[Music] JB: Thanks for joining me today. 00:01:30.42\00:01:51.44 I'm John Bradshaw and this is It Is Written. 00:01:51.44\00:01:55.28 You know, it is said that you are what you eat; but if you 00:01:55.28\00:01:59.28 survey the population as a whole, you find out that a whole 00:01:59.28\00:02:02.22 lot of people are ... sick, and could it be that many 00:02:02.22\00:02:07.32 people are sick today because they are what they eat. 00:02:07.32\00:02:13.19 Now, why does this even matter on a Bible discussion program 00:02:13.19\00:02:17.87 such as It Is Written? Well, I'll tell you why. 00:02:17.87\00:02:20.04 Jesus said He came into this world so that we might have life 00:02:20.04\00:02:23.87 and that we might live it more abundantly. 00:02:23.87\00:02:26.91 But in the midst of an obesity epidemic, 00:02:26.91\00:02:29.54 an increasing-- radically increasing-- 00:02:29.54\00:02:32.51 incidence of things such as diabetes and other 00:02:32.51\00:02:34.82 lifestyle illnesses, it doesn't look like 00:02:34.82\00:02:38.02 a lot of people are enjoying a more abundant life, 00:02:38.02\00:02:40.29 but instead a less abundant life. 00:02:40.29\00:02:43.12 Let's see if we can get to the bottom of this today and find 00:02:43.12\00:02:45.83 out how we can enjoy the more abundant life 00:02:45.83\00:02:49.16 that Jesus offers to us. I'm being joined today by my 00:02:49.16\00:02:52.20 guest, Dr. David DeRose, a specialist in the areas of 00:02:52.20\00:02:55.87 internal medicine and preventive medicine. 00:02:55.87\00:02:58.57 We'll talk about that today, big-time. 00:02:58.57\00:03:00.91 Dr. DeRose comes to us from Compass Health Consulting 00:03:00.91\00:03:03.81 in Northern California. I'm glad you're here. 00:03:06.08\00:03:07.28 DD: It's great to be with you, John. 00:03:07.28\00:03:08.52 JB: So it's true, you are what you eat. 00:03:08.52\00:03:10.39 Yeah, you've got to be careful but what we eat impacts us 00:03:10.39\00:03:13.59 in a massive way. DD: Literally, 00:03:13.59\00:03:15.69 we are what we eat. The elements that make up 00:03:15.69\00:03:17.83 our bodies are those very things that we ingested-- 00:03:17.83\00:03:20.16 or that our mother ingested. JB: Somebody mentioned this to 00:03:20.16\00:03:22.33 me recently, and I think a lot of people are really surprised 00:03:22.33\00:03:24.73 by this. Your blood is made from 00:03:24.73\00:03:30.37 what you eat; what you put into your body. 00:03:30.37\00:03:32.41 What you put in actually, literally, physically becomes 00:03:32.41\00:03:35.71 part of who you are. Correct or not? 00:03:35.71\00:03:37.15 DD: That's right. It's not just your blood, 00:03:37.15\00:03:38.51 it's every single cell of your body. 00:03:38.51\00:03:40.52 I mean, those are the raw materials that make up the body. 00:03:40.52\00:03:43.25 They have to come from somewhere. 00:03:43.25\00:03:44.69 They don't just come out of the air, 00:03:44.69\00:03:46.62 although oxygen, of course, does. 00:03:46.62\00:03:49.26 But we actually need to eat in order to make every cell 00:03:49.26\00:03:51.99 in our body. JB: So, as cells are being 00:03:51.99\00:03:53.96 regenerated, rejuvenated, repaired, it all comes back to 00:03:53.96\00:03:58.27 the fact they are being made from-- what we are is being 00:03:58.27\00:04:01.20 made from-- what we put in. DD: That's right. 00:04:01.20\00:04:05.01 And some of those cells are turning over very rapidly. 00:04:05.01\00:04:07.44 You mentioned the red blood cells. 00:04:07.44\00:04:08.61 They turn over about every three months, about a hundred-day 00:04:08.61\00:04:12.25 lifespan for the red blood cell. And although some things are 00:04:12.25\00:04:15.22 recycled-- like the iron in the red blood cell, 00:04:15.22\00:04:18.12 that's largely recycled-- but other things we 00:04:18.12\00:04:20.62 need to ingest in order to make those new cellular components. 