Hello, I'm Agatha Thrash, a staff physician from 00:00:01.98\00:00:05.16 Uchee Pines Institute. 00:00:05.19\00:00:07.77 We have a topic for you today that's a very common one. 00:00:07.80\00:00:10.96 Probably the commonest thing that doctors hear about in 00:00:10.99\00:00:14.91 their offices is allergies. 00:00:14.94\00:00:16.87 Allergies and various autoimmune problems. 00:00:16.90\00:00:21.25 And so we'd like to talk with you about that, 00:00:21.28\00:00:23.59 and we hope you will join us. 00:00:23.62\00:00:24.60 Welcome to "Help Yourself to Health" 00:00:43.70\00:00:46.32 with Dr. Agatha Thrash of Uchee Pines Institute. 00:00:46.35\00:00:49.73 And now, here's your host Dr. Thrash. 00:00:49.76\00:00:54.46 We have such an enormous number of chemicals, pollens and fumes 00:00:54.49\00:01:01.53 and foods and dyes and a lot of things... fabrics 00:01:01.56\00:01:07.09 that we can react to. 00:01:07.12\00:01:08.60 And so, the human body often does that very thing. 00:01:08.63\00:01:12.25 What it does, is to look at something and see 00:01:12.28\00:01:16.72 if it recognizes it as part of what it has had, 00:01:16.75\00:01:19.96 and if it does, then it is happy with it, 00:01:19.99\00:01:23.04 and if not, then it may react to what you have just contacted. 00:01:23.07\00:01:28.30 Now this kind of thing... reacting to something in your 00:01:28.33\00:01:32.35 environment, is quite common. 00:01:32.38\00:01:35.48 In fact, many people today are what they call "allergic people" 00:01:35.51\00:01:40.80 They react with such things as hay fever with skin rashes, with 00:01:40.83\00:01:45.69 gastrointestinal problems, with aches and pains, with fatigue, 00:01:45.72\00:01:50.33 with depression, and a lot of other things that can be 00:01:50.36\00:01:54.80 said to be a problem with an allergy. 00:01:54.83\00:01:58.81 Some people can't sleep because of allergies. 00:01:58.84\00:02:01.16 Some people have flu-like symptoms because of allergies. 00:02:01.19\00:02:05.22 What can we do about these allergies? 00:02:05.25\00:02:08.70 Well we have a number of things we can do. 00:02:08.73\00:02:10.79 One of the allergies that we don't often think of as being 00:02:10.82\00:02:15.57 an allergic phenomenon is that of arthritis, 00:02:15.60\00:02:19.36 and it isn't so in all instances, 00:02:19.39\00:02:22.53 but certain cases of arthritis do seem to have a basis in 00:02:22.56\00:02:28.69 food sensitivity, especially the rheumatic types, or the 00:02:28.72\00:02:33.90 rheumatoid types of arthritis. 00:02:33.93\00:02:37.53 We have often found that if we eliminate the nightshades, 00:02:37.56\00:02:41.71 these individuals will have much better opportunity to 00:02:41.74\00:02:47.42 be pain free. 00:02:47.45\00:02:48.80 They may also recognize that their joints, which have been 00:02:48.83\00:02:52.80 swollen, and tender, will be less swollen and less tender 00:02:52.83\00:02:57.50 if they remove certain things like the nightshades. 00:02:57.53\00:03:00.63 Nightshades are tomatoes, potatoes, eggplant and peppers. 00:03:00.66\00:03:04.95 These foods contain a number of alkaloids which can be 00:03:04.98\00:03:12.26 irritating to some people. 00:03:12.29\00:03:13.67 I like to explain it in this way... 00:03:13.70\00:03:16.64 ...of course it isn't exactly this way but it's like 00:03:16.67\00:03:19.37 walking through these little sandspurs that you might find in 00:03:19.40\00:03:23.88 Florida, near the beaches, which get on your clothing or stick 00:03:23.91\00:03:29.54 in your foot. 00:03:29.57\00:03:31.32 These sandspurs are little packages with thorns 00:03:31.35\00:03:37.18 sticking out all around. 00:03:37.21\00:03:38.63 And when you walk by, they are very ready to stick onto 00:03:38.66\00:03:42.47 you and since they have little barbs on them, 00:03:42.50\00:03:44.97 they don't peel off very readily. 