I think about it with a good bit of dread, 00:02:09.71\00:02:11.38 yet when I get into it, it doesn't bother me that much. 00:02:11.41\00:02:14.35 - It shouldn't really, because fasting can actually do some 00:02:14.38\00:02:17.79 pretty good things, it can help us to detoxify, it can also 00:02:17.82\00:02:22.35 clear a good little bit of fluid from our bodies and help us 00:02:22.38\00:02:26.96 to have some much needed rest in our digestive system. 00:02:26.99\00:02:30.55 - It can also make you lose a few pounds too, 00:02:30.58\00:02:33.54 if you tend to be a little bit corpulent. 00:02:33.57\00:02:36.00 - It certainly can help you go that direction. 00:02:36.03\00:02:38.11 Most people won't find any problem with fasting for a few 00:02:38.14\00:02:41.59 days even, if they don't have some serious medical condition 00:02:41.62\00:02:45.56 that they have to worry about, but my own personal experience, 00:02:45.59\00:02:49.15 recently I did a little bit of fasting, and I went into it 00:02:49.18\00:02:52.54 thinking that I was going to be having some real trouble, 00:02:52.58\00:02:55.13 in actual fact, it wasn't to bad, certainly after 00:02:55.16\00:02:58.37 the first day or so I... - How many days did you fast 00:02:59.71\00:03:01.66 altogether? - I fasted four days total, 00:03:01.69\00:03:03.92 which doesn't seem like to much probably but when you consider 00:03:03.95\00:03:07.74 that that was about six meals it was plenty but not to bad 00:03:07.77\00:03:13.08 after the first few hours, the hunger started to go away. 00:03:13.11\00:03:16.40 When I was about your age I had a five day fast, 00:03:16.43\00:03:21.76 and I remember very well that after about the beginning of the 00:03:21.79\00:03:26.49 third day I didn't have any more hunger, 00:03:26.52\00:03:29.64 I could see that food looked nice, but I could look at food 00:03:29.67\00:03:35.46 that I could never resist before and I could resist it 00:03:35.49\00:03:39.25 did you have that experience? 00:03:39.28\00:03:40.30 - It certainly was my experience, now I have to say 00:03:40.33\00:03:42.36 that probably those who are having trouble eating 00:03:42.39\00:03:45.64 a good diet, you won't have to much trouble after you have 00:03:45.67\00:03:49.20 skipped several meals in a row, pretty soon you are ready to eat 00:03:49.23\00:03:52.47 pretty much what is before you 00:03:52.50\00:03:54.29 and if it's healthful food, you can stand to eat that 00:03:54.37\00:03:57.58 even though perhaps you aren't able to before. 00:03:57.61\00:04:00.20 - Now you mentioned that it can be a cleansing thing for us, 00:04:00.23\00:04:04.33 the liver is cleansed, the intestinal tract is cleansed, 00:04:04.36\00:04:07.57 what about other organs of the body, like skin, 00:04:07.60\00:04:11.82 have you ever noticed anybody's skin clearing up 00:04:11.85\00:04:14.42 when they are on a fast? 00:04:14.45\00:04:17.22 - Personal experience has been that many times skin problems 00:04:17.25\00:04:21.33 and even allergy problems will clear up almost miraculously 00:04:21.36\00:04:25.16 with just a little bit of fasting, 00:04:25.19\00:04:26.35 it doesn't even have to be a complete fast. 00:04:26.38\00:04:28.20 Somebody could fast with leaving off a meal or two, 00:04:28.23\00:04:32.09 or perhaps go on a juice fast, just drink tomato juice 00:04:32.12\00:04:36.40 if they are not sensitive to that, or whatever it may be 00:04:36.43\00:04:38.87 they can skip a meal or maybe two and experience some 00:04:38.90\00:04:43.91 wonderful benefits with allergies even clearing up, 00:04:43.94\00:04:47.33 and symptoms. 00:04:47.36\00:04:48.33 - I understand that you have a student or had a student 00:04:48.34\00:04:51.03 recently who was having a big problem with acne, 00:04:51.06\00:04:54.57 and especially acne on her neck and she would wear band aids 00:04:54.60\00:04:59.20 on her neck to cover her pimples and she went on a fast, 00:04:59.23\00:05:02.97 did she get cleared up with that? 00:05:03.00\00:05:05.96 - I believe totally cleared up in fact. 00:05:05.99\00:05:07.69 - That's what I heard, that she was pretty much clear 00:05:07.72\00:05:10.95 when she got through with... and she didn't have a full fast, 00:05:10.98\00:05:14.94 she had a juice fast wasn't it. 00:05:14.97\00:05:17.28 - That's right a juice fast, which was juicing, 00:05:17.31\00:05:20.35 she actually did the juicing herself, 00:05:20.38\00:05:22.27 now I don't believe that you have to 00:05:22.30\00:05:23.67 do that, but certainly it's the nicest thing to have fresh 00:05:23.70\00:05:26.17 juiced vegetable juice or even fruit juice that you put through 00:05:26.20\00:05:30.76 the juicer yourself. 