00:04:20.62\00:04:24.99 JB: You know, it seems to me, if we are being regenerated at 00:04:24.99\00:04:27.56 a cellular level by the things that we put into our bodies, 00:04:27.56\00:04:31.67 wouldn't just knowing that make you stop and say, well, I need 00:04:31.67\00:04:34.44 to be putting in good stuff to make good cells or red blood 00:04:34.44\00:04:39.24 cells or whatever. DD: One of my favorite texts 00:04:39.24\00:04:41.84 when we speak about this topic actually 00:04:41.84\00:04:43.48 is in the book of Genesis. JB: All right. 00:04:43.48\00:04:45.58 DD: Because there God is creating a perfect world. 00:04:45.58\00:04:49.85 And in Genesis 1-- JB: Right at the beginning. 00:04:49.85\00:04:52.12 DD: That's right, right at the beginning. 00:04:52.12\00:04:53.66 First chapter of the Bible, you go down to verse 29 and you see 00:04:53.66\00:04:57.53 that God has a specific plan, as far as our nutritional 00:04:57.53\00:05:01.60 program. God said, "See, I have given you 00:05:01.60\00:05:04.80 every herb that yields seed which is on the face of all the 00:05:04.80\00:05:07.84 earth and every tree whose fruit yields seed, 00:05:07.84\00:05:12.04 to you it shall be for food." God is giving mankind, 00:05:12.04\00:05:16.04 humankind, a vegetarian diet in the very beginning. 00:05:16.04\00:05:20.65 And what we find today, John, is the optimal diet to avoid 00:05:20.65\00:05:24.09 most of these chronic diseases that we're talking about 00:05:24.09\00:05:26.92 is a diet that focuses on those whole plant foods. 00:05:26.92\00:05:30.19 JB: Okay, but also, later on, God said, 00:05:30.19\00:05:33.19 "Take the Passover lamb"-- DD: No question. 00:05:33.19\00:05:36.60 JB: And then made out of kale and all of that-- 00:05:36.60\00:05:38.73 DD: You've got it. JB: Well, they eat grass. 00:05:38.73\00:05:40.54 DD: That's right. JB: Take the Passover lamb 00:05:40.54\00:05:43.64 and eat that. That's not a-- 00:05:43.64\00:05:45.21 it may have been a vegetarian lamb, 00:05:45.21\00:05:47.64 but people who eat lambs aren't vegetarians. 00:05:47.64\00:05:49.64 So, what was God doing back here. 00:05:49.64\00:05:51.88 Eat these things that don't have mothers or faces; and over here, 00:05:51.88\00:05:57.09 go ahead and eat meat. DD: And you could even 00:05:57.09\00:05:59.45 take that a step further. When Jesus fed the multitude, 00:05:59.45\00:06:02.76 He didn't just give them bread, which is a vegetarian product. 00:06:02.76\00:06:07.10 He gave them-- JB: Bread and fish. 00:06:07.10\00:06:09.13 DD: That's right. JB: So, are we seeing 00:06:09.13\00:06:11.27 a contradiction here? DD: What I find so interesting, 00:06:11.27\00:06:13.60 John. It's an excellent question. 00:06:13.60\00:06:15.44 God meets people where they're at. 00:06:15.44\00:06:18.24 God's first concern-- as I read the Bible as both a physician 00:06:18.24\00:06:21.74 and as a Bible student-- His first concern has always 00:06:21.74\00:06:25.05 been our spiritual health and our relationship with Him. 00:06:25.05\00:06:28.58 But you see this theme running throughout the Bible. 00:06:28.58\00:06:31.35 When God wants to give people an optimal diet, whether it's in 00:06:31.35\00:06:34.49 Genesis or in their wilderness wanderings, God does not give 00:06:34.49\00:06:38.49 them animal products. There was no raining of quail 00:06:38.49\00:06:44.30 until the people demanded it, if you will. 00:06:44.30\00:06:46.60 JB: And then when they ate the quail, 00:06:46.60\00:06:48.10 they became sick from eating it. DD: Yeah, at least 00:06:48.10\00:06:49.97 the second time around. JB: So in the wilderness, 00:06:49.97\00:06:51.91 God gave them a type of food that matched up with what 00:06:51.91\00:06:55.64 we find in Genesis chapter 1. DD: Exactly. 00:06:55.64\00:06:58.01 So, here's the interesting thing, though. 00:06:58.01\00:06:59.81 Let's talk about some of the things we want to avoid today, 00:06:59.81\00:07:01.68 and it really brings out this dialogue. 