00:46 And today we're going to be cooking
00:48 some wonderful vegetarian recipes
00:50 together with my special guest, Kyong Weathersby.
00:54 Kyong is one of those inspired cooks
00:56 who develops all of her own recipes.
00:59 And I'm here to tell you that they are delicious.
01:02 She's already developed several cookbooks
01:04 and is working on recipes for more.
01:06 Kyong, I'm so glad that you're here today
01:09 to teach the rest of us
01:11 how easy it can be to make fabulous meals.

01:18 Okay, first recipe we're gonna make brown rice pancakes.
01:22 Oh, wonderful.
01:23 Yes, and it will come with nice energy.
01:26 We need our energy, don't we?
01:28 So first recipe--would you like to read the ingredients?
01:30 Yes, the recipe for the brown rice pancakes is:
01:56 Okay, first what you're going to do
01:58 before you mix your dry ingredients,
02:00 you need to turn on your pancake griddle. Yeah.
02:02 It needs to be really hot.
02:04 So this is brown rice flour,
02:06 very high in vitamin B and in proteins.
02:10 And white brown rice flour instead of regular flour.
02:14 Regular white rice flour has no nutrition whatsoever.
02:18 They take all the good nutrition out of it.
02:22 So once you take your white flours into your body,
02:26 we turn into fat and sugar.
02:28 Oh, we don't want, do we?
02:30 No, we don't like that.
02:31 So I'm using some turbinado sugar which is a raw sugar.
02:35 Ah, this is energy baking powder.
02:38 Now lot of people use the just the wrong baking powder
02:41 or, I know, it's just a regular baking soda baking powder,
02:45 very harmful to you.
02:47 Actually, it's harmful to your stomach,
02:49 it irritates your nerve system, it's in your blood.
02:53 So I recommend you please do not use
02:56 any baking powder, baking soda.
02:59 It's really harmful to you.
03:00 Well, imagine this type of flour
03:02 will be better than the whole wheat
03:03 for people that haven't gluten problems then?
03:06 Oh, this one is absolutely gluten free.
03:09 I thank you for bring it up.
03:12 The recipe I created it because I has such a burden
03:16 for those people who want to eat healthy
03:19 and want to eat like a vegan but they're allergic to glutens.
03:22 So God inspired me
03:24 to create this wonderful recipe for those people.
03:27 But if you are not allergic to glutens, taste.
03:30 It's good for you. Oh, yeah.
03:32 Yeah. Okay, so this is the dry ingredients.
03:34 I'm gonna just mix really good. I spend lot of time mixing it.
03:39 If you don't mix it well
03:40 sometime you have a more salty here, more sugar there,
03:43 so you need to mix really well.
03:45 That's for the basking powder,
03:46 that clump isn't too good, is it?
03:48 So after you mix dry ingredients,
03:50 I'm gonna add soymilk.
03:53 Do you know this soymilk has natural estrogen? All right.
03:57 That God put it in here.
03:59 So if anybody has-- have flesh problems?
04:02 Drink a lot of soymilk. It will be--
04:05 I know there's a lot of women out there,
04:06 they'll be interested in hearing that.
04:08 Yeah, not only that soymilk made from soybean
04:12 and it will reduce your heart problem
04:16 and cholesterol it prevents your cancer.
04:20 Oh, wonderful.
04:21 So this is just a pancake
04:24 but got a lot of good benefit in here.
04:27 So let's go and mix it.
04:28 And as you see I use some soy flour
04:32 which is from the soybean.
04:34 Also it benefits like a soymilk.
04:39 And it's to have good like estrogen
04:41 in there and high fiber.
04:44 We need the fiber, don't we? Yes, we do.
04:45 Yeah, a lot of people in America
04:49 they're suffering from constipation or colon cancer
04:53 because they are not eating enough fiber.
04:56 So this has fiber, protein and all the good stuff here.
05:00 Okay, I think this pan is already getting hot.
05:04 So, I'm gonna go and scoop it out. All right.

05:13 And this is to makes nice pancake.
05:16 This is one of my favorite pancakes
05:18 because I love--why-- and I like the brown rice.
05:23 And it has good texture in it and good color in it.
05:26 The batter looks real creamy and nice.
05:27 I'm sure they're gonna be wonderful.
05:29 Yeah, I'm going to see how many I can make here.
05:31 Maybe I can make six. Can you smell it? Yes.
05:36 Smells already good. It smells good.
05:38 I don't wanna burn this. So I'm gonna reduce the heat.
05:43 You can make lots of pancake with this batter.
05:46 But this one is about one-fourth, cup size.
05:50 So it's a perfect size for the pancake.
05:53 And my grandson he lives with us, we are raising him.
05:57 And he loves this pancake if I make it
06:00 he just eats sit down there eat 1 or 2.
06:03 Have a look at that ready?
06:05 Yeah, okay. That's good.
06:08 Let's see how I do it on these pancakes, huh?
06:11 Be careful. Let me see. You're doing good job.
06:17 Maybe I'm trying to turn them a little too soon.
06:18 Oh, look at that. Can you see the color, yeah?
06:23 Maybe turn this one here. Anyway he's 2 years old.
06:27 Hi Malika, I want to say it to my grandson.
06:30 And he loved this pancake
06:32 and he hasn't sick all his life in 2 years.
06:36 He has never been sick. Never been sick.
06:37 Boy, you can tell that you're taking good care of him.