00:05:30.79\00:05:31.84 - What made you think that it was possible to even do that, 00:05:31.87\00:05:35.66 anything scientific or inspired that might make a person think 00:05:35.69\00:05:40.37 that it was alright to fast, just leave off food 00:05:40.40\00:05:42.98 for a few days. 00:05:43.01\00:05:43.98 - Well I've heard several doctors say that it certainly 00:05:43.99\00:05:46.18 wouldn't hurt us to fast for several meals, in fact probably 00:05:46.21\00:05:52.32 it wouldn't hurt most people, most Americans to fast 00:05:52.36\00:05:55.56 for a day, or even two, pretty much every week. 00:05:55.59\00:05:58.58 Now I can hear people out there saying, I don't know if I could 00:05:58.61\00:06:01.81 fast a whole day, every single week. 00:06:01.84\00:06:04.01 If you get into the routine pretty soon your body 00:06:04.04\00:06:06.93 gets to the place were you realized that the fast 00:06:06.96\00:06:09.39 is coming and you prepare for it and actually it's not to bad, 00:06:09.42\00:06:12.46 now I wouldn't climb Mt. Everest on that day, but probably 00:06:12.49\00:06:16.19 it will be something that you will get used to and actually 00:06:16.22\00:06:19.81 began to get to the place to where you enjoy having 00:06:19.84\00:06:23.11 that time off, and certainly can use the extra time 00:06:23.14\00:06:26.09 to other things. 00:06:26.12\00:06:27.34 - Now what adjustment do you think a person ought to make 00:06:27.37\00:06:30.41 in their daily schedule on their fast day, let's say they 00:06:30.44\00:06:34.99 decide to do one or two days of fasting every week, 00:06:35.02\00:06:38.50 what adjustments if any do you say they should make? 00:06:38.53\00:06:43.36 - Probably would be good to schedule any heavy activity 00:06:43.39\00:06:48.62 on some other day, especially toward the end of the day 00:06:48.65\00:06:51.89 you might be running out of steam a little bit 00:06:51.92\00:06:53.75 on the fast day, but it's actually not to bad, 00:06:53.79\00:06:56.31 if you've had pretty good meals up until that time 00:06:56.34\00:06:59.34 you shouldn't have to much trouble. 00:06:59.37\00:07:00.80 - I had a colleague one time who was greatly overweight 00:07:00.83\00:07:04.37 and his doctor told him that if he didn't loose weight 00:07:04.40\00:07:08.00 he was going to have a heart attack and die. 00:07:08.03\00:07:10.48 He was a fellow pathologist and he took that advice seriously, 00:07:10.51\00:07:17.14 and his wife told me that he fasted for 89 days, 00:07:17.17\00:07:22.70 now he took certain minerals and certain vitamins, 00:07:22.73\00:07:28.96 but he didn't eat any food for almost three months, 00:07:28.99\00:07:33.92 and I thought how could a person possibly fast that long. 00:07:33.95\00:07:39.05 So one day when I saw him at a medical meeting, 00:07:39.08\00:07:41.96 I asked him about that, he said yes, I fasted from 00:07:41.99\00:07:45.70 something like September to maybe New Years. 00:07:45.73\00:07:50.81 But the only thing he ate was a tiny bit of stuffed celery 00:07:50.92\00:07:59.11 at some kind of Thanksgiving meal that everybody went to 00:07:59.14\00:08:04.80 that was all that he ate for that long, 00:08:04.83\00:08:06.93 what do you think about such a prolonged fast? 00:08:06.96\00:08:09.04 - Well I don't know, that's the first time I have heard of 00:08:09.07\00:08:11.92 someone fasting quite that long I believe, 00:08:11.95\00:08:13.96 but I think that probably most of us Americans are stuffed 00:08:13.99\00:08:18.37 in various ways that we could probably stand to get rid of... 00:08:18.40\00:08:21.85 You stop and think about