I'm John Bradshaw. 00:00:20.72\00:00:23.42 Thanks for joining me today. 00:00:23.45\00:00:25.32 Well, you know how it goes. 00:00:25.35\00:00:26.35 You get sick. 00:00:26.39\00:00:27.22 You need some help. 00:00:27.26\00:00:28.39 You go to the doctor. 00:00:28.42\00:00:30.19 And the doctor writes you a prescription. 00:00:30.23\00:00:33.60 You take it to the pharmacy or to the drug store. 00:00:33.63\00:00:35.80 You get your little bottle of magic. 00:00:35.83\00:00:37.40 You take one three times a day, and given three or four or five 00:00:37.43\00:00:41.14 days, you're back to good health. 00:00:41.17\00:00:43.14 That's pretty typical 00:00:43.17\00:00:44.64 for those of us living in the Western world. 00:00:44.67\00:00:47.11 In Bible times, however, things were rather different. 00:00:47.14\00:00:51.65 When we consider the Bible, 00:00:51.68\00:00:52.88 we think of God as the Great Physician. 00:00:52.91\00:00:55.85 And in the absence of cardiologists and 00:00:55.88\00:00:58.65 rheumatologists and all the other ologists, 00:00:58.69\00:01:02.12 people then had to deal with rudimentary methods of healing. 00:01:02.16\00:01:05.76 Or they dealt with God, the Great Physician. 00:01:05.79\00:01:11.07 Today, we're going to talk about healing foods of the Bible. 00:01:11.10\00:01:15.84 The thought is that perhaps the Great Physician has given us 00:01:15.87\00:01:20.88 medication that we can get at other places than the drugstore. 00:01:20.91\00:01:25.58 Perhaps at the supermarket or right out of our garden. 00:01:25.61\00:01:29.68 I'm being joined today by my special guest, 00:01:29.72\00:01:31.62 Dr. John Westerdahl, 00:01:31.65\00:01:33.49 a nutritionist from the Bragg Health Institute 00:01:33.52\00:01:36.49 in Santa Barbara, southern California. 00:01:36.52\00:01:38.83 Dr. Westerdahl, thank you for joining me today. 00:01:38.86\00:01:40.40 >>Dr. John Westerdahl: Great to be with you, John. 00:01:40.43\00:01:41.76 >>John: Now, this idea of health and the Christian anyway. 00:01:41.80\00:01:45.07 Why does it matter that Christians look after their 00:01:45.10\00:01:48.64 health, that believers in God should look after their health? 00:01:48.67\00:01:51.74 >>Dr. Westerdahl: Well, you know, 00:01:51.77\00:01:52.67 in the Bible it tells us that our bodies 00:01:52.71\00:01:54.94 are the temple of the Holy Spirit. 00:01:54.98\00:01:57.11 In other words, we need to take care of it, 00:01:57.15\00:01:58.68 not defile that temple, 00:01:58.71\00:02:00.32 but take good care of it and put good things into it, 00:02:00.35\00:02:03.28 is very important. 00:02:03.32\00:02:04.55 >>John: Yeah, but, but, I don't mind getting right into it, 00:02:04.59\00:02:06.89 but it's my body. 00:02:06.92\00:02:08.52 I can do whatever I want with it. 00:02:08.56\00:02:10.23 >>Dr. Westerdahl: Well actually, we were bought with a price. 00:02:10.26\00:02:13.33 Jesus dying on the cross for us. 00:02:13.36\00:02:15.13 So it's not totally our body. 00:02:15.16\00:02:16.40 God gave us this magnificent creation 00:02:16.43\00:02:19.53 that we need to take care of. 00:02:19.57\00:02:20.90 >>John: As a matter of fact, 00:02:20.94\00:02:22.07 it says right in that very verse you were referencing, 00:02:22.10\00:02:23.84 “for you are not your own.” 00:02:23.87\00:02:25.77 >>Dr. Westerdahl: That's right. 00:02:25.81\00:02:27.04 >>John: So that idea that I can do whatever I want with my body 00:02:27.08\00:02:28.41 because, after all, it's mine, it isn't yours really, is it? 00:02:28.44\00:02:31.85 >>Dr. Westerdahl: It really isn't. 00:02:31.88\00:02:32.68 >>John: It belongs to God. 00:02:32.71\00:02:34.18 >>Dr. Westerdahl: We inherited it from God. 00:02:34.22\00:02:35.28 >>John: Let me share a Bible verse here that I think 00:02:35.32\00:02:36.79 is very relevant to what we're talking about. 