I'm John Bradshaw. 00:00:20.55\00:00:23.25 Thanks for joining me today. 00:00:23.28\00:00:25.15 Well, you know how it goes. 00:00:25.19\00:00:26.19 You get sick. 00:00:26.22\00:00:27.06 You need some help. 00:00:27.09\00:00:28.22 You go to the doctor. 00:00:28.26\00:00:29.96 And the doctor writes you a prescription. 00:00:29.99\00:00:33.36 You take it to the pharmacy or to the drug store. 00:00:33.40\00:00:35.56 You get your little bottle of magic. 00:00:35.60\00:00:37.17 You take one three times a day, and given three or four or five 00:00:37.20\00:00:40.90 days, you're back to good health. 00:00:40.94\00:00:42.90 That's pretty typical 00:00:42.94\00:00:44.41 for those of us living in the Western world. 00:00:44.44\00:00:46.88 In Bible times, however, things were rather different. 00:00:46.91\00:00:51.41 When we consider the Bible, 00:00:51.45\00:00:52.65 we think of God as the Great Physician. 00:00:52.68\00:00:55.62 And in the absence of cardiologists and 00:00:55.65\00:00:58.42 rheumatologists and all the other ologists, 00:00:58.45\00:01:01.89 people then had to deal with rudimentary methods of healing. 00:01:01.92\00:01:05.53 Or they dealt with God, the Great Physician. 00:01:05.56\00:01:10.83 Today, we're going to talk about healing foods of the Bible. 00:01:10.87\00:01:15.60 The thought is that perhaps the Great Physician has given us 00:01:15.64\00:01:20.64 medication that we can get at other places than the drugstore. 00:01:20.68\00:01:25.35 Perhaps at the supermarket or right out of our garden. 00:01:25.38\00:01:29.45 I'm being joined today by my special guest, 00:01:29.48\00:01:31.32 Dr. John Westerdahl, 00:01:31.35\00:01:33.19 a nutritionist from the Bragg Health Institute 00:01:33.22\00:01:36.19 in Santa Barbara, southern California. 00:01:36.22\00:01:38.53 Dr. Westerdahl, thank you for joining me today. 00:01:38.56\00:01:40.10 >>Dr. John Westerdahl: Great to be with you, John. 00:01:40.13\00:01:41.46 >>John: Now, this idea of health and the Christian anyway. 00:01:41.50\00:01:44.77 Why does it matter that Christians look after their 00:01:44.80\00:01:48.34 health, that believers in God should look after their health? 00:01:48.37\00:01:51.44 >>Dr. Westerdahl: Well, you know, 00:01:51.47\00:01:52.37 in the Bible it tells us that our bodies 00:01:52.41\00:01:54.64 are the temple of the Holy Spirit. 00:01:54.68\00:01:56.81 In other words, we need to take care of it, 00:01:56.85\00:01:58.38 not defile that temple, 00:01:58.41\00:01:59.95 but take good care of it and put good things into it, 00:02:00.05\00:02:02.98 is very important. 00:02:03.02\00:02:04.25 >>John: Yeah, but, but, I don't mind getting right into it, 00:02:04.29\00:02:06.59 but it's my body. 00:02:06.62\00:02:08.22 I can do whatever I want with it. 00:02:08.26\00:02:09.92 >>Dr. Westerdahl: Well actually, we were bought with a price. 00:02:09.96\00:02:13.03 Jesus dying on the cross for us. 00:02:13.06\00:02:14.83 So it's not totally our body. 00:02:14.86\00:02:16.10 God gave us this magnificent creation 00:02:16.13\00:02:19.23 that we need to take care of. 00:02:19.27\00:02:20.60 >>John: As a matter of fact, 00:02:20.64\00:02:21.77 it says right in that very verse you were referencing, 00:02:21.80\00:02:23.54 “for you are not your own.” 00:02:23.57\00:02:25.47 >>Dr. Westerdahl: That's right. 00:02:25.51\00:02:26.74 >>John: So that idea that I can do whatever I want with my body 00:02:26.78\00:02:28.11 because, after all, it's mine, it isn't yours really, is it? 00:02:28.14\00:02:31.48 >>Dr. Westerdahl: It really isn't. 00:02:31.51\00:02:32.31 >>John: It belongs to God. 00:02:32.35\00:02:33.82 >>Dr. Westerdahl: We inherited it from God. 00:02:33.85\00:02:34.92 >>John: Let me share a Bible verse here that I think 00:02:34.95\00:02:36.42 is very relevant to what we're talking about. 