Breast cancer is a very serious and very common disease in women 00:00:01.98\00:00:05.78 I'm Agatha Thrash, a staff physician at Uchee Pines 00:00:05.81\00:00:10.65 And during the next half an hour I and several members of the 00:00:10.68\00:00:13.57 staff at Uchee Pines will be discussing the subject of breast 00:00:13.60\00:00:17.64 cancer... not only in women but also in men. 00:00:17.67\00:00:20.87 We invite you to stay by and join us for this discussion. 00:00:20.90\00:00:24.58 Welcome to "Help Yourself to Health" with Dr. Agatha Thrash 00:00:45.55\00:00:48.51 of Uchee Pines Institute. 00:00:48.54\00:00:50.16 And now here is your host, Dr. Thrash. 00:00:50.19\00:00:53.25 There are many lifestyle issues involved in breast cancer. 00:00:53.28\00:01:01.64 These lifestyle issues are usually quite simple 00:01:01.67\00:01:05.49 and it isn't difficult to follow these lifestyle principles 00:01:05.52\00:01:09.63 But sometimes people are a little bit reluctant to do it 00:01:09.66\00:01:12.53 because it may cut across some of our established habits. 00:01:12.56\00:01:15.91 Now, we would like to talk with you about various ways of 00:01:15.94\00:01:21.31 finding the cancer early because that is one of the most 00:01:21.34\00:01:24.21 important things that you can do apart from lifestyle. 00:01:24.24\00:01:27.07 And so with me here is Valerie Schreiber. 00:01:27.10\00:01:30.56 Valerie and I work together in our helping women to know how 00:01:30.59\00:01:35.31 to discover their breast lumps. 00:01:35.34\00:01:36.92 And Valerie is going to tell you some things about 00:01:36.95\00:01:40.09 how to discover a lump yourself, Valerie. 00:01:40.12\00:01:43.46 Ladies, pay attention. 00:01:43.49\00:01:46.29 Knowing how to properly examine your breast could save your life 00:01:46.32\00:01:50.52 And I'm going to show you today how to do the triple touch 00:01:50.55\00:01:53.19 method that the American Cancer Society has for us. 00:01:53.22\00:01:57.42 And so you're probably saying to me... "uh, examining my 00:01:57.45\00:02:03.59 breasts, there are so many lumps and so many things I 00:02:03.62\00:02:07.89 feel in there, I can't tell one thing from another. " 00:02:07.92\00:02:10.03 Well, you know, I've been a product of that too 00:02:10.06\00:02:11.91 but that's not the real issue in examining your breasts. 00:02:11.94\00:02:15.14 The real issue in examining your breast is to get familiar 00:02:15.17\00:02:18.83 with your tissues. 00:02:18.86\00:02:20.10 Therefore, if they change in the slightest, you will 00:02:20.13\00:02:23.70 recognize it. 00:02:23.73\00:02:24.80 What happens in most women because they are not familiar 00:02:24.83\00:02:27.57 with their breast tissue, the lump gets quite large or 00:02:27.60\00:02:30.69 dimpled and by then, you're in real trouble. 00:02:30.72\00:02:33.24 So what we want you to do is to learn how to do this 00:02:33.27\00:02:36.35 And I encourage you to go to the American Cancer Society. 00:02:36.38\00:02:39.71 They have an excellent brochure to show you how to do the 00:02:39.74\00:02:43.16 triple touch method. 00:02:43.19\00:02:45.28 Now before we go into that, I want to tell you how 00:02:45.31\00:02:49.20 to go about doing this. 00:02:49.23\00:02:50.53 If you have a regular menstrual cycle, then one week after 00:02:50.56\00:02:55.44 your cycle is when you want to check and you do this every 00:02:55.47\00:02:57.83 month consistently one week after your menstrual cycle ends. 00:02:57.86\00:03:02.14 Now, if you have irregular menstrual cycles or none at all, 00:03:02.17\00:03:05.86 then you pick a week every month and you mark it on your calendar 00:03:05.89\00:03:10.34 and you do it the same time every month. 00:03:10.37\00:03:13.46 That way, if anything happens, you are going to be 00:03:13.49\00:03:16.75 able to pick it up. 00:03:16.78\00:03:18.02 Now let me show you here, the risk. 00:03:18.05\00:03:25.27 The primary risk is age and family history. 00:03:25.30\00:03:29.18 Your secondary risk is reproductive history and 00:03:29.21\00:03:31.86 menstrual history. 00:03:31.89\00:03:32.86 However, the two major things that also influence it is diet 00:03:32.87\00:03:36.54 and hormones. 00:03:36.57\00:03:37.54 Now the triple touch method that the American Cancer Society 00:03:37.55\00:03:44.01 teaches is, you use 3 fingers and 3 levels of pressure. 00:03:44.04\00:03:52.83 And you will see the 3 levels. 