We have several epidemics in our day of degenerative diseases 00:00:01.98\00:00:05.82 ...they seem to be related. 00:00:05.85\00:00:08.48 We're going to be talking about these... such things as 00:00:08.51\00:00:11.81 diabetes in the next half an hour 00:00:11.84\00:00:14.31 and we'd be happy if you joined us. 00:00:14.34\00:00:16.23 I'm Agatha Thrash, a staff physician at 00:00:16.26\00:00:19.50 Uchee Pines Institute in Alabama. 00:00:19.53\00:00:20.50 Welcome to "Help Yourself to Health" 00:00:42.17\00:00:44.38 with Dr. Agatha Thrash of Uchee Pines Institute... 00:00:44.41\00:00:47.89 and now, here's your host, Dr. Thrash. 00:00:47.92\00:00:52.49 When we talk of diabetes, everybody always thinks of sugar 00:00:52.52\00:00:57.09 and well that they should 00:00:57.12\00:00:58.55 because excessive sugar is a problem for people who 00:00:58.58\00:01:02.94 have diabetes. 00:01:02.97\00:01:04.24 But just as much a problem as sugar, is that of fat. 00:01:04.27\00:01:08.54 So, we need to talk about fat as well. 00:01:08.57\00:01:11.38 Now fats can come in the form of margarine, and mayonnaise, 00:01:11.41\00:01:14.56 fried foods, cooking fats, salad oils... 00:01:14.59\00:01:17.25 all of these are free fats or visible fats 00:01:17.28\00:01:20.22 and any of these can be a problem to the diabetic 00:01:20.25\00:01:23.14 especially if the diabetic is overweight 00:01:23.17\00:01:25.33 and with type 2 diabetes, that is a very frequent finding. 00:01:25.36\00:01:28.99 Now I have asked Valerie Schreiber, 00:01:29.02\00:01:31.31 who is one of my colleagues at Uchee Pines 00:01:31.34\00:01:34.75 to help me in demonstrating some things about foods 00:01:34.78\00:01:38.50 and my granddaughter Melissa Thrash, 00:01:38.53\00:01:41.04 who will also help to demonstrate some things 00:01:41.07\00:01:43.34 about foods. 00:01:43.37\00:01:44.34 And we would like to show you some things about these two 00:01:44.35\00:01:48.64 troublesome areas... fats and sugars... 00:01:48.67\00:01:52.47 and of course, we could spend quite a long time... 00:01:52.50\00:01:54.96 we could spend the rest of the day just giving you recipes. 00:01:54.99\00:01:58.61 But, two very simple things and one is nut butter 00:01:58.64\00:02:02.48 and the other is a dessert. 00:02:02.51\00:02:04.57 So, Valerie Schreiber will talk with you about nut butters. 00:02:04.60\00:02:09.13 Thank you, Dr. Agatha. 00:02:09.16\00:02:10.38 I'd like to share with you how you can make very good 00:02:10.41\00:02:13.44 nut butter out of almonds 00:02:13.47\00:02:15.52 And much more inexpensive than you can go to the health food 00:02:15.55\00:02:19.11 store or your regular grocery store and buy nut butters 00:02:19.14\00:02:22.76 They can be quite expensive... 00:02:22.79\00:02:24.13 especially the almonds and the pecans 00:02:24.16\00:02:27.23 But what you can do at home is you can buy a bag of almonds 00:02:27.26\00:02:32.01 and take your almonds and put them on a loaf pan in the oven 00:02:32.04\00:02:39.58 about 250 degrees for about 2 hours 00:02:39.61\00:02:43.73 or a little bit more 00:02:43.76\00:02:44.86 and you can test them at that time and it will toast them 00:02:44.89\00:02:47.40 just right... 00:02:47.43\00:02:48.99 And then, all you have to do, is if you have a Champion Juicer, 00:02:49.02\00:02:53.57 is just put them through the Champion Juicer 00:02:53.60\00:02:55.27 And you can watch me, in just a moment, 00:02:55.30\00:02:57.56 just how I'm going to do this. 00:02:57.59\00:03:03.12 Go ahead and put some nuts in... 00:03:03.15\00:03:08.43 Wow, that comes right out as nut butter... It's frozen. 00:03:39.51\00:03:41.31 Ah ha... You freeze it and then you eat it frozen. 00:03:41.34\00:03:44.27 Just like you would a peanut butter pie. 00:03:44.30\00:03:46.38 Same as peanut butter pie... This is the almond butter pie. 00:03:46.41\00:03:49.57 This is beautiful and it's tasty and it's also healthful. 