00:02:36.45\00:02:38.02 How about that? Turned right to the page. 00:02:38.05\00:02:39.42 >>Dr. Westerdahl: Okay. 00:02:39.45\00:02:40.22 >>John: 3 John, verse 2. 00:02:40.26\00:02:42.69 And John, who wrote Revelation and wrote the Gospels, 00:02:42.72\00:02:45.23 he wrote the little Johns as well, three of them. 00:02:45.26\00:02:47.46 3 John 2: “Beloved, 00:02:47.50\00:02:49.43 I wish above all things that thou mayest prosper 00:02:49.46\00:02:52.33 and be in health, 00:02:52.37\00:02:54.07 even as thy soul prospereth.” 00:02:54.10\00:02:55.80 >>Dr. Westerdahl: That's right. And it's connected. 00:02:55.84\00:02:57.24 Because if we are healthy, we can communicate better with God. 00:02:57.27\00:03:02.88 Our minds are clearer. 00:03:02.91\00:03:04.18 We're enjoying life. 00:03:04.21\00:03:05.18 It's kind of hard to be rejoicing all the time 00:03:05.21\00:03:08.72 if you're sick. 00:03:08.75\00:03:09.92 And by having good health, we're of clear mind, 00:03:09.95\00:03:13.52 we can really enjoy a personal relationship with Jesus Christ. 00:03:13.56\00:03:16.62 >>John: John made it very clear that there's a direct 00:03:16.66\00:03:18.33 relationship between our physical health 00:03:18.36\00:03:20.73 and our mental and spiritual health. 00:03:20.76\00:03:23.40 >>Dr. Westerdahl: There really is. 00:03:23.43\00:03:24.73 It's really a wholistic approach that the Bible's all about. 00:03:24.77\00:03:27.50 Wholistic with a W. 00:03:27.54\00:03:29.74 Body, mind and spirit, it is all related. 00:03:29.77\00:03:32.71 And, and the things we're going to talk about today, 00:03:32.74\00:03:34.31 the foods that we eat, 00:03:34.34\00:03:35.54 have a direct relationship and helping us improve that health. 00:03:35.58\00:03:39.08 >>John: Yeah, this looks pretty good. 00:03:39.11\00:03:40.42 I'm not sure whether to talk to you or just, 00:03:40.45\00:03:42.55 just eat the set. 00:03:42.58\00:03:44.45 >>Dr. Westerdahl: There's a lot food here to eat today, 00:03:44.49\00:03:45.49 and all healthy. 00:03:45.52\00:03:46.35 >>John: Maybe a little bit of both. 00:03:46.39\00:03:48.22 Well, it's interesting, isn't it, 00:03:48.26\00:03:50.69 that the Bible talks so much about health? 00:03:50.73\00:03:54.83 Why do you think that is? 00:03:54.83\00:03:56.90 >>Dr. Westerdahl: This book, I believe, 00:03:56.93\00:03:58.50 is one of the greatest books ever written on total wellness, 00:03:58.53\00:04:01.40 preventive medicine, lifestyle medicine. 00:04:01.44\00:04:03.97 God's concerned about our health. 00:04:04.01\00:04:05.21 He wants us to be healthy. 00:04:05.24\00:04:06.94 Within the pages of the Bible 00:04:06.98\00:04:08.68 we see a lot of health principles given to us. 00:04:08.71\00:04:12.05 So it's all there, and He wants us to take advantage of this 00:04:12.08\00:04:15.25 so that we can live life more abundantly. 00:04:15.28\00:04:17.69 >>John: Now, you mentioned something just a moment ago. 00:04:17.72\00:04:19.35 You said lifestyle medicine. 00:04:19.39\00:04:21.62 >>Dr. Westerdahl: Yes. 00:04:21.66\00:04:22.29 >>John: Now, what's that? 00:04:22.32\00:04:23.43 >>Dr. Westerdahl: Lifestyle medicine, it's a new, 00:04:23.46\00:04:24.76 emerging type of medicine that's coming into our country today. 00:04:24.79\00:04:27.76 There's actually what we call the American College 00:04:27.76\00:04:29.66 of Lifestyle Medicine, 00:04:29.70\00:04:31.17 where there are physicians who are specializing 00:04:31.20\00:04:34.00 in treatment with lifestyle, diet, exercise, 00:04:34.04\00:04:38.91 stress management, spiritual wellness, 00:04:38.94\00:04:42.08 as opposed to using just medications. 