00:02:36.82\00:02:38.39 How about that? Turned right to the page. 00:02:38.42\00:02:39.79 >>Dr. Westerdahl: Okay. 00:02:39.82\00:02:40.59 >>John: 3 John, verse 2. 00:02:40.62\00:02:43.06 And John, who wrote Revelation and wrote the Gospels, 00:02:43.09\00:02:45.59 he wrote the little Johns as well, three of them. 00:02:45.63\00:02:47.83 3 John 2: “Beloved, 00:02:47.86\00:02:49.80 I wish above all things that thou mayest prosper 00:02:49.83\00:02:52.70 and be in health, 00:02:52.73\00:02:54.44 even as thy soul prospereth.” 00:02:54.47\00:02:56.17 >>Dr. Westerdahl: That's right. And it's connected. 00:02:56.20\00:02:57.61 Because if we are healthy, we can communicate better with God. 00:02:57.64\00:03:03.24 Our minds are clearer. 00:03:03.28\00:03:04.55 We're enjoying life. 00:03:04.58\00:03:05.55 It's kind of hard to be rejoicing all the time 00:03:05.58\00:03:09.08 if you're sick. 00:03:09.12\00:03:10.29 And by having good health, we're of clear mind, 00:03:10.32\00:03:13.89 we can really enjoy a personal relationship with Jesus Christ. 00:03:13.92\00:03:16.99 >>John: John made it very clear that there's a direct 00:03:17.03\00:03:18.69 relationship between our physical health 00:03:18.73\00:03:21.06 and our mental and spiritual health. 00:03:21.10\00:03:23.77 >>Dr. Westerdahl: There really is. 00:03:23.80\00:03:25.10 It's really a wholistic approach that the Bible's all about. 00:03:25.13\00:03:27.87 Wholistic with a W. 00:03:27.90\00:03:30.11 Body, mind and spirit, it is all related. 00:03:30.14\00:03:33.14 And, and the things we're going to talk about today, 00:03:33.17\00:03:34.74 the foods that we eat, 00:03:34.78\00:03:35.98 have a direct relationship and helping us improve that health. 00:03:36.01\00:03:39.51 >>John: Yeah, this looks pretty good. 00:03:39.55\00:03:40.85 I'm not sure whether to talk to you or just, 00:03:40.88\00:03:42.98 just eat the set. 00:03:43.02\00:03:44.89 >>Dr. Westerdahl: There's a lot food here to eat today, 00:03:44.92\00:03:45.92 and all healthy. 00:03:45.95\00:03:46.79 >>John: Maybe a little bit of both. 00:03:46.82\00:03:48.66 Well, it's interesting, isn't it, 00:03:48.69\00:03:51.13 that the Bible talks so much about health? 00:03:51.16\00:03:55.23 Why do you think that is? 00:03:55.26\00:03:57.33 >>Dr. Westerdahl: This book, I believe, 00:03:57.37\00:03:58.93 is one of the greatest books ever written on total wellness, 00:03:58.97\00:04:01.84 preventive medicine, lifestyle medicine. 00:04:01.87\00:04:04.41 God's concerned about our health. 00:04:04.44\00:04:05.64 He wants us to be healthy. 00:04:05.67\00:04:07.38 Within the pages of the Bible 00:04:07.41\00:04:09.11 we see a lot of health principles given to us. 00:04:09.14\00:04:12.48 So it's all there, and He wants us to take advantage of this 00:04:12.51\00:04:15.68 so that we can live life more abundantly. 00:04:15.72\00:04:18.12 >>John: Now, you mentioned something just a moment ago. 00:04:18.15\00:04:19.79 You said lifestyle medicine. 00:04:19.82\00:04:22.06 >>Dr. Westerdahl: Yes. 00:04:22.09\00:04:22.72 >>John: Now, what's that? 00:04:22.76\00:04:23.86 >>Dr. Westerdahl: Lifestyle medicine, it's a new, 00:04:23.89\00:04:25.19 emerging type of medicine that's coming into our country today. 00:04:25.23\00:04:28.16 There's actually what we call the American College 00:04:28.20\00:04:30.10 of Lifestyle Medicine, 00:04:30.13\00:04:31.67 where there are physicians who are specializing 00:04:31.70\00:04:34.50 in treatment with lifestyle, diet, exercise, 00:04:34.54\00:04:39.41 stress management, spiritual wellness, 00:04:39.44\00:04:42.58 as opposed to using just medications. 