00:07:01.68\00:07:04.82 The lamb of Jesus' day; the fish of Jesus' day. 00:07:04.82\00:07:07.89 They didn't have one of the big problems that we're dealing with 00:07:07.89\00:07:10.99 today, and that is an accumulation of toxins 00:07:10.99\00:07:13.93 in their tissues. Today, a huge issue is our 00:07:13.93\00:07:16.87 contaminated environment. And some of the things that are 00:07:16.87\00:07:20.10 contaminating our environment are heavy metals. 00:07:20.10\00:07:23.14 Things like mercury or cadmium. Things like toxins. 00:07:23.14\00:07:28.28 Toxins like DDT, and it's metabolized. 00:07:28.28\00:07:31.48 You say, "Well, we don't use that anymore." 00:07:31.48\00:07:32.71 But it's still in the environment. 00:07:32.71\00:07:34.18 Lead-- still in the environment. What happens is, if you look at 00:07:34.18\00:07:37.52 living creatures, the higher up you move on the food chain, 00:07:37.52\00:07:43.02 the greater the concentration of those toxins. 00:07:43.02\00:07:45.76 Roughly speaking, about a tenfold increase, 00:07:45.76\00:07:49.40 every level you go up. You take the phytoplankton, 00:07:49.40\00:07:52.97 living in the water. Those waters are contaminated. 00:07:52.97\00:07:56.04 They have a concentration of a toxin in their tissue. 00:07:56.04\00:07:59.94 Then you look at the small fish that eat the phytoplankton. 00:07:59.94\00:08:03.35 Roughly about 10 times as much of that toxin will be in their 00:08:03.35\00:08:06.72 tissue, gram for gram. You go to the bigger fish 00:08:06.72\00:08:10.95 that eats the smaller fish. Now you've got a hundred times 00:08:10.95\00:08:13.62 what was in that phytoplankton. When you get up to things 00:08:13.62\00:08:16.76 very high on the food chain, like the birds of prey, you can 00:08:16.76\00:08:20.53 understand why the California condor was dying out, before we 00:08:20.53\00:08:24.63 started to get serious about controlling the environment. 00:08:24.63\00:08:27.94 It doesn't mean all the toxins are gone, but the point is, 00:08:27.94\00:08:31.01 those foods that in Jesus' day, we would say would be 00:08:31.01\00:08:35.04 good sources. People living on the shores 00:08:35.04\00:08:36.98 of the Sea of Galilee. Jesus wouldn't reasonably 00:08:36.98\00:08:39.18 say you can't have fish; that was a staple in their diet. 00:08:39.18\00:08:42.42 But a much healthier choice back then than it is today. 00:08:42.42\00:08:45.85 JB: It's true that you are what you eat, and you want to live a 00:08:45.85\00:08:47.92 long, happy, abundant, healthy life. 00:08:47.92\00:08:51.46 The longer and healthier you can live, the better quality of life 00:08:51.46\00:08:54.13 you can have, on balance, and the more 00:08:54.13\00:08:56.67 you can glorify God. So, if you are what you eat, 00:08:56.67\00:09:00.87 what are you eating? Dr. DeRose, today we're talking 00:10:58.65\00:11:01.62 about what people eat. That old saying, 00:11:01.62\00:11:04.09 you are what you eat. And a moment ago, 00:11:04.09\00:11:05.99 we were starting to talk about foods that are a little 00:11:05.99\00:11:08.56 higher up the food chain. The higher up you go, the 00:11:08.56\00:11:10.77 greater the concentration of toxins, and perhaps poisons and 00:11:10.77\00:11:15.07 heavy metals in those foods. The bigger foods, 00:11:15.07\00:11:17.94 more than the smaller. In the beginning God gave the 00:11:17.94\00:11:21.44 human family, without a doubt, a vegetarian, 00:11:21.44\00:11:23.61 a plant-based diet. Then later He said, well, okay, 00:11:23.61\00:11:27.35 you certainly may eat some of this or some of that. 00:11:27.35\00:11:29.75 He never did say you'll be better for it. 00:11:29.75\00:11:32.75 And you notice too, that when animals entered the menu was 00:11:32.75\00:11:38.56 at the same time that people started living dramatically 00:11:38.56\00:11:40.56 shorter lives. DD: Very interesting. 00:11:40.56\00:11:42.23 Very interesting. JB: Yeah. 00:11:42.23\00:11:43.57 Clean and unclean food. It's certainly biblical, 00:11:43.57\00:11:46.07 but is it valid today and is it just for the Jews? 00:11:46.07\00:11:49.27 DD: Well, first of all, the distinction of clean 00:11:49.27\00:11:52.87 and unclean animals and today's ever being a Jew. 00:11:52.87\00:11:56.28 If you read the account of the flood, that great deluge, 00:11:56.28\00:11:59.58 Noah was instructed about the animals, and there were clean 00:11:59.58\00:12:03.15 and unclean that were identified in that account. 