when we celebrate anything, 00:08:21.88\00:08:24.86 an anniversary, a birthday, Thanksgiving, 00:08:24.89\00:08:27.55 just about any kind holiday what do we do, 00:08:27.58\00:08:30.02 we go to some place to eat, and usually to eat to much. 00:08:30.05\00:08:33.95 To much food, and to rich of varieties and so forth 00:08:33.98\00:08:39.19 so it certainly wouldn't hurt us to back off on what 00:08:39.22\00:08:42.90 we are eating, even on a daily basis at each meal, each portion 00:08:42.93\00:08:46.76 and you could consider that to be somewhat of a fast by itself, 00:08:46.79\00:08:50.71 just leaving off one meal of the day, if you eat three meals 00:08:50.74\00:08:53.44 a day then go to two, that would be a fast of sorts, 00:08:53.47\00:08:56.51 I don't know about the long extended fasts. 00:08:56.54\00:09:00.06 - To tell you frankly, I don't know either, 00:09:00.09\00:09:02.28 I don't know about those and I think that probably 00:09:02.31\00:09:04.68 it is not the wise thing, short fast say five days, 00:09:04.71\00:09:09.32 I can freely endorse that, for people who do not have 00:09:09.35\00:09:13.23 either diabetes type 1, or gout, either one of those 00:09:13.26\00:09:18.09 types of diseases, these people should not fast, 00:09:18.12\00:09:21.21 because the gout person is likely to spill more uric acid 00:09:21.24\00:09:24.81 in the urine, form some uric acid stones, or get deposits 00:09:24.84\00:09:30.44 in arteries or joints or muscles and that would not be good. 00:09:30.83\00:09:34.96 And for the type 1 diabetic they may become acidotic 00:09:34.99\00:09:39.69 and even land in the hospital with a fast, 00:09:39.72\00:09:43.50 so they should not be fasting. 00:09:43.53\00:09:45.28 - That's good. 00:09:45.31\00:09:46.53 - Well thank you for highlighting this thing of 00:09:46.56\00:09:48.89 fasting and it's an interesting thing that when we talk about 00:09:48.92\00:09:54.42 eating we should also talk about fasting. 00:09:54.45\00:09:58.53 But I have some more things that I would like for you to 00:09:58.56\00:10:00.82 learn about eating and I've asked Rhonda Clark 00:10:00.85\00:10:04.24 if she will join me in presenting some of these things, 00:10:04.27\00:10:08.10 this is Rhonda Clark who is one of my colleagues 00:10:08.13\00:10:11.26 at Uchee Pines and does teaching there, counseling, 00:10:11.29\00:10:15.76 patient counseling, and telephone counseling, 00:10:15.79\00:10:18.96 and you wear a number of hats, we're very appreciative of your 00:10:18.99\00:10:24.38 work there for us. - Thank you! 00:10:24.42\00:10:26.25 And I'd like to know you have a number of props here, 00:10:26.28\00:10:28.95 and I'd like to know what you are planning to tell us 00:10:28.98\00:10:32.12 about today. 00:10:32.15\00:10:33.44 I wanted to talk today a little bit about portion sizes, 00:10:33.47\00:10:35.83 and how to know if the portion sizes that we are eating 00:10:35.86\00:10:38.31 are healthful. 00:10:38.34\00:10:39.31 Even if we are taking a healthy diet if we are overeating 00:10:39.32\00:10:42.79 we can interfere with proper digestion and gain weight, 00:10:42.82\00:10:46.07 even if we are eating the best possible diet. 00:10:46.10\00:10:48.72 So I wanted to let you know a wonderful tool I learned 00:10:48.75\00:10:53.87 from a nutritionist a long time ago is that with this we 00:10:53.90\00:10:57.09 always have our hand, the ability to measure portions 00:10:57.12\00:11:02.34 and gauge whether or not items we are eating fit with the 00:11:02.37\00:11:05.87 portion size we know to be appropriate. 00:11:05.90\00:11:07.61 Your fist, a loosely made fist represents about one cup, 00:11:07.64\00:11:12.94 or would also represent for example about eight ounces 00:11:12.97\00:11:16.80 of the potato or an apple, and I brought... 00:11:16.83\00:11:19.54 - so you mean all of this much of your hand represents about 00:11:19.57\00:11:23.25 one cup, and I brought an example with me of a potato 00:11:23.28\00:11:26.52 that's fairly close is size to my fist, this would represent 00:11:26.55\00:11:31.97 an appropriate serving size, it's a little bit bigger 00:11:32.00\00:11:34.88 but appropriate serving size of a baked potato. 