00:03:45.00\00:03:47.46 And so, with a sandspur you can carry them sometimes, 00:03:47.49\00:03:50.79 ...if you don't notice them, you can carry them in a seam 00:03:50.82\00:03:54.66 of your clothing for some months before you recognize 00:03:54.69\00:03:58.11 that it's actually there. 00:03:58.14\00:04:00.06 With these alkaloids that are present in certain foods like 00:04:00.09\00:04:04.35 the nightshades, I like to think of them as being like 00:04:04.38\00:04:07.88 sandspurs... they attach themselves or fix themselves 00:04:07.91\00:04:12.09 as the allergists say, in the joints on some of the tissues 00:04:12.12\00:04:16.77 and they sort of stay there to irritate and to poke into 00:04:16.80\00:04:21.56 the person and cause them to have pain and inflammation. 00:04:21.59\00:04:25.58 Staying off the nightshades for a period of time... 00:04:25.61\00:04:29.35 say some months, or even a year, can often do wonders 00:04:29.38\00:04:34.84 to make the person feel better. 00:04:34.87\00:04:37.23 Now nightshades aren't the only foods that can cause a 00:04:37.26\00:04:40.16 person to have painful joints. 00:04:40.19\00:04:42.36 Soy products are also quite common as allergy-producers or 00:04:42.39\00:04:47.52 arthritis-producers. 00:04:47.55\00:04:49.43 And some people have a sensitivity to wheat or to 00:04:49.46\00:04:53.73 all the gluten grains like rye and barley and wheat and 00:04:53.76\00:05:02.38 other grains that contain this very large protein that we call 00:05:02.41\00:05:09.03 gluten. 00:05:09.06\00:05:10.21 Now gluten and the nightshades and soy are just members of 00:05:10.24\00:05:16.95 classes of foods that do not have any particular 00:05:16.98\00:05:23.46 claim on allergy production but they are unique in that 00:05:23.49\00:05:31.06 they probably cause more allergies than most other foods. 00:05:31.09\00:05:35.25 Now there is a type of arthritis that is not allergic which we 00:05:35.28\00:05:39.94 call gout. 00:05:39.97\00:05:42.23 Gout is caused by the build up of uric acid in the tissues 00:05:42.26\00:05:48.67 and in the blood which comes from purine metabolism. 00:05:48.70\00:05:54.02 You may not heard of purines as a part of foods, 00:05:54.05\00:05:58.14 but purines are often associated with proteins... 00:05:58.17\00:06:03.77 So foods that are very high in proteins, especially animal 00:06:03.80\00:06:06.96 products, tend to be high in purines and tend to have 00:06:06.99\00:06:12.21 a metabolic end product called "uric acid. " 00:06:12.24\00:06:17.28 As the uric acid builds up in the blood, and in the tissues, 00:06:17.31\00:06:21.14 sometimes the uric acid will crystallize out... 00:06:21.17\00:06:24.99 And we are going to show you how to make a charcoal compress 00:06:25.02\00:06:29.11 and actually put it on somebody that we are going to tell you 00:06:29.14\00:06:32.79 has gout. 00:06:32.82\00:06:34.11 Now with gout, the foods that are the highest in the purines 00:06:34.14\00:06:42.48 are liver, kidneys, brain, heart, sweetbreads, muscles, 00:06:42.51\00:06:47.70 anchovies, sardines, meat extract, consommé, gravies, 00:06:47.73\00:06:52.14 fish roe and herring. 00:06:52.17\00:06:53.96 Now many of us don't eat any of those anyway, 00:06:53.99\00:06:57.23 but then those that have moderate levels are 00:06:57.26\00:07:00.25 some other sea foods, 00:07:00.28\00:07:01.71 and ALL meat and ALL foul. 00:07:01.74\00:07:03.86 Yeast and lentils, whole grain cereals, beans, peas, and 00:07:03.89\00:07:09.45 asparagus, cauliflower, mushrooms, spinach and oatmeal 00:07:09.48\00:07:12.82 ...those have moderate quantities. 