00:04:42.11\00:04:44.21 Not that they won't use medications for emergencies 00:04:44.25\00:04:47.18 or as needed with patients. 00:04:47.22\00:04:49.65 But, we are finding out more and more, that the foods that we eat 00:04:49.68\00:04:53.59 are healing to our bodies. 00:04:53.62\00:04:55.02 If we eat the right type of diet, 00:04:55.06\00:04:57.49 we can prevent, treat, and even reverse 00:04:57.53\00:05:00.23 many of the diseases that are killing us today. 00:05:00.26\00:05:02.76 >>John: Now, I have heard of people with diabetes... 00:05:02.80\00:05:05.17 >>Dr. Westerdahl: Yes. 00:05:05.20\00:05:06.23 >>John: ...getting off their diabetes medications, 00:05:06.27\00:05:07.87 and seeing their adult-onset diabetes going away. 00:05:07.90\00:05:11.04 I've heard of people reversing heart disease. 00:05:11.07\00:05:13.21 I, I must be responsible enough to say, perhaps 00:05:13.24\00:05:15.81 this isn't possible for everybody. 00:05:15.84\00:05:17.35 >>Dr. Westerdahl: Right. 00:05:17.38\00:05:18.25 >>John: But certainly for many people, 00:05:18.28\00:05:19.75 there are some well-known physicians 00:05:19.78\00:05:21.15 who have said that they can get, 00:05:21.18\00:05:22.38 they can reverse heart disease without using medication in, 00:05:22.42\00:05:27.69 in many instances. 00:05:27.72\00:05:28.52 This is very exciting. 00:05:28.56\00:05:29.59 >>Dr. Westerdahl: Yes, it is. 00:05:29.62\00:05:30.73 And it's very well documented in medical literature. 00:05:30.76\00:05:33.19 Lifestyle medicine, using lifestyle to treat diseases, 00:05:33.23\00:05:37.67 to prevent diseases, and in many cases even reverse the diseases. 00:05:37.70\00:05:42.60 >>John: Now, it was Hippocrates that said, 00:05:42.64\00:05:44.67 “Let your food be your medicine, and your medicine be your food.” 00:05:44.71\00:05:49.64 >>Dr. Westerdahl: Yes. 00:05:49.68\00:05:50.75 >>John: If some of us were honest with ourselves, 00:05:50.78\00:05:52.91 and we went into the pantry or the food cupboard at home, 00:05:52.95\00:05:55.55 we'd say, well, you know, those chocolate cookies 00:05:55.58\00:05:58.29 aren't going to be much in the way of medicine. 00:05:58.32\00:06:01.49 So when Hippocrates said that, what foods was he referring to? 00:06:01.52\00:06:06.46 >>Dr. Westerdahl: He was talking about natural, 00:06:06.49\00:06:08.63 whole, unprocessed foods. 00:06:08.66\00:06:11.50 That's what he promoted with his own patients. 00:06:11.53\00:06:13.54 He used nutrition with his patients. 00:06:13.57\00:06:15.54 He used lifestyle medicine. 00:06:15.57\00:06:17.27 >>John: You know, there are a lot of diets available today, 00:06:17.31\00:06:19.04 and some of the well-known ones, South Beach, 00:06:19.07\00:06:20.64 Atkins, Paleo, um, seafood, that is, 00:06:20.68\00:06:24.58 see food and eat it. 00:06:24.61\00:06:25.71 >>Dr. Westerdahl: That's right (laughs). 00:06:25.75\00:06:27.42 >>John: But what about this Mediterranean diet? 00:06:27.45\00:06:29.78 You hear a lot about that. 00:06:29.82\00:06:30.85 It's hyped as, or promoted as being very good. 00:06:30.89\00:06:32.99 Is it very good? 00:06:33.02\00:06:34.06 And if it is, why? 00:06:34.09\00:06:35.56 >>Dr. Westerdahl: Well, the traditional Mediterranean diet 00:06:35.59\00:06:37.13 is very good. 00:06:37.16\00:06:38.29 And it is healing, uh, 00:06:38.33\00:06:40.30 because it's a diet that's based on whole, 00:06:40.33\00:06:43.03 unprocessed food, mostly from plant foods. 00:06:43.06\00:06:46.90 The types of fat that you find in the Mediterranean diet 00:06:46.94\00:06:48.94 are the healthier types of fats, in general, 00:06:48.97\00:06:51.91 as compared to the high-saturated fats, 00:06:51.94\00:06:54.31 high-cholesterol foods that we eat in the Western countries. 