" 00:00:37.36\00:00:39.13 And so we have here, the prescription that God gave 00:00:39.16\00:00:42.39 to man for his diet. 00:00:42.42\00:00:44.13 We hope you will join us for this program. 00:00:44.16\00:00:45.13 Welcome to "Help Yourself to Health" 00:01:08.37\00:01:10.35 with Dr. Agatha Thrash of Uchee Pines Institute. 00:01:10.39\00:01:13.67 And now, here's your host, Dr. Thrash. 00:01:13.70\00:01:17.96 We can have perfect confidence that all we need to preserve our 00:01:20.31\00:01:25.66 and to make us strong and cheerful can be found 00:01:25.69\00:01:29.94 in the food that God has provided. 00:01:29.97\00:01:32.24 Then we might say... 00:01:32.27\00:01:33.83 Well why is it that sometimes, for some reason, 00:01:33.86\00:01:36.95 we get a little nutrient deficient, 00:01:36.98\00:01:39.09 or perhaps we even find that what we have been eating 00:01:39.12\00:01:43.70 is not protecting us against some of those things that 00:01:43.73\00:01:47.33 afflict mankind at this time. 00:01:47.36\00:01:49.44 And so what we want to do is to study the chemicals 00:01:49.47\00:01:53.77 that God put in foods in the very beginning... 00:01:53.80\00:01:56.50 In this way, we can know what foods we may have 00:01:56.53\00:01:59.61 overemphasized because our modern palates 00:01:59.64\00:02:03.83 call for something that may not be the best for us, 00:02:03.86\00:02:07.44 or some of the refinements or manufactured products 00:02:07.47\00:02:11.51 that we have taken, have not been in cooperation with our 00:02:11.54\00:02:16.47 body's own physiology. 00:02:16.50\00:02:18.38 And so as we study these things, 00:02:18.41\00:02:20.49 we can know what we should emphasize in the diet, 00:02:20.52\00:02:24.26 and what things we should minimize. 00:02:24.29\00:02:27.07 So I've asked Dr. Winn Horsley, who is one of my colleagues 00:02:27.10\00:02:30.93 at Uchee Pines... he is one of the staff physicians there, 00:02:30.96\00:02:35.20 and he is going to be assisting me to talk with you about 00:02:35.23\00:02:38.85 phytochemicals. 00:02:38.88\00:02:40.19 I like this topic. 00:02:40.22\00:02:42.07 I like to talk about foods. 00:02:42.10\00:02:43.83 I like food. 00:02:43.86\00:02:45.34 And so I'd like us to just talk about phytochemicals... 00:02:45.37\00:02:51.06 a big word. 00:02:51.09\00:02:54.44 The very words that you said was what I was going to say... 00:02:54.47\00:02:57.51 that this, to me, is a very interesting topic. 00:02:57.54\00:03:02.64 Well, I'll make the point in a minute. 00:03:02.67\00:03:04.42 Maybe one should look at what the word means... 00:03:04.45\00:03:07.69 Does that make sense? 00:03:07.72\00:03:08.69 "Phyto" is a root that simply means "plant. " 00:03:08.70\00:03:13.28 And, "phytotherapy" is therapy with plants. 00:03:13.31\00:03:18.47 There are whole courses of study in Europe where they 00:03:18.50\00:03:23.51 study herbs and so on... 00:03:23.54\00:03:25.07 So phytotherapy is a well-recognized thing. 00:03:25.10\00:03:29.02 "Phytochemicals" then are chemicals that are in plants 00:03:29.05\00:03:31.71 and especially in foods... 00:03:31.74\00:03:34.04 Well, I see you've got quite a sheaf of papers and I've got 00:03:34.07\00:03:37.08 quite a sheaf of papers... 00:03:37.11\00:03:38.87 The subject is a big one. 00:03:38.90\00:03:40.35 And what we have is a small part of a huge library 00:03:40.38\00:03:46.05 on this subject of phytotherapies and 00:03:46.08\00:03:50.03 phytochemicals. 