You know, it is said that you 00:00:39.10\00:00:43.17 are what you eat; but if you survey the population as a 00:00:43.17\00:00:46.88 whole, you find out that a whole lot of people are ... 00:00:46.88\00:00:50.65 sick, and could it be that many people are sick today because 00:00:50.65\00:00:56.52 they are what they eat. Now, why does this even matter 00:00:56.52\00:01:01.59 on a Bible discussion program such as It Is Written? 00:01:01.59\00:01:05.23 Well, I'll tell you why. Jesus said He came into this 00:01:05.23\00:01:07.50 world so that we might have life and that we might live it 00:01:07.50\00:01:11.23 more abundantly. But in the midst of 00:01:11.23\00:01:14.10 an obesity epidemic, an increasing-- 00:01:14.10\00:01:17.31 radically increasing-- incidence of things 00:01:17.31\00:01:20.01 such as diabetes and other lifestyle illnesses, 00:01:20.01\00:01:23.41 it doesn't look like a lot of people are enjoying 00:01:23.41\00:01:25.28 a more abundant life, but instead 00:01:25.28\00:01:27.92 a less abundant life. Let's see if we can get to the 00:01:27.92\00:01:30.49 bottom of this today and find out how we can enjoy 00:01:30.49\00:01:33.39 the more abundant life that Jesus offers to us. 00:01:33.39\00:01:37.63 I'm being joined today by my guest, Dr. David DeRose, 00:01:37.63\00:01:41.03 a specialist in the areas of internal medicine 00:01:41.03\00:01:43.47 and preventive medicine. We'll talk about that today, 00:01:43.47\00:01:46.07 big-time. Dr. DeRose comes to us from 00:01:46.07\00:01:48.24 Compass Health Consulting in Northern California. 00:01:48.24\00:01:51.41 Thanks for joining me today, David. 00:01:51.41\00:01:52.84 I'm glad you're here. DD: It's great to be with you, 00:01:52.84\00:01:54.14 John. JB: So it's true, 00:01:54.14\00:01:55.61 you are what you eat. Yeah, you've got to be careful 00:01:55.61\00:01:57.41 but what we eat impacts us in a massive way. 00:01:57.41\00:02:00.78 DD: Literally, we are what we eat. 00:02:00.78\00:02:02.85 The elements that make up our bodies are those very 00:02:02.85\00:02:05.25 things that we ingested-- or that our mother ingested. 00:02:05.25\00:02:07.76 JB: Somebody mentioned this to me recently, and I think a lot 00:02:07.76\00:02:10.03 of people are really surprised by this. 00:02:10.03\00:02:13.26 Your blood is made from what you eat; 00:02:13.26\00:02:17.50 what you put into your body. What you put in actually, 00:02:17.50\00:02:20.47 literally, physically becomes part of who you are. 00:02:20.47\00:02:22.77 Correct or not? DD: That's right. 00:02:22.77\00:02:23.91 It's not just your blood, it's every single cell 00:02:23.91\00:02:25.91 of your body. I mean, those are the raw 00:02:25.91\00:02:27.51 materials that make up the body. They have to come 00:02:27.51\00:02:30.31 from somewhere. They don't just come 00:02:30.31\00:02:31.75 out of the air, although oxygen, 00:02:31.75\00:02:33.78 of course, does. But we actually need to eat 00:02:33.78\00:02:36.79 in order to make every cell in our body. 00:02:36.79\00:02:38.89 JB: So, as cells are being regenerated, rejuvenated, 00:02:38.89\00:02:42.09 repaired, it all comes back to the fact they are being made 00:02:42.09\00:02:45.66 from-- what we are is being made from-- what we put in. 00:02:45.66\00:02:50.63 DD: That's right. And some of those cells are 00:02:50.63\00:02:52.27 turning over very rapidly. You mentioned 00:02:52.27\00:02:54.27 the red blood cells. They turn over about every three 00:02:54.27\00:02:56.81 months, about a hundred-day lifespan for the red blood cell. 00:02:56.81\00:03:00.51 And although some things are recycled-- like the iron 00:03:00.51\00:03:03.55 in the red blood cell, that's largely recycled-- 00:03:03.55\00:03:06.08 but other things we need to ingest in order to make 00:03:06.08\00:03:09.68 those new cellular components. JB: You know, it seems to me, 00:03:09.68\00:03:12.15 if we are being regenerated at a cellular level by the things 00:03:12.15\00:03:15.82 that we put into our bodies, wouldn't just knowing that make 00:03:15.82\00:03:19.36 you stop and say, well, I need to be putting in good stuff to 00:03:19.36\00:03:22.86 make good cells or red blood cells or whatever. 