00:04:42.61\00:04:44.71 Not that they won't use medications for emergencies 00:04:44.75\00:04:47.68 or as needed with patients. 00:04:47.72\00:04:50.15 But, we are finding out more and more, that the foods that we eat 00:04:50.19\00:04:54.09 are healing to our bodies. 00:04:54.12\00:04:55.52 If we eat the right type of diet, 00:04:55.56\00:04:57.99 we can prevent, treat, and even reverse 00:04:58.03\00:05:00.73 many of the diseases that are killing us today. 00:05:00.76\00:05:03.26 >>John: Now, I have heard of people with diabetes... 00:05:03.30\00:05:05.67 >>Dr. Westerdahl: Yes. 00:05:05.70\00:05:06.74 >>John: ...getting off their diabetes medications, 00:05:06.77\00:05:08.37 and seeing their adult-onset diabetes going away. 00:05:08.40\00:05:11.54 I've heard of people reversing heart disease. 00:05:11.57\00:05:13.71 I, I must be responsible enough to say, perhaps 00:05:13.74\00:05:16.31 this isn't possible for everybody. 00:05:16.34\00:05:17.85 >>Dr. Westerdahl: Right. 00:05:17.88\00:05:18.75 >>John: But certainly for many people, 00:05:18.78\00:05:20.25 there are some well-known physicians 00:05:20.28\00:05:21.65 who have said that they can get, 00:05:21.68\00:05:22.88 they can reverse heart disease without using medication in, 00:05:22.92\00:05:28.19 in many instances. 00:05:28.22\00:05:29.02 This is very exciting. 00:05:29.06\00:05:30.09 >>Dr. Westerdahl: Yes, it is. 00:05:30.13\00:05:31.23 And it's very well documented in medical literature. 00:05:31.26\00:05:33.76 Lifestyle medicine, using lifestyle to treat diseases, 00:05:33.80\00:05:38.23 to prevent diseases, and in many cases even reverse the diseases. 00:05:38.27\00:05:43.17 >>John: Now, it was Hippocrates that said, 00:05:43.20\00:05:45.24 “Let your food be your medicine, and your medicine be your food.” 00:05:45.27\00:05:50.21 >>Dr. Westerdahl: Yes. 00:05:50.25\00:05:51.31 >>John: If some of us were honest with ourselves, 00:05:51.35\00:05:53.48 and we went into the pantry or the food cupboard at home, 00:05:53.52\00:05:56.12 we'd say, well, you know, those chocolate cookies 00:05:56.15\00:05:58.85 aren't going to be much in the way of medicine. 00:05:58.89\00:06:02.06 So when Hippocrates said that, what foods was he referring to? 00:06:02.09\00:06:07.03 >>Dr. Westerdahl: He was talking about natural, 00:06:07.03\00:06:09.20 whole, unprocessed foods. 00:06:09.23\00:06:12.07 That's what he promoted with his own patients. 00:06:12.10\00:06:14.10 He used nutrition with his patients. 00:06:14.14\00:06:16.10 He used lifestyle medicine. 00:06:16.14\00:06:17.84 >>John: You know, there are a lot of diets available today, 00:06:17.87\00:06:19.61 and some of the well-known ones, South Beach, 00:06:19.64\00:06:21.21 Atkins, Paleo, um, seafood, that is, 00:06:21.24\00:06:25.15 see food and eat it. 00:06:25.18\00:06:26.28 >>Dr. Westerdahl: That's right (laughs). 00:06:26.31\00:06:27.98 >>John: But what about this Mediterranean diet? 00:06:28.02\00:06:30.35 You hear a lot about that. 00:06:30.39\00:06:31.42 It's hyped as, or promoted as being very good. 00:06:31.45\00:06:33.62 Is it very good? 00:06:33.66\00:06:34.69 And if it is, why? 00:06:34.72\00:06:36.19 >>Dr. Westerdahl: Well, the traditional Mediterranean diet 00:06:36.22\00:06:37.76 is very good. 00:06:37.79\00:06:38.93 And it is healing, uh, 00:06:38.96\00:06:40.93 because it's a diet that's based on whole, 00:06:40.96\00:06:43.67 unprocessed food, mostly from plant foods. 00:06:43.70\00:06:47.54 The types of fat that you find in the Mediterranean diet 00:06:47.57\00:06:49.57 are the healthier types of fats, in general, 00:06:49.60\00:06:52.54 as compared to the high-saturated fats, 00:06:52.57\00:06:54.94 high-cholesterol foods that we eat in the Western countries. 