00:03:50.06\00:03:51.03 You know, I get the impression that this has really become 00:03:51.04\00:03:55.99 a major area of study in just the last 10, maybe 15 years. 00:03:56.02\00:04:02.73 I know that when I went through medical school, and even after, 00:04:02.76\00:04:06.76 that there really wasn't the same kind of interest now that's 00:04:06.79\00:04:11.19 impacting not just nutritionists 00:04:11.22\00:04:13.01 but doctors that are at all open to this area of the protective 00:04:13.04\00:04:18.19 chemicals that God has put into foods. 00:04:18.22\00:04:20.28 Yes, and as we study even one food, we can say... 00:04:20.31\00:04:24.90 well this food, I like it. 00:04:24.93\00:04:26.84 Say for instance, apples... 00:04:26.87\00:04:28.42 I like apples because they're high in boron. 00:04:28.45\00:04:31.22 Boron is good for the bones... 00:04:31.25\00:04:33.58 And, therefore, women ought to eat apples, because they are 00:04:33.61\00:04:36.74 good for the bones with the boron. 00:04:36.77\00:04:38.84 But then somebody else says... 00:04:38.87\00:04:39.98 But apples also have this principal that normalizes 00:04:40.01\00:04:43.82 the blood pressure. 00:04:43.86\00:04:45.21 Ah yes, so everybody who is susceptible to 00:04:45.25\00:04:47.93 high blood pressure, should be taking an apple a day... 00:04:47.96\00:04:52.75 that's good! 00:04:52.78\00:04:53.75 But then somebody else says... 00:04:53.76\00:04:55.34 But then there's a lot of fiber in apples... 00:04:55.37\00:04:58.16 Well yes, anybody who has... so we just, you know, 00:04:58.19\00:05:01.10 we go on and on... 00:05:01.13\00:05:02.15 It's not just one food has one property... Right. 00:05:02.18\00:05:05.84 You know, one could even ask... 00:05:05.87\00:05:07.26 why didn't this become a subject of study? 00:05:07.29\00:05:11.23 There was lots of science back in the 1950s and earlier... 00:05:11.26\00:05:14.91 And maybe one should clarify that when we are talking about 00:05:14.94\00:05:18.91 phytochemicals, we're not talking about the macronutrients 00:05:18.94\00:05:23.32 ...the BIG things that are in food usually. 00:05:23.35\00:05:27.53 I suppose one could use it that way, but that's not usually 00:05:27.56\00:05:30.02 the way the word is used. 00:05:30.05\00:05:31.35 It's not talking, therefore, about protein or fat, 00:05:31.38\00:05:35.34 or carbohydrate that's in food. 00:05:35.37\00:05:37.71 And, it's not even talking about the trace nutrients like 00:05:37.74\00:05:42.50 vitamins... where if a person or an animal, when they do 00:05:42.53\00:05:45.54 experiments, they give them a diet without a certain vitamin, 00:05:45.57\00:05:48.91 for a certain number of weeks or months and soon they'll 00:05:48.94\00:05:51.00 develop a deficiency disease or even die. 00:05:51.03\00:05:53.87 Here, we're talking about something that has a very 00:05:53.90\00:05:57.79 unique property... a phytochemical, in general, 00:05:57.82\00:05:59.99 is trace, but if you don't give it to the person, 00:06:00.02\00:06:04.30 they won't die soon, necessarily 00:06:04.33\00:06:08.31 they won't necessarily develop an obvious deficiency disease, 00:06:08.34\00:06:12.60 but what's been found is... 00:06:12.63\00:06:13.81 that as the years go by, 00:06:13.84\00:06:15.58 they can age quicker. 00:06:15.61\00:06:18.56 Or, they don't have that protection that would 00:06:18.59\00:06:23.03 keep them from cancer. 