00:06:54.34\00:06:57.01 >>John: Well, there's a lot of food in front of us here, 00:06:57.05\00:06:58.71 and I'm guessing that much of this is 00:06:58.75\00:07:00.42 representative of the Mediterranean diet. 00:07:00.45\00:07:02.82 I see figs, and I see dates, and I see grapes and raisins 00:07:02.85\00:07:07.69 and grains, and good stuff. 00:07:07.72\00:07:10.89 The healing foods of the Bible. 00:07:10.93\00:07:12.86 We'll find out what they are specifically, 00:07:12.89\00:07:15.03 and how they can be a blessing to you, 00:07:15.06\00:07:17.37 with Dr. John Westerdahl, in just a moment. 00:07:17.40\00:07:20.10 >>John: The Bible tells us that our body 00:07:20.84\00:07:22.57 is the temple of the Holy Spirit. 00:07:22.60\00:07:24.37 God wants us to have good health. 00:07:24.41\00:07:26.07 We need to take care of ourselves. 00:07:26.11\00:07:27.91 The question is, how do we do that? I'm John Bradshaw. 00:08:21.93\00:08:24.50 Thanks for joining me today. 00:08:24.53\00:08:25.93 With me is Dr. John Westerdahl, 00:08:25.97\00:08:28.37 a nutritionist from the Bragg Health Institute 00:08:28.40\00:08:30.01 in Santa Barbara, California. 00:08:30.04\00:08:31.37 And today we are talking about healing foods of the Bible. 00:08:31.41\00:08:35.08 I'm interested in the idea that foods can actually heal, 00:08:35.11\00:08:39.05 like medicine. 00:08:39.08\00:08:40.32 So in front of us here, 00:08:40.35\00:08:41.95 there's all kinds of different foods. 00:08:41.98\00:08:43.42 Let's talk about what you have, and how and why it's healing. 00:08:43.45\00:08:47.72 >>Dr. Westerdahl: Well, here you go. 00:08:47.76\00:08:48.59 An apple a day keeps the doctor away. 00:08:48.62\00:08:50.19 You've heard that. 00:08:50.23\00:08:51.26 >>John: That's good for, good for non-doctors, 00:08:51.29\00:08:53.13 not so good for doctors though, I suppose. 00:08:53.16\00:08:54.56 >>Dr. Westerdahl: That's right, because an apple is an amazing 00:08:54.60\00:08:56.63 food, because when you eat these apples, 00:08:56.67\00:08:59.07 you can lower your cholesterol. 00:08:59.10\00:09:01.00 They are high in soluble fiber that actually binds cholesterol 00:09:01.04\00:09:05.64 and helps you remove that from the body. 00:09:05.67\00:09:07.88 And studies have shown 00:09:07.91\00:09:08.84 that people who have a couple of apples a day 00:09:08.88\00:09:10.91 in their diet can reduce their cholesterol 00:09:10.95\00:09:12.68 by as much as 10 percent. 00:09:12.71\00:09:14.18 >>John: That's pretty good. 00:09:14.22\00:09:15.38 >>Dr. Westerdahl: And the other amazing thing about apples 00:09:15.42\00:09:17.09 is they're high in what we call polyphenol antioxidants. 00:09:17.12\00:09:20.59 These are substances that are naturally occurring, 00:09:20.62\00:09:22.99 primarily in the skin of the apple, 00:09:23.02\00:09:25.59 that have anti-cancer properties, 00:09:25.63\00:09:27.86 heart disease prevention properties. 00:09:27.93\00:09:29.96 They prevent the oxidation 00:09:30.00\00:09:31.40 or the aging of the cells in the body. 00:09:31.43\00:09:33.40 There's some wonderful things. 00:09:33.44\00:09:34.34 And, you know, this is true: 00:09:34.37\00:09:36.20 an apple a day keeps the doctor away. 00:09:36.24\00:09:37.64 >>John: Very good. 00:09:37.67\00:09:38.07 Apples. 00:09:38.11\00:09:38.64 Wonderful. 00:09:38.67\00:09:39.47 And an apple is certainly biblical. 00:09:39.51\00:09:41.64 We read about apples in the Bible many, many times. 00:09:41.68\00:09:44.21 Okay. 00:09:44.25\00:09:44.88 A healing food of the Bible. 00:09:44.91\00:09:46.68 What else we got? 00:09:46.72\00:09:47.72 >>Dr. Westerdahl: So the next one is apricots. 