Twelve men who literally turned the world upside down. 00:01:46.46\00:01:50.30 Not only were they heroes because of their courage, their devotion, and their 00:01:50.30\00:01:54.96 obedience but because they accomplished their goal. 00:01:54.96\00:01:58.63 They literally established the church. 00:01:58.63\00:02:02.00 They touched a whole world. 00:02:02.00\00:02:04.43 They extended the Kingdom, just these twelve, one of them 00:02:04.43\00:02:11.46 unfaithful, eleven faithful, humble, simple people just like 00:02:11.46\00:02:16.53 us. Listen, what kind of people does God use? 00:02:16.53\00:02:20.03 He uses the common kind like we are. 00:02:20.03\00:02:22.93 He uses the unqualified. 00:02:22.93\00:02:25.33 Remember last time? 00:02:25.33\00:02:29.20 God is in the business of accepting unqualified people 00:02:29.20\00:02:35.43 because nobody's qualified. 00:02:35.43\00:02:37.56 The Lord uses strong, bold leaders like Peter who take 00:02:37.56\00:02:41.60 charge, initiate plans, strategize, confront, command people and who make big, big 00:02:41.60\00:02:46.16 blunders. 00:02:46.16\00:02:49.30 And He uses humble, gentle, inconspicuous souls like Andrew 00:02:49.30\00:02:53.03 who seek no prominence but quietly bring people to Christ. 00:02:53.03\00:02:57.30 And He uses zealous, passionate, uncompromising task-oriented, 00:02:57.30\00:03:02.03 insensitive, ambitious men like James. 00:03:02.03\00:03:05.80 As well as sensitive, tender, loving people oriented, 00:03:05.80\00:03:11.30 believing, intimate truth seekers like John. 00:03:11.30\00:03:15.40 And He uses skeptical, analytical, mechanical, slow- witted, weak-faith, 00:03:15.40\00:03:19.43 visionless, pessimistic, insecure men like Philip. 00:03:19.43\00:03:26.90 And He uses seekers of truth, honest, open, clear-minded, 00:03:26.90\00:03:33.66 meditative, deeply surrendered men like Nathanael Bartholomew who are full of faith and 00:03:33.66\00:03:39.66 understanding and yet who are flawed by serious sin such as 00:03:39.66\00:03:46.23 prejudice. Now, we're going to meet two others that He uses this morning; Matthew and 00:03:46.23\00:03:51.56 Thomas. 00:03:51.56\00:03:54.90 Let's take Matthew first. 00:03:54.90\00:03:57.20 Nothing is ever said about Matthew and nothing is ever said 00:03:59.50\00:04:05.20 by Matthew except one tiny little thing in Matthew 9:9 and that is the extent of 00:04:05.20\00:04:10.23 everything we know about Matthew. 00:04:10.23\00:04:13.76 (Matthew 9:9) 00:04:13.76\00:04:16.00 When Matthew puts his name in the list in chapter 10 verse 3 00:04:30.30\00:04:33.80 he says: "Matthew the tax collector. 00:04:33.80\00:04:37.80 " And may I hasten to add that no other disciple in the list is 00:04:37.80\00:04:41.90 ever associated with his job. 00:04:41.90\00:04:44.80 Why does Matthew say - Matthew the tax collector? 00:04:44.80\00:04:49.26 That's not something you're proud of. 00:04:49.26\00:04:52.80 A tax collector was the most hated, despised, despicable 00:04:52.80\00:04:57.06 human being in the society of Israel. 00:04:57.06\00:04:59.76 And Matthew is showing us his genuine humility and sense of 00:04:59.76\00:05:03.93 sinful unworthiness. 00:05:03.93\00:05:05.96 Matthew was a traitor. 00:05:05.96\00:05:08.33 Matthew was an extortionist. 00:05:08.33\00:05:10.03 Matthew was a robber and a thief. 00:05:10.03\00:05:12.20 Matthew was greedy. 00:05:12.20\00:05:14.50 Matthew was a social pariah, or outcast. 00:05:14.50\00:05:15.90 And he knew it. 00:05:15.90\00:05:18.30 You see, to be a tax collector is to be a publican. 