06:41 Yeah, look at that how simple it is. And it's delicious.

07:10 Well the recipe for Apple Syrup. You need:

07:33 right now I have 1 1/2 cup apple juice to boil. Okay.
07:37 And we have a half cup of apple juice here.
07:40 Then I'm gonna go and add corn starch.
07:43 This one will it thicker.
07:45 Thicker for it. Yes.
07:47 It smells really good.
07:49 This is becoming a wonderful breakfast.
07:50 And this a turbinado sugar.
07:53 And this is like a raw sugar has some minerals.
07:57 And vitamins you can find in.
07:58 This is coriander I'm using.
08:01 Lot of people like to use cinnamon
08:05 but I'm using coriander instead of the--
08:08 Coriander is the substitute
08:10 that doesn't irritate your stomach. That's right.
08:13 We shouldn't use the cinnamon
08:16 because our stomach is so sensitive
08:20 that we don't need to hurt.
08:22 Then we need to have good digestive system to digest food.
08:26 So it will turn it into energy
08:28 and make a good blood and muscles, nerves.
08:33 Okay, after you mix this one.
08:35 Can you see this is a boiling?
08:37 Yes, it's boiling well.
08:38 This is a really speeding up to making a apple sauce.
08:42 Uh-oh, we got some more turbinado sugar in there.
08:46 So you need to continue stir this one otherwise--

08:52 Otherwise it will get it burnt in the bottom.

08:59 First time I do with the 2 cups apple juice
09:02 it takes ever to make apple sauce.
09:05 So I said you got to give a faster way to do it.
09:08 So God gave me a wisdom here why don't you divide it.
09:11 So this is how I did it.
09:13 So this is one of my husband favorite syrup.
09:17 Oh, I can see why this look so good.
09:19 And it looks so nice too and delicious.
09:22 Who doesn't like pancakes for breakfast.
09:26 This typical American breakfast to make, yeah.
09:27 Oh, yeah, very typical.
09:29 We eat like pancakes for breakfast
09:31 at least once or twice a week.
09:34 I have a so many recipes that we cannot just eat
09:38 one of recipe for one breakfast.
09:39 So I have to use all different kinds.
09:42 So your family is very lucky to have
09:44 such good cook in their midst.
09:46 We praise the Lord, you know.
09:47 We being a vegan vegetarian lives about 6 years
09:51 and my husband and I we never been sick.
09:54 Oh, my. And God is so good.
09:55 Its one of-- one testament to good cooking.
09:58 Look at this. All ready thickened.

10:10 So I'm gonna going put this in the bowl. Look at that.

10:31 All you need to do is just to dribble
10:34 some of the apple syrups on top of it like this.

10:42 you know the most of the syrups you buy from the supermarkets.
10:46 They're very high in sugar.
10:49 They're just the empty calorie you don't need that.
10:52 So much of sugar they put it on.
10:55 Well, both of my kids are visiting me this weekend.
10:58 I think I'm gonna home and make them
10:59 one of these breakfasts this weekend.
11:00 Oh, I'm sure they will love you.
11:03 Put some banana-- banana is very good.
11:05 Nothing like mom's good home cook.
11:07 Amen. Okay, put some banana there and put some strawberry.
11:13 Oh, now doesn't that look good?
11:15 Yeah, you know we eat with our eyes.
11:18 This is what may be God gave us
11:20 two eyes to enjoy his goodness.
11:22 Then put some nuts to add some more protein.
11:27 You can put some pecans so walnuts, almonds.

11:33 It looks so luscious, almost like a dessert.