00:09:47.75\00:09:49.68 And, by the way, when you read in the Bible, 00:09:49.72\00:09:52.32 when it talks about golden apples, 00:09:52.35\00:09:55.46 it's probably an apricot. 00:09:55.49\00:09:56.79 They're very rich in the, what we call carotinoids, 00:09:56.83\00:09:59.96 beta keratin, which makes it that bright yellow color. 00:10:00.00\00:10:03.20 These pigments that you find in apricots 00:10:03.23\00:10:05.70 also have anti-cancer properties, 00:10:05.73\00:10:08.50 and it's a great food for overall health. 00:10:08.54\00:10:10.77 It's great, and delicious too. 00:10:10.81\00:10:12.57 >>John: Now, let me ask a question about color. 00:10:12.61\00:10:14.84 You should eat foods of different colors, correct? 00:10:14.88\00:10:18.21 And, if I'm right, why is that? 00:10:18.25\00:10:20.38 >>Dr. Westerdahl: I recommend eating a rainbow of colors, 00:10:20.42\00:10:22.92 of food, because all these different colors in food, 00:10:22.95\00:10:25.49 God has put these colors in all these different foods, 00:10:25.52\00:10:28.72 and they all have special benefits. 00:10:28.76\00:10:30.63 The more colorful the diet, the better it is for you, 00:10:30.66\00:10:34.10 as opposed to the white bread and the white sugar, 00:10:34.10\00:10:37.37 and all those white refined foods, 00:10:37.40\00:10:39.57 where all the color has been taken away. 00:10:39.60\00:10:40.87 Well, a lot of those nutrients have been taken away. 00:10:40.90\00:10:42.67 So most scientists and nutritionists will tell you 00:10:42.70\00:10:45.14 to eat a colorful diet with lots of fruits and vegetables. 00:10:45.17\00:10:49.11 >>John: All right, good. 00:10:49.14\00:10:49.68 Okay, what else we have? 00:10:49.71\00:10:50.85 >>Dr. Westerdahl: The other is a Bible grain: barley. 00:10:50.88\00:10:53.82 And barley, in the Holy Land and in the Middle East, 00:10:53.85\00:10:57.22 is considered a heart medicine. 00:10:57.25\00:10:59.49 >>John: No kidding. 00:10:59.52\00:11:00.56 >>Dr. Westerdahl: Amongst the common people. 00:11:00.59\00:11:01.72 Because it is high in soluble fiber, 00:11:01.76\00:11:03.79 which can actually help you lower your cholesterol. 00:11:03.83\00:11:07.36 Barley has been shown to lower the bad type of cholesterol, 00:11:07.40\00:11:10.97 what we call the LDL cholesterol, 00:11:11.00\00:11:12.57 and actually help and increase the good cholesterol, 00:11:12.60\00:11:15.50 the good-guy cholesterol, called HDL cholesterol. 00:11:15.54\00:11:18.41 The high-density lipoprotein cholesterol. 00:11:18.44\00:11:20.74 >>John: Now, isn't that also true of oats? 00:11:20.78\00:11:22.88 Oatmeal. 00:11:22.91\00:11:23.58 >>Dr. Westerdahl: Yes. 00:11:23.61\00:11:24.41 >>John: Porridge, where I grew up. 00:11:24.45\00:11:25.58 >>Dr. Westerdahl: Oats is another grain that has some 00:11:25.61\00:11:27.45 similar properties as far as cholesterol-lowering benefits. 00:11:27.48\00:11:30.39 >>John: So when the Bible was talking about barley, 00:11:30.42\00:11:32.12 it was talking about something that didn't just make 00:11:32.15\00:11:33.96 a good biblical point, but it was good for you. 00:11:33.99\00:11:36.69 >>Dr. Westerdahl: It was. It is. 00:11:36.73\00:11:37.89 >>John: And can help to reverse significant disease. 00:11:37.93\00:11:40.90 >>Dr. Westerdahl: Yes. 00:11:40.93\00:11:41.90 And it's a very rich source of antioxidants, 00:11:41.93\00:11:43.47 particularly what we call tocotrienols, 00:11:43.50\00:11:45.73 which is related to vitamin E. 00:11:45.77\00:11:47.90 >>John: How do you eat barley? 00:11:47.94\00:11:49.50 Many people are wondering, what do I do with this? 00:11:49.54\00:11:51.44 Do I put it in a stew, do I fry it? 00:11:51.47\00:11:53.41 Can I... 00:11:53.44\00:11:54.61 >>Dr. Westerdahl: You could... 