Sandwich to go with it too. 00:01:33.15\00:01:34.66 Sandwich too. Yes. 00:01:34.69\00:01:36.20 Okay. Well, let me read the ingredients for you. 00:01:36.23\00:01:39.59 The ingredients for Potato Corn Chowder are. 00:01:39.62\00:01:42.19 You know, some people think that potatoes 00:02:19.37\00:02:21.31 are really fattening, but they're not at all. 00:02:21.34\00:02:23.52 Potatoes don't even have any fat in them at all, 00:02:23.55\00:02:25.97 and of course, they don't have any cholesterol in them 00:02:26.00\00:02:27.87 because they're a plant food. 00:02:27.90\00:02:29.84 So we're gonna make a very healthful dish here. 00:02:29.87\00:02:34.58 We're gonna start with 1½ cups of water 00:02:34.61\00:02:39.01 or vegetable broth or you can even use the liquid 00:02:39.04\00:02:43.35 that you drain off with the corn, 00:02:43.38\00:02:44.75 it gives it really nice flavor. 00:02:44.78\00:02:46.76 So we pour 1½ cups of vegetable broth in there 00:02:46.79\00:02:52.71 and turn the burner on. 00:02:52.74\00:02:54.67 And we'll add 1 medium onion that we've diced up, 00:02:54.70\00:02:58.23 and I really like onions. 00:02:58.26\00:03:00.65 And then 2 stalks of celery that we've diced up. 00:03:00.68\00:03:04.53 I like them diced up pretty fine, 00:03:04.56\00:03:06.30 that way they don't overpower the soup. 00:03:06.33\00:03:10.76 And we will add some seasonings to that. 00:03:10.79\00:03:14.58 1 teaspoon of onion powder, 00:03:14.61\00:03:19.68 ½ teaspoon of garlic powder, 00:03:19.71\00:03:23.82 ½ teaspoon of paprika, 00:03:23.85\00:03:28.33 and ½ teaspoon of savory, if you have it, 00:03:28.36\00:03:30.77 it tastes good without it too, 00:03:30.80\00:03:33.27 and 1 tablespoon of dried parsley. 00:03:33.30\00:03:37.56 And to that, we will add our diced potatoes. 00:03:37.59\00:03:41.89 We need 2 diced potatoes in this dish in the soup. 00:03:41.92\00:03:48.72 And we want to get this cooking 00:03:48.75\00:03:52.93 and we want to bring it to a boil 00:03:52.96\00:03:56.50 and then cover it and let it simmer 00:03:56.53\00:04:00.08 until all of the potatoes and all the vegetables 00:04:00.11\00:04:02.88 in there are nice and tender. 00:04:02.91\00:04:04.28 Nice and tender. Yes. 00:04:04.31\00:04:05.88 And then when they're tender 00:04:05.91\00:04:07.28 then we'll add some bell pepper to it. 00:04:07.31\00:04:09.76 Now you can use green bell pepper, if you like, 00:04:09.79\00:04:12.23 but I really like red bell pepper, 00:04:12.26\00:04:13.83 it makes it look like a real chowder. It's really pretty. 00:04:13.86\00:04:17.00 So after all the vegetables are tender, 00:04:17.03\00:04:20.08 we'll add our red bell pepper, 00:04:20.11\00:04:23.30 we use half off the cup of that. 00:04:23.33\00:04:26.34 And then we add also 2 cups of corn. 00:04:26.37\00:04:28.21 Now you notice the recipe called for 4 cups, 00:04:28.24\00:04:30.20 but we're only gonna add 2 cups right now, 00:04:30.23\00:04:32.60 and that's because we're going to blend the corn, 00:04:32.63\00:04:37.75 the rest of the corn in the blender with our soymilk. 00:04:37.78\00:04:41.46 We have 2 cups of corn that we add to the blender 00:04:41.49\00:04:48.41 and our soymilk. And we'll put the-- 00:04:48.44\00:04:55.12 Jennifer, we want to put the lid up. 00:04:55.15\00:04:56.52 Yes, nice and tight. Okay. 00:04:56.55\00:04:58.99 It's a tight fitting lid. 00:04:59.02\00:05:00.58 And we'll blend that up until it's fairly smooth, 00:05:00.61\00:05:03.12 it's hard to get the corn really, 00:05:03.15\00:05:05.16 really smooth that we wanted. Well, well, blended. 