00:03:22.86\00:03:26.94 DD: One of my favorite texts when we speak 00:03:26.94\00:03:28.87 about this topic actually is in the book of Genesis. 00:03:28.87\00:03:31.31 JB: All right. DD: Because there God is 00:03:31.31\00:03:33.24 creating a perfect world. And in Genesis 1-- 00:03:33.24\00:03:37.75 JB: Right at the beginning. DD: That's right, right at the 00:03:37.75\00:03:39.31 beginning. First chapter of the Bible, you 00:03:39.31\00:03:41.35 go down to verse 29 and you see that God has a specific plan, 00:03:41.35\00:03:46.62 as far as our nutritional program. God said, 00:03:46.62\00:03:49.82 "See, I have given you every herb that yields seed 00:03:49.82\00:03:53.03 which is on the face of all the earth and every tree 00:03:53.03\00:03:56.70 whose fruit yields seed, to you it shall be for food." 00:03:56.70\00:04:00.40 God is giving mankind, humankind, a vegetarian diet 00:04:00.40\00:04:05.54 in the very beginning. And what we find today, John, 00:04:05.54\00:04:08.41 is the optimal diet to avoid most of these chronic diseases 00:04:08.41\00:04:12.28 that we're talking about is a diet that focuses 00:04:12.28\00:04:14.75 on those whole plant foods. JB: Okay, but also, later on, 00:04:14.75\00:04:18.25 God said, "Take the Passover lamb"-- 00:04:18.25\00:04:22.19 DD: No question. JB: And then made out of kale 00:04:22.19\00:04:23.89 and all of that-- DD: You've got it. 00:04:23.89\00:04:25.96 JB: Well, they eat grass. DD: That's right. 00:04:25.96\00:04:28.10 JB: Take the Passover lamb and eat that. 00:04:28.10\00:04:30.67 That's not a-- it may have been 00:04:30.67\00:04:32.17 a vegetarian lamb, but people who 00:04:32.17\00:04:34.47 eat lambs aren't vegetarians. So, what was God 00:04:34.47\00:04:36.77 doing back here. Eat these things that don't have 00:04:36.77\00:04:39.61 mothers or faces; and over here, go ahead and eat meat. 00:04:39.61\00:04:45.21 DD: And you could even take that a step further. 00:04:45.21\00:04:47.28 When Jesus fed the multitude, He didn't just give them bread, 00:04:47.28\00:04:51.72 which is a vegetarian product. He gave them-- 00:04:51.72\00:04:54.46 JB: Bread and fish. DD: That's right. 00:04:54.46\00:04:56.49 JB: So, are we seeing a contradiction here? 00:04:56.49\00:04:58.59 DD: What I find so interesting, John. 00:04:58.59\00:05:00.50 It's an excellent question. God meets people 00:05:00.50\00:05:02.96 where they're at. God's first concern-- as I read 00:05:02.96\00:05:06.47 the Bible as both a physician and as a Bible student-- 00:05:06.47\00:05:09.54 His first concern has always been our spiritual health and 00:05:09.54\00:05:12.71 our relationship with Him. But you see this theme running 00:05:12.71\00:05:16.64 throughout the Bible. When God wants to give people 00:05:16.64\00:05:18.91 an optimal diet, whether it's in Genesis or in their wilderness 00:05:18.91\00:05:22.82 wanderings, God does not give them animal products. 00:05:22.82\00:05:26.96 There was no raining of quail until the people demanded it, 00:05:26.96\00:05:32.26 if you will. JB: And then when they ate 00:05:32.26\00:05:33.86 the quail, they became sick from eating it. 00:05:33.86\00:05:35.53 DD: Yeah, at least the second time around. 00:05:35.53\00:05:37.40 JB: So in the wilderness, God gave them a type of food 00:05:37.40\00:05:40.44 that matched up with what we find in Genesis chapter 1. 00:05:40.44\00:05:43.34 DD: Exactly. So, here's the interesting 00:05:43.34\00:05:45.47 thing, though. Let's talk about some of the 00:05:45.47\00:05:47.04 things we want to avoid today, and it really brings out this 00:05:47.04\00:05:49.94 dialogue. The lamb of Jesus' day; 00:05:49.94\00:05:52.45 the fish of Jesus' day. They didn't have one of the big 00:05:52.45\00:05:56.25 problems that we're dealing with today, and that is an 00:05:56.25\00:05:58.22 accumulation of toxins in their tissues. 00:05:58.22\00:06:01.49 Today, a huge issue is our contaminated environment. 00:06:01.49\00:06:05.29 And some of the things that are contaminating our environment 00:06:05.29\00:06:07.73 are heavy metals. Things like mercury or cadmium. 