00:11:54.64\00:11:55.54 >>John: Can I bread it and deep fry it? 00:11:55.58\00:11:56.91 >>Dr. Westerdahl: No, you don't want to do that! 00:11:56.95\00:11:57.88 >>John: All right. 00:11:57.91\00:11:59.15 >>Dr. Westerdahl: But you can use it and make a flour with it, 00:11:59.18\00:12:01.12 and use it in grains and different types of healthy 00:12:01.15\00:12:03.79 bakery-type products. 00:12:03.82\00:12:05.39 Also, just cooking barley up is really good. 00:12:05.42\00:12:08.66 It's very good to add, just as a cereal. 00:12:08.69\00:12:11.13 And you'll find, of course, barley a lot in vegetable soups. 00:12:11.16\00:12:14.20 >>John: What's next? 00:15:04.27\00:15:05.07 >>Dr. Westerdahl: And then garlic, 00:15:05.10\00:15:05.77 one of my favorite vegetables. 00:15:05.80\00:15:07.97 Garlic actually was a food and a medicine 00:15:08.00\00:15:10.94 with the children of Israel long before Moses led them. 00:15:10.97\00:15:14.24 And, uh, what's exciting about garlic 00:15:14.28\00:15:16.75 is it's a heart-healthy food, 00:15:16.78\00:15:19.05 been shown in a number of studies to help you lower your 00:15:19.08\00:15:21.02 bad LDL cholesterol and increase the good HDL cholesterol. 00:15:21.05\00:15:25.75 It prevents blood clotting, has antibacterial properties, 00:15:25.79\00:15:29.46 and is listed as one of the top anti-cancer foods. 00:15:29.49\00:15:32.56 >>John: Fantastic. I like that. 00:15:32.59\00:15:34.13 All right. 00:15:34.20\00:15:35.10 >>Dr. Westerdahl: And then we have grapes, 00:15:35.13\00:15:37.23 and also raisins. 00:15:37.27\00:15:38.97 >>John: Do you think that grapes that were brought back 00:15:39.00\00:15:40.57 from the Promised Land were that size, or a little bit bigger? I'm John Bradshaw. 00:18:13.39\00:18:15.82 Thanks for joining me. 00:18:15.86\00:18:16.89 In the last couple of minutes, my guest, 00:18:16.93\00:18:18.56 Dr. John Westerdahl, has rushed off to the grocery store 00:18:18.59\00:18:21.73 and rushed back again, with more healing foods of the Bible. 00:18:21.76\00:18:25.60 And they look great. 00:18:25.63\00:18:26.63 I see hummus, and pistachios and honey, 00:18:26.67\00:18:30.34 and olives; some of my favorite foods. 00:18:30.37\00:18:32.07 How are these healing foods of the Bible? 00:18:32.11\00:18:35.04 >>Dr. Westerdahl: Well, they're all great, 00:18:35.08\00:18:35.98 and they're delicious and nutritious. 00:18:36.01\00:18:37.51 And we're going to start off with the first ones, 00:18:37.55\00:18:39.11 and these are beans, peas and lentils. 00:18:39.15\00:18:41.52 These are the fava beans from the Holy Land 00:18:41.55\00:18:43.55 that were used quite often, 00:18:43.59\00:18:44.82 and the white beans that were used often in biblical times, 00:18:44.85\00:18:47.46 as well as the lentils. 00:18:47.49\00:18:48.79 And these beans, peas and lentils 00:18:48.82\00:18:50.29 are very rich sources of vegetable protein, 00:18:50.33\00:18:53.80 high levels of protein, 00:18:53.83\00:18:55.83 without all that cholesterol and saturated fat 00:18:55.86\00:18:58.23 you get from meat products and so forth. 00:18:58.27\00:19:01.17 And, uh, they are also, one of the other benefits 00:19:01.20\00:19:03.47 with this is they're high in the soluble fiber. 00:19:03.51\00:19:06.14 So, not only do they have no cholesterol or saturated fat in 00:19:06.17\00:19:09.74 them; they have a fiber that helps you lower your 00:19:09.78\00:19:12.48 cholesterol, because of the soluble fiber. 00:19:12.51\00:19:14.85 >>John: Something about fibrous foods, too: 00:19:14.88\00:19:16.22 you eat them and you feel more full than if you're eating 00:19:16.25\00:19:19.49 foods that lack fiber and they're just kind of empty. 00:19:19.52\00:19:21.39 >>Dr. Westerdahl: That's right. 