That sounds wonderful. 00:02:25.99\00:02:27.49 Yes, let's make lentil loaf. Okay. 00:02:27.52\00:02:30.22 Well, let me share that recipe with you. All right. 00:02:30.25\00:02:31.94 Well, I can read the recipe for you. 00:02:31.97\00:02:34.13 For lentil loaf ingredients are: 00:02:34.16\00:02:35.62 I think that lentil loaf is such a wonderful dish 00:02:57.48\00:03:01.09 because it uses the legumes that are so good for us. 00:03:01.12\00:03:04.97 Legumes are such a--you know, lentils are legume 00:03:05.00\00:03:07.22 and they are such a valuable part of healthy diet 00:03:07.25\00:03:09.73 because they are high in fiber, they are low in fat, 00:03:09.76\00:03:13.48 they are full of minerals like, 00:03:13.51\00:03:15.56 lentils are specially high in zinc and it's just 00:03:15.59\00:03:19.39 a great--legumes are great product to use. 00:03:19.42\00:03:23.20 So I'm excited that we can make our lentil loaf here. 00:03:23.23\00:03:25.85 Isn't that good we have such a wonderful flavor to lentil. 00:03:25.88\00:03:28.86 Yes, they do and they are very versatile. 00:03:28.89\00:03:30.53 So we're just gonna show you one way today 00:03:30.56\00:03:32.29 that we can use them. 00:03:32.32\00:03:33.69 But before we, we start mixing anything, 00:03:33.72\00:03:36.27 those the leftover onion that you had, let saute it. 00:03:36.30\00:03:39.70 Because a lot of times onions taste a little better sauteed. 00:03:39.73\00:03:43.79 Sometimes they are kind of strong if you put in a dish 00:03:43.82\00:03:46.48 without sauteing will reverse it. 00:03:46.51\00:03:47.88 Don't you love that aroma that makes through your whole heart. 00:03:47.91\00:03:49.74 They make everything taste better. 00:03:49.77\00:03:51.84 So we put the onion in here. 00:03:51.87\00:03:54.94 We're using 00:03:54.97\00:03:58.00 one half of a small onion but, 00:03:58.03\00:04:00.97 you know, if you like more onion 00:04:01.00\00:04:02.37 you can use more onion or less if you want to use less. 00:04:02.40\00:04:05.29 Now while we're waiting for those to saute, 00:04:05.32\00:04:08.18 let's use the lentils--we got two and half cups 00:04:08.21\00:04:12.44 of your leftover lentils here. 00:04:12.47\00:04:14.27 We're gonna put them in a bowl. 00:04:14.30\00:04:16.59 For this recipe it's very important 00:04:16.62\00:04:18.75 that your lentils are dry. 00:04:18.78\00:04:21.41 So if you haven't cooked your lentils to be dry, 00:04:21.44\00:04:25.91 then you can use one of these strainers and pour your lentils 00:04:25.94\00:04:30.67 preferably hot lentils into the strainer 00:04:30.70\00:04:33.76 and let it sit on a dish for a while 00:04:33.79\00:04:36.01 and the liquid will drain out, 00:04:36.04\00:04:38.08 so that you end up with dry lentils. 00:04:38.11\00:04:39.72 Okay. If you don't use dry lentils, 00:04:39.75\00:04:41.27 you probably have lentil casserole in that lentil loaf 00:04:41.30\00:04:44.48 but it would still taste good. 00:04:44.51\00:04:45.88 Well, that's a good tip to know. 00:04:45.91\00:04:47.69 Okay, since we're trying to make lentil loaf well. 00:04:47.72\00:04:49.97 Yeah, you wouldn't want it to be too wet. 00:04:50.00\00:04:51.86 Right. So we have-- and if you do want to, 00:04:51.89\00:04:54.55 if you don't have leftover lentils 00:04:54.58\00:04:55.95 and you still want to make this recipe, 00:04:55.98\00:04:57.54 you can always start from scratch. 