00:05:05.19\00:05:08.61 And you probably at home who want to blend it 00:05:14.63\00:05:16.84 more than that till it's nice and smooth. 00:05:16.87\00:05:21.48 And we will add that 00:05:21.51\00:05:23.58 to our soup. 00:05:23.61\00:05:30.84 Stir our soup. I think our burner's a little bit slow. 00:05:30.87\00:05:33.80 And of course, you want to wait until the vegetables 00:05:33.83\00:05:36.06 are nice and tender before we add this. 00:05:36.09\00:05:38.96 And then you stir this into it. 00:05:38.99\00:05:43.86 And you'll heat it now, but a lot of soymilks 00:05:43.89\00:05:48.99 will curdle if you let it boil, 00:05:49.02\00:05:50.95 so it's good to not let it for boil. 00:05:50.98\00:05:52.64 Just to kind of put that in at the last minute then. 00:05:52.67\00:05:54.08 Right, right. 00:05:54.11\00:05:55.48 And then the last thing we'll add is our salt. 00:05:55.51\00:05:57.33 And the reason why we add this last is 00:05:57.36\00:05:59.21 because people's taste are different, 00:05:59.24\00:06:01.21 sometimes you like little more, little less 00:06:01.24\00:06:02.84 and depends-- depends on your taste. 00:06:02.87\00:06:05.94 So, but I usually add about a teaspoon of salt. 00:06:05.97\00:06:09.87 I wanna just let it heat 00:06:09.90\00:06:11.46 and the flavors will blend together 00:06:11.49\00:06:15.18 and potatoes are such a nutritious food, 00:06:15.21\00:06:18.27 they're full of minerals and full of B vitamins. 00:06:18.30\00:06:21.43 And of course, like I said, 00:06:21.46\00:06:22.83 "They don't have any fat in them." 00:06:22.86\00:06:24.48 But I don't think most people realize 00:06:24.51\00:06:27.51 how low they are in calories. 00:06:27.54\00:06:28.93 They're only about 100 calories for-- 00:06:28.96\00:06:31.11 Do they even have protein in them? 00:06:31.14\00:06:32.61 They do. Because someone told me once-- 00:06:32.64\00:06:34.11 They do. Isn't that amazing? 00:06:34.14\00:06:35.93 You won't think of potatoes as a protein food. 00:06:35.96\00:06:38.09 And so you don't need to worry about getting enough protein. 00:06:38.12\00:06:39.79 Oh, yes. It's in all kinds of things. 00:06:39.82\00:06:41.76 So it's a very simple. It is simple. 00:06:41.79\00:06:44.04 They're very hardy, colorful and-- 00:06:44.07\00:06:46.22 It is colorful. It's very beautiful when it's done. 00:06:46.25\00:06:49.23 I know, it has to be a delicious. Yes. 00:06:49.26\00:06:53.16 Another good thing about potatoes is 00:06:53.19\00:06:54.56 they're very satisfying. 00:06:54.59\00:06:55.96 They've highest of tidy level, 00:06:55.99\00:06:57.89 so you can eat a bowl of potato corn chowder 00:06:57.92\00:07:01.01 and don't feel very satisfied. 00:07:01.04\00:07:03.95 Well, let's take a look at the finished product. Okay. 00:07:03.98\00:07:08.76 Oh, here it is, isn't that lovely? 00:07:08.79\00:07:10.47 It is beautiful. 00:07:10.50\00:07:11.87 I think it's a really pretty dish 00:07:11.90\00:07:13.27 especially with the red bell peppers in them. 00:07:13.30\00:07:15.53 In fact, pretty enough to serve for company 00:07:15.56\00:07:17.45 and quick enough to serve for unexpected company. 