00:06:07.73\00:06:12.30 Things like toxins. Toxins like DDT, 00:06:12.30\00:06:16.74 and it's metabolized. You say, "Well, 00:06:16.74\00:06:18.27 we don't use that anymore." But it's still 00:06:18.27\00:06:19.51 in the environment. Lead-- still in the environment. 00:06:19.51\00:06:22.68 What happens is, if you look at living creatures, the higher up 00:06:22.68\00:06:26.82 you move on the food chain, the greater the concentration 00:06:26.82\00:06:30.79 of those toxins. Roughly speaking, 00:06:30.79\00:06:33.22 about a tenfold increase, every level you go up. 00:06:33.22\00:06:37.43 You take the phytoplankton, living in the water. 00:06:37.43\00:06:41.03 Those waters are contaminated. They have a concentration 00:06:41.03\00:06:44.30 of a toxin in their tissue. Then you look at the small fish 00:06:44.30\00:06:47.67 that eat the phytoplankton. Roughly about 10 times as much 00:06:47.67\00:06:51.94 of that toxin will be in their tissue, gram for gram. 00:06:51.94\00:06:55.01 You go to the bigger fish that eats the smaller fish. 00:06:55.01\00:06:58.48 Now you've got a hundred times what was in that phytoplankton. 00:06:58.48\00:07:01.95 When you get up to things very high on the food chain, 00:07:01.95\00:07:04.92 like the birds of prey, you can understand why the California 00:07:04.92\00:07:08.89 condor was dying out, before we started to get serious about 00:07:08.89\00:07:12.56 controlling the environment. It doesn't mean all the toxins 00:07:12.56\00:07:15.23 are gone, but the point is, those foods that in Jesus' day, 00:07:15.23\00:07:19.53 we would say would be good sources. 00:07:19.53\00:07:22.24 People living on the shores of the Sea of Galilee. 00:07:22.24\00:07:24.17 Jesus wouldn't reasonably say you can't have fish; 00:07:24.17\00:07:26.74 that was a staple in their diet. But a much healthier choice 00:07:26.74\00:07:30.85 back then than it is today. JB: It's true that you are what 00:07:30.85\00:07:32.91 you eat, and you want to live a long, happy, abundant, 00:07:32.91\00:07:36.22 healthy life. You'll be glad you did. 00:08:17.76\00:08:21.50 ¤ [Rythmic Melody] ¤ 00:08:22.80\00:08:27.74 JB: I was eating the other day, as you do, when it occurred to 00:08:30.21\00:08:33.81 me again that I'd have to eat again in just five hours or so. 00:08:33.81\00:08:37.48 We eat, and then we have to eat some more. 00:08:37.48\00:08:40.25 We're dependent on that food, that fuel. 00:08:40.25\00:08:43.05 God didn't have to design us that way, but it seems He might 00:08:43.05\00:08:45.39 have done so to try to get us to remember something. 00:08:45.39\00:08:48.29 Just as you are dependent on constant, regular nourishment to 00:08:48.29\00:08:51.13 get through life, you're dependent on the grace of God 00:08:51.13\00:08:53.73 to get you through each day. We ought to be leaning on God 00:08:53.73\00:08:56.67 and feeding on His Word for spiritual strength, 00:08:56.67\00:08:59.17 just as we feed on food for physical strength. 00:08:59.17\00:09:02.44 Some of us are guilty of eating a little too much and guilty 00:09:02.44\00:09:05.21 of feeding on the Bible a little too little. 00:09:05.21\00:09:07.68 In John 6, verse 48, Jesus said, "I am the bread of life." 00:09:07.68\00:09:13.18 I want to encourage you today to eat well. 00:09:13.18\00:09:17.05 I'm John Bradshaw for It Is Written. 00:09:17.05\00:09:19.09 Let's live today by every word. 00:09:19.09\00:09:21.86 JB: This is It Is Written. I'm John Bradshaw. 00:09:23.39\00:09:25.29 Thank you for joining me today. And we are being joined by 00:09:25.29\00:09:27.83 Dr. David DeRose from Compass Health Consultants 00:09:27.83\00:09:30.97 in Northern California. Dr. DeRose, today we're talking 00:09:30.97\00:09:33.87 about what people eat. That old saying, 00:09:33.87\00:09:36.34 you are what you eat. And a moment ago, 00:09:36.34\00:09:38.24 we were starting to talk about foods that are a little 00:09:38.24\00:09:40.84 higher up the food chain. The higher up you go, the 00:09:40.84\00:09:43.04 greater the concentration of toxins, and perhaps poisons and 00:09:43.04\00:09:47.35 heavy metals in those foods. The bigger foods, 00:09:47.35\00:09:50.22 more than the smaller. In the beginning God gave the 00:09:50.22\00:09:53.72 human family, without a doubt, a vegetarian, 00:09:53.72\00:09:55.89 a plant-based diet. Then later He said, well, okay, 00:09:55.89\00:09:59.63 you certainly may eat some of this or some of that. 00:09:59.63\00:10:02.00 He never did say you'll be better for it. 00:10:02.00\00:10:05.00 And you notice too, that when animals entered the menu was 00:10:05.00\00:10:10.81 at the same time that people started living dramatically 00:10:10.81\00:10:12.81 shorter lives. DD: Very interesting. 