00:03:49.60\00:03:55.02 So we can be very happy for almond butter pie. 00:03:55.05\00:03:59.59 YES! And then we can put a dip of banana ice cream on it. 00:03:59.62\00:04:03.64 Ohhh... a dip of banana ice cream on it... 00:04:03.67\00:04:05.66 Now a diabetic can eat this? 00:04:05.69\00:04:07.33 Yes, a diabetic can eat this 00:04:07.36\00:04:08.68 because of the tofu that is in it will cause the blood sugar 00:04:08.71\00:04:12.28 not to rise as rapidly and because of the nuts 00:04:12.31\00:04:15.23 that are in it, will not rise as rapidly. 00:04:15.26\00:04:17.30 Very good... and that means then the glycemic index will not be 00:04:17.33\00:04:21.05 so high and we will talk a little bit later about 00:04:21.08\00:04:23.74 the glycemic index and what that means. 00:04:23.77\00:04:26.19 Now, we have here something else that is very interesting 00:04:26.22\00:04:31.97 and important and that is a sugar substitute. 00:04:32.00\00:04:36.42 Now, in the same Champion Juicer that we have used to make the 00:04:36.45\00:04:42.18 almond butter... now we can make banana ice cream. 00:04:42.21\00:04:47.23 It's a hands-down favorite in our home to have 00:04:47.26\00:04:50.49 this kind of dessert. 00:04:50.52\00:04:53.50 In fact, we can make a whole meal of this kind of dessert. 00:04:53.53\00:04:57.05 What do you have here, Melissa? 00:04:57.08\00:04:58.86 I had just frozen these bananas overnight and 00:04:58.89\00:05:03.32 I did it in a ziplock freezer bag. 00:05:03.35\00:05:07.02 You can do it to anything other than bananas, 00:05:07.05\00:05:09.58 berries work very well too. 00:05:09.61\00:05:13.01 I'm just going to run them through the Champion Juicer 00:05:13.04\00:05:15.05 and we're going to get the butter out. 00:05:15.08\00:05:18.10 And actually, I like to have the butter... the almond butter 00:05:18.13\00:05:22.62 I like to have that in my ice cream... 00:05:22.65\00:05:24.85 As soon as it's all though, then I just sort of mix 00:05:24.88\00:05:28.00 it up nicely and it's really quite good. 00:05:28.03\00:05:33.03 Ahhh... there come the bananas now 00:05:33.06\00:05:42.88 Now the bananas go through very quickly and you can 00:05:42.91\00:05:49.19 see it's beginning to look like 00:05:49.22\00:05:50.39 banana ice cream now. 00:05:50.42\00:05:51.84 It actually looks like vanilla ice cream 00:05:51.87\00:05:54.28 and with the almond butter in it, we call it 00:05:54.31\00:05:57.41 almond butter ice cream. 00:05:57.44\00:06:00.31 This would be good for diabetics because bananas happen to 00:06:00.34\00:06:04.78 be high in sugar, so mixed with some 00:06:04.81\00:06:08.97 almonds would be good! 00:06:09.00\00:06:10.64 Yes, okay... that's a very good illustration. 00:06:10.67\00:06:16.96 My! That looks just like vanilla ice cream. 00:06:16.99\00:06:20.88 And having had a good bit of experience with it, 00:06:20.91\00:06:23.94 I know it tastes like ice cream too. 00:06:23.97\00:06:25.81 It tastes delicious! 00:06:25.84\00:06:27.33 Can you do anything else with this other than 00:06:27.36\00:06:29.90 just put it through plain? 00:06:29.93\00:06:31.74 Yes, actually I have made it into a dessert. 00:06:31.77\00:06:34.60 Oh yes... banana split! 00:06:34.63\00:06:38.01 Oh that eaten with a cracker or a cookie 00:06:38.04\00:06:41.91 would be quite satisfying for a diabetic... Sure. 00:06:41.94\00:06:45.93 Can you make any other ice cream besides banana? 00:06:45.96\00:06:50.01 Yes, you can use berries and mangos and peaches 00:06:50.04\00:06:55.46 and anything else that you would freeze overnight 00:06:55.49\00:06:58.01 in the freezer. 00:06:58.04\00:06:59.01 And diabetics can use all of those... 00:06:59.02\00:07:01.55 Actually, some diabetics are extremely sensitive to 00:07:01.58\00:07:07.08 some fruits... 00:07:07.11\00:07:08.08 But fruits like strawberries and blueberries and 00:07:08.09\00:07:12.93 most kinds of berries... blackberries, 00:07:12.96\00:07:14.77 most diabetics can eat those very well and they can be 00:07:14.80\00:07:18.15 mixed with a little banana ice cream which makes them creamy 00:07:18.18\00:07:22.05 Bananas work up creamy with a juicer better than any others 00:07:22.08\00:07:26.97 but it's only the Champion Juicer that will make this 00:07:27.00\00:07:29.82 kind of creamy ice cream. 