00:07:17.48\00:07:20.58 We all appreciate having some recipes like that. Yeah. 00:07:20.61\00:07:23.14 And what else are we gonna be serving. 00:07:23.17\00:07:24.86 Well, I think the chowder needs a sandwich to go with it. 00:07:24.89\00:07:27.56 That sounds good. Yes. 00:07:27.59\00:07:28.96 So we'll make veggie delight sandwich. 00:07:28.99\00:07:30.37 Well, let me read you the ingredients. 00:07:30.40\00:07:32.48 Okay. Well, 00:08:02.89\00:08:04.26 the veggie delight sandwich 00:08:04.29\00:08:05.66 is a very quick one to make. 00:08:05.69\00:08:07.50 We'll start with some olive oil. 00:08:07.53\00:08:09.15 I only need 1 tablespoon of olive oil in the pan 00:08:09.18\00:08:12.38 because you're not sautéing it for very long. 00:08:12.41\00:08:15.15 And then we'll add a third cup of diced broccoli. 00:08:15.18\00:08:18.37 And you see that it's very finely diced 00:08:18.40\00:08:20.73 because we want little tiny bite size pieces. 00:08:20.76\00:08:23.70 You can even do it in your food processor. 00:08:23.73\00:08:26.08 Oh, really? We have to be little careful with that, wouldn't you? 00:08:26.11\00:08:28.77 Yes, you have to-- you want it really small 00:08:28.80\00:08:31.37 because it makes the flavors blend together well. 00:08:31.40\00:08:34.15 Then we'll add ½ cup of shredded carrot. 00:08:34.18\00:08:39.55 And then I like to add yellow summer squash, 00:08:39.58\00:08:42.59 but sometimes it's not available. 00:08:42.62\00:08:44.27 So you can substitute red cabbage 00:08:44.30\00:08:47.30 or zucchini or any other kind of vegetable. 00:08:47.33\00:08:50.38 The idea here is to keep it very colorful, yes. 00:08:50.41\00:08:55.68 And then some onion that I've cut into like slivers 00:08:55.71\00:09:02.34 and that goes it a good taste. 00:09:02.37\00:09:04.18 We're gonna stir it up and let them sauté nicely. 00:09:04.21\00:09:08.75 We want them to be tender, not mushy but tender. 00:09:08.78\00:09:13.58 And then if you find that you like the vegetables 00:09:13.61\00:09:16.76 to be a little softer than the sautéing allows, 00:09:16.79\00:09:21.36 you could add a little bit of water to it. 00:09:21.39\00:09:23.28 It just vary like a tablespoon of salt water 00:09:23.31\00:09:25.57 if you want them to be more tender than this. 00:09:25.60\00:09:29.20 Then after they're just the right tenderness. 00:09:29.23\00:09:33.78 Looks so colorful. It is. It is just beautiful. 00:09:33.81\00:09:37.26 Then we'll remove it from the heat 00:09:37.29\00:09:39.50 and we'll add our seasonings. 00:09:39.53\00:09:41.93 We have ½ of the teaspoon of onion powder 00:09:41.96\00:09:46.07 and ½ teaspoon of salt. 00:09:46.10\00:09:48.70 You could use less if you're trying to lock yourself, 00:09:48.73\00:09:51.78 and then ½ teaspoon of nutritional yeast, 00:09:51.81\00:09:53.46 which is optional. 00:09:53.49\00:09:54.86 Sometimes it's difficult to find nutritional yeast 00:09:54.89\00:09:57.39 which is different than brewers yeast. 00:09:57.42\00:09:59.96 We'll put in the nutritional yeast. 00:09:59.99\00:10:01.79 It's just adds sort of a nutty flavor. Is it nutty or-- 00:10:01.82\00:10:04.60 Kind of nutty, kind of cheesy. 00:10:04.63\00:10:06.69 Cheesy, yes. 00:10:06.72\00:10:08.09 And then I have a 1/4 teaspoon of basil. 