00:12:03.15\00:12:06.76 So it's not something that God added just for the benefit 00:12:06.76\00:12:09.69 of the Jews. JB: In Genesis 7, in verse 2, 00:12:09.69\00:12:13.43 "Of every clean beast thou shalt take to thee by sevens, 00:12:13.43\00:12:16.43 the male and the female, and of the beasts that are 00:12:16.43\00:12:18.53 not clean by two, the male and his female." 00:12:18.53\00:12:21.20 God identifying clean and unclean animals before there was 00:12:21.20\00:12:24.17 even a Jew on the planet. DD: And many have said, 00:12:24.17\00:12:26.81 "Well, why?" Well, we see there's sacrifice 00:12:26.81\00:12:30.21 after the flood, but there was also going to be apparently a 00:12:30.21\00:12:32.68 necessity to eat some of those animals after all the vegetation 00:12:32.68\00:12:36.58 was essentially wiped off the earth. 00:12:36.58\00:12:38.89 JB: And if you ate one of the unclean, 00:12:38.89\00:12:40.26 you'd go from two to one. The species would be gone. 00:12:40.26\00:12:42.82 DD: And so the very point about how many were taken on was 00:12:42.82\00:12:45.33 making a powerful, powerful statement about what were 00:12:45.33\00:12:48.56 sacrificial and potentially permissible animals to eat-- 00:12:48.56\00:12:52.33 only those that were clean. JB: Is there health benefits to 00:12:52.33\00:12:55.57 abstaining from these animals that are called unclean? 00:12:55.57\00:12:58.31 DD: No question. Now, you've identified some 00:12:58.31\00:13:00.08 animals, like the horse and the rabbit, 00:13:00.08\00:13:02.94 that are largely vegetarian. So they'd be lower on the food 00:13:02.94\00:13:06.41 chain, if you will. But many of the animals that 00:13:06.41\00:13:09.78 are excluded-- you read a description, for example, 00:13:09.78\00:13:12.15 in Leviticus 11 of what those unclean animals are-- 00:13:12.15\00:13:16.09 and you'll find the scavengers, like you mentioned. 00:13:16.09\00:13:18.29 The pigs, the crustacea of the ocean. 00:13:18.29\00:13:22.46 You'll also find things that are very high on the food chain, 00:13:22.46\00:13:26.13 like the birds of prey. All of those things 00:13:26.13\00:13:29.20 were off limits. We know today, 00:13:29.20\00:13:31.37 the technical term is called "biomagnification." 00:13:31.37\00:13:35.01 What that means is, like we were expressing earlier in the show, 00:13:35.01\00:13:39.01 if you eat things that are low on the food chain-- those small, 00:13:39.01\00:13:41.65 little fish-- they're going to have low levels of toxins 00:13:41.65\00:13:44.92 and contaminants. As you move up the level, 00:13:44.92\00:13:48.99 you will get higher and higher levels of toxins. 00:13:48.99\00:13:51.16 JB: When you think about something like a shellfish, 00:13:51.16\00:13:54.03 you can say, well, if God didn't intend for us to eat it, 00:13:54.03\00:13:56.70 why did He make it? And the shellfish 00:13:56.70\00:13:59.20 is a classic example. They've shown this in places 00:13:59.20\00:14:01.60 such as the Chesapeake Bay. When you introduce shellfish, 00:14:01.60\00:14:04.84 they filter the water. They take out the toxins and 00:14:04.84\00:14:09.18 return the good water back into the ecosystem. 00:14:09.18\00:14:12.38 So, thank God that we have them, but imagine when you're eating 00:14:12.38\00:14:14.65 that, you're eating all those toxins. 00:14:14.65\00:14:17.59 DD: And this brings up a whole other point: many transmittable 00:14:17.59\00:14:20.12 diseases are traced to these unclean foods. 00:14:20.12\00:14:23.49 You mentioned pork earlier; you mentioned shellfish. 00:14:23.49\00:14:26.23 Pork is a classic example. Our Centers for Disease Control 00:14:26.23\00:14:29.70 in the United States speak about neglected parasitic 00:14:29.70\00:14:32.90 diseases that are not on the radar screen. 