00:03:52.86\00:03:54.16 First, it will be light, then it will be medium and a 00:03:54.19\00:03:56.76 little more firm, and how you will do that is you can just 00:03:56.79\00:04:00.80 watch me here, is you take your 3 fingers and you put it on the 00:04:00.83\00:04:05.73 breast and you do a dime-size circle. 00:04:05.76\00:04:09.43 And so you do light, then you go medium and then you 00:04:09.46\00:04:14.94 go more firm and then you just move right down to the next spot 00:04:14.97\00:04:19.11 light, medium, firm and then you just keep doing this all the way 00:04:19.14\00:04:25.11 around your breast. 00:04:25.14\00:04:27.02 Now, the other thing that the American Cancer Society is 00:04:27.05\00:04:30.44 showing us is, they are talking about doing what they call 00:04:30.47\00:04:33.11 the "lawn mower" check and so they are going from the top of 00:04:33.14\00:04:37.38 the shoulder all the way down to the waist, like you would mow 00:04:37.41\00:04:40.77 a lawn, down and up, up and down and up. 00:04:40.80\00:04:43.39 And then you can go across this way and you start underneath 00:04:43.42\00:04:48.06 your arm and you go all the way down to the waist and you do 00:04:48.09\00:04:51.72 those little circles with 3 fingers, light, medium and firm, 00:04:51.75\00:04:55.27 dime-size circles. 00:04:55.30\00:04:56.76 Now another thing you want to do before you actually do this 00:04:56.79\00:05:02.53 check, is to look in the mirror. 00:05:02.56\00:05:04.60 See, and you are going to look for color; you are going to look 00:05:04.63\00:05:07.98 for shape; you are going to look to see if your breasts are going 00:05:08.01\00:05:10.97 in the right direction, or if the nipples are going in a 00:05:11.00\00:05:14.24 different direction. 00:05:14.27\00:05:15.24 You are going to look to see if there could be any dimpling. 00:05:15.25\00:05:18.01 So you want to just stand in front of the mirror and just 00:05:18.04\00:05:21.07 look at yourself and you can turn sideways and look 00:05:21.10\00:05:24.66 at yourself and do it on both sides and look again, 00:05:24.69\00:05:27.53 look very closely. 00:05:27.56\00:05:29.02 Then you are going to want to lift your arms up like this and 00:05:29.05\00:05:32.52 look very closely at your nipples and your breasts and 00:05:32.55\00:05:36.23 again, do your side. 00:05:36.26\00:05:38.29 Then take your hand press them real firm and look again to see 00:05:38.32\00:05:42.87 if anything changes. 00:05:42.90\00:05:44.43 Many times one breast will begin to shrink or one will get larger 00:05:44.46\00:05:48.51 I have seen that in women with breast cancer. 00:05:48.54\00:05:50.59 So you want to look... is one getting much bigger, or smaller 00:05:50.62\00:05:53.89 or anything dimpling. 00:05:53.92\00:05:55.32 Then you would take your hands and go to the back of you, like 00:05:55.35\00:05:58.78 this, and press again real hard and look in the mirror and 00:05:58.81\00:06:03.21 look sideways. 00:06:03.24\00:06:04.21 Then the next way is to put your hands on your hips and press 00:06:04.22\00:06:08.28 in and bend over and look very closely at your breasts and do 00:06:08.31\00:06:13.03 again sideways on both sides of your breasts to see if there is 00:06:13.06\00:06:18.54 anything that could possibly be changing in your breasts. 00:06:18.57\00:06:21.71 So again, I encourage you, go to the American Cancer Society, 00:06:21.74\00:06:25.48 their brochure is excellent that they have for examining your 00:06:25.51\00:06:28.40 breasts and remember ladies, it's not just for looking for a 00:06:28.43\00:06:32.80 lump per se each time, it's knowing your own tissues, so 00:06:32.83\00:06:38.07 that if anything changes, you will pick it up right away. 00:06:38.98\00:06:41.01 You won't have to wait until the lump is great big. 00:06:41.04\00:06:43.36 Dr. Agatha. Oh, I need to show how to position yourself. 00:06:43.39\00:06:49.95 If you can show that now, we'll have Melissa to come up 00:06:49.98\00:06:52.97 and I can take this away and Melissa can actually be placed 00:06:53.00\00:06:58.31 on the table in the way that can let you know what position you 00:06:58.34\00:07:02.28 should take when you are going to examine yourself. 00:07:02.31\00:07:05.85 This is my granddaughter. 00:07:05.88\00:07:08.24 Now this is real important. 