00:06:54.98\00:06:57.65 >>John: Well, there's a lot of food in front of us here, 00:06:57.68\00:06:59.35 and I'm guessing that much of this is 00:06:59.38\00:07:01.05 representative of the Mediterranean diet. 00:07:01.08\00:07:03.45 I see figs, and I see dates, and I see grapes and raisins 00:07:03.49\00:07:08.32 and grains, and good stuff. 00:07:08.36\00:07:11.53 The healing foods of the Bible. 00:07:11.56\00:07:13.50 We'll find out what they are specifically, 00:07:13.53\00:07:15.66 and how they can be a blessing to you, 00:07:15.70\00:07:18.00 with Dr. John Westerdahl, in just a moment. 00:07:18.03\00:07:20.74 >>John: The Bible tells us that our body 00:07:21.47\00:07:23.20 is the temple of the Holy Spirit. 00:07:23.24\00:07:25.01 God wants us to have good health. 00:07:25.04\00:07:26.71 We need to take care of ourselves. 00:07:26.74\00:07:28.54 The question is, how do we do that? I'm John Bradshaw. 00:08:22.63\00:08:25.20 Thanks for joining me today. 00:08:25.23\00:08:26.63 With me is Dr. John Westerdahl, 00:08:26.67\00:08:29.07 a nutritionist from the Bragg Health Institute 00:08:29.10\00:08:30.71 in Santa Barbara, California. 00:08:30.74\00:08:32.07 And today we are talking about healing foods of the Bible. 00:08:32.11\00:08:35.78 I'm interested in the idea that foods can actually heal, 00:08:35.81\00:08:39.75 like medicine. 00:08:39.78\00:08:41.02 So in front of us here, 00:08:41.05\00:08:42.65 there's all kinds of different foods. 00:08:42.68\00:08:44.12 Let's talk about what you have, and how and why it's healing. 00:08:44.15\00:08:48.42 >>Dr. Westerdahl: Well, here you go. 00:08:48.46\00:08:49.29 An apple a day keeps the doctor away. 00:08:49.32\00:08:50.89 You've heard that. 00:08:50.93\00:08:51.96 >>John: That's good for, good for non-doctors, 00:08:51.99\00:08:53.83 not so good for doctors though, I suppose. 00:08:53.86\00:08:55.26 >>Dr. Westerdahl: That's right, because an apple is an amazing 00:08:55.30\00:08:57.33 food, because when you eat these apples, 00:08:57.37\00:08:59.77 you can lower your cholesterol. 00:08:59.80\00:09:01.70 They are high in soluble fiber that actually binds cholesterol 00:09:01.74\00:09:06.34 and helps you remove that from the body. 00:09:06.37\00:09:08.58 And studies have shown 00:09:08.61\00:09:09.54 that people who have a couple of apples a day 00:09:09.58\00:09:11.61 in their diet can reduce their cholesterol 00:09:11.65\00:09:13.38 by as much as 10 percent. 00:09:13.42\00:09:14.88 >>John: That's pretty good. 00:09:14.92\00:09:16.08 >>Dr. Westerdahl: And the other amazing thing about apples 00:09:16.12\00:09:17.79 is they're high in what we call polyphenol antioxidants. 00:09:17.82\00:09:21.29 These are substances that are naturally occurring, 00:09:21.32\00:09:23.69 primarily in the skin of the apple, 00:09:23.73\00:09:26.29 that have anti-cancer properties, 00:09:26.33\00:09:28.56 heart disease prevention properties. 00:09:28.60\00:09:30.73 They prevent the oxidation 00:09:30.77\00:09:32.17 or the aging of the cells in the body. 00:09:32.20\00:09:34.17 There's some wonderful things. 00:09:34.20\00:09:35.10 And, you know, this is true: 00:09:35.14\00:09:36.97 an apple a day keeps the doctor away. 00:09:37.01\00:09:38.41 >>John: Very good. 00:09:38.44\00:09:38.84 Apples. 00:09:38.87\00:09:39.41 Wonderful. 00:09:39.44\00:09:40.24 And an apple is certainly biblical. 00:09:40.28\00:09:42.41 We read about apples in the Bible many, many times. 00:09:42.44\00:09:44.98 Okay. 00:09:45.01\00:09:45.65 A healing food of the Bible. 