say oh no way, 00:01:18.46\00:01:21.62 I'm eating now what I've eaten all my life, and I've never 00:01:21.65\00:01:25.89 had a problem. 00:01:25.92\00:01:27.22 Sometimes if I can convince them to try eliminating a 00:01:27.26\00:01:31.32 certain food, they get better right away, and one of those 00:01:31.35\00:01:35.45 is for people who have gluten sensitivities. 00:01:35.48\00:01:38.76 Gluten sensitivities come in a number of forms, but probably 00:01:38.80\00:01:42.89 one of the most difficult to diagnose is that of a 00:01:42.92\00:01:46.98 gluten sensitivity. 00:01:47.01\00:01:48.49 Sometimes it is very easy, we just make a suggestion, 00:01:48.52\00:01:52.43 the person eliminates gluten... all the gluten grains from their 00:01:52.46\00:01:56.68 diet and immediately they are essentially well. 00:01:56.71\00:02:00.16 But sometimes it is as a minister I know who was not 00:02:00.19\00:02:06.81 very well as an infant, and as he got older he was a 00:02:06.84\00:02:12.18 small child, always the runt in his class in school and 00:02:12.21\00:02:16.78 he always had some kind of discomfort in his abdomen, 00:02:16.81\00:02:21.26 he was never really quite comfortable, he had more 00:02:21.29\00:02:23.58 diarrhea, more bouts of stomach pain than his two sisters did 00:02:23.61\00:02:28.59 so his family sort of though he had a weak stomach. 00:02:28.62\00:02:32.16 He grew up never robust, went to college and studied for 00:02:32.19\00:02:39.06 the ministry, married, pastored a church for many many years, 00:02:39.09\00:02:45.30 had three children, finally when he was 65 years old, 00:02:45.33\00:02:49.80 in 1980, that was 25 years after Celiac disease or 00:02:49.83\00:02:55.04 gluten sensitivity was discovered, this man was 00:02:55.07\00:02:58.69 diagnosed, he was 60 years old. 00:02:58.72\00:03:00.75 Now at the age of 60 to find out that you've got a disease 00:03:00.78\00:03:04.43 that has existed since you were born is a little on the 00:03:04.46\00:03:08.79 discouraging side but he was very hopeful that he could 00:03:08.82\00:03:11.92 get well, so he went right into the gluten free diet, 00:03:11.95\00:03:17.73 and it wasn't long before he had his disease fairly well 00:03:17.76\00:03:22.75 under control, although he was never robust, not until he died. 00:03:22.78\00:03:27.25 I would like to draw for you a diagram of what happens 00:03:27.29\00:03:31.75 to the intestinal tract when a person has a 00:03:31.78\00:03:34.86 gluten sensitivity. 00:03:34.89\00:03:35.89 Now if you could imagine that I am drawing here the stomach 00:03:35.92\00:03:41.12 and the small bowel, and here is the duodenum, and jejunum, 00:03:41.15\00:03:49.72 and then we get around to the ileum which is here, and that 00:03:49.75\00:03:53.36 goes into the colon which you can see here. 00:03:53.39\00:03:56.91 In the small bowel, let's take a small segment of this 00:03:56.94\00:04:02.42 and just take a look at it, here is the outside lining 00:04:02.45\00:04:07.64 and here is what we will call the sub mucosa, and then we will 00:04:07.67\00:04:12.44 draw the mucosa on here. 00:04:12.47\00:04:15.94 This has ups and downs as you can see here, 00:04:15.97\00:04:23.57 but those are all things that you can see, and of course 00:04:23.60\00:04:27.00 down in this area we have blood vessels that run in this area, 00:04:27.03\00:04:32.74 of course they are very numerous, lots of blood vessels 00:04:32.77\00:04:36.47 in here, but now let's do another thing, 00:04:36.50\00:04:39.60 let's take a segment of this part of the bowel, 00:04:39.63\00:04:44.22 just right here. 00:04:44.25\00:04:45.71 Here it is, this is microscopic now, it has these long fingers, 00:04:45.74\00:04:53.76 finger like projections called villi that project above the 00:04:53.79\00:04:59.17 surface. 