00:10:12.81\00:10:14.51 Very interesting. JB: Yeah. 00:10:14.51\00:10:15.84 Clean and unclean food. It's certainly biblical, 00:10:15.84\00:10:18.35 but is it valid today and is it just for the Jews? 00:10:18.35\00:10:21.55 DD: Well, first of all, the distinction of clean 00:10:21.55\00:10:25.15 and unclean animals and today's ever being a Jew. 00:10:25.15\00:10:28.56 If you read the account of the flood, that great deluge, 00:10:28.56\00:10:31.93 Noah was instructed about the animals, and there were clean 00:10:31.93\00:10:35.40 and unclean that were identified in that account. 00:10:35.40\00:10:39.00 So it's not something that God added just for the benefit 00:10:39.00\00:10:41.94 of the Jews. JB: In Genesis 7, in verse 2, 00:10:41.94\00:10:45.67 "Of every clean beast thou shalt take to thee by sevens, 00:10:45.67\00:10:48.71 the male and the female, and of the beasts that are 00:10:48.71\00:10:50.81 not clean by two, the male and his female." 00:10:50.81\00:10:53.48 God identifying clean and unclean animals before there was 00:10:53.48\00:10:56.45 even a Jew on the planet. DD: And many have said, 00:10:56.45\00:10:59.09 "Well, why?" Well, we see there's sacrifice 00:10:59.09\00:11:02.49 after the flood, but there was also going to be apparently a 00:11:02.49\00:11:04.96 necessity to eat some of those animals after all the vegetation 00:11:04.96\00:11:08.83 was essentially wiped off the earth. 00:11:08.83\00:11:11.13 JB: And if you ate one of the unclean, 00:11:11.13\00:11:12.50 you'd go from two to one. The species would be gone. 00:11:12.50\00:11:15.07 DD: And so the very point about how many were taken on was 00:11:15.07\00:11:17.57 making a powerful, powerful statement about what were 00:11:17.57\00:11:20.84 sacrificial and potentially permissible animals to eat-- 00:11:20.84\00:11:24.61 only those that were clean. JB: Is there health benefits to 00:11:24.61\00:11:27.85 abstaining from these animals that are called unclean? 00:11:27.85\00:11:30.65 DD: No question. Now, you've identified some 00:11:30.65\00:11:32.35 animals, like the horse and the rabbit, 00:11:32.35\00:11:35.22 that are largely vegetarian. So they'd be lower on the food 00:11:35.22\00:11:38.69 chain, if you will. But many of the animals that 00:11:38.69\00:11:42.03 are excluded-- you read a description, for example, 00:11:42.03\00:11:44.40 in Leviticus 11 of what those unclean animals are-- 00:11:44.40\00:11:48.34 and you'll find the scavengers, like you mentioned. 00:11:48.34\00:11:50.54 The pigs, the crustacea of the ocean. 00:11:50.54\00:11:54.74 You'll also find things that are very high on the food chain, 00:11:54.74\00:11:58.41 like the birds of prey. All of those things 00:11:58.41\00:12:01.48 were off limits. We know today, 00:12:01.48\00:12:03.65 the technical term is called "biomagnification." 00:12:03.65\00:12:07.29 What that means is, like we were expressing earlier in the show, 00:12:07.29\00:12:11.29 if you eat things that are low on the food chain-- those small, 00:12:11.29\00:12:13.93 little fish-- they're going to have low levels of toxins 00:12:13.93\00:12:17.17 and contaminants. As you move up the level, 00:12:17.17\00:12:21.24 you will get higher and higher levels of toxins. 00:12:21.24\00:12:23.41 JB: When you think about something like a shellfish, 00:12:23.41\00:12:26.31 you can say, well, if God didn't intend for us to eat it, 00:12:26.31\00:12:28.98 why did He make it? And the shellfish 00:12:28.98\00:12:31.55 is a classic example. They've shown this in places 00:12:31.55\00:12:33.88 such as the Chesapeake Bay. When you introduce shellfish, 00:12:33.88\00:12:37.12 they filter the water. They take out the toxins and 00:12:37.12\00:12:41.46 return the good water back into the ecosystem. 