00:04:57.57\00:04:59.28 You use two and a quarter cups of water 00:04:59.31\00:05:01.27 with one cup of lentils, dry lentils 00:05:01.30\00:05:04.47 that you buy in a bag from the grocery store. 00:05:04.50\00:05:06.76 So if the lentils through take out any debris, 00:05:06.79\00:05:10.30 stones things like that. 00:05:10.33\00:05:11.95 Wash them in a colander, you know 00:05:11.98\00:05:13.59 all this because you cook the lentils. 00:05:13.62\00:05:15.14 And-- 00:05:15.17\00:05:17.49 when you cook them on a stove 00:05:17.52\00:05:19.76 with one cup of cooked lentils 00:05:19.79\00:05:21.90 to two and a quarter cups of water 00:05:21.93\00:05:23.41 and you end up with some very dry lentils 00:05:23.44\00:05:26.22 that's perfect for the lentil loaf. 00:05:26.25\00:05:27.62 Or like we said before you can do it in a crock pot. 00:05:27.65\00:05:29.20 Right, and then just drain them. 00:05:29.23\00:05:31.13 Okay. Okay, so we have our lentils 00:05:31.16\00:05:34.89 and we took that old stale bread 00:05:34.92\00:05:37.99 that nobody wanted to eat and we made into bread crumbs. 00:05:38.02\00:05:42.29 Now we're going to mix that. 00:05:42.32\00:05:45.15 One in three quarters cup of bread crumbs 00:05:45.18\00:05:47.74 and we're going to mix that into the lentils. 00:05:47.77\00:05:51.15 Our onions are still sauteing so we will add our seasonings. 00:05:51.18\00:05:55.78 A half of a teaspoon of basil, 00:05:55.81\00:05:58.81 half a teaspoon of garlic powder, 00:05:58.84\00:06:03.05 half of the teaspoon of oregano, 00:06:03.08\00:06:06.99 two teaspoons of salt and we'll mix that up. 00:06:07.02\00:06:13.10 Maybe I let you mix that while I check on our onions. 00:06:13.13\00:06:16.94 Well, these bread crumbs would have absorbed 00:06:16.97\00:06:18.75 some of the moisture too. Yes. 00:06:18.78\00:06:20.50 That's one reason for the bread crumbs, 00:06:20.53\00:06:22.66 it makes it a firm loaf. 00:06:22.69\00:06:26.78 Our onions are just about done of course 00:06:26.81\00:06:29.54 sometimes--few times I have put raw onions 00:06:29.57\00:06:32.36 in the lentil loaf and it still tasted good. 00:06:32.39\00:06:35.15 But I always think it taste better 00:06:35.18\00:06:36.55 when you saute them first. 00:06:36.58\00:06:38.10 So I think they are looking good here. 00:06:38.13\00:06:41.44 We're always trying to find more ways to add legumes 00:06:41.47\00:06:45.76 to our diet and I think that lentil loaf is a, is a good one. 00:06:45.79\00:06:51.25 We put our half of a small onion in there and stir that up. 00:06:51.28\00:06:56.61 This is a very thick mixture. I sometimes-- 00:06:56.64\00:06:59.30 That's why they're so good. 00:06:59.33\00:07:00.73 Oh, good. 00:07:00.76\00:07:02.34 Sometimes I have my son 00:07:02.37\00:07:03.74 do the stirring on this one for me because 00:07:03.77\00:07:06.04 it's supposed to be stiff. 00:07:06.07\00:07:07.57 You want it really, really stiff. 00:07:07.60\00:07:12.31 Let's add now our six ounces of tomato paste. 00:07:12.34\00:07:16.95 Okay. Here we go. 00:07:16.98\00:07:19.55 I guess I need to use your spoon. 00:07:19.58\00:07:21.65 Six ounces of tomato paste and that's how it comes 00:07:21.68\00:07:23.92 in the can in the store, six ounces. 00:07:23.95\00:07:26.97 And what I've found once it gets to this texture, 00:07:27.00\00:07:30.54 this big fork works really well 00:07:30.57\00:07:34.43 because you must have to cut it in. 00:07:34.46\00:07:37.69 Mash it through it. Right. 