00:07:29.85\00:07:31.60 So you'll want to use that kind of fruit as part of the base. 00:07:31.63\00:07:37.81 But you can put in a little bit of banana, 00:07:37.84\00:07:40.00 then some strawberries, 00:07:40.03\00:07:41.71 a little bit more banana, then some more strawberries 00:07:41.75\00:07:44.46 and you can have strawberry ice cream. 00:07:44.49\00:07:46.22 And this is very nice and most diabetics can eat it very well. 00:07:46.25\00:07:49.47 In fact, most diabetics can even eat this, but it depends on 00:07:49.50\00:07:54.46 the severity and the sensitivity that the diabetic has. 00:07:54.49\00:07:59.47 Now with blueberries, it's exactly the same thing... 00:07:59.50\00:08:02.49 a little bit of banana, then some blueberries, 00:08:02.52\00:08:04.56 a little more banana and a little more blueberries and 00:08:04.59\00:08:06.92 is a beautiful blue color and is really quite delightful. 00:08:06.95\00:08:11.31 I hope this little illustration has been of help to you 00:08:11.34\00:08:15.43 so that you can understand that not everything about 00:08:15.46\00:08:20.27 delicious food has to be unhealthful. 00:08:20.30\00:08:23.14 But we can have some very healthful things that are 00:08:23.17\00:08:29.51 easy to make and that give us a lot of nutrients 00:08:29.54\00:08:34.76 and do not cause the diabetic to have a violation of their 00:08:34.79\00:08:39.39 general principles. 00:08:39.42\00:08:41.79 Now diabetes is of 2 general types... 00:08:41.82\00:08:46.15 the type 1 and the type 2. 00:08:46.18\00:08:49.46 We used to call the type 1, the juvenile diabetes, 00:08:49.49\00:08:53.49 and the type 2, the adult-onset diabetes. 00:08:53.52\00:08:56.72 And we can still do that but you will find that if you 00:08:56.75\00:09:01.03 classify them in the 2 different varieties, 00:09:01.06\00:09:04.78 that it makes it easier for you to know how to treat it. 00:09:04.81\00:09:08.33 Now my husband and I wrote a book a couple of years ago 00:09:08.36\00:09:12.35 called "Diabetes and the Hypoglycemic Syndrome" 00:09:12.38\00:09:15.79 In this book, we tried to gather everything from all 00:09:15.82\00:09:19.56 over the world... every remedy that we could think of 00:09:19.59\00:09:22.60 that would be helpful for a diabetic, 00:09:22.63\00:09:24.59 every practice that they could use that would 00:09:24.62\00:09:27.26 help them with their diabetes, 00:09:27.29\00:09:28.73 and put it all in one book... 00:09:28.76\00:09:30.83 and that is this book, "Diabetes and the Hypoglycemic Syndrome" 00:09:30.86\00:09:35.78 And, as you read through this, you will find some very 00:09:35.81\00:09:39.36 helpful things... whether you're a type 1 or a type 2 diabetic 00:09:39.39\00:09:44.16 We have written all those things that are written for type 2 00:09:44.19\00:09:47.99 diabetics can also help those that have type 1 diabetes 00:09:48.02\00:09:52.22 not to have the complications of diabetes to accelerate. 00:09:52.25\00:09:57.69 We should think of diabetes as accelerated aging... 00:09:57.72\00:10:02.54 because essentially that is what it is. 00:10:02.57\00:10:04.46 It is a degenerative disease related to other degenerative 00:10:04.49\00:10:09.23 diseases in a syndrome called "syndrome X" 00:10:09.26\00:10:13.87 Syndrome X... because of too much insulin, 00:10:13.90\00:10:17.58 is characterized by, not only diabetes, but also hypertension 00:10:17.61\00:10:22.41 heart disease that's with a high LDL 00:10:22.44\00:10:26.44 and a low HDL. 00:10:26.47\00:10:28.55 So the bad cholesterol is up, the good cholesterol is down 00:10:28.58\00:10:32.46 in syndrome X... 00:10:32.49\00:10:34.53 And then also cancer and overweight... 00:10:34.56\00:10:38.16 these are also difficulties that people have 00:10:38.19\00:10:42.11 who have syndrome X. 00:10:42.14\00:10:45.02 Now with the type 1 diabetic, or the juvenile diabetic, 00:10:45.05\00:10:49.40 it often comes on rather suddenly... 00:10:49.43\00:10:51.34 in fact, it may be almost EXPLOSIVE. 