00:05:18.30\00:05:22.23 And what that meant was you as a Jew were used by the Roman 00:05:22.23\00:05:23.20 government to collect taxes from the Jews to give to Rome. 00:05:23.20\00:05:31.43 You then sort of worked for the oppressor. 00:05:31.43\00:05:34.80 You were a traitor first class. 00:05:34.80\00:05:38.70 And not only that, but you bought the right to collect 00:05:38.70\00:05:43.33 taxes, so you paid the government, you bought into the 00:05:43.33\00:05:47.26 system. And then the government would stipulate a certain amount 00:05:47.26\00:05:50.90 of tax that had to be collected, and that was given to Rome. 00:05:50.90\00:05:55.16 And then you were free to collect anything more you could from the people and 00:05:55.16\00:05:57.93 that you kept for yourself. 00:05:57.93\00:06:00.56 And so there were bribes and extortionist roots taken, abuses 00:06:00.56\00:06:04.60 beyond what we could even dream. 00:06:04.60\00:06:07.20 Something interesting, in the gospel of Matthew there are more 00:06:07.20\00:06:13.86 quotes of the Old Testament than in Mark, Luke and John combined. 00:06:13.86\00:06:17.40 So, Matthew knew the Old Testament. 00:06:17.40\00:06:20.86 Matthew knew the law of God in the Old Testament. 00:06:20.86\00:06:24.30 And yet we have no idea of him at all being interested in 00:06:24.30\00:06:29.00 spiritual things. 00:06:29.00\00:06:31.40 But when Jesus comes along, verse 9, He says to him - Follow 00:06:31.40\00:06:34.56 Me and he arose and followed Him, instantly. 00:06:34.56\00:06:38.13 Now what is involved in this? 00:06:38.13\00:06:41.60 First of all, he just walked away from his career. 00:06:41.60\00:06:45.16 I mean, it wasn't like the earlier guys who were fishermen. 00:06:45.16\00:06:49.93 If they didn't like what went on with Jesus there were always 00:06:49.93\00:06:54.36 fish. Right? 00:06:54.36\00:06:56.06 And there were always nets. 00:06:56.06\00:06:57.40 And there were always boats. 00:06:57.40\00:06:58.56 And they could go back. 00:06:58.56\00:07:00.63 And in fact, they did in John 21, they all went back fishing. 00:07:00.63\00:07:02.63 And the Lord showed them they couldn't catch anything. 00:07:02.63\00:07:05.90 But when Matthew walked away from that table, believe me the 00:07:05.90\00:07:10.03 Roman government would have somebody there the next day. 00:07:10.03\00:07:13.66 And somebody was in line to buy into that and he was cutting off 00:07:13.66\00:07:18.36 his career for good. 00:07:18.36\00:07:19.43 No lingering. 00:07:19.43\00:07:21.46 Also, he was identifying with somebody who was equally 00:07:21.46\00:07:27.00 rejected by the establishment.., for the Pharisees and the scribes hated Jesus as much or 00:07:27.00\00:07:31.13 more as they hated him as a publican. 00:07:31.13\00:07:35.30 So he was really going from the frying pan into the fire. 00:07:35.30\00:07:40.06 It's a high price he paid. 00:07:40.06\00:07:42.90 You say - Well, why did he do that? 00:07:42.90\00:07:46.13 Well, I'll tell you why he did it. 00:07:46.13\00:07:48.80 There is only one reason. 00:07:48.80\00:07:51.20 This little section in chapter 9, the thread that keeps weaving 00:07:51.20\00:07:55.46 its way through here is the forgiveness of sin. 00:07:55.46\00:07:58.43 In verse 10 Matthew calls a feast after Jesus calls him. 00:07:58.43\00:08:04.30 And he gets together tax collectors and sinners. 00:08:04.30\00:08:08.03 And Jesus is the guest of honor at the feast. 