11:45 The ingredients for the Forever Young Bars are:
12:19 Look at--ah. Well, let's get started.
12:20 Yeah, looks all this ingredient is such a healthy one.
12:24 This is one like a dump in.
12:26 This is whole wheat flour.
12:28 And I'll put some oat flour.
12:31 Oat flour is you can just put some oats in the blender.
12:35 It makes nice full flour. Yes, I've made it that way before.
12:36 Yeah, un-bleached white flour
12:40 and you might notice that about the lecithin granules.
12:43 I wanna show you about that what's lecithin granule is.
12:47 This is like from the soybean products.
12:50 And our bodies, our cells and brains
12:54 and our muscles really need lecithin.
12:58 And when people had like high cholesterols,
13:01 once you take this lecithin,
13:03 you will just melt
13:04 your cholesterol from your bloodstream.
13:06 Oh, that's wonderful. It is wonderful.
13:09 So this is what I'd like to share with viewer
13:12 and then I've to tell you one testimony.
13:14 One of my friend Chris-- Hi, Chris.
13:17 And he had a cholesterol problem 240 or something.
13:20 And somehow he couldn't get it down for long, long time.
13:24 And I tell him about this lecithin
13:27 and he was taking a lecithin in cooking or cereal.
13:32 In few months went down to 168.
13:35 Oh, my, and that's wonderful. So he was--
13:37 I had no idea it was made from soybean. Soybean, yeah.
13:39 Yes. So soybean has a lot of good--this is walnut.
13:43 It's very high in omega 3
13:46 and when people have depressions and omega 3--
13:50 because they are lack of omega 3
13:52 so they need to eat some lot of walnuts.
13:53 Oh, there's a lot of people suffering from that.
13:55 Yes, and this is Ener-G baking powder.
13:59 Like I mentioned to you there,
14:02 regular baking soda and a baking powder is so harmful to you.
14:08 It will irritate your stomach.
14:10 It will irritate your blood systems and nerves.
14:13 So where you can find those baking soda, baking powder,
14:17 everything in the grocery stores.
14:20 So you please read the ingredients. And okay.
14:24 Is that the right type that doesn't have aluminum in it?
14:28 Sometimes there a healthy baking powder like Rumford--
14:33 they had a baking soda in there.
14:36 Then I wouldn't recommend anybody to use
14:38 that Rumford baking powder. Oh, really?
14:40 Even though it's aluminum free
14:42 it still had baking soda in there.
14:44 Okay, next one-- you do a wonderful job.
14:47 Oh, thank you. I'm gonna add some water.
14:51 And then canola oil.
14:54 Canola oil--when people had a memory loss
14:57 maybe need to use some canola oil.
15:00 This will refresh your memory.
15:02 So as you see that all is good thing--
15:06 do you know why I named them forever young bar?
15:09 I don't know. It makes me want to have it every morning though.
15:12 Look at all the ingredients.
15:14 It will keep you young forever.
15:16 This is all plant based diet and no cholesterol whatsoever.
15:21 So you don't have to worry about it will clog your artery.
15:25 I can get it out of the whisk.
15:27 Okay, do you want some spoon?
15:29 I usually mix it with a spoon. Yeah.
15:32 Go ahead and I will take this one out
15:34 and you go ahead and mix it with a spoon.
15:37 While Barbara is mixing it
15:40 I have a 9x13 cookie sheet or baking dishes.
15:44 Make sure that you have nonstick spray oil.
15:48 Then you spray it really good.
15:50 If you don't spray it's gonna be all stick.
15:54 Okay, I think your mixing is all done.
15:56 So let's go ahead put it in the baking dish. Right.
16:00 Would you go ahead and pick it up for me?
16:02 All right, I'll be happy to. Okay.
16:05 This is such a delicious dishe that I you can bake it
16:10 and put in the freezer and then whenever you need it
16:14 you just take it out and just it is so delicious.
16:17 So that makes it a very convenient then.
16:18 It is. You see how easy it is?
16:20 You can make it ahead.
16:21 Yeah, it's just like quick and easy
16:23 and it's such a high in fibers.
16:26 Okay, let's take it like this. Looks pretty good.
16:28 Then make sure that you spread out very evenly like this.
16:34 And if it doesn't spread out too good, don't worry about it.
16:40 Okay. And I'm just take some time.
16:43 And you know final product is very important.
16:47 I usually do spend a lot of time in final touch.
16:51 Because this is what people gonna look and say--

16:58 Don't you think when you like this

17:01 Oh, yes definitely.
17:03 Remember that like a half cup walnut additional ones you--
17:08 before you bake it sprinkle on top of it.
17:10 So you just add some more protein,
17:12 more fibers, iron and all.
17:15 Walnut has very high in irons.
17:18 And make it good blood.
17:20 Or as I mentioned I love to mention about Omega 3
17:24 because Omega 3 is
17:26 such a important nutrition for your brain.
17:29 For your brain, oh, yeah. I need that.
17:30 Yeah we need nutrition for brain, don't we?
17:33 So after that I just lightly press down.
17:39 Then all you need to do put in the oven for like an hour--
17:44 350 degrees for 20 to 25 minutes.
17:47 Okay, so it's quick then?
17:48 Yeah. Bakes quickly.
17:50 Yeah, I think we have a finished product

18:44 This recipe is so simple all you need is the 4 ingredients.