00:06:23.06\00:06:24.98 And so, one can see why, 00:06:25.02\00:06:26.94 in original studies on nutrition, 00:06:26.97\00:06:29.51 they just didn't show up early along. 00:06:29.54\00:06:32.14 Yeah... because it takes years sometimes or decades 00:06:32.17\00:06:35.31 for these things to develop. 00:06:35.34\00:06:37.30 And another thing that we find in the study of phytochemicals, 00:06:37.33\00:06:41.77 is that... it's the balance also... 00:06:41.80\00:06:45.63 it's not just that a nutrient is there, or the complex or 00:06:45.66\00:06:50.72 cluster of nutrients that join together to make a perfect food 00:06:50.75\00:06:57.21 for the body. 00:06:57.24\00:06:58.21 That also is a part of this whole picture of the study of 00:06:58.22\00:07:02.28 phytochemicals and makes it so fascinating. 00:07:02.31\00:07:04.70 I think that isn't taking into account enough even yet... 00:07:04.73\00:07:07.99 ...that it's not just any one, or even all of them saying 00:07:08.02\00:07:13.42 in that you'd take it different times but the 00:07:13.45\00:07:16.82 combination that interacts probably is having the effect. 00:07:16.85\00:07:21.65 So we know that our Father put all of these things in the foods 00:07:21.68\00:07:26.29 in the beginning, so that we would eat them more in the 00:07:26.32\00:07:29.06 natural state. 00:07:29.09\00:07:30.06 So we couldn't expect that if we take selenium and lithium and 00:07:30.07\00:07:33.83 chromium 00:07:33.86\00:07:34.83 and administer these in what we know to be 00:07:37.64\00:07:38.64 the daily requirement, 00:07:38.67\00:07:40.84 we can't get the same effect as we can if we take the whole food 00:07:40.87\00:07:41.84 Absolutely. 00:07:41.87\00:07:42.84 This is before we started talking here, just thinking 00:07:46.53\00:07:49.53 about this whole issue of phytochemicals... 00:07:49.56\00:07:51.66 When you take it in well, you begin to see that it just 00:07:51.69\00:07:57.38 goes straight against mankind's tendency to want to analyze 00:07:57.41\00:08:02.20 and then willy-nilly play with foods... 00:08:02.23\00:08:05.93 Instead, we should treat it almost like a sacred thing 00:08:05.96\00:08:10.82 that God has put together just exactly what He wants and knows 00:08:10.85\00:08:14.27 that we need. 00:08:14.30\00:08:15.27 It's not wrong for us to cook things and to mix things 00:08:15.28\00:08:20.30 and sometimes we even peel or slice or take the heart of 00:08:20.33\00:08:25.07 something instead of the whole thing... 00:08:25.10\00:08:26.78 that isn't wrong but what is wrong is for us to 00:08:26.81\00:08:29.88 think that we can depend on supplying each little nutrient 00:08:29.91\00:08:34.30 and that's going to do the same work that God intended 00:08:34.33\00:08:38.53 when he made the whole thing. 00:08:38.56\00:08:41.31 And, you know, talking about how one food can sort of 00:08:41.34\00:08:46.48 become the prototype of health for a certain organ, 00:08:46.51\00:08:52.18 I would like us to talk about men's diseases. 00:08:52.21\00:08:55.95 We often don't do that. 00:08:55.98\00:08:57.87 We concentrate on women's diseases a lot... 00:08:57.90\00:09:00.20 But do you have any special information that you could tell 00:09:00.23\00:09:05.33 people about what would keep the prostate healthy, 00:09:05.36\00:09:08.61 and how to protect the prostate. 00:09:08.64\00:09:10.88 Maybe not just with foods, but with other things as well. 00:09:10.91\00:09:13.39 Well, we should maybe say a word about the prostate... 