00:08:08.03\00:08:12.46 (Matthew 9:10) "While Jesus was having dinner at Matthew's 00:08:12.46\00:08:19.03 house, many tax collectors and 'sinners' came and ate with him 00:08:19.03\00:08:23.40 and his disciples. " And the Pharisees say - Well, why does He hang around with tax 00:08:23.40\00:08:28.46 collectors and sinners? 00:08:28.46\00:08:30.76 And Jesus says, "They that are well need not a physician but 00:08:30.76\00:08:35.40 they that are sick. 00:08:35.40\00:08:38.76 " I am come not to call the righteous but sinners to 00:08:38.76\00:08:43.10 repentance. The point of the banquet then was for Jesus to call sinners to repentance. 00:08:43.10\00:08:48.00 So the whole thread here is confession of sin, repentance 00:08:48.00\00:08:52.40 and forgiveness and Matthew plops himself in there because I think that's the issue with him. 00:08:52.40\00:08:57.30 Nobody in the world knew better his sin than Matthew knew. 00:08:57.30\00:09:01.26 He knew he was a sinner. 00:09:01.26\00:09:04.40 He knew his graft, his abuse, his extortion, his greed. 00:09:04.40\00:09:07.80 He knew that he had betrayed his people. 00:09:07.80\00:09:10.16 He knew that he could be bought for money. 00:09:10.16\00:09:12.86 He knew that. 00:09:12.86\00:09:14.40 And I believe he despised it. 00:09:14.40\00:09:16.26 I believe he wanted out. 00:09:16.26\00:09:18.50 And I believe when Jesus came to him and said - Follow Me - he 00:09:18.50\00:09:21.96 knew that inherent in that was the forgiveness of sin and he 00:09:21.96\00:09:28.10 ran to get that. And he was willing to say goodbye to his career and everything else 00:09:28.10\00:09:31.80 because he wanted forgiveness. 00:09:31.80\00:09:34.13 What kind of people does God use? 00:09:34.13\00:09:38.96 Stained glass saints? 00:09:38.96\00:09:40.90 No. 00:09:40.90\00:09:42.76 Vile, wretched, rotten sinners, the most despicable people in 00:09:42.76\00:09:47.33 society who are willing to be forgiven. 00:09:47.33\00:09:48.86 You say - Yeah, but He can't use them for much. 00:09:50.70\00:09:52.13 Oh? 00:09:52.13\00:09:55.76 How about writing the gospel that introduces the New 00:09:55.76\00:09:58.80 Testament? You see, God is in the restoration business. 00:09:58.80\00:10:01.20 He takes the unqualified and transforms them. 00:10:01.20\00:10:03.80 That's His business. 00:10:03.80\00:10:05.96 And I believe Matthew risked a lot more than the fishermen did 00:10:05.96\00:10:10.50 because he could never go back. 00:10:10.50\00:10:11.83 And he was a vile sinner. 00:10:11.83\00:10:14.23 What if Jesus couldn't forgive him? 00:10:14.23\00:10:17.60 There he would be stuck with the same sin and no job to go back 00:10:17.60\00:10:23.26 to. But he quietly forsook all. 00:10:23.26\00:10:26.43 And the genuineness of his repentance, I believe, is found in the fact that you 00:10:26.43\00:10:31.33 see his humility. 00:10:31.33\00:10:33.43 He is utterly humble. 00:10:33.43\00:10:35.86 He has nothing to say about himself. 00:10:35.86\00:10:38.26 He has nothing to say about his talent and what he has to offer 00:10:38.26\00:10:42.43 the Lord. The only thing he wants to say is Jesus forgives sin and one of the ones He 00:10:42.43\00:10:48.40 forgave was a man named Matthew who was really a sinner and 00:10:48.40\00:10:55.66 whose only friends were a lot of other sinners, tax collectors 00:10:55.66\00:11:02.36 and sinners. And so we learn about his humility. 00:11:02.36\00:11:06.00 I think we learn another thing. 00:11:06.00\00:11:07.90 He had a heart for the lost. 00:11:07.90\00:11:10.36 There are some people in this world who just kind of gravitate 00:11:10.36\00:11:13.80 to the down and outers, you know? 00:11:13.80\00:11:15.20 That must have been Matthew. 