00:07:12.85\00:07:14.87 So if you tend to have gout, 00:07:14.90\00:07:17.00 you want to leave off all these foods as much as you can. 00:07:17.03\00:07:20.68 Then those that have negligible levels are vegetables and fruit, 00:07:20.71\00:07:26.53 many cereals, and many cereal products. 00:07:26.56\00:07:30.63 So, as you tend to leave off these foods, 00:07:30.66\00:07:34.48 that makes your gout tend to get better. 00:07:34.51\00:07:37.87 But let's say you're in an acute flare-up, 00:07:37.90\00:07:40.44 you have big toe which is often the part of the anatomy most 00:07:40.47\00:07:45.59 severely affected. 00:07:45.62\00:07:46.88 Your big toe is swollen and painful, 00:07:46.91\00:07:49.86 and you want to do something to bring the pain down. 00:07:49.89\00:07:53.38 So I've asked Melissa Thrash if she will show you how to make 00:07:53.41\00:07:58.10 charcoal compress. 00:07:58.13\00:07:59.59 Charcoal compresses are not difficult to make and 00:07:59.62\00:08:02.67 Melissa has been making them for quite a while. 00:08:02.70\00:08:05.32 So Melissa, would you show us how to make a compress 00:08:05.35\00:08:10.01 and then show us on your friend, Shannon Jenkins 00:08:10.04\00:08:14.14 just how you apply it... Okay. 00:08:14.17\00:08:16.25 Often people will add flaxseed to their charcoal compress 00:08:16.28\00:08:20.94 because it helps it to gel better but it's not 00:08:20.97\00:08:23.03 absolutely necessary. 00:08:23.06\00:08:24.52 You can use either the whole flaxseed, or you can use the 00:08:24.55\00:08:27.09 flaxseed ground. 00:08:27.12\00:08:28.09 And, the ratio for flaxseed is 1 part of the flaxseed 00:08:28.10\00:08:33.72 to 4 parts of the charcoal. 00:08:33.75\00:08:35.26 So I'm going to demonstrate here by just spooning out some 00:08:35.29\00:08:39.62 charcoal... 00:08:39.65\00:08:42.55 1, 2, 3, and 4 00:08:42.58\00:08:50.84 And I can see that that's a very light powder. 00:08:50.87\00:08:54.11 It's really, really messy. 00:08:54.14\00:08:56.54 And you can add the flaxseed whole or ground 00:08:56.57\00:09:00.57 into the charcoal and mix it up... 00:09:00.60\00:09:04.11 And it's as my grandmother said, it's really, really messy 00:09:04.14\00:09:07.30 and it tends to get everywhere. 00:09:07.33\00:09:09.04 And so, I already mixed some up so we wouldn't make 00:09:09.07\00:09:13.78 a real big mess. 00:09:13.81\00:09:14.78 But you just mix it up in with enough water to make it 00:09:14.79\00:09:18.17 into a thin paste and not really runny but just a nice paste. Yes 00:09:18.20\00:09:23.83 And you're going to apply that to a porous material 00:09:24.52\00:09:28.67 such as a paper towel, or a thin cloth, or a napkin, 00:09:28.70\00:09:32.38 or a handkerchief, or whatever you happen to have that's 00:09:32.41\00:09:35.07 porous enough that it will go through... 00:09:35.10\00:09:37.05 and just spread it over it. 00:09:37.08\00:09:38.05 Sort of like putting peanut butter on a piece of bread, 00:09:47.22\00:09:50.76 isn't it? Sort of.. 00:09:50.79\00:09:56.38 Sometimes when the charcoal is made up, it is very thick 00:09:56.41\00:10:01.36 so you want it not to be so thick that you can't spread it 00:10:01.39\00:10:05.05 easily... 00:10:05.08\00:10:06.89 Okay... 00:10:06.92\00:10:08.36 There should only be one layer of material between the 00:10:08.39\00:10:12.70 charcoal and between the skin that you want to put it on 00:10:12.73\00:10:15.09 because it's not to be a barrier, 00:10:15.12\00:10:16.72 it's just to contain the charcoal. 00:10:16.75\00:10:19.18 Okay Shannon, I'm going to put this on your elbow. 00:10:19.21\00:10:26.09 And, we're going to wrap the plastic around it. 00:10:26.12\00:10:30.36 This plastic is not part of the treatment, 00:10:30.39\00:10:32.68 it's simply to contain the charcoal... 