00:10:08.12\00:10:10.83 I really like in this recipe especially, 00:10:10.86\00:10:13.35 to crush the basil between my finger tips 00:10:13.38\00:10:15.74 before I add it because it really releases 00:10:15.77\00:10:18.27 the flavor of the basil. Yes. 00:10:18.30\00:10:21.60 It's a nice tip. 00:10:21.63\00:10:23.00 And we'll mix the seasonings in 00:10:23.03\00:10:25.82 and add our 2 tablespoons of lemon juice 00:10:25.85\00:10:30.56 and 2 tablespoons of olives. 00:10:30.59\00:10:32.24 And those last 2 ingredients are the key 00:10:32.27\00:10:34.39 to making this not a stir-fry, but a sandwich. 00:10:34.42\00:10:37.07 You'll just be really amazed and delighted 00:10:37.10\00:10:39.67 and the taste that it will give you 00:10:39.70\00:10:41.89 in your sandwich. Sounds great. 00:11:31.95\00:11:35.32 The ingredients for Good-For-You Tomato Soup are: 00:11:35.35\00:11:38.72 The first ingredient in our 00:12:00.63\00:12:02.00 Good-For-You Tomato Soup is cashews. 00:12:02.03\00:12:04.64 Cashews are so good for you. 00:12:04.67\00:12:06.31 They have the same monounsaturated fat 00:12:06.34\00:12:08.81 that olive oil does. Oh, really? 00:12:08.84\00:12:10.62 Yes, they are very nutritious. 00:12:10.65\00:12:12.62 They also are good source of the zinc 00:12:12.65\00:12:14.77 and a good source of magnesium. 00:12:14.80\00:12:17.09 So--and of course, again they're cholesterol free 00:12:17.12\00:12:19.45 because they're plant product. 00:12:19.48\00:12:21.91 We'll put the cashews in the blender, 00:12:21.94\00:12:23.89 ½ cup raw cashews. 00:12:23.92\00:12:26.66 And now we want to add 3/4 cup of water to the blender. 00:12:26.69\00:12:33.05 Now what cashews do for this recipe is it gives-- 00:12:33.08\00:12:36.41 they give it a creamy consistency 00:12:36.44\00:12:38.38 without adding refined fats or any bad fats to it. 00:12:38.41\00:12:42.44 Again the cashews have that good fat in them, 00:12:42.47\00:12:44.72 so make it nice and creamy. 00:12:44.75\00:12:46.92 Then we'll put in some onion powder, 00:12:46.95\00:12:50.32 1 teaspoon or 1 tablespoon of onion powder 00:12:50.35\00:12:53.68 and 1 tablespoon of nutritional yeast 00:12:53.71\00:12:55.40 and the nutritional yeast is optional. 00:12:55.43\00:12:57.88 My children love the nutritional yeast 00:12:57.91\00:12:59.89 and the tomato soup 'cause they say 00:12:59.92\00:13:01.29 it makes it tastes cheesy. 00:13:01.32\00:13:02.69 So they really like that. 00:13:02.72\00:13:04.26 1/4 of a teaspoon of dried basil, 00:13:04.29\00:13:09.71 ½ teaspoon of salt. 00:13:09.74\00:13:12.19 You will--you may need to vary the amount of salt 00:13:12.22\00:13:14.55 depending on how much salt is in your tomatoes. 00:13:14.58\00:13:17.12 And a pinch of oregano 00:13:17.15\00:13:19.58 and a pinch of garlic powder 00:13:19.61\00:13:22.71 and another optional ingredient is honey. 00:13:22.74\00:13:25.75 We do like little bit of sweet taste, 00:13:25.78\00:13:27.71 not much just a little bit of honey in it, 00:13:27.74\00:13:30.59 but you can leave it out all together if you wish. 00:13:30.62\00:13:34.37 Now we'll blend this up till it's nice and smooth. 00:13:34.40\00:13:38.63 And of course, at home you probably 00:13:50.01\00:13:51.38 want to blend it a little longer 00:13:51.41\00:13:52.78 because you want really, really smooth. 00:13:52.81\00:13:54.44 Smooth and creamy. Right. 