00:11:15.20\00:11:18.90 I mean, if ever there was a discussion about whether the disciples ought to get 00:11:18.90\00:11:23.90 involved with some riffraff, I'm sure Matthew would have led the 00:11:23.90\00:11:27.80 parade toward the riffraff, having been one. 00:11:27.80\00:11:30.50 I'm glad that when the Lord puts together a team of men What a 00:11:30.50\00:11:35.20 man. A criminal, an outcast, the most hated of men, he was utterly convinced of 00:11:35.20\00:11:44.16 his sin and when given an opportunity to believe, he believed and he followed. 00:11:44.16\00:11:50.00 He became a man of quiet humility who loved the outcasts, 00:11:50.00\00:11:54.06 who gave no place to the religious establishment, a man of great faith, a man of 00:11:54.06\00:11:58.73 total and utter surrender to the Lordship of Jesus Christ and a 00:11:58.73\00:12:04.06 man who knew the Old Testament and a man that God used to write 00:12:04.06\00:12:08.93 the gospel. That brings us to the second name we will look at 00:12:08.93\00:12:15.60 today, Thomas. And immediately when I say Thomas what is the first word you think of? 00:12:15.60\00:12:18.33 Doubt! 00:12:18.33\00:12:20.33 Thomas has gotten bad press. 00:12:20.33\00:12:22.93 Thomas is a better man than you think. 00:12:22.93\00:12:27.33 In fact, I'm convinced that most people really don't understand 00:12:27.33\00:12:33.03 Thomas. We just say Thomas the doubter. 00:12:33.03\00:12:36.86 I think you're going to learn some things about Thomas you 00:12:36.86\00:12:41.00 didn't know in the next few minutes. 00:12:41.00\00:12:42.03 Listen. 00:12:42.03\00:12:43.90 Matthew, Mark and Luke give us nothing about Thomas. 00:12:43.90\00:12:47.26 But John again, always digging into the heart of people, opens 00:12:47.26\00:12:53.00 Thomas up to us. 00:12:53.00\00:12:54.76 John chapter 11, we look at three very brief texts. 00:12:54.76\00:13:01.43 Jesus is up by the Jordan river and the Lord is out of the city 00:13:01.43\00:13:07.46 of Jerusalem, the pressure has been tremendous, the plot to take His life has been 00:13:07.46\00:13:09.86 hatched. 00:13:09.86\00:13:11.60 He and the disciples are up by the Jordan. 00:13:11.60\00:13:15.10 The report comes to them that Lazarus is sick. 00:13:15.10\00:13:18.70 That is significant because Jesus loves Lazarus in a very 00:13:18.70\00:13:21.73 special way. 00:13:21.73\00:13:23.83 Jesus has tarried to give sufficient time for Lazarus to 00:13:23.83\00:13:26.76 die and then says this: "Lazarus is dead. 00:13:26.76\00:13:31.53 And I am glad. 00:13:31.53\00:13:34.16 " Now wait a minute, why are You glad? 00:13:34.16\00:13:37.36 "For your sakes, I'm glad I wasn't there, for the reason 00:13:37.36\00:13:39.26 that you may believe. 00:13:39.26\00:13:42.06 " And so He says he's dead and I'm glad for your sakes that I 00:13:42.06\00:13:45.80 wasn't there because now you're going to see something that will 00:13:45.80\00:13:50.26 make you believe. Then in verse 15 "Let us go unto him. 00:13:50.26\00:13:54.53 " Let's go. 00:13:54.53\00:13:57.23 Now where was Lazarus? 00:13:57.23\00:13:59.00 Bethany. 00:13:59.00\00:14:00.36 Where's Bethany? 00:14:00.36\00:14:01.66 Two miles east of Jerusalem. 00:14:01.66\00:14:04.26 Now that is a scary announcement because all the disciples can 00:14:04.26\00:14:08.16 think about is - Oh, this is suicide, this is absolute 00:14:08.16\00:14:10.50 suicide. We can't go back to Jerusalem. 