00:11:34.91\00:11:37.94 - So if a person had a smaller hand, they would have a 00:11:37.97\00:11:44.38 little smaller serving size. 00:11:45.57\00:11:47.57 - A child's serving size of course is smaller, 00:11:47.60\00:11:49.64 a large man needing a little bigger size so that's 00:11:49.67\00:11:53.71 a healthful tip, also on our hand the first joint 00:11:53.74\00:11:59.87 our thumb down to tip of our thumb, this represents about 00:11:59.90\00:12:03.37 a tablespoon, or about how much you would want to use 00:12:03.40\00:12:06.83 of salad dressing for example maybe a spread on your bread 00:12:06.86\00:12:11.39 would represent about that much of how large your thumb is. 00:12:11.42\00:12:14.68 - So a person with a big thumb might be able to take in 00:12:14.71\00:12:18.74 and tolerate quite well in the body still about 00:12:18.77\00:12:23.33 that much volume, that's a good little tool. 00:12:23.36\00:12:27.78 - Then on our index finger another first joint to the tip 00:12:27.81\00:12:33.60 the finger, this is a little smaller and in most people 00:12:33.63\00:12:36.17 represents about what a teaspoon would represent. 00:12:36.20\00:12:39.28 So this might again represent if you are using a nut butter 00:12:39.31\00:12:42.51 or more concentrated spread the appropriate portion size to use. 00:12:42.54\00:12:46.80 Now for many vegetables and fruits we're told portion sizes 00:12:46.83\00:12:52.50 by nutritionists, a nutritionist might give you a list 00:12:52.53\00:12:55.95 of appropriate portion sizes and tell you, 00:12:55.98\00:12:58.29 a portion of fruit for example is a medium size piece of fruit 00:12:58.32\00:13:01.83 and then you go to the market and you have this apple 00:13:01.86\00:13:06.80 and this apple, and oh boy which one is a medium size 00:13:06.83\00:13:11.28 piece of fruit, I really like the look of this apple, 00:13:11.31\00:13:15.02 it is fine to take the bigger apple, while this would 00:13:15.05\00:13:19.64 more likely fit in your palm and represent the serving size 00:13:19.67\00:13:25.24 the medium size piece of fruit. 00:13:25.27\00:13:27.51 We are encouraged to increase the number of fruits 00:13:27.54\00:13:29.81 and vegetables in our diet and so this apple while it might 00:13:29.84\00:13:33.32 represent one and a half servings of fruit, 00:13:33.35\00:13:36.08 that's fine if you are taking into account the fact that 00:13:36.11\00:13:39.14 this is a little more than a quote serving size of fruit. 00:13:39.17\00:13:44.08 Now one of my favorite foods especially for breakfast 00:13:44.11\00:13:47.46 is cereal, I love cereal, and I brought with me today 00:13:47.50\00:13:51.75 a cereal bowl, if I were really hungry and it's 00:13:51.78\00:13:56.17 breakfast time, I would probably fill this cereal bowl 00:13:56.20\00:14:00.35 one third to one half of the way full of cereal, most likely 00:14:00.38\00:14:04.84 before I put some soy milk on it to enjoy. 00:14:05.19\00:14:07.95 But we need to be sure we read if we are using 00:14:07.99\00:14:12.31 packaged cereals especially Granola cereal is a little more 00:14:12.34\00:14:15.22 concentrated. 00:14:15.25\00:14:16.24 What the appropriate serving size is for this, 00:14:16.27\00:14:18.82 today I brought with me a generic whole grain cereal 00:14:18.85\00:14:25.81 and as we read the label we see the serving size 00:14:25.84\00:14:29.03 for this cereal is a half cup, well a half a cup is really 00:14:29.06\00:14:33.69 a rather small amount of cereal and when I pour that into my 00:14:33.72\00:14:37.61 cereal bowl, well you might feel a little bit deprived, 00:14:37.64\00:14:43.06 I'm not sure, let's see how this looks, I'm measuring out 00:14:43.09\00:14:46.95 I've got my half a cup of cereal well! 00:14:46.98\00:14:52.44 - That's disappointing! 00:14:52.47\00:14:54.45 - That is very disappointing and this brings out the point 00:14:54.48\00:14:57.92 that our dishware can help us or hurt us, 00:14:57.95\00:15:01.57 when we are learning about appropriate portion sizes. 