00:09:45.68\00:09:47.45 What else we got? 00:09:47.48\00:09:48.48 >>Dr. Westerdahl: So the next one is apricots. 00:09:48.52\00:09:50.45 And, by the way, when you read in the Bible, 00:09:50.49\00:09:53.09 when it talks about golden apples, 00:09:53.12\00:09:56.22 it's probably an apricot. 00:09:56.26\00:09:57.56 They're very rich in the, what we call carotinoids, 00:09:57.59\00:10:00.73 beta keratin, which makes it that bright yellow color. 00:10:00.76\00:10:03.97 These pigments that you find in apricots 00:10:04.00\00:10:06.47 also have anti-cancer properties, 00:10:06.50\00:10:09.27 and it's a great food for overall health. 00:10:09.30\00:10:11.54 It's great, and delicious too. 00:10:11.57\00:10:13.34 >>John: Now, let me ask a question about color. 00:10:13.38\00:10:15.61 You should eat foods of different colors, correct? 00:10:15.64\00:10:18.98 And, if I'm right, why is that? 00:10:19.01\00:10:21.15 >>Dr. Westerdahl: I recommend eating a rainbow of colors, 00:10:21.18\00:10:23.69 of food, because all these different colors in food, 00:10:23.72\00:10:26.25 God has put these colors in all these different foods, 00:10:26.29\00:10:29.49 and they all have special benefits. 00:10:29.52\00:10:31.46 The more colorful the diet, the better it is for you, 00:10:31.49\00:10:34.93 as opposed to the white bread and the white sugar, 00:10:34.93\00:10:38.20 and all those white refined foods, 00:10:38.23\00:10:40.40 where all the color has been taken away. 00:10:40.44\00:10:41.70 Well, a lot of those nutrients have been taken away. 00:10:41.74\00:10:43.51 So most scientists and nutritionists will tell you 00:10:43.54\00:10:45.97 to eat a colorful diet with lots of fruits and vegetables. 00:10:46.01\00:10:49.94 >>John: All right, good. 00:10:49.98\00:10:50.51 Okay, what else we have? 00:10:50.55\00:10:51.68 >>Dr. Westerdahl: The other is a Bible grain: barley. 00:10:51.71\00:10:54.65 And barley, in the Holy Land and in the Middle East, 00:10:54.68\00:10:58.05 is considered a heart medicine. 00:10:58.09\00:11:00.39 >>John: No kidding. 00:11:00.42\00:11:01.39 >>Dr. Westerdahl: Amongst the common people. 00:11:01.42\00:11:02.56 Because it is high in soluble fiber, 00:11:02.59\00:11:04.63 which can actually help you lower your cholesterol. 00:11:04.66\00:11:08.16 Barley has been shown to lower the bad type of cholesterol, 00:11:08.20\00:11:11.80 what we call the LDL cholesterol, 00:11:11.83\00:11:13.40 and actually help and increase the good cholesterol, 00:11:13.44\00:11:16.34 the good-guy cholesterol, called HDL cholesterol. 00:11:16.37\00:11:19.24 The high-density lipoprotein cholesterol. 00:11:19.27\00:11:21.58 >>John: Now, isn't that also true of oats? 00:11:21.61\00:11:23.71 Oatmeal. 00:11:23.75\00:11:24.41 >>Dr. Westerdahl: Yes. 00:11:24.45\00:11:25.25 >>John: Porridge, where I grew up. 00:11:25.28\00:11:26.41 >>Dr. Westerdahl: Oats is another grain that has some 00:11:26.45\00:11:28.28 similar properties as far as cholesterol-lowering benefits. 00:11:28.32\00:11:31.29 >>John: So when the Bible was talking about barley, 00:11:31.32\00:11:33.02 it was talking about something that didn't just make 00:11:33.05\00:11:34.86 a good biblical point, but it was good for you. 00:11:34.89\00:11:37.59 >>Dr. Westerdahl: It was. It is. 00:11:37.63\00:11:38.79 >>John: And can help to reverse significant disease. 00:11:38.83\00:11:41.76 >>Dr. Westerdahl: Yes. 00:11:41.80\00:11:42.80 And it's a very rich source of antioxidants, 00:11:42.83\00:11:44.37 particularly what we call tocotrienols, 00:11:44.40\00:11:46.63 which is related to vitamin E. 00:11:46.67\00:11:48.80 >>John: How do you eat barley? 