00:07:08.27\00:07:12.73 You can make a choice. You could examine your breasts one time 00:07:12.76\00:07:16.25 in the shower, the next time lying down. 00:07:16.28\00:07:18.61 However, lying down spreads the breast tissue so that you are 00:07:18.64\00:07:22.84 able to get into it much better and be able to cover 00:07:22.87\00:07:26.67 it much better. 00:07:26.70\00:07:27.67 So, what you do is, you get yourself a towel, fold it like 00:07:27.68\00:07:30.48 this, put it underneath your shoulder 00:07:30.51\00:07:33.76 and lay back down on it. 00:07:33.79\00:07:34.76 This causes the breast tissue to flare out more and then you lift 00:07:35.46\00:07:40.81 your arm up this way and use your hand to begin the check. 00:07:40.84\00:07:45.43 And going down like a lawn mower all the way down like this and 00:07:45.46\00:07:49.27 then all the way back up and you can go across this way as well. 00:07:49.30\00:07:53.70 Okay, very good. Thank you. 00:07:53.73\00:07:55.49 Well with these very simple instructions, you should be able 00:07:55.52\00:07:59.93 to handle examining your own breasts. 00:07:59.96\00:08:03.15 Now, there are several different kinds of breast cancers. 00:08:03.18\00:08:07.44 In women, there are several kinds and in men there is also 00:08:07.47\00:08:11.36 breast cancer in men. 00:08:11.39\00:08:13.01 And, with me today is Don Miller who will talk with you about 00:08:13.04\00:08:17.32 breast cancer in men and also how to discover it. 00:08:17.35\00:08:21.09 Don Miller. 00:08:21.12\00:08:22.09 It's not the most common disease in the world for men. 00:08:22.10\00:08:24.91 As a matter of fact, fewer than one percent of all breast 00:08:24.94\00:08:27.66 cancers will appear in men but that is a significant number for 00:08:27.69\00:08:30.92 those men who do develop breast cancer. 00:08:30.95\00:08:33.73 This year, probably about 1,400 men will be discovered to have 00:08:33.76\00:08:38.26 breast cancer and of those 1,400 400 of those men will die of 00:08:38.29\00:08:43.19 breast cancer. 00:08:43.22\00:08:44.19 Now, we need to look at a couple of things. One, what predisposes 00:08:44.20\00:08:47.40 a man to breast cancer. 00:08:47.43\00:08:49.36 What are some of the diagnoses of breast cancer. 00:08:49.39\00:08:52.15 What are some of the things that we can tell. 00:08:52.18\00:08:53.90 Now, what Valerie just talked about as far a self examination 00:08:53.93\00:08:57.01 men should do that too. 00:08:57.04\00:08:58.84 Now this was a revelation to me until just recently but we need 00:08:58.87\00:09:02.91 to be checking ourselves too for breast cancer. 00:09:02.94\00:09:05.86 Now there is a condition called gynecomastia, or depending on 00:09:05.89\00:09:10.07 where you are from, it may be "genicomastia. " 00:09:10.10\00:09:11.95 It's the over-development of the male mammary gland. 00:09:11.98\00:09:15.23 That is not a predisposition or a sign that you are going to get 00:09:15.26\00:09:19.67 male breast cancer. 00:09:19.70\00:09:21.37 It's just some men just develop breasts and it's just unordinary 00:09:21.40\00:09:28.16 but it's not a sign that you are going to get the breast cancer. 00:09:28.19\00:09:30.96 The things that will predispose to male breast cancer is... 00:09:30.99\00:09:35.54 One, a change in the hormonal balance of a man. 00:09:35.57\00:09:38.99 And this can happen by various ways. One, testicular trauma or 00:09:39.02\00:09:45.07 atrophy and when I mention testicular trauma, it's very 00:09:45.10\00:09:49.29 important for young boys who are out there on the soccer 00:09:49.32\00:09:52.46 field kicking that ball, a real good kick can really traumatize 00:09:52.49\00:09:57.54 the testicles and we need to very much guard against that 00:09:57.57\00:10:01.11 particular problem. 00:10:01.14\00:10:02.21 It can also, as far as testicular or hormonal balance, 00:10:02.24\00:10:06.55 things like liver disease, cirrhosis of the liver, can 00:10:06.58\00:10:10.31 cause a change in the balance of the hormones in a man. 00:10:10.34\00:10:15.49 Sterilization or infertility both are things that will change 00:10:15.52\00:10:21.53 the balance of the hormones in a man. 00:10:21.56\00:10:22.53 All these things can be a predisposition for breast 00:10:23.58\00:10:28.49 cancer in a male. 00:10:28.52\00:10:29.49 The other factor would be just having a familial history or 00:10:29.50\00:10:33.68 family history. 00:10:33.71\00:10:34.68 It's the main thing in women and it's also the main thing in men. 00:10:34.69\00:10:38.32 Now there are a couple of genes they have discovered very 00:10:38.35\00:10:41.14 recently, "BRCA1 and BRCA2" which predispose to breast 00:10:41.17\00:10:48.29 cancer in humans. 