00:14:10.50\00:14:13.70 Thomas apparently moves into this situation with some leadership, in verse 00:14:13.70\00:14:18.30 16 (John 11:16) 00:14:18.30\00:14:22.76 Now, I see several things in that. 00:14:33.26\00:14:36.23 First of all I see a certain amount of initiative. 00:14:36.23\00:14:39.00 He rises to the top and says - Wait a minute, guys, let's go 00:14:39.00\00:14:41.03 with Him and die with Him. 00:14:41.03\00:14:43.43 I also see pessimism. 00:14:43.43\00:14:47.16 Now he was convinced Jesus was going to be killed. 00:14:47.16\00:14:50.43 And if they went they would die You know, some will say, the 00:14:50.43\00:14:56.03 greatest courage in the world is not the courage of an optimist. 00:14:56.03\00:14:58.56 An optimist has courage. 00:14:58.56\00:15:01.43 He has courage because he believes the best will happen. 00:15:01.43\00:15:04.46 The greatest courage in the world is the courage of a pessimist because he 00:15:04.46\00:15:08.40 knows the worse is going to happen and is willing to go 00:15:08.40\00:15:11.13 anyway. You see? 00:15:11.13\00:15:13.93 Thomas says - We'll die, so let's go. 00:15:13.93\00:15:15.63 That's a lot of courage. 00:15:15.63\00:15:21.90 Now, why does he want to do this? 00:15:21.90\00:15:25.66 If you think of him only as a doubter then this doesn't make 00:15:25.66\00:15:31.40 any sense. Why was he willing to go die with Jesus? 00:15:31.40\00:15:35.36 Not because he doubted Him, but because he so totally believed 00:15:35.36\00:15:39.26 Him. If Jesus is going to die, then let's go die with Him, 00:15:39.26\00:15:43.06 because the alternative is to be without Him. 00:15:43.06\00:15:46.13 A man of courage and a man of love. 00:15:46.13\00:15:48.43 He did not want to be separated from Christ. 00:15:48.43\00:15:51.23 He could never be disloyal to Jesus. 00:15:51.23\00:15:54.36 He could die for Him before he'd be disloyal. 00:15:54.36\00:15:56.83 That's how deep his love. 00:15:56.83\00:15:59.33 Go to John chapter 14 and we see him again. 00:15:59.33\00:16:02.20 And the same attitudes come out again. 00:16:02.20\00:16:06.40 Jesus gives this little message about letting not your heart be 00:16:06.40\00:16:09.96 troubled and believing in God and He's going to prepare a place for you, and I'll come 00:16:09.96\00:16:13.26 again and receive you unto Myself and where I am there you 00:16:13.26\00:16:19.06 may be also. He says - You know where I am going and you know 00:16:19.06\00:16:21.36 how to get there. Verse 5: 00:16:21.36\00:16:22.63 This is the same heart that's saying - Lord, don't You go 00:16:31.46\00:16:33.56 somewhere where we can't come. 00:16:33.56\00:16:36.10 The thought of separation was the issue with Thomas. 00:16:36.10\00:16:41.06 I don't like what I hear, You' re going to go and we're not 00:16:41.06\00:16:46.06 going to know where You are or how to get there. 00:16:46.06\00:16:48.96 His heart, I think, is nearly broken as he speaks. 00:16:48.96\00:16:52.16 And he's a pessimistic and he says - We'll never find the 00:16:52.16\00:16:57.46 place. Jesus tells him, 00:16:57.46\00:16:58.80 What He's saying is - Thomas, I'll take you there. 00:17:05.66\00:17:08.60 I'm the way, you don't have to fear. 00:17:08.60\00:17:11.13 I'm not going to go someplace and leave you. 00:17:11.13\00:17:14.10 You see the same pessimism again, don't you? 00:17:14.10\00:17:16.83 And you see the same love again. 00:17:16.83\00:17:19.86 Let's go to a third and last look at Thomas John 20. 