00:13:54.47\00:13:55.84 To make it a creamy tomato soup. 00:13:55.87\00:13:57.82 After you're done blending it, you pour it into the soup pan 00:13:57.85\00:14:05.20 because now you want to blend, this may help, 00:14:05.23\00:14:07.87 we're gonna blend the tomatoes. Okay. 00:14:07.90\00:14:10.03 These are crushed tomatoes and so we want to blend them. 00:14:10.06\00:14:13.48 You could put them in the soup just like this 00:14:13.51\00:14:15.26 without blending them and they'd be just fine, 00:14:15.29\00:14:17.50 but you may want to blend them 00:14:17.53\00:14:19.38 if you want the creamy tomato soup 00:14:19.41\00:14:21.60 that you're used to getting out of a can or something like that. 00:14:21.63\00:14:23.89 Or could you use diced tomatoes? 00:14:23.92\00:14:26.03 Actually the crushed tomatoes are the best to use 00:14:26.06\00:14:29.18 because they don't have the seeds in them, 00:14:29.21\00:14:31.02 you avoid having the seeds in the soup. 00:14:31.05\00:14:33.13 So that's why I used crushed tomatoes. 00:14:33.16\00:14:34.53 Also I've seen in the store concentrated crushed tomatoes 00:14:34.56\00:14:38.37 and you really need to get the regular crushed tomatoes 00:14:38.40\00:14:41.24 'cause concentrated crushed tomatoes 00:14:41.27\00:14:42.67 makes a really thick soup, too much tomatoes. 00:14:42.70\00:14:46.32 So you pour this into your blender, 00:14:46.35\00:14:49.79 and if you have a smaller blender-- 00:14:49.82\00:14:52.32 Well, you're--you're staining that a little bit, huh? 00:14:52.35\00:14:54.55 If you have a small blender you do it in fact in batches. 00:14:54.58\00:14:57.77 And you blend that until it's smooth, 00:14:57.80\00:15:01.33 as smooth as you like depending on 00:15:01.36\00:15:02.74 how smooth you like your soup. 00:15:02.77\00:15:06.40 And they don't take nearly 00:15:06.43\00:15:07.80 as long as the cashews do, of course. 00:15:07.83\00:15:10.63 And I'll pour that into our soup. 00:15:10.66\00:15:15.35 And then we'll--we would continue blending the tomatoes 00:15:15.38\00:15:18.62 and pouring them into the soup. 00:15:18.65\00:15:21.10 Now I'm sure you've heard 00:15:21.13\00:15:22.67 a lot of good things about tomatoes. 00:15:22.70\00:15:24.49 Oh my, yes. Slightly. 00:15:24.52\00:15:25.89 They are just full on antioxidants. 00:15:25.92\00:15:30.04 In fact, one of the nature's most powerful antioxidants 00:15:30.07\00:15:33.90 are the ones that you find in tomatoes. 00:15:33.93\00:15:36.01 Tomatoes? Yeah, call lycopene. 00:15:36.04\00:15:37.86 So it's a good, a good thing to eat often. 00:15:37.89\00:15:41.58 Other foods have lycopene in them 00:15:41.61\00:15:43.37 like watermelon and strawberries, 00:15:43.40\00:15:44.99 but tomatoes are probably most well-known 00:15:45.02\00:15:47.39 for lycopene source. We can blend. 00:15:47.42\00:15:52.75 So maybe if I do it this way that will help. 00:15:52.78\00:15:54.75 This is quite a messy job, maybe a good job 00:15:54.78\00:15:58.13 for in a kitchen apron. 00:15:58.16\00:16:00.27 Good job to have a kitchen apron on. 00:16:00.30\00:16:03.17 And that is as smooth as you like. 00:16:03.20\00:16:04.92 We pour it into our soup. 00:16:10.88\00:16:15.68 Then how long would you cook it? 00:16:15.71\00:16:17.64 Well, you could eat it as soon as it's warm if you like. 00:16:17.67\00:16:20.75 Oh, just as soon as it's warm. 00:16:20.78\00:16:22.15 Yes.