00:10:32.71\00:10:35.23 as Melissa said, charcoal can be quite messy and it can get 00:10:35.26\00:10:39.80 over a lot of things. 00:10:39.83\00:10:41.64 And it is also to keep the charcoal moist... 00:10:41.67\00:10:46.22 it will help with that quite a lot and that's very helpful. 00:10:46.25\00:10:50.73 And I suspect you're going to want an Ace bandage... 00:10:50.76\00:10:53.91 ...there you go. 00:10:53.94\00:11:00.25 The Ace bandage is put on lightly. 00:11:00.28\00:11:02.24 It's purpose is simply to hold the bandage in place... 00:11:02.27\00:11:06.52 the compress in place... so it's just simply wrapped 00:11:06.55\00:11:10.71 And the way to wrap an Ace bandage is overlapping it 00:11:10.74\00:11:13.87 about one-third and it functions in this instance merely to hold 00:11:13.90\00:11:20.46 the compress in place. 00:11:20.49\00:11:23.89 So once she's got it there, then she can attach it with the 00:11:23.92\00:11:27.64 little fastener that came with the Ace bandage. 00:11:27.67\00:11:32.10 There we go... 00:11:32.13\00:11:33.10 And how long does she leave that on? 00:11:33.11\00:11:35.73 She... preferably could leave it on all night... 00:11:35.76\00:11:38.30 but you don't have to leave it on all night. 00:11:38.33\00:11:41.34 Yeah, if it's in the daytime, she could leave it on just 00:11:41.37\00:11:43.58 a few hours... Um hm. 00:11:43.61\00:11:44.97 All right, thank you girls. 00:11:45.00\00:11:46.53 I appreciate that and am so happy. 00:11:46.56\00:11:48.69 I'll let you check the charcoal because it can be spread from 00:11:48.72\00:11:55.09 here to outside... and this as well... so that we aren't 00:11:55.12\00:12:01.03 liable to get any of that on us. 00:12:01.06\00:12:03.69 It's really quite a liability. 00:12:03.72\00:12:06.26 Now, we have a variety of things about immunity 00:12:06.29\00:12:12.17 that we need to understand and to understand this, 00:12:12.20\00:12:15.79 we need to know some things about white blood cells and how 00:12:15.82\00:12:19.39 the body produces certain of its important products. 00:12:19.42\00:12:23.06 So I've asked Dr. Winn Horsley if he will assist me in helping 00:12:23.09\00:12:28.21 you to understand about this matter of immunity. 00:12:28.24\00:12:32.02 Dr. Winn Horsley, who is a staff physician at Uchee Pines and 00:12:32.05\00:12:36.03 he will now tell you some things about the immune system. 00:12:36.06\00:12:39.73 Thank you, Dr. Agatha. 00:12:39.76\00:12:40.99 You've introduced it, that the real part of the immune system 00:12:41.02\00:12:45.99 is the white blood cell... 00:12:46.02\00:12:47.69 And in this issue of whether it's allergies or these 00:12:47.72\00:12:53.50 autoimmune diseases you were talking about, 00:12:53.53\00:12:55.20 we're talking about the immune system. 00:12:55.23\00:12:57.31 And perhaps first it would be worthwhile to look at what 00:12:57.34\00:13:00.50 does it do that is good... since it sounds like 00:13:00.53\00:13:02.22 it's being bad. 00:13:02.25\00:13:03.68 Yes... and these things. 00:13:03.71\00:13:05.78 It would be worthwhile to think about that white blood cell 00:13:05.81\00:13:08.85 and, I think, maybe visualize it... All right... 00:13:08.88\00:13:10.40 Could I put it on the board? 00:13:10.43\00:13:11.69 Well yes, I wish you would... that will help. 00:13:11.72\00:13:17.94 The white blood cell, I guess we'll outline it black... 00:13:17.97\00:13:20.89 but the inside will be white... Very good. 00:13:20.92\00:13:25.79 As all the cells in the body, you have a membrane around it. 00:13:25.82\00:13:30.27 The white blood cells are very different from the majority 00:13:30.30\00:13:34.16 of blood cells which are red. 00:13:34.19\00:13:35.58 The red blood cells are like robots, 00:13:35.61\00:13:37.39 they don't have a nucleus... 00:13:37.42\00:13:38.74 they're just cargo ships for oxygen. 