00:19:21.42\00:19:22.62 And the one thing they're finding out more in the research 00:19:22.66\00:19:24.36 today is eating more beans is very helpful for diabetics 00:19:24.39\00:19:27.96 trying to keep their blood sugar under control. 00:19:27.96\00:19:29.63 >>John: Correct. 00:19:29.66\00:19:30.63 >>Dr. Westerdahl: Now, one of the foods that, 00:19:30.67\00:19:32.23 uh, another type of bean, actually, 00:19:32.27\00:19:34.74 a legume, is, is garbanzo beans. 00:19:34.77\00:19:37.94 And, of course, you make hummus with them. 00:19:37.97\00:19:40.08 And that's one of the traditional Bible foods, 00:19:40.11\00:19:42.88 healing foods, that was used in ancient times as a, 00:19:42.91\00:19:45.78 as a garnish, or a relish, I should say, 00:19:45.81\00:19:48.25 to use with, like, that whole-wheat pita bread. 00:19:48.28\00:19:50.52 >>John: Now, in some places we call these chickpeas. 00:19:50.55\00:19:52.75 >>Dr. Westerdahl: Yes. 00:19:52.79\00:19:53.72 Chickpeas is another common name for them. 00:19:53.76\00:19:54.96 >>John: But as long as you can call the end product hummus, 00:19:54.99\00:19:56.99 you're doing okay. 00:19:57.03\00:19:57.86 >>Dr. Westerdahl: That's right. 00:19:57.89\00:19:58.56 >>John: This is fantastic stuff. 00:19:58.59\00:19:59.53 >>Dr. Westerdahl: It really is. 00:19:59.56\00:20:00.53 >>John: Okay, and it's not hard to make. 00:20:00.56\00:20:01.60 It's easy to find. 00:20:01.63\00:20:02.83 Not too expensive to buy by any stretch of the imagination. 00:20:02.86\00:20:05.30 Add to that some pita bread, and you're good to go. 00:20:05.33\00:20:07.80 >>Dr. Westerdahl: You really are. 00:20:07.84\00:20:08.74 >>John: And this is good for you. 00:20:08.77\00:20:09.87 >>Dr. Westerdahl: And it's good for you as well. 00:20:09.90\00:20:11.01 >>John: In Bible times, and in the Mediterranean part 00:20:11.04\00:20:13.27 of the world, they eat this. 00:20:13.31\00:20:14.48 >>Dr. Westerdahl: They eat that all the time. 00:20:14.51\00:20:15.64 It's just, it's a staple. 00:20:15.68\00:20:16.95 >>John: Mm-hmm. Let's go to the next one. 00:20:16.98\00:20:19.08 >>Dr. Westerdahl: Okay, the next one is a grain, 00:20:19.11\00:20:20.98 and this is millet. 00:20:21.02\00:20:22.38 When someone tells you they eat like a bird, 00:20:22.42\00:20:24.22 they're probably eating millet, 00:20:24.25\00:20:25.55 because that's what bird seed is. 00:20:25.59\00:20:27.52 >>Dr. Westerdahl: But millet is used in many bread products. 00:20:27.56\00:20:30.26 It's a grain in itself that you can cook up 00:20:30.29\00:20:32.49 and make as a hot cereal. 00:20:32.53\00:20:34.03 And it's a very good source of fiber, 00:20:34.10\00:20:35.96 and provides some vegetable protein as well. 00:20:36.00\00:20:38.13 >>John: And what I can, what I can see here is that 00:20:38.17\00:20:40.70 if somebody's eating stuff they know is just not real good, 00:20:40.74\00:20:43.84 you can substitute some things out 00:20:43.87\00:20:45.71 and some things in to take their place. 00:20:45.74\00:20:47.58 >>Dr. Westerdahl: Yes. 00:20:47.61\00:20:48.51 >>John: And just simple changes result in 00:20:48.54\00:20:49.81 really good benefits to the health. 00:20:49.84\00:20:51.18 >>Dr. Westerdahl: Right. 00:20:51.21\00:20:52.18 Getting the wide variety of foods is important. 00:20:52.21\00:20:53.88 And, you know, choose the ones that you like, 00:20:53.92\00:20:55.45 and try different recipes. 00:20:55.48\00:20:56.95 Now, of course, since the Garden of Eden times, 00:20:56.99\00:20:59.05 nuts were eaten all the time by, 00:20:59.09\00:21:02.22 in the Middle East and in Bible times. 00:21:02.26\00:21:04.16 You've got pistachios, as you mentioned, walnuts, almonds. 