00:10:51.37\00:10:54.08 They may have a little bit of warning but then 00:10:54.11\00:10:59.14 when the diabetes really comes on rather quickly, 00:10:59.17\00:11:02.72 they may get sick and even prostrate very quickly. 00:11:02.75\00:11:08.16 So adults need to be aware that small children even 00:11:08.19\00:11:13.47 can have a serious problem there. 00:11:13.50\00:11:16.57 A friend of mine, a pediatrician, went with his wife 00:11:16.60\00:11:21.32 on a small trip... they were planning to be gone only 00:11:21.35\00:11:28.05 4 days... 00:11:28.08\00:11:29.05 They left an aunt in charge of their 2 small children; 00:11:29.06\00:11:32.23 one was 3 years old and the other 5. 00:11:32.26\00:11:34.40 The 3-year-old was not feeling very well when they left home 00:11:34.43\00:11:38.28 In fact, for a day or so, he'd just been a little, 00:11:38.31\00:11:40.74 what they thought was just puny... 00:11:40.77\00:11:43.09 They lived in Savannah, Georgia 00:11:43.12\00:11:45.17 and it was summertime 00:11:45.20\00:11:46.85 and so they thought, well maybe the heat, he's playing 00:11:46.88\00:11:48.94 too hard in the heat. 00:11:48.97\00:11:49.94 And so when they left, he didn't have an appetite 00:11:49.95\00:11:54.84 ...he would not eat and the aunt encouraged him to eat 00:11:54.87\00:11:59.80 just a little bit which he promptly threw up 00:11:59.83\00:12:02.22 and they had spent one night 00:12:02.25\00:12:07.11 in the motel at the place where they were vacationing 00:12:07.14\00:12:10.32 for those 3 or 4 days when they got a call from their aunt. 00:12:10.35\00:12:14.83 And she said, "John is still not well, in fact, he is worse. 00:12:14.86\00:12:20.58 I think you should come home and see him. " 00:12:20.61\00:12:23.06 Well the doctor said, "No, you're just overly concerned. 00:12:23.09\00:12:27.50 He's going to be all right. " 00:12:27.53\00:12:28.91 So, he allayed her fears, but in a couple of hours, 00:12:28.94\00:12:34.14 she called again... 00:12:34.17\00:12:35.70 Well, she couldn't get in touch with him right away 00:12:35.73\00:12:37.61 so she was persistent, 00:12:37.64\00:12:40.55 and sent someone for them. 00:12:40.58\00:12:42.86 And again, the doctor thought... well, she's just being 00:12:42.89\00:12:46.30 overly concerned. 00:12:46.33\00:12:47.30 So he listened to her on the phone and tried to allay 00:12:47.31\00:12:52.22 her fears but she said, "No, I really want you to 00:12:52.25\00:12:55.35 come home now. " 00:12:55.38\00:12:56.60 So... nothing to do but the two of them to pack and go back home 00:12:56.63\00:13:01.95 So my friend said... that he walked in the door... 00:13:01.98\00:13:05.44 and he sort of had his hands on his hips 00:13:05.47\00:13:07.71 and he said to his aunt... 00:13:07.74\00:13:10.06 "Now show me where this sick boy is. " 00:13:10.09\00:13:13.21 Well he took one look at his son and he said, 00:13:13.24\00:13:17.01 "My son is very ill. " 00:13:17.04\00:13:18.85 So they went directly to the hospital, got a blood sugar, 00:13:18.88\00:13:21.79 found that it was over 400 00:13:21.82\00:13:23.75 and the boy was already in acidosis 00:13:23.78\00:13:27.30 and it was a little bit nip and tuck to get him 00:13:27.33\00:13:30.43 so that he was straightened out again. 00:13:30.46\00:13:32.51 So it CAN BE that a child can get a very sudden onset 00:13:32.54\00:13:38.02 of type 1 diabetes. 00:13:38.05\00:13:39.70 Now there are certain precursors of type 1 diabetes 00:13:39.73\00:13:42.94 and Don Miller, who is my associate at Uchee Pines 00:13:42.97\00:13:47.85 a lifestyle counselor and a health educator 00:13:47.88\00:13:51.50 and he will now talk with you about some of the precursors 00:13:51.53\00:13:55.19 of diabetes type 1. 00:13:55.22\00:13:56.84 Okay Dr. Thrash. 00:13:56.87\00:13:58.04 There are various things that will precurse or 00:13:58.07\00:14:01.85 perhaps lead to diabetes type 1. 00:14:01.88\00:14:04.75 We don't know all the reasons why a person develops type 1. 00:14:04.78\00:14:08.25 Of course we realize that it can be an inherited trait 00:14:08.28\00:14:12.93 that a person receives from a parent and they've got type 1 00:14:12.96\00:14:17.11 diabetes and we can't do much about things that we inherit. 