00:04:59.20\00:05:00.17 Now with just a little bit of imagination you can tell 00:05:00.18\00:05:04.56 that if we are eating food and it's up in here and it comes 00:05:04.59\00:05:10.28 down in here, that by having these villi, you greatly 00:05:10.31\00:05:14.86 increase the surface area over which you can absorb nutrients 00:05:14.89\00:05:20.59 that you have digested from your food, and it greatly 00:05:20.62\00:05:24.28 increases the likelihood that you are going to have a 00:05:24.31\00:05:27.78 good functioning bowel, and that you are going to absorb 00:05:27.81\00:05:31.85 your nutrients, which can encourage a child to grow 00:05:31.88\00:05:35.12 and a young man to be robust. 00:05:35.15\00:05:37.70 If there is something wrong with this whole mechanism 00:05:37.73\00:05:42.19 then the person might have a great deal of discomfort, 00:05:42.22\00:05:45.99 and that's what people with Celiac disease usually have. 00:05:46.02\00:05:49.38 Unfortunately if they are not diagnosed and gluten eliminated 00:05:49.41\00:05:54.39 from their program, then as the years go by, we simply have 00:05:54.42\00:05:59.05 a shortening of these villi, so after a little while 00:05:59.08\00:06:05.12 they shorten a little bit, then it isn't long before 00:06:05.15\00:06:09.08 it shortens a little bit more and it is only that high, 00:06:09.11\00:06:12.74 and after years of not having a gluten free diet the surface 00:06:12.77\00:06:19.04 area over which they could reabsorb or absorb their food 00:06:19.07\00:06:23.63 has greatly diminished, so these individuals are 00:06:23.66\00:06:27.97 compromised rather significantly with their 00:06:28.01\00:06:31.75 nutrition, and they become nutrition cripples. 00:06:31.78\00:06:38.19 What can we do for such an individual? 00:06:38.22\00:06:42.05 It isn't difficult, it is simply avoid the gluten grains 00:06:42.08\00:06:46.00 and what are they? 00:06:46.03\00:06:47.29 They are wheat, rye, and barley, almost everyone will tell you 00:06:47.32\00:06:52.54 oats also, but oats probably contain gluten only by 00:06:52.57\00:07:02.23 contamination. 00:07:02.26\00:07:03.28 Gluten is a protein that is present in grains, 00:07:03.31\00:07:07.59 present especially in wheat and with this sensitivity 00:07:07.62\00:07:13.74 then of course if anyone eats wheat with the gluten in it 00:07:13.77\00:07:17.37 the thing that I showed you on the board will continue to 00:07:17.40\00:07:21.23 happen with a continued shortening of and flattening 00:07:21.26\00:07:25.12 of these villi so that less and less nutrients can be absorbed. 00:07:25.15\00:07:29.50 In addition to the pain and diarrhea, and the abdominal 00:07:29.53\00:07:34.62 discomforts, often they develop a bit of sense of being 00:07:34.65\00:07:39.78 down in the mouth, they try everything that they hear 00:07:39.81\00:07:43.39 and they just aren't well, but once they get on a 00:07:43.42\00:07:47.34 gluten free diet they can be helped marvelously. 00:07:47.37\00:07:50.68 Individuals with gluten sensitivity should avail 00:07:50.71\00:07:55.95 themselves of all the information that is available 00:07:55.98\00:07:58.51 these days such as this journal that comes out frequently 00:07:58.54\00:08:03.91 it's produced by the folk called Gluten Free Living 00:08:03.94\00:08:08.50 and the address for them is 19 Broadway in Hawthorne, NY. 00:08:08.53\00:08:14.03 You can find this on the web and get enrolled in one of these 00:08:14.06\00:08:19.59 organizations that help people with Celiac Disease. 