00:11:48.84\00:11:50.41 Many people are wondering, what do I do with this? 00:11:50.44\00:11:52.34 Do I put it in a stew, do I fry it? 00:11:52.37\00:11:54.31 Can I... 00:11:54.34\00:11:55.51 >>Dr. Westerdahl: You could... 00:11:55.54\00:11:56.44 >>John: Can I bread it and deep fry it? 00:11:56.48\00:11:57.81 >>Dr. Westerdahl: No, you don't want to do that! 00:11:57.85\00:11:58.78 >>John: All right. 00:11:58.81\00:12:00.12 >>Dr. Westerdahl: But you can use it and make a flour with it, 00:12:00.15\00:12:02.02 and use it in grains and different types of healthy 00:12:02.05\00:12:04.69 bakery-type products. 00:12:04.72\00:12:06.29 Also, just cooking barley up is really good. 00:12:06.32\00:12:09.56 It's very good to add, just as a cereal. 00:12:09.59\00:12:12.03 And you'll find, of course, barley a lot in vegetable soups. 00:12:12.06\00:12:15.10 >>John: What's next? 00:15:05.37\00:15:06.17 >>Dr. Westerdahl: And then garlic, 00:15:06.20\00:15:06.87 one of my favorite vegetables. 00:15:06.90\00:15:09.07 Garlic actually was a food and a medicine 00:15:09.10\00:15:12.04 with the children of Israel long before Moses led them. 00:15:12.07\00:15:15.34 And, uh, what's exciting about garlic 00:15:15.38\00:15:17.85 is it's a heart-healthy food, 00:15:17.88\00:15:20.15 been shown in a number of studies to help you lower your 00:15:20.18\00:15:22.12 bad LDL cholesterol and increase the good HDL cholesterol. 00:15:22.15\00:15:26.86 It prevents blood clotting, has antibacterial properties, 00:15:26.89\00:15:30.56 and is listed as one of the top anti-cancer foods. 00:15:30.59\00:15:33.73 >>John: Fantastic. I'm John Bradshaw. 00:18:14.69\00:18:17.13 Thanks for joining me. 00:18:17.16\00:18:18.19 In the last couple of minutes, my guest, 00:18:18.23\00:18:19.86 Dr. John Westerdahl, has rushed off to the grocery store 00:18:19.89\00:18:23.03 and rushed back again, with more healing foods of the Bible. 00:18:23.06\00:18:26.90 And they look great. 00:18:26.94\00:18:27.94 I see hummus, and pistachios and honey, 00:18:27.97\00:18:31.64 and olives; some of my favorite foods. 00:18:31.67\00:18:33.38 How are these healing foods of the Bible? 00:18:33.41\00:18:36.34 >>Dr. Westerdahl: Well, they're all great, 00:18:36.38\00:18:37.28 and they're delicious and nutritious. 00:18:37.31\00:18:38.81 And we're going to start off with the first ones, 00:18:38.85\00:18:40.42 and these are beans, peas and lentils. 00:18:40.45\00:18:42.82 These are the fava beans from the Holy Land 00:18:42.85\00:18:44.85 that were used quite often, 00:18:44.89\00:18:46.12 and the white beans that were used often in biblical times, 00:18:46.15\00:18:48.76 as well as the lentils. 00:18:48.79\00:18:50.09 And these beans, peas and lentils 00:18:50.13\00:18:51.59 are very rich sources of vegetable protein, 00:18:51.63\00:18:55.06 high levels of protein, 00:18:55.10\00:18:57.13 without all that cholesterol and saturated fat 00:18:57.17\00:18:59.53 you get from meat products and so forth. 00:18:59.57\00:19:02.47 And, uh, they are also, one of the other benefits 00:19:02.50\00:19:04.77 with this is they're high in the soluble fiber. 00:19:04.81\00:19:07.44 So, not only do they have no cholesterol or saturated fat in 00:19:07.48\00:19:11.05 them; they have a fiber that helps you lower your 00:19:11.08\00:19:13.78 cholesterol, because of the soluble fiber. 00:19:13.82\00:19:16.15 >>John: Something about fibrous foods, too: 00:19:16.18\00:19:17.52 you eat them and you feel more full than if you're eating 00:19:17.55\00:19:20.79 foods that lack fiber and they're just kind of empty. 00:19:20.82\00:19:22.69 >>Dr. Westerdahl: That's right. 