00:14:32.90\00:14:35.10 One of them is cysticercosis. It actually comes 00:14:35.10\00:14:38.91 from the pork tapeworm. And this can cause 00:14:38.91\00:14:42.31 serious illness. It's actually-- John, 00:14:42.31\00:14:45.01 this may be surprising to you-- one of the leading causes, 00:14:45.01\00:14:48.25 if not the leading cause, of epilepsy worldwide, 00:14:48.25\00:14:52.35 is from the pork tapeworm. Something called 00:14:52.35\00:14:54.39 neurocysticercosis. Cysts that actually invade the 00:14:54.39\00:14:59.03 brain and are a leading cause of seizure worldwide. 00:14:59.03\00:15:02.23 As I read through the Bible, I find it fascinating that when 00:15:02.23\00:15:05.37 Jesus was resurrected, in Luke 24, 00:15:05.37\00:15:08.20 we read those stories of Jesus' encounter with the disciples. 00:15:08.20\00:15:11.04 Or on the Emmaus Road. Jesus points them back to the 00:15:11.04\00:15:13.94 Old Testament. Many of my Christian friends 00:15:13.94\00:15:16.75 think the Old Testament is a book that's just to be 00:15:16.75\00:15:19.48 set aside. Jesus wanted their faith 00:15:19.48\00:15:21.85 anchored in the Old Testament. Now, he was especially 00:15:21.85\00:15:25.19 referring to the prophecies that spoke of Him. 00:15:25.19\00:15:27.92 But what's interesting to me as a physician is-- I don't know of 00:15:27.92\00:15:31.06 any example where God gave a ceremonial law that didn't have 00:15:31.06\00:15:38.33 some significant health connections that persist today. 00:15:38.33\00:15:42.17 Well, we're speaking about these so-called ceremonial health 00:15:42.17\00:15:44.27 laws. In other words, 00:15:44.27\00:15:45.97 God didn't tell them to avoid unclean foods just 00:15:45.97\00:15:48.78 to each some spiritual lesson; there was sound health 00:15:48.78\00:15:52.18 information there. We could talk about 00:15:52.18\00:15:53.78 circumcision, or how the Jews were able to be clean after 00:15:53.78\00:15:58.12 contact with death. All of these things have 00:15:58.12\00:16:00.49 valid health principles. But you don't have to sacrifice 00:16:00.49\00:16:03.56 a red heifer today. Do you see my point? 00:16:03.56\00:16:06.39 JB: Absolutely, but bring them back to this, because someone's 00:16:06.39\00:16:08.80 saying, "Oh, look, this is well and good, but those guys are off 00:16:08.80\00:16:10.57 base, because that was just a ceremony, and when Jesus died, 00:16:10.57\00:16:16.10 none of that mattered anymore." DD: Let me go to this example. 00:16:16.10\00:16:20.44 Maybe we should turn in our Bibles to it. 00:16:20.44\00:16:21.98 I'm turning to the book of Numbers. 00:16:21.98\00:16:24.25 It's a fascinating example. I'm going to Numbers chapter 19, 00:16:24.25\00:16:29.28 and in Numbers 19 we read these laws of purification. 00:16:29.28\00:16:34.32 This is the "red heifer sacrifice." 00:16:34.32\00:16:38.86 Any Christian who's studied this realizes that the red heifer was 00:16:38.86\00:16:42.03 symbolizing Jesus. He was the sinless one 00:16:42.03\00:16:45.13 who was killed outside the camp. Today, you and I, as Christians, 00:16:45.13\00:16:50.41 don't need to sacrifice a red heifer. 00:16:50.41\00:16:52.61 Jesus IS our all-sufficient sacrifice. 00:16:52.61\00:16:56.91 JB: Right. DD: But if you read through 00:16:56.91\00:16:58.48 Numbers 19, you find that embedded in that red heifer 00:16:58.48\00:17:02.22 sacrifice and its aftermath were restrictions and laws for 00:17:02.22\00:17:07.06 scrupulous cleanliness after contact with death. 00:17:07.06\00:17:11.93 Because the Christian world set that aside for decades and 00:17:11.93\00:17:15.33 centuries, we had in the 1800s, in Europe, for example, 00:17:15.33\00:17:19.80 epidemics of childbirth fever. Ignaz Semmelweis, the famous 00:17:19.80\00:17:24.74 Austrian physician who brought this to the fore, he realized 00:17:24.74\00:17:30.21 that women were dying. One in six women or more were 00:17:30.21\00:17:33.75 dying in childbirth, in the main hospital there in Vienna, 00:17:33.75\00:17:37.45 because doctors would examine the dead women and then they'd 00:17:37.45\00:17:40.69 go and examine the living women. They were transmitting disease. 