00:17:19.86\00:17:24.40 Jesus died. 00:17:24.40\00:17:29.56 You know what happened to Thomas when Jesus died? 00:17:29.56\00:17:30.53 He said, I knew it. 00:17:30.53\00:17:32.66 He died and I didn't die and He went somewhere and I don't know 00:17:32.66\00:17:34.10 where He is. I knew it. 00:17:34.10\00:17:36.33 And all of his fears came true all of the worst things that he 00:17:36.33\00:17:39.73 had ever thought. 00:17:39.73\00:17:41.40 He felt betrayed. 00:17:41.40\00:17:42.56 He felt rejected. 00:17:42.56\00:17:43.50 He felt forsaken. 00:17:43.50\00:17:45.63 And it was out of love that he was shattered. 00:17:45.63\00:17:47.43 He was like a wounded animal. 00:17:47.43\00:17:49.76 And he didn't want to be around people so he just split, that's 00:17:49.76\00:17:53.90 what he did. And when all the rest of the disciples came together he just wasn't 00:17:53.90\00:17:57.26 there, he was out and he was depressed because he loved so 00:17:57.26\00:18:00.26 deeply. He would have died with Jesus but Jesus died without 00:18:00.26\00:18:05.06 him. He wanted to go with Jesus but Jesus went without him. 00:18:05.06\00:18:08.40 And now his pessimism is vindicated, and he's really in 00:18:08.40\00:18:12.13 the pits. John 20:24 00:18:12.13\00:18:14.20 We've seen the Lord, Thomas, and you weren't there. 00:18:29.86\00:18:31.80 You didn't show up. 00:18:31.80\00:18:33.06 But Thomas is depressed. 00:18:33.06\00:18:35.30 Did you ever try to talk to somebody who is depressed? 00:18:35.30\00:18:36.70 Really difficult isn't it? 00:18:36.70\00:18:38.83 He says, Unless I see the nail marks in his hands and put my 00:18:38.83\00:18:42.86 finger where the nails were, and put my hand into his side, I will not believe it. 00:18:42.86\00:18:46.03 Now he's a pessimist, I've got to see it. 00:18:46.03\00:18:49.33 But before you pounce on him with both feet, would you kindly 00:18:49.33\00:18:55.10 remember this? That none of the disciples believed until they 00:18:55.10\00:18:59.90 saw Jesus. I mean, after all, it is not that easy to believe that 00:18:59.90\00:19:04.73 somebody rose from the dead. 00:19:04.73\00:19:06.83 On the road to Emmaus in Luke 24, two are walking along and 00:19:06.83\00:19:11.23 the Lord is with them and they're moaning and groaning 00:19:11.23\00:19:13.50 about His death. And they don't believe either. 00:19:13.50\00:19:15.13 Nobody believed till they saw Him. 00:19:15.13\00:19:16.80 So don't make Thomas the doubter. 00:19:16.80\00:19:19.40 You see, he's a loving pessimist is what he is. 00:19:19.40\00:19:22.60 That's better than being a doubter. 00:19:22.60\00:19:25.10 I want to see before I believe, he says. 00:19:25.10\00:19:27.93 John 20:26 00:19:27.93\00:19:29.36 It seems a fitting greeting, doesn't it, to the chaos that 00:19:41.36\00:19:44.30 must have occurred. 00:19:44.30\00:19:46.53 And then He zeros in on this dear soul that loves Him enough 00:19:46.53\00:19:50.00 to die with Him and is utterly depressed and shattered. 00:19:50.00\00:19:52.90 He said to Thomas, "Thomas, reach here your finger, behold 00:19:52.90\00:19:57.40 My hands, and reach here your hand and thrust it into My side and be not faithless but 00:19:57.40\00:20:02.26 believing. 00:20:02.26\00:20:03.53 " Did Thomas do that? 00:20:03.53\00:20:06.26 It doesn't say he did it. 00:20:06.26\00:20:09.20 It just says immediately, without doing anything, "He answered and said unto 00:20:09.20\00:20:12.70 Him, My Lord and my God. 00:20:12.70\00:20:15.53 " The greatest single confessional ever made. 00:20:15.53\00:20:17.66 He affirmed the deity of Jesus Christ. 