00:10:48.32\00:10:49.93 So if a man has breast cancer in his family, as far as his 00:10:49.96\00:10:54.21 females in his family, he may well be in that position to be 00:10:54.24\00:10:59.11 one of those 1,400 men who develop male breast cancer. 00:10:59.14\00:11:02.76 So, we need to be very careful and check in the histories and 00:11:02.79\00:11:06.65 then the checking ourselves. 00:11:06.68\00:11:07.68 Now, how do we check ourselves? 00:11:07.71\00:11:08.90 What Valerie just described is very good. 00:11:08.93\00:11:11.54 Now I'm just going to show it a little bit better 00:11:11.57\00:11:13.96 here on myself. 00:11:13.99\00:11:15.57 Again, you take your 3 fingers the pads of your fingers 00:11:15.60\00:11:18.69 and I'm going to do what she called the "lawn mower" effect 00:11:18.72\00:11:21.54 or being out here in a field is the "farmer effect. " 00:11:21.57\00:11:24.23 Basically, you take your fingers and either above or below your 00:11:24.26\00:11:28.35 your breast, it really doesn't matter 00:11:28.38\00:11:29.58 And you place them maybe about the sternum of your body, 00:11:29.61\00:11:34.94 the mid body and just start and what I like to do is just 00:11:34.97\00:11:38.26 do little, tiny curls as I'm dragging across, feeling, 00:11:38.29\00:11:43.47 always feeling. 00:11:43.50\00:11:44.68 Now, she mentioned something very important... 00:11:44.71\00:11:47.14 Get to know what you feel like. 00:11:47.17\00:11:49.47 If all of a sudden, the first time you do it, you feel a lump 00:11:49.50\00:11:52.04 that lump might have been there since you were born. 00:11:52.07\00:11:54.35 Know what you feel like. 00:11:54.38\00:11:55.67 As a matter of fact, I would recommend for all these things, 00:11:55.70\00:11:58.09 is you make a body chart. 00:11:58.12\00:11:59.22 Every mole, every dimple, every thing that you know when it 00:11:59.25\00:12:02.52 starts changing. 00:12:02.55\00:12:03.52 So you go across, little... I do little curly-Q's but very small 00:12:03.53\00:12:08.52 ones and while I'm doing it, I'm doing the light, 00:12:08.55\00:12:11.15 medium and heavy. 00:12:11.18\00:12:12.15 I do a little bit light, and press a little bit harder, 00:12:12.16\00:12:14.46 harder, harder. 00:12:14.49\00:12:16.17 Now we have to realize also that really traumatizing the breasts 00:12:16.20\00:12:19.59 are not good, so you don't sit there and smash all the way 00:12:19.62\00:12:22.10 through to your spinal cord. 00:12:22.13\00:12:23.41 You're just pressing in there. 00:12:23.44\00:12:24.98 Once you are across, you go back and then wherever your bottom 00:12:25.01\00:12:29.40 finger was, that is where you put your top finger. 00:12:29.43\00:12:31.50 And, so you are overlapping one finger width. 00:12:31.53\00:12:34.17 And you are going across, feeling, feeling, feeling. 00:12:34.20\00:12:39.08 And I would recommend you do this by yourself in the quiet 00:12:39.11\00:12:42.71 so you can be doing all of your concentration just on the 00:12:42.74\00:12:46.21 central touch of your fingers to see if you are feeling anything. 00:12:46.24\00:12:49.90 Once you have covered the entire breast area, then I would 00:12:49.93\00:12:52.97 recommend you go down 00:12:53.00\00:12:55.10 So now you plow the field, or you cut the grass in the other 00:12:55.13\00:12:58.14 direction... going down, feeling that thing, feeling, feeling, 00:12:58.17\00:13:02.87 feeling... go back up 1 finger width overlapping, pressing 00:13:02.90\00:13:09.01 hard, medium, soft... going all the way down doing it 00:13:09.04\00:13:12.56 in both directions. 00:13:12.59\00:13:13.56 If you feel that lump, I would have a doctor check it out. 00:13:13.57\00:13:18.33 It's a... granted only 400 men, "only 400 men" may die of it 00:13:18.36\00:13:23.71 and that may not be a very significant number but if you 00:13:23.74\00:13:25.94 are one or if someone you love is one, it becomes an extremely 00:13:25.97\00:13:28.91 meaningful number. 00:13:28.94\00:13:30.49 Breast cancer is a meaningful disease, Dr. Thrash, and I 00:13:30.52\00:13:33.21 think we need to really be careful with it, 00:13:33.24\00:13:34.92 males and females. 00:13:34.95\00:13:36.06 Yes, it is a very serious disease and, of course, it is 00:13:36.09\00:13:39.00 getting much more common nowadays. 