00:17:40.69\00:17:43.86 If they'd followed the principles of Numbers 19, 00:17:43.86\00:17:47.66 this would never have happened. Dr. David DeRose 00:20:04.37\00:20:07.37 is joining me today. I want to ask you, Dr. DeRose, 00:20:07.37\00:20:10.94 where are the problems? What are the problem areas 00:20:10.94\00:20:14.04 in what we eat? DD: Well, if we want to speak 00:20:14.04\00:20:16.58 physiologically, one of the big ones is fat. 00:20:16.58\00:20:20.55 And the reason I say physiologically is your cell 00:20:20.55\00:20:23.08 membrane is made up of fat, among other things. 00:20:23.08\00:20:27.39 The type of fat you eat will affect how fluid 00:20:27.39\00:20:31.29 that membrane is. You say, well, 00:20:31.29\00:20:32.89 what difference does that make? It's because the cell membrane 00:20:32.89\00:20:35.90 is where the action takes place. In your brain, 00:20:35.90\00:20:39.50 the neurotransmitters, the brain chemicals, 00:20:39.50\00:20:42.20 interact with other membranes. What happens is, 00:20:42.20\00:20:46.64 if you're eating more of the saturated fats, 00:20:46.64\00:20:49.38 more of the trans fats, these two categories of fats, 00:20:49.38\00:20:53.62 they make the cell membranes more rigid and make nerve 00:20:53.62\00:20:57.05 transmission more difficult. They make insulin signaling 00:20:57.05\00:21:00.52 worse, and so they lay the foundation for diabetes. 00:21:00.52\00:21:04.09 So it's not just a question of amount of fat, 00:21:04.09\00:21:06.59 but what kind of fat. Those saturated fats primarily 00:21:06.59\00:21:09.66 in animal products; trans fats in those partially 00:21:09.66\00:21:12.70 hydrogenated vegetable oils. JB: Good fats, avocado; 00:21:12.70\00:21:15.94 good fats in nuts. Those are good fats, right? 00:21:15.94\00:21:18.17 DD: Very interesting. Back in the '90s, people were 00:21:18.17\00:21:21.38 lumping all these together. They were saying nuts 00:21:21.38\00:21:24.15 were bad for you. At least many people in the 00:21:24.15\00:21:25.88 preventive medicine community. But then in the '90s is when 00:21:25.88\00:21:30.39 researchers at Loma Linda University came out with some of 00:21:30.39\00:21:32.92 the early studies showing that nuts had powerful, 00:21:32.92\00:21:36.59 heart-preventive properties, and that started to swing the 00:21:36.59\00:21:40.13 pendulum in the other direction. JB: But the bad fats 00:21:40.13\00:21:41.93 are no good. I want to show you something 00:21:41.93\00:21:43.43 when it comes to fat. Each time you eat that 00:21:43.43\00:21:46.70 well-known burger from that well-known burger chain, 00:21:46.70\00:21:50.07 you're getting that much fat. Dr. DeRose, what does 00:21:50.07\00:21:52.91 the body do with this much fat? DD: That's saturated fat, 00:21:52.91\00:21:56.58 largely saturated. That animal fat. 00:21:56.58\00:21:58.85 JB: Right. DD: What happens is, 00:21:58.85\00:22:00.25 first of all the blood becomes what we call lipemic. 00:22:00.25\00:22:02.42 When you eat that fat, it goes into the blood stream 00:22:02.42\00:22:05.42 and that actually affects the fluidity of the blood. 00:22:05.42\00:22:08.56 But then it has that impact, that long-term impact, 00:22:08.56\00:22:11.56 on the cell membranes, and actually it's setting 00:22:11.56\00:22:14.36 the stage for many of the diseases that we 00:22:14.36\00:22:16.70 experience today. JB: But this is how much 00:22:16.70\00:22:18.60 fat there is in a candy bar. Take a look at this, 00:22:18.60\00:22:20.70 typical candy bar. A small one. 00:22:20.70\00:22:22.94 And this is how much fat there is in a reasonably 00:22:22.94\00:22:26.27 small bag of potato chips. DD: We've cultivated, 00:22:26.27\00:22:29.54 as a society, a desire for higher saturated fat. 00:22:29.54\00:22:34.28 Higher sugar. Higher salt. 00:22:34.28\00:22:36.52 With the research shows us though-- 00:22:36.52\00:22:38.39 let's talk about fat-- as you get away from 00:22:38.39\00:22:40.76 that high fat consumption, your tastes change. 