00:12:41.46\00:12:44.66 So, thank God that we have them, but imagine when you're eating 00:12:44.66\00:12:46.93 that, you're eating all those toxins. 00:12:46.93\00:12:49.83 DD: And this brings up a whole other point: many transmittable 00:12:49.83\00:12:52.37 diseases are traced to these unclean foods. 00:12:52.37\00:12:55.74 You mentioned pork earlier; you mentioned shellfish. 00:12:55.74\00:12:58.47 Pork is a classic example. Our Centers for Disease Control 00:12:58.47\00:13:01.98 in the United States speak about neglected parasitic 00:13:01.98\00:13:05.18 diseases that are not on the radar screen. 00:13:05.18\00:13:07.38 One of them is cysticercosis. It actually comes 00:13:07.38\00:13:11.19 from the pork tapeworm. And this can cause 00:13:11.19\00:13:14.59 serious illness. It's actually-- John, 00:13:14.59\00:13:17.29 this may be surprising to you-- one of the leading causes, 00:13:17.29\00:13:20.53 if not the leading cause, of epilepsy worldwide, 00:13:20.53\00:13:24.60 is from the pork tapeworm. Something called 00:13:24.60\00:13:26.63 neurocysticercosis. Cysts that actually invade the 00:13:26.63\00:13:31.34 brain and are a leading cause of seizure worldwide. 00:13:31.34\00:13:34.51 As I read through the Bible, I find it fascinating that when 00:13:34.51\00:13:37.65 Jesus was resurrected, in Luke 24, 00:13:37.65\00:13:40.48 we read those stories of Jesus' encounter with the disciples. 00:13:40.48\00:13:43.32 Or on the Emmaus Road. Jesus points them back to the 00:13:43.32\00:13:46.22 Old Testament. Many of my Christian friends 00:13:46.22\00:13:49.02 think the Old Testament is a book that's just to be 00:13:49.02\00:13:51.76 set aside. Jesus wanted their faith 00:13:51.76\00:13:54.10 anchored in the Old Testament. Now, he was especially 00:13:54.10\00:13:57.43 referring to the prophecies that spoke of Him. 00:13:57.43\00:14:00.17 But what's interesting to me as a physician is-- I don't know of 00:14:00.17\00:14:03.30 any example where God gave a ceremonial law that didn't have 00:14:03.30\00:14:10.61 some significant health connections that persist today. 00:14:10.61\00:14:14.45 Well, we're speaking about these so-called ceremonial health 00:14:14.45\00:14:16.55 laws. In other words, 00:14:16.55\00:14:18.25 God didn't tell them to avoid unclean foods just 00:14:18.25\00:14:21.06 to each some spiritual lesson; there was sound health 00:14:21.06\00:14:24.46 information there. We could talk about 00:14:24.46\00:14:26.06 circumcision, or how the Jews were able to be clean after 00:14:26.06\00:14:30.43 contact with death. All of these things have 00:14:30.43\00:14:32.73 valid health principles. But you don't have to sacrifice 00:14:32.73\00:14:35.80 a red heifer today. Do you see my point? 00:14:35.80\00:14:38.64 JB: Absolutely, but bring them back to this, because someone's 00:14:38.64\00:14:41.08 saying, "Oh, look, this is well and good, but those guys are off 00:14:41.08\00:14:42.84 base, because that was just a ceremony, and when Jesus died, 00:14:42.84\00:14:48.38 none of that mattered anymore." DD: Let me go to this example. 00:14:48.38\00:14:52.72 Maybe we should turn in our Bibles to it. 00:14:52.72\00:14:54.26 I'm turning to the book of Numbers. 00:14:54.26\00:14:56.52 It's a fascinating example. I'm going to Numbers chapter 19, 00:14:56.52\00:15:01.53 and in Numbers 19 we read these laws of purification. 00:15:01.53\00:15:06.57 This is the "red heifer sacrifice." 00:15:06.57\00:15:11.11 Any Christian who's studied this realizes that the red heifer was 00:15:11.11\00:15:14.31 symbolizing Jesus. He was the sinless one 00:15:14.31\00:15:17.41 who was killed outside the camp. Today, you and I, as Christians, 00:15:17.41\00:15:22.68 don't need to sacrifice a red heifer. 00:15:22.68\00:15:24.89 Jesus IS our all-sufficient sacrifice. 