00:14:17.14\00:14:20.78 But there are 4 more factors that they've come up with 00:14:20.81\00:14:24.76 that they theorize are things that may be causing children 00:14:24.79\00:14:28.67 to develop type 1 diabetes. 00:14:28.70\00:14:30.58 One, is a recent infection of some type. 00:14:30.61\00:14:33.96 And because we realize that... 00:14:33.99\00:14:36.84 let me just go back and explain what type 1 is 00:14:36.87\00:14:41.21 a little bit... Dr. Thrash has talked about it... 00:14:41.24\00:14:43.02 but we have in our pancreas... we have some beta cells 00:14:43.05\00:14:45.79 and it's our beta cells that produce the insulin 00:14:45.82\00:14:49.61 which takes the glucose into our cells. 00:14:49.64\00:14:52.91 It's when the beta cells are no longer there, 00:14:52.94\00:14:56.12 or do not produce insulin 00:14:56.15\00:14:57.92 we have type 1 diabetes... 00:14:57.95\00:14:59.64 which means the person is going to be diabetes-dependent 00:14:59.67\00:15:03.34 for the rest of their lives. 00:15:03.37\00:15:04.72 So some type of an infection might harm those beta cells. 00:15:04.75\00:15:09.93 It can also be, and we don't understand all of this, 00:15:09.96\00:15:13.78 but science has showed us a child who goes to daycare 00:15:13.81\00:15:17.48 is more likely to come down with type 1 diabetes 00:15:17.51\00:15:21.09 than the child who does not go to daycare. 00:15:21.12\00:15:23.28 A child who drinks milk, dairy milk, after 9 years of age 00:15:23.31\00:15:28.16 in large quantities has a bigger chance of developing 00:15:28.19\00:15:31.53 type 1 diabetes. 00:15:31.56\00:15:33.10 And really scary is a child before 6 months of age 00:15:33.13\00:15:37.46 who takes in dairy milk, 00:15:37.49\00:15:40.56 has a larger chance of developing type 1 diabetes. 00:15:40.59\00:15:44.09 Now, why might that be? 00:15:44.12\00:15:46.16 Why might it be that taking in dairy products 00:15:46.19\00:15:48.59 would cause us to develop type 1 diabetes? 00:15:48.62\00:15:51.61 Well, there's a reason for this. 00:15:51.64\00:15:53.11 The milk protein is a 17 amino acid peptide chain 00:15:53.14\00:15:58.35 ...that's what it looks like to the body 00:15:58.38\00:16:00.36 and the body recognizes, for the most part, 00:16:00.39\00:16:03.82 that protein to be an enemy. 00:16:03.85\00:16:06.51 And it sends out its immune response to it 00:16:06.54\00:16:10.38 produces cells, antibodies, to that protein 00:16:10.41\00:16:16.30 to try to protect our cells from that. 00:16:16.33\00:16:19.21 Trouble is, down in pancreas street where we have those 00:16:19.24\00:16:22.91 beta cells, the beta cells are made up of a 17 amino acid 00:16:22.94\00:16:26.86 peptide chain very similar to the milk protein. 00:16:26.89\00:16:30.79 And so as these antibodies, produced by the beta cells 00:16:30.82\00:16:34.63 of the immune system, 00:16:34.66\00:16:35.81 are out looking for the antigens which are on the milk proteins, 00:16:35.84\00:16:41.84 they find the beta cells in the pancreas... 00:16:41.87\00:16:45.44 and they attack the beta cells, 00:16:45.47\00:16:47.38 and it's basically an autoimmune disease 00:16:47.41\00:16:50.40 where "auto" means we're fighting ourselves 00:16:50.43\00:16:53.33 and a child that cannot do anything about it 00:16:53.36\00:16:56.34 but is receiving dairy milk which should be fed to a calf 00:16:56.37\00:16:59.82 is now receiving the very thing which is going to destroy 00:16:59.85\00:17:03.07 his beta cells... 00:17:03.10\00:17:04.16 and cause that child, for the rest of his life 00:17:04.19\00:17:06.67 to be an insulin-dependent type 1 diabetic. 00:17:06.70\00:17:10.39 And so, these 5 things, 00:17:10.42\00:17:12.30 some of them, we can do something about. 00:17:12.33\00:17:14.73 And all that we can do, we need to do to protect 00:17:14.76\00:17:17.49 our children from something as terrible 00:17:17.52\00:17:19.80 as type 1 juvenile diabetes, Dr. Thrash. 