:06.76\00:02:08.73 on hand in the refrigerator 00:02:08.76\00:02:10.13 because it always compliments meals really well. 00:02:10.16\00:02:12.63 Then you could prepare this meal in just minutes. 00:02:12.66\00:02:15.42 So I'm gonna show you how to make it. 00:02:15.45\00:02:16.82 First, let me show you a good way to prepare brown rice 00:02:16.85\00:02:21.36 and we do want to use brown rice, 00:02:21.39\00:02:23.83 there is a difference between brown rice and white rice. 00:02:23.86\00:02:27.50 And it's more than just the color, of course. 00:02:27.53\00:02:29.80 The process that the brown rice has to go through, 00:02:29.83\00:02:33.30 the milling process and the polishing removes 00:02:33.33\00:02:36.05 most of the B1, the B3-- Vitamin B1, vitamin B3, 00:02:36.08\00:02:40.23 the vitamin B6, 60% of the iron, 00:02:40.26\00:02:43.71 all of the fiber and all of the essential fatty acids. 00:02:43.74\00:02:47.44 So it makes this wonder 00:02:47.47\00:02:48.84 why we would want to eat the white rice. 00:02:48.87\00:02:50.24 We really want to try to eat the brown rice. 00:02:50.92\00:02:52.72 So they have taken away all the good things 00:02:52.75\00:02:54.30 and left you with the starch, right? 00:02:54.33\00:02:55.70 Yes, exactly. Okay. 00:02:55.73\00:02:57.18 So if you have a choice, choose brown rice. 00:02:57.21\00:02:59.80 It gives you a lot more than what the white rice does. 00:02:59.83\00:03:03.54 So this is a way that I think 00:03:03.57\00:03:05.01 is really good to prepare brown rice. 00:03:05.04\00:03:08.36 It makes it have a better flavor 00:03:08.39\00:03:10.76 and it also is much more easily digested by the body, 00:03:10.79\00:03:14.70 when you prepare it this way. Okay. 00:03:14.73\00:03:16.66 You take one cup of brown rice 00:03:16.69\00:03:19.02 and you spread it on a baking sheet. 00:03:19.05\00:03:22.53 And if you want to double the recipe, that's fine too. 00:03:22.56\00:03:25.70 Spread it on the baking sheet. 00:03:25.73\00:03:27.10 Spread it out, so it's in even layer 00:03:27.13\00:03:29.42 and then put it in your oven 00:03:29.45\00:03:31.48 at 200 degrees for about an hour. 00:03:31.51\00:03:35.44 And it will come out nicely brown, just golden brown. 00:03:35.47\00:03:40.30 And then once it's browned like that, 00:03:40.33\00:03:42.88 you cook it like you normally would cook rice. 00:03:42.91\00:03:45.21 In this case, where we have one cup of oven cooked rice, 00:03:45.24\00:03:51.23 we'll put it in 1 3/4 cup of boiling water, 00:03:51.26\00:03:55.80 put the lid on and don't touch it. 00:03:55.83\00:03:58.27 You know that. 00:03:58.30\00:03:59.67 It will make sticky rice, if you try to stir it. 00:03:59.70\00:04:02.15 We'll bring it to boil again and then turn it down to simmer. 00:04:02.18\00:04:06.57 And pretty soon you'll have nice fluffy rice 00:04:06.60\00:04:09.85 and you'll really be surprised 00:04:09.88\00:04:11.95 at how nice it turns out, won't you? 00:04:11.98\00:04:14.12 If you brown in the oven first. 00:04:14.15\00:04:16.68 So once we have our rice cooked, 00:04:16.71\00:04:21.45 we'll use two cups of the rice in our fiesta black beans, 00:04:21.48\00:04:25.21 two cups of the brown rice 00:04:25.24\00:04:28.64 and to that we'll add black beans. 00:04:28.67\00:04:32.28 I use 1 1/2 cups which is a can of black beans, 00:04:32.31\00:04:35.63 so it makes it easy, if you don't have time 00:04:35.66\00:04:37.91 to cook your own. 00:04:37.94\00:04:39.31 You know, so you really need to make the salad in a hurry, 00:04:39.34\00:04:41.41 but if you do want to cook your own. 00:04:41.44\00:04:42.99 They are wonderful in a crock pot. 00:04:43.02\00:04:44.68 It looks like you've rinsed and drained them. Yes. 00:04:44.71\00:04:46.78 We put them in a colander, 00:04:46.81\00:04:48.35 drained all of the juice off of them 00:04:48.38\00:04:50.86 and rinsed them a little. 