00:15:24.89\00:15:29.19 JB: Right. DD: But if you read through 00:15:29.19\00:15:30.83 Numbers 19, you find that embedded in that red heifer 00:15:30.83\00:15:34.46 sacrifice and its aftermath were restrictions and laws for 00:15:34.46\00:15:39.30 scrupulous cleanliness after contact with death. 00:15:39.30\00:15:44.17 Because the Christian world set that aside for decades and 00:15:44.17\00:15:47.61 centuries, we had in the 1800s, in Europe, for example, 00:15:47.61\00:15:52.08 epidemics of childbirth fever. Ignaz Semmelweis, the famous 00:15:52.08\00:15:57.02 Austrian physician who brought this to the fore, he realized 00:15:57.02\00:16:02.49 that women were dying. Dr. David DeRose 00:18:34.64\00:18:37.65 is joining me today. I want to ask you, Dr. DeRose, 00:18:37.65\00:18:41.22 where are the problems? What are the problem areas 00:18:41.22\00:18:44.32 in what we eat? DD: Well, if we want to speak 00:18:44.32\00:18:46.86 physiologically, one of the big ones is fat. 00:18:46.86\00:18:50.83 And the reason I say physiologically is your cell 00:18:50.83\00:18:53.36 membrane is made up of fat, among other things. 00:18:53.36\00:18:57.63 The type of fat you eat will affect how fluid 00:18:57.63\00:19:01.54 that membrane is. You say, well, 00:19:01.54\00:19:03.14 what difference does that make? It's because the cell membrane 00:19:03.14\00:19:06.17 is where the action takes place. In your brain, 00:19:06.17\00:19:09.78 the neurotransmitters, the brain chemicals, 00:19:09.78\00:19:12.48 interact with other membranes. What happens is, 00:19:12.48\00:19:16.92 if you're eating more of the saturated fats, 00:19:16.92\00:19:19.65 more of the trans fats, these two categories of fats, 00:19:19.65\00:19:23.89 they make the cell membranes more rigid and make nerve 00:19:23.89\00:19:27.30 transmission more difficult. They make insulin signaling 00:19:27.30\00:19:30.77 worse, and so they lay the foundation for diabetes. 00:19:30.77\00:19:34.34 So it's not just a question of amount of fat, 00:19:34.34\00:19:36.84 but what kind of fat. Those saturated fats primarily 00:19:36.84\00:19:39.94 in animal products; trans fats in those partially 00:19:39.94\00:19:42.98 hydrogenated vegetable oils. JB: Good fats, avocado; 00:19:42.98\00:19:46.21 good fats in nuts. Those are good fats, right? 00:19:46.21\00:19:48.45 DD: Very interesting. Back in the '90s, people were 00:19:48.45\00:19:51.65 lumping all these together. They were saying nuts 00:19:51.65\00:19:54.42 were bad for you. At least many people in the 00:19:54.42\00:19:56.16 preventive medicine community. But then in the '90s is when 00:19:56.16\00:20:00.66 researchers at Loma Linda University came out with some of 00:20:00.66\00:20:03.16 the early studies showing that nuts had powerful, 00:20:03.16\00:20:06.84 heart-preventive properties, and that started to swing the 00:20:06.84\00:20:10.37 pendulum in the other direction. JB: But the bad fats 00:20:10.37\00:20:12.21 are no good. I want to show you something 00:20:12.21\00:20:13.71 when it comes to fat. Each time you eat that 00:20:13.71\00:20:16.98 well-known burger from that well-known burger chain, 00:20:16.98\00:20:20.35 you're getting that much fat. Dr. DeRose, what does 00:20:20.35\00:20:23.18 the body do with this much fat? DD: That's saturated fat, 00:20:23.18\00:20:26.86 largely saturated. That animal fat. 00:20:26.86\00:20:29.12 JB: Right. DD: What happens is, 00:20:29.12\00:20:30.53 first of all the blood becomes what we call lipemic. 00:20:30.53\00:20:32.69 When you eat that fat, it goes into the blood stream 00:20:32.69\00:20:35.66 and that actually affects the fluidity of the blood. 00:20:35.66\00:20:38.80 But then it has that impact, that long-term impact, 00:20:38.80\00:20:41.80 on the cell membranes, and actually it's setting 00:20:41.80\00:20:44.61 the stage for many of the diseases that we 00:20:44.61\00:20:46.98 experience today. JB: But this is how much 00:20:46.98\00:20:48.88 fat there is in a candy bar. Take a look at this, 00:20:48.88\00:20:50.98 typical candy bar. A small one. 00:20:50.98\00:20:53.21 And this is how much fat there is in a reasonably 00:20:53.21\00:20:56.55 small bag of potato chips. DD: We've cultivated, 00:20:56.55\00:20:59.82 as a society, a desire for higher saturated fat. 00:20:59.82\00:21:04.56 Higher sugar. Higher salt. 00:21:04.56\00:21:06.80 With the research shows us though-- 00:21:06.80\00:21:08.63 let's talk about fat-- as you get away from 00:21:08.63\00:21:11.00 that high fat consumption, your tastes change. 