00:21:04.19\00:21:07.66 All these were favorite nuts and are still used traditionally 00:21:07.73\00:21:10.80 in the Mediterranean diet. 00:21:10.83\00:21:12.23 >>John: Mm-hmm. 00:21:12.27\00:21:13.17 Very good for you, they taste wonderful. 00:21:13.20\00:21:15.37 Walnuts loaded with Omega-3s, 00:21:15.40\00:21:17.47 which are, uh... 00:21:17.51\00:21:18.54 >>Dr. Westerdahl: Yes. 00:21:18.57\00:21:19.41 >>John: ...good in combatting cancer 00:21:19.44\00:21:20.94 and other illnesses as well. 00:21:20.98\00:21:22.18 >>Dr. Westerdahl: Yes. They have the healthy types of fat. 00:21:22.21\00:21:23.78 And antioxidants, particularly vitamin E. 00:21:23.81\00:21:26.78 >>John: Great. 00:21:26.82\00:21:27.78 >>Dr. Westerdahl: And, of course, there's 00:21:27.82\00:21:29.05 olives and olive oil, when you think of the Mediterranean diet, 00:21:29.08\00:21:33.05 is very important. 00:21:33.09\00:21:34.56 All types of different olives were eaten. 00:21:34.59\00:21:36.69 Olive oil, and olives, of course, 00:21:36.73\00:21:38.66 have the heart-healthy type of fat. 00:21:38.69\00:21:41.53 When you look for an olive oil, you want to make sure you get, 00:21:41.56\00:21:43.43 ideally, organic, extra virgin olive oil. 00:21:43.47\00:21:46.57 First cold press is really important. 00:21:46.60\00:21:49.14 So it's a healthier type of fat, mono-unsaturated fat. 00:21:49.17\00:21:52.14 And also with olive oil, you see this one here from Greece, 00:21:52.17\00:21:55.51 has, you see it's cloudy. 00:21:55.54\00:21:57.15 That means it's unfiltered and unrefined. 00:21:57.18\00:22:00.22 Many of the olive oils you get in the market are filtered, 00:22:00.25\00:22:03.49 so they're clear, but you're losing a lot of those important, 00:22:03.52\00:22:06.55 healthful benefits when you, when you refine the olive oil. 00:22:06.59\00:22:09.29 >>John: I'll give this back to you. 00:22:09.32\00:22:10.19 Is there a wrong way to use oil? 00:22:10.23\00:22:11.96 I mean, should I deep-fry my candy bars in this, 00:22:11.99\00:22:15.23 in this good, unfiltered Greek olive oil? 00:22:15.26\00:22:18.37 >>Dr. Westerdahl: No, that would ruin this Greek olive oil. 00:22:18.40\00:22:20.70 In fact, it would damage it and destroy a lot of 00:22:20.74\00:22:22.97 the health properties that you find in it. 00:22:23.00\00:22:24.71 >>John: How should I eat this? 00:22:24.74\00:22:25.87 >>Dr. Westerdahl: To use olive oil, first, cold pressed, 00:22:25.91\00:22:28.48 lower temperatures like on your salad-type foods is very good. 00:22:28.51\00:22:33.05 But if you do it with cooking, 00:22:33.08\00:22:34.38 use it at low temperature cooking, 00:22:34.42\00:22:35.92 because cooking high temperatures 00:22:35.95\00:22:37.29 with oils really destroys it. 00:22:37.32\00:22:38.62 >>John: And clearly there's a way to eat 00:22:38.65\00:22:40.59 that doesn't contribute to your overall well-being. 00:22:40.62\00:22:43.06 >>Dr. Westerdahl: Right. 00:22:43.09\00:22:44.06 >>John: So that's why we're talking about 00:22:44.09\00:22:44.79 healing foods of the Bible today. 00:22:44.83\00:22:46.80 And these are all the good things. 00:22:46.83\00:22:49.43 >>Dr. Westerdahl: Then we have leeks, 00:22:49.46\00:22:51.33 and that's a famous Jewish food, right? 00:22:51.37\00:22:54.20 And onions. 00:22:54.24\00:22:55.84 >>John: The Welsh love leeks. 00:22:55.87\00:22:57.11 >>Dr. Westerdahl: And these have a lot of the similar properties 00:22:57.14\00:22:59.14 that I mentioned earlier with garlic. 00:22:59.17\00:23:01.04 They have antibacterial properties. 00:23:01.08\00:23:02.84 They have heart-healthy properties. 00:23:02.88\00:23:04.48 And, of course, the great thing about onions and leeks, 00:23:04.51\00:23:07.05 they add great flavor to your recipe. 00:23:07.08\00:23:09.28 >>John: Oh yeah.