00:19:22.72\00:19:23.93 And the one thing they're finding out more in the research 00:19:23.96\00:19:25.66 today is eating more beans is very helpful for diabetics 00:19:25.69\00:19:29.23 trying to keep their blood sugar under control. 00:19:29.26\00:19:30.93 >>John: Correct. 00:19:30.97\00:19:31.93 >>Dr. Westerdahl: Now, one of the foods that, 00:19:31.97\00:19:33.60 uh, another type of bean, actually, 00:19:33.64\00:19:36.10 a legume, is, is garbanzo beans. 00:19:36.14\00:19:39.31 And, of course, you make hummus with them. 00:19:39.34\00:19:41.44 And that's one of the traditional Bible foods, 00:19:41.48\00:19:44.25 healing foods, that was used in ancient times as a, 00:19:44.28\00:19:47.15 as a garnish, or a relish, I should say, 00:19:47.18\00:19:49.62 to use with, like, that whole-wheat pita bread. 00:19:49.65\00:19:51.89 >>John: Now, in some places we call these chickpeas. 00:19:51.92\00:19:54.12 >>Dr. Westerdahl: Yes. 00:19:54.16\00:19:55.09 Chickpeas is another common name for them. 00:19:55.12\00:19:56.32 >>John: But as long as you can call the end product hummus, 00:19:56.36\00:19:58.36 you're doing okay. 00:19:58.39\00:19:59.23 >>Dr. Westerdahl: That's right. 00:19:59.26\00:19:59.93 >>John: This is fantastic stuff. 00:19:59.96\00:20:00.90 >>Dr. Westerdahl: It really is. 00:20:00.93\00:20:01.86 >>John: Okay, and it's not hard to make. 00:20:01.90\00:20:02.96 It's easy to find. 00:20:03.00\00:20:04.20 Not too expensive to buy by any stretch of the imagination. 00:20:04.23\00:20:06.67 Add to that some pita bread, and you're good to go. 00:20:06.70\00:20:09.17 >>Dr. Westerdahl: You really are. 00:20:09.20\00:20:10.11 >>John: And this is good for you. 00:20:10.14\00:20:11.24 >>Dr. Westerdahl: And it's good for you as well. 00:20:11.27\00:20:12.37 >>John: In Bible times, and in the Mediterranean part 00:20:12.41\00:20:14.64 of the world, they eat this. 00:20:14.68\00:20:15.84 >>Dr. Westerdahl: They eat that all the time. 00:20:15.88\00:20:17.01 It's just, it's a staple. 00:20:17.05\00:20:18.31 >>John: Um-hmm. Let's go to the next one. 00:20:18.35\00:20:20.45 >>Dr. Westerdahl: Okay, the next one is a grain, 00:20:20.48\00:20:22.35 and this is millet. 00:20:22.38\00:20:23.75 When someone tells you they eat like a bird, 00:20:23.79\00:20:25.59 they're probably eating millet, 00:20:25.62\00:20:26.92 because that's what bird seed is. 00:20:26.96\00:20:28.89 >>Dr. Westerdahl: But millet is used in many bread products. 00:20:28.92\00:20:31.69 It's a grain in itself that you can cook up 00:20:31.73\00:20:33.93 and make as a hot cereal. 00:20:33.96\00:20:35.46 And it's a very good source of fiber, 00:20:35.50\00:20:37.40 and provides some vegetable protein as well. 00:20:37.43\00:20:39.57 >>John: And what I can, what I can see here is that 00:20:39.60\00:20:42.14 if somebody's eating stuff they know is just not real good, 00:20:42.17\00:20:45.27 you can substitute some things out 00:20:45.31\00:20:47.14 and some things in to take their place. 00:20:47.18\00:20:49.01 >>Dr. Westerdahl: Yes. 00:20:49.04\00:20:49.94 >>John: And just simple changes result in 00:20:49.98\00:20:51.25 really good benefits to the health. 00:20:51.28\00:20:52.61 >>Dr. Westerdahl: Right. 00:20:52.65\00:20:53.62 Getting the wide variety of foods is important. 00:20:53.65\00:20:55.32 And, you know, choose the ones that you like, 00:20:55.35\00:20:56.89 and try different recipes. 00:20:56.92\00:20:58.39 Now, of course, since the Garden of Eden times, 00:20:58.42\00:21:00.56 nuts were eaten all the time by, 00:21:00.59\00:21:03.66 in the Middle East and in Bible times. 00:21:03.69\00:21:05.59 You've got pistachios, as you mentioned, walnuts, almonds. 