And they are going to demonstrate a couple of recipes to keep our holidays 00:21:51.97\00:21:56.78 tasty but healthy. So ladies, what are we demonstrating today? DARLENE: We're going to start 00:21:56.88\00:22:02.18 with a stuffed squash. CHRIS: Okay, that sounds kind of interesting. So what are we 00:22:02.28\00:22:06.59 going to do to make a stuffed squash? DARLENE: Well, first we've got to focus on our 00:22:06.69\00:22:09.76 stuffing. So we're going to actually begin with some fresh breadcrumbs. And we just want to 00:22:09.86\00:22:16.43 take whatever loaf, whole grain bread, and put it in your food processor, and blend that all up 00:22:16.53\00:22:22.77 into a nice, fine texture, and keep them fresh. You don't want to toast these at all. 00:22:22.87\00:22:27.58 CHRIS: All right, now, Bev, this is a whole grain bread. What kind of bread is this actually 00:22:27.68\00:22:32.11 that we're using today? BEV: I think this is the Silver Hills bread that we're using, and you 00:22:32.21\00:22:35.55 know, that's one of the lifestyle centres that we have in British Columbia. 00:22:35.65\00:22:39.89 CHRIS: Okay, and the Silver Hills bread is all whole grain bread, and one of the beauties 00:22:39.99\00:22:44.56 of the Silver Hills bread is, when you read the ingredients, it only takes you a couple of 00:22:44.66\00:22:48.36 seconds 'cause there are very few of them. BEV: That's right. CHRIS: So what else are we 00:22:48.46\00:22:51.80 putting in the stuffing there, Darlene? DARLENE: Okay, we're going to add some grains. We're 00:22:51.90\00:22:56.47 going to add a couple of cups' worth of your choice of grains. This can be kamut, it can be 00:22:56.57\00:23:00.28 rice, it can be whatever grain you like. So we're going to use some wild rice. And we're also 00:23:00.38\00:23:05.68 going to use some brown rice today. CHRIS: All right, now, what are some of the advantages, 00:23:05.78\00:23:09.22 Darlene, of wild rice? What is wild rice going to do for you? DARLENE: Well, basically, any of 00:23:09.32\00:23:14.49 our grains in general are going to be high in fibre. That's probably the biggest key when it 00:23:14.59\00:23:19.49 comes to whole grains. B vitamins. Chromium. Chromium balances blood sugars. So not 00:23:19.59\00:23:25.03 only does fibre balance, but also, the chromium and the B vitamins. BEV: Absolutely. What 00:23:25.13\00:23:31.64 do we have next? DARLENE: Excellent. Now, we want to add some colour to this so 00:23:31.74\00:23:35.14 we're going to actually put in some onion and some celery as well as some shredded carrot. 00:23:35.24\00:23:40.38 CHRIS: Okay. I like onions and celery. BEV: Good combination. Of course, the celery has 00:23:40.48\00:23:47.02 wonderful sodium in there, natural sodium, and the carrots, vitamin A and that shot of nice 00:23:47.12\00:23:53.53 colour there. DARLENE: That's correct. BEV: Perfect. DARLENE: Now, lots of different 00:23:53.63\00:23:56.87 textures going on here. Added to it, we're going to add some dry roasted almonds, slivered 00:23:56.97\00:24:03.17 almonds. So you want to dry roast these just at a low temperature on your own in your 00:24:03.27\00:24:07.54 oven at home. And then we're going to add our seasonings. Now, you can add a little bit of 00:24:07.64\00:24:11.81 sea salt. We can sprinkle that kind of evenly over it there. And poultry seasoning. Now, 00:24:11.91\00:24:18.02 poultry seasoning does not have any poultry in it; it's just well-known for stuffing poultry 00:24:18.12\00:24:22.92 or stuffing mixes. CHRIS: So I know it's going to have some of that sage in there and different 00:24:23.02\00:24:29.13 things like that that's going to give it that real kind of stuffing flavour. DARLENE: Very 00:24:29.23\00:24:33.10 much so. And in fact, you can use sage if you prefer; just use half the amount. And colour, 00:24:33.20\00:24:37.47 beautiful, dried cranberries. You can add fresh, you can use frozen, whatever you like. 00:24:37.57\00:24:43.55 CHRIS: Now, ladies, what's the advantage of eating some cranberries? BEV: Well, first of 00:24:43.65\00:24:48.32 all, it's nice and sweet. CHRIS: Okay, I like that. I always like 00:24:48.42\00:24:52.29 