00:09:13.42\00:09:16.07 it's one of the issues of men's health that's right up 00:09:16.10\00:09:20.35 at the top. 00:09:20.38\00:09:22.77 Almost without exception, men, as they get older, 00:09:22.80\00:09:26.20 and from the age of sometimes even as early as 40 on... 00:09:26.23\00:09:30.45 and by the time of 60 years of age is reached, 00:09:30.48\00:09:33.39 I would guess it's way over 80% of men have trouble 00:09:33.42\00:09:36.60 with the prostate enlarging and starting to give 00:09:36.63\00:09:39.85 urinary symptoms. 00:09:39.88\00:09:41.50 And then prostate cancer turns out to be the most common cancer 00:09:41.53\00:09:46.69 in men and perhaps in humans. 00:09:46.72\00:09:49.29 I guess almost every man old enough will get it.. 00:09:49.32\00:09:53.91 So, this issue of whether our diet can affect the prostate's 00:09:53.94\00:09:58.99 health is one of real concern. 00:09:59.02\00:10:01.73 Do you suppose that it's diet that determines whether... 00:10:01.76\00:10:05.49 since we can expect that all men will eventually get cancer 00:10:05.52\00:10:09.56 of the prostate, but so few men, relatively speaking, 00:10:09.59\00:10:13.78 die of cancer of the prostate... 00:10:13.81\00:10:15.87 do you suppose it's diet? 00:10:15.90\00:10:18.10 Or is it lifestyle or both that protects some men. 00:10:18.13\00:10:22.61 There is a fatal prostate cancer and a nonfatal prostate cancer. 00:10:22.64\00:10:26.19 What makes the difference? 00:10:26.22\00:10:27.68 They both look alike when I see them under the microscope. 00:10:27.71\00:10:30.41 Well, you know, on that issue, 00:10:30.44\00:10:33.74 we don't even need to guess or suppose because there has been 00:10:33.77\00:10:36.33 some good scientific study that has made clear correlations 00:10:36.36\00:10:40.45 between the diet that a man is following and whether he ends up 00:10:40.48\00:10:46.04 with prostate cancer and the risk of death from it. 00:10:46.07\00:10:51.32 Some of this study has shown things that could be suspected 00:10:51.35\00:10:57.98 by just the wealth of material that's out there about 00:10:58.01\00:11:00.60 diseases caused by animal foods. 00:11:00.63\00:11:03.47 And sure enough, all the animal foods... 00:11:03.50\00:11:06.89 meat, eggs, dairy products do tend to cause an increase 00:11:06.92\00:11:11.67 in prostate cancer. 00:11:11.70\00:11:14.85 One that sticks in my mind, because it's old fashioned 00:11:14.88\00:11:20.35 cow milk that's considered the perfect food, 00:11:20.38\00:11:23.02 this graph showed that when there was more than 2 glasses 00:11:23.05\00:11:30.89 of cow's milk 00:11:30.92\00:11:31.89 consumed per day, 00:11:31.92\00:11:32.89 the risk of prostate cancer 00:11:32.92\00:11:33.89 in that man went up quite sharply... 00:11:35.85\00:11:38.26 Well you know, that's similar to what it is with breast cancer 00:11:38.29\00:11:42.42 As certain animal products, especially milk, goes up, 00:11:42.45\00:11:47.20 the incidence of breast cancer goes up. 00:11:47.23\00:11:50.23 I have long suspected that there might be a relationship 00:11:50.26\00:11:55.19 between the factors that cause breast cancer and the factors 00:11:55.22\00:11:59.61 that cause prostate cancer. 00:11:59.64\00:12:00.97 Do you have an idea about that? 00:12:01.00\00:12:02.47 I think that there really is quite good evidence 00:12:02.50\00:12:05.58 and doctors have realized this 00:12:05.61\00:12:08.61 even in the treatment of, say breast cancer or prostate 00:12:08.64\00:12:12.88 cancer, it's well known that the corresponding hormones... 