00:08:19.62\00:08:23.70 You will find also if you look for it, you will find centers 00:08:23.73\00:08:27.86 where people with gluten sensitivity can go such as this 00:08:27.89\00:08:32.15 Holland's Center that you can find also on the internet, 00:08:32.18\00:08:36.76 and here is another one that you can find on the internet, 00:08:36.79\00:08:39.97 The Discussion of Gluten and what it's made of and what 00:08:40.00\00:08:44.69 kind of tests can be done for the individual who has a 00:08:44.73\00:08:50.94 gluten sensitivity. 00:08:50.97\00:08:52.48 Laboratory tests that can help with this include 00:08:52.51\00:08:55.39 blood carotene, it is almost always low, and fecal fat 00:08:55.42\00:09:01.19 is almost always high in these individuals. 00:09:01.22\00:09:04.69 Then if a glucose tolerance test is done, they will have 00:09:04.72\00:09:08.67 a rather flat curve, instead of the normal curve which goes 00:09:08.71\00:09:12.71 up and down rather sharply. 00:09:12.74\00:09:14.34 They will have a low cholesterol but also a low calcium level, 00:09:14.37\00:09:19.82 and iron and B12 and Folic Acid may also be low in these 00:09:19.85\00:09:25.20 individuals, and if you can supplement their diet 00:09:25.23\00:09:29.48 with these then it helps quite a great deal. 00:09:29.51\00:09:32.28 The prognosis in these people is excellent if they are 00:09:32.31\00:09:36.81 gluten free. 00:09:36.84\00:09:38.00 So we recommend that people who have gone from doctor 00:09:38.03\00:09:41.31 to doctor and never seem to find any kind of help for 00:09:41.34\00:09:46.06 their disorder, that they certainly try to see if they 00:09:46.09\00:09:50.06 can't get the help that they can get from just being 00:09:50.09\00:09:56.54 diagnosed with Celiac Disease and getting the cure for it 00:09:56.57\00:10:01.10 which is avoidance of gluten. 00:10:01.13\00:10:03.37 Now, with oats I might just add that oats may be taken 00:10:03.40\00:10:07.45 and if you can find a company that does not deal with any 00:10:07.48\00:10:10.97 other grain except oats... 00:10:11.00\00:10:12.84 There are a few companies that do handle only oats, 00:10:12.87\00:10:16.22 but if they handle other grains then there will be some 00:10:16.25\00:10:18.82 cross contamination. 00:10:18.85\00:10:20.17 Even as little as 300 or 500 parts per million parts of oats 00:10:20.20\00:10:27.93 one part of gluten or wheat will certainly make a difference 00:10:27.96\00:10:31.95 for these individuals. 00:10:31.98\00:10:33.19 They need to be down less than 20 parts per million 00:10:33.22\00:10:37.45 in order not to have significant quantities of gluten. 00:10:37.48\00:10:42.20 In addition to gluten sensitivity or celiac disease, 00:10:42.23\00:10:47.71 there are other types of gluten sensitivity, but a whole 00:10:47.74\00:10:52.28 plethora of other disorders that affect the 00:10:52.31\00:10:55.74 gastrointestinal tract. 00:10:55.77\00:10:57.23 Now I have here Dr. Don Miller and he is going to talk with you 00:10:57.26\00:11:01.78 about a very common problem GERD or 00:11:01.81\00:11:06.61 Gastro Esophageal Reflux Disorder. 00:11:06.64\00:11:08.87 Dr. Miller! 00:11:08.90\00:11:10.02 Thank you! 00:11:10.06\00:11:11.11 You know Dr. Thrash has mentioned cross contamination... 00:11:11.14\00:11:14.78 you will notice sometimes when you go to the store 00:11:14.81\00:11:17.85 and you look at your ingredients... 00:11:17.88\00:11:18.85 You should become an ingredient reader, especially if you have 00:11:18.86\00:11:22.20 any types of allergies or sensitivities to foods. 00:11:22.23\00:11:27.54 You will often find somewhere in that area: 00:11:27.57\00:11:30.63 This product was produced in a factory that also uses 00:11:30.66\00:11:34.57 nuts, peanuts, wheat, gluten, soy, because they realize 00:11:34.60\00:11:39.53 out there that there is this problem of cross contamination. 