00:04:50.89\00:04:52.31 So we put that in with the rice. 00:04:52.34\00:04:54.09 All right, you stir that. 00:04:54.12\00:04:56.95 Black beans are so good for us. 00:04:56.98\00:04:58.37 They are a good source of potassium 00:04:58.40\00:05:01.23 and magnesium and zinc and of course, 00:05:01.26\00:05:03.65 we know that all legumes are high in fiber, 00:05:03.68\00:05:06.34 low in fat and a good source of vitamins and minerals. 00:05:06.37\00:05:12.01 To the black beans and the rice, 00:05:12.04\00:05:14.02 we'll add 1 teaspoon of onion powder, 00:05:14.05\00:05:19.12 a half a teaspoon of garlic powder, 00:05:19.15\00:05:22.08 you could add some fresh garlic, if you like, 00:05:22.11\00:05:24.36 but that really make it a spicy salad. 00:05:24.39\00:05:27.01 And a quarter teaspoon of oregano 00:05:27.04\00:05:31.69 and a quarter teaspoon of paprika, 00:05:31.72\00:05:34.88 we'll mix that together and maybe I can mix that for you 00:05:34.91\00:05:38.85 and you can add our corn. All right. 00:05:38.88\00:05:42.00 We'll use 1½ cups of corn that we've drained. 00:05:42.03\00:05:45.27 It's best to use canned corn in this recipe. 00:05:45.30\00:05:48.66 It tastes better. We can see what the ingredients are here. 00:07:39.79\00:07:43.88 All right, the ingredients for the Tofu Sour Cream are. 00:07:43.91\00:07:47.82 You know, when you use sour cream, 00:08:02.40\00:08:05.09 you're adding a lot of fat to your diet. 00:08:05.12\00:08:08.37 So I thought we'd make another kind of sour cream 00:08:08.40\00:08:11.45 that doesn't add so much fat to the diet. 00:08:11.48\00:08:14.44 And we're gonna make it out of tofu. 00:08:14.47\00:08:16.57 The kind of tofu that we want to use is silken tofu. 00:08:16.60\00:08:20.08 So I brought the two different kinds of tofu 00:08:20.11\00:08:21.68 that you can get in the store here. 00:08:21.71\00:08:23.61 So that maybe you could see what the difference was 00:08:23.64\00:08:26.97 and you would know which one to get. 00:08:27.00\00:08:29.25 This kind that is in the box 00:08:29.28\00:08:31.92 that you can't see the tofu is the silken tofu 00:08:31.95\00:08:36.32 and that's the kind that we need 00:08:36.35\00:08:38.23 to use in this recipe, the silken tofu. 00:08:38.26\00:08:40.72 The other kind that's water packed 00:08:40.75\00:08:42.77 and it has an opaque covering 00:08:42.80\00:08:45.29 or you can barely see the tofu through it, 00:08:45.32\00:08:48.07 is not silken tofu and you would use it more for a stir fry 00:08:48.10\00:08:53.53 or burgers or something that you need a firm tofu with. 00:08:53.56\00:08:59.25 But if you're wanting to make any type of a sauce 00:08:59.28\00:09:01.76 or anything creamy, 00:09:01.79\00:09:03.58 and if you're gonna use it in the blender, 00:09:03.61\00:09:05.46 then you want to use this silken tofu. 00:09:05.49\00:09:07.73 It works best. 00:09:07.76\00:09:09.95 One thing I really like about silken tofu 00:09:09.98\00:09:12.32 is that it has a long shelf life. 00:09:12.35\00:09:14.74 You don't have to keep it in the refrigerator 00:09:14.77\00:09:16.91 and so you can buy a bunch ahead a time 00:09:16.94\00:09:19.29 and have them on hand when you need them. 00:09:19.32\00:09:20.88 When you want to make the fiesta black beans 00:09:20.91\00:09:22.46 with tofu sour cream. Yes. 00:09:27.25\00:09:29.98 And then to that we will add 00:09:30.01\00:09:34.03 one 1/4 cup of water. 00:09:34.06\00:09:40.05 Quarter cup of water in there. 00:09:40.08\00:09:41.83 One teaspoon of salt, 00:09:41.86\00:09:45.51 one 1/4 teaspoon of onion powder, 00:09:45.54\00:09:50.21 a 1/4 teaspoon of garlic powder, 00:09:50.24\00:09:52.39 I'm sorry, 1/8th teaspoon of a garlic powder 00:09:52.42\00:09:55.53 and 1/8th of a cup of lemon juice 00:09:55.56\00:09:58.61 and if you want to add a little zinc to your tofu sour cream, 00:09:58.64\00:10:01.53 make a little more sour, 00:10:01.56\00:10:02.93 you can add up to a 1/4 cup of lemon juice 00:10:02.96\00:10:05.74 and it tastes good. 00:10:05.77\00:10:07.14 Tastes really good. Yes. 00:10:07.17\00:10:08.54 And then we want to blend it. Let's see, turn it on, blend it. 00:10:08.57\00:10:12.27 Turn it on high speed and get it done quick. Okay. 00:12:09.14\00:12:10.60 This recipe starts off with 1 ½ cups of garbanzos. 