00:12:12.91\00:12:17.14 female hormones in a woman with breast cancer 00:12:17.17\00:12:20.10 and the male hormone, testosterone, in a man 00:12:20.13\00:12:23.31 with prostate cancer, are going to often, not always, 00:12:23.34\00:12:27.20 but the large majority of cases are, in fact, going to foster 00:12:27.23\00:12:31.13 promote the growth of that cancer. 00:12:31.16\00:12:33.77 And, therefore, if you can block that hormone's activity... 00:12:33.80\00:12:37.96 in fact they used to do surgery, 00:12:37.99\00:12:42.14 maybe it's still done... 00:12:42.17\00:12:43.26 of castrating a man with prostate cancer and then 00:12:43.29\00:12:48.93 your growth will be cut way down in the cancer. 00:12:48.96\00:12:52.21 Because the major testosterone source is lost... That's right. 00:12:52.24\00:12:55.05 Yes, I remember back when I was in medical school, 00:12:55.74\00:12:59.13 they were already doing... 00:12:59.16\00:13:00.37 in fact, that was one of the best procedures considered was 00:13:00.40\00:13:03.96 a prostatectomy with an orchiectomy at the same time... 00:13:03.99\00:13:07.45 so the testes and the prostate were both taken out 00:13:07.48\00:13:09.99 at the same time. 00:13:10.02\00:13:11.14 Now, on that issue, that's where these phytochemicals are 00:13:11.17\00:13:14.65 so interesting. 00:13:14.68\00:13:17.46 There are plant foods that have phytochemicals 00:13:17.49\00:13:24.95 that act as hormones. 00:13:24.98\00:13:29.48 They mimic the action of estrogen or of testosterone. 00:13:29.51\00:13:35.18 In general, they are quite gentle compared to the force of 00:13:35.22\00:13:40.63 one's own hormones... and, therefore, they're not going to 00:13:40.66\00:13:48.09 cause a tremendous effect. 00:13:48.13\00:13:50.80 And, in fact, the gentleness of their stimulation towards 00:13:50.84\00:13:54.23 that hormone activity, is a help because they will occupy 00:13:54.26\00:13:59.54 the site... the receptor site 00:13:59.57\00:14:02.24 where that hormone would act in your body, 00:14:02.27\00:14:04.34 and so they're blocking the hormone... your own hormone 00:14:04.37\00:14:08.00 that would stimulate more strongly 00:14:08.03\00:14:12.25 and so that they are then in fact damping, slowing down 00:14:12.28\00:14:17.61 that stimulation that you would get from one's own hormone. 00:14:17.64\00:14:20.70 It's interesting how our Heavenly Father looks down 00:14:20.73\00:14:23.57 through the centuries and knew that in this age, 00:14:23.60\00:14:27.53 with all the things that we have to make us have an increased 00:14:27.56\00:14:31.03 risk of cancer... 00:14:31.06\00:14:32.03 He gave us that protective thing with the plants. 00:14:32.05\00:14:34.92 He put into the plants that that would occupy 00:14:34.95\00:14:38.74 the stimulating site for cancer by our own very powerful 00:14:38.77\00:14:44.31 hormones. 00:14:44.34\00:14:45.91 I'm thankful to our Heavenly Father for the way that He made 00:14:45.94\00:14:48.86 us and made a world for us to live in that was very 00:14:48.89\00:14:52.40 user-friendly. 00:14:52.43\00:14:53.73 Should we mention one of those phytochemicals? 00:14:53.76\00:14:56.13 Why yes, I'd like it if you would. 