00:17:19.83\00:17:23.33 One of the things that we know about how to handle 00:17:23.36\00:17:27.04 a diabetic is some understanding of the glycemic index. 00:17:27.07\00:17:31.31 And I'm going to go to the board now 00:17:31.34\00:17:33.30 and draw for you a graph, so that you can see 00:17:33.33\00:17:36.71 just what the glycemic index is. 00:17:36.74\00:17:39.33 And you need to know before that, that there is a certain 00:17:39.36\00:17:44.60 spread of the laboratory tests 00:17:44.63\00:17:49.36 that will help you to know what proper blood glucose is. 00:17:49.39\00:17:53.61 Notice here, that the laboratory gives, as its normals 65 to 109 00:17:53.64\00:17:58.74 But your ideal level is 70 to 85. 00:17:58.77\00:18:02.74 With triglycerides, which is another problem that 00:18:02.77\00:18:06.16 diabetics often have, 00:18:06.19\00:18:07.59 the laboratory will give as its normals 0 to 149. 00:18:07.62\00:18:13.06 But, up to 100 is our ideal. 00:18:13.09\00:18:17.15 And over that, is getting to be too much. 00:18:17.18\00:18:19.97 Creatinine which is a waste product 00:18:20.00\00:18:23.91 filtered by the kidney, 00:18:23.94\00:18:25.18 the laboratory will give you 0.5 to 1.5... 00:18:25.21\00:18:29.99 But I don't like to see the creatinine higher than 1.2 00:18:30.02\00:18:33.98 and especially if it's going up year by year... 00:18:34.01\00:18:37.17 that makes me think that the kidneys are not functioning 00:18:37.20\00:18:40.70 as briskly as they had been. 00:18:40.73\00:18:43.17 Then the uric acid level, 00:18:43.20\00:18:45.00 which is another aspect of 00:19:06.64\00:19:11.82 We say that 70 to 85 is the blood glucose 00:19:11.85\00:19:14.77 but as we look at the board, I will show you 00:19:14.80\00:19:18.65 just what we mean when we say the glycemic index 00:19:18.68\00:19:22.22 because the glycemic index gives us another parameter 00:19:22.25\00:19:26.43 that helps us to control diabetes. 00:19:26.46\00:19:29.17 So let us say that here is the graph... 00:19:29.20\00:19:31.83 and here is your fasting blood sugar, right here... this line. 00:19:31.86\00:19:37.38 So you eat a meal, or you eat a food, 00:19:37.41\00:19:41.21 and that food takes your blood sugar up 00:19:41.24\00:19:44.84 and then brings it back down again. 00:19:44.87\00:19:47.11 Now the glycemic index is the whole area 00:19:47.14\00:19:51.97 of the graph that represents the level that the food goes 00:19:52.00\00:19:58.28 and your fasting level. 00:19:58.31\00:20:00.04 So lets say that this food is nuts 00:20:00.07\00:20:03.47 and that this food is white sugar. 00:20:03.50\00:20:07.77 Now the level will come back down the same 00:20:07.80\00:20:10.54 but it has gone up quite a lot 00:20:10.57\00:20:12.05 and, in fact, it may even come down quicker foods that are 00:20:52.80\00:20:56.68 high and the foods that are low 00:20:56.71\00:20:58.45 on the glycemic index 00:20:58.48\00:20:59.63 and it's simply a marker, 00:20:59.66\00:21:01.18 telling us, as Dr. Agatha said, 00:21:01.21\00:21:02.96 how fast our sugar goes up, according to what foods 00:21:02.99\00:21:06.79 we eat and some of them are quite surprising as to 00:21:06.82\00:21:10.15 the ones that will do that to us... 00:21:10.18\00:21:12.03 and an example is potato, as I have right here. 00:21:12.06\00:21:17.57 It is high on the glycemic index 00:21:17.60\00:21:20.81 so is corn and so are carrots. 00:21:20.84\00:21:23.94 Now does that mean that, oh.. I can't ever have a potato, 00:21:23.97\00:21:26.98 or a carrot or an ear of corn again? 00:21:27.01\00:21:28.64 No, it doesn't mean that, 00:21:28.67\00:21:29.98 but it means that if you're going to eat these vegetables, 00:21:30.01\00:21:32.78 then you have to figure out a food that would be high fiber 00:21:32.81\00:21:36.47 so that it will slow the rise in your blood sugar 00:21:36.50\00:21:41.92 and so you don't want to eat a whole meal of foods that are 00:21:41.95\00:21:45.80 going to cause your blood sugar to go, very quickly, up... 00:21:45.83\00:21:49.39 You want to eat foods that will cause it to go slower 00:21:49.42\00:21:52.47 and so, those are your high fiber foods. 