00:11:39.56\00:11:42.57 So be a careful reader, because it can be a major problem. 00:11:42.60\00:11:45.94 I'm going to talk a few minutes about this problem called 00:11:45.97\00:11:49.74 Gastro Esophageal Reflux Disorder. 00:11:49.77\00:11:53.39 Basically it deals with the stomach and the esophagus, 00:11:53.42\00:11:57.23 the first part of our alimentary canal, 00:11:57.26\00:11:58.92 that can be really affected by some reflux. 00:11:58.95\00:12:02.19 Reflux means to flow back- ward, the flow backward means 00:12:02.22\00:12:06.34 basically that you are having your stomach juices in there 00:12:06.37\00:12:09.60 and some of it gets somehow up through the cardiac sphincter 00:12:09.63\00:12:12.78 into the esophagus which will cause a burning sensation. 00:12:12.81\00:12:16.05 They also sometimes call this heartburn. 00:12:16.08\00:12:19.22 Now I will say at this point that GERD is not caused by 00:12:19.25\00:12:24.70 a lack of the little purple pill in your diet. 00:12:24.73\00:12:27.64 The little purple pill is only going to address the symptom 00:12:27.67\00:12:30.20 and not the problem. 00:12:30.23\00:12:32.22 What's causing the burning is the hydrochloric acid, 00:12:32.25\00:12:35.70 extremely strong industrial cleaner that they clean 00:12:35.73\00:12:38.67 metal with, which is used to digest the food in the stomach. 00:12:38.70\00:12:42.59 It gets back up through the sphincter, into the esophagus, 00:12:42.62\00:12:45.94 and will start the burning. 00:12:45.97\00:12:47.05 The burning itself is not the disease. 00:12:47.08\00:12:50.18 The damage it does is the disease. 00:12:50.21\00:12:53.18 Some people have it every once in awhile, 00:12:53.21\00:12:55.86 once a month is not GERD, it's just you did something wrong. 00:12:55.89\00:12:58.94 It's the chronic GERD that's the problem, 00:12:58.98\00:13:01.63 the chronic overuse of whatever it is that is causing 00:13:01.66\00:13:04.15 this problem, that is causing this constant burning. 00:13:04.18\00:13:06.86 Now what's going to happen, if you constantly allow the 00:13:06.89\00:13:10.14 hydrochloric acid up into your esophagus to burn it away. 00:13:10.17\00:13:13.69 You could come up with some ulcers in your esophagus. 00:13:13.72\00:13:16.62 You could also develop cancer. 00:13:16.65\00:13:18.54 So these are serious things that you do not want to get, 00:13:18.57\00:13:21.45 so the recommendation is, find a better way to live your life. 00:13:21.48\00:13:25.57 How is that? 00:13:25.60\00:13:27.41 There are a couple of things that you can do: 00:13:27.44\00:13:28.68 People that over eat have a high tendency to develop GERD 00:13:28.71\00:13:34.02 because they get an over distended stomach, 00:13:34.05\00:13:36.22 the pylorus is not going to allow the food out because 00:13:36.25\00:13:40.92 it is not ready to be sent to the duodenum and so 00:13:40.95\00:13:45.14 you will push it back up through your little sphincter here 00:13:45.17\00:13:48.47 into the esophagus, and that is what is going to cause 00:13:48.50\00:13:51.49 your GERD. 00:13:51.52\00:13:52.49 Also certain foods, your fiery foods, 00:13:52.50\00:13:54.95 foods that are gas forming, foods that will cause a 00:13:54.98\00:13:59.25 upset to the stomach area, which will cause it to 00:13:59.28\00:14:02.47 come back up this area. 00:14:02.50\00:14:03.76 Also bearing down on the stomach. 00:14:03.79\00:14:07.64 People do that when they are constipated, 00:14:07.67\00:14:10.33 which we will talk about in a few moments, 00:14:10.36\00:14:12.00 and other problems will cause us to push to much pressure 00:14:12.03\00:14:16.00 on the sphincter allowing food to go back through. 