00:07:37.72\00:07:42.96 And then we're going to use 00:07:42.99\00:07:44.36 your leftover tomato sauce for the topping of our lentil loaf 00:07:44.39\00:07:52.13 and it makes it very beautiful dish. 00:07:52.16\00:07:54.41 And I'm sure you've heard about 00:07:54.44\00:07:56.62 all the good health benefits with tomatoes. 00:07:56.65\00:08:00.58 They have lycopene in them which is an antioxidant. 00:08:00.61\00:08:05.22 A lot of vitamin C too. 00:08:05.25\00:08:06.62 Yes, a lot of vitamin C. 00:08:06.65\00:08:08.02 Did you know that tomatoes had calcium in them? 00:08:08.05\00:08:10.52 No, I don't think I did. 00:08:10.55\00:08:11.92 I think that's so interesting how God 00:08:11.95\00:08:13.99 put calcium not just in a few little things 00:08:14.02\00:08:17.25 but many, many things. 00:08:17.28\00:08:19.56 Oranges have calcium in them. 00:08:19.59\00:08:21.37 Of course we know that greens are good source of calcium, 00:08:21.40\00:08:25.93 specially, kale and things like that. 00:08:25.96\00:08:31.19 But even tomatoes have a little bit of calcium in them. 00:08:31.22\00:08:36.55 So once we get this, this always-- 00:08:36.58\00:08:39.17 when it gets to this point it always reminds 00:08:39.20\00:08:40.57 me of when I was little 00:08:40.60\00:08:43.35 my mom used to make meat loaf 00:08:43.38\00:08:44.83 and it looks like meat loaf, it's like orange--orange look. 00:08:44.86\00:08:49.30 As you mix it, like I said a very thick mixture 00:08:49.33\00:08:52.90 and you want to really, really work it in there. 00:08:52.93\00:08:58.58 Chop up the tomato paste in with the lentils really well. 00:08:58.61\00:09:04.13 Then when you had it all mixed up, 00:09:04.16\00:09:06.14 then you need to choose 00:09:06.17\00:09:07.54 what shape you want your lentil loaf to be in. 00:09:07.57\00:09:10.97 I like about this size pan, I like to make two of these 00:09:11.00\00:09:15.12 and have very small pieces of lentil loaf 00:09:15.15\00:09:17.40 and then drizzle the tomato sauce on top. 00:09:17.43\00:09:19.45 This recipe will make two of these pans. 00:09:19.48\00:09:23.38 If you want to use a larger pan, you could do that or you could 00:09:23.41\00:09:28.69 fill this pan up really high 00:09:28.72\00:09:31.09 and so you have a taller lentil loaf. 00:09:31.12\00:09:34.19 So let's put-- I guess which way 00:09:34.22\00:09:36.07 you did it determined how long you would bake them? 00:09:36.10\00:09:38.52 It really bakes varies just by a few minutes. 00:09:38.55\00:09:41.97 So it does really well. 00:09:42.00\00:09:44.13 At home of course for time we didn't mix this as well, 00:09:44.16\00:09:48.24 plus it's really a tough mixture but at home 00:09:48.27\00:09:51.21 you want to mix this just a little bit better 00:09:51.24\00:09:53.02 until it's really orange looking actually. 00:09:53.05\00:09:56.45 We'll pad it in there. 00:09:56.48\00:09:59.05 Another little trick you can use once you get this 00:09:59.08\00:10:01.57 all in there is you can take some plastic wrap 00:10:01.60\00:10:06.12 and put it over the top and smash it down right 00:10:06.15\00:10:10.18 it makes a very smooth top. 00:10:10.21\00:10:13.68 You will want to make sure 00:10:13.71\00:10:15.08 that you really pack it in there tightly 00:10:15.11\00:10:17.36 so that when you cut your loaf, its firm. 00:10:17.39\00:10:20.80 Yeah, it won't crumble that way. 00:10:20.83\00:10:23.24 Right, right. All right, 00:10:23.27\00:10:26.66 