00:22:40.76\00:22:44.93 Big study, interventional study in women with cancer. 00:22:44.93\00:22:48.06 Breast cancer. Decreasing their fat 00:22:48.06\00:22:50.43 consumption-- when they did the pilot study, over the course of 00:22:50.43\00:22:52.53 the year, they found the women that cut their fat dramatically, 00:22:52.53\00:22:56.14 they tended to develop a distaste for the high fat foods 00:22:56.14\00:23:00.94 that they used to enjoy. JB: And this is how much sugar 00:23:00.94\00:23:03.48 there is, in a can of soda. Ah! 00:23:03.48\00:23:06.88 Stop and think. I mean, I wouldn't take 00:23:06.88\00:23:09.75 the top off this and chug this much raw sugar, ever. 00:23:09.75\00:23:13.29 You just wouldn't do it. But you do 00:23:13.29\00:23:15.26 when you buy a can of soda and pour that down your throat. 00:23:15.26\00:23:17.76 DD: And the data really suggests this is one of the things, 00:23:17.76\00:23:20.56 the sugar-sweetened beverages, that are fueling the epidemic 00:23:20.56\00:23:24.37 of obesity our country, John. JB: This is how much there is in 00:23:24.37\00:23:27.14 a cup of ice cream. That's a lot of sugar. 00:23:27.14\00:23:28.94 DD: And you add the fat to that equation, in those foods. 00:23:28.94\00:23:31.71 And many of those same foods that are high in fat and high in 00:23:31.71\00:23:34.04 sugar often are high in salt. Did you know, for example, 00:23:34.04\00:23:37.31 that you can put a lot more salt in a food if it's got 00:23:37.31\00:23:40.12 a lot of sugar in it, and not even taste salty? 00:23:40.12\00:23:42.75 JB: Okay, you'd better go off the ice cream and onto the 00:23:42.75\00:23:45.65 brownies, because, whereas this was as much sugar in a cup of 00:23:45.65\00:23:50.59 ice cream, the one on this end here is as much sugar 00:23:50.59\00:23:53.80 as there is in a brownie. A two-inch-square brownie. 00:23:53.80\00:23:56.80 DD: And who sticks with a two-inch-square brownie? 00:23:56.80\00:23:59.10 JB: Oh, no, it's not good until you've had two or three. 00:23:59.10\00:24:01.54 And when it comes to sugars, you can find in some food products 00:24:01.54\00:24:04.64 2-3-4-5 different sugars, right? There'll be sugar, corn syrup, 00:24:04.64\00:24:08.24 high fructose corn syrup, any number of other sweeteners 00:24:08.24\00:24:11.81 that are in one food item. DD: And the reason why some 00:24:11.81\00:24:14.55 manufacturers apparently do this is you have to list ingredients 00:24:14.55\00:24:18.62 in order of their prevalence in the product. 00:24:18.62\00:24:21.52 So, even though sugar in its various forms may be the 00:24:21.52\00:24:26.16 top ingredient, if you put five different sweeteners in there, 00:24:26.16\00:24:29.86 you may be able to put the whole wheat first, even though it's 00:24:29.86\00:24:32.60 only 10 percent whole wheat and 40 percent sugar. 00:24:32.60\00:24:35.37 JB: Now, are there any sugars that are really pretty good 00:24:35.37\00:24:37.34 for you? Because there's debates about 00:24:37.34\00:24:39.44 high fructose corn syrup, and you read "cane sugar" or "dried 00:24:39.44\00:24:45.25 cane sugar" or whatever. Can I look at that and go, oh, 00:24:45.25\00:24:47.95 it's got that sugar; that's good for me? 00:24:47.95\00:24:49.55 DD: The sweet things we were designed to enjoy are the 00:24:49.55\00:24:52.25 fruits, the sweet vegetables, things of this nature. 00:24:52.25\00:24:55.56 If you're getting those whole foods in nature, 00:24:55.56\00:24:58.46 you can have those things satisfy the sweet tooth. 00:24:58.46\00:25:01.56 No, it's not going to taste like the brownie or the ice 00:25:01.56\00:25:03.26 cream-- not at first. But if you stick with eating 00:25:03.26\00:25:05.80 those healthy sweets that God provided, in Genesis 1, 00:25:05.80\00:25:10.37 you will find a distaste tends to develop for those 00:25:10.37\00:25:13.94 artificially sweetened things. Whether it's "natural sugar" 00:25:13.94\00:25:17.68 that's being used to sweeten it or some artificial sweetener. 