00:13:38.77\00:13:41.24 But the WHITE blood cells have a nucleus with all the nuclear 00:13:41.27\00:13:45.92 material that there is in the body... directing things. 00:13:45.95\00:13:51.91 And I'm going to take one of of the lowest class 00:13:51.94\00:13:54.59 of white blood cells... what is called a "neutrophil," 00:13:54.62\00:13:58.30 and what it has is a lot of little granules in it. 00:13:58.33\00:14:02.62 These granules are filled with a hypochlorite-type of solution 00:14:02.65\00:14:10.63 which really is essentially bleach. 00:14:10.66\00:14:13.08 Yes, that's very powerful. 00:14:13.11\00:14:14.89 It is! You know, I heard a talk once by an emergency room 00:14:14.92\00:14:19.23 physician who emphasized that a bleach injury... 00:14:19.26\00:14:23.96 if a person gets undiluted bleach on her hands, 00:14:23.99\00:14:26.61 it's much harder to handle than a strong acid injury. 00:14:26.64\00:14:29.87 Is that right? Uh huh... 00:14:29.90\00:14:31.81 So, here we have the white blood cell... 00:14:31.84\00:14:36.34 another name for this neutrophil is a "poly," 00:14:37.80\00:14:39.07 a "polymorphonuclear" cell. 00:14:39.10\00:14:41.12 And off here, we're going to say we have a germ... 00:14:41.15\00:14:46.07 a bacterium, which is an enemy that we want to get rid of, 00:14:46.10\00:14:50.57 and it is very good at doing this. 00:14:50.60\00:14:53.00 The very first thing that happens is that this white blood 00:14:53.03\00:14:57.99 cell has the remarkable capacity of being able to recognize 00:14:58.02\00:15:02.36 that this is a foreign object... 00:15:02.39\00:15:04.29 Now you may think, well that should be easy. 00:15:04.32\00:15:06.70 But let's keep in mind... there are little cells in our own body 00:15:06.73\00:15:11.16 I drew this little purposely because most bacteria are 00:15:11.19\00:15:14.16 smaller than the white blood cells. 00:15:14.19\00:15:15.75 But we have tiny platelets that are there... in the blood. 00:15:15.78\00:15:20.56 And there are so many structures in the body, 00:15:20.59\00:15:23.62 How does it recognize which is supposed to be there 00:15:23.65\00:15:27.62 and which is not? 00:15:27.65\00:15:28.62 Well it's an amazing endowment that, in fact, 00:15:28.63\00:15:34.11 we could say that it is trained in a college that does this. 00:15:34.14\00:15:39.34 We should really compare the white blood cell system 00:15:39.37\00:15:42.87 to an army because it functions very much like that. 00:15:42.90\00:15:45.44 In fact, there are different levels of the soldiers and 00:15:45.47\00:15:51.21 officers in it up until generals. 00:15:51.24\00:15:54.08 And they get training in what you could call the military 00:15:54.11\00:15:59.42 college of the body. 00:15:59.45\00:16:01.00 It's a gland that's located behind the breastbone, 00:16:01.03\00:16:04.60 so we can't feel it or be aware of it. 00:16:04.63\00:16:07.46 And, it's actually rather small in adult life but, 00:16:07.49\00:16:10.97 in early childhood, in infancy, it's quite a large gland. 00:16:11.00\00:16:15.40 And what it's doing is, it's training these white blood cells 00:16:15.43\00:16:19.26 to recognize everything that is you... 00:16:19.29\00:16:23.73 when they're in you. 00:16:23.76\00:16:24.93 Everything that's in me when it's in me. 00:16:24.96\00:16:26.73 It's to recognize what is oneself. 00:16:26.76\00:16:30.56 And, when they have graduated from the college, 00:16:30.59\00:16:34.07 they're well-trained. 00:16:34.10\00:16:35.55 So, as soon as it sees any object, it quickly checks 00:16:35.58\00:16:39.87 ...sort of like computers do on a credit card. 00:16:39.90\00:16:43.35 Is this an approved or an unapproved object person? 