00:15:01.60\00:15:04.04 Instead of using a large cereal bowl like this, 00:15:04.07\00:15:07.80 you may wish to use your half cup of cereal 00:15:07.83\00:15:11.94 in a cereal bowl more like this. 00:15:11.97\00:15:14.77 - That gives room also for something chopped up in it. 00:15:14.80\00:15:19.13 - Yes! - Like an apple or a banana. 00:15:19.16\00:15:21.01 - Of course, we still have room for the fruit but it doesn't 00:15:21.05\00:15:24.93 look quite so disappointing in a smaller bowl. 00:15:24.96\00:15:28.44 I also brought with me today and example of two 00:15:28.47\00:15:31.89 different serving plates and it's not uncommon 00:15:31.92\00:15:37.91 now days to see serving plates that are quite large 00:15:37.94\00:15:42.11 and when you set your potato on this plate, it looks a little 00:15:42.14\00:15:46.58 pitiful, you feel like you need more things to fill the plate, 00:15:46.61\00:15:50.85 really an appropriate size may be something more like this. 00:15:50.88\00:15:55.10 - Yes this is what we might consider to be 00:15:55.14\00:15:59.95 a breakfast plate. 00:15:59.98\00:16:01.27 - Yes! - But it would really be good 00:16:01.30\00:16:02.93 for a dinner plate as well. - Indeed! 00:16:02.96\00:16:04.85 - That's more like a serving platter for the family. 00:16:04.88\00:16:09.46 - If people are used to eating in restaurants their idea 00:16:09.49\00:16:12.76 of portion sizes will be a little distorted, 00:16:12.79\00:16:14.78 restaurants tend to serve greatly enlarged portion sizes. 00:16:14.81\00:16:18.48 I mentioned labels and I want to call out something 00:16:18.51\00:16:24.53 important this is a little bit different than portion sizes. 00:16:24.56\00:16:26.76 With portion sizes we do have to read labels 00:16:26.79\00:16:29.61 very carefully if we are looking to see the 00:16:29.64\00:16:31.41 nutritional value of foods, this package of pasta 00:16:31.44\00:16:35.50 for example, how many people would you suspect this is 00:16:35.53\00:16:39.37 supposed to feed? 00:16:39.40\00:16:41.87 - Well, let's see, one, two, three, four, maybe five. 00:16:41.90\00:16:48.82 - This is supposed to feed according to it's label 00:16:48.85\00:16:51.50 eight people. - Eight people. 00:16:51.53\00:16:53.85 - This is just a handful of pasta, now I could see where 00:16:53.88\00:16:56.83 this might even feed three people if they are hungry 00:16:56.86\00:16:59.21 and working out doors, and yet if you are looking to see 00:16:59.24\00:17:02.77 how many grams of fat am I getting, how many grams of salt, 00:17:02.80\00:17:06.94 milligrams of salt am I getting, look at the portion size as well 00:17:06.97\00:17:11.50 when you are reading the labels. 00:17:11.53\00:17:12.90 Nutritional labels I will say can be very deceptive 00:17:12.93\00:17:19.97 in this age where foods are marketed to appeal to health 00:17:20.00\00:17:24.11 reasons, like you will see things like no cholesterol, 00:17:24.14\00:17:26.96 no trans fats, it's still very important to read 00:17:26.99\00:17:31.10 the ingredients label. 00:17:31.13\00:17:32.51 Not all foods that are labeled with many lovely 00:17:32.54\00:17:36.38 healthy messages like we found a little snack food here 00:17:36.41\00:17:39.43 no cholesterol, dairy free, no additives, vegan, 00:17:39.47\00:17:42.91 and wheat free, no preservatives, doesn't this 00:17:42.94\00:17:45.72 look wonderful? 00:17:45.76\00:17:47.21 - All natural. - All Natural Cashew Crunch, 00:17:47.24\00:17:50.21 it sounds delicious, actually I think some of us have 00:17:50.24\00:17:52.97 sampled it and it is delicious, but a serving size is seven 00:17:53.00\00:17:56.52 pieces, and let me show you the size of one piece, 00:17:56.55\00:17:59.93 this is one piece, like a little piece of popcorn. 00:17:59.96\00:18:05.55 - One serving is seven pieces. - Seven pieces almost 00:18:05.58\00:18:09.38 200 calories, 12 grams of fat. 00:18:09.41\00:18:11.97 - Let's see seven pieces, let's see how much, one, two, three, 00:18:12.00\00:18:17.25 four, five, six, seven, that's not very much, 00:18:17.28\00:18:22.68 so that's a handful, but I know people, I myself if I 00:18:22.71\00:18:27.11 enjoy a snack this might be the beginning of... 00:18:27.14\00:18:30.82 -