00:25:17.68\00:25:21.25 JB: Man, if you get some of those good dates, those medjool 00:25:21.25\00:25:24.35 dates they grow in Indio, California, around there. 00:25:24.35\00:25:28.12 Oh, they're sweet and they're good. 00:25:28.12\00:25:31.03 DD: In moderation, of course. JB: In moderation. 00:25:31.03\00:25:33.63 Some Americans are eating this much salt. 00:25:33.63\00:25:37.53 Two and a half teaspoons of salt in a day. 00:25:37.53\00:25:39.90 Many. It is said that the average 00:25:39.90\00:25:43.07 American is consuming maybe about this much. 00:25:43.07\00:25:46.41 Maybe about this much. DD: One and a half teaspoons. 00:25:46.41\00:25:49.54 JB: Whereas, what we should be consuming is merely this much. 00:25:49.54\00:25:55.28 A teaspoon of salt a day, and no more. 00:25:55.28\00:25:58.29 DD: No. And actually, although people 00:25:58.29\00:26:00.56 have tried to downplay the relationship between salt and 00:26:00.56\00:26:03.36 disease, a major study in the New England Journal of Medicine 00:26:03.36\00:26:06.46 back in 2010 actually looked at all the data, and how many 00:26:06.46\00:26:10.37 people in America are dying because of just having a 00:26:10.37\00:26:14.14 half-teaspoon of salt more a day. 00:26:14.14\00:26:17.51 In other words, if we were to decrease-- all of us, 00:26:17.51\00:26:19.71 across the board-- decrease our sodium 00:26:19.71\00:26:21.84 consumption, salt consumption, by just half a teaspoon, 00:26:21.84\00:26:25.65 we would save tens of thousands of lives from things like 00:26:25.65\00:26:28.72 stroke and heart attack. JB: From a biblical point of 00:26:28.72\00:26:31.39 view, why we're driving at this is because Jesus wants us to 00:26:31.39\00:26:33.62 have a more abundant life. And you say to yourself, 00:26:33.62\00:26:36.62 well, yeah, I'm drinking three sodas a day. 00:26:36.62\00:26:39.89 And I know people who carry around the Big Gulp things. 00:26:39.89\00:26:44.13 They carry them with them, everywhere they go. 00:26:44.13\00:26:46.00 I don't know how much they're getting-- 00:26:46.00\00:26:47.50 it's got to be killing them. Or you say, well, yeah, I'm 00:26:47.50\00:26:50.21 eating lots of ice cream and all of that sugar that comes with 00:26:50.21\00:26:53.04 it, and I'm getting the brownies and whatever. 00:26:53.04\00:26:56.01 What you're advocating, when you say 00:26:56.01\00:26:57.98 decreasing the amount of salt, you're not saying eat no salt, 00:26:57.98\00:27:02.12 eat no sweet stuff; eat zero fat. 00:27:02.12\00:27:06.29 Just make a little change here. Eat moderate amounts. 00:27:06.29\00:27:10.09 Get more of the good and less of the bad, and perhaps start the 00:27:10.09\00:27:14.00 change incrementally. I mean, it would be ideal for 00:27:14.00\00:27:16.50 somebody to go cold turkey, off the bad and onto the good. 00:27:16.50\00:27:19.30 It doesn't always work that way for people. 00:27:19.30\00:27:21.00 But small changes can bring big results. 00:27:21.00\00:27:24.01 DD: They can be powerful, and yet, the most powerful 00:27:24.01\00:27:27.01 things to actually reeducate your taste are larger changes. 00:27:27.01\00:27:31.71 JB: There is hope for you. And for me. 00:27:31.71\00:27:34.12 And I'm glad, because Jesus not only wants to give us the more 00:27:34.12\00:27:38.35 abundant life, but it is through Jesus-- 00:27:38.35\00:27:40.92 through the power of the Holy Spirit-- 00:27:40.92\00:27:42.66 that we can get from where we are, if perhaps 00:27:42.66\00:27:44.69 we're living an unhealthy life. And with the power of God we 00:27:44.69\00:27:47.76 can put down some of the stuff that's simply killing us, and 00:27:47.76\00:27:51.23 take up the sorts of things that will enhance our lives, 00:27:51.23\00:27:54.67 increase our lifespan, and give us a more productive, 00:27:54.67\00:27:57.97 quality life while we're living here on this earth. 00:27:57.97\00:28:01.28 Our time here on this earth is so short, we ought to be making 00:28:01.28\00:28:03.91 the best of it, not ruining it.