00:13:39.03\00:13:41.15 So, we want to do what we can to discover the lump early 00:13:41.18\00:13:46.08 both in men and in women. 00:13:46.11\00:13:47.41 Now in women, we recommend... you will notice that the 00:13:47.44\00:13:51.83 technique was different in as Don Miller showed it, in one 00:13:51.86\00:13:55.99 respect for men, than for women 00:13:56.02\00:13:58.10 And that is that you reach across the chest with one hand 00:13:58.13\00:14:02.21 you reach across the chest to examine the opposite breast 00:14:02.24\00:14:04.81 because it's more difficult for a woman to do the same side 00:14:04.84\00:14:09.51 breast because of the way that the breast needs to fall to 00:14:09.54\00:14:14.25 spread, so that she can feel the breast more easily. 00:14:14.28\00:14:18.12 Now in lifestyle things, there are so many different things 00:14:18.15\00:14:22.45 that a woman can do to make certain that she doesn't have 00:14:22.48\00:14:27.17 breast cancer or she does what she can to make certain she 00:14:27.20\00:14:31.15 doesn't have breast cancer. 00:14:31.18\00:14:32.15 Of course, with everything good and perfect in lifestyle, not 00:14:32.16\00:14:36.27 everybody is going to avoid breast cancer. 00:14:36.30\00:14:38.89 And if you have breast cancer, you should not blame yourself, 00:14:38.92\00:14:42.30 nor feel guilty that your lifestyle maybe has not always 00:14:42.33\00:14:45.94 been what it should have been 00:14:45.97\00:14:47.11 but we go from what we have and go from this point. 00:14:47.14\00:14:51.72 So if you should discover a lump then, of course, you need 00:14:51.75\00:14:54.24 professional help right away. 00:14:54.27\00:14:56.57 Now with some of the lifestyle things, of course food always 00:14:56.60\00:15:01.01 looms up as one of the very first things. 00:15:01.04\00:15:03.48 And Valerie Schreiber is a master of the kitchen and can 00:15:03.51\00:15:10.51 turn out some positively wonderful foods... 00:15:10.54\00:15:13.09 So she is going to tell you a few things about what you can 00:15:13.12\00:15:16.95 do to make protecting yourself against breast cancer 00:15:16.98\00:15:21.44 actually fun... Valerie is able to do that. 00:15:21.47\00:15:24.93 So, Valerie, what do you have here for us? 00:15:24.96\00:15:27.36 Well, we are going to talk a a little bit about flaxseed 00:15:27.39\00:15:30.43 and flax is an essential fatty acid that we need for our 00:15:30.46\00:15:35.34 body and it is an oil and contrary to popular myths, 00:15:35.37\00:15:39.37 the body does need fats but it needs the right kinds of fats 00:15:39.40\00:15:43.89 And flaxseed, which we have right here in the bowl, are 00:15:43.92\00:15:47.82 these pretty little brown seeds as you can see here. 00:15:47.85\00:15:50.58 You can use them in many ways 00:15:50.61\00:15:52.96 and I'm just going to show you how. 00:15:52.99\00:15:54.36 I have a little nut mill here that I can grind them in; 00:15:54.39\00:15:56.61 however, if you don't have a nut mill, you can do it in 00:15:56.64\00:15:59.11 your blender as well. 00:15:59.14\00:16:00.31 But you can just put this on and just push it down like this 00:16:00.34\00:16:03.98 and grind them. 00:16:04.01\00:16:06.73 When you get done, this is essentially what they look like. 00:16:06.76\00:16:12.83 All ground up and you can grind them a little finer if you like 00:16:12.86\00:16:17.70 and they will get just like powder. 00:16:17.73\00:16:19.27 And what is so wonderful about the flaxseed, the ground 00:16:19.30\00:16:22.68 flaxseed like this, is you can sprinkle it over your cereals, 00:16:22.71\00:16:26.52 you can sprinkle it over your salads. 00:16:26.55\00:16:28.95 You can put it over the top of any vegetables. 00:16:28.98\00:16:32.20 It's kind of got a nutty little flavor to it but it 00:16:32.23\00:16:34.30 is quite delicious. 00:16:34.33\00:16:35.42 It is not offensive in any way but you will get your omega 3 00:16:35.45\00:16:39.56 fatty acids as a result of it. 00:16:39.59\00:16:41.79 Now there are other places that you can get the essential 00:16:41.82\00:16:44.63 fatty acids and that is in your legume family, your nut family, 00:16:44.66\00:16:49.48 and your seed family. 00:16:49.51\00:16:50.62 So there are those places that you can get the 00:16:50.65\00:16:54.22 essential fatty acids. 00:16:54.25\00:16:55.79 Now, they play a major role in hair loss, in your skin, 00:16:55.82\00:17:00.99 prevention of arthritis. 00:17:01.02\00:17:03.41 We use it for an anti-inflammatory. 