sweet. DARLENE: Yeah. And again, high fibre. CHRIS: Very good. And then are we going to add 00:24:52.39\00:24:58.93 anything else now? DARLENE: We are. We're going to add some water and a little bit of our 00:24:59.03\00:25:02.90 olive oil as well, about a third of a cup of olive oil, so we can just go ahead and put it on. 00:25:03.00\00:25:07.07 BEV: All righty. DARLENE: Sure, all over, and then a little bit of our olive oil as well, and we 00:25:07.17\00:25:11.71 just want to mix this up and then put it into a casserole dish, if you don't have one 00:25:11.81\00:25:16.21 already that you're mixing it in, and cover it and just bake it in the oven until it's nice 00:25:16.31\00:25:21.45 and soft. You're mainly going by the vegetables being nice and tender. CHRIS: Now, if someone 00:25:21.55\00:25:27.22 wanted to make this a little lower fat, they didn't want to put the olive oil in, can they 00:25:27.32\00:25:30.59 get away with doing that? DARLENE: They can, they can. You can just do a little bit more 00:25:30.69\00:25:33.56 water, yeah. The oil just kind of gives it a little bit different flavour, but also 00:25:33.66\00:25:38.67 allows it to brown a little bit. CHRIS: All right. Now, so we put this in the oven? DARLENE: We 00:25:38.77\00:25:43.37 do, bake it until soft. CHRIS: And then through the magic of television, we actually 00:25:43.47\00:25:46.81 have a finished stuffing here. And what are we going to do with that stuffing after we've baked 00:25:46.91\00:25:54.12 it in the oven, and how long are we going to bake it in the oven for? DARLENE: It could take 00:25:54.22\00:25:57.49 about 20 minutes, 10 minutes, give it a stir, another 10 minutes. Just watch that it 00:25:57.59\00:26:01.46 doesn't get too brown. So the vegetables, you just want a little crispness. CHRIS: Now, 00:26:01.56\00:26:06.03 ladies, I see that we do have a squash that we're about to stuff. What kind of squash do we 00:26:06.13\00:26:09.16 have there, Bev? BEV: Is this a spaghetti squash? DARLENE: It is. BEV: It certainly is. You 00:26:09.26\00:26:13.80 know, we've been farming this past year and we've got all kinds of squash. I know my 00:26:13.90\00:26:17.27 squash now, I tell ya. DARLENE: Spaghetti is a very mild flavour 00:26:17.37\00:26:22.98 as well. But you can use any kind of squash that you like. And we're just going to put in 00:26:23.08\00:26:28.38 our stuffing. CHRIS: Okay, so you could use your butternut, your buttercup squash. DARLENE: 00:26:28.48\00:26:30.85 Absolutely. CHRIS: You could even use a pumpkin if you wanted to, I would imagine? 00:26:30.95\00:26:33.15 DARLENE: Absolutely, yes, yes. If you want that brighter orange colour, more vitamin A. 00:26:33.25\00:26:36.22 Interesting, this type of squash, not as much vitamin A, but has omega 3s in it, which is 00:26:36.32\00:26:42.50 unique to this squash. CHRIS: Now, you know, Bev, while Darlene is putting the stuffing 00:26:42.60\00:26:48.10 in that squash, a lot of people say, "Oh, spaghetti squash tastes kind of plain." What are 00:26:48.20\00:26:53.14 some things you can do with spaghetti squash to help it, other than stuff it, that make 00:26:53.24\00:26:57.08 it maybe not so plain? BEV: Right, well you know, one of my favourite ways is to just 00:26:57.18\00:27:00.48 roast it with a little bit of olive oil and some garlic. We use a lot of garlic in my house. 00:27:00.58\00:27:06.29 It's so good for you. And just that easy recipe right there, just roasted, wonderful. 00:27:06.39\00:27:13.63 CHRIS: All right, so Darlene, we've got these stuffed. We're going to then take them and put 00:27:13.73\00:27:17.93 them back in the oven? DARLENE: Correct. I should mention, you 00:27:18.03\00:27:21.44 want to kind of bake your squash 'til it's pretty much done first, okay? And then, you know, 00:27:21.54\00:27:26.51 put it here, put in your stuffing. You can cover it if you wish, if you need to bake it 00:27:26.61\00:27:30.85 a little bit more. If it's pretty much baked, just warm it now in your oven. And heap that 00:27:30.95\00:27:35.48 dressing up. Garnish it, make it look beautiful. CHRIS: That is wonderful. Ladies, this is 00:27:35.58\00:27:39.59 looking delicious.