00:20:17.66\00:20:20.16 He affirmed the Lordship of Jesus Christ. 00:20:20.16\00:20:22.70 He affirmed that He was God. 00:20:22.70\00:20:26.26 Thomas - yes he was melancholy, he was moody, pessimistic, 00:20:26.26\00:20:34.60 comfortless, shattered, but when he saw the Lord Jesus Christ, he 00:20:34.60\00:20:37.43 gave the greatest testimony ever given. 00:20:37.43\00:20:39.23 And you know what? 00:20:39.23\00:20:42.20 In that one little statement Thomas gave the speech that 00:20:42.20\00:20:45.13 literally destroys every lie that has been told about Jesus 00:20:45.13\00:20:49.93 not being God. Thomas - tradition tells us he went as far as India preaching. 00:20:49.93\00:20:56.03 And one tradition says that he died in a very special way. 00:20:56.03\00:21:00.63 They took a spear and rammed it through him. 00:21:00.63\00:21:03.80 Because of his faith in Christ, it would be kind of fitting 00:21:03.80\00:21:09.10 climax for one who was told to reach forth his hand and feel the spear mark in his own 00:21:09.10\00:21:12.43 Lord. 00:21:12.43\00:21:14.13 What kind of people does God use? 00:21:14.13\00:21:16.36 Vile sinners like Matthew. 00:21:16.36\00:21:19.46 Tender-hearted, moody, melancholy pessimists like 00:21:19.46\00:21:25.13 Thomas. For one thing, it's a complete protein, which means it contains all of 00:24:05.06\00:24:08.53 the essential amino acids that our bodies cannot create. 00:24:08.53\00:24:12.13 That's unusual for a plant food. 00:24:12.13\00:24:14.60 Quinoa was used by the Inca civilization as a staple food in 00:24:14.60\00:24:18.63 their daily diet, and with good reason. 00:24:18.63\00:24:21.63 It boasts more protein than rice, millet, or wheat, and it's 00:24:21.63\00:24:25.10 gluten-free with a healthy complement of minerals such as 00:24:25.10\00:24:28.60 manganese, magnesium, iron, and copper. 00:24:28.60\00:24:32.26 Today, I'm sharing my own recipe, Bev's Quinoa Salad with Tahini Lime Dressing. 00:24:32.26\00:24:37.30 Here are the ingredients: one cup of cooked quinoa; one carrot, grated; half a 00:24:37.30\00:24:43.46 cup of shredded kale; a quarter cup of currants; a quarter cup 00:24:43.46\00:24:47.86 of pumpkin seeds; and you can put a quarter teaspoon of salt. 00:24:47.86\00:24:50.23 That's optional. 00:24:50.23\00:24:51.63 I usually don't. 00:24:51.63\00:24:53.03 This is a high-octane kind of salad. 00:24:53.03\00:24:55.60 You're going to get great nutrition from the quinoa, the carrot, the kale, and 00:24:55.60\00:24:58.23 the pumpkin seeds. 00:24:58.23\00:25:00.36 And the currants add a nice little hint of tart sweetness. 00:25:00.36\00:25:04.66 And then for the dressing, I just use the juice of a lime, 00:25:04.66\00:25:09.20 two teaspoons of tahini, a teaspoon of almond butter, water to thin it out, and a half 00:25:09.20\00:25:13.40 teaspoon of sweetener, and a little sprinkling of chili 00:25:13.40\00:25:18.76 pepper seeds and a few dashes maybe of Herbamare or some other 00:25:18.76\00:25:22.50 kind of spices. You mix the salad ingredients together, then mix the dressing, and pour 00:25:22.50\00:25:25.93 it over. 00:25:25.93\00:25:28.23 So let me show you. 00:25:28.23\00:25:29.56 I've got the quinoa right here. 00:25:29.56\00:25:31.20 I'm going to add in some shredded carrots. 00:25:31.20\00:25:32.73 m going to add in the wonderful kale. 00:25:32.73\00:25:35.00 And this has wonderful colour to it, this whole salad. 00:25:35.00\00:25:38.63 And then I've already got the currants and the pumpkin seeds 00:25:38.63\00:25:41.50 mixed.