18:56 And the cows milk is for the cows babies, you know.
18:59 Yeah, we don't need a cow's milk.
19:01 So we're I'm using soymilk and the pineapple

19:12 but if they don't have a time this one only takes us minute.
19:15 Yeah, just blend it.

19:39 We all ready know that banana is very high potassium.
19:44 And I wanted to, you know, find out what is potassium.
19:48 So how good for us?
19:50 Then when I found this is wonderful.
19:52 You know, you got to have a put potassium
19:55 to regulate your water level and the heartbeat.
19:59 And your heartbeat, too.
20:00 And you muscle function--
20:01 And my father has problems with that
20:03 and had to be sure to eat plenty of bananas.
20:04 Oh, I see it.
20:06 Also if you want to have a clear thinking
20:08 you need potassium in your body.
20:11 And also it helps just cleanse your waste products.
20:17 Really? Wonderful, isn't it?
20:19 So God just has put such good things in the banana.
20:22 We need to eat banana at least once a day.
20:25 And apple, apple has about very high in vitamin C.
20:31 And it will prevent from getting a cold.
20:34 So season is around November, you know, December,
20:39 a lot of people get sick from the cold.
20:40 An apple a day truly does sort of keep the doctor away, huh?
20:43 Yes, that old saying is always correct, isn't it?
20:47 So if you just cut it small pieces in here.
20:50 I like to put in skin and everything.
20:53 Actually, skin has all the nutrition in there, very high--
20:57 Nice fiber, right?
20:58 Yeah, high in fiber and it will lower your cholesterol
21:02 because of that and also without the color
21:08 it's just a bland color.
21:10 But then when you put in the skin in there it has nice red--
21:12 Give it a little pink?
21:14 Yeah. We put the some pineapple.
21:17 It's very high in vitamin C.
21:20 And when people has cold and they need vitamin C. So also--
21:27 It is wonderful you're having
21:28 something like without any sugar at all.
21:30 Yeah, this is so sweet
21:32 because pineapple that are getting
21:34 from its own juice.
21:37 So there is no--in there.
21:40 No syrup in there. Hey, are we ready?
21:41 It's ready to blend, yeah. Okay.
22:05 Yeah. I think it's done.

22:15 When you make smoothie I love to pour
22:17 a nice tall glass like this.
22:21 So let's go and-- would you like to pour it?

22:30 I like to talk about my grandson.
22:32 He's only my grandson. And he loves this smoothie.
22:36 And when I make smoothie he says I want to straw.
22:39 I want a straw.
22:40 So he like to drink it with a straw.
22:43 And I like to decorate with some.
22:48 This is like strawberries.
22:49 So let put on top of it like this.
22:52 All you need to just to slice in the middle.
22:55 And just put it on it right here.
22:57 Doesn't it look pretty? Yes.
23:00 Just the extra touch that does so much.
23:01 Yeah, not only pretty but so nutritious. I use soymilk.
23:08 When you drink one glass of that
23:11 it will be reduce breast cancer. Really?
23:13 Isn't it wonderful?
23:15 The other day I mentioned about very high in natural estrogen.
23:20 So you don't have to pick those,
23:22 you know, estrogen pear
23:24 it has a lot of bad side affects.
23:27 So please drink some soymilk.
23:32 You know, do you like to eat breakfast?
23:35 I always eat breakfast.
23:36 I don't have to people go without breakfast.
23:38 It just kind of get you up and going.
23:39 Yeah, I think breakfast is very important meal of day.
23:44 It will give you lots of energy.
23:46 You know, when you start your car
23:49 if you don't have gas car can't start, right?
23:53 So breakfast is like a gasoline in your car.
23:57 So lot of people would say,
23:58 "Oh, I don't have a time. I'm not hungry."
24:01 But then middle of a day they are hungry
24:04 still they go to snack machine to eat the junk food.
24:08 And they don't know why they have weight problem.
24:11 And my husband used to be--
24:14 he said oh, I cannot eat breakfast.
24:17 And I tell him how important it is to eat breakfast.
24:21 Somehow he started eating it.
24:23 And then now his breakfast meal is the favorite.
24:28 We usually eat big, big breakfast.
24:30 Men usually like breakfast, all those nice pancakes
24:32 and different things that they like so much. Yes.
24:35 Well, breakfast kind of breaks that fast of that night
24:39 where you haven't had anything for so long.
24:41 Yeah. That's right.
24:43 And I think you're more interested in eating
24:45 if you haven't eaten a big meal right before going to bed.
24:49 I had such a wonderful time cooking with you.
24:51 Well, me too.