00:12:10.63\00:12:14.57 If you are really in a hurry you can use canned garbanzos 00:12:14.60\00:12:16.90 or you can cook them yourself. 00:12:16.93\00:12:19.19 And to that, we will add 1 cup of canned artichoke hearts. 00:12:19.22\00:12:24.21 We've cut them into quarters to make them easy to eat. 00:12:24.24\00:12:27.54 We just love to put beans into salad 00:12:27.57\00:12:29.94 because they are so good for us, 00:12:29.97\00:12:31.84 high in fiber and high in protein 00:12:31.87\00:12:33.86 and minerals and vitamins. 00:12:33.89\00:12:36.88 We will add to that some cucumber. 00:12:36.91\00:12:41.08 I have taken this cucumber and I have cut it lengthwise, 00:12:41.11\00:12:43.94 twice and then into slices, so that they are bite size. 00:12:43.97\00:12:49.71 Add that one small cucumber and half a cup of diced olives. 00:12:49.74\00:12:55.19 Sometimes I like to cut the olives lengthwise 00:12:55.22\00:12:58.17 and I think that is pretty for a Greek Salad. 00:12:58.20\00:13:01.77 Then we need to use some firm tofu in this. 00:13:01.80\00:13:06.16 This is different than the silken tofu. 00:13:06.19\00:13:07.70 The silken tofu, like I said is the kind 00:13:07.73\00:13:09.45 that you would use, if you were blending it, 00:13:09.48\00:13:11.69 but we want some-- This is the water packed. 00:13:11.72\00:13:13.49 This is the water packed. 00:13:13.52\00:13:16.25 It's the kind that you can see the tofu through the top. 00:13:16.28\00:13:22.59 Now I'll take the tofu and it comes in a pound. 00:13:22.62\00:13:27.60 So I cut off a 1/4 pound and I take it 00:13:27.63\00:13:30.90 and I put it in a towel and wrap it up 00:13:30.93\00:13:36.22 and squeeze the extra water out and that will give it-- 00:13:36.25\00:13:39.29 The towel will absorb it. Right. 00:14:28.07\00:14:30.51 But this is more in line with the Greek salad. 00:14:30.54\00:14:34.64 Okay, now let's first-- we'll add that. 00:14:34.67\00:14:38.53 Now that we've seasoned the tofu nicely, 00:14:38.56\00:14:42.32 we will add that to our garbanzos 00:14:42.35\00:14:45.42 and our vegetables and stir that together 00:14:45.45\00:14:50.76 and then we can start assembling our salad on the plate. 00:14:50.79\00:14:55.63 That looks really good, wonderful. All right. 00:18:34.83\00:18:36.20 We start with the blanched almonds 00:18:36.23\00:18:38.56 and almonds are just so good for us. 00:18:38.59\00:18:40.46 All nuts have very beneficial fat in them. 00:18:40.49\00:18:43.57 Almonds especially are good for us. 00:18:43.60\00:18:46.18 A 1/4 cup serving has 40% of the daily need for vitamin E, 00:18:46.21\00:18:53.69 24% of the daily need for magnesium 00:18:53.72\00:18:57.45 and 20% of the daily need for vitamin B2. 00:18:57.48\00:19:01.23 I had read that they are the most nutritious. 00:19:01.26\00:19:03.32 Now how do you blanch them? 00:19:03.35\00:19:05.16 Well, I take a pan, put water in it, 00:19:05.19\00:19:08.92 bring the water to a boil, put the almonds in the water 00:19:08.95\00:19:13.23 and bring it to a boil again 00:19:13.26\00:19:14.97 and let it boil just for a few seconds, 00:19:15.00\00:19:17.62 maybe 10 or 15 seconds and then pour it out 00:19:17.65\00:19:21.29 into a colander is the easiest way, 00:19:21.32\00:19:23.18 so you catch the almonds, 00:19:23.21\00:19:24.62 rinse that a little bit with cold water 00:19:24.65\00:19:26.02 so they are easy to handle and then the skin 00:19:26.05\00:19:28.59 just slip right off the almonds. 00:19:28.62\00:19:30.94 Quick and easy way to do it.