00:17:03.44\00:17:05.71 It is excellent in that. 00:17:05.74\00:17:07.32 It lowers triglycerides and cholesterol. 00:17:07.35\00:17:11.08 And, it plays a major role in cardiovascular disease. 00:17:11.11\00:17:14.87 Dr. Agatha will continue to talk to us about it. 00:17:14.90\00:17:19.49 In fact, I might eat some of those flaxseeds. Yeah. 00:17:19.52\00:17:21.94 Because I really enjoy flaxseed. 00:17:21.97\00:17:25.24 When I first started, I have to admit that I didn't really like 00:17:25.27\00:17:27.93 flaxseed all that well. 00:17:27.96\00:17:29.25 But, as I became accustomed to it and also as I learned 00:17:29.28\00:17:32.65 that in many countries of the world, flaxseed are a staple 00:17:32.68\00:17:36.23 article of food, then I began to think, "well, it's not too 00:17:36.26\00:17:39.66 bad, you could get so that you could enjoy that. " 00:17:39.69\00:17:43.13 So I started sprinkling it on cereal and stirring it in fruit 00:17:43.16\00:17:46.27 juice or in many ways, trying to increase the exposure that 00:17:46.30\00:17:51.29 my family have to flaxseed. 00:17:51.32\00:17:53.27 You can put it in breads or put it in waffles and that can be 00:17:53.30\00:17:57.36 helpful but we just grind it and use it in that way. 00:17:57.39\00:18:02.22 Now, you might be interested in the fact that there are many 00:18:02.25\00:18:07.03 different aspects of soy, some of which are anticancer and also 00:18:07.06\00:18:16.21 in anything of this nature, you can expect that there is some 00:18:16.24\00:18:19.39 controversy concerning it. 00:18:19.42\00:18:21.38 And there is right now, a conflict over the scientific 00:18:21.41\00:18:26.47 benefits of soy in one's diet. 00:18:26.50\00:18:30.40 Whether or not one should actually use soy in the diet or 00:18:30.43\00:18:34.69 whether it might be harmful. 00:18:34.72\00:18:36.27 >From the best that I can tell, soy is not harmful to you... 00:18:36.30\00:18:40.79 although there have been some research projects, mainly 2 or 3 00:18:40.82\00:18:46.21 that show that there might be some deleterious effect 00:18:46.24\00:18:50.06 especially if a women with breast cancer is taking 00:18:50.09\00:18:53.18 tamoxifen, which is a chemotherapeutic agent used in 00:18:53.21\00:18:59.10 breast cancer. 00:18:59.13\00:19:00.21 It may be that those who are taking tamoxifen should 00:19:00.24\00:19:04.08 leave off soy. 00:19:04.11\00:19:05.44 But in all other cases, it seems to me there is just too much 00:19:05.47\00:19:10.25 evidence that soybeans have a beneficial effect for women's 00:19:10.28\00:19:14.32 health, especially in helping to prevent cancer or even in 00:19:14.35\00:19:18.59 treating cancer of the breast that is not of the hormone- 00:19:18.62\00:19:22.78 dependent variety. 00:19:22.81\00:19:24.69 So, with those remarks, then we can say that there are many 00:19:24.72\00:19:29.49 other things that soy can be useful for. 00:19:29.52\00:19:33.00 Osteoporosis is one of those and women who have osteoporosis 00:19:33.03\00:19:37.03 can take soybeans and use soy in many different kinds of ways. 00:19:37.06\00:19:44.64 The commercial products may or may not be that beneficial. 00:19:44.67\00:19:49.80 As an example, soy milk may not have the essential portions of 00:19:49.83\00:19:55.98 soy that would make the soy milk beneficial for a woman. 00:19:56.01\00:20:00.86 But that it will, to some degree perhaps help but she should not 00:20:00.89\00:20:07.19 depend on soy milk as her source of soy. 00:20:07.22\00:20:10.21 I like to recommend to women that they take the 00:20:10.24\00:20:13.63 soybeans themselves, or they actually purchase the beans or 00:20:13.66\00:20:17.73 grow them in her own garden. 00:20:17.76\00:20:19.24 That would give her more benefits than one. 00:20:19.27\00:20:21.72 And as she develops her interest in soy, she will find many, many 00:20:21.75\00:20:27.77 many recipes, both those that are on the market and those 00:20:27.80\00:20:34.25 that she develops herself. 00:20:34.28\00:20:35.39 And, we have developed several soybean recipes 00:20:35.42\00:20:39.40 at Uchee Pines and I like to experiment with these. 00:20:39.43\00:20:44.81 We use it for breakfast. 00:20:44.84\00:20:46.36 We use it as sandwich spreads. 00:20:46.39\00:20:48.23 We use it for lunch and we can fix them ahead of time and 00:20:48.26\00:20:53.70 freeze recipes. 