00:21:11.00\00:21:15.17 Big study, interventional study in women with cancer. 00:21:15.17\00:21:18.34 Breast cancer. Decreasing their fat 00:21:18.34\00:21:20.71 consumption-- when they did the pilot study, over the course of 00:21:20.71\00:21:22.81 the year, they found the women that cut their fat dramatically, 00:21:22.81\00:21:26.41 they tended to develop a distaste for the high fat foods 00:21:26.41\00:21:31.22 that they used to enjoy. JB: And this is how much sugar 00:21:31.22\00:21:33.76 there is, in a can of soda. Ah! 00:21:33.76\00:21:37.16 Stop and think. I mean, I wouldn't take 00:21:37.16\00:21:40.03 the top off this and chug this much raw sugar, ever. 00:21:40.03\00:21:43.53 You just wouldn't do it. But you do 00:21:43.53\00:21:45.50 when you buy a can of soda and pour that down your throat. 00:21:45.50\00:21:48.00 DD: And the data really suggests this is one of the things, 00:21:48.00\00:21:50.81 the sugar-sweetened beverages, that are fueling the epidemic 00:21:50.81\00:21:54.64 of obesity our country, John. JB: This is how much there is in 00:21:54.64\00:21:57.41 a cup of ice cream. That's a lot of sugar. 00:21:57.41\00:21:59.21 DD: And you add the fat to that equation, in those foods. 00:21:59.21\00:22:01.98 And many of those same foods that are high in fat and high in 00:22:01.98\00:22:04.32 sugar often are high in salt. Did you know, for example, 00:22:04.32\00:22:07.59 that you can put a lot more salt in a food if it's got 00:22:07.59\00:22:10.39 a lot of sugar in it, and not even taste salty? 00:22:10.39\00:22:13.03 JB: Okay, you'd better go off the ice cream and onto the 00:22:13.03\00:22:15.90 brownies, because, whereas this was as much sugar in a cup of 00:22:15.90\00:22:20.84 ice cream, the one on this end here is as much sugar 00:22:20.84\00:22:24.04 as there is in a brownie. A two-inch-square brownie. 00:22:24.04\00:22:27.08 DD: And who sticks with a two-inch-square brownie? 00:22:27.08\00:22:29.44 JB: Oh, no, it's not good until you've had two or three. 00:22:29.44\00:22:31.81 And when it comes to sugars, you can find in some food products 00:22:31.81\00:22:34.92 2-3-4-5 different sugars, right? There'll be sugar, corn syrup, 00:22:34.92\00:22:38.52 high fructose corn syrup, any number of other sweeteners 00:22:38.52\00:22:42.09 that are in one food item. DD: And the reason why some 00:22:42.09\00:22:44.83 manufacturers apparently do this is you have to list ingredients 00:22:44.83\00:22:48.86 in order of their prevalence in the product. 00:22:48.86\00:22:51.77 So, even though sugar in its various forms may be the 00:22:51.77\00:22:56.40 top ingredient, if you put five different sweeteners in there, 00:22:56.40\00:23:00.14 you may be able to put the whole wheat first, even though it's 00:23:00.14\00:23:02.88 only 10 percent whole wheat and 40 percent sugar. 00:23:02.88\00:23:05.65 JB: Now, are there any sugars that are really pretty good 00:23:05.65\00:23:07.62 for you? Because there's debates about 00:23:07.62\00:23:09.72 high fructose corn syrup, and you read "cane sugar" or "dried 00:23:09.72\00:23:15.52 cane sugar" or whatever. Can I look at that and go, oh, 00:23:15.52\00:23:18.23 it's got that sugar; that's good for me? 00:23:18.23\00:23:19.83 DD: The sweet things we were designed to enjoy are the 00:23:19.83\00:23:22.50 fruits, the sweet vegetables, things of this nature. 00:23:22.50\00:23:25.80 If you're getting those whole foods in nature, 00:23:25.80\00:23:28.70 you can have those things satisfy the sweet tooth. 00:23:28.70\00:23:31.84 No, it's not going to taste like the brownie or the ice 00:23:31.84\00:23:33.54 cream-- not at first. But if you stick with eating 00:23:33.54\00:23:36.08 those healthy sweets that God provided, in Genesis 1, 00:23:36.08\00:23:40.65 you will find a distaste tends to develop for those 00:23:40.65\00:23:44.22 artificially sweetened things. Whether it's "natural sugar" 00:23:44.22\00:23:47.96 that's being used to sweeten it or some artificial sweetener. 