00:21:52.50\00:21:55.35 And God has given us that in His vegetable kingdom as well. 00:21:55.38\00:21:59.06 So now what you would want to do is... 00:21:59.09\00:22:01.64 Let's say... oh, I want a corn on the cob 00:22:01.67\00:22:05.21 or I want a baked potato. 00:22:05.24\00:22:06.96 How you would do that is, you would go ahead and 00:22:06.99\00:22:09.24 have yourself like a spinach salad 00:22:09.27\00:22:11.20 or, you know, a good salad that would have broccoli, 00:22:11.23\00:22:14.51 cauliflower in it. 00:22:14.54\00:22:15.81 And/or, you can take some lentils or soy 00:22:15.84\00:22:21.45 and both of these are very low on the glycemic index 00:22:21.48\00:22:24.86 And so you could make burgers, loaves... 00:22:24.89\00:22:28.09 all sorts of things you can make out of soy 00:22:28.12\00:22:30.57 Soy is extremely low on it and so beneficial for 00:22:30.60\00:22:33.07 many other things for our body as well 00:22:33.10\00:22:35.84 And, lentils are extremely tasty. 00:22:35.87\00:22:37.89 And so you could have this and a nice salad 00:22:37.92\00:22:41.29 and then you could go ahead and have your ear of corn, 00:22:41.32\00:22:44.43 or your baked potato. 00:22:44.46\00:22:46.67 And it would be quite permissible to do that. 00:22:46.70\00:22:49.00 Now another area to consider on the glycemic index 00:22:49.03\00:22:53.77 is bread. 00:22:53.80\00:22:54.88 And, unfortunately, even in the whole grain breads, 00:22:54.91\00:22:58.39 it will tend to rise it a little swifter. 00:22:58.42\00:23:01.95 So, if you want to eat bread, 00:23:01.98\00:23:04.09 you would do the same thing that I explained 00:23:04.12\00:23:05.85 to you just a minute ago. 00:23:05.88\00:23:06.95 You would go ahead and have a good salad with LOTS of fiber. 00:23:06.98\00:23:09.77 And/or a good legume like pintos or something with soy... 00:23:09.80\00:23:16.17 Tofu would be another good one. 00:23:16.20\00:23:17.93 But another good substitute for bread would be Wasa. 00:23:17.96\00:23:23.11 That is very high in fiber... and this is rye 00:23:23.14\00:23:25.85 and it's very high in fiber and very low in the glycemic index. 00:23:25.88\00:23:29.16 So you could alternate having bread and then have Wasa 00:23:29.19\00:23:33.91 at another time, so that you could still enjoy having 00:23:33.94\00:23:36.80 something either crunchy or kind of bready. 00:23:36.83\00:23:38.76 What if you put the almond butter that you previously 00:23:38.79\00:23:42.16 made on the bread? Yes... 00:23:42.19\00:23:43.16 Now you can go ahead and put almond butter on here 00:23:43.17\00:23:45.96 and that would slow it... 00:23:45.99\00:23:47.62 And so you could go ahead and have your almond butter on 00:23:47.65\00:23:50.98 your bread and it would be permissible to eat that. 00:23:51.01\00:23:53.50 Now another thing is... 00:23:53.53\00:23:55.11 You know, people love pancakes and waffles. 00:23:55.14\00:23:57.35 Well, the standard pancake mixes and waffles are 00:23:57.38\00:23:59.86 very questionable... 00:23:59.89\00:24:00.86 and they will go ahead and shoot her sugar up high. 00:24:00.87\00:24:04.22 So, the BEST ones to get... 00:24:04.25\00:24:06.22 and I'm telling you, they make best waffles and 00:24:06.25\00:24:08.64 pancakes you ever ate... 00:24:08.67\00:24:09.80 happens to be buckwheat flour and soy flour. 00:24:09.84\00:24:12.42 And what's so nice about soy flour is that 00:24:12.45\00:24:16.25 it acts like a leavening in there. 00:24:16.28\00:24:17.95 It will rise them up and make them nice and fluffy and soft. 00:24:17.98\00:24:20.78 And you can make the BEST pancakes, 00:24:20.81\00:24:22.78 and you can make the BEST waffles out of soy flour. 00:24:22.81\00:24:26.07 So then you don't have to use baking soda or baking powder? 00:24:26.10\00:24:28.71 No, you do not have to use it. 00:24:28.74\00:24:29.95 The soy just puffs them up a little bit. 00:24:29.98\00:24:32.97 The soy just puffs them up and makes them nice and fluffy. 