00:14:56.16\00:14:57.90 In fact, we won't get through your list here... nor mine. 00:14:57.93\00:15:01.35 Well, you might have more than I do. 00:15:01.38\00:15:03.13 I didn't write down a whole lot but I thought we should 00:15:03.16\00:15:04.89 say one anyway... "lycopene" 00:15:04.92\00:15:08.95 Lycopene is one of these phytochemicals that has been 00:15:08.98\00:15:14.14 found to definitely help prevent and perhaps even 00:15:14.17\00:15:19.95 help when the cancer is present, to keep it from growing so fast. 00:15:19.98\00:15:25.09 I've heard of dosing like 15 to 20 mg 3 times a day 00:15:25.12\00:15:30.37 of lycopene which is found in tomatoes... 00:15:30.40\00:15:33.26 I'll tell you, instead of taking a little pill with 15 to 20 mg 00:15:33.29\00:15:38.10 of lycopene 3 times a day, 00:15:38.13\00:15:39.68 I would much rather eat the tomatoes. 00:15:39.71\00:15:41.56 Absolutely... a whole tomato. 00:15:41.59\00:15:43.42 No reason why you can't eat... 00:15:43.45\00:15:44.81 you don't have to eat just a little slice... ah no.. 00:15:44.84\00:15:47.70 You can eat a whole tomato because they are only this 00:15:47.73\00:15:50.15 big... you know we always think of eating a whole apple. 00:15:50.18\00:15:52.73 Now you mentioned about the Lord does let us do some things 00:15:52.76\00:15:55.89 with food and cooking can, in fact, be helpful. 00:15:55.92\00:15:59.40 Here's a good example... Uh huh. 00:15:59.43\00:16:01.09 With cooking of tomatoes, it's felt that, 00:16:01.12\00:16:06.53 in fact, if anything, you release more lycopene. 00:16:06.56\00:16:09.73 And so, tomato sauce, as long as you're using other good 00:16:09.76\00:16:12.94 ingredients with it, is a worthwhile thing to use. 00:16:12.97\00:16:15.62 Yes, in fact, it probably makes it so that we can absorb it 00:16:15.65\00:16:19.65 better. 00:16:19.68\00:16:20.65 And so the Lord instructs us that we should cook and 00:16:20.66\00:16:23.85 that we should grind and whatever we wish to but 00:16:23.88\00:16:28.22 He has made these foods for us very nicely. 00:16:28.25\00:16:31.40 Now I notice here that tomatoes are red and lycopenes are red... 00:16:31.43\00:16:37.30 What about watermelons and beets and some mangos 00:16:37.33\00:16:43.23 and some other tropical fruits? 00:16:43.26\00:16:44.74 Are they also high in lycopenes? 00:16:44.77\00:16:47.09 Dr. Agatha, you're asking because I think you've got the 00:16:47.12\00:16:49.25 answer... Yes, we don't have to take the pill. 00:16:49.28\00:16:53.17 And let's say you're sensitive to tomatoes... is all lost? 00:16:53.20\00:16:57.14 You're not going to be able to get lycopenes because 00:16:57.17\00:16:59.42 unfortunately you're sensitive... No, you can 00:16:59.45\00:17:03.51 eat a lot of other things. 00:17:03.54\00:17:04.89 You can eat tomatoes, or ANYTHING that's red. 00:17:04.92\00:17:07.58 And a lot of things that are red are just absolutely 00:17:07.61\00:17:11.67 wonderful to the palate as well. 00:17:11.70\00:17:14.32 I'd like to come in with one other thing that has a 00:17:14.35\00:17:18.88 fascinating story to me with regard to prostate cancer. 00:17:18.91\00:17:22.68 This time, it's probably not lycopene. 00:17:22.72\00:17:28.69 It's a phytosterol... that is one of these phytochemicals 00:17:28.72\00:17:35.49 that acts like a hormone... 00:17:35.52\00:17:38.46 Sterol... I would think that sterol would be one of the 00:17:38.49\00:17:41.75 steroidal-types like estrogen and testosterone... Yes. 00:17:41.78\00:17:46.74 Yes, those steroidal... phytosterols 00:17:46.77\00:17:50.58 Phytosterols and this was with respect to red clover...