00:21:05.63\00:21:09.10 All these were favorite nuts and are still used traditionally 00:21:09.13\00:21:12.23 in the Mediterranean diet. 00:21:12.27\00:21:13.67 >>John: Um-hmm. 00:21:13.70\00:21:14.60 Very good for you, they taste wonderful. 00:21:14.64\00:21:16.81 Walnuts loaded with Omega-3s, 00:21:16.84\00:21:18.91 which are, uh... 00:21:18.94\00:21:19.97 >>Dr. Westerdahl: Yes. 00:21:20.01\00:21:20.84 >>John: ...good in combatting cancer 00:21:20.88\00:21:22.38 and other illnesses as well. 00:21:22.41\00:21:23.61 >>Dr. Westerdahl: Yes. They have the healthy types of fat. 00:21:23.65\00:21:25.21 And antioxidants, particularly vitamin E. 00:21:25.25\00:21:28.22 >>John: Great. 00:21:28.25\00:21:29.22 >>Dr. Westerdahl: And, of course, there's 00:21:29.25\00:21:30.49 olives and olive oil, when you think of the Mediterranean diet, 00:21:30.52\00:21:34.56 is very important. 00:21:34.59\00:21:36.06 All types of different olives were eaten. 00:21:36.09\00:21:38.19 Olive oil, and olives, of course, 00:21:38.23\00:21:40.16 have the heart-healthy type of fat. 00:21:40.20\00:21:43.03 When you look for an olive oil, you want to make sure you get, 00:21:43.06\00:21:44.93 ideally, organic, extra virgin olive oil. 00:21:44.97\00:21:48.07 First cold press is really important. 00:21:48.10\00:21:50.64 So it's a healthier type of fat, mono-unsaturated fat. 00:21:50.67\00:21:53.64 And also with olive oil, you see this one here from Greece, 00:21:53.68\00:21:57.01 has, you see it's cloudy. 00:21:57.05\00:21:58.65 That means it's unfiltered and unrefined. 00:21:58.68\00:22:01.72 Many of the olive oils you get in the market are filtered, 00:22:01.75\00:22:04.99 so they're clear, but you're losing a lot of those important, 00:22:05.02\00:22:08.06 healthful benefits when you, when you refine the olive oil. 00:22:08.09\00:22:10.79 >>John: I'll give this back to you. 00:22:10.83\00:22:11.69 Is there a wrong way to use oil? 00:22:11.73\00:22:13.46 I mean, should I deep-fry my candy bars in this, 00:22:13.50\00:22:16.73 in this good, unfiltered Greek olive oil? 00:22:16.77\00:22:19.87 >>Dr. Westerdahl: No, that would ruin this Greek olive oil. 00:22:19.90\00:22:22.20 In fact, it would damage it and destroy a lot of 00:22:22.24\00:22:24.47 the health properties that you find in it. 00:22:24.51\00:22:26.21 >>John: How should I eat this? 00:22:26.24\00:22:27.38 >>Dr. Westerdahl: To use olive oil, first, cold pressed, 00:22:27.41\00:22:29.98 lower temperatures like on your salad-type foods is very good. 00:22:30.01\00:22:34.62 But if you do it with cooking, 00:22:34.65\00:22:35.95 use it at low temperature cooking, 00:22:35.98\00:22:37.49 because cooking high temperatures 00:22:37.52\00:22:38.85 with oils really destroys it. 00:22:38.89\00:22:40.19 >>John: And clearly there's a way to eat 00:22:40.22\00:22:42.16 that doesn't contribute to your overall well-being. 00:22:42.19\00:22:44.63 >>Dr. Westerdahl: Right. 00:22:44.66\00:22:45.63 >>John: So that's why we're talking about 00:22:45.66\00:22:46.36 healing foods of the Bible today. 00:22:46.39\00:22:48.33 And these are all the good things. 00:22:48.36\00:22:51.00 >>Dr. Westerdahl: Then we have leeks, 00:22:51.03\00:22:52.90 and that's a famous Jewish food, right? 00:22:52.93\00:22:55.77 And onions. 00:22:55.80\00:22:57.41 >>John: The Welsh love leeks. 00:22:57.44\00:22:58.67 >>Dr. Westerdahl: And these have a lot of the similar properties 00:22:58.71\00:23:00.78 that I mentioned earlier with garlic. 00:23:00.81\00:23:02.61 They have antibacterial properties. 00:23:02.64\00:23:04.41 They have heart-healthy properties. 00:23:04.45\00:23:06.05 And, of course, the great thing about onions and leeks, 00:23:06.08\00:23:08.62 they add great flavor to your recipe. 00:23:08.65\00:23:10.85 >>John: Oh yeah.