00:14:16.03\00:14:19.68 So what should you do? 00:14:19.71\00:14:20.73 It's simple, what do you do? 00:14:20.76\00:14:22.36 You quit doing what you did wrong to cause you to get 00:14:22.39\00:14:24.99 the problem. 00:14:25.02\00:14:25.99 We recommend that you eat smaller amounts of food. 00:14:26.00\00:14:28.43 It's not rocket science to know how much to eat, 00:14:28.46\00:14:32.92 but we will talk about that some time later. 00:14:32.95\00:14:35.45 You eat the amount of food that when you get done eating 00:14:35.48\00:14:38.15 you could say hmmm, I could still eat some more food, 00:14:38.18\00:14:40.80 and that is hard to do. 00:14:40.83\00:14:42.12 It is a habit that we learned to do, but we could still eat 00:14:42.15\00:14:44.93 more food, we stay away from fiery foods, hot foods, 00:14:44.96\00:14:48.42 those are not the best foods and we drink plenty of water 00:14:48.45\00:14:51.89 between the meals. 00:14:51.92\00:14:53.36 We want to make sure that between the meals we have 00:14:53.39\00:14:55.81 plenty of time to complete the digestive process, 00:14:55.84\00:15:00.53 we go through what is called the interdigestive phase. 00:15:00.56\00:15:03.69 Once the food has been emptied from the stomach, 00:15:03.72\00:15:06.04 gets past the duodenum, gets on its way down the tract 00:15:06.07\00:15:09.58 everything sort of relaxes for awhile, we need this time 00:15:09.61\00:15:13.44 between the meals. 00:15:13.47\00:15:14.70 That is one of the best recommendations that you can 00:15:14.73\00:15:16.74 have is rest between meals and don't over tax yourself 00:15:16.77\00:15:20.05 with to much food. 00:15:20.08\00:15:21.07 Another thing that you can do if you are having this problem 00:15:21.10\00:15:25.19 is raise the head of your bed, I'm not talking about putting 00:15:25.22\00:15:29.04 a bunch of pillow behind your head, but raise the whole head 00:15:29.07\00:15:32.21 of your bed 00:15:32.24\00:15:33.21 Put about four to six inches underneath the two front legs 00:15:33.22\00:15:39.50 of your bed, the headboard which will raise the whole slant 00:15:39.53\00:15:44.12 of your bed just enough to allow gravity to keep things down. 00:15:44.15\00:15:47.92 The only time you should be lying in you bed to go to sleep 00:15:47.95\00:15:51.42 is in the evening time, and that is the worse time for 00:15:51.45\00:15:53.94 a person with GERD to have eaten a big meal. 00:15:53.97\00:15:56.08 We are living in a society that likes to eat the main meal 00:15:56.11\00:15:58.70 at night time, don't eat the main meal at night time. 00:15:58.73\00:15:59.70 The main meal is in morning a good meal at lunch, 00:15:59.71\00:16:03.96 and if you have GERD, probably supper should be eliminated. 00:16:03.99\00:16:06.77 You don't need it. 00:16:06.80\00:16:07.77 You see people with GERD have uncontrolled appetites 00:16:07.78\00:16:11.14 and usually have a tendency to be going towards overweight 00:16:11.17\00:16:14.67 so stay away from these things. 00:16:14.70\00:16:16.19 Tobacco also exacerbates and alcohol... GERD so... 00:16:16.22\00:16:20.19 If you have a problem with tobacco and alcohol 00:16:20.22\00:16:22.36 get into a program that you can get off of these death dealing 00:16:22.39\00:16:26.95 products and you won't have to worry about the purple pill, 00:16:26.98\00:16:29.95 you don't have to worry the Esophageal Reflux, 00:16:29.98\00:16:32.17 you won't have to worry about the heartburn, 00:16:32.20\00:16:33.59 you can be back to being normal again, 00:16:33.62\00:16:35.84 and very few people know what normal is. 00:16:35.87\00:16:38.87 I sort of appreciate being a little bit normal Dr. Thrash. 