00:20:53.73\00:20:54.80 And so Valerie is going to show you some of the recipes that 00:20:54.83\00:21:00.25 we have developed at Uchee Pines and some ways 00:21:00.28\00:21:03.94 that you can use these. 00:21:03.97\00:21:05.58 We have a number of products to show you here today that are 00:21:05.62\00:21:09.22 readily available on the market. 00:21:09.25\00:21:11.04 You can find many of these in your local grocery stores today, 00:21:11.07\00:21:14.30 as well as your local health food store. 00:21:14.33\00:21:16.66 But I'd like to read a quote to you that has meant a lot to me 00:21:16.69\00:21:19.69 and really says it all about soy bean. 00:21:19.72\00:21:21.57 It is by Dorothy Van Gundy Jones 00:21:21.60\00:21:23.95 She says, "Soybeans are one of the best sources of protein 00:21:23.98\00:21:26.89 in the vegetable kingdom. They can honestly claim the title 00:21:26.92\00:21:30.66 the meat that grows on vines. " 00:21:30.69\00:21:34.03 And really, that is true. 00:21:34.06\00:21:35.24 It is the meat that grows on vines. 00:21:35.27\00:21:37.53 You can do everything in the world with soybean. 00:21:37.56\00:21:40.64 And it has wonderful minerals in it, vitamins in it. 00:21:40.67\00:21:45.81 It's rich is calcium, phosphorus and iron. 00:21:45.84\00:21:48.64 Now, it has very little starch. 00:21:48.67\00:21:51.35 It's high in your B vitamins, B12, your vitamin E 00:21:51.38\00:21:56.24 and your omega 3 fatty acids which are your essential fatty 00:21:56.27\00:22:00.52 acids that everyone is concerned about today. 00:22:00.55\00:22:03.51 And, it is abundant in fiber. 00:22:03.54\00:22:06.05 So, you get plenty of fiber. 00:22:06.08\00:22:07.39 And, ladies, those that are having for women that are in menopause. 00:22:18.60\00:22:23.08 Also, women eating soybeans also experience a drop in their LDL 00:22:23.11\00:22:27.75 cholesterol, so those that are concerned about high cholesterol 00:22:27.78\00:22:31.44 eat your soybeans. 00:22:31.47\00:22:32.60 Now let me just show you a few products that you can get at 00:22:32.63\00:22:36.55 your local grocery stores or health 00:22:43.29\00:22:46.40 milk product for soy. 00:22:46.43\00:22:47.40 And they also have a very delicious yogurt that they make 00:22:47.43\00:22:53.17 in various flavors, as well as plain. 00:22:53.20\00:22:54.17 that you can use. 00:22:54.20\00:22:56.53 And, you can take the Silk yogurt, that I have right here, 00:22:56.56\00:23:04.25 and you can take and make sour cream. 00:23:04.28\00:23:08.74 You can make tartar sauce. 00:23:08.77\00:23:12.21 You can do various things with just this product. 00:23:12.24\00:23:14.88 So, it makes it very simple for those moms out there that are 00:23:14.91\00:23:17.87 having to work and don't have a lot of time to prepare products. 00:23:17.90\00:23:21.93 There are cream cheeses that are already prepared, right here... 00:23:21.96\00:23:26.43 "Better than Milk" makes a real nice cream cheese. 00:23:26.46\00:23:30.92 Then there are some other soy products and you can find these 00:23:30.95\00:23:35.37 usually in your local grocery store, as well as in your 00:23:35.40\00:23:38.27 health food store. 00:23:38.30\00:23:39.71 The Vitasoy makes wonderful products. 00:23:39.74\00:23:40.71 There are many other products such as your TVP which is not 00:23:42.16\00:23:48.87 flavored and you can use these TVPs and flavor them yourself 00:23:48.90\00:23:53.39 and this sort of like takes the place of chicken. 00:23:53.42\00:23:55.53 We also have another one that is in a dark color and that would 00:23:55.56\00:24:00.71 take the place of your beef and you can flavor it. 00:24:00.74\00:24:03.02 There are many flavorings that you can buy in your local health 00:24:03.05\00:24:05.31 food store that have a beef-type flavoring or a chicken-type 00:24:05.34\00:24:08.69 flavoring and you can make wonderful things with this. 00:24:08.72\00:24:12.20 For instance, you can soak it in water or in your flavoring and 00:24:12.23\00:24:16.79 then you can make burgers, you can make chicken salad that 00:24:16.82\00:24:19.56 is absolutely scrumptious... the chicken salad that I make. 00:24:19.59\00:24:22.46 Now, there are a few other things that I want to show you 00:24:22.49\00:24:25.95 that you can use and one of the other ones is the chunks. 00:24:25.98\00:24:30.38 Now, this is like a beef-like chunk. 00:24:30.41\00:24:33.01 In fact, we had a meal yesterday that had this in it, a Chinese 00:24:33.04\00:24:36.40 meal and it was absolutely delicious. 