well, we've got it in there so now what we want to do 00:10:26.69\00:10:30.34 is put it in the oven and we'll bake it for about 40 minutes 00:10:30.37\00:10:36.14 for this size, up to 50 minutes for a larger size loaf. 00:10:36.17\00:10:42.30 We can also--after 40 minutes we can take it out of the oven 00:10:42.33\00:10:47.14 and put the tomato sauce on top and then put it in the oven 00:10:47.17\00:10:52.35 for a few more minutes to let the, the sauce bake in with 00:10:52.38\00:10:55.42 the lentil loaf and that's really good. 00:10:55.45\00:10:57.51 So it's a very--as you can see it's a very flexible dish 00:10:57.54\00:10:59.87 because you have leftover corn bread and you have 00:10:59.90\00:11:02.85 leftover wheat bread and we just used both. 00:11:02.88\00:11:05.61 Whatever you have, whatever bread crumbs 00:11:05.64\00:11:07.44 you have available works fine. 00:11:07.47\00:11:10.09 And we'll have how much onion you like works fine 00:11:10.12\00:11:14.15 and so it's a versatile dish. 00:11:14.18\00:11:16.33 Well, let me get the finished product so everyone can see. 00:11:16.36\00:11:19.34 Oh, it looks so good. 00:11:19.37\00:11:26.04 That's lovely. 00:11:26.07\00:11:29.21 It is and it's very good for you. 00:11:29.24\00:11:30.64 We know that lentils are like I said are good source of zinc 00:11:30.67\00:11:33.22 but they are also a good source of iron, 00:11:33.25\00:11:35.42 just a really healthful main dish. 00:11:35.45\00:11:37.55 Now this dish will go really well with brown rice or potatoes 00:11:37.58\00:11:42.76 with a salad and if you have leftovers of the lentil loaf 00:11:42.79\00:11:47.11 which is unlikely, then you can serve 00:11:47.14\00:11:49.72 them cold on a sandwich with some type of a-- 00:11:49.75\00:11:52.31 Oh, yes, it will make a good sandwich, wouldn't that? 00:11:52.34\00:11:53.71 Yes. We're gonna get some good aroma 00:14:08.77\00:14:10.52 is going here when you left to sauteing. 00:14:10.55\00:14:12.48 Now if you don't have mashed potatoes, 00:14:12.51\00:14:13.95 if you just have like boiled potatoes for leftovers, 00:14:13.98\00:14:17.41 you can always smash them 00:14:17.44\00:14:18.81 and they work fine in this recipe too. 00:14:18.84\00:14:20.93 So it's versatile. Gives things. 00:14:39.77\00:14:41.14 Yes, and very good for you. 00:14:41.17\00:14:42.99 It's an excellent antioxidant. 00:14:43.02\00:14:45.19 So I like to add more garlic 00:14:45.22\00:14:46.59 into our food whenever we can. 00:14:46.62\00:14:50.49 Now the vegetables. 00:14:50.52\00:14:52.58 The recipe says vegetables, 00:14:52.61\00:14:54.97 so again whatever you have the thing that I think 00:14:55.00\00:14:58.68 the type of vegetables that I think taste better 00:14:58.71\00:15:00.91 in this recipe are carrots and broccoli 00:15:00.94\00:15:06.26 but experiment and use the type of vegetables 00:15:06.29\00:15:09.24 you have on hand you may like it. 00:15:09.27\00:15:11.22 Another advantage to this recipe besides using leftovers 00:15:11.25\00:15:15.90 is that you can chop of these vegetables really, really small 00:15:15.93\00:15:19.58 and it's a good way to get your vegetable 00:15:19.61\00:15:21.27 hated child to eat vegetables. 00:15:21.30\00:15:23.78 Fool them. Yes. If you--I've done it in a food processor 00:15:23.81\00:15:27.39 where they are just little pieces and you hardly 00:15:27.42\00:15:29.76 see them in there and they gobble them up.