00:16:38.90\00:16:41.92 Yes, It's nice to be normal but there are a lot of people who 00:16:41.95\00:16:45.24 for one reason or other are not normal in the 00:16:45.27\00:16:48.17 gastrointestinal tract. 00:16:48.20\00:16:49.50 A lot of people with GERD have tried everything they can 00:16:49.53\00:16:54.10 they try to be very good in their routine and still 00:16:54.13\00:16:58.32 they have GERD. 00:16:58.35\00:16:59.43 But if you persist there are good things that you can do 00:16:59.46\00:17:03.84 that may help you albeit may not entirely eliminate 00:17:03.87\00:17:09.11 the problem. 00:17:09.14\00:17:10.26 A few more things about gluten sensitivity, 00:17:10.29\00:17:13.00 first thing is not just Celiac disease but a gluten sensitivity 00:17:13.03\00:17:18.49 can cause a number of other problems as well. 00:17:18.52\00:17:20.81 Take for instance the skin problem of Rosacea, 00:17:20.84\00:17:24.32 Rosacea is also called adult onset acne, 00:17:24.35\00:17:27.94 and it involves the face in almost the same pattern 00:17:27.97\00:17:32.43 that childhood acne involves the face, but it often 00:17:32.46\00:17:39.09 tends to be cystic with large bulbous types of 00:17:39.12\00:17:43.94 little abscesses that form in the skin and can be quite 00:17:43.97\00:17:49.17 painful and unsightly. 00:17:49.20\00:17:50.99 So people with this kind of problem will also be looking 00:17:51.02\00:17:56.04 every where for the way to cure their problem with Rosacea. 00:17:56.07\00:18:02.14 Sometimes they use antibiotics and these antibiotics may help 00:18:02.17\00:18:08.38 some, but that is only for those that have a 00:18:08.41\00:18:11.53 secondary infection, the cause is not primarily that of an 00:18:11.56\00:18:17.54 infection, but is a sensitivity of some kind or something else 00:18:17.57\00:18:21.97 that we don't really understand. 00:18:22.00\00:18:23.81 But there are some ways that you can help yourself with 00:18:23.84\00:18:29.47 getting rid of gluten if you determine that a 00:18:29.50\00:18:32.89 gluten sensitivity is one of those things causing 00:18:32.92\00:18:35.91 your Rosacea. 00:18:35.94\00:18:37.02 Let me just mention a few things, one is that you can use 00:18:37.05\00:18:41.93 rice and corn, and millet, those are grains that you can be 00:18:41.96\00:18:46.70 quite certain of if you have a gluten sensitivity. 00:18:46.73\00:18:50.17 Since you don't have bread, wheat bread, you are at a 00:18:50.20\00:18:56.81 handicap when there are sand- wiches or you are at a picnic 00:18:56.84\00:18:59.67 or something of this nature. 00:18:59.70\00:19:00.89 But if you make some nice waffles for yourself made from, 00:19:00.92\00:19:05.00 rolled millet or rolled corn which you can sometimes find 00:19:05.03\00:19:12.76 I don't think I have seen rolled rice but you can make 00:19:12.79\00:19:16.94 rice flour, then mix it half and half with water 00:19:16.97\00:19:20.05 and if you are very careful you can something that is 00:19:20.08\00:19:23.41 palatable. 00:19:23.44\00:19:24.64 You can also cook the rice ahead of time and make it 00:19:24.67\00:19:28.45 nice and soft and then make a waffle, 00:19:28.48\00:19:31.43 and that can give you something that you can spread 00:19:31.46\00:19:34.33 and make a sandwich with and that helps you to have something 00:19:34.36\00:19:38.94 at the same time others in the picnic are having their 00:19:38.97\00:19:43.40 nice sandwiches. 00:19:43.43\00:19:44.54 You can also use potato flour that can be found in many shops 00:19:44.57\00:19:49.29 and soy flour, arrowroot, that is another on that people with 00:19:49.32\00:19:54.34 a gluten sensitivity should know about, Tapioca, 00:19:54.37\00:19:57.39 don't