00:24:33.00\00:24:35.55 And the steam from your waffle iron does the rest? 00:24:35.58\00:24:37.71 Oh yes! You could have banana ice cream on that waffle and put 00:24:49.43\00:24:51.69 some strawberries on top and you would be just fine. 00:24:51.72\00:24:57.67 Fiber, as we said a few minutes ago, does slow 00:24:57.70\00:25:01.44 the glycemic index. 00:25:01.47\00:25:02.98 Another thing, that eating a large meal 00:25:03.01\00:25:05.80 will rise your sugar, your glycemic index, 00:25:05.83\00:25:08.67 so it's important that if you're having problems with diabetes, 00:25:08.70\00:25:12.01 that you want to eat smaller meals. 00:25:12.04\00:25:13.55 Now this doesn't mean, okay I can eat 6 meals a day. 00:25:13.58\00:25:15.74 No... it means the regular meals that you're eating 00:25:15.77\00:25:17.97 whether it be 2 or 3, 00:25:18.00\00:25:19.02 you eat smaller meals. 00:25:19.05\00:25:20.88 And then you will find that your sugar level will not rise 00:25:20.91\00:25:24.52 as rapidly. 00:25:24.55\00:25:25.52 So... so those are very good things to know about 00:25:25.55\00:25:30.59 the glycemic index... 00:25:30.62\00:25:32.15 and how we can handle this 00:25:32.18\00:25:33.58 and how we can make it so that even though 00:25:33.61\00:25:37.01 we may eat something that has a pretty high glycemic index 00:25:37.04\00:25:41.00 If we manage our diet in just the right way, 00:25:41.03\00:25:44.74 then we are going to be able take care of things well. 00:25:44.77\00:25:48.51 Now type 1 diabetes is never handled with a fast. 00:25:48.54\00:25:54.49 But type 2 diabetes can very properly be handled with a fast. 00:25:54.52\00:25:58.83 In fact, that's one of the standard treatments 00:25:58.86\00:26:01.16 that we use for that. 00:26:01.19\00:26:02.24 And I would like to tell you just a little bit about 00:26:02.27\00:26:06.94 some of the experiences that we have had with fasting. 00:26:06.97\00:26:09.39 We have had many people who have some to Uchee Pines 00:26:09.42\00:26:12.28 type 2 diabetics, who are on 70 or 80 or 90 units of insulin. 00:26:12.31\00:26:18.45 We give them a fast, and of course, they don't take insulin, 00:26:18.48\00:26:21.61 they don't take food during that time. 00:26:21.64\00:26:23.33 They only take water and clear herb teas. 00:26:23.36\00:26:27.00 And as they take these, when we finish with the fast, 00:26:27.03\00:26:33.02 sometimes that's 2 days, sometimes it's 3 days, 00:26:33.05\00:26:36.10 sometimes it may be up to 5 days that we will 00:26:36.13\00:26:39.10 have the person to fast. 00:26:39.13\00:26:40.53 But as soon as they come off the fast, 00:26:40.56\00:26:42.44 we may find that their insulin requirements have halved. 00:26:42.47\00:26:46.32 So that we are no longer using 70 or 80 or 90 units. 00:26:46.35\00:26:49.71 But now we may be using 20 or 30 or 40 00:26:49.74\00:26:53.66 for that individual. 00:26:53.69\00:26:55.36 And as we continue to help them to lose weight, 00:26:55.39\00:26:58.42 and to exercise more... 00:26:58.45\00:27:00.72 As we do these things, then the person slowly 00:27:00.75\00:27:04.15 gets off insulin. 00:27:04.18\00:27:06.34 Once in a while, we'll have a person who has a lot of the 00:27:06.37\00:27:10.22 oral antidiabetic agents that they are using 00:27:10.25\00:27:12.93 and we need to have them take a fast too. 00:27:12.96\00:27:17.48 For these individuals, if they come to our center, 00:27:17.51\00:27:20.04 then we can easily fast them 4 or 5 days 00:27:20.07\00:27:23.06 when they're right under our care. 00:27:23.09\00:27:25.27 But, if they're at home, then we tell the person 00:27:25.30\00:27:28.50 not to fast more than a day or two per week. 00:27:28.53\00:27:31.35 So they can fast on Monday, 00:27:31.38\00:27:33.03 and then they can fast again, perhaps, on Thursday. 00:27:33.06\00:27:36.18 And again, the person who is on these agents 00:27:36.21\00:27:40.77 can usually stop taking them gradually as they 00:27:40.80\00:27:44.67 get better in control of themselves. 00:27:44.70\00:27:46.62 I hope that your understanding of diabetes has been increased, 00:27:46.65\00:27:51.76 and that you will improve 00:27:51.79\00:27:53.53 your glycemic index. 00:27:53.56\00:27:54.53