00:16:43.38\00:16:48.91 And so if this bacterium, as it shouldn't, it would not pass 00:16:48.94\00:16:54.06 the test, then it's automatic fight... 00:16:54.09\00:16:57.59 And it's trained like a hit squad. 00:16:57.62\00:17:00.33 It goes after hijackers of airplanes. 00:17:00.36\00:17:02.37 It then shows another of its amazing capabilities... 00:17:02.40\00:17:05.83 It's able to move. 00:17:05.86\00:17:06.84 It's able to swim right through fluid, or actually even 00:17:06.87\00:17:10.77 go through soft tissues. 00:17:10.80\00:17:12.43 It will come right over to the bacterium and then go ahead 00:17:12.46\00:17:16.44 with it's destruction. 00:17:16.47\00:17:17.68 Now I'm not going to re-draw the whole white blood cell. 00:17:17.71\00:17:20.60 I'll just draw the bacteria right next to it here. 00:17:20.63\00:17:25.23 The next step is putting out some arms... 00:17:25.26\00:17:30.01 as though it were going to give a loving hug. 00:17:30.04\00:17:35.88 But the following step is not a loving hug... 00:17:35.91\00:17:39.74 it is consumption. 00:17:39.77\00:17:42.62 It's now inside but the story isn't over yet. 00:17:42.65\00:17:45.50 It's now encapsulated inside the white blood cells' membranes 00:17:45.53\00:17:51.89 but now all these little granules come into action. 00:17:51.92\00:17:55.29 They come with their bleach with its powerful destructive 00:17:55.32\00:18:03.59 action and they're dumped into that little space 00:18:03.62\00:18:06.61 and that bacterium is history... Um hm. 00:18:06.64\00:18:10.78 Well, that's obviously an important function. 00:18:10.81\00:18:14.90 Yes, and it's important also that those little granules 00:18:14.93\00:18:19.05 don't ever dump their bleach until they get the germ 00:18:19.08\00:18:24.29 in that capsule and they put the bleach inside the capsule. 00:18:24.32\00:18:28.57 That's very much so. 00:18:28.60\00:18:31.12 It may have taken another billion years to evolve 00:18:31.15\00:18:34.92 that little feature... don't you think? 00:18:34.95\00:18:37.63 You know it really is ludicrous to think that these things 00:18:37.66\00:18:41.42 could have just happened... Yes. 00:18:41.45\00:18:44.57 Now this is, of course, just one aspect 00:18:44.60\00:18:48.60 of immune function. 00:18:48.63\00:18:49.85 There are other cells that have, not this action, 00:18:49.88\00:18:54.79 but rather a directing action, or a memory action of 00:18:54.82\00:18:57.65 remembering previous things. 00:18:57.68\00:18:59.03 And there is a whole system of molecules called "antibodies" 00:18:59.06\00:19:03.13 that are involved in struggles like this for getting rid of 00:19:03.16\00:19:07.60 foreign objects. 00:19:07.63\00:19:08.87 Now here, in our talk today, 00:19:08.90\00:19:13.43 we're getting into autoimmune disease. 00:19:13.46\00:19:18.11 And the underlying problem here apparently is 00:19:18.14\00:19:23.35 that somehow the white blood cells have either forgotten 00:19:23.38\00:19:27.00 or gotten mixed up on what was their original training 00:19:27.03\00:19:31.16 at the military college. 00:19:31.19\00:19:32.99 And so they, somehow, on encountering some cells 00:19:33.02\00:19:38.96 or tissue of the body, consider that this is foreign. 00:19:38.99\00:19:43.87 is an enemy. 00:19:43.90\00:19:45.57 It's an enemy... ah ha. 00:19:45.60\00:19:46.78 And so they start directing their terrible weapons 00:19:46.81\00:19:49.98 right at one's own body. 00:19:50.01\00:19:52.76 Those of you that remember, not the present struggle 00:19:52.79\00:19:58.03 in the Middle East, but one about 10 years ago... 00:19:58.06\00:20:00.50 11 years ago, the Gulf War, 00:20:00.53\00:20:03.20 might remember that the main causalities, the main source 00:20:03.23\00:20:07.33 of casualties among the allies there was what was called 00:20:07.36\00:20:10.30 "friendly fire.