00:23:47.96\00:23:51.53 JB: Man, if you get some of those good dates, those medjool 00:23:51.53\00:23:54.60 dates they grow in Indio, California, around there. 00:23:54.60\00:23:58.37 Oh, they're sweet and they're good. 00:23:58.37\00:24:01.27 DD: In moderation, of course. JB: In moderation. 00:24:01.27\00:24:03.87 Some Americans are eating this much salt. 00:24:03.87\00:24:07.81 Two and a half teaspoons of salt in a day. 00:24:07.81\00:24:10.18 Many. It is said that the average 00:24:10.18\00:24:13.35 American is consuming maybe about this much. 00:24:13.35\00:24:16.69 Maybe about this much. DD: One and a half teaspoons. 00:24:16.69\00:24:19.82 JB: Whereas, what we should be consuming is merely this much. 00:24:19.82\00:24:25.56 A teaspoon of salt a day, and no more. 00:24:25.56\00:24:28.53 DD: No. And actually, although people 00:24:28.53\00:24:30.80 have tried to downplay the relationship between salt and 00:24:30.80\00:24:33.60 disease, a major study in the New England Journal of Medicine 00:24:33.60\00:24:36.71 back in 2010 actually looked at all the data, and how many 00:24:36.71\00:24:40.64 people in America are dying because of just having a 00:24:40.64\00:24:44.41 half-teaspoon of salt more a day. 00:24:44.41\00:24:47.78 In other words, if we were to decrease-- all of us, 00:24:47.78\00:24:49.98 across the board-- decrease our sodium 00:24:49.98\00:24:52.12 consumption, salt consumption, by just half a teaspoon, 00:24:52.12\00:24:55.92 we would save tens of thousands of lives from things like 00:24:55.92\00:24:58.99 stroke and heart attack. JB: From a biblical point of 00:24:58.99\00:25:01.63 view, why we're driving at this is because Jesus wants us to 00:25:01.63\00:25:03.87 have a more abundant life. And you say to yourself, 00:25:03.87\00:25:06.87 well, yeah, I'm drinking three sodas a day. 00:25:06.87\00:25:10.14 And I know people who carry around the Big Gulp things. 00:25:10.14\00:25:14.41 They carry them with them, everywhere they go. 00:25:14.41\00:25:16.28 I don't know how much they're getting-- 00:25:16.28\00:25:17.78 it's got to be killing them. Or you say, well, yeah, I'm 00:25:17.78\00:25:20.48 eating lots of ice cream and all of that sugar that comes with 00:25:20.48\00:25:23.32 it, and I'm getting the brownies and whatever. 00:25:23.32\00:25:26.29 What you're advocating, when you say 00:25:26.29\00:25:28.26 decreasing the amount of salt, you're not saying eat no salt, 00:25:28.26\00:25:32.39 eat no sweet stuff; eat zero fat. 00:25:32.39\00:25:36.53 Just make a little change here. Eat moderate amounts. 00:25:36.53\00:25:40.34 Get more of the good and less of the bad, and perhaps start the 00:25:40.34\00:25:44.27 change incrementally. I mean, it would be ideal for 00:25:44.27\00:25:46.78 somebody to go cold turkey, off the bad and onto the good. 00:25:46.78\00:25:49.58 It doesn't always work that way for people. 00:25:49.58\00:25:51.28 But small changes can bring big results. 00:25:51.28\00:25:54.28 DD: They can be powerful, and yet, the most powerful 00:25:54.28\00:25:57.29 things to actually reeducate your taste are larger changes. 00:25:57.29\00:26:01.99 JB: There is hope for you. And for me. 00:26:01.99\00:26:04.39 And I'm glad, because Jesus not only wants to give us the more 00:26:04.39\00:26:08.60 abundant life, but it is through Jesus-- 00:26:08.60\00:26:11.17 through the power of the Holy Spirit-- 00:26:11.17\00:26:12.90 that we can get from where we are, if perhaps 00:26:12.90\00:26:14.94 we're living an unhealthy life. And with the power of God we 00:26:14.94\00:26:18.01 can put down some of the stuff that's simply killing us, and 00:26:18.01\00:26:21.51 take up the sorts of things that will enhance our lives, 00:26:21.51\00:26:24.95 increase our lifespan, and give us a more productive, 00:26:24.95\00:26:28.25 quality life while we're living here on this earth. 00:26:28.25\00:26:31.55 Our time here on this earth is so short, we ought to be making 00:26:31.55\00:26:34.19 the best of it, not ruining it.