00:24:36.43\00:24:39.03 So, you can soak this and make whatever flavor you want. 00:24:39.06\00:24:41.76 You can use it in Oriental dishes or spaghetti or 00:24:41.79\00:24:46.41 stews, or soups and it is very, very good and takes the place 00:24:46.44\00:24:50.63 quite well of eating meat, especially when you are in this 00:24:50.66\00:24:53.95 transition of going from eating a meat diet, this is very 00:24:53.98\00:24:57.29 good to use. 00:24:57.32\00:24:58.29 Now, I would like to just show you another way to use soybeans 00:24:58.30\00:25:02.93 because it is really nice if you can use the whole soybean 00:25:02.96\00:25:06.76 And I have a bowl of soybeans right here that I have soaked. 00:25:06.79\00:25:12.22 Now, what you do is, you just take your soybean and you soak 00:25:12.25\00:25:15.16 it for several hours, or all night and then run that water 00:25:15.19\00:25:19.00 off and then you can take your soybeans and you can put them in 00:25:19.03\00:25:22.33 several packages and put them all ready in your freezer, so 00:25:22.36\00:25:25.73 that you will have either a cup or 2 cups, whatever you want to 00:25:25.76\00:25:28.20 use and then you can take your soybeans and you can grind them 00:25:28.23\00:25:35.40 the next morning in your blender with whatever flavorings that 00:25:35.43\00:25:39.46 you would like to use, and it turns out like this. 00:25:39.49\00:25:42.72 We make egg salad out of this, deviled eggs out of this, 00:25:42.75\00:25:46.46 scrambled eggs out of this. 00:25:46.49\00:25:48.39 You can just do almost anything and you can put this in corn 00:25:48.42\00:25:52.71 muffins and it will make them just puff up and get real light 00:25:52.74\00:25:56.38 and beautiful. 00:25:56.41\00:25:57.51 You can put it in your bread. 00:25:57.54\00:25:59.03 You can put it in almost any loaf that you would choose to 00:25:59.06\00:26:02.23 make and it makes it light and fluffy and very delicious and 00:26:02.26\00:26:06.04 then you are going to get your quota of your soybean and your 00:26:06.07\00:26:10.14 essential fatty acids, your minerals, your calcium, 00:26:10.17\00:26:13.16 your phosphorus. 00:26:13.19\00:26:14.16 You will get everything you need and high fiber at that. 00:26:14.17\00:26:16.84 Thank you. 00:26:16.87\00:26:18.71 And I want to know how you make a chicken salad 00:26:18.74\00:26:22.76 sandwich out of this. 00:26:22.79\00:26:23.91 Well, first off, I take this and I scramble it. 00:26:23.94\00:26:28.54 I put it in a frying pan, and I scramble it with water and I 00:26:28.57\00:26:34.82 put all my seasonings in it and I put a little turmeric so that 00:26:34.85\00:26:38.88 I can make it yellow. 00:26:38.91\00:26:39.88 And when I get all that done and it's all cooled down, 00:26:39.97\00:26:44.06 then I put it over in another bowl and I add my homemade 00:26:44.09\00:26:47.39 mayonnaise and I dice up onion and... 00:26:47.42\00:26:50.99 Was it egg salad or chicken salad? 00:26:51.02\00:26:52.57 Um, either one. 00:26:52.60\00:26:53.58 Either one, you can do either one. 00:26:53.61\00:26:54.70 And I put pickle relish in it and diced up onion and diced 00:26:54.73\00:26:59.76 up celery and I mix it all up and I'm telling you, it tastes 00:26:59.79\00:27:03.78 like egg salad. 00:27:03.81\00:27:04.99 But, I tell you, I do it two ways. 00:27:05.02\00:27:06.81 Before that, I will take a little bit of this out and I 00:27:06.84\00:27:10.56 will go ahead and make a home- made mustard and my mayonnaise 00:27:10.59\00:27:13.83 and dice up real, real fine onion and that makes like a 00:27:13.86\00:27:18.62 deviled egg and so then I take a glob of that and I put it on 00:27:18.65\00:27:23.42 like a corn chip, like a round corn chip and I put it right 00:27:23.45\00:27:27.46 on there and it makes a wonderful deviled egg. 00:27:27.49\00:27:30.53 You could do so many wonderful things. 00:27:30.56\00:27:32.20 Get a good cookbook. 00:27:32.23\00:27:33.43 It's all in nice cookbooks. 00:27:33.46\00:27:34.44 Thank you. 00:27:34.47\00:27:36.05 Well, I'm quite certain after this very good discussion about 00:27:36.08\00:27:40.88 soy, that no one should be in the dark about how one 00:27:40.91\00:27:44.72 can use it. 00:27:44.75\00:27:45.72 There are so many good things to do that are beneficial, that 00:27:45.73\00:27:50.03 there is no reason